    Cassis is the French word for blackcurrant. The blackcurrant itself is of Nordic origin. It was only towards the beginning of the eighteenth century that Europe embraced it, both as a garden plant and for its medicinal qualities which earnt it the description of “elixir de vie.” However, as far back as the sixteenth-century monks from the famous Dijon region of France are recorded to have been growing blackcurrant bushes. The drink they made from it was offered as a universal cure-all for everything from snake bite to depression. While this is clearly fallacious, it is common knowledge that black currants are rich in vitamin C and the liqueurs made from them are enjoyable and healthy digestifs. Baitz Creme de Cassis is made by macerating the berries in grape brandy. Blackcurrants from the highest quality farms in the Port Huon area of Tasmania, Australia are used - recognised as being amongst the best in the world. On a dollar for dollar basis, Baitz Creme de Cassis represents outstanding value. 18% alc./vol.

    The addition of approximately one teaspoonful of Creme de Cassis to dry white wine or champagne creates "Kir", an extremely popular French style aperitif.

Suntory have produced a very good drier style banana liqueur called ‘Lena Banana’ for some time, however this version from Baitz now makes the flavour available for those working to a budget. The Banana has its origins in the Orient. Considered by Hindus to be the forbidden fruit of the Earthly Paradise, the banana is now grown all around the world including Northern Australia.     Retasted 10/11/2016 [30% ABV bottling] For some reason, the nose is almost a non-event. A shame, given that the higher abv has made for a more creamy, textural and intense delivery with greater length and purity. Quite delicious.

    Previously tasted 7/3/2015.... [17% ABV bottling] Deep burnished copper with minor sediment in the glass. Subdued opening offers a pure but restrained expression of the fruit. Several minutes in the glass doesn't budge this in any significant way except gaining a point intensity wise. More impressive on the palate, it delivers a medium bodied, authentic and judiciously balanced profile with the fruit's sweet/tart flavours nicely preserved. The producers recommend it poured over ice cream.

    A well-known liqueur made with sweet “Marasche” cherry pits, from which it takes its name. Bordiga's uses both Marasca and Amarena cherries - the whole cherry, including stems, branches, leaves, and the addition of a Madagascar vanilla bean. All the infusions are done separately, then blended and redistilled. Summed up by one reviewer as "...a supremely complex Maraschino that blows Luxardo out of the water", it's often drunk as a digestive but also thirst quenching if diluted with water or orange juice.     Made in France from hand picked, red and black raspberries (mûre), honey, vanilla, and Cognac. In the time of King Louis XIV the nobility of France entertained with feasts in their vast chateaux that were invariably concluded with liqueurs. It's in this tradition Chambord has been created- packaged in a spherical bottle with gold plastic lettered "belt". The bottle is modelled after a Globus Cruciger in order to reflect the liqueur's royal connection.

    The most obvious drink to create with Chambord is of course Kir Royale - that being a dash of liqueur at the bottom of a glass of champagne. However, alternatives abound. For example, an equal mix of Chambord & Cognac gently heated in a glass makes an ideal heart warmer while the Chambord Vodka Tonic (a dash of Chambord, ice, 30ml. Vodka, tonic & lime garnish) makes for a delicious refresher. Other common drinks made from Chambord include Chambord Daiquiri, Chambord Royal Spritzer, Little Purple Men, The Purple Hooter Shooter, Sour Grapes, Grape Crush, French Martini (which started the "cocktails as a Martini" craze) and the original Sex on the Beach. Needless to say the liqueur is more than acceptable drunk neat, although it lacks some of the viscosity and intensity of its Dijon counterparts and is lower in alcohol. (16.5% alc./vol.)

    As Chambord is made with all natural ingredients with no preservatives, it is best drunk within six months after opening.

Granted, it’s sweeter than the average spiced rum, thanks to the addition of pure sugar-cane syrup.     Made using oranges mostly from Spain and Haiti, this relatively new release (for Australia) is inspired by an old recipe from the early 1900s for a Triple Sec and cognac blend. Originally called ‘Majestic’, this contemporary rendition combines 70 percent Cointreau with 30 percent Remy Martin cognac. The original recipe also includes macerations of nuts and almonds. Cointreau's stated aim is for "...a product that appeals to lovers of single malt whisky and dark rum as well as making cognac more approachable for female drinkers." Its bright amber-gold appearance leads into perfumed aromas of orange pith and peel counterpointed by richer, heavier scents of fresh baked orange cake, jaffa and orange sorbet. A glycerous, creamy entry glides into a silky, orange cake / orange zest infused mid palate carried by a subtle spirit backbone, ending semi-sweet with a delicious blood orange fade. Broader and less vibrant than the original, this is no doubt intended to blur the lines between the Cointreau brand and an equally famous rival - Grand Marnier. Both are equally good. 40% Alc./Vol.

    A travel retail exclusive, Cointreau Blood Orange is an interpretation of the house style that has its roots in the century-old mastery of orange selection and distillation. Bernadette Langlais, master distiller at la Maison Cointreau, selects intensely aromatic blood oranges found on the Mediterranean island of Corsica. She then distills their peel along with those of the signature sweet and bitter oranges of Cointreau. At her request, blood oranges are harvested just at the right moment, when their peel contains high concentrations of the essential oils that are then captured by distillation.

    All-natural and crystal clear, this is considered a new expression rather than a mere flavour-extension of Cointreau.     In the history of cocktail making, orange is arguably one of the most used liqueur ingredients. A closely related expression employs mandarines, but besides the famous Mandarine Napoleon, few other producers have offered the citrus in liqueur form. Typically mandarines from Sicily are lightly ‘crushed’ then macerated in neutral distillate to harness the full flavour of the meat of the fruit. Loire-based distiller, Combier have introduced their own version. While not as intense as some curacaos, we love the way this accents the pith-peel aspect of the fruit on the nose in a very natural way. That's echoed on the palate which captures the luscious character of ripe mandarines, balanced by a touch of acidity at the finish. Even though the ABV is lower than its cognac-based equivalents, this will make a delicious contribution to Margaritas, Brandy Crustas or Mandarin Spritz. 25% Alc./Vol.

    While not as well known as its main rival, Cointreau, Combier holds the place as the world's first clear orange liqueur. They produce two Triple Secs.     Using locally grown 'guignes' (small wild cherries), this liqueur's almond scented nose is brought about by the fruit's stones which are included in the lengthy maceration. Its deep cherry-red colour anticipates the medium-sweet aromas of marzipan, maraschino and fruit cake that are echoed on the palate where a touch of sour cherry competes with subtle notes of crushed almonds; there's hints of icing sugar and cherry-ripe chocolate too, but there's also enough 'tartness' to hold it together. Typically served straight and lightly chilled, you can see why this light and breezy liqueur would work so well as a Summer aperitif or as an ingredient in simple cocktails (it's recommended with gin and vodka in particular). Other sources claim it adds a 'vintage gourmet' vibe to chocolate pudding or ice cream. Located in the heart of Burgundy's Cote de Nuits, the Estate covers over 850ha, most of which is used for corn production, however 25ha are set aside for blackcurrants, which are regarded as the finest in France, particularly for the production of Cassis.
    Whilst the Baron's Estate is regarded as France's finest producer of Cassis, he has also constructed an ultra modern production facility for the production of high quality fruit liqueurs. The Estate produces strawberry, plum, peach and raspberry liqueurs as well as cassis. The raspberries, strawberries and peaches are hand harvested whilst other fruits are machine harvested. Any fruit not required for immediate production is frozen.
    In order to produce intense liqueurs, the fruit is macerated in high quality alcohol (98% proof) for a period of three months. The maceration takes place in stainless steel tanks, and the higher the proof of the alcohol, the more successful the maceration process. After the maceration is completed, the fruit is gently pressed using a pneumatic press - settled and then racked.
    If a crème style of liqueur is required the liqueur base is sweetened with crystalline sugar - 500 gm/litre for cassis and plum (mure). 300 gm/litre for strawberries and peaches, and 330 gm/litre for raspberries.
    Domaine Sathenay do not use stabilizers or artificial flavourings. Should flavouring be required the only natural flavourings, made from the liqueur in question are used.
    The result is that these liqueurs are renown for their purity of fruit flavours and intensity.

    TASTING NOTE: Produced from the finest blackcurrant clones. Very deep brick red colour. The nose is powerful with intense blackcurrant aroma over a herbal, spice and sweet boiled lolly back ground. Rich, overpowering palate. A concentrate – obviously not supposed to be tasted like wine, but none the less one has to test its qualities. Viscous texture, wonderfully sweet and perfect for Kir or Kir Royale. On the palate flavours of blackcurrant herbs and liquorice with a spicy background. Very long sweet blackcurrant, liquorice aftertaste.

    Classic Cocktail: The Kir Royale
    Kir is a cocktail made with a measure of crème de cassis (blackcurrant liquor) topped up with white wine. In France it is usually drunk as an apéritif before a meal or snack. Originally the wine used was Bourgogne Aligoté, a lesser white wine of Burgundy. Nowadays, various white wines are used throughout France, according to the region and the whim of the barkeeper. Many prefer a white chardonnay-based Burgundy, such as Chablis. It is named after Félix Kir (1876 - 1968), mayor of Dijon in Burgundy, who as a pioneer of the twinning movement in the aftermath of the Second World War popularized the drink by offering it at receptions to visiting delegations. Besides treating his international guests well, he was also promoting two vital economic products of the region. Following the commercial development of crème de cassis in 1841 the cocktail became a popular regional café drink under the name of blanc-cass, but has since become inextricably linked internationally with the name of Mayor Kir. When ordering a kir, waiters in France now normally ask whether you want it made with cassis (blackcurrant), mûre (blackberry) or pèche (peach). The Kir Royale is simply a variation of the Kir using Champagne or other sparkling wine.

    Tasting note: Summer is the time to experience a plate of ripe peaches, nectarines and apricots - together with a glass of Peche de Vigne. This is a superb liqueur. Brilliant gold colour. Superb nose of nectarine, followed by ripe cling peach - a wonderfully pure infusion of fruit. The texture is perfect, with a silky, creamy mouthfeel that verges on being dangerous. Wonderfully ripe flavours of honey, white and yellow peach and a touch of ripe banana. Superb length, followed by flavours of nectarine, peach and just a hint of anise. Very delicate spicy overlay.     This unusual plum liqueur uses Filliers Jenever as a base spirit and reportedly includes chocolate, vanilla, coconut, banana and amaretto amongst other ingredients.

    Tasting note: Pale gold ochre appearance. The aroma is a little confected - sweet prune and hints of spice, in particular cinnamon and nutmeg. Seems to smell more like amaretto after a few minutes of exposure. Less sweet and more natural than the nose suggests, the palate possesses moderately concentrated prune juice flavours tempered by mild acidity. Good balance. Concludes less sweet. Prune aftertaste.
