    For more than ten years, Glenmorangie, renowned Scottish malt whiskey distiller, has been pioneering the use of different types of casks in which to finish the maturation of malt whisky. Their quest is to find the ultimate aging nuance. With the release of the Margaux finish, they may well have accomplished that.

    The unique marriage of grape and grain offers flavours from both the wine absorbed in the maturation barracks and the unique characteristics of the wood itself. Chateau Margaux, the famous Bordeaux First Growth wine producer, sources barrels made from the Tronçais oak forest in central France, originally planted in the 17th century by Louis XIV. The climate in this region produces trees of smaller diameter which provide a fine grain and high tannin content. Powerful wood-derived flavours have been imparted into the floral, fruity complexity of the whisky. Master distiller, Mr. Bill Lumsden describes the whisky in the following words: "Zesty orange, apple and ginger wine notes flood through before deeper hints of spicy black pepper and cinnamon intertwine to give an overall combination of boldness and subtlety that perfectly captures the spirited essence of Scotland and the passionate soul of France.” Realize that Margaux Hemmingway was conceived over a bottle of Chateau Margaux, the wine. Approach this whisky with similar caution!

    Only 3511 bottles were ever produced of this 1987 vintage which marries the finest French winemaking heritage with one of Scotland’s favourite malt whiskies. Packed like the Crown Jewels in a clear acrylic display case standing on a black plinth, with each bottle accompanied by a booklet that tells the story of the journey taken to create this exciting whisky. Each bottle is hand numbered and signed by Bill Lumsden, Glenmorangie Master Distiller. Very rare.

    Notes from Glenmorangie... Autumn gold with russet highlights. Marshmallow, creamy fudge and milk chocolate. Fruit emerged as toffee apples and caramelised oranges. With water, clementines, tangerines, a tang of sherbet, pineapples, passion fruit, peaches and rich double cream. Full mouthfeel, brambles, blackcurrants, melon, spicy notes of gingerbread with dark bitter chocolate and hints of espresso. Long, lingering slightly dry finish. 46% Alc./Vol.

    Small batch bitters are surely making their mark on the cocktail scene, with cocktail enthusiasts and bartenders rediscovering the long lost recipes of the golden era and coming up with new signature flavours which help create the palate of the New Age Cocktail.

    While living in San Francisco in early 2007, Avery and Janet Glasser used high proof spirit and a variety of herbs, peels and spices to create what would be their prototype recipe for the Xocolatl Mole Bitters and catalyst for their new venture.

    The summer of 2010 marked a dramatic rebirth for Bittermens: winding down previous licensing agreements, striking new partnerships (i.e. The Bitter Truth) developing new products and most importantly, leasing a commercial kitchen. All Bittermens products are now being made by hand at their Brooklyn facility using primarily organic ingredients.

    Avid beer drinkers may be aware that certain varieties of hops, when used in high concentration, deliver a strong grapefruit flavor. Bittermans have decided to use the grapefruity quality of high alpha-acid hops along with grapefruit peel to create a concoction with layer upon layer of vegetal bitterness aptly named Hopped Grapefruit Bitters. This style of bitters is designed to enhance young (white/silver) rums, tequilas and mezcal, the grapefruit bitters play well with most cocktails where you need a little citrus punch. Try it in a daiquiri, gimlet, or even a gin and tonic (with a splash of maraschino).

    Aultmore is located in Keith, Banffshire. Its name is a derived from the phrase 'An t-Allt Mòr'', Gaelic for big burn, referring to its water source, the Auchinderran burn. It was founded in 1895 by Alexander Edward, then owner of the Benrinnes distillery. In 1998, after a patchy history, the distillery was sold to Bacardi subsidiary, Dewars, which had previously owned Aultmore between 1923 and 1925. Aultmore produced their first official bottling, a 12 year old, in 2004. The house style is typically light and fruity with most of the wood employed being American oak.

    Tasting note: Pale gold. Minor sediment. Ripe pear and apple tart followed by hints of hay; the aroma is partly obscured by the tingly spirit lift. Almost the concentration of a cask strength with big beefy malt and a peppery attack. A little thin and acidic towards the finish, but nice underlying drier styled malt peeks through. Some light water biscuit and dried grass notes in the aftertaste. 46% Alc./Vol.

    Other reviews...The youngest bottling in Dewar’s new line up of malts from its Aultmore distillery, near Keith, this expression offers a nose of peaches and lemonade, freshly-mown grass, linseed and milky coffee. Very fruity on the palate, mildly herbal, with toffee and light spices. The finish is medium in length, with lingering spices, fudge, and finally more milky coffee. 3 Stars

    At the 2010 World Whisky Awards, whiskies from Japan won prizes in two of the top three categories for Scottish-styles. It was a turning point of sorts, yet those in the know weren't surprised; Japanese whiskies have been snapping up awards at international competitions for decades. The problem has been keeping up with international demand (the majority has traditionally been consumed within Japan). The situation has now changed with Suntory significantly increasing exports. A key role is played by their Hakushu distillery (pronounced "Hack-shoo"), one of the largest malt whisky distilleries not only in Japan, but in the world. Built in 1973 coinciding with Suntory's 50th anniversary, it's set amidst spectacular pine forests close to the Japanese Alps. Suntory also purchased the distillery surrounds to protect water quality and conserve the local environment. In fact, water from the district is considered the best in Japan, something Suntory have capitalised on by bottling and selling it throughout the country. Barley required for single malt production is reportedly imported from Scotland or elsewhere (including countries like France, England and Australia). Due to the height above sea level (700m), low pressure distillation occurs naturally, said to contribute to the light, fruity style. The latest renovations mean a variety of stills with different shapes, sizes, lyne arm orientations, heating methods and condenser types are geared towards diversity and quality rather than quantity. The resulting whiskies make a significant contribution to Suntory's large number of malts and blends.

    The 12 year old Hakushu is considered a fine introduction to Japanese styles for those who enjoy smokey malts, though the degree of smokiness is said to vary from batch to batch. Our tasting from 2014 found a bright gold coloured whisky with restrained aromatics yielding faint suggestions of toast and honey. Several minutes adds muted scents of sponge cake without budging the intensity. The whisky tastes semi-sweet with a juicy feel and a lipsmacking, biscuity mid-palate hollowing towards the finish with some late sweetness and delicate oils entering. It's clean and crisp making for a nice aperitif; you could also describe it as youthful and vibrant, but not peaty. See Whisky Advocate's notes below for notes on a more recent bottling.

    A floral nose, slightly smoky, with some brine. Huge flavour in the mouth, toffee, fruit and peat smoke. This could almost be Caol Ila. The finish is medium, smoky, with drying notes of oak. An extremely well structured, traditional malt whisky. - www.whisky-pages.com

    ...Light amber/marigold color; excellent purity. Smells of sawdust and pecans in the opening sniffs, plus a bit of summer flower garden (carnation) and spice (nutmeg); there’s an acute nuttiness to the aerated bouquet that becomes more like candle wax with further exposure to air; intriguing and unique. Entry taste is cocoa-like, bittersweet and nicely textured, almost oily (a plus); midpalate stage reveals an intensely grainy core flavor that’s both astringent, slightly sweet and caramel-like.     Tasting note: Whistler's 'all natural' edition has a tell-tale cask strength nose feel - prickly, vapoury alcohol and bittersweet notes of orange zest settle into old leather, Christmas pudding, chocolate box and caramel fudge. The fruity malt seems more Bourbon-soaked than the nose. After the initial attack, Oloroso peeks through in a thick, oily, warming, gently bitter surge. The spicy finish turns fruity with plum then banana bread late in the the aftertaste. Big Irish. Experiment with a few drops of water. Non chill filtered. 59% Alc./Vol.

    Other reviews... This dials up the aromas so high it could freshen up a stadium. After a riot of bright fruits, paradise slice, nutmeg, cinnamon, dates, and raisin, the palate becomes awash with apple and rose hip, though the strength makes it a wild ride, the tongue is conquered into submission. Diluted, it shines with vanilla sponge cake, plum, malt, and spicy nutmeg. Beautiful whiskey, just needs to be pegged back a bit. 89 points

    'Cuesta' is a brand owned by the prestigious Sherry house, 'Lustau', produced and bottled from a selection of butts in the Lustau Bodega. The concept is to offer high quality sherries under a separate brand in markets where Lustau is already represented. Yet given the exceptional standard set by the Cuesta PX, one has to wonder whether they've shot themselves in the foot. Aged for a minimum of ten years, this superb solera is produced from sun dried Pedro Ximenez grapes.

    A seriously good example of PX and an absolute steal at this direct import price.

    Pours a viscous sienna brown colour with a deep green olive tinged hue. Potent scents of raisins, honey and Christmas cake engulfs the nostrils with hints of toffee, marmalade and walnut also present. Exceptionally concentrated and rich, a thick luscious dollop of raisin, honey and Christmas cake like flavours are draped across the palate with notions of marmalade, toffee and subtle dried nuts the back drop. Warm, mellow spirit with an oil like consistency to the mouthfeel. Long sweet, textured aftertaste. An ideal match with vanilla ice cream and Christmas pudding.

    The highly regarded Jacopo Poli distillery is an artisan operation solely owned by the Poli family, founded in 1898 in Schiavon, near Bassano del Grappa, in the hearth of Veneto, the most typical region for grappa production.

    Tasting note: Produced from Pinot grapes. Clear, silvery appearance. Opening aromas are slightly soapy, with notes of pine and lavender. After several minutes they become more fresh grape like and herbal. Soft entry leads into a semi sweet, light to medium bodied profile that includes spicy dried fruit and nut flavours and fresh herbal notes. Very gently warming spirit. Subtle dried fruit aftertaste.     Mead is a wine made entirely from fermented honey. The Vikings believed it to be an aphrodisiac. The bridegroom would drink mead for a month after his wedding day to ensure virility, and this became known as the HONEY-MONTH which later evolved into the word "HONEY MOON".

    Maxwell Wines of McLaren Vale's Honey Mead is made by fermenting pure Australian Honey, creating a bouquet of beeswax, citrus and stonefruit. Drinks in a similar way to a full bodied white wine. Can be served chilled or as a mixer with soda water or dry ginger ale. A very valuable asset in cooking. 12.5% Alc./Vol 

    Make Syrup using Mead

    Combine 5 table spoons of sugar with 2 table spoons of water in a saucepan and stir over medium heat until sugar dissolves.
    Bring to a boil and cook without stirring until pale golden (approx. 5 minutes).
    Remove from heat and stir in 1/4 cup of boiling water, then 1/4 cup Mead, then pour gently over cake.
    Any remaining syrup can be served warm over slices with whipped cream.
    Liqueur Mead can be substituted in the syrup.

    Crown Royal was originally created to commemorate the Royal visit to Canada by Britains King George VI and Queen Elizabeth in 1939, and has since become the biggest selling Canadian whisky in the United States. The distillery stores an astonishing 1.25 million barrels and incorporates up to 50 different whiskies in its final blend. The pure water of Lake Winnipeg in Gimli, Manitoba is an essential ingredient in the production.

    Tasting notes: Bright gold with a gold ochre hue. The nose is a virtual merry go round of spice and fruit with pineapple and banana between flashes of spicy rye, vanilla and creme caramel. Imagine your favourite American Rye, only slimmed down, smooth and ultra sexy. This is seductive stuff from the get go and the palate doesn’t let up. Sweet baked apple and custard like flavours are served up in a gently warming, spicy wrap with impeccable balance. Long, subtle aftertaste of toffee apple, spice and creme caramel,  finally finishing dry with a dusty cocoa fade. It's Canadian whisky as most will never have experienced it.     Other reviews... Nose: Seriously big rye offers a hard and fruity edge to the soft corn and oak. Palate: rock-hard and crisp mouth arrival thanks to the early rye, softens for the corn and then the rye sends some fruity shockwaves around the palate. Finish: bitter and booming, big controlled oak finale on gentle oil. This has definitely changed in the last seven or eight years as all blends must.     A homage to a gin created in the early 20th century which was said to have been made in a pot still made of gold. At the time, excavation works were taking place in Alsace where a site with antique valuables was found. Amongst them was a gold pot still. After these objects were deemed to have no historical value, they were put on sale. One of the buyers was an amateur distiller, a man who immediately fell in love with the still. He spent years of his life looking for the perfect spirit, finally creating a gin with tangerine and hints of vanilla and almonds. He named this special spirit Gold 999.9 as he considered it to be his liquid gold. Botanicals include juniper, almond, vanilla, cassia bark, gentian violet, poppy, tangerine, coriander, violet flowers and angelica root. The colour is bright gold with pale straw edges. On the nose there's big citrus input; think orange cake or tangerine peel and possibly hints of chamomile. Given more time in the glass and it essentially smells like triple-sec. The entry is light following through to a medium dry, juicy orange cake / citrus peel profile that finishes dry, delicate and gently warming. Call it contemporary, 999.9 is undeniably very orange dominant - to the point of being hard to classify as gin. 40% Alc./Vol.

    In 1844 Christopher Rawson Penfold planted vines on the slopes of Magill toproduce fortified wines. Now the historic bluestone cellars are home to atradition of fortified winemaking dating back over 150 years.In 1994, to commemorate 150 years of winemaking by Penfolds, a specialblend of the finest and oldest components of Grandfather Tawny wascreated. Befitting its great age and quality, the blend was named "Great Grandfather."This multi vintage blend produced from Mourvedre, Shiraz (Syrah) & Grenache grapes, represents a selection of the very finest and oldest barrels in the Penfolds cellars. Placed into a solero system, each year a strictly limited amount is released as Great Grandfather Grand Old Liqueur Tawny.

    Tasting Notes: Extremely dark mahogany brown with an intense olive green tinge. The nose is extremely intense and complex with raisinedfruit, toffee and malt aromas long since integrated with nutty aged rancio, vanillin oak and subtle spirit. The palate clearly demonstrates its great age and qualitywith incredible intensity of flavour, viscosity and length matched to elegance and finesse. The wine has a perfect harmony of rich developed fruit flavours, aged rancio complexity and a slightly drying spirit finish. A truly outstanding liqueur tawny that deserves to be recognised as the equal of any fortified wine ever made in Australia.

    Even more perfumed and compelling than the Grandfather is the profound Great Grandfather Tawny Liqueur. From a much older Solera, it undeniably ratchets up the level of quality. This brilliant fortified is remarkably light on its feet given its massive richness. Thank good winemaking, great natural extract, and zesty acidity for keeping this wine fresh in spite of its huge residual sweetness and power.

    Matured exclusively in re-coopered 100Lt and 200Lt Australian wine barrels. Perfect clarity / polished copper. Definite wine character; comes over like Nebbiolo or Brunello di Montalcino with dried cherry, hints of prune and plum amid flashes of varnish, sweet spice and vanilla malt. Likewise on the palate, the biscuity malt beautifully dovetails with the later wine input as hints of plum and fruity dark chocolate develop at the finish. Ends finely tannic, pleasantly spicy and with the winey nuances echoed in the aftertaste. A deftly handled wine/whisky fusion, the source of the barrel is a secret, but we can tell you it's from one of South Australia's top Shiraz producers. 41% Alc./Vol.

    A Pays d'Auge Calvados matured in 2000 litre, oval shaped oak barrels (which improves contact with wood). A delightful digestive, but also recommended for drinking as a “Trou Normand” (during a meal) or with accompanying cheeses.

    Tasting note: Brilliant deep gold. Only slightly less perfumed than its younger sibling; Green apples, cider, roasted chestnuts with lively acid lift. Further exposure accents pleasing woody notes (cedar, sandalwood). Fuller and richer than the 3 year old with middle weight flavours of baked apple and light spice, keenly balanced by fresh, cidery acidity. An appealing combination of youth and middle age. 41%Alc./Vol.

    New Zealand’s newest rum company, 'Stolen Rum' has been honored with a Double Gold medal for its Gold variant and a bronze medal for its White rum at the prestigious 2010 San Francisco World Spirits Competition.

    Born in the Caribbean and raised in New Zealand, Stolen Rum was created after Kiwis Jamie Duff and Roger Holmes, caught in the rum resurgence that was taking place worldwide, ditched their day jobs in favour of developing a world class rum.“Stolen Rum had only been in the market for three weeks when we entered the competition. We couldn’t have hoped for a better start.”

    Produced from a molasses ferment and a continuous distillation, maturation takes place in Trinidad, the southernmost island of the Caribbean, for a minimum of two years in individually chosen charred American oak bourbon barrels. The results are carefully blended by hand before being carbon filtered to remove any colour.

    In 1806, with a ship full of spirits bound for America, Englishman James Gosling ran out of wind and time. With his charter expired, James's ship, the Mercury, put in at the nearest landfall, the island of Bermuda. Knowing a good thing when he saw one, he decided to make the best of an uncertain situation. James opened a shop on the King's Parade, St. George's, in December 1806, and the Gosling Family has been in Bermuda ever since. Today, Gosling Brothers is Bermuda's oldest business and Gosling's Black Seal Rum is Bermuda's number one export. The Gosling family recently decided to expand their portfolio, and have created a distinctive gold rum by blending continuous and double pot distilled rums.

    Gosling's Gold Seal replaces the old 'Goslings Gold'. The rum presents moderate aromatics including faint notes of buckwheat pancake, dilute maple syrup and raw sugar. Better defined on the palate with a semi sweet, relaxed delivery that suggests caramelised fruits, boiled lollies, vanilla bean, mocha and a dry, warming cinnamon finish. Average length.     "Laid back." - Jim Murray's Whisky Bible 2020

    First released on the Australian market in 1989, Gentleman Jack is a premium JD using a formula based on early trial work carried out by Jack Daniels himself. It's bottled to celebrate his whiskey being awarded a top gold at the St. Louis fair in 1904. While it's consistent with the original Jack Daniel's style, it does however, differ in being a 'single whiskey', not a combination of whiskies blended together. Gentlemen Jack is also charcoal mellowed twice though maple wood, once before aging and once again after. The distillery describes this process in their own distinctive way: 'Jack knew what a single journey through the charcoal meant to his exceptional whiskey - how the coarsely ground maple charcoal mellowed out the harsh oils and impurities that threatened the smooth, warm character of the whiskey. Imagine what a second trip would do, he mused. And so, throughout his life, he experimented with charcoal mellowing his whiskey twice. The process proved so painstaking, he never crafted enough of his new whiskey to introduce it to the world. Happily, he saved the recipe. In 1988, we finally put our founder's formula into limited production, and Gentleman Jack became the first new whiskey from the Jack Daniel Distillery in more than 100 years. No, our folks in product development have never been known for speed. We think a good thing is worth waiting for and, in the case of Gentleman Jack, I think you'll agree, we were smart to wait and get it right.'     ...So what’s Gentleman Jack all about? It is, essentially, Jack Daniel’s that’s been through an additional charcoal filtering process with the goal of making the spirit smoother and mellower.     In 1874 M.W. Heron, a bartender, developed Southern Comfort in his bar near La Rue Bourbon in New Orleans and first served it in traditional fashion from a whiskey barrel. In 1934 after a short break in production due to Prohibition, Southern Comfort introduced their current distinctive label featuring the now famous Currier and Ives lithograph of a Southern plantation house on the banks of the Mississippi. The plantation is known as "Woodland Plantation", built in 1834. Southern enthusiasts can visit the newly renovated mansion, which now operates as a nine bedroom country inn.

    Southern's identity as a bourbon lies only in its origins. Its inception was in an awful whisky batch that Heron was attempting to improve. Actually, Southern Comfort was originally a Peach Liqueur, and one of the few peach liqueurs on the market. Produced using neutral spirit and over 100 ingredients, the final liqueur matured for eight months prior to bottling.

    Since then the formula has changed and Southern is now branded a 'whiskey liqueur'. Sweet and rich with a molasses background and faint medicinal flavour, it's America’s “Take it easy Drink”. Enjoy it straight, on the rocks or with cola.

    The 2018 La Mission Haut-Brion is a blend of 53.5% Merlot, 42.9% Cabernet Sauvignon and 3.6% Cabernet Franc. Deep garnet-purple colored, it emerges from the glass with a first wave of stewed black and red plums, mulberries and black raspberries scents, followed by pronounced notions of warm cassis, clove oil, violets and chocolate box, with hints of cast-iron pan, pencil lead and forest floor coming through after a few minutes. The medium to full-bodied palate shimmers with energy, delivering layers of red and black fruits with earthy and mineral sparks and a texture so satiny you need to remember to look for it, finishing with amazing vibrancy. This is so wonderfully evocative and singular, and yet it feels like its holding something back. It makes for an impressive glass right now, but give it a good 5 years in bottle to allow further nuances to emerge and expect it to seriously reward those who can wait a good 12-15 years, when it should really hit its stride.     The 2018 La Mission Haut-Brion was double decanted and assessed after two hours, and the over the following 24 hours compared directly with – what else? – Haut-Brion. They were initially poured blind. This has retained a very perfumed and hedonistic bouquet of black fruit and pressed violets, and less of the graphite that I picked up out of barrel; touches of ash/fireside hearth develop with time. The palate is medium-bodied with fine-boned tannins, and quite structured, more so than the Haut-Brion. There is a brightness here that I really like. Vivid, animated and brimming with energy and still incredibly persistent on the finish. A fabulous La Mission Haut-Brion that deserves several years in bottle, and though I would not rank it alongside, say, the 1955 or 1989, it is a magnificent Pessac-Léognan. Drink 2024-2060.

    Although it emerges from a similar terroir and the same winemaking team, the 2018 Château La Mission Haut-Brion is a dramatically different wine than the Haut-Brion and has a more concentrated, dense, powerful style that is all potential at this point. Dense purple-hued, with lots of crème de cassis, black cherries, smoked meats, lead pencil, graphite, and crushed stone aromatics, it hits the palate with full-bodied richness, a concentrated mid-palate, masses of ripe tannins, integrated acidity, and one hell of a finish. This blockbuster, backward, monster of a La Mission Haut-Brion needs to be forgotten for a good decade (or more) but is going to be just about immortal. Drink 2031-2081.

    The Monster of Australian Shiraz, with many, many years of cellaring in front of it. Totally opaque in colour with black crimson hue. Perfumed nose, slowly evolving, with aroma of violets, vanilla, confectionery and ripe plums. Monumental palate structure and flavour – no way is this wine going to yield all just yet. The depth and concentration is very evident. Plum, spice, liquorice and vanilla are on the surface, but more to evolve over the next decade. Dry tannins, but balanced. Very long aftertaste of plum, spice and vanilla.

    One of my favorite wines from Penfolds, the 1986 (a blend of 87% Shiraz and 13% Cabernet Sauvignon) is one of the most powerful Granges produced (14+% alcohol). At age 23, it reminds me of the way it tasted around 9 years of age. Inky/purple to the rim with an extraordinary perfume of sweet licorice, crushed pepper, blackberry liqueur, camphor, and barbecue spices, this sensationally full-bodied, concentrated, layered 1986 is still an infant in terms of its ultimate potential. It is remarkable how this wine has aged, and it’s hard to believe how certain wine geeks will subscribe to the aging ability of the Grange, but don’t believe the same is true for other old vine Shiraz wines from the Barossa and McLaren Vale. It just doesn’t make any sense. The 1986 is one of the greatest Granges for my palate, and it appears to still have 25-30 years of upside.

    BACKGROUND
    Madeira is produced on the Portuguese island of Madeira. Henriques and Henriques is the largest independent shipper on the island. The company is focused on the premium end of the Madeira market and enjoys a 15% market share. The company takes its name from the two sons of Joao Joaquim Henriques, a descendent of the first King of Portugal.

    LAND HOLDINGS
    Vineyard holdings on the island are small, with 4000 growers owning an average 0.5ha each - which by local standards is extensive. Henriques and Henriques also have their own vineyards, 6 hectares at Camara de Lobos (located on the south coast). The company also has 10 hectares at Quista Grande.

    SOIL TYPES
    The soils of Madeira are basically volcanic, however, the best soils are a stony decomposed red tufa which is known locally as SAIBRO. The vineyards are planted on very steep terraced slopes.

    GRAPE VARIETIES
    The grape varieties are unusual for Australians and include TINTA NEGRA MOLE, TERRANTEL BASTARDO, and either SERCIAL, VERDELHO BUAL or MALVASIA.

    VINIFICATION
    The vintage on the Island of Madeira is said to be the longest in the world, starting in mid August with the Malvasia grapes being picked on the lower slopes and slowly progressing through the other grape varieties of BUAL, VERDELHO and SERCIAL. Vintage in the highest vineyards is completed in early November.
    The fermentation takes place in temperature controlled, stainless steel tanks. Malvasia and Bual are fermented with limited skin contact, whilst for Verdelho and Sercial, only the pressed juice is used. Fortification takes place with the addition of grape brandy, the amount used and the timing of the fortification depends on the style of Madeira that is being produced.
    The majority of young Madeira undergo the "EUSTUFAGEM". This process consists of storing the wine for 3 months in hot conditions with temperatures 45°C. The effect is to mimic the long sea voyages that were a part of the traditional aging process. The best wines are left to age 10 years and more in warm cellars which creates that unique "Maderised" fruit quality.

    TASTING NOTE: Opaque onion brown colour with olive green hue. The nose is pronounced, with strong rancio character followed by notes of walnut and hazelnut. Fine spirit end note. The palate reveals very intense flavours of caramel, toffee and orange rind, followed by a very spicy back palate. Fine spirit, perfectly balanced. Medium dry, with long aftertaste of nut, orange, spice, orange rind and rancio.

On the palate it creeps up on you slowly; the first impression is ripe yet delicate, then the fine-grained tannins charge through and light up the sky. Very long finish. Drink or hold.

    As to the red, the grand vin is the 2016 Château Malartic-Lagravière (53% Cabernet Sauvignon, 40% Merlot, and the balance Cabernet Franc and Petit Verdot). Aged in 80% new barrels and hitting 13.5% natural alcohol, it offers a deep purple color with beautiful cassis, tobacco, crushed rocks, and subtle incense aromas and flavors. Balanced, medium to full-bodied, and straight-up seamless on the palate, it’s another brilliant Graves that offers ample pleasure today yet will keep for 20+ years or more. Drink 2019-2039.

    The colour is rich and deep but with luminosity that gives nuance and fresh air. It's a lovely 2016, poised but not as powerful as some in the vintage, yet every inch the sophisticated reflection of the appellation. Restrained grilled berry fruits take their time to unfurl. It's still very closed but the liquorice and slate notes become clearer after 10 minutes in the glass, and the wine has already deepened in the few years since bottling. 3% Petit Verdot completes the blend. Yield 46hl/ha. Drink 20026-2042.

    Deep in color, here you find a wine with concentration, round, supple textures and silky tannins, The fruit shows maturity with its sweetness and its serious depth of flavor. This will be a much better wine with age, so give it at least 7-8 years before opening a bottle, if you can wait that long!

    Flavouring vodka is an age old Swedish tradition and this example bears the distinctive flavour of citrus fruits. To produce Absolut Citron, an alcoholic base is made from locally grown wheat grain and continuously distilled to produce a high strength spirit. The spirit is then filtered through charcoal and transferred to stainless steel tanks so flavours stay neutral. Natural flavouring is finally added using fruit extracts from Lemons, Limes, Mandarins and Grapefruits. The result is a dry and zesty spirit with a curious sweet/tart interplay of lively citrus flavours.

    Tasting note: Pristine appearance. Lovely, clean and intense aroma of tangerine is full and squeaky tart in the first whiffs; aeration serves to bring out zesty, spot-on scents of lemon juice and lemon peel.     Classic Cocktail: Cosmopolitan
    The Cosmopolitan was allegedly created in 1975 by Neal Murray at a steak house in Minneapolis called the Cork & Cleaver. As with the origins of most cocktails, this claim is disputed by a number of sources. Informally referred to as a “Cosmo”, the Cosmopolitan first gained popularity in the 1990s, and was further popularized among young women by its frequent mention on the the television program 'Sex and the City'.

    The El Dorado rums are created from a combination of eight stills, some of which are the world's oldest in operation. Their different construction and size means each yields different distillates that allow for a maximum range of styles. The 21 year old is produced in three: the Enmore wooden Coffey still, the Versailles single wooden pot still and the Albion Savalle still with an emphasis on the latter. This original, four-column, metal French beauty was inherited from the 18th century Uitvlught Estate on the west coast of Demerara county. The rums it produces are characterised by a pronounced sweet, sugar cane nose combined with a dry medium-bodied flavour. The result is an alternative to the uber-exuberance of the 15 Year Old in which the Port Mourant contributes most. This is no powerhouse, rather you get serious complexity, persistence and a kind of finesse that's almost unmatched in the rum pantheon. Described as “monumental" and "one of the world’s greatest rum drinking experiences” by the Beverage Tasting Institute of Chicago, it's for the enthusiast who has the patience to appreciate it.

    Tasting note:[40% Alc./Vol. batch tasted] A blend of select aged rums between 21 -25 years old. Deep topaz / polished mahogany colour shows moderate viscosity. Drier styled aromas open mildly varnishy, developing with raisin slice, dates, banana cake, cinnamon, raw sugar and apricot brandy over 5-10 minutes; the sweeter notes are countered by woody, resiny aromas suggesting cigar box, cane and wax polish. Final pass accents toffee, rock lollies and heightens the dried fruit notes. Entry is light, dry, woody, unfolding with understated elegance, coating the mouth with a film of banana cake, dates, light molasses, caramel and vanilla. Builds in slow motion, peaking with a superb crescendo of sugars and zero burn, closing with liquorice allsorts and residual molasses through the aftertaste. Resonates and rebounds in the mouth over several minutes, the wood contributing almost as much as the spirit, the whole coming together in a way that sets it apart from almost any other rum. If you hurry this, frankly you'll be wasting your money. Demands extended breathing to reveal its best. One to savour.

    The world’s first, truly 100% Japanese gin, from the inside out.

    The Kyoto Distillery is the brainchild of whisky exporters, David Croll and Marcin Miller (founders of the Number One Drinks Co). The gin they produce is distilled, blended and bottled in Kyoto and is reportedly the nation’s first craft gin.

    Made in a dry style but with a distinct Japanese accent, indigenous botanicals are what separate Kinobi from the pack. “We had originally started experimenting with 50 to 60 ingredients, but that gave us a gin that tasted too classic,” says The Kyoto Distillery’s head distiller Alex Davies, who had previously run England’s Cotswalds Distillery. “We wanted ours to have a clearly defined Japanese character, so we narrowed it down to a handful of core flavors.”

    These include yellow yuzu from the north of Kyoto Prefecture, hinoki wood chips (Japanese cypress), bamboo, gyokuro tea from the Uji region and green sanshō (Japanese peppercorn) berries. To add a further touch, the gin is produced in copper pot stills from a rice spirit with water sourced in the famous sake–brewing district of Fushimi. A second smaller still is used for herbal distillations.

    The local input extends to the packaging: The glass bottles are hand-blown by craftsmen in Osaka. The screen-printed label was designed in association with Kyoto’s oldest maker of karakami (woodblock prints). A must have for any collection (or for followers of Obi-Wan Kenobi) - the name actually translates to ‘The Beauty of the Seasons’. Very limited.

    Tasting note: Nicely integrated aromas of pine sap and lemon oregano with peppercorn and wasabi-like warmth. Follows through with a concentrated, piney-woody, herbal entry becoming linear, elegant and finely balanced towards the finish. Subtle aftertaste combines creamy juniper, delicate heat and citrus freshness. Excellent persistence. Quite nuanced. Reserve for martinis. 45% Alc./Vol.
