    Released in the late 1980's, Bombay Sapphire was the first London Dry to be marketed as a 'super premium' Gin.

    While most gins take their flavour from four or five botanicals, most notably, the juniper berry, Bombay Sapphire uses no less than ten, achieving an altogether more balanced and refined taste. Furthermore, the distilling process is unique. Most other gins boil up the botanicals with the spirit. But with Bombay Sapphire, the spirit is distilled alone. Thus it is in vapour form when it passes through the perforated copper botanicals basket. This process allows each delicate aroma to be absorbed from each respective botanical. These include almonds, lemon peel, liquorice, juniper berries, orris, angelica, cassia bark, cubeb berries and coriander. Bombay's character is more complex and herbal than other gins and its price is indicative of its quality.

    The distillery is nestled on the fertile foothills of Mt. Uncle from where it claims its name from. The mountain was named after the Uncle of the founding pioneer John Atherton, very original! Yes there is also a Mt. Aunty beside him as well so the big guy doesn’t get lonely. Set in landscaped gardens on a Banana, Avocado and Macadamia plantation Mt. Uncle Distillery is as a pleasant visit upon your eyes as it is your taste buds.

    Apart from the juniper, this gin employs a full repertoire of native Australian botanicals (14 in total). The Lemon Scented gum (citriodora) makes a particularly strong contribution. Smelling this evoked memories of planting an avenue of saplings. The species has soft furry leaves prior to maturity. Rubbing the leaves between your fingers releases the oils along with a delightfully fresh lemon/eucalyptus aroma. Other notable ingredients include native Wattle Seed, Lilly Pilly, Lemon Myrtle, native ginger and Finger Limes.

    Tasting note: Crystal clear. Wow! Captivates from the get go with its individualistic bouquet - an alluring combination of lime juice, crushed citriodora leaf and subtle liquoricey notes - juniper takes back seat. A light entry builds to a concentrated, beautifully balanced and wonderfully fresh citriodora leaf and lime peel mid palate with hints of juniper and anise, finishing pleasantly peppery with excellent persistence. You know I am passionate about Aussie gins (I’ve even created a lovely event for you to try some) so when I came across Botanic Australis gin at Top Shelf Boutique Drinks Festival today (expect a round-up later) I couldn’t wait to write about it! It was definitely my ‘Gin of the day’. Where to start? It’s craft-distilled in North Queensland at the Mt. Uncle Distillery (there is a Mt. Aunty too!), contains no fewer than 14 native botanicals, (including three types of myrtle, finger limes and lilly pilly), and is both distinctive and delicious. The gentleman serving me described it as “very herbaceous”. And so it is. A hint of juniper, a mouthful of warmth and then the botanicals play a fandango (look it up) in your mouth. Herb, grass, mint and citrus flavours, all at once. I also detected ginger and pepper after notes too. It was love at first taste and I swiftly purchased a bottle.     Read random reviews from around the web and you'll quickly work out that Brockman's is one of those disruptive, divisive contemporary gins, far from traditional London Dry. Positive comments are in the majority, but there's another group who don't quite get it. Beyond the obvious allure of the sleek black, textured bottle, the gin inside is produced using a high-quality grain spirit and infused with ten botanicals (Juniper, Coriander, Blackberries, Blueberries, Orris Root, Cassia Bark, Liquorice, Orange & Lemon, Angelica root and Almonds). Arguably, the berries make the strongest contribution. As one taster explains, "The mids are where the notes that make Brockman’s stand out come to life. Raspberry lemon cake, a distinct sweetness, bright and robust. It begins to take on a more dry tone with blackberry and coriander, ripe berry. And then where it all ends up, its remarkably dry...The Gin and Tonic was exquisite, with notes that reminded me strongly of a blackberry bramble." It's also said to be a heavenly match with Ginger Beer!

    Other reviews... something truly stunning, albeit not for everyone. I personally love Brockmans Gin, but I am generally (not always) drawn to gins which are less London Dry and have more sweet, floral tones. On the nose there are strong berry tones with a hint of lemon. To taste, there is initial heat followed by warming berries and finishing with a delicious flavour which reminds me of lemon meringue pie…mmmmm. I find this gin incredibly drinkable neat, which is unsurprising as according to the website, “The aim was to create a gin so smooth and sensual, you would want to drink it neat over ice.” It also makes a mean gin and tonic, thirst quenchingly refreshing and dangerously moreish! - ginobsessions.com

    ...If you’ve already made up your mind about contemporary style gins, this is one I suggest at least trying. The dry finish sets it apart and it may win you back over. For those who already enjoy the contemporary style, this is one that I think stands head and shoulders above the vast majority. It’s bright, fresh, and fruity, without being too over-the-top. I’d recommend this wholeheartedly to anyone who’s looking for an upgrade from their Hendrick’s, or looking for a Nolet’s that’s more cocktail friendly.     Our notes from 2020... Atypical gin aromas of ribena cordial and raspberry jube with little to zero juniper. Berry flavoured until the finish where light coriander seed and pine enter, balancing the sweetness. Like a flavoured vodka. Try it with ginger ale. 40% Alc./Vol.

    Simon and Brogan Carr join a small but growing number of inner city suburban distillers servicing Melbourne's Richmond neighborhood. From their bar / distillery set up in an old mechanics workshop, they've created three signature gins: A juniper-forward dry style dubbed Everyday Salvation, a slightly more contemporary style called Evening Light, and a navy strength edition called 'Royal Blood'. Brogan Carr is qualified as a medical laboratory scientist, and says she didn‘t expect to become a distiller. ”I love the precision of science and investigative nature, but working in labs wasn’t enough”. She retrained as a distiller, finishing a Master of Science Brewing & Distilling at Heriot Watt University in Edinburgh, Scotland.

    Brogan’s three gins are designed to appeal to different gin drinkers. Evening Light is a fresh and fruity style, made with mangos and raspberries and organic white grapefruit juice alongside more traditional botanicals. Brogan says it's her 'easy drinker'.

    Tasting note: Creamy scents of cardamom, orris root and chamomile(?) with hints of lemon peel over background juniper and pepper. Light to medium bodied with a soft entry and attractive flavours of grapefruit, delicate juniper and white pepper. Breezy, fresh and warming.     Co-founder, Eddie Brook struck up a friendship with legendary Scotch Whisky distiller, Jim McEwan of Bruichladdich fame during one of Jim's tours around Australia. At the time, Eddie was Australian distributor for Bruichladdich's whiskies and Gin (The Botanist). McEwan was coaxed out of retirement and joined Eddie and his family to launch Brookie’s gin in Northern New South Wales. Named "Cape Byron Distillery", the operation runs a 2000 liter Tassie-made copper pot still. Brookies employs 26 botanicals, 18 of which are native to Australia: Sunrise finger limes from Byron Bay, kumquat, blood lime, aniseed myrtle, cinnamon myrtle, White Aspen, riberry, the young leaves of the lilly pilly leaf, macadamia nut, native raspberries from Brook Farm, Dorrigo pepper leaf, river mint and native ginger. Traditional botanicals include juniper, coriander, cassia, angelica and orris root.

    Tasting note: Crystal clear. Pure, rounded aromas of citrus peel and lemon thyme followed by woody juniper, pepper, coriander and minty freshness. Five minutes adds hints of raspberry. Creamy textured with a concentrated yet keenly balanced profile; lively with piney juniper upfront, followed by dried herbs and pepper. Hints of macadamia late in the aftertaste? The lingering spiciness and the overall length is quite something. Nicely done. 46% Alc./Vol.

    Other reviews... An incredibly ambitious gin in its wide use of Australian botanicals -17 to be exact! While one might think such an endeavour might create a ferocious mix of flavours, all clamouring for attention, Brookie's Byron Dry is unified with an overall calm note. Botanicals are well integrated, used intentionally, and work together to create a polished product. There's a subtlety to this gin that presents a little coy and soft; in the glass, it takes a little while to express itself. Once it does, this gin presents with some beautiful ripe fruits, raspberry & riberry. The drier, woody herbaceous botanicals kick in after that, and the mix of flavours helps to create balance and structure for the Australian botanicals to shine through.     A welcome (albeit limited) addition to the Brookies range, is this "Slow" gin, in the style of English sloe. The point of difference here is that Davidson Plums are used instead of sloe berries. Considered a bush delicacy, the plum is indigenous to the Byron region and is packed with vitamins and minerals.The plums are steeped in Brookie’s Gin for several months. The maceration is diluted to 26% ABV with Mount Warning spring water.

    Tasting note: Brilliant copper. Attractive, medium dry aromas suggesting quince paste, plum jam and raisins over muted juniper and white pepper. A juicy-yet-dry, pleasantly tart, plum and red berry flavoured gin with trace pepper in the finish. Delicious Summer sipping, but would be even better at a higher ABV. Keep it simple with soda or just ice. 26% Alc./Vol.

    Other reviews... While 'slow' gin is not an official gin category, this lovely gin cordial pays homage to the much-loved 'sloe' gin style. In a nod to the style's distinctive plum flavours, Brookie's Slow utilises Davidson Plums to recreate the style. The plums themselves, native to the Byron and the surrounding area, are fruits naturally low in residual sugars, making them tarter than a typical plum. The months-long steeping process, coupled with the lower sugar content, means that while the gin develops the concentrated fruit flavour, it doesn't overwhelm the gin itself. Rhubarb and an earthy hibiscus are encapsulated in this gin.     A relative newcomer to the premium Gin scene. Bulldog is a London dry Gin produced using old-time methods where neutral grain spirit is quadruple distilled utilising copper pot stills. The raw spirit is then steeped in an array of botanicals including: dragon eye, poppy, lotus leaves, lemon, almond, cassia, lavender, orris, liquorice, juniper, angelica, and coriander.

    Tasting note: Clear. Lovely fresh citrus peel aromas combine with caraway, talc and juniper notes. The palate is quite concentrated, medium dry and gently warming with spice, citrus, caraway and pine flavours leading into a tingly, spicy back palate. Exceptionally persistent, drying aftertaste with a subtle mineral / anise fade. 40% Alc/.Vol.

    Other Reviews: The nosing passes find classic London Dry aromas of juniper with assertive, prickly spirit and citrus. The palate entry is creamy, juniper-heavy and curiously chalky; the taste profile at mid palate is herbal, piney and citrusy. I like this gin a lot but wonder: Would it be even better at 47% abv?

    Cadenhead's have been making Old Raj gin since 1972 . Its slight yellow tint is due to the addition of saffron, added post distillation. New for 2018 is this spiced version, and what a fresh, exotic gem it is! Juniper, Pink Peppercorn, Orange, Almond, Cumin, Coriander, Cubebs, Rowanberry and a dash of Smoked Paprika make for a unique gin experience.

    Tasting note: Clear. Intense juniper with warming spices...peppercorns, saffron and coriander seed to the fore with time the glass accenting paprika heat and light citrus. Feather light on entry, but builds with a dramatic burst of pepper, paprika and coriander over a piney/earthy juniper base. Very intense, with excellent length. Strikes a nice balance between heat and more traditional gin notes. 55% Alc./Vol.

    Made from five Celtic botanicals and Scottish spring water, Caorunn Gin (pronounced ‘ka-roon’) takes its name from the Rowan Berry - the botanical that forms the soul of the gin (unlike most gins which are juniper based). Other unusual botanicals include Coul Blush Apple, Heather, Bog Myrtle and Dandelion.

From the Balmenach whisky distillery in Scotland’s Speyside region comes this crisp gin, with a light juniper and citrus scent and a surprisingly warm finish with a prickle of anise and alcohol. The distiller notes list a host of intriguing-sounding botanicals, including rowan berry, heather and Coul Blush apple, which unfortunately are undetectable. However, the clean, quinine-like feel suggests this would be a fine match for G&T lovers. 41.8% Alc./Vol.

    The Cardrona Distillery is a family-owned and managed distillery nestled high in the Cardrona Valley between Wanaka and Queenstown. Their gin is produced from both copper pot and column distillation and employs local Cardrona botanicals including juniper, coriander seed, angelica root, lemon and orange zest. Seasonal rose hip, first brought to the district by the Chinese, is also used.

    Tasting note: [Batch 0002 tasted] Brilliant clarity. Penetrating aromas excite the senses with intense juniper, menthol and crushed eucalyptus leaf freshness followed by white pepper, coriander seed and lemon peel. Five minutes air contact accents celery leaf and subtle cardamom. Neutral entry builds to a concentrated, medium-dry, peppery, lemon sorbet attack. Finish is textural, zesty, drying and citrus peel-fresh; Aftertaste sees juniper and lively spices trailing off in a pure, pine-wood/juniper and mineral farewell. Structured and complex.     Cedar Fox is a new start up micro distillery located in the Northern Suburbs of Melbourne. The concept began in 2010 with Craig Westwood's transitioning from an award winning home brewer to his first professional gig at the White Rabbit Brewery. A stint with the New World Distillery fortified his passion for spirits. Gin and Oak aged Gin are currently on offer, with other products in the pipeline.

Medium fresh aromas include muted juniper, delicate white pepper and dried herbs. More lifted than the London Dry with hints of vanilla and lemon butter over juniper and white pepper.     Triple distilled from wheat, Citadelle Gin includes 19 botanicals: “coriander from Morocco; orange peel from Mexico; cardamom and nutmeg from India; liquorice from China; cubeb pepper from Java; juniper, savoury, violet and star anise from France; fennel from the Mediterranean; iris from Italy; cinnamon from Sri Lanka; almonds and lemon rind from Spain; cassia from Indochina; angelica from Germany; grains of paradise from West Africa; and cumin from Holland.” Technically, Citadelle is classified as a London Dry gin, however, the method of production is unusual with its use of the Charentais pot still, (a form of still made popular in the 16th century for the production of Cognac, which utilizes a naked flame as opposed to team for its heat source).

    Tasting note: Clear. A range of aromas form a mesh of lemon merringue, orange zest and mineral notes with some heavier scents of spicy stewed pear. The flavour wave begins with orange pith, aniseed and coriander seed with a soft, spicy, slightly oily mouthfeel unfolding with excellent length. Sweet spirit backbone. Aftertaste of coriander seed and mineral with a delicate citrus zest fade. A full bodied and invigorating Gin that retains a sense of elegance. 44% Alc./Vol.

Aromas of tree bark, floral juniper, marshmallow, nutmeg, and white pepper follow through on a round, supple entry to a dry-yet-fruity medium-full body with citrus pastry and taffy, dusty anise, and cream notes. Finishes with a tangy, melange of spices, sweet citrus, herbal juniper and talc. A fun, flavorful gin.

    Based on a 70-year-old-recipe that took Tanqueray No.7 as its inspiration, Colombo No.7 was conceived at a time when many traditional botanicals were difficult to procure due to trade blockades during World War II. Alternatives were found in locally grown cinnamon, ginger and curry leaf. On working on the recreation of the original recipe, the grandson of the founder, Amal de Silva Wijeyeratne commented: “We did try to see if we could enhance it and tried adding other botanicals and spices. We tried lemon grass, turmeric, cardamom etc., but somehow we always found that more spices didn’t necessarily make it better and seemed to take it out of balance." He adds, "My grandfather was always a perfectionist, and Colombo No.7 was already perfect. We didn’t change a thing, and in about two months the gin was ready.”
    The gin is presently distilled and bottled in England using a 100% grain spirit base.

    Tasting note: Powerful aromas of pine needle, curry leaf and citrus peel with air contact releasing more of the former. A pure, relaxed delivery with attractive tangy citrus, restrained juniper, white pepper, and a medium long dried herbal finish with trace curry leaf heat in the aftertaste.     Other reviews… Colombo No.7 has landed at a funny time in our gin drinking history; when it was first made 70 years ago it would have been unimaginably alien with its citrus absence and curry leaf presence, but tasted next to gins created in the last couple of years it almost cries of tradition. Juniper leads the way to taste, with liquorice and angelica lending an earthy, almost dusty sweetness and a soft mouth.     …Having read the list of botanicals, I was expecting something a bit weird tasting, and possibly over spiced. I am not a fan of cinnamon either. So It was a relief to discover that Colombo No. 7 is a properly balanced gin. Juniper and citrus aromas and flavours abound, followed by subtle cinnamon. The finish has great white pepper notes. In case you were wondering it doesn’t taste of curry! Pretty much a perfect G&T, crisp with juniper and citrus with the curry leaves coming through on the finish.     Darnley’s View is a creation from the Wemyss Company in Fife, otherwise known for their flavour-themed whiskies. The name celebrates the moment in 1565 when Mary Queen of Scots spied her future husband, Lord Darnley, at the family’s home, Wemyss Castle in Scotland. The company makes two gins - a London Dry and this spiced version which employs a selection of berries, seeds, peels and roots. It's more intense on the nose than its London Dry counterpart, offering up gently spiced scents of juniper, turmeric, coriander seed and muted cinnamon. Light on entry, but developing good concentration, there's a medley of spices amid the juniper and gingery warmth that carry through to the finish. Some unusual textural qualities combine here, while bottling at 42.7% is said to enhance the key botanicals.     ...The nose is intensely citrussy, perhaps the boldest and juiciest I’ve yet encountered from Drumshanbo/Gunpowder. It pours out of the glass with notes of frozen Lemonade, dried lime peel, and grapefruit soda that are equally tart and sweet. At first, the sweetness is all citrus-driven, but as it opens, jammy – almost balsamic – notes emerge, delivering fig preserves, marmalade, and grape must. Undertones of pine sap reveal a hint of the Tuscan juniper, but it struggles against such a diversity of high tone fruits. With even more time to open, notes of melon and bay leaf add a greener dimension but don’t do much to curb the sweetness. It’s a saccharine but still fascinating bouquet, complex and impressively layered. There’s not quite as much complexity, or sweetness for that matter, on the palate, which is probably for the best. But it’s just as well-built and structured with a soft, inviting texture. The front of the sip is juniper-forward with gently peppery traces of gunpowder tea, licorice, and citrus peel, the foundational gin on display. A generous dried fig sweetness is woven throughout, complimented by dustier, resinous notes of fir branches and laurel, dried herbs and caraway. The finish is clean and bright with an easy fadeout of juniper berry, candied fig, black licorice, and grapefruit peel. It’s a lot to unpack but shows well on its own or in simple cocktails.     Not only in Australia, but overseas as well, the gin market is experiencing steady growth with consumption in Europe alone forecast to increase dramatically. New players are emerging from all quarters. This novel release is made in the "Shed Distillery", Drumshanbo, Co Leitrim which is the first distillery in the West of Ireland in over 101 years. Opened in 2016 by the team of PJ Rigney and his wife Denise (inventors of Sheridan’s Irish Cream and Boru Vodka), the venture is already busy creating a range of spirits, including whiskey and gin. Rigney adds, “The international market is now looking for super-premium brands that stand apart, with unique heritage and unrivalled quality & taste. There’s huge international excitement about this new gin and we already have some pre-orders from China.”

    Handcrafted through slow distillation in a gleaming medieval copper pot still fired by steam, Rigney expands on the production process for his gin: "Various oriental fresh citrus and leaves (gunpowder tea) are added into the 3 layer infusion basket, which lies in the vapour pathway between the still and the condenser. Steam is gently applied. The vapour rises through the unique shape of the medieval head, which allows maximum copper contact, which cleans and purifies the spirit. The vapour exits the still and passes into the infusion basket, where it gently extracts the oils and aromas from the citrus and tea. Boiling in the still would extract bitter compounds from these ingredients, whereas vapour infusion only extracts the aromatic oils. The vapour passes into the condenser and is condensed down into our gin at approx. 75%. We take an early cut so as to avoid any harshness that tends to come off further into the distillation. The gin is allowed to rest for a week, which allows the oils and alcohol to infuse and for flavour to develop. It is then diluted to 43% with filtered water and gently filtered for clarity."

    The keynote here is 'Gunpowder Tea' (Camellia sinensishis) - a green tea that's been slowly dried then carefully rolled into shiny pellets. The flavour is bold and bright with a slight spicy freshness. Other botanicals include juniper, angelica, orris, caraway, coriander, meadowsweet, cardamom and star anise as well as vapour infused oriental lemon, lime and fresh grapefruit. Nosing finds intense aromas of blackpepper, lemon peel and juniper in the opening pass with later inhalations detecting hints of orris root, cinnamon and chamomile tea. The palate follows through with robust flavours of liquorice root, cardamom, background juniper and a warming, vibrant, peppery finish with late juniper and liquorice through the aftertaste.     Other reviews... Dunnet Bay Distillers’ Rock Rose Gin is the latest entry into the increasingly crowded Scottish gin market — where more than 170 different gins are currently in production. The brand dates back to 2014, the result of 55 experiments to find the right botanical blend. The final recipe is an exotic mix that includes juniper, rose root, sea buckthorn, rowan berries (aka mountain ash), blueberries, cardamon, coriander seed, and verbena. As near as I can tell, there’s no difference between this and the Original Edition, save the abv. At 57% alcohol, it’s no joke, and my complaints about the weak body are wholly inapplicable here. Rock Rose Navy Strength is sharp both on the nose and the tongue, which gives the fruitier character more room to shine. The juniper and other herbal notes are pushed more toward the back end, so while the attack lets the citrus shine, the finish of the Navy Strength feels more verdant than the Original Edition. Over time, things get quite bitter as it lingers on the back of the palate.     The juniper-infused spirit known as gin has the Netherlands as its spiritual home. Later, England went on to popularise its own 'London Dry', traditionally based on less than a handful of botanicals (juniper, cardamom and coriander). However, the influence of Sri Lanka, Malaysia and other spice islands isn't commonly found, even in contemporary styles. Enter Dutch Gin, founded in 2022 in the Melbourne suburb of Mitcham. Here, botanicals like lemongrass, makrut leaves, chilli, thai basil and ginger are broadening the scope of what gins can taste like. Proprietor, Danny Perera employs a wheat-based spirit which brings a nice smooth mouthfeel to each expression. Step one is to load the still with distillate, then add juniper and dried botanicals to the pot. Once out of the still, the spirits are rested for a couple of weeks to maximise the flavour before diluting to a lower ABV followed by bottling and labelling. Hailing from Sri Lanka, he wanted to share the influence trade routes from the Dutch East Indies and Spice Islands had on traditional European exports. This Mitcham-based distillery knows its way around a classic juniper-forward number as well as anyone. But it’s the magic that happens when they borrow flavours from South and South-East Asia that's won them a keen following; their Thai Gin, for example - a fragrant gin that is highly aromatic and alive with cardamom, coriander, lemongrass, ginger and makrut lime leaves.     Tasting note: Clear. Juniper gives way to bitter citrus peel (orange / Yuzu), angelica and hints of liquorice root.     Distilled in London at Thames Distillers, Fords Gin is a collaboration between 8th generation Master Distiller Charles Maxwell and Simon Ford of The 86 Co. A mix of nine botanicals, the gin employs English wheat spirit as a base and includes a traditional blend of juniper & coriander seed, balanced by citrus (bitter orange, lemon & grapefruit peel), florals (jasmine flower & orris) and spices (angelica & cassia). The botanicals are sourced from Joseph Flack & Son’s, who have been importing herbs and spices for medicinal and culinary use into London for over a century. Each botanical is steeped for 15 hours before distillation in 500 litre stills. The gin is then shipped in bulk to Charbay Distillery in California for cutting and bottling.

    Tasting note: Bright and clear. Fresh and pure scents offer up suggestions of citrus, coriander, juniper and black pepper, following through to the silk textured, juniper focused mid palate with attractive citrus notes refreshing the finish, fading dry, tangy and gently spicy. Hence, Four Pillars have been quietly working away to bring the botanical flavours of their most popular and iconic gins to life…but in an alcohol-free spirit. This was no simple feat. In fact, it’s probably the single biggest challenge they’ve faced since they started making gin in 2013. Because this isn’t gin. Gin has to have alcohol in it. To make Bloody Bandwagon, they actually do use Shiraz grapes. But because they haven’t been fermented there’s no alcohol. So you’re getting that same Shiraz flavour and colour without the alcohol.     Looking like small grapefruits, the Asian Yuzu fruit has been the inspiration for several Japanese gins, aiming to retain its delicious sweet, sour and bitter flavours in harmony with the freshness of juniper. This is not the first time Four Pillars have experimented with the fruit. A limited edition collaborative bottling was launched in 2017. It was followed in 2019 with the Distiller Series 'Changing Seasons Gin' made with help from Japan's Kyoto Distillery. As of 2022, Four Pillars are including 'Fresh Yuzu Gin' as a permanent addition to their core range.

    Mountain Yuzu, from the nearby Ovens Valley supply the Healesville-based distillery with fresh yuzus. Describing the flavour of the new gin, Co-founder and Distiller Cam Mackenzie comments, “Yuzu brings amazing aromatics that are a mix of lemon, mandarin, cumquat and grapefruit – all bright and fresh citrus notes – while the addition of finger lime adds some deeper citrus character. We’ve also learnt a lot (from the best) in our adventures making gin with Japanese friends, so in our take on Yuzu gin, we’ve used ginger, turmeric and sencha genmaicha, a Japanese green tea with roasted brown rice, for depth of flavour. A canvas of strong pine-needle juniper and a bit of lemon myrtle add a touch of lemon curd.”
