Champagne Guiborat is based in the grand cru village of Cramant, right in the heart of the Cote de Blancs. Much of their vineyards are planted in the deep chalk soils of Cramant and Chouilly grand crus, along with a parcel in the Marne near Epernay where they have some Pinot Meunier. While they own 8 hectares of vineyards, three quarters of their production is sold off to Laurent-Perrier, keeping only the best parcels for their own label.

In certain years Richard Fouquet will release a wine solely from the Mont-Aigu parcel (planted 1970), however in the warmer years he chooses to combine fruit from this warm site with the cooler exposure of the Caures vineyard (planted 1946). This 100% Chardonnay cuvee is vinified in stainless steel and rests on lees for 6 months, before a further 68 months on lees in bottle prior to being disgorged with 1.5g/L dosage.

Incorporating some 16% of lieu-dit Caurés to temper the richness of Montaigu in sunny vintages, Guiborat's 2015 Extra-Brut De Caurés à Montaigu offers up aromas of crisp green apple, white flowers, citrus oil, freshly baked bread and wet stones. Medium to full-bodied, fleshy and seamless, it's racy and charming, with a pure core of fruit, a pillowy mousse and a chalky finish. Drink 2023 - 2038.
