    Bakery Hill is a new Australian venture into the generally exclusive world of Whisky production. We say exclusive, because few distillers outside of Scotland have yet managed to create a whisky that approximates to the quality or style of the Scottish original, or when they have, the whisky has usually relied upon the importation of key ingredients from the ‘homeland’. Bakery Hill’s Single Malts, despite their youth, are very promising initial efforts, and as the spirits spend longer in barrel, one can anticipate some very interesting results.
    As with classic malts, Bakery Hill uses only malted barley [from Tasmania], yeast and water to achieve its flavour and aroma. No caramel is added in order to enhance the appearance. Barrelling at Bakery Hill is done using select second fill American Oak Bourbon barrels. French Oak casks are also used for the production of the classic double wood style.

    This, the first release in the new Beam Distillers Collector's series, commemorates Jacob Beam, a Kentucky farmer, who operated a grain mill and ground grist for locals - a portion of which was always reserved for the families private use - to make whiskey. It was in 1795 that Jacob finally began commercial production, however it was not under the Beam Label. Consistency of style has been maintained by using the same yeast cultures for over 60 years, derived from an original culture made by Jim Beam himself on his back porch. Beam Bourbon is the product of six generations of distillers with only one enforced break in production between 1920 and 1933 when prohibition was introduced to the U.S. It was following prohibition, (during which time the distillery had been shut and sold to the U.S. government) that the bourbon was named "Jim Beam" after the head of the Beam family. To drink Jim Beam then is not only to taste its full bourbon character, but something of its American heritage. 37.0% Alc./Vol.

     The flavours of old New York, inspired by the pickle vendors of Orchard Street. Use a few drops to add a briny flavour to foods and drinks.

    During colonial times, shrubs were extremely common – vinegar-based refreshers, many times combined with alcohol or allowed to ferment so they had a bit of a kick. One of the classic flavours during the tenement era was Dr. Brown’s Cel-Ray Soda, a celery soda so popular during the ’30s, it was nicknamed the Jewish Champagne. Though the only flavour that was declared was celery seed, it's likely there was a bit of ginger and apple added in too.

    In this latest effort, Bitterman's have taken all of these ideas and run with them. Brine, celery, apples and vinegar - all dedicated to Orchard Street, home of the Lower East Side Tenement Museum. In conclusion they comment, "Funny that something that we made to honor the Eastern European immigrant experience works so damned well with Scandinavian Aquavit!"

    Each new Octomore generates a degree of anticipation and excitement from malt devotees and collectors who have an appreciation for whisky at the extremes. The seventh edition of this cult whisky continues its precedent as one of world's most heavily peated drams. It is also something of a landmark release as it represents the last Octomore created under the influence of Master Distiller, Jim McKewan. Having carried on the role since 2001, McKewan announced his retirement from the company in June. This Octomore release was actually held back in order to coincide with his departure. He will continue acting as a consultant for the Islay distillery.

    Once again the Bruichladdich maltsters faced a challenge with the barley harvest destined for Octomore - to try and coax as many phenols into the grain as they can. This is a delicate, inexact art rather than science, the results varying according to a complex suite of factors. It's part of what makes each edition unique, limited, finite.

    7.1 employs barley exclusively sourced from the Scottish mainland, peated to 208ppm. After five years in American oak it was bottled all natural, at a cask strength of 59.5% Alc./Vol.

    Jim McKewan describes the nose as: “Like sea spray and caramel, lemon balm and pipe tobacco. Slowly, the peat rises from the glass, gentle but strong, lifting vanilla, mint, toffee, golden syrup and almond.” On the palate, he finds: “Smoothness, sweetness and then smoke. A texture like no other, satin soft and devilishly warming. The American oak influence is in perfect tune with the smoke and soft fruits that have been delicately coaxed from the still during an exceptionally slow distillation.” He adds, "This dram will transport you to Islay, to watch the sun setting over the sea while breathing in the peat smoke hanging in the air."

    Paul John ‘Brilliance’ is the first in the range. An un-peated malt matured in ex-bourbon casks. The second is ‘Edited’ with about 20% of the malt being peated Scottish, and again, matured in ex-bourbon American oak casks. Both are non chill-filtered.

    Tasting note: Polished copper. Offers up fruity malt, hints of ginger bread, light cinnamon and vanilla. Similar in many ways to "Edited" but with the oak adding firmness and drying the mid-palate. Fresh and lightly spiced delivery; some nice fruit'n'nut chocolate characteristics feature amid the juicy malt. Excellent balance. 46% Alc./Vol

    Other reviews... Paul John is taking its entry into the world of single malt very seriously, and very slowly but surely. After two single cask offerings to find its range, Brilliance and Edited are its first general releases. Brilliance is unpeated and is a delight: rich, full, young but not immature, and with lime and citrus Starburst chews, sweet candy, and some icing sugar, it trips across the palate.     ‘La Gritona’ is Spanish for ‘The Screamer’ - an appropriate name seeing that one of the people behind this outstanding tequila is LA-based punk guitarist Andy Coronado. The other significant player is the renowned tequilero Melly Cárdenas, who fashions La Gritona at her small distillery in Valle de Guadalupe in the highlands of Jalisco. One of Mexico’s few female master distillers, the fiercely independent Cárdenas—who has 20 years of quality tequila production under her belt—shares Coronado’s love of the exceptional and unconventional, and leads a team staffed by only local women.

    In a market dominated by major companies like Herradura, Patrón and Fortaleza, the duo set out to create a rocking, pared-down Reposado that would stand out by staying true to the region’s heritage. For a Reposado, La Gritona is light on colour and sweetness—Coronado and Cárdenas want none of the flavours that mask many commercial Reposados like vanilla, chocolate and dulce de leche. Instead this is packed with delicious, honest and savoury, roasted agave flavor, reminiscent of the old-style ‘rested’ tequila, before the mass market took hold: “It’s tequila like our grandparents drank,” says Cárdenas.

    Working with 9- to 10-year-old, mature Blue Weber agave grown in the iron-rich red soil of the Jalisco highlands, every step of production after harvest takes place under Cárdenas’ own roof and with an attention to detail that the big boys, or those outsourcing distillation, cannot hope to replicate. The agave is steam-cooked in a single, thick-walled earthen oven for 24 hours and then allowed to rest for another 24 hours before crushing. The collected liquid is naturally fermented (no additives are used to push things along) in open steel vats at a rate dictated by the ambient air temperature and the wild yeasts, usually lasting between six to nine days. The double distillation takes place in small steel stills. Those bespoke bottles by the way are made from recycled Mexican glass, hand-blown just an hour’s drive from the distillery. Coronado uses any recycled clear glass he can find (mostly old Coke bottles) then chips in a few Dos Equis bottles for the green tint!

    The distilled blanco is then rested in reused American whiskey barrels for eight months before bottling. These low-impact second- or third-fill barrels are given only the lightest char which allows for the refreshing, sappy notes of the agave to shine through, resulting in a tequila that sips and mixes perfectly in equal measure - it’s crisp, clean and elegant and kills it in a Tommy’s Margarita. Tasted uncut, the bouquet offers stunningly pure and keenly fresh scents of brine, dill pickles, capsicum, black pepper and pine sap; Five minutes stirs up sweeter scents of grilled pineapple, vanilla and coconut butter. The silky, medium bodied delivery is gently sweet and wonderfully elegant; Capsicum, green pine and white pepper feature while sappy agave flavours finish the profile with admirable balance. Seamless from start to finish, this stands out from Reposado pack. Highest recommendation. 40% Alc./Vol.

The palate offers distinct tropical fruit notes, opening with lychee and a faint floral hint, plus a faint waft of ripe-banana funk midpalate.     A blend of Chardonnay and Pinot Noir, this sparkling forms a foamy white mousse which fades into a pale straw coloured base that’s finely threaded by a steady bead. Citrus, baked bread and pear aromas are trailed by some yeast lees and subtle chalky notes. Well meshed flavours of citrus, apple, baked bread, yeast lees and biscuit grace the mouth watering palate which is sculptured by crisp acidity.     The Cardrona Distillery is a family-owned and managed distillery nestled high in the Cardrona Valley between Wanaka and Queenstown. Their gin is produced from both copper pot and column distillation and employs local Cardrona botanicals including juniper, coriander seed, angelica root, lemon and orange zest. Seasonal rose hip, first brought to the district by the Chinese, is also used.

    Tasting note: [Batch 0002 tasted] Brilliant clarity. Penetrating aromas excite the senses with intense juniper, menthol and crushed eucalyptus leaf freshness followed by white pepper, coriander seed and lemon peel. Five minutes air contact accents celery leaf and subtle cardamom. Neutral entry builds to a concentrated, medium-dry, peppery, lemon sorbet attack. Finish is textural, zesty, drying and citrus peel-fresh; Aftertaste sees juniper and lively spices trailing off in a pure, pine-wood/juniper and mineral farewell. Structured and complex.     First released in 2014, Craigellachie's 13 year old is a perfect introduction to the distillery's heavy distillate, partly the result of short fermentations but also due to enormous stills with straight lyne arms adding reflux. Even from a 30ml sample, it's a whisky with terrific depth. Fruity, almost floral aromas hint at lucerne mulch and new leather, slowly giving way to ripe orchard fruits - especially green apples. The palate sports delicious, buttery-malt and spicy pear flavours with more pepper, late fruitiness and lingering spices. Some tasters also note a slightly sulphury / smokey edge (think spent matches). This style won't be for everyone, but it is undeniably one of the more distinctive malts in its price bracket. 46% Alc./Vol.

    Other reviews... Light amber. The initial impression is one of bulk. There are heavy florals — think lilies and stewed white fruit, and just-overripe banana — but this is given a mysterious extra heft by an underpinning of a light meatiness, accompanied by a tiny lift of (good) sulfur. The palate is, unsurprisingly, thick and creamy with huge fruit that fills the mouth. A highly physical, old-style Speyside dram with classic distillery character.     ...You couldn’t make a label look more ‘retro’, could you! Unless you start using hieroglyphs or cuneiform alphabet. Colour: straw. Nose: it is a milder, rounder and sweeter version of the 2003, but the background is similar. Wee touches of mezcal again, a little earth, a little sulphur (spirit sulphur) that borders almondiness (what?), plenty of apples and then a few raisins and a touch of vanilla. It’s got a style, and that’s just great, even if it does nose a little young, almost as much so as the DL. Mouth: a few burnt notes in the attack, notes of distillation, cooked sugar and herbs… But it gets then cleaner, maltier and slightly smoky, with a bitterish edge. May lack a part of the DL’s vibrancy (as the pros say.) Finish: rather long, between candy sugar and this bitter side. Grapefruit skin. Comments: mixed feelings here. On the one hand, I find the honesty and the nakedness fantastic, it’s not botoxed whisky at all. On the other hand, I find it a little raw and bitter.     Bouvet Ladubay is regarded by many wine lovers as the finest expression of sparkling wine from the Loire Valley. The house was founded in 1851 by Etienne Bouvet, the son of a vigneron-sommelier who encouraged the young Bouvet in the wine trade. Recognizing the Loire's terroir to be extremely well-suited to the production of sparkling wines, he settled on the bank of the Loire River just outside the town of Saumur. Ms. Ladubay, Etienne’s accountant, soon became his wife, and the firm was christened “Bouvet-Ladubay”.

    After many years of ownership by Champagne Taittinger, Bouvet Ladubay is once again fully owned by the Monmousseau family who have continuously run the business since their purchase in 1932. Bouvet Ladubay employs precisely the same wine making process as Grand Marque Champagne, delivering French sophistication at an everyday price. The grapes for the Bouvet 'Blanc' methode champenoise are predominantly Chenin Blanc, a varietal which has been grown in the Loire Valley prior to the Roman conquest of France. Bouvet source their grapes from 120 properties around Saumur - spread over an area of 15 x 30 kilometres. The notion of using such a diversity of vineyard sites is to provide complexity to the base wines. Domaine Chandon in the Yarra Valley employ a similar process. These 120 micro climates each provide the wine maker with base material that when blended together will create the sensation of considerable complexity. The art of blending is critical and at Bouvet the third generation of blenders from the same family are in charge - in fact they have been creating the blend for the last 60 years. State of the art, temperature controlled stainless-steel fermentation tanks, computer-regulated 'gyropallets,' or riddling machines, highly advanced freezing and disgorging equipment and micro-wave cork heaters have brought Bouvet’s vinification facility to the technical forefront. The winery itself, however, remains an impressive monument to the region’s history with the wines spending their final maturation period within freestone cellars built by Saint Florent monks around 1040. These tunnels cover some 2.6 hectares with eight kilometres of subterranean cellars - storage capacity for some 7,000,000 bottles!

    Vedrenne distill the whole fruit of this subtropical citrus in a steam heated Charenteis still, which seems to work in capturing its pleasantly tart character. Bottled at a relatively low 15%, this is also surprisingly light and dry for a creme, offering a snappy burst of delightfully zesty pink grapefruit flavours with a mildly bitter, acidic finish. A fresh, Summery liqueur that's true to the fruit.

    Other reviews... Coppery/tawny appearance. The alluring aroma is floral (think violets) at first, then it turns bean-like and pleasantly nutty after about five minutes. The palate entry is keenly astringent while at the midpalate point a baked nuttiness comes on strongly in bitter tastes of molasses and oak. Aftertaste is long, sap-like, sugary and dry. Superb. 40% Alc./Vol.

    The wines of Moulin Touchais begin reaching their peak after twenty years, and many of the great vintages will take much longer. Vintages such as the 1953, 1959, 1964, 1969 are still maturing. The 1945, 1947 and 1949 have become classics. Moulin Touchais are the only winemakers in the world who give a century long guarantee on the longevity of their wines (subject to being kept under optimal cellar conditions). Bottles may show some sediment or deposit. One should understand this is due to the traditional filtration process, the main aim being to protect the colour, the bouquet and the depth of flavour of the wine.

    Brilliant pale gold colour with deeper tones of gold to the edges. The bouquet has surprising freshness to it featuring intense aromatics of pear, baked apple, apricot and orange marmalade followed by lighter honey notes (than the 2005 & 2007), a hint of quince and spice. Rich, gorgeously textured and possessing terrific purity of fruit, vibrant fresh acidity then chimes in to give some cut on the finish. Honey coated apricot flavours are to the fore with ripe pear, subtle quince, pineapple, marmalade and spice ensuing. Concludes with a long, layered aftertaste that has abundant freshness.

Uncle Distillery is as a pleasant visit upon your eyes as it is your taste buds.

    Apart from the juniper, this gin employs a full repertoire of native Australian botanicals (14 in total). The Lemon Scented gum (citriodora) makes a particularly strong contribution. Smelling this evoked memories of planting an avenue of saplings. The species has soft furry leaves prior to maturity. Rubbing the leaves between your fingers releases the oils along with a delightfully fresh lemon/eucalyptus aroma. Other notable ingredients include native Wattle Seed, Lilly Pilly, Lemon Myrtle, native ginger and Finger Limes.

    Tasting note: Crystal clear. Wow! Captivates from the get go with its individualistic bouquet - an alluring combination of lime juice, crushed citriodora leaf and subtle liquoricey notes - juniper takes back seat. A light entry builds to a concentrated, beautifully balanced and wonderfully fresh citriodora leaf and lime peel mid palate with hints of juniper and anise, finishing pleasantly peppery with excellent persistence. You know I am passionate about Aussie gins (I’ve even created a lovely event for you to try some) so when I came across Botanic Australis gin at Top Shelf Boutique Drinks Festival today (expect a round-up later) I couldn’t wait to write about it! It was definitely my ‘Gin of the day’. Where to start? It’s craft-distilled in North Queensland at the Mt. Uncle Distillery (there is a Mt. Aunty too!), contains no fewer than 14 native botanicals, (including three types of myrtle, finger limes and lilly pilly), and is both distinctive and delicious. The gentleman serving me described it as “very herbaceous”. And so it is. A hint of juniper, a mouthful of warmth and then the botanicals play a fandango (look it up) in your mouth.     Formally branded ARTEMIS, Anther's single-estate/seasonal limited edition is a take on the traditional Sloe style. Cherries are sourced from Simon Spreyton of Spreyton's orchards, a small family owned farm in Northern Tasmania. Their fruit is highly sought after in Asian markets where it commands a premium. Cherry season is between mid-December and mid-January, hence this release is annual. Production remains true to this distillery's garagiste approach - 200kg of cherries are stoned by hand (that's about 12,000 cherries!) then placed in holding tanks to macerate in gin. The vivid red liquid is then strained, diluted and a little sugar is added before bottling.

    Tasting note: [27% ABV/Vol. tasted] Slightly cloudy ruby red. Retains a piney, cool mint, lemony freshness through the cherry glace, blackcurrant and dried cranberry notes making for an enticing combination. Creamy cherry nectar and cranberry juice flavours over hints of black pepper and pine with late citrus and herbal tea notes lifting the finish. Nicely done; would love to see it at higher. Expect a light sediment.

    Tuaca is from Northern Tuscany, and is made using aged brandy and local fruit essences. Vanilla and orange flavours dominate the blend which possesses a trademark smoothness that has made it highly accessible and extremely popular as a mixer. The origins of the drink are a little unclear, however the original recipe is said to date back to the Renaissance. One story has it that the liqueur was created for Lorenzo the Magnificent the then ruler of Florence, who was a patron to the great artists, Michelangelo and Botticelli. During World War II, American servicemen stationed in Livorno, Italy (a seaside resort city on Tuscany's Mediterranian Coast), discovered Tuaca. They searched for the brand upon their return to America, but were unable to find it until the late 1950's, when an astute importer brought Tuaca across the ocean. First a favorite in Northern California, Tuaca began gathering a following on the West Coast. Grass roots momentum fueled the brand's popularity, as well as locally created drinks such as the Tuaca Hot Apple Pie and the Tuaca Lemon Drop. Its one-of-a-kind flavour also led people to use it not only as a chilled, straight shooter, but also as a highly versatile mixer. The product is still crafted today by the Tuoni family in Livorno.

    A blend of Grande Champagne cognacs distilled in the 1920s along with 5% from 1905 and 30% from 1906 with both Colombard and Folle Blanche in the mix. In terms of sheer finesse, effortless delivery and depth, Lot 29 is a high point in the Tesseron collection. The age of the material is on full show in a complex medley of dried fruits, honey, dark chocolate, liquorice, pipe tobacco and cigar box, rounded off in a super-fine, medium-long finish of hazelnut dark chocolate, saffron and feathery tannins. The alcohol is barely discernible. It may lack the power and length of its siblings, but this is easily Tesseron's most feminine and seamlessly integrated cognac - also one of the rarest. It's reported that only a few more years of production remain. Tasted from a 50ml sample. 40% Alc./Vol.

    ...Aged by three generations, they say. But is this a 1929 indeed? What's sure is that Lot N°53 had already been quite sublime two or three weeks ago (WF 90). And never mind those 40% ABV, which are really out of fashion and have become quite devalued. Colour: deep gold. Nose: it's probably a little difficult after the Valleins, we're actually closer to some very old calvados here, it rather whispers and sighs, being a little herbal beyond some ripe apples and peaches that, having said that, keep expressing themselves after so many years. Affabile and con tenerezza. Mouth: more action than I had thought, but we remain far from the others – and far from Tesseron Lot N°53. Some sweetness, syrups, Nescafé (I know), a little pancake sauce, mead… Finish: shortish, on herbal teas, chamomile, stewed peaches… Some candy sugar in the aftertaste. Comments: I know I tend to be rather kind towards very old spirits, and of course, this cognac from the roaring twenties remains as nostalgic as an old Bugatti, but I believe that here the engine has lost a little horsepower.     ..."This sits in the 'classic range' but is called 'Exception' because 'this is where Grande Champagne really soars'. Distilled in the 1920s and contains some colombard and folle blanche. 'This is pretty much what I consider my grandfather's Cognac, 1920s distilled but with a portion from a 1905 demi-john. For me this is a bit like a book, every time you go back to it it changes, something very special; the rancio is quite strong, but very different from the 1953; very special for us, and very rare to have it tasted, if at all.     Tasting note: Bright brassy gold. Fragrant and fruity malt with a toasted marshmallow accent. Medium bodied, clean and nicely defined with delicate poached pear fruitiness. Aperitif styled towards the finish with suggestions of pepper, wood and marshmallow in the aftertaste. Improves on the 12 Year Old, demonstrating that age statements aren't everything! 40% Alc.Vol.

Their renewed attention to detail is also evident in the new bottle design, introduced from the 2013 vintage and featuring a smart engraved logo. The 41 hectare vineyard is planted on clay over limestone soils, with a varietal mix of 93% Semillon, 6% Sauvignon Blanc and 1% Muscadelle.

    The 2015 Lafaurie-Peyraguey was picked from September 14 to October 21 at 18hl/ha via four tries, and matured in 65% new French oak for 16 months. There is 131g/L residual sugar. It has a very pure, seductive bouquet of quince and honey; later, pineapple and saffron aromas gently unfold in the glass. I find this has a touch more nuance and complexity than the 2016. The beautifully balanced palate offers superb tension and notes of wild honey, crème brûlée, praline and a hint of ginger. The acidity is brilliantly judged, and there is a sense of swagger on the finish. You could actually commit infanticide and drink it now, although I would prefer to wait at least a decade. It will certainly have a long life and will give a lot of drinking pleasure. Tasted from an ex-château bottle sent to my home. Drink 2023-2060.

    This 36-hectare estate made a stunning Sauternes and the 2015 Château Lafaurie-Peyraguey (mostly Sémillon with 6% Sauvignon Blanc and a splash of Muscadelle) is loaded with notions of caramelized peach, orange marmalade, honey, and citrus oil. Full-bodied, incredibly opulent and rich, yet with good acidity, it’s a big, rich 2015 that has the concentration to keep for two decades or more. Tasted twice. This estate also utilizes Denis Dubourdieu as a consultant. Drink 2018 - 2038.

    The oldest Petite Sirah vines on the Lytton Estate were originally planted in 1901 but it wasn't until 1972 that they made their first wine from the property. In 2002 bottling began with portions of the Petite Sirah made as a separate wine for a limited release offering, before that time it had nearly always been included as part of the Lytton Springs Zinfandel. In 2003 another was made for limited release and it wasn't until 2009, nearly 40 years later, that the wine was finally made available for national release!
    Now, along with all their other wines, it takes pride of place amongst any American offering and continues to set a high benchmark for quality wine production that all wineries should strive to achieve.

    Crushed red and purple wildflowers, blueberries, cassis and leaves, all intermingled. This has a superbly juicy array of fresh and succulent dark plums and blackberries and delivers it all in effortlessly attractive mode. 94% petite sirah and 6% zinfandel.

    The 2017 Petite Syrah Lytton Estate is another superb wine from Ridge's Lytton ranch. Inky dark fruit and expressive savory notes infuse this bombastic, heady Petite with tremendous nuance and surprising freshness. The 2017 is very young at this stage, but it clearly has the structure to age. My impression is that it will be even better once some of the baby fat melts away. Even today, though, the 2017 is superb.

    The inky colored 2017 Petite Sirah Lytton Estate (94% Petite Sirah and 6% Zinfandel) comes all from the Lytton Estate in the Dry Creek Valley. It has a powerful bouquet of spice plums, blackberries, scorched earth, and chocolate that gives way to a medium to full-bodied, ripe, opulent red with the depth and density to keep for 10-15 years. It has plenty of upfront baby fat, so give it a year or two of bottle age.

    Made in a single distillation with the botanicals individually distilled then blended together. Opening round of sniffing detects scents of woody, piney juniper, citrus peel, light coriander and trace anise combined with menthol freshness. Palate flavours are well integrated in a medium-bodied, creamy melting pot of juniper, lemon oregano, thyme and cardamon. Finish sees the oily citrus and pepper notes take charge. Ends lemon lozenge-like, long and perfectly balanced. Non chill filtered, so it may louche. 47.4% Alc./Vol.

    Other reviews... Single Shot or London Dry gins often have a little bite to them. The alcohol is a little more present, and coupled with bottling at 47.4%, this gin packs a punch. Its profile hits all the markers for a classic London Dry, coupled with the use of Australian botanicals, it's an excellent example of a traditional gin being made through the lens of an Australian distiller. Juniper penetrates the whole palate, with cardamon helping to bring out its fresh, green characteristics.     Skye is a new addition to the range as of 2015, named after the beautiful island on which the distillery resides. It follows in the footsteps of an increasing number of distilleries now offering NAS (No Age Statement) bottlings. Matured in a combination of refill and toasted American oak, with a slightly higher proportion of the latter, by all reports, this is a toned down and highly accessible Talisker with a slightly sweet edge. 45.8% Alc./Vol.

    ...The latest release from Talisker is an NAS bottling which contains whisky matured in toasted and refill American oak casks. According to the distiller, this is “An easy-drinking Talisker…more approachable, but still definitely Talisker.” Certainly approachable on the nose, with tangerines, honey, and milk chocolate, before ozone and peat smoke develop. Ginger and a hint of coal tar. Medium-bodied, with citrus fruit and increasingly hot spices, though never overwhelming.     ...I have to say the first batches, around 2014 or 2015, did not quite convince me but as they say in rock and roll, you sometimes need tough love… Colour: light gold. Nose: it’s nice-ish, it’s just not very complex, although, could be that they improved the recipe, I’m not too sure. I find less of the straight coconut-and-vanilla elements this time, and more tin, concrete, menthol, camphor and green pepper. Mouth: the oak feels, there’s a drying bitterness, then salt and lemon peel. I find it tough, and god knows I love the 10yo, which shouldn’t be that older. The oak gets louder (sawdust). Finish: medium, gritty and drying. Needs polishing. The aftertaste is a little nicer, read more on smoked brine, but that’s a little late. Comments: duties done, can we have the new 31 Prima & Ultima now? Seriously, there are only two Taliskers which I don’t like a lot, Skye and Port Ruighe.     From a family-run operation out of Le Marcha, a region north of Rome on Italy’s Adriatic coast, this moreish digestif is an infusion of aromatic herbs using a recipe dating back to the turn of the 20th century. The base spirit is said to be distilled from molasses and beetroot, complexed with hints of anise, saffron and violets plus an array of other less subtle spices. The style is softer, rounder and notably less bitter than other Amaros - having said that, there's nothing else lacking, and it's approachability means it's a perfect introduction to the category. We loved it straight over ice or with soda but it also works as a substitute for vermouth in drinks like Manhattans. 32% Alc./Vol.

    ...The aroma is sultry, if a touch medicinal and sharp, with notes of bitter orange peel, dried saffron, and violet, although a dark caramel sweetness helps to round some of those edges. The palate is full-bodied and cool with sugary orange slices, cinnamon, dried clove, red licorice, and a garden shop of florals, all brighter notes that nicely contrast the rich molasses and brown sugar at its core. This is definitely a gentle amari, with only a mild bitterness that really doesn’t arrive until the finish, and even then, it doesn’t stick around for long. It’s a great digestivo for those looking for a sweeter way to end the meal. As for cocktails, a little can go a long way with this one, so tread lightly when experimenting with your next Manhattan (a full ounce is probably overdoing it).     At the age of 17, Don Julio Gonzalez opened his first tequila distillery in 1942 in Atotonilco el Alto in Jalisco. His name has been synonymous with luxury tequila ever since. The distillery hand selects every one of its blue agaves at the peak of their sweetness and ripeness—waiting up to 12 years before harvesting. Rich clay soils and larger planting spaces help to ensure maximum nutrition and sunlight, resulting a sweeter Agave for premium tequila production. The Agaves are then slowly cooked in masonry ovens at Don Julio's 'La Primavera' Distillery, where the juice that is obtained is subsequently double distilled. Clear in colour, the bouquet evokes Marzipan, baked citrus, brine, dill and green peppercorn aromas (almost like opening a fresh jar of Polish pickles). The semi sweet palate offers spicy, smokey roast pineapple and salty capsicum flavours . Warm, glycerous, silky mouthfeel. Finishes salty and clean with white pepper and citrus aftertaste.     Small batch bitters are surely making their mark on the cocktail scene, with cocktail enthusiasts and bartenders rediscovering the long lost recipes of the golden era and coming up with new signature flavours which help create the palate of the New Age Cocktail.

    While living in San Francisco in early 2007, Avery and Janet Glasser used high proof spirit and a variety of herbs, peels and spices to create what would be their prototype recipe for the Xocolatl Mole Bitters and catalyst for their new venture.

    The summer of 2010 marked a dramatic rebirth for Bittermens: winding down previous licensing agreements, striking new partnerships (i.e. The Bitter Truth) developing new products and most importantly, leasing a commercial kitchen. All Bittermens products are now being made by hand at their Brooklyn facility using primarily organic ingredients.

    After the rousing success of their ‘Elemakule Bitters, Bittermans have produced a new bitter that celebrates both the return of summer and their return to Boston after 14 years. It’s citrus, citrus, citrus and more citrus, supported with a heavy dose of chamomile. Try it in your favorite fizz, sour or bright tropical drink. It works extremely well with pisco and scotch as well.
