    Yuzu is a yellow citrus fruit with a tart juice, commonly used by chefs to flavour both savoury and sweet dishes.     Owned by the English, now bottled in Australia and imported from the U.S.A, Smirnoff ranks as the most popular mid-priced vodka on the market. Over 15 million bottles are sold annually (equivalent to half a million bottles per day), in over 150 countries world wide and it is estimated that one dozen bottles are sold every two seconds. Quality does tend to vary from country to country.

    The product today has no real Russian connections, except by origin of its name. The original Smirnoff name dates back to 1815, when Ivan Smirnoff began production from a battle scarred shack, flavouring his product with raspberries, strawberries, plums and other fruits. His son, Piotr Smirnoff, carried on the tradition and gained the attention of the Tzar in 1886 at a town fair. Piotr's exhibition involved a real bear and waitresses dressed as bears serving vodka. Impressed, the Tsar appointed Smirnoff the official supplier of the Imperial Court (hence the references still on the label.)

    Developed to capitalise on the popularity of the Stolichnaya brand, this is a unique super-premium release produced from 100% grain, using a patented 'freeze-filtration' technique. The first step in Stolichnaya’s reinterpretation of the process is to pass the spirit through a special silver filter upon which the vodka is frozen to -18C. During the freezing, the vodka becomes glycerine-like, and the solubility of different impurities reduces. The liquids density increases causing all the impurities to freeze against the walls of the filtration tanks. These unwanted crystalline substances are then discarded from the distillate resulting in one of the finest and smoothest vodkas on the market today.

    A premium craft vodka made from 100 percent Japanese white rice. Although the word "haku" literally means "white," the subtlety of the Japanese language often gives characters several meanings. While "haku" is rooted in the word "hakumai," meaning white rice, the nuanced meaning can also be translated as "junpaku," which means an untainted brilliance. The distillers feel it speaks of Haku's clear, clean and luminous flavour.

    The vodka begins its distillation process in Kagoshima, Kyushu, a region well-known for rice spirit making. The process includes a meticulous mill and polish, where 100 percent Japanese white rice is fermented to create a mash. The mash is distilled through pot stills to create a rice spirit, and then distilled a second time through two different processes. This liquid is then blended and filtered through bamboo charcoal in Osaka, Japan. This process, unique to Suntory, preserves and enhances the rice's delicately sweet and subtle flavours.     Buffalo Trace Master Distiller, Harlen Wheatley has been a driving force behind the quest to craft the perfect vodka. And if he was going to put his name on it, he wasn't going to be content with making "bubblegum spirit". It's something industry insiders rarely talk about, but the majority of vodkas start out as grain neutral spirit (GNS) manufactured by massive industrial plants, usually near where most of the grain is farmed. Vodka brands will take this GNS and then either redistill it, filter it, dilute it or sometimes just directly bottle it. The rest is about presentation and marketing. Wheatley takes the path less trodden. It's been a passion project of many years involving significant trial and error. A sweet spot was achieved by distilling ten times using majority corn plus Red Winter Wheat, the same wheat as used in Pappy Van Winkle and Weller Bourbons. (Once fermented, it could literally be used to make Bourbon!) Adds Wheatley, “They're good ingredients to give the vodka that soft, delicate finish that we like". Limestone filtered water adds magnesium and calcium while filtering out elements like iron.

    "I think it’s an unusual thing to do,” says Wheatley in regards to his process and his lack of reliance on sourcing GNS. “When you walk down the vodka aisle, 80 percent or more are straight neutral spirit — it’s all about packaging and the story.”

    Critics and bartenders agree that the result stands out from the pack. In short, don't underestimate the difference a well crafted spirit will make to cocktails, even when you're mixing heavily.

    Other reviews... We all know that Buffalo Trace can make world class whiskey but what about vodka? The answer is a triumphant yes. Wheatley Vodka shows complex aromas of earthy, toasted grains and yellow cake. The palate is rich and bold bolstered by its couple of extra degrees of alcohol. Here, more flavors of baked wheat contribute to an almost chewy texture. The finish packs a little bit of heat but the impression is more mineral and spicy than unpleasant. To get an answer to that question, an Independent journalist wrapped nine bottles in newspaper and served them to a panel at London's Wodka Restaurant. On the panel was Ian Wisniewski, co-author with Nicholas Faith of the book "Classic Vodka".     How Wyborowa is made…size>WYBOROWA is one of the only vodkas in the world produced exclusively from rye grain. The rye used to make WYBOROWA is grown in a limited part of north-western Poland where the soil is loamy and the climate is milder than in other parts of the country. Only winter varieties sown in the autumn and harvested the following summer are used, because of their very high starch content. The grain is selected at regional agri-distilleries which complete the first stage of the distilling process, producing so-called raw spirit. Three-stage selection - in the field, on entering the distillery and then in the distillery's laboratory - eliminates all but the healthiest ripe grain. The next steps of distilling take place in the beverage distilleries, where the raw spirit is put through a technologically advanced rectification process and then the vodka is made according to the distillers' closely guarded, traditional recipe.

    The WYBOROWA production process follows the rule of "3 X 3." This means "triple-cleaned, triple-distilled, triple-filtered." Even then, only the best, middle part of the batch ("No heads, no tails") is used for Wyborowa. The distillation process is carefully controlled to produce alcohol with the exact chemical and organoleptic parameters required for a brand that is distinguished for its consistent purity, taste and aroma. The aroma of grain spirit is difficult to eliminate, but for that it is also more desirable, so in the production of WYBOROWA some aromatic fractions are kept intentionally. The spirit is then diluted to the required strength with very soft water taken from the distilleries' deep wells and filtered with the most up-to-date equipment by reverse osmosis, the most natural way to filter. The water that is finally blended with the rectified spirit to make what is to become WYBOROWA is brilliantly clear and without any foreign taste or odour. The product is again filtered before bottling. The WYBOROWA resulting from all these painstaking procedures is a product of crystalline clarity with a character all its own. It has the barely perceptible sweetness of, not sugar, heaven forbid, but superior rye grain spirit. WYBOROWA has few equals for making martinis, serving on the rocks, and above all drinking NEAT - very well chilled (to about 3 degrees C and never more than 10 degrees C) and served in frosted shot glasses kept in the freezer. A perfect companion to caviar or smoked salmon hors d'oeuvres.

    The extraordinariness of Wyborowa finds confirmation in the many awards it has won in some of the greatest international quality contests - up to now Wyborowa has gained twenty two gold medals. In 2001 Wyborowa won the gold medal Monde Selection and double gold medal (meaning the jury was unanimous) as well as the title of the best vodka in World Spirit Competition in San Francisco.

    As with most spirits, only particle filtration is employed. It's a refreshing contrast to the hackneyed marketing typical of vodkas. The producers even add, "We are sorry that we don’t have a fun story about filtering through carbon, diamonds and crystal, etc. but we felt the spirit from the still was good enough without this extra step."

    Tasting note: Clear. Candy floss, meringue sweets and toasted marshmallow aromas are also reminiscent of fresh baked Anzac biscuits.     The Itkul Distillery (est. 1868), home of Beluga, employ the use of ‘malt spirit’ as a base for their vodka. The malt spirit is made from malted wheat, rather than a mix of grains. Reportedly, the wheat in this form possesses a large number of enzymes that aid in a completely natural fermentation, eliminating the need for additives and other ingredients. After being distilled five times, this vodka is further enriched with rice extract and golden root (rhodiola rosea) extract. This unusual adjunct is actually a traditional European practice, whereby each producer would have their own unique recipe.

    The bottle comes beautifully packaged, complete with a small wooden hammer and brush to aid removing the wax seal – an appropriate touch for such a luxurious product.

    Look what’s happened to English cider! This is the first vodka made from organic cider apples grown on the Chase estate/farm. Fruit is pressed and then fermented. The resulting cider is distilled along with the cores in the same stills as Chase’s successful potato vodka. The result is an ‘apple vodka’ – but one that is not apple flavoured.

    But why apples?

    Chase comments, “When we built the distillery in 2008 we wanted to make the world’s finest gin and in order to make gin you need the best vodka and redistill it with many wild botanicals. So we created a fine English potato vodka but found that it was so complex in flavour that it overpowered the delicate botanicals. So we had to start again and made another vodka but this time out of the organic cider apples grown on our farm in Herefordshire.     Master Distiller, Waldemar Durakiewicz, has worked with the Dorda family (who still own and run the company) since he graduated from university in 1978. Named after Poland's favourite son, the vodka is packaged in a frosted, cork-finished bottle which has since been copied by the likes of Belvedere Vodka and others.

    The first sniffings unearth a soft, slightly sour and vegetal aroma; more time adds minor scents of ash and unsmoked cigarette. The bittersweet palate entry taste flashes on cocoa bean and sap; at midpalate toasty, sooty flavors of tobacco leaf, wood smoke, wood resin and vanilla are found. Choosing the right vodka when you buy online.

There's rye, corn, potato, wheat and grape-based vodkas as well as a selection of luxury lines and flavoured expressions. But the price of a vodka doesn't necessarily reflect its quality, which ultimately lies in the type of raw materials used, the method and care taken during distillation and the quality and technique of filtering. Marketing costs often exceed production costs many times over, so that less expensive brands that bypass extravagant presentation can offer excellent value. At the same time, cheap mass produced brands might be passable in heavily mixed drinks, but make for mediocre Martinis.

Isn't all vodka much the same?

Most vodkas are inherently light on aroma and flavour (differentials which distinguish other spirits like whiskies, gins or rums for example), so ingrained into the very nature of vodka is a conundrum that's created the need for big brands to constantly reinforce image. However, clearly all vodkas don't taste alike, otherwise there'd be no reason to favour a $70 bottle over a $25 bottle. Each brand has a unique, though subtle, aroma, taste and burn. Look for some of the more common aromas and flavours like wheat, dough, pastry, cream, vanilla, talc, mineral water, icing sugar, marsh mellow, confectionary, citrus, dried fruits, spice and pepper to name a few. Charcoal filtration can add a mildly sweet, sooty quality. Quartz filtration can lend a minerality to the spirit. Add mouthfeel to the equation and you'll begin to appreciate the subtle differences that define vodka brands.
