Brookies Byron Gin (700ml)New South Wales, AUSTRALIA$82. 99Bottle$995.88 DozenABV: 46%Co-founder, Eddie Brook struck up a friendship with legendary Scotch Whisky distiller, Jim McEwan of Bruichladdich fame during one of Jim's tours around Australia. At the time, Eddie was Australian distributor for Bruichladdich's whiskies and Gin (The Botanist). McEwan was coaxed out of retirement and joined Eddie and his family to launch Brookie’s gin in Northern New South Wales. Named "Cape Byron Distillery", the operation runs a 2000 liter Tassie-made copper pot still. Brookies employs 26 botanicals, 18 of which are native to Australia: Sunrise finger limes from Byron Bay, kumquat, blood lime, aniseed myrtle, cinnamon myrtle, White Aspen, riberry, the young leaves of the lilly pilly leaf, macadamia nut, native raspberries from Brook Farm, Dorrigo pepper leaf, river mint and native ginger. Traditional botanicals include juniper, coriander, cassia, angelica and orris root.
Tasting note: Crystal clear. Pure, rounded aromas of citrus peel and lemon thyme followed by woody juniper, pepper, coriander and minty freshness. Five minutes adds hints of raspberry. Creamy textured with a concentrated yet keenly balanced profile; lively with piney juniper upfront, followed by dried herbs and pepper. Hints of macadamia late in the aftertaste? The lingering spiciness and the overall length is quite something. Nicely done. 46% Alc./Vol.
Other reviews... An incredibly ambitious gin in its wide use of Australian botanicals -17 to be exact! While one might think such an endeavour might create a ferocious mix of flavours, all clamouring for attention, Brookie's Byron Dry is unified with an overall calm note. Botanicals are well integrated, used intentionally, and work together to create a polished product. There's a subtlety to this gin that presents a little coy and soft; in the glass, it takes a little while to express itself. Once it does, this gin presents with some beautiful ripe fruits, raspberry & riberry. The drier, woody herbaceous botanicals kick in after that, and the mix of flavours helps to create balance and structure for the Australian botanicals to shine through. Juniper is not lost in the mix; the resinous pine follows into the finish and rounds out the overall experience. 93 points - Jess Clayfield, James Halliday's Australian Wine Companion 2025

Brookies Byron Slow Gin (700ml)New South Wales, AUSTRALIA$74. 99Bottle$899.88 DozenABV: 26%A welcome (albeit limited) addition to the Brookies range, is this "Slow" gin, in the style of English sloe. The point of difference here is that Davidson Plums are used instead of sloe berries. Considered a bush delicacy, the plum is indigenous to the Byron region and is packed with vitamins and minerals.The plums are steeped in Brookie’s Gin for several months. The maceration is diluted to 26% ABV with Mount Warning spring water.
Tasting note: Brilliant copper. Attractive, medium dry aromas suggesting quince paste, plum jam and raisins over muted juniper and white pepper. A juicy-yet-dry, pleasantly tart, plum and red berry flavoured gin with trace pepper in the finish. Delicious Summer sipping, but would be even better at a higher ABV. Keep it simple with soda or just ice. 26% Alc./Vol.
Other reviews... While 'slow' gin is not an official gin category, this lovely gin cordial pays homage to the much-loved 'sloe' gin style. In a nod to the style's distinctive plum flavours, Brookie's Slow utilises Davidson Plums to recreate the style. The plums themselves, native to the Byron and the surrounding area, are fruits naturally low in residual sugars, making them tarter than a typical plum. The months-long steeping process, coupled with the lower sugar content, means that while the gin develops the concentrated fruit flavour, it doesn't overwhelm the gin itself. Rhubarb and an earthy hibiscus are encapsulated in this gin. Bulldog is a London dry Gin produced using old-time methods where neutral grain spirit is quadruple distilled utilising copper pot stills. The raw spirit is then steeped in an array of botanicals including: dragon eye, poppy, lotus leaves, lemon, almond, cassia, lavender, orris, liquorice, juniper, angelica, and coriander.
Tasting note: Clear. Lovely fresh citrus peel aromas combine with caraway, talc and juniper notes. The palate is quite concentrated, medium dry and gently warming with spice, citrus, caraway and pine flavours leading into a tingly, spicy back palate. Exceptionally persistent, drying aftertaste with a subtle mineral / anise fade. 40% Alc/.Vol.
Other Reviews: The nosing passes find classic London Dry aromas of juniper with assertive, prickly spirit and citrus. The palate entry is creamy, juniper-heavy and curiously chalky; the taste profile at mid palate is herbal, piney and citrusy. I like this gin a lot but wonder: Would it be even better at 47% abv?

Cadenhead's Old Raj Dry Gin is one of the most intensely flavoured Gins available on the market today. Gin lovers note, while Old Raj is bottled at 55%, and carries some heat, it is in harmony with the extra flavour that Raj offers. No doubt it will be too much for some.
Tasting note: Distinctive, yet very pale straw coloured tinge. Heavy, penetrating aromas exude out of the glass offering an exotic amalgam of coriander seed, saffron, white pepper, tumeric and clove with some citrus zest notes adding freshness. A rich, clean, oily mouth feel delivers an enormous attack of saffron, coriander seed, aniseed and lemon tart carried by a spicy power wave, with the flavour profile reverberating into an exceptionally long, off-dry aftertaste of indian spices and lemon tart. Other reviews... This is the lower-proof version of the classic Old Raj. Lovely, complex gin bouquet offers aromas of coriander, juniper, anise, orris root, ground pepper, lemon peel, lead pencil, earth and tree bark. Five minutes air contact accents celery leaf and subtle cardamom. Neutral entry builds to a concentrated, medium-dry, peppery, lemon sorbet attack. Medium fresh aromas include muted juniper, delicate white pepper and dried herbs. 'Darling Gin' is their classic London Dry, distilled with locally sourced botanicals like rosemary, oranges, green tea, lemongrass and pepperberry. Aromatically, it's bright and citrus-driven hinting at lime zest and grapefruit, with coriander, white pepper, juniper and dried herbs in tow. Those notes lead into medium-intense flavours of Meyer lemon and honey yoghurt, ending in a linear, peel-fresh, piney finish with lingering spices. This elegant, drier-styled gin is also surprisingly powerful at 42%.

Not sweet enough to be a liqueur, and with none of the traditional botanical notes associated with gin, the focus is on rich espresso coffee and intensely fruity dark chocolate flavours. Beneath that - and where the gin does become apparent - is the finish, adding a citrus and pepper lift that works to relieve the mid-palate sweetness. It's a fragrant shot of alpine freshness, with deep, lingering zingy coriander and earthy liquorice latching expertly onto the musky, piney juniper, and topped off by the zing of the mountain pepper. Our tasting from a small sample found a ripe, juniper-forward bouquet, menthol-fresh with aromas of crushed eucalyptus, pine needle, pepper and sea spray following through to a concentrated, medium dry burst of fresh juniper, black pepper, liquorice root and a coriander accented finish. The aftertaste is pleasingly spicy, balanced and long. A versatile gin to be enjoyed on its own or in classic cocktails. 43.5% Alc./Vol.

Together they form the label for three very different gins created by George Burgess. With years of technical expertise as a food scientist, he now spends his time foraging for botanicals or sourcing ingredients from local producers. His gins aim to reflect both place and season. This edition features a blend of twelve botanicals, notably abundant in tangy wakame seaweed sourced from the chilly Tasman Sea resulting in a clean, salty style.
The opening sniffs offer engaging scents of cut grass, kelp, rock pools counterpointed by delicate floral notes and hints of chamomile tea. A creamy, low-spice gin with well rounded flavours of piney juniper, brine, pepper and a tangy, fresh, warming finish. Nice coastal character. Dingle Gin was awarded World’s Best Gin and World’s Best London Dry at the 2019 World Gin Awards. The explosion of the Irish gin market in recent years has seen the launch of more than fifty brands in Ireland and twenty gin producers, with 12 new brands introduced in 2018. Dingle is leading the pack! Made using a grain spirit base and thirteen locally grown botanicals including rowan berry, juniper, fuschia, bog myrtle, heather, chervil, hawthorn and coriander. These are macerated in the spirit for 24 hours prior to distillation, then boiled with the vapour passing up the still through the 'flavour' basket. Tasting note: Clear. Slightly viscous. New players are emerging from all quarters. This novel release is made in the "Shed Distillery", Drumshanbo, Co Leitrim which is the first distillery in the West of Ireland in over 101 years. Opened in 2016 by the team of PJ Rigney and his wife Denise (inventors of Sheridan’s Irish Cream and Boru Vodka), the venture is already busy creating a range of spirits, including whiskey and gin. Rigney adds, “The international market is now looking for super-premium brands that stand apart, with unique heritage and unrivalled quality & taste. There’s huge international excitement about this new gin and we already have some pre-orders from China.”
Handcrafted through slow distillation in a gleaming medieval copper pot still fired by steam, Rigney expands on the production process for his gin: "Various oriental fresh citrus and leaves (gunpowder tea) are added into the 3 layer infusion basket, which lies in the vapour pathway between the still and the condenser. Steam is gently applied. The vapour rises through the unique shape of the medieval head, which allows maximum copper contact, which cleans and purifies the spirit. The vapour exits the still and passes into the infusion basket, where it gently extracts the oils and aromas from the citrus and tea. Boiling in the still would extract bitter compounds from these ingredients, whereas vapour infusion only extracts the aromatic oils. The vapour passes into the condenser and is condensed down into our gin at approx. 75%. We take an early cut so as to avoid any harshness that tends to come off further into the distillation. The gin is allowed to rest for a week, which allows the oils and alcohol to infuse and for flavour to develop. It is then diluted to 43% with filtered water and gently filtered for clarity."
The keynote here is 'Gunpowder Tea' (Camellia sinensishis) - a green tea that's been slowly dried then carefully rolled into shiny pellets. The flavour is bold and bright with a slight spicy freshness. Other botanicals include juniper, angelica, orris, caraway, coriander, meadowsweet, cardamom and star anise as well as vapour infused oriental lemon, lime and fresh grapefruit. Nosing finds intense aromas of blackpepper, lemon peel and juniper in the opening pass with later inhalations detecting hints of orris root, cinnamon and chamomile tea. The palate follows through with robust flavours of liquorice root, cardamom, background juniper and a warming, vibrant, peppery finish with late juniper and liquorice through the aftertaste. Other reviews... Dunnet Bay Distillers’ Rock Rose Gin is the latest entry into the increasingly crowded Scottish gin market — where more than 170 different gins are currently in production. The brand dates back to 2014, the result of 55 experiments to find the right botanical blend. The final recipe is an exotic mix that includes juniper, rose root, sea buckthorn, rowan berries (aka mountain ash), blueberries, cardamon, coriander seed, and verbena. As near as I can tell, there’s no difference between this and the Original Edition, save the abv. At 57% alcohol, it’s no joke, and my complaints about the weak body are wholly inapplicable here. Rock Rose Navy Strength is sharp both on the nose and the tongue, which gives the fruitier character more room to shine. The juniper and other herbal notes are pushed more toward the back end, so while the attack lets the citrus shine, the finish of the Navy Strength feels more verdant than the Original Edition. Over time, things get quite bitter as it lingers on the back of the palate. Launched in July 2022 and delivering a delicious citrus burst, their Smoked Orange edition employs Lapsang Souchong tea adding smoky notes that enhance the zesty organic orange peel. Complemented by tangerine sage and lemon verbena, other botanicals include cassia, liquorice, water-mint and bilberries. Notes from the bottlers... NOSE: Subtle hints of smoke lie underneath zingy citrus notes. PALATE: The clean pine smoke from Lapsang Souchong tea excites the tastebuds and, as it settles, a candied sweet orange rises through. FINISH: The finish is long as the deep rich smoke lingers on the palate. The fresh citrus notes of lemon verbena and tangerine sage resolve into a sweetness on the back of the tongue.
Other reviews... My overwhelming opinion at the end of sampling the Smoked Orange Edition is that this is an effort to truly be applauded. Here is a flavour profile that has been born out of wanting to step out of a comfort zone, which it achieves tenfold. Both pride themselves on using local hand-foraged botanicals alongside exotic ingredients from around the world. It was the inspiration behind their first product: Rock Rose Gin. The early batches sold out in a matter of days! What sets their product apart is that it's the first gin to employ Rhodiola rosea in the mix. This unusual botanical grows on the local cliffs and reportedly gives the gin an earthy, Turkish delight flavour. Italian and Bulgarian juniper berries, rose root, sea buckthorn, rowan berries, blaeberries, cardamom, coriander seed and verbena (many of which are grown in Scotland) are also included. On the nose, Rock Rose has a delicate bouquet of rose, mixed with deeper cardamom and a touch of citrus fused into a mouthwatering mix. Tasted neat – fruity berries merge with the floral nose to give a full-bodied, rounded gin. Bright, slightly sour notes ping as the juniper comes to the fore alongside a warming heat. There’s depth and character a plenty with all the flavours that surround the piney core working in harmony. Crisp citrus, leafy eucoliptic elements, light florals and a resinous underbelly. This is good gin. It’s smooth to finish too. In a Gin & Tonic, the sharpness of the Sea Buckthorn emerges a little more, but once again is counterbalanced by round berries and a juniper heart. Rock Rose is recommended with a rosemary garnish but we tried it with a mint leaf garnish which brought out the freshness. The juniper-infused spirit known as gin has the Netherlands as its spiritual home. Later, England went on to popularise its own 'London Dry', traditionally based on less than a handful of botanicals (juniper, cardamom and coriander). However, the influence of Sri Lanka, Malaysia and other spice islands isn't commonly found, even in contemporary styles. Enter Dutch Gin, founded in 2022 in the Melbourne suburb of Mitcham. Here, botanicals like lemongrass, makrut leaves, chilli, thai basil and ginger are broadening the scope of what gins can taste like. Proprietor, Danny Perera employs a wheat-based spirit which brings a nice smooth mouthfeel to each expression. Step one is to load the still with distillate, then add juniper and dried botanicals to the pot. Once out of the still, the spirits are rested for a couple of weeks to maximise the flavour before diluting to a lower ABV followed by bottling and labelling. Shaken or stirred, Dutch Rules New World Dry gin offers juniper-forward flavours with a citrusy finish for a new everyday favourite. Great in a cocktail or simply with tonic. Fairtrade spices are sourced in the Kerala region of South West India. Fifty/50 Cask Aged Gin (500ml)SCOTLAND$99. 99Bottle$1199.88 DozenABV: 50%A gin with a difference, and a claim to be the oldest gin in the world. That's not hard to believe when you learn half of it's aged in casks for twenty years. The spirit was originally sourced by the House of MacDuff, a company run by mother-and-son team, Jane and Iain MacDuff in Renfrew - a small town just outside Glasgow. Back then, the gin category was relatively slow. Being curious distillers they wondered what a spell in oak might achieve. That turned out to be a lengthy experiment indeed. For the first decade, virgin casks infused sweet vanilla, ginger and strong oak flavours. For the second decade, ex whisky barrels were employed. These allowed the wood to slowly impart greater depth, however the juniper dominant note typical of unaged gins subsided. To revive the botanicals, the liquid was blended with fresh London Dry at a ratio of 1-1. Following several experiments, the result captures the best of both worlds: New & old, deep & fresh. It looks like whisky, but the keynotes of gin come through strongly: Lavender potpourri, chamomile tea, distant peppercorns and cough lozenges repeat in a full-throttle attack. The creamy middle is rounded off by suggestions of orange zest, crushed pine needles, lemon chutney and light vanilla. With tongue tingling peppers to match the botanicals and oak, Fifty/50 is no gin for beginners, and more of a Winter treat than a Summer time refresher. Or if you prefer whisky, this may even swing you into another category. Other ingredients include coriander, cassia bark, cinnamon, angelica, orris root, liquorice, lemon and sweet orange peel. Other reviews... because no-one has aged gin for twenty years, what does it taste like? Is it really like nothing I’ve ever tasted before? The answer is: absolutely. Although it looks more whisky than gin, it’s the opposite on the nose. It has that whisky complexity, yet also that hit of juniper and other aromas you associate more with gin. There’s a vanilla sweetness to it as well, with some oakiness and fresh citrus. It definitely makes you think: ‘Wow, what is this?’ On the palate the juniper is less evident, but the vanilla sweetness is emphasised by some caramel flavours too. The citrus is still there as well. On the nose it’s more like a gin, on the palate more like a whisky, and even reminded me of tequila. It’s super-smooth and warming going down, with a sweet aftertaste. So yes, it isn’t like anything I’ve ever tasted before, and it’ll be a long time before I taste anything like it again, I’m sure. - traveldistilled.com

We all want or need some time off the drink every now and again. But time off the drink shouldn’t mean time off decent drinks altogether. Hence, Four Pillars have been quietly working away to bring the botanical flavours of their most popular and iconic gins to life…but in an alcohol-free spirit. This was no simple feat. In fact, it’s probably the single biggest challenge they’ve faced since they started making gin in 2013. Because this isn’t gin. Gin has to have alcohol in it. To make Bloody Bandwagon, they actually do use Shiraz grapes. But because they haven’t been fermented there’s no alcohol. So you’re getting that same Shiraz flavour and colour without the alcohol. Win, win. Use Bloody Bandwagon as you would your ‘regular’ Four Pillars Gin but maybe a bit more liberally, so you can allow the flavour of the non-alcoholic spirit to shine through.

Looking like small grapefruits, the Asian Yuzu fruit has been the inspiration for several Japanese gins, aiming to retain its delicious sweet, sour and bitter flavours in harmony with the freshness of juniper. This is not the first time Four Pillars have experimented with the fruit. A limited edition collaborative bottling was launched in 2017. It was followed in 2019 with the Distiller Series 'Changing Seasons Gin' made with help from Japan's Kyoto Distillery. As of 2022, Four Pillars are including 'Fresh Yuzu Gin' as a permanent addition to their core range.
Mountain Yuzu, from the nearby Ovens Valley supply the Healesville-based distillery with fresh yuzus. Describing the flavour of the new gin, Co-founder and Distiller Cam Mackenzie comments, “Yuzu brings amazing aromatics that are a mix of lemon, mandarin, cumquat and grapefruit – all bright and fresh citrus notes – while the addition of finger lime adds some deeper citrus character. We’ve also learnt a lot (from the best) in our adventures making gin with Japanese friends, so in our take on Yuzu gin, we’ve used ginger, turmeric and sencha genmaicha, a Japanese green tea with roasted brown rice, for depth of flavour. A canvas of strong pine-needle juniper and a bit of lemon myrtle add a touch of lemon curd.”

During harvest, Cam McKenzie recognised that olive oil could work as a botanical. Experimentation led to olive tree leaves as well as around a litre of fresh Cobram Estate olive oil being added to the still. The oil is not what you'd purchase from the supermarket shelves. It's sourced from two Spanish Olive varieties – 'Picual' & 'Hojiblanca'- and one Italian – 'Coratina'. 250gm of local bay leaf and rosemary are also included, plus there's more coriander and much more juniper than Rare Dry. Other botanicals include lemon myrtle, fresh local lemons, macadamia and grapefruit. The gin is savoury, textural and bright.

Yet another 'vintage' of this novel Aussie release has been made by steeping Yarra Valley Shiraz grapes in gin for eight weeks. The fruit was de-stemmed but kept mainly as whole berries, and the tanks were kept cold and stirred daily. After eight weeks the fruit was pressed before blending with more Gin. The final product was bottled unfiltered and is expected to develop secondary fruit characters beyond two years, but should be best consumed within two years of vintage. Notes from Four Pillars... (2017 release) The beauty of Bloody Shiraz Gin being a product of vintage means that it will never be the same. Our 2017 release has an incredibly vibrant ruby colour, which turns iridescent pink when mixed with tonic or soda. Aromatically the gin has fresh pine needles and incredible spice, and a clear peppery, dense raspberry character. The palate is lovely and sweet, with long juniper and spice characters to finish. This release is slightly lighter in colour than last year's, due to a cool vintage in the Yarra Valley with a moderate ripening period. Unlike Sloe Gin, the alcohol is 37.8% (rather than <30%) so it packs a punch and is ideal in a range of cocktails. 2016 release tasted... Deep purple with mauve edges. Berry tart, stewed plum and light pepper/paprika aromas over background juniper and grapefruit. Medium bodied with soft, silky, off-dry, juicy plum and raspberry tart flavours and a delicate grapefruit, cinnamon, white pepper, piney-juniper finish. Four Pillars Spiced Negroni Gin (700ml)Yarra Valley, Victoria, AUSTRALIA$89. 99Bottle$1079.88 DozenABV: 43.8%Four Pillars wanted to create a gin specifically for the Negroni - something to cut through the Campari and vermouth. And as the Negroni has always been a favourite at Four Pillars, distiller, Cameron MacKenzie jumped at the chance to make the first collaboration in their "Bartender Series" - a tribute to the very definition of a perfectly balanced cocktail.
First, they took their base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then they added an exotic West African spice called Grains of Paradise. This is one of the most unusual spices in the world, with clove and sichuan characters. But although very powerful, the spice tends to glow rather than become hot.
They also decided to use organic blood oranges in the botanical basket, as well as some ginger.
Tasting note: Crystal clear. Intense orange sorbet opening develops pith and peel freshness followed by hints of jaffa, white pepper and cut ginger. Creamy, soft textured delivery features early orange peel and later subtle hints of juniper. Excellent balance and freshness. Cough lozenge-like warmth and light jaffa in the fade. 43.8% Alc./Vol.

Four Pillars worked with QANTAS and the Rockpool mixology team to create an Asian-inspired Modern Australian style. The bartenders were aiming for a gin with nice spicy complexity and mixability – something to create a tasty G&T, or classic dry martini. Plus, with all that spice it also makes a spot-on Red Snapper. Red and green Szechuan give it a lovely warm mouthfeel while the macadamia nuts give it softness and an almost creamy palate. Fresh Rose Glow apples, tangelos, grapefruit peel and dry native quandong add fruity notes. Tasting note: Clear. Spicy feel to the bouquet offering lifted scents of peppercorn and coriander seed over fresh juniper and citrus. A full bodied, creamy, oily textured gin suggesting flavours of green cardamom, juniper and liquorice root with intensifying peppers towards the finish. Ends, dry, warming, vibrant, vaguely herbal with hints of anise, lemon peel and orris root through the aftertaste. Will make great Bloody Marys. 45% Alc./Vol. -

Their first spirit is a modern Australian Gin; possessing an equal mix of local and exotic botanicals including Juniper Berries, Coriander Seeds, Cardamom Pods, Tasmanian Pepperberry Leaf, Cinnamon, Lavender, Angelica, Star Anise, Lemon Myrtle and Fresh Oranges.
The distiller's state, "In terms of our ambition for our first gin, we didn't want a London Dry Gin but we couldn't ignore juniper. The way we have approached it is that the juniper is the canvas and the other botanicals paint the picture. The Tassie pepper is brilliant on the palate, giving us warmth rather than heat. Lemon myrtle is a beautiful, complex and unique alternative to lemon peel. Perhaps most interesting is our use of whole oranges. It’s unusual to use fresh produce in gin but Australian citrus is highly aromatic and supports the spicier botanicals like coriander, cardamom and star anise.Tasting notes: [BATCH No.2 tasted] Clear. Vibrant, lifted aroma is citrus focussed with its distinct lemon peel top note hovering over peppery, woody, piney, juniper notes. Second pass sees the aroma turn creamy and more lemon-meringue like. Hints of eucalyptus emerge in the final inspection to round off a very appealing gin bouquet. An unassuming entry leads into a concentrated, creamy yet spicy, medium dry profile featuring citrus peel, juniper and pepper. Excellent balance. Lemon / lime / spice aftertaste concludes with a dry, chalky fade. Consider adding this to your Gin repertoire over summer. Recommended. 41.8% Alc./Vol.

As with previous editions, Four Pillars Christmas Gin starts by distilling Christmas puddings. The gin is then aged in Muscat barrels and a slight tweak of Muscat is added to finish. What you get are aromatics of classic juniper and a hint of cinnamon, backed up with a rich, luscious palate. There's a mild sweetness from the Muscat and extended barrel ageing too. More than ever, it smells like gin and tastes like Christmas! Sip it on ice (it’s dangerously drinkable), mix it with ginger ale or beer, or try it in some great cocktails like this Christmas Cobbler. 43.8% Alc./Vol. -

Four Pillars Navy Strength Gin (700ml)Yarra Valley, Victoria, AUSTRALIA$104. 99Bottle$1259.88 DozenABV: 58.8%One of Australia's latest distilling ventures is located in the Yarra Valley and it's going gangbusters. Regular readers will remember the standard ABV release from several months back. This limited edition ups the ante in an extraordinary way. It's also recently being awarded a prestigious double gold medal at the San Francisco World Spirits Competition. 92 gins were assessed this year, with only nine scoring the double gold award. Here's the distiller explaining how they pulled it off:
"After experimenting with some exclusive batches for the Gin Palace (a Melbournian Gin institution) we decided to add fresh Byron Bay finger limes to the distillation, along with our beautiful organic oranges. This means we undertake a frenzy of distilling when these beauties are in season, and release just one edition of the Navy Strength each year.
The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the addition of fresh ginger. Finally, fresh turmeric adds a fresh but earthy quality.
The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense - sweet and juicy - but it is still very clean. The turmeric has added weight and earthiness to the palate with a freshness not unlike dill or cucumber." - Notes sourced from Four PIllars.
Tasting note: Brilliant rainwater clear with a bright silvery blush. Sensational intensity with lifted lemon verbena / lime cough lozenge notes in the opening pass. Further air contact shifts the accent towards juniper and orange peel over suggestions of turmeric, dried curry leaf and white pepper. A crisp, dry, juniper focussed entry preludes a powerful yet poised, creamy textured mid-palate attack with juicy orange / lime zest and vibrant peppers. Finish features lemon meringue, lime gelato and a drying turmeric-like texture followed by a medley of citrus flavours, all carried by the lively spices in a finale that seemingly never ends. Garden Grown Gin (700ml)New South Wales, AUSTRALIA$94. 99Bottle$1139.88 DozenABV: 42%Note: the title of this product has changed from 'Distillery Botanica' to 'Garden Grown Gin'. It's the same liquid, produced in the same way, to the same recipe, by the same people. Garden Grown Gin is produced at Distillery Botanica and employs a process known as enfleurage, a thousand-year-old technique. Traditionally it applies to flower petals - these are placed on glass trays containing a wax or animal fat called a 'corps'. This corps which is highly purified with no odour or water remaining absorbs the flavour and fragrance from the flowers. Every 24 hours the petals are removed from the tray and replaced with fresh ones. This may be repeated dozens of times per tray. The trays are stacked so that the tray on the top can trap the rising fragrance from the flowers on the tray below. Once saturated with aromatics, the corps is referred to as the "pomade" (the most highly saturated pomade is called "pomade No. 36" because the frames have been charged with fresh flowers 36 times, the maximum during enfleurage). The next step is to break up the pomade in the presence of high strength neutral spirit which takes up the natural flower oils and leaves the spent fat behind. At Garden Grown Gin, the aim is to extract the purest perfume from their chief botanical, Murraya, without the use of heat. This makes the delicate flower come alive with cues of jasmine, honeysuckle and orange blossom. Distiller, Phillip Moore adds, "the gin also includes a rose enfleurage using an old fashioned Tea Rose from our garden. It is known as the Duchess de Brabant. Our garden also supplies Chamomile flowers which when distilled immediately on picking have a delicious apple character with a delightful bitter finish. To carry on the perfume allusion of enfleurage we also use orris root which is used in Chanel No 5. In perfume and gin orris is a fixative which creates harmony and also slows down the evaporation of the more volatile aromas. Orris has its own violet aroma. It enters the palate very sweetly and adds a richness and viscosity all over. On the finish it contributes a high quality bitter and an earthiness which is almost pastry like". Tasting note: Crystal clear, shows good viscosity. Pure and ultra fresh with a juniper and black pepper base overlaid by sweet floral top notes. Aeration offers suggestions of orange blossom, rose petal and muted lavender and later hints of incense candles. Creamy yet vibrant entry with a seamless integration of juniper / herbal / floral / wax-like notes. Concludes tongue tingling, peppery, fresh, long. Delicate and multi-layered. Beautifully composed. 42% Alc./Vol.
