Single Grain

"I wish I had a twenty pound note for each time I had been told in recent years how much someone enjoys a single grain" says Jim Murray, "The ones the connoisseurs die for are the older versions." Grain whisky is distilled in a column still from a variety of cereals like corn or wheat with a touch of malted barley for good measure. It's wood matured and, yes, it's classified as genuine whisky. Just like single malts, grain whiskies have their own style and signature. But because they've been almost entirely reserved for the blended whisky market, they've been much harder to find. It's only in the last decade that more and more single grain whiskies are being offered to flaunt the fact that they can be stunning in their own right - and some with prices as big as their age statements!

    Notes from the bottlers.... Distilled in 1992 at the Cameronbridge distillery in Fife Scotland, this spent 28 years in an ex-bourbon cask. Cameronbridge is both the oldest and the largest grain distillery in Scotland.     Invergordon is one of the big names in grain whisky in Scotland. Established in 1960, these days the plant produces top quality single grain for Whyte & Mackay. This version is from Cooper’s Choice and comes with a considerable age statement. In total, 282 bottles were released from a Bourbon cask at 42.5% Alc./Vol. Non chill filtered.

    Despite being the oldest Loch Lomond we've stocked to date, the price remains modest. Having said that, it should be noted, this is a Single Grain, not a single malt. Yes, Highland Single Grain exists and Loch Lomond continue to market one to this day. Their official NAS bottling has taken out numerous awards including a Double Gold at the World Spirits Competition and Best Single Grain at the World Whisky Awards in 2017. The twist is that while this is created using a continuous still, Master Distiller, Michael Henry uses only malted barley, instead of corn or wheat or other grains typically associated with the category. So, it's essentially a Coffey distilled single malt, which explains why it delivers added complexity. Reports have it there may even be some peated barley in the mix.     Normally Port Dundas comes to market at 20 years plus. Young but very, very affordable, this is another opportunity to experience Port Dundas on a limited budget. Although it closed its doors in 2010, indies continue to release glimpses into the glorious past of one of Scotland’s most respected and historic grain distilleries. The last time we tasted one at twelve years of age, it was a fabulous cask strength bottling from 'North Star'. This Cooper's Choice edition comes with a Caribbean twist: initially matured in Bourbon barrels, it was finished in a Martinique Rum Cask before bottling at a whopping 60.5%. The fruitiness of the rum should really complement the distillery style here. 300 bottles from the out-turn, also one of the last distillates Port Dundas turned out before closing for good. Non chill filtered.

    Notes from the bottlers... Nose: Fresh and vibrant. Vanilla and coconut with exotic fruits. Palate: Almonds and citrus. Overripe bananas with more vanilla and spice.

    Distilled way back in 1987 then left to mature in a single ex-Bourbon cask, Cooper's Choice deliver another super value in the Single Grain stakes. Priced well below ten dollars per year, it's these decades-old examples that can really showcase how good single grains can be. Find one with serious complexity and you'll be hooked. According to the bottlers, expect exotic banana and cinnamon aromas and flavours as well as sandalwood oak and dark fudge. 210 bottles produced. Yes, it's cask strength at 45% ABV!     This has to be one of the best price / age ratios of any Scottish release in many, many years. Distilled in 1984 at the Cameronbridge distillery in Fife Scotland, spending 35 years maturing in an ex-bourbon cask, the bottlers say it will please fans of pain au chocolate. Expect rich buttery notes, chocolate and spicy oak. Long ageing has lowered the strength to 44.5%. Only 198 bottles from the cask. We have next to nothing, so if you love a properly aged grain, don't hesitate on this.

    Tasting note: [20ml sample] Distilled at the now closed Lowland grain distillery in 1991, this spent most of its life in an x Bourbon barrel before being finished in an Italian Amarone red wine cask. Patience reveals the full breadth of the bouquet, with an accent on vanilla wafer biscuits; later hints of dried cranberries. Melts like barley sugar in the mouth with caramel, oak spices and sticky date in tow. Feels slightly restrained for Cambus. Arguable if the finishing was for better or worse. 336 bottles from the outturn. 46.2% Alc./Vol. Non chill filtered.

    Notes from the bottler... "Nose: Big and bold with cherry liqueur, coconut and brown sugar. Palate: Tropical fruits and bourbon. Coconut with subtle notes of figs and dark chocolate."

    Tasting note: [20ml sample] Like most single grains, this 1993 distillate spent its 26 years in a first-fill ex-bourbon cask. Snuffed candles and vapoury alcohol give way to notes of white chocolate, beeswax and dried coconut. A vague fruitiness adds freshness (plantain?) Zero alcohol flare with silky flavours of cream soda, sponge cake and banana bread. Cascades across the tongue. Hints of Bounty Bar through the finish. Very good grain. 52.5% ABV. Non chill filtered.

    Notes from the importer... Strathclyde is a grain distillery not too far from Glasgow that was originally built to produce Gin, but has since become an important producer of Grain Whisky for the enormous volume Scotch Blends. Strathclyde (to my knowledge) exclusively uses Wheat in their whisky production. Owned by Pernod, it is safe to assume a majority finds it's way into Chivas Regal products. Old grains are one of those super special things I find myself grabbing off the shelf more and more. Not only do they offer incredible value for money, they can be quite simply super silky with fantastic character of not just their cask, but also their base carbohydrate. The Cooper's Choice Strathclyde 1993, 26 Year Old arrived into Australia in our March 2021 arrivals. The grain whisky has spent it's entire 26 years in an ex-first fill Bourbon cask. The nose is spritely with a bit of fire showing from it's 52.5% ABV casks strength, along a touch of nail polish, vanilla and white stone fruits. The palate is extremely rich and silky. The oak at times is remincent of sitting in a carpenters workshop with the drop saw in full flight, however this is met and balanced by the rich, silky vanilla and spice notes. The fruit notes are more subtle on the palate, but certainly present: white peach, lemon and a touch of ripe banana. A perfect example of a great old single grain. 91 points - Simon Speir

    It's been noted by at least one whisky writer that your best chances of securing new bottlings of old malts from closed distilleries are Caperdonich, Convalmore, Dallas Dhu, Imperial, Ladyburn, Littlemill and Pittyvaich. As independent releases become more erratic, the remainder have become the realm of whisky auctioneers. Several single grains including Carsebridge surely fall into the latter category. To our knowledge, this is only the third time an example has made it to Australian shores. Given that Diageo's 48 year old Special Release 2018 edition opened at well over AU$1000, this will be a no-brainer for collectors. We have imported a tiny quantity from an outturn of 210 hand-filled bottles from a single refill hogshead. Carsebridge closed in 1983 and was subsequently demolished. Although it was a large operation for its time, remaining stocks are now running low. 50.7% Alc./Vol. Non chill filtered.

    Notes from the bottlers... Nose: Sweetly waxed immediately on the nose with cedar wood, rose water and hard candy. Palate-wise, there is early ginger biscuit and burnt orange followed by treacle toffee and toasted marshmallow – all neatly replicated on the rather 'home-baked' finish.

    Another well-priced and well-aged collectible single grain from Douglas Laing's latest outturn is this venerable Cambus. Consistently on collector's radars, these releases routinely sell out. Distilled in September 1988, just five years before the operation closed for good, after 30 long years in a single refill hogshead, 336 hand-filled bottles were released as part of the Xtra Old Particular series in August 2019. Laing's notes read: "A waft of burnt sugar followed by candied orange, boiled sweets and fresh wood shavings. On the palate, sweet biscuits with vanilla essence and creamy fudge. The finish brings a tingly spiciness plus a warm home baking quality." And yes, at 46% this is natural cask strength. Non chill filtered. Very limited stocks.

    Douglas Laing & Co. continue to secure and bottle a good selection of grains these days, some of which must be getting quite rare. There have been a few closed grain distilleries in Scotland: Carsebridge, Cambus, Dumbarton, Garnheath, not to mention the very rare Caledonian, one of the biggest of them all. Founded in Edinburgh 1855 and closed in 1988, 'The Cally' (as the locals called it) made its debut as part of Diageo's Special Releases in 2015. That bottling would now be selling for well over AU$1500.

    To our knowledge, this extraordinary 44 year old is the oldest expression ever offered from this dark horse distillery and one of the oldest single grain whiskies on record. Those in the know will snap it up fast. Distilled in 1976 (likely from majority corn) followed by maturation in a single refill American oak hogshead, Douglas Laing describe it as attractively spiced on the nose, running to molasses, muscovado sugar and cereals and with a similarly robust flavour profile. Bottled with zero filtration at natural strength, 218 hand-filled bottles are available worldwide. Highly collectable. 52.8% Alc./Vol. Very limited stocks.

    Garnheath is one of a number of distillieries that were commissioned in the 1960s, aimed at producing both malt and grain distillates, as it was seen as a cost-effective way for blenders to secure stocks for their own brands. Only seasoned whisky enthusiasts will be aware of the Garnheath project, which ceased production in 1986 after commencing in 1964. What remains are its warehousing, blending and office facilities as part of Inver House’s headquarters in Airdrie.

    Although undeniably obscure, this is also uber rare and highly collectible. We have one bottle only from the early days of Garnheath. Laings notes are as follows: "The nose delivers an incredible vanilla sweetness immediately followed by wood shavings and boiled sweets, the palate burst with fresh fruit salad, pineapple chunks in syrup and a honey'd cereal style. The lingering finish reveals sugar-coated raspberries with vanilla cream, oat biscuits and charred oak". 44.5% Alc./Vol. From a cask of only 124 bottles.

    Young grain distillates don’t display much individuality, rather it’s more the oak that takes centre stage. But old grains are another story. Thirty years is where you often start to encounter excellence, especially on the nose. Charged from a refill hogshead yielding 223 bottles, sponge cake, tinned peaches, sugared almonds and cream are said to feature in this high ABV expression from the Laings. Only the third ever example to land on our shelves, the Girvan distillery was built in 1963 and continues to provide for the Grant’s portfolio and other blenders. 51.5% Alc./Vol. Non chill filtered.     Douglas Laing's XOP collection continues its run of well-aged gems.
    Founded in 1824, Cameronbridge is now Diageo's grain facility dedicated to producing the canvas for many of the company's blends, as well as distillate for its own brand, 'Cameron Brig', and David Beckham's Haig Club single grain whisky. The scale here is massive. In fact, Cameronbridge remains the largest grain distillery in Europe.

    Laing's single cask #13336 was distilled in March 1984 and bottled in May 2019. According to the bottlers, "The nose shows real tropical fruit character, coupled with all-spice and vanilla fudge. The palate has a spiced oak quality alongside cinnamon and clove studded oranges. The deliciously moreish finish goes on and on with more citrus fruits and treacle toffee. A tiny fraction of the 205 bottles produced have made their way to Australia. 51.5% Alc./Vol. Non chill filtered.

    One of the last whiskies Cambus produced, barrelled just a few months before the distillery closed.

    Tasting note: [15ml sample] Reticent yet fresh on the nose; balsawood, sawn pine and oak shavings... the sugars creep in with hints of honeycomb and shortbread. Compared to other Dumangin bottlings, the ratafia input feels more pronounced adding a honeyed fruit-cake quality not normally found in grains. Intense, with the vanilla core giving way to sticky date and caramel fudge. One of the weightier Cambus bottlings to date. Extremely limited. 49.9% Alc./Vol. 310 bottles produced.

    Consistently on collector's radars, Cambus continues to routinely sell out. The most significant recent release was a $1K+ 40-year-old offered by Diageo in 2016. A roller coaster history that started in the early 19th century finally came to a close in 1993 as part of Diageo’s infrastructure reorganisation. In 2011, the distilling equipment was removed and Cambus was converted to a warehouse and cooperage, consolidating nearby Carsebridge and Dundashill in Glasgow.

Distilled in 1980 (likely from majority corn) followed by maturation in a single refill American oak hogshead (#92569) and bottled with zero filtration at natural strength, 111 hand-filled bottles are available worldwide. Beautifully presented and obviously collectable. 55.4% Alc./Vol.

    Notes from the bottlers... Nose: Sweet pineapple and baked apple aromas are complemented by hints of beeswax polish. Soft cane sugar comes to the fore alongside white chocolate and vanilla pod. Taste: Soft black pepper and cocoa powder flavours lead to sweet, dried mango. Subtle notes of candied lime and mouth-warming ginger transform into fresh banana bread. Finish: Long lasting and vibrant with lingering fruit and soft pepper on the finish.

    Very rare material on offer here, from the long closed Dumbarton plant, all the more unusual for its extraordinary age and the fact that this has been matured in a refill Sherry hogshead (almost all grains are x Bourbon matured). Well-aged Dumbartons are frequently off the charts when it comes to ratings for the single grain category. This is definitely one of the oldest, if not the oldest ever bottled. Expect notes of dark treacle, dried fig, toasted almonds and stewed fruit. 93 bottles only. Beautifully presented in a ridged heavyweight bottle housed in a veneered wooden box. 44% Alc./Vol. Non chill filtered.

    Also known as 'Inverleven', Dumbarton was built in 1938, just south of the Highland border near Glasgow and for a while was the largest operation of its kind. Classified as a lowlander by Michael Jackson, production was predominantly set aside for the Ballantine's blends. When bottled by Indies, Dumbarton is typically the label for grain whisky. Inverleven the single malt, but it's not a rule. Nowadays stocks are "undeniably rare". The notable feature of the plant was its American-style stainless steel columns (rather than the traditional Coffey stills). A focus on maize, meant its spirit was rather heavy in character. In 1956 a third Lomond still was added with an attached rectification column designed to produce different styles of spirit. The distillery was decommissioned in 1985, though its column still was salvaged by Bruichladdich to produce its now famous 'Botanist gin'.

    Another fascinating grain whisky from G&M arrives with this Cameronbridge, matured in a refill American hogshead which previously held sherry. 581 bottles were produced. At the time of writing, this is only the third ever expression from this distillery to hit our shelves. Most of the output goes into blends, so quite unusual to find.

     

    Notes from the bottler.... Aroma: Subtle sherry notes develop into candy store aromas: orange, sweet and tangy lemon, strawberry liquorice, and hints of soft vanilla fudge. Flashes of cocoa powder surface throughout. Taste: Sweet yet spicy; white pepper accompanies fresh vanilla pod flavours. Candied citrus weaves into notes of caramelised brown sugar; toasted malt layers over mature oak undertones. Finish: A lingering herbal edge highlighted by flashes of freshly-squeezed lemonade. 59.3% Alc./Vol.

Reports have it that this is produced by Macduff (the easternmost distillery in Scotland) and aged in Sherry casks and re-charred Bourbon casks.     A small quantity of this David Beckham endorsed single grain whisky has just arrived. TV producer Simon Fuller is also involved here (the man who launched the Spice Girls, created the Pop Idol franchise and has managed musical icons like Annie Lennox, Steven Tyler, Amy Winehouse and sporting heroes like Beckham). The bottle and embossed branding compliments the presentation of Beckham’s perfume range. Produced at Cameronbridge distillery, where the house style is light, clean and fruity, 'Club' was matured in a variety of casks.

    Other reviews... A confectioner’s delight; Fry’s Five Centres, lime, lemon, kumquat, iced buns, fresh mint, and crushed cardamom that matches the chocolate aromas. Those re-charred, rejuvenated casks are very much in evidence here. It has a gilded, satiny sheen, glistening with lemon drizzle cake, butterscotch, orange matchsticks, and banana bread. Incontrovertibly, it inhabits a signature grain style, but it fizzles out with a sticky, sweet aftertaste, like licking the spoon from the icing bowl. 87 points

    1989 House of MacDuff The Golden Cask Dumbarton 32 Year Old Cask Strength Single Grain Scotch Whisky (700ml)

    The Grandfather of the House of MacDuff grain collection is this 1989 Dumbarton. The plant was known for making a slightly heavier style, partly due to its stills and possibly due to a preference for maize rather than wheat but closed in 2002. Looking like sherry is playing a key role from first glance, but it's actually Bourbon(!), that in spite of the superb oloroso-ish aromatics that range through Seville orange, hazelnuts, high cocoa chocolate, dried plums, fruit cake and more. It follows through with elegant flavours of dried peels, rancio, aged muscat, salted nuts and fruit cake before a sticky-date finale that rebounds with walnuts, cinnamon and fine astringency. Our experiences with older Port Dundas is of a luxurious Irish-meets-Bourbon-meets-Rum style evocative of oak shavings, crème caramel and ripe stone fruits.     Tasting note: Antique gold. Giddy wafts of alcohol require time to back off. Sweeter notes of creamy soda, caramel nib chocolate and vanilla fudge emerge through slightly bitter oak. Silky entry before the booming spices attack. Sweet cereal, peach and vanilla flavours gain momentum, creaming up the mid palate before a bittersweet, pepper-fuelled finish. Uncut, this packs quite a punch, but water brings it into balance, accenting creme brulee on the nose and fluffing up the palate beautifully while extending the length (add extra points to the score here!) It should please any one looking for a good introduction to single grains as well as value-seekers - given the massive ABV and the way this floats, it's like getting two bottles in one.     More and more Australian whisky drinkers are becoming familiar with Dumbarton as bottlings continue to trickle in via independents. A closed distillery that was famous for having an American-style stainless steel column still, this robust example is feisty on the nose and prickly to start leading into a powerful attack with flavours of Christmas cake and off-dry Guyanese rum followed by sweet leather before vanilla wafers and sticky date gain ground. The prickle and punch don't give up, but beneath that are some deeply satisfying notes referencing XO Caribbean rum or the oily, sweetly oaky qualities of well-aged Bourbon.     Drawn from an inventory of re-charred ex-sherry casks, this heavy distillate was re-racked into a freshly re-charred cask for added vanilla and honey notes. It's a curious Balmenach nose mixing marmalade with coconut, cocoa and oak shavings. There are some delicious bittersweet dark chocolate threads throughout the weighty middle, drying out and spicing up significantly at the finish.     Once prized by blenders, Cambus was closed in 1993. Perfect gold in colour. The nose is on the drier side. Five minutes in the glass accentuates sweeter notes being lightly peppered with suggestions of sponge cake, fruit pastries, jelly beans, Bounty Bar and dried peach. Brisk, light entry; Somewhat bourbonesque. The mid palate amplifies the texture, becoming almost malty; follows with a rush of desiccated coconut, sponge cake and vanillan oak. Hints of dry curacao and peppermint confectionary revive the finish. If you tend to find grains overly sweet, this one should work in your favour. 296 bottles drawn from a single hogshead. 44.60% Non chill filtered.

    Other reviews... Nose: A complex mixture of creamy vanilla, chocolate powder, red fruits and paraffin wax develop to a marmalade on toast and freshly baked pastry character. All of this contained within a fruit orchard. Palate: Smooth and subtle entry with more body and mouthfeel than expected with grain whisky. Juicy raisins and sultanas in vanilla ice cream balanced with notes of honied spice and desiccated coconut. Finish: Fairly short but very moreish and refreshing. Now more spice led with hints of cinnamon & nutmeg dusted custard, dried banana and peppered oatcakes.

    Tasting note: Normally matured in Bourbon barrels, Lady of the Glen take single grain whisky in a new direction with a twelve month finishing in oloroso casks. This Port Dundas shows a rummy aspect on the nose, followed by the usual grain vanillas, intensified by dried apricots and fig jam. Soft and sensual on entry with a burst of dried apricots and warming spirit. Sweet grain vies with oloroso at the finish which has a drying influence, almost clashing. Overall, the sherry gives the whisky a slightly 'maltier' feel and it works unexpectedly well - adding substance and interest to what might otherwise have being just another grain. 58.1% Alc./Vol. Non chill filtered. 603 bottles.

    Tasting note: Built at the highest point in Glasgow on the banks of the Forth & Clyde Canal, closed in 2010 then demolished a year later. Port Dundas starts life as a light and sweet distillate with long barrel ageing slowly adding body and depth. The pretty deep gold colour is followed by a bouquet in turns volatile, peppery then soft and medium sweet. 2-3 minutes settles the focus on vanilla wafer, stewed peaches and cream, cinnamon and gobstopper, resembling a blend of pot and column distilled rums. Taste-wise, this is Bourbonesque with a rush of vanilla sponge, dates and Monte Carlo tea biscuits, the oak adding fine astringency. Not overly sweet, so extra points for balance. Caramel fudge and vanilla linger with the spices. A very satisfying grain that's beginning to throw off its youth. 156 bottles. 55.4% Alc./Vol.Non chill filtered.

    This is a kind of quasi 'single malt' having been distilled with heavily peated malted barley (rather than corn or wheat), but in a Coffey still rather than a pot still. Matured in a combination of first and refill bourbon casks, it promises a soft fruity flavour profile with creamy vanilla and wisps of smoke. Non chill filtered.

    Other reviews... more like bonfire smoke, rather than peat... just love that flavour explosion shock waves when the smoke and spices suddenly seem to wake to the fact they are there - and really let you know about it!... different, intriguing and beautifully weighted. Love it!

So, it's essentially a Coffey distilled single malt, which explains why it delivers added complexity. Unquestionably the perfect introduction to a very niche Scotch whisky segment.

    In whisky circles, it was thought that all the casks from North of Scotland were gone and spoken for. Yet, these very rare and very old bottlings are quietly being released on the Australian market. A now silent Lowland grain distillery that was also once also home to the Strathmore malt plant, North of Scotland was only active from 1957 to 1980. In its heyday it was considered one of the more flavoursome grain whiskies going around. Owner, George P. Christie made sure to include a higher than usual amount of congeners in the spirit cut. Its whiskies were found in many of today's internationally renowned brands like Chivas Regal, Ballantines and Teacher's to name but a few. The facility was sold for the last time in 1982 to Distillers Company Ltd. However, prior to that, it was producing large volumes of both grain and malt whisky. In 1957, George P Christie purchased Robert Knox’s Forth Brewery for £10,000 and quickly converted the building into a malt and grain operation. In 1958 North of Scotland started producing grain whisky from its three patent stills. Malt whisky was produced from copper stills on the same site under the name of 'Strathmore'. North of Scotland continued turning out grains until 1980, when Christie, then concerned with the over production of grain whisky, took the decision to close. The building is now used solely as a bonded warehouse by Diageo. As is typical for a grain, this edition was matured in ex-bourbon barrels before being bottled at 40.4%, apparently by a new generation of the Christie family. Collectable. Very limited stocks.

Built in 1963, Girvan continues to provide grain for the Grant’s portfolio and other blenders. At one stage it was also home to the Ladyburn malt whisky distillery which ran from 1965-75. Notes from the bottlers say to expect airfix glue and coconut, citrus and dark chocolate Bounty bars with a rummy, pineapple bon bons finish. So sounds like a classic grain.     Founded in 1824 by John Haig, Cameronbridge is the oldest grain whisky distillery in Scotland and remains the largest in Europe. Apart from producing one of only two proprietary bottled single grain Scotch whiskies available in the U.K. (Cameron Brig), Cameronbridge is occasionally available from independent bottlers like Cadenheads. Wheat is sourced from the east coast of Scotland, while water is sourced from on site bores. Gin and vodka are also produced, with three Coffey stills and one Patent still currently in action. The house style is light, clean, fruity and flavourful, providing the backbone for Diageo's blends, including Haig Club.

This is a fabulous example from indie bottlers, "North Star", bottled at just the right strength.

    Tasting note: Drawn from a Bourbon hogshead. Flawless bright gold, beams from the glass. A complex and shifting bouquet hinting at dried grass, rice crackers and pepper along with suggestions of semi ripe banana, dried apricot, Indian spices and liquorice root. Surprisingly light on its feet. Waxy, oily, grain and toasted marshmallow flavours arrive with a mild flare of alcohol. Trace anise rounds off a prolonged, poised finish. Single grain whiskies - more than just a background canvas for blends.

We love a good single grain whisky, but they're an unusual sight even on the shelves of passionate whisky retailers like ourselves. In Scotland the style can be produced from almost any type of grain, with the resulting whisky mostly used to stretch out blends. Not surprisingly, single grains are much maligned by malt snobs. Yet this underdog category is has its place. For whisky nerds or completionists, extra matured bottlings are well worth tasting. 30 or even 50 year old expressions can be surprisingly affordable. Older examples from Cameronbridge, Cambus and Girvan are all worth seeking out.

Making Single Grain Whisky.

Today there are seven grain distilleries operating in Scotland. They're large, functional, industrial style buildings with little of the colourful history and romance that attracts throngs of tourists to the charming Single Malt distilleries. The creation of single grain whiskies is broadly similar to that of malt whisky, only the raw materials and the equipment are different. The mash from which grain whisky is made uses unmalted cereals - usually wheat or maize, it doesn't matter which, so distilleries can buy at the best price - together with a small amount of 'green' malt (barley which has germinated but not been kilned). Usually about 16% of malt is added: it has to be there to convert the starches in the other cereals into sugar, so it can be turned into alcohol by the yeast. Tall column stills are used in place of copper pot stills, the former resulting in a light, clean and fruity spirit that works as a catalyst when blended, releasing the flavours of the malts.

Add first-fill Bourbon casks to the mix, and you have an elegant, semi-sweet whisky which can develop layers of flavour and sophistication as it ages. Nikka's Coffey grain is a great young example. At 30 or 40 years, these whiskies can deliver a unique experience bordering on hedonism: Complex and shifting bouquets matched by luxurious textures and sumptuous flavours falling somewhere between the finest gold Rums or Bourbons or the very, very best Irish. For almost any wood-aged spirit category (bar Armagnac) the price / age ratios are frequently astonishing.
