    Everyone knows this squatty bottle with the D.O.M. label and the big seal of (what used to be) scarlet wax. The D.O.M. title, "Deo Optimo Maximo" is latin and translates as "To God most good, most great."The original recipe of this famous elixir, created by a monk, Don Bernardo Vincelli in 1510, was said to have revived fatigued brothers and even warned off epidemics.

    Still made by French Benedictine monks at Fecamp, Dom Benedictine has as its basis the blending of 27 different plants and spices from five continents. These include a blend of herbs, spices and an infusion of saffron, honey, thyme, tea and caramel. The quality of ingredients and the maturation of Benedictine in oak casks for three months combine to produce a truly unique spirit. The original therapeutic function of DOM continues to this day, and in the Far East, it is taken by miners for rheumatism and as a tonic for pregnant women.Dom is not ideal as a mixer, as it lacks character and loses its delicate, heathery flavour.     Other reviews... The delicately herbal bouquet is an unusual combination of earth and flowers; one of the more seductive, unique and piquant liqueur perfumes in existence.     Kirsch is not usually produced as a liqueur but as a stone fruit brandy. It can be produced using a variety of ingredients including cherries, prunes or plums. Slivovitz is comparable. The crushed kernels of the fruit are included with the fruit juice before fermentation as they infuse the brandy with a fine, bitter tang. Berentzen Kirsch liqueur is a sweeter version of the style bottled for sale at relatively low alcoholic strength.

    Essentially a minted version of Fernet Branca, being based on the same recipe as the original including an assortment of 40 ingredients such as aloe, gentian, chamomile, angelica, chincona, colombo root, chinese rhubarb, myrrh, peppermint, saffron and iris. Branca Menta adds to the equation more sugar and peppermint oil. Recommended with a splash of soda over ice. 28% Alc./Vol.

    Other reviews... While Fernet-Branca dates to 1845, Branca-Menta was released in the 1960s, the result of younger drinkers who were putting mint syrup in their Fernet. Take standard Fernet-Branca and add peppermint and menthol, and you’ve got Menta. However, the current recipe is much lower in alcohol. The mint is immediately evident on the nose, and it brings out a cocoa character in the aroma that ultimately smells a lot like mint chocolate. Sweetness is evident as you take a sip — this is no ultra-bitter fernet but rather a more modern styling — and the palate hits like a mint-flavored glass of espresso, heavily dosed with sugar. That heavy sweetness makes Menta feel less refreshing than it should be, though the peppermint element is at least quite fun. - drinkhacker.com

    From Bormio in the Italian Alps, a town famous for its skiing and the Stelvio Pass, a spectacular & dramatic alpine road which will be familiar to viewers of 'Top Gear'. Braulio offers a wonderful way to conclude a meal and tastes all the better if you've had a day on the slopes. Sienna brown in colour, the aromas feature spearmint and chamomile above a layer of florals and sandalwood, followed by a touch of liquorice and citrus. Rich and supple, initially delivering fresh mint and spice complementing the chamomile, the finish warms and lets the bittersweet complexities promised by the nose take the reins.     A liqueur composed of 20% Williams pears picked at their peak of ripeness, macerated, then blended with 42.5% Brillet Cognac with the remainder being sugar syrup. Each bottle requires approximately 10kg of pears to produce. Nosing reveals powerful aromas of stewed pear, clove and cinnamon. Entry is soft, silky and lusciously textured with sweet pear juice and delicate cinnamon flavours. Very gently warming spirit. Finishes clean and semi sweet with a very long spicy pear aftertaste and subtle anise fade. Delicious, but definitely for a sweet tooth. 30% Alc./Vol.

    An amaro made using Moscato wine with a key ingredient being artichoke thistle (aka 'cardoon', 'cardone' or 'cardoni'); It is the one and only wine-based amaro and the only one to employ Nizza Monferrato Cardoon - a winter vegetable similar to celery, but belonging to the artichoke family. After maceration is complete, the liquid is rested in oak for six months before bottling. Deep polished copper in colour, the aromas suggest citrus zest, gentian, pine wood, liquorice root and peppermint. The palate isn't heavy or particularly bitter - more medium-bodied, fresh and Vermouth-like with a zesty, pleasingly bitter, warming spice and quinine finish that also hints at bergamot, herbal teas and citrus. A delicious pre-dinner drink or refresher, but also sought out for its medicinal qualities, other ingredients include calumba, juniper, Gentiana Lutea berries, cloves, liquorice root, cardamom, lemon peel and marjoram cultivated in Piedmont. 17% Alc./Vol.

    Notes from the producers... On the nose it is strong and complex, thanks to the blend of the various extracts and the long ageing process. Spicy notes of Hunchback Cardoon, Gentiana, clary sage and liquorice are prominent; hints of dried fruit, grapes and ginger also emerge. The taste is sweet, full and well-orchestrated flavour reflecting the extraordinary balance between the sweet note, the bitter quality of some of the officinal herbs and the pleasant tastiness of the wine. The tasting experience is unique, with pleasantness unmatched by any other amaro, thanks to the moderate alcohol content. The long-lasting aftertaste retains the complexity and spicy notes of the herbs, with a slight hint of tobacco.

    Sweden's National Liqueur. 

    Carlschamns Flagg Punsch is classic Swedish Punsch. Matured in oak casks for six months, Arrack is a key element to this drink. Other ingredients include lemon, sugar and tea. The liqueur was introduced to Sweden by the Swedish East India Company in 1733 when Arrack was for the first time imported from Java. By the end of the 18th century, punsch had grown enormously in popularity. Sweden had received its 'national liqueur'.

    Punsch is excellent as a dessert liqueur, in coffee, on the rocks in cocktails, or in a shot glass as an aperitif.

Issues aromas of freshly roasted coffee beans, dark chocolate and vanilla. The tequila base is more salient in the mouth, with a creamed-up texture that’s akin to coffee flavoured milk with a splash of tequila and dark chocolate for good measure.     Made in France from hand picked, red and black raspberries (mûre), honey, vanilla, and Cognac. In the time of King Louis XIV the nobility of France entertained with feasts in their vast chateaux that were invariably concluded with liqueurs. It's in this tradition Chambord has been created- packaged in a spherical bottle with gold plastic lettered "belt". The bottle is modelled after a Globus Cruciger in order to reflect the liqueur's royal connection.

    The most obvious drink to create with Chambord is of course Kir Royale - that being a dash of liqueur at the bottom of a glass of champagne. However, alternatives abound. For example, an equal mix of Chambord & Cognac gently heated in a glass makes an ideal heart warmer while the Chambord Vodka Tonic (a dash of Chambord, ice, 30ml. Vodka, tonic & lime garnish) makes for a delicious refresher. Other common drinks made from Chambord include Chambord Daiquiri, Chambord Royal Spritzer, Little Purple Men, The Purple Hooter Shooter, Sour Grapes, Grape Crush, French Martini (which started the "cocktails as a Martini" craze) and the original Sex on the Beach. Needless to say the liqueur is more than acceptable drunk neat, although it lacks some of the viscosity and intensity of its Dijon counterparts and is lower in alcohol. (16.5% alc./vol.)

    As Chambord is made with all natural ingredients with no preservatives, it is best drunk within six months after opening.

    Chartreuse Elixir Vegetal Liqueur (100ml)

    ‘Elixir Vegetal’ is the antecedent to the more subdued “1605” which was based on the Elixir. (The original tonic was primarily used as a remedy for stomach ailments, however considered too potent for regular consumption due to its high abv of 69%, thus the lower proof 1605 version was created.) This is the genuine article. It represents the soul of the Chartreuse brand and is arguably one of the most complex liqueurs in existence today. Its appeal not only resides in its surreal taste but also its tonic properties. Traditionally, mountaineers have praised the stimulating effects of a few droplets over a sugar cube. It is also a living testament to the craftsmanship of the Chartreuse monks who display a level of precision rarely attained when working with natural ingredients. This is why the Elixir Vegetal comes in its own wooden box, as protection against light which can affect its taste and colour if stored improperly. Very, very limited stocks.

    Tasting note: Striking deep emerald green; penetrating bitter sweet herbal notes feature thyme infused honey, liquorice and tumeric in the first pass. Second inspection finds hints of peppermint and chamomile tea, juniper and sweet decaying grass-like scents. Entry is creamy and deceptive; mid palate is prickly and slightly hot with intense bittersweet herbal tea, quinine and anise-like flavours apparent through the nippy spirit. Finishes pleasantly bitter with sweet spices and anise following in a lengthy herbal / spearmint fade. Invigorating. 69% Alc./Vol.

    Chartreuse Cuvee des MOFS Liqueur (700ml)

    A rare event took place in 2008. The Carthusian order (guardians of Chartreuse secrets) opened their spiritual and spirituous sanctuary to a handful of outsiders. Not just any outsiders, but a delegation of sommeliers who had been elected ‘Meilleurs Ouvrier de France’,(a unique competition created by the French, to celebrate the best in each category of Trade). While not revealing any of their secrets, the monks allowed them to collaborate in the creation of a masterpiece that resulted in the crafting of a new Chartreuse. The cuvee MOF is a take on the yellow Chartreuse, even more singular and easily recognisable, achieving the uncanny symbiosis between onctuosity, freshness and power.

    Chartreuse Yellow Liqueur (700ml)

    One of the liqueur immortals, Chartreuse is the product of monks from the Carthusian Order who originated the product at their establishment in the French Alps called “Grande Chartreuse”. The Order was banished from France to Spain just after the turn of the century, and at Tarragona they again set up with their secret formula compounded of elixirs from 130 odd and rare herbs, water, sugar and fine spirits. (The production has since returned to France). Green Chartreuse (55% alc./vol.) is most pungent and expensive. Yellow Chartreuse, first produced in 1838, is just as good though milder, sweeter, more approachable and more aromatic. It is not only invaluable as a liqueur with coffee, but is the final decoration for a Gin daisy and other delicate drinks. However, it's probably most often drunk on its own or with ice. Alternatively, it makes a refreshing Summer sipper mixed with tonic.

    Other reviews... The sweeter side of Chartreuse. This golden liqueur is bright and sweet with a honeyed character — one that can come across as thick and unctuous when consumed solo. The herbal profile is comparatively restrained, but saffron immediately pops out on both nose and palate. Notes of vanilla, orange peel, and some baking spices pick up from there, though the saffron-infused honey elements ultimately dominate.     Chartreuse Green Liqueur (700ml)

    Rumours of a coming Chartreuse shortage have turned out to be true. The reason? Sales grew a whopping 47 percent over 2023 compared with the twelve months prior and the monastery can’t keep up, even though they’re churning out more of the elixir than they have in over a century. Demand is partly due to surging global enthusiasm for cocktails. The Carthusian monks who produce Chartreuse could ramp up production, but they don’t care about constant growth and aren’t interested in living lavish lifestyles. Instead their response has been to keep business activity on a human scale so as to “…protect their monastic life…not looking to grow the liqueur beyond what they need to sustain their order.”  In the meantime, export volumes will remain the same (50% goes to France, the remainder the rest of the world). If America takes the majority and international demand continues, don’t expect small markets like Australia to maintain a steady supply. Chartreuse might be just one reason why customers visit bars and drink cocktails, but at the same time, any bar without it simply wouldn’t feel complete.

    Chartreuse has two primary expressions: the so-called 'Green' is more pungent, higher in alcohol and more expensive than Yellow. Their spiritous, herbal, multilayered profiles include notes of liquorice, anise, violets, spearmint, basil, candied banana and peppermint. Both expressions have long been bar staples - no surprise given that the brand dates back to 1605. Its creation still employs 130 herbs, plants and flowers with the resulting liquid aged in oak casks, and less than a handful of monks can blend and distill the recipe. They're also the only ones who know which plants they have to macerate to produce the natural green and yellow colours. Other versions of Chartreuse are also available, the most notable being the “V.E.P.” bottlings. These are essentially the same as Green and Yellow Chartreuse but they're aged for a longer period and the ABVs will vary. The objective is to elevate the liqueur to an extra level of integration, refining the flavours in large oak vats. The much sought after White Chartreuse, the sweetest version of all was discontinued many decades ago.

    Other reviews... This lime-green, anise-scented liqueur is sweet at first sip, then herbaceous in the middle, showing fennel, pine, tarragon and mild floral notes. The finish is spicy and warming, with anise, white pepper and ginger heat. It's a bit too viscous and fiery for straight-up sipping, but it's beautifully complex and a key ingredient for the classic Last Word and other cocktails. 93 points - winenethusiast.com

    ...A wildly different expression, Green Chartreuse claims to be the only naturally green liqueur on the market. (Presumably, absinthe is not a liqueur.) There’s a connection here with absinthe, as Green Chartreuse is racy with alcohol and offers notes of anise up front, with hints of menthol and citrus peel following from there. The liqueur offers a clear vanilla character and even some elusive chocolate notes on the finish — though the overall impact is much less sweet and more palate-cleansing than the Yellow version. Green Chartreuse stands better on its own than Yellow — though it’s still a great choice to include in any number of cocktails as a flavoring agent. 110 proof. - drinkhacker.com

    Vermouth is the most widely used aperitif. The first known branded vermouth was “Carpano” produced at Turin, Italy in 1786. This was a rich, sweet red style. Rosso, or red vermouth is traditionally made using red wine. Today however, virtually all red vermouth is produced using white wine and blended with caramel to receive its distinctive red or amber colour. This dark, more richly flavoured Italian variety is imperative in many cocktails, but can be drunk alone, with cassis or as an aperitif, or mixed with lemonade, tonic or orange juice.

    Towards the middle of the 1800's, Edouard Cointreau's son, Edouard fils, discovered a species of wild orange native to the Caribbean. Knowing the fruit could not survive the long ocean voyage back to France, Edouard had a quantity of the oranges peeled and the peel dried and sent on to France. On its arrival, the unusual scent of the peel stirred the imagination of Edouard's father (oranges were not available in Europe at the time) and he began experimenting. He steeped the peel in brandies and through distillation combined the infusion with various local herbs and spices. The final result was an outstanding balance of aromas and flavours with a pleasant tart character.

    Now world famous, Cointreau orange liqueur is fantastically versatile. Not only is it amongst the most favoured liqueurs of the world, it is also a vital element in many important cocktails. Oranges used in Cointreau's production are now sourced from several centres: In the Caribbean, the bitter Bigarade (citrus aurentium) is harvested when the orange is still unripe - when it has the greatest aroma. Every process is rigorously controlled - from the separation of the peel from the pulp by hand, to drying in the sun until they turn bronze-green, followed by careful sorting. Peels are similarly processed from sweet Comuna, Cadanera and Salustiana oranges from Spain, and the Pera with its rich essential oils from Brazil. Some of these sweet peels are also used fresh.The peels are shipped to the Cointreau distillery in Angers and inspected again. The fresh, sweet peels are macerated in alcohol for several weeks to bring out the essential aromas.

    Distillation takes place in steam heated copper stills which are filled with orange peels, alcohol and water. By precisely fixing the speed of the distillation, the heating temperature and the leveling out of the alcohol, Cointreau's distillers are able to isolate the richest aromas from the 'heart' of the distillation, seperating them from the less valuable 'heads' and 'ends'. A new distillation of the heads and ends follows in order to extract every rich component. These essences are concentrated to retain only the most aromatic elements.

    Cointreau's alcoholic content, (40% alcohol by volume), its density, its absolute clarity at room temperature, as well as the temperature at which the liquid becomes opaque are monitored. When cooled, or when poured over ice, Cointreau turns opalescent. This transformation confirms that the correct quantity of essential oils has been achieved. The oils have a solubility directly linked to the alcoholic strength and temperature. On cooling, the oils become insoluble and make the liquid opalescent. Achieving this is a production secret of Cointreau.

    Tasting note: Clear, bright silvery appearance is slightly glycerous. Aroma is super pure and perfumed with high pitch orange zest, pith and peel bursting with freshness. The palate is silky, creamy, nicely spiced and a little sweeter than the nose suggests with candied orange dovetailing into fresher, drier pith and peel notes. Gentle spices persisting. Excellent length. Long aftertaste of orange zest with a candied orange fade. Classic and certainly unsurpassed for aromatics in the genre. 40% Alc./Vol.

The palate entry is intensely orange peel-like yet more sweet than bittersweet; the midpalate stage is deeply orangey, sweet and sublimely juicy.     Classic Cocktail: The Margarita
    The Margarita has suffered terribly in modern times. In an effort to make it hip, quick, trendy, and cheap it has been bastardized far worse then any cocktail before it. Whether it is the use of inferior (or just plain wrong) ingredients, or commercially made mixes, the common Margarita these days tastes more like a ‘Limeade’ with a splash of orange juice than it does the delectable cocktail that it once was. A true Margarita is made from three ingredients: Tequila, Cointreau (Triple Sec), and fresh squeezed Lime Juice. Like any cocktail, the true art comes in arriving at the proper ratio of the ingredients in order to present a balance of the flavours. Arguably the best ratio for a Margarita is 3:2:1. Three parts Tequila, 2 parts Cointreau, and 1 part freshly squeezed lime juice.

    Created by a “beautiful young woman”, this ancient amber coloured Italian Liqueur dates back to 1525. It was gifted to the artist ‘Bernardino Luini’, a member of the Leonardo da Vinci School. The said “beautiful woman” was subsequently immortalised by Luini in a renowned fresco in Saronno (although, the true source of Luini’s inspiration remains a matter of some speculation.) Commercial production of the recipe was begun in the 18th Century by the Reina family in their apothecary shop in Saronno. There are seventeen ingredients in all.

    The nose displays spirity almond and spice aromas. DiSarrono's natural apricot fruit sweetness is subtly countered by the addition of crushed almonds. Beautifully balanced, the lush, full-bodied palate explodes in flavour on the mid palate finishing with fantastic persistence.
