The Macallan 12 year old gets a stylish new makeover while continuing a tradition of being matured exclusively in Oloroso sherry seasoned casks from Jerez. While the exact breakdown remains undisclosed, we do know that the majority were first-fill casks which means even more colour and flavours are picked up - and it shows on the nose; Twelve years is relatively young for a slow-ager like Macallan, but already there's nice aromatic intensity and definition with a medley of dried fruits (dates, prunes, fig) alongside drier, leafy, nutty characteristics as well as fresh oak shavings and pepper prickle. Likewise on the palate which repeats the aromas adding nuances of sulphur, orange spice cake, bitter chocolate, cinnamon and vanilla. The finish drops in vibrancy and momentum leaving mostly residual vanillas, the spice and sherry notes in retreat. Tastes like some American oak is at play, nevertheless, this retains many essential qualities of traditional Macallan. 40% Alc./Vol.

...Nose: sure there’s more happening than in the modest Cardhu. Some nice metallic touches, a little polish, walnuts, chocolate cake, Mars bar, roasted peanuts, Ovaltine yet again… There’s also some wet earth in the background, humus, a wee mushroom hiding beneath some autumn leaves… Mouth: closer to the Cardhu, less coherent than on the nose, a tad gritty, with some tobacco and tea, then some cloves and caraway, some burnt cake… Sadly, all that does not last forever, and this baby tends to become a little too dry, bitter and narrow, although I do enjoy these notes of dried herbs, parsley, some would even say umami… Finish: short and very dry, mainly on bitter chocolate. A little burnt wood and bitter oranges in the aftertaste. Comments: really good, but the low strength makes it cheap and, well, parsimonious. After many years of ownership by Champagne Taittinger, Bouvet Ladubay is once again fully owned by the Monmousseau family who have continuously run the business since their purchase in 1932. Bouvet Ladubay employs precisely the same wine making process as Grand Marque Champagne, delivering French sophistication at an everyday price. This is France's equivalent to sparkling Shiraz. Many don't know it, but Australia actually pinched the idea of Sparkling red from the French.
Made from Cabernet Franc, Bouvet offer a delightful alternative interpretation that's in a lighter, drier style.
Pours with an excellent purple tinged frothy mousse that shows good hold. Dark ruby red base wine colour with very fine bead showing good persistence. The nose shows good lift with scents of ripe plum and blackcurrant dominate followed by some delicate toast and spice notes. Medium bodied the palate is filled with rich luscious blackcurrant and dark plum flavours along with some toast and a touch of spice on the dry finish. Creamy mouthfeel. Medium to long ripe blackcurrant, plum and spicy toast aftertaste.

The wines of Moulin Touchais begin reaching their peak after twenty years, and many of the great vintages will take much longer. Vintages such as the 1953, 1959, 1964, 1969 are still maturing. The 1945, 1947 and 1949 have become classics. Moulin Touchais are the only winemakers in the world who give a century long guarantee on the longevity of their wines (subject to being kept under optimal cellar conditions). Bottles may show some sediment or deposit. One should understand this is due to the traditional filtration process, the main aim being to protect the colour, the bouquet and the depth of flavour of the wine.
Not as deep in colour as the 2007, the 2005 has a pale gold core with golden edges. Nosing fills the nostrils with baked apple, honey and cinnamon aromas trailed by ripe pear, quince and spice notes. Beautifully balanced palate with mouthfilling flavours of honeyed pears, baked apples and quince creating a viscous feel. Counterpointing the rich, luscious fruit is underlying fresh acidity which gives the wine a sense of vitality. Traces of marmalade, dried pineapple and spice are also evident. Expressive and pure with an epically long finish.
Drink it over the next 30 years.

Ripe and unctuous in feel, featuring creamed peach, mango and guava notes gliding throughout. Stays bright and defined thanks to well-inlaid chamomile and salted butter accents. There's a flattering feel through the finish, with a light marzipan hint starting to creep in. This is just beginning to open up and should cruise for quite some time. Drink now through 2040.

2016 Chateau La Tour Blanche

Chateau La Tour Blanche takes its name from the founder of the estate, Jean Saint Marc du Latourblanche, and is one of the most respected producers in Sauternes. The 40 hectares of vines used for their grand vin are planted in one large parcel with a prime location close to the Ceron river, and the soils are a mix of gravel, clay, sand, and limestone. Planted here is a combination of 83% Semillon, 12% Sauvignon Blanc, and an unusually high proportion of Muscadelle at 5%. The Semillon is aged in 35% new, French oak barrels for 16 to 18 months, while the Sauvignon Blanc and the Muscadelle are aged for 16-18 months in stainless steel vats before blending and bottling.

Pale lemon-gold colored, the 2016 la Tour Blanche gives flamboyant tropical layers of mango, guava and passion fruit with hints of clover honey, beeswax, nutmeg, jasmine and preserved ginger. Big, rich, concentrated and seductively oily in the mouth, the palate is unashamedly decadent, and it finishes very long and spicy. Drink 2021 - 2047.

The 2016 La Tour Blanche has an extremely well defined bouquet featuring intense honeyed, botrytis-rich fruit, supremely well focused and conveying fine terroir expression. The palate is medium-bodied with viscous honeyed fruit laced with orange zest, marmalade, ginger and quince. There is a wonderful sense of harmony here. Persistent in the mouth while maintaining superb tension. Impressive. Tasted blind at the annual Southwold tasting. Drink 2023-2050.

One of the top Sauternes in this report is the 2016 Château La Tour Blanche, and while 2016 was not a great vintage for the sweet wines of Sauternes, this beauty makes the most of it. Fabulous notes of honeyed peach, tangerine, flower oil, and honeyed citrus all give way to a sexy, full-bodied, flamboyant effort that’s already impossible to resist. Drink it any time over the coming two decades. Drink 2019 - 2039.

In a market previously dominated by Cognac, Taiwan is now officially one of the world's biggest consumers of whisky. Soaring consumption amongst the island’s population of 23-million, is eclipsed only by the United States, France, Singapore and Spain.The young and newly affluent are driving sales, with consumers willing to shell out top dollar for a bottle of whisky in fashionable bars and clubs. Local expert Ivan Chang, comments ”Here, a night out typically starts with a group of friends and a bottle of whisky at a restaurant. From there, it's moved to a KTV or nightclub where it's time for the second bottle. At each new location, a further bottle is well likely to follow.”
Chang also concedes that Scotch has become an aspirational status symbol for many Taiwanese. Scotch whisky marketers have responded with numerous brands offering special releases exclusively for Taiwan. It’s one explanation behind the country’s changing drinking habits. There are others. Jens Kastner, writing in the Asia Times, notes that, according to industry sources “From the late 1990s on whisky gradually took over, after Scottish whisky makers, among those most prominently The Macallan, started sophisticated promotion campaigns. Face-to-face, small-group brand-training engagement activities were conducted all over the island.”
Chang believes there’s also a more mundane factor at play. ”Unlike Cognac, Scotch doesn't taste sweet. So Taiwanese don't think it makes you fat.”
Putting it all together paints an attractive argument for a local industry. So it comes as no surprise that Taiwan has now unveiled its very own distillery, “Kavalan” - the ancient name of Yi-Lan county in the northeast part of Taiwan, where the venture is located. It is owned by the King Car group, a company with more than 2000 employees, and with business in several fields including beverages, food, biotechnology and aquaculture. The brainchild of King Car's chairman, Mr. TT Lee, who always wanted his own high-quality whisky distillery, it was only conceivable after Taiwan joined the WTO in 2002, ending the country's alcohol monopoly system.
Completed in 2005, Kavalan is one hour train ride from Taipei and a 10-15 minute ride out of Yilan proper. It’s an expansive, highly automated complex with a conference and visitor centre, situated beside the ‘Snowy Mountain’ (which, incidentally has no snow, but there’s an abundant supply of pure spring water here). The first bottle of Kavalan was released to a skeptical public in 2008.
Respected spirits writer, David Broom, recalls,

"When the news arrived that a distillery was being built in Taiwan, the whisky world pretty much dismissed it. When Kavalan appeared at a precocious 42 months, it sat up and took notice….with blender Ian Chang at the helm and a hotline to consultant Dr. Jim Swan. Taiwanís tropical climate pushes the maturation cycle along at a ferocious rate, but the key here is its complexity."
The casks, including ex-bourbon refill barrels, fresh sherry butts, and x Port casks as well as Kavalan's own dechar/rechar casks designed to a special recipe to complement the spirit's flavour, are stored in an unconventional five-story maturation warehouse. Like Glenmorangie and other industry greats, Chang has an obsessive wood policy. No doubt this attributes much to the stellar quality already on offer. Stylistically, Kavalan's whiskies cross a remarkable breadth. Their flavour profiles range from traditional Speyside through to more robust expressions reminiscent of many recent Australian efforts. They have already confounded many critics and a cask strength release recently breached the mythical 3 digit barrier, rated 100 points by the highly respected ‘Beverage Testing Institute in Chicago.
Tasting note: Deep gold brass appearance. Expressive aroma offers an attractive melange of stewed pear / ripe stone fruit, cocoa and vanilla laced malt, rounded off with what seems like a dose of peat. There's a pleasant lightness to the palate, which, at the same time, doesn't lack concentration. Semi sweet cereal flavours and gentle spices feature in a well-balanced profile that's overall remarkably Speyside-like. Concludes mildy fruity, clean, fresh and dry, if a little short. Lovely whisky. 40% Alc./Vol.
Other reviews... Maybe it's auto-suggestion, but I could swear there's ginseng in here, as well as honeycomb and black cherry pie filling. Fresh and clean, the spirit is rich and accompanied with great wood. Mature whisky in three years? It's an accountantís dream!

The 2010 Penfolds St Henri is produced from 100% Shiraz, some vintages have incorporated a small Cabernet component to provide additional structure but this was not required for the outstanding 2010 vintage. Sourced from a wide variety of vineyards including the Barossa Valley, McLaren Vale, Clare Valley and Coonawarra, the wine has been matured for 12 months in old 1460 litre oak vats which impart minimal oak character.
Magnificent colour saturation displaying an impenetrable inky black core with a very deep dark purple black hue. Perfumed aromas of ripe blackberries, dark chocolate and liquorice evolve from the glass overlaying some subtle vanillin oak and spice notes. On the palate superb richness combines with a sumptuous velvety texture featuring mouthfilling flavours of ripe blackberries and liquorice interlaced with dark chocolate and some very subtle toasty vanillin oak over a background of mocha and spice. Silky smooth supplely textured tannins further enhances the wines seamless integration of all its component parts. Outstanding length with long aftertaste of ripe blackberry, dark chocolate, a touch of liquorice, vanillin mocha like characters and spice.

Very deep purple-black in color and showing an attractive nose of warm blackcurrants, blueberries and licorice with a complex undercurrent of mocha, cedar, menthol and grilled meat, the full-bodied 2010 St Henri Shiraz is relatively rich in the mouth, offering tons of fruit structured by firm, fine tannins and refreshing acid. It finishes with great persistence. Drink it 2015 to 2030+.

A rare vintage of only shiraz in this wine, the sourcing is Barossa Valley, McLaren Vale, Coonawarra, Adelaide Hills, Wrattonbully and Clare Valley. A very handy vintage of this classically styled Penfolds red, bright hearty fruit dominates amid earth, tar and dark nutty elements, boot polish too, really deep. The palate has seamless flow and build, immense concentration is at play, dark liquorice, blackberry and plum, this is swathed in deeply ripe, smooth but strong tannin. Dark plum flavours build, the finish holds and holds - terrific length and depth here, this will go down as one of the greatest ever St. Henri releases.

This is a version of the original Goldwasser produced in 1598 by the German firm, “Danzig”. The recipe did not always include gold flakes. These were added when it became thought that gold was valuable in the treatment of certain diseases. Gold, is of course totally inert - it is quite harmless to use in food products and has since been found not to impart the benefits the alchemists attributed to it. Pure gold is still added for the appearance and to maintain tradition. Originally produced from aniseed and caraway, this version from Der Lachs is a fine example of the liqueur.
Tasting note: Pours viscous and perfectly clear (bar the gold flakes). Engages with aromas of peppermint chocolate, cinnamon, white pepper and sweet oregano. Cream textured with sweet & spicy flavours of cinnamon, liquorice and black jelly bean. Concludes tooth-staining, well balanced and medium long. 40% Alc./Vol.

A supple entry leads to a sweetish, medium-to full-bodied palate of mild licorice, cinnamon, and medicinal herb flavors with an angular streak of menthol. One of the most sought after Tequilas on our shelves.
In 1942, at the age of 17, Don Julio Gonzalez opened his first tequila distillery. The name now tags a top portfolio of Blancos to Añejos. Blue agaves up to twelve years of age are hand-picked at the peak of their sweetness and ripeness. Rich clay soils and larger planting spaces ensure maximum nutrition and sunlight yielding a sweet plant that’s ideal for premium tequila. After being slowly cooked in masonry ovens at Don Julio's 'La Primavera' distillery, the juice that is obtained from the agaves is subsequently double distilled in pot still 'No.6' - a tiny still filling just three barrels per run - then aged for 32 months in recharged American oak barrels, though some reports suggest even longer. Regardless, it comes close to being classified as 'Extra Anejo'. Created to commemorate the opening of the distillery and presented in an elongated, tapered, amber glass bottle resembling an agave leaf, the '1942' remains one of the most acclaimed and sought-after tequilas on our shelves. Matured for 20 months in old French oak. Opaque dark red black colour with a dark red hue. Aromas of dark cherries and red liquorice are overlaid by some leathery notes with earthy vanillin cedar and spicy herbs following on. Medium bodied, quite lean and lacking in both richness and depth the palate is flavoured with spicy dark cherries, red liquorice, saddle leather, earthy cedar and spicy herb characters. Fully imported, Canadian Club is a superbly smooth blend that is distinguished by its unique taste. The brand was first introduced in 1858 by Hiram Walker, a grain merchant turned distiller. Born in New England in 1816, Hiram Walker came west to Michigan in the 1830's to seek his fortune. After a few false starts, he launched a successful grocery business in Detroit and learned how to distil his own cider vinegar instead of selling someone else's for a minuscule profit. Walker then decided to branch into whisky. His first barrels were produced in 1854 and were a great success due to their fine quality and purity. Concerned about Michigan's strong puritanical temperance atmosphere and aware of the good farmland being opened up by the Great Western Railway on the Canadian side of the river, Walker decided it was time to make a move. The distillery he established from next to nothing later grew into "Walkerville" (Ontario) a town revolving almost entirely around Hiram Walkers many enterprises. The town was later recognised as a model of industrial self-sufficiency.

Unlike any other whisky, being characteristically light, mild and delicate, Canadian Club owes its clean taste and distinctive character to the fact that it is blended before maturation in white American oak barrels for a minimum of six years. Woodstock’s Very Old Fortified is a genuine “rare,” tawny style fortified, skillfully blended from 70% Grenache and 30% Shiraz. Each varietal is matured separately in 100 to 300 litre oak casks for 20 years or more (currently holding an average age of 23 years in the final blend). 4-5% of the product is lost to evaporation from each barrel each year. Compared with “Rare” Rutherglen fortifieds now selling in excess of $60, this is an amazing bargain for top quality, decades old, tawny material.
Translucent, deep sienna brown colour with onion brown tones over a green olive hue. Raisin, rancio top note, followed by toffee, caramel, prune and nut. On the palate, the raisin flavours are very pronounced, with raisin layers over a very spicy back palate. Clean finish. Very long aftertaste of honey, toffee, caramel and spice.

President Nixon famously enjoyed Moutai during his visit to China where it's considered the 'national liquor’. Made from red sorghum grain grown in Guizhou (Kweichou) Province, the fermented mash is distilled seven times. Batches are kept separate then matured for years in earthenware jars which allow the alcohol to ‘breathe’. Finally, the distillates are subject to an elaborate vatting process, supervised by a Master Blender to achieve the spirit's unique aroma and flavour.
Often served at state banquets and presented as a diplomatic gift, Moutai's floral / yeasty / grainy flavour has also been compared to soy sauce, while its popularity is such that limited editions have become highly collectable. According to a report by Fortune Magazine, the spirit's "fiery flavour and potential to appreciate in price is driving blistering demand. That in turn has pushed its market value to more than $145 billion, well past British whisky giant Diageo."

This pink tinted gin is infused with strawberries grown in Huelva in Andalusia (reportedly they're the finest in Europe). It was conceived from a ‘mistake’: After a failed attempt at making a strawberry liqueur, the Master-distiller added the berry mash to a new gin and found the combination worked brilliantly. Puerto de Indias' hugely popular Strawberry edition is now part of the core range and complements the 'Classic' and 'Pure Black' gins in their portfolio. What makes this gin that little more special, is that Puerto de Indias insist on high quality, fresh ingredients in their products. Not just the strawberries but all the other botanicals are carefully sourced, including juniper, coriander, lime, grapefruit, orange peel and lemon peel. The result is perfect in Summer cocktails. Produced on the Voyer family's estate, planted to just 28 hectares in between Verrières and Ambleville in Grande Champagne, this full bodied 20-30 year old cognac presents attractive though restrained aromatics of ripe apricot, fig and subtle dark chocolate followed by hints of vanilla and clove. Soft and clean with nice length, continuing the dried fruit theme, before fine, drying tannins add freshness and finesse. Lingers with clove and vanillan oak followed by a touch of anise. The 'Gold' designation refers to the fact that it received gold medals in every competition it entered. 40% Alc./Vol.

High West Distillery and Saloon started with one man’s passion to make a great Rocky Mountain Whiskey. Proprietor and distiller David Perkins married his background as a biochemist, his love of bourbon and cooking, and his passion for the American West to bring the craft of small-batch distilling back to Utah. Rendezvous Rye is a blend of two exotic straight rye whiskies, with early batches marrying the rich aromatic qualities of a 16-year-old, 95% rye mash bill whiskey with the bold, spicy properties of 6-year-old rye to create a full-flavoured, complex whiskey, bottled non chill filtered for maximum mouthfeel. However, like most of High West’s production, that changes over time. More recent reports suggest it's a 4 to 9 year old, some of it sourced from MGP (95% rye), the remainder being High West’s own 80% rye, 20% malted rye whiskey. Ratios are not disclosed.
[BATCH 12H14 tasted] Deep burnished copper / gold ochre colour. First inhalations reveal a mild shellac note alongside charry American oak. Several minutes in the glass yields hints of mint and old liquorice strap alongside spicy, apply rye that's enriched with further exposure becoming more apple crumble / toffee apple like. The palate delivers a classic, punchy rye. A full, round delivery is augmented by lively, perfectly balancing spices. Crisp, dry mouthfeel. Excellent concentration. Terrific balance. An astonishing, great wine with remarkable vigor and freshness, this wine has a dark garnet color with considerable amber at the edge. A sweet nose of mushrooms, roasted herbs, tar, red and black fruits, and underbrush is followed by a wine with considerable opulence, flesh, and vivacity. The wine has terrific harmony and a long finish. It is an amazing effort that should continue to drink well for another 7-10 years.

The 10 year old Glenkinchie was superseded by the 12 Year Old. This one was on the market through the 1990s. Now discontinued.
The lowlands whiskies of Scotland in many respects reflect the landscape they are produced in. The countryside is certainly not without natural beauty, however it lacks the dramatic and rugged contrasts of the Highland and Island regions. Lowland whiskies consequently are generally used as background material for blends and have historically been unappreciated (or at least largely neglected) by malt enthusiasts.
Nevertheless, it would be a mistake to belittle the Lowlands. Their whiskies offer a refreshing contrast to the heavier, peatier malts of the north. Indeed, whiskies such as the twelve year old from the Glenkinchie distillery possess unique qualities of their own which repay due attention. Located near the village of Pencaitland and first founded in the 1830's, the Glenkinchie distillery has since been renovated and today includes a small museum.
Tasting note: This tasty, refreshing malt is typical of the character of lowland whiskies. Soft, smokey and sweetly aromatic. The palate reveals a grassy sweetness balanced with a warming, slightly spicy, drying finish. Exceptionally smooth. These qualities of Glenkinchie make it an excellent pre-dinner drink. 43% alc./vol.

Named after its most famous owner, Pope Clement V, Chateau Pape Clement in Pessac Leognan makes both red and white wine from their 32.5 hectare vineyard. Vineyards for the red wine is planted to 60% Cabernet Sauvignon and 40% Merlot, while the soils here are a complex mix of gravel and clay over a base of clay, limestone and sandstone. Maturation takes place in 100% new French oak, and while Bernard Magrez has refined the style since taking over winemaking duties the wines are still rich and lush in style with a concentration of ripe fruit.

The 2017 Pape Clément was not touched by the frost and was picked from 15 September to 3 October, manually de-stemmed berry by berry with some of the ripe stems added back into the blend (like Les Carmes Haut-Brion down the road). Malolactic is done in barrel where it aged for 18 months. It offers intense black cherry, raspberry, fig and sous-bois scents on the nose, tightly coiled at the moment with just a hint of cedar and tobacco. The palate is medium-bodied with ripe tannin, a mixture of red and black fruit, touches of cedar and white pepper, leading to a structured and fresh finish that leaves a spicy aftertaste. Classic in style, this Pape Clément will benefit from several years in bottle.

The 2017 Pape Clément is fabulous. One of the rare 2017s with a real sense of structure, Pape Clément possesses dazzling intensity from start to finish. A rush of dark cherry, plum, chocolate and grilled herb notes hits the palate as this majestic, towering wine shows off its personality. Time in the glass brings out a brighter and more floral set of flavors. The 2017 is the first vintage made with a portion of whole clusters, an inspiration Bernard Magrez takes from Châteauneuf-du-Pape, where he recently bought a small property. Quite simply, the 2017 Pape Clément is a magnificent wine by any measure. Don't miss it. The only problem with the 2017 is that yields are down 40% because of frost.

The Grand Vin 2017 Château Pape Clément is 55% Cabernet Sauvignon and 45% Merlot still aging in 60% new French oak. Harvest ran from the 15th of September to the 3rd of October, and I was able to taste this beauty on three separate occasions. Its deep purple color is followed by a blockbuster bouquet of ripe black cherries, blackberries, blueberries, graphite, and licorice. One of the more powerful, concentrated wines in the vintage, this medium to full-bodied effort has terrific purity of fruit, a mouthfilling texture, and present, ripe tannin. Too many 2017s lack excitement, but that’s not the case here. Give bottles 2-3 years and enjoy over the following 15+ years.

The influences of Balvenie and Glenfiddich (also produced by William Grant and Sons) are the basis for Grant's blended whiskies. The company has recently expanded its range with three new releases offering exceptional value for money and unusual depth of flavour by blended whisky standards. In fact, in a blind line up, you'd be forgiven for thinking these were single malts.
Like most distilleries with history, Grant's have accrued some colourful stories. Soon after William Grant began distilling in 1887 his sole distributor collapsed, and Grant was left with no outlet for continuing sales. He urgently needed to invent and market his own brand. In desperation, he passed the challenge onto his son-in-law, who, so the story goes, made over five hundred calls to various firms around the country. He managed to sell one dozen bottles! Business gradually improved, and the original Grants we know today was suitably marketed under the "Steadfast" label. The product enhanced its image to cater for numerous international markets, including the adoption of its striking triangular bottle. It's been rumoured that the whisky had favour amongst several heavy drinking Hollywood actors, purely on account of the bottle shape. If they dropped it on stage during rehearsals, it was guaranteed not to roll too far!
On release, Grant's Cask Edition No.1 is reputedly the only Scotch whisky to be finished in barrels that have previously held ale. Master Blender, Brian Kinsman, fills casks with Edinburgh Ale for 30 days, then replaces it with aged Grant’s whisky. The blend then mellows for up to four months, picking up "...creaminess and silky malt flavours".
Tasting note: Pale gold appearance with a pale straw hue. Moderate aromas offer notes of sweet grains, dusty cocoa and old cigar box. Unusual. Exceptionally soft and pure throughout, the palate delivers medium dry flavours that are difficult to pin down, with dried fruit / cocoa notes combining with almost chewy grains into the aftertaste. Fascinating and different, but not ground breaking, yet given the more than fair pricing, this should be a no brainer buy for whisky completionists. 40% Alc./Vol.

An Amaro made with a blend of Scotch single malt and single grain, infused with nine botanicals: allspice, hibiscus, coriander, lovage, kola, quassia, rhubarb, lemon and lingonberry. The whisky base is a blend of Ardmore seven year old, North British single grain and Invergordon 12 year old. The whiskies were blended in-house, then infused with botanicals and lightly sweetened with urban honey from rooftop hives in Edinburgh. It’s a cross-genre take, bringing together two seemingly incompatible categories that works a treat.
Tasting note: Pale ruby red. Dry, rooty, raw beetroot-like aromas give way to bittersweet, warming notes suggesting clove, cola, smokey cardamom, rhubarb, all-spice and bitter peel. The aroma-range follows in a full-bodied, highly textural Amaro with a medley of turmeric, saffron, quinine and lemon peel-like notes. The finish is earthy, spicy, bittersweet and long. The Giraud family have been growing grapes around France since 1650, yet only decided to produce Cognac under their own name in the 1980s. A long time associate of Giraud informed us "He became frustrated selling his thirty-five year old cognacs to Remy-Martin. His cognac was destined to become a part of the blend, Louis XIII [currently selling for around A$3000.] This was a very brave move during such times - he was one of the first to do so, but we are thankful he did, he paved the way for many more to come."
Produced from Ugni Blanc and Folle Blanche grapes grown on the family's vineyards located in the heart of Grande Champagne, this venerable expression has been aged in excess of 40 years. Giraud's older bottlings have been among the best cognacs we've tasted. 40% Alc./Vol.

Taking craft-production to a new scale is 'Hartshorn', a Tasmanian upstart making boutique batches of Vodka and Gin from their farm sheep whey. Ryan Hartshorn and family run what is presently the smallest distillery in Australia: batches of ten bottles are not unusual. The dedicated hands-on approach is extended to the packaging with every label hand painted.
Botanicals are vapour infused using a 50L glass column still (as opposed to steeped) giving the Gin a more delicate and subtle bouquet. Ryan adds, "Besides the juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). I'm using six Native Australian botanicals with three of them never used before in any other Gin."
Tasting note: [Batch 1 tasted] Clear. Atypical gin aromas of banana pudding / fruit yoghurt over later scents of citrus peel, rosewater and subtle piney juniper. A creamy, light, floral-soft entry. Medium-dry, low-key flavours of fruit yoghurt, orange spice cake and delicate white pepper / pine-like notes balancing the finish. Hints of rosewater and juniper late in the aftertaste. Lillet (pronounced lee-lay) is an aperitif wine; a type of drink traditionally enjoyed before a meal. It originated in 1887 in the Bordeaux region of France, a creation of the Lillet brothers, Paul and Raymond, distillers and merchants of spirits, soda, and candies. It was one of the first tonic wines, and became increasingly popular around the turn of the 20th century when tonic drinks were touted as good for the health. The ban against absinthe in 1915 also contributed to the popularity of the drink. In the 1950s and 60s, the golden age of cocktails, Lillet became the centerpiece of a number of drinks served in the fashionable bars and restaurants of New York City, where it was sometimes served flambé. It was also popularly served with gin in England.

While Lillet was originally a bitter tonic drink, the quinine content has now been reduced. There are now two types made - Lillet Blanc and Lillet Rouge. The Rouge version, made with red wine, appeared on the market in 1962. There are a number of options when serving Lillet. Lillet Blanc can be used in a Martini with gin and vodka and a lemon peel garnish; this drink, called a Vesper, was invented by the character James Bond in Ian Fleming's 1953 novel Casino Royale. Both can be served plain over ice or as the main ingredient in a number of cocktails.

After months of hard work we have secured good reliable stocks in time for summer and we are thrilled to have ended the Lillet drought in Australia. However, it's among the hottest items in town and it won't last forever. We advise you to stock up now to avoid disappointment. We are aware of this sounding like a cliche, but we can't think of the last time we made such a statement.
Tasting Notes: Brilliant pale straw colour with water like hue. Top notes of candied lime and orange blossom, above honey, ripe peach and apricot with subtle hints of strawberry and talc emerging. The palate delivers flavours of lime, marmalade, very ripe peaches and apricot above a layer of honey. Creamy mouthfeel. Back palate flavours of marmalade, peach and apricot persist through the crisp clean finish. Terrific length, depth and balance. Superb! Serve Chilled. 17% Alc./Vol.

The Watts distillery dates back to 1762 and had a proud tradition of producing good whiskies. Tyrconnell (named after a successful racehorse owned by the Watt family) was their flagship product and a best seller in the United States before Prohibition. Today, this historic brand has been kept alive by The Cooley Distillery who have received reassuring acclaim for their efforts. The reputation of Tyrconnell continues to grow and amongst other accolades, the malt was the proud winner of a Gold Medal in the Single Malt Category at the 2004 International Wine & Spirits Awards in London.

Tasting note: Gold colour with pale straw hue. The plush nose delivers aromas of creme caramel, ripe malt and spice. Exceptionally soft, round palate entry fans out into flavours of sweet dried fruits, cinnamon and clove. Perfect balance, finishing a little short, followed by a progressively drying aftertaste of vanilla wafer biscuit, caramel and honeycombe. Deliciously uncomplicated. 40% Alc./Vol.

The lychee is a rare sub tropical fruit originating in Southern China where the lychee is famed as "the King of Fruits". The lychee grows to approximately 3-4 centimetres in size, oval to rounded-heart shaped with a bumpy skin that is red in color. Once the skin is peeled, the crisp juicy flesh is white or pinkish, translucent and glossy like the consistency of a grape. Lychees have a sub-acid sweetness with a wonderful freshness. The fruit is also high in the antioxidant Vitamin C and the essential mineral Potassium.

The success and quick demise of the 2009 Ardbeg Supernova had peat lovers panting in their kilts all the way to St.Andrews for another. And here it is!
For those who have never heard of; or experienced Ardbeg Supernova, it was the peatiest whisky Ardbeg made. Over 100ppm (phenols per million, a measure used to dictate the smokiness of a whisky). Contrast this with the likes of Laphroaig or Ardbeg 10 at roughly 50ppm and bombs away.
When deliberating as to what differences between this years and last may be, Ardbeg have put it simply: "The new 2010 expression is out of this world – even deeper, stronger and earthier than the award-winning 2009 edition." This release also boasts a slightly higher ABV at 60.1% compared to the 59.6% on the previous years release.

Entirely vinified in oak this Champagne pours well with a white frothy mousse followed by a deep straw pale gold base wine colour with a very fine bead that has excellent persistence. The nose is quite rich and full exhibiting aromas of toasty yeast lees, almond, baked bread and hazelnut. Reflective of the nose the palate possesses big rich flavours of toast, yeast lees, almonds and baked bread finishing with some nutty hazelnut like characters on the back palate. Clean dry finish with a nice creamy mouthfeel. Long aftertaste of toasty yeast lees, almond and hazelnut.
Drink over the next 3-4 years.

Composed of 48% Pinot Noir, 32% Chardonnay, and the rest Meunier, the NV Champagne Sous Bois is always aged on lees for five years. Made with 26% reserve wine and two grams per liter dosage, it pours a touch deeper golden straw color and is aromatic of fresh baked bread, marzipan, peaches, and marmalade. It’s not as oaky as I’d remembered it from previous tastings, with the blend feeling more harmonious and integrated. Full-bodied but not overly opulent, it fills the palate with a supple richness although it’s fully dry, and its nuttiness is still present but doesn’t dominate the wine. It would be paired exceptionally well with Comte cheese. 2 grams per liter of dosage, disgorged the second quarter of 2023. Drink 2024-2040.

Other reviews...... The whisky is once more intense and fruity but this time it plays off against a more herbal green apple note, smoke from the hearth, and a touch of spice. There’s also cinnamon—which is fast becoming a house style. Encouraging stuff.

Cognac is a huge earner for France, with exports frequently representing over 90% of total cognac production. Well over 100 million bottles are sent to key markets such as Asia and the U.S. each year. At the same time, more than half of the cognac market continues to be controlled by three major houses: Hennessy, Martell and Remy Martin. In marginal markets like Australia, this has meant the availability of artisan products has been over shadowed by the promotional power of the 'big three'. Unfortunately, big name brand V.S. and V.S.O.P. bottlings, while generally offering pleasant enough drinking, of late have delivered nothing to get particularly enthused by.

The Giraud family have been growing grapes around France since 1650, yet only decided to produce Cognac under their own name in the 1980s. Paul Giraud Heritage has been maturing quietly in the family cellars for over fifty five years. Presumably this material was destined to be sold off to Remy-Martin, Giraud's vision and bravery allows us the opportunity to taste this extraordinary spirit, bottled directly from the cask, without the taint of caramel or other younger Cognacs.

Tasting Notes: Pale gold colour with water like hue. An astonishing nose. Pristinely clean perfumed aromas of spice, marmalade, cedar, peach, almond and a hint of talc leap from the glass. As the Cognac warms, the array of aromas changes dramatically, continuing unprecedented levels of aromatic pleasure. The palate entry is plush, warm and velvety - almost seductive - offering wave upon wave of strong spicy plum pudding, stone fruit, exotic spices, vanilla, with a vibrant, fresh background. The finish is exceptional, much like this tasting note it just keeps going and going and going. Perfect balance. Extraordinarily long peach, apricot and spice aftertaste. Among the very finest spirits on the shelves at Nicks Wine Merchants, and (relatively speaking of course) a bargain - we recommend pouring this at least twenty minutes prior to tasting to allow this spirit to blossom. 40.0% Alc./Vol.

English brands don’t get much more ubiquitous than Tanqueray, the British gin which is one of the best-selling spirits in the world. However, there's a premium alternative that is less well known. Made from 100% grain neutral spirits, Tanqueray No.Ten is one of the only gins produced using hand-picked, whole-fruit, fresh botanicals. Under the watchful eye of Tanquerays master distiller, a small batch distillation imparts an exquisite depth and character helping to develop the 'heart' of the spirit through redistillation. This is a gin to create the classic Martini. Alternatively drink straight up, chilled with a twist of lemon. And, naturally, the extra ABV makes all the difference. 47.3% Alc./Vol.
Other reviews... strikes an immediate impression in its iconic, monolithic bottle, one of the best-designed decanters on the market. The gin inside clearly adheres to the Tanqueray formula, but it extends that with a bit more citrus. The company claims it is the only gin to use handpicked fresh fruit in its distillation, including white grapefruit, orange, and lime. There is also chamomile in the mix, a curious addition. What comes through in the finish is, of course, juniper, and all three of the citrus fruits mentioned. Grapefruit, for sure, with orange and lime more of an afterthought.
