    Sparkling Shiraz is a unique Australian wine that’s synonymous with the Great Western region having been in production since the early 1900’s. With previous releases the base wine for this Cuvee was left on yeast lees in bottle for 12 months and disgorged in the traditional method, however, Best’s have now decided to leave it on lees for an extra two years in order to create greater complexity. The dosage liqueur contains a small quantity of very old Best’s Liqueur Muscat.

    A superb, very reasonably priced sparkling Shiraz that's arrived just in time for Christmas.

    Creamy deep purple mousse with an opaque black red core, possessing a very fine and persistent bead. Lifted ripe blackberry, dark plum and liquorice aromas are followed by some toasty vanillin oak, dark chocolate and subtle spice. Exceptionally rich and concentrated the palate exudes gloriously ripe flavours of dark plum, liquorice, blackberry and dark chocolate that engulf the palate over a back drop of toasty vanillin oak, subtle earth and spice. Creamy mouthfeel with the opulence and power of fruit counterpointed by a dry sturdy finish. Long aftertaste of ripe blackberries, liquorice, dark plum, toasty vanillin oak and spice.

    A frothy purple tinged mousse sits atop an inky black dark red coloured base that has a very fine bead running through it. Intense ripe blackberry and liquorice aromas are tempered by hints of dark chocolate and vanillin oak with earth and hints of spice also present. A rich mouthful of fluffy, concentrated dark fruits flood the creamy like textured mid palate. Ripe blackberry, liquorice and dark chocolate flavours sit over vanillin oak, earth and spice nuances. Finishes dry with a burst of blueberry freshness on the very long aftertaste that’s layered with luscious dark fruit. Limited stocks – this normally sells out prior to Christmas.

Medium to full-bodied, deep and seamless, it's vinous, almost creamy, with a layered, delicate structure that leads to a delicately citrusy, long and delicate finish.     The 2012 Brut Blancs de Blancs Louis Salmon is a large-scale, ample wine. A rich, heady Champagne, the 2012 has started to open nicely. It is far more expressive today than it was a year ago. Even so, this remains a very young Champagne, one that needs time to shed some of its considerable baby fat. Baked apple tart, dried flowers, mint and dried citrus peel are some of the many nuances that emerge over time. Tropical notes wrap around the substantial finish. Dosage is 3.9 grams per liter.     The 2012 Champagne Louis Salmon Blanc De Blancs is entirely from Côte de Blancs Grand Cru villages and saw 25% oak vinification, with most of the malo blocked to retain freshness. Initially, it opens to citrus-driven aromas of lime, but as it opens in the glass, it deepens to reveal notes of white peach, fresh bread, and a touch of toasted spice, with its portion of oak just highlighting the edges of the wine. The palate offers intensity without austerity, with a good, profound, layered feel, and it has a pillowy and elegant mousse, a coating texture of citrus oil, and a long finish. It’s already hard to resist but will improve with time. It’s a wonderful wine for Billecart-Salmon in this vintage. Bravo. Drink 2026-2046. It saw 3.9 grams per liter dosage and 4.4 grams in the final wine. Drink 2026-2046.

    In 1818 Nicolas Francois Billecart and Elisabeth Salmon were married and founded Maison Billecart-Salmon in Mareuil-sur-Ay, the family’s hometown. The pair joined forces with Louis Salmon, Elisabeth's brother, who oversaw all the commercial activity for the house. Nicolas Francois, who was passionate about oenology, dedicated himself to the creation of the wines. As a tribute to this trio, Billecart-Salmon have crafted three cuvees beginning with the Cuvee Nicolas Francois (first created in 1964), followed by the Cuvee Elisabeth Salmon Rosé and Cuvee Louis Salmon Blanc de Blancs.

    Cuvee Nicolas Francois is a blend of the best terroirs from Montagne de Reims (Pinot Noir) and Cote des Blancs vineyards (Chardonnay), with vinification partly in traditional oak casks lending generosity to this elegant and fine Champagne.

    Billecart-Salmon’s 2012 Nicolas François marks the first release since 2008 and stands as another success. The fundamentals remain unchanged: settling and fermentation at low temperatures, a small proportion vinified in oak barrels and partial malolactic fermentation (20% was blocked in 2012). This vintage was characterized by a prolonged flowering period, significant rainfall and mildew pressure, resulting in a small crop. The harvest of fruit, which contributed to this cuvée, took place between September 17 and 22. "It was crucial to select only the ripest fruit, as maturation varied significantly between plots," explains Billecart’s head winemaker, Florent Nys. But what of the wine itself? Disgorged in May 2023 with a dosage of 3.8 grams per liter, it exudes aromas of candied lemon, honeysuckle and ripe peach, mingling with nuances of beeswax and orange zest. On the palate, it is full-bodied, ample and enveloping, boasting a layered, concentrated core, a chalky structure and mouthwatering acidity, despite the warm vintage. It concludes with a persistent, saline finish, hinting at the savory complexity that has emerged with such notable bottle age. Compared to the 2008, which remains tightly coiled, the 2012 is broader-shouldered and more demonstrative. Drink 2026-2047.

    The 2012 Brut Cuvée Nicolas François Billecart shows all the natural radiance of the year. There's gorgeous resonance and texture here. Apricot, spice, tangerine oil and lightly honeyed notes infuse the palate with notable depth and persistence. This rich, expansive Champage has a ton to offer. This release was disgorged nearly two years ago, which also adds to its complexity. Dosage is 3.8 grams per liter. Disgorged: May 2023. Drink 2026-2042.

    Made from 60% Pinot Noir and the rest Chardonnay, the 2012 Champagne Nicolas François has a complex élevage and was tasted as a vin clair. Bottled at the end of June of this year (the magnum in July), it’s highly aromatic on opening at this stage, with aromas of honeydew melon, ripe peach, and fresh flowers. Medium-bodied, it is long on the palate, with a linear feel, but has a ripe, rounded exterior and a clean, chalky finish, with notes of grapefruit pith and fresh lift. At this early stage, it feels as though it may be approachable in its youth, but we‘ll have to see.

Medium to full-bodied, vinous and broad, it's dense and deep with a multidimensional core of fruit, racy acids and a textural structure, concluding with a long, delicate, mouthwatering finish.     The blend of the 2012 Champagne Elisabeth Salmon is includes 55% Chardonnay along with 10% red wine, the majority of which was raised in stainless steel, with a 3% splash raised in oak. It pours a deeper salmon orange tinge and is a more assertive wine in the glass, with notes of spice, smoky wet stones, peach, almond, and fruitcake. Medium to full-bodied and assertive, it holds its mousse together more clearly and has more transparency, with a pomegranate texture, and is long on the palate. This structured wine will benefit from another year or two in bottle before drinking over the following 15 or more years. Disgorged January 2023, 3.8 dosage; total in the final wine is 4 grams per liter. Drink 2026-2041.

    Aged on lees for 9 years this excellent vintage Champagne is comprised of 40% Pinot Noir, 33% Chardonnay and 27% Pinot Meunier grapes sourced from predominately (73%) Grand Cru and Premier Crus.
    A frothy white mousse forms over a pale straw/pale gold coloured base that’s finely threaded by a very persistent bead. Pronounced aromatics of pear and yeast lees meld into brioche, citrus, oily toast like notes, dried honey and almond. The rich, powerful palate is caressed with baked bread, pear, yeast lees and citrus flavours which have a full creamy like feel. Elements of roasted almonds, subtle oily cashew and dried honey characters chime in on the dry, crisp finish. Long, complex aftertaste.

    The 2016 vintage is aged on lees for 5 years and is comprised of 66% Pinot Noir and 34% Chardonnay sourced from 100% Grand Cru vineyards. 25% of the wine is matured in oak barrels and is bottled at 1.9g/L dosage.
    A buoyant lacy mousse is underpinned by a pale straw to straw coloured base that has gold tinged edges and has a steady stream of nimble bubbles coursing through it. Classically finessed Billecart-Salmon aromatics of yeast lees, baked bread and brioche stream out of the glass followed by hints of cashew, citrus and oily toast like notes. Refined and sculptured by invigorating acidity, the mouth watering palate features yeast lees, citrus and baked bread flavours over delicate cashew and oily toast like characters. Finishes long and dry.

    Billecart-Salmon's 2016 vintage continues the house's drive to creatively lower dosage levels, coming in with just 1.9g/L in this year of extreme weather. The 2016 will be at its best from mid-2024 but is already showing a mature clementine and juicy apricot fruitiness, warmed up with ground nuts and fragrant raspberry. Neat and slightly reticent on release, there is a subtle insistency here, and it will lengthen and unfurl with more time on cork. The most impressive of Billecart's recent vintage releases. Made with 100% grand cru fruit, 25% of which was vinified in small and large oak. Drink 2024 – 2030.

With an Extra Brut dosage of 4g/l, this is a highly expressive, confident and convincing interpretation of the vintage. Right now, it is youthfully sharp and focused with fine salinity, depth, acidity and balance, and as such is already extremely approachable. The flavour spectrum encompasses toast, oyster shell, citrus, cream and a flinty, mineral depth.     The 2008 Brut Blanc de Blancs Louis Salmon (formerly the vintage Blanc de Blancs) and named after the maison’s first cellar master, is fabulous. Rich and ample, the 2008 is beautifully resonant in the glass. It offers up an enticing mélange of lemon confit, marzipan, dried flowers and spice. It’s a terrific 2008, especially for readers looking for a relatively affordable option to some of the super high-flyers in this celebrated vintage. The blend is 40% Chouilly, 33% Cramant, 20% Mesnil and 7% Avize, done 1/3rd in oak and 2/3rds in steel. Dosage is 7 grams per liter. Disgorged: October, 2020. Drink 2024-2038.

    100% Chardonnay from the grand cru villages of the Côte des Blancs: 40% Chouilly, 33% Cramant, 20% Mesnil-sur-Oger, 7% Avize with 33% of the base wines vinified at low temperature in oak casks that are 15 years old on average. It was disgorged in May 2021 with a dosage of 7 g/l after 11 years' ageing on lees. (Information given on the back label.)
    Surprisingly meaty and broad for a Blanc de Blancs – a very serious, mature wine with real savour – a white burgundy sort of Blanc de Blancs. Tastes pretty dry – a food wine? Certainly a champagne connoisseur's wine… Really opens out on the finish.

    Disgorged in November 2020 with two grams per liter dosage, Billecart-Salmon's newly released 2006 Brut Le Clos Saint-Hilaire is showing well, unwinding in the glass with aromas of pear, mirabelle plum, dried fruits, walnuts, bee pollen and spices. Full-bodied, layered and vinous, it's a concentrated, muscular young wine, allying maturing flavors with broad structural shoulders and racy acids and concluding with a long, resonant and slightly mordant finish. From a parcel planted in 1964 and vinified entirely in oak, this is a powerful Champagne of considerable presence that needs some more time on cork to unwind and round out. Drink 2023 - 2036.

    Although it was disgorged in November 2020, Mathieu Roland Billecart has been keen to delay the release. The ageing post disgorgement is just as important as that before it and sometimes overlooked, he maintains. The wine has an attractive Welsh gold colour, a lively and persistent mousse, and seductive aromas of nectarine, greengage and Victoria plum. I even noted a hint of spearmint. The palate maintains a youthful nervosité; behind that generous fruit, including red fruit (cherry mainly), hints of brioche and hazelnut and then an authoritative finish. Great potential. Drink 2022 - 2036.

    Rich nose, yeasty and so alive. The oak shows even more as the wine opens up, giving a cedar spice. Such underlying depth and richness with such a surprising mineral and acidic backbone with a verbena note, mandarin – the most citric of the lot. There is a subtler nuttiness here that is almost creamy, like a Belgian chocolate, almost oily on the finish yet with such direction. Drink 2025 – 2045.

    An exuberant mousse holds well over a pale straw, pale gold tinged base that’s threaded by an ultra fine and very persistent bead. Heady baked bread and yeast lees aromas fill the nostrils with hints of citrus and pear fruits also present. Subtle oily toast and roasted almond like notes ensue. Racy yeasty baked bread and citrus flavours are both sculptured and tense. Oily toast like characters, chalky oyster shell and roasted almond characters fill out on the back half. Finishes very dry and crisp with a chiselled feel to the long aftertaste.

    This new wine was made to ‘capture the essence of Billecart-Salmon', according to seventh generation owner Mathieu Roland-Billecart. From 92% Pinot Noir, 4% Chardonnay and 4% Pinot Meunier, this is a blend of eight grands crus from the Côte des Blancs and Montagne de Reims, including the 1ha Pinot Noir vineyard of Le Clos St-Hilaire in Mareuil-sur-Aÿ. Exceptional reserve wines from 2000, 2003, 2008 and 2012 were vinified half in steel and half in old oak casks, with a dosage of 4.5g/l, making it an extra brut style. It has a hugely expressive nose of red apple, nougat and citrus, with the hallmark ‘old rose’ fragrance from Clos St-Hilaire. There's an elegant mousse with very fine, fast-streaming bubbles and powerful, juicy flavours of baking spices, praline, and tart apples. A smoky mineral note and bright acidity offer real refreshment through the long finish, and while drinking beautifully now, it has the structure to last and will improve with age.     Created in 1988 as a tribute to the co-founder Elisabeth Salmon, this cuvee is an elegant and refined rosé composed of 55% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne, along with 45% Chardonnay from the Côte des Blancs. Less than 10% of the Pinot Noir is vinified as a red wine, with these old vine grapes sourced from the south facing slopes of the Valofroy vineyard located in Mareuil-sur-Aÿ. This 2008 rendition shows all the traits from this magnificent year, a highly refined wine with wonderful delicacy of texture and flavour. Dosage is 7g/l.

Unwinding in the glass with aromas of peach, mandarin oil, warm bread, red berries and petals, it's full-bodied, deep and vinous, with lovely mid-palate amplitude, terrific concentration and bright girdling acids. In what is quite a tightly wound vintage and from a house whose style is rather understated, this is a dramatic, fleshy wine that concludes with a long, flavorful finish. Drink 2022 - 2048.

    The 2008 Brut Rosé Cuvée Elisabeth Salmon explodes from the glass with a mesmerizing array of aromas, flavors and textures. Blood orange, cinnamon, mint and dried flowers. The 2008 is incredibly young, but it is also incredibly tempting. Patience will be rewarded. In the meantime, readers might enjoy adding a few bottles of the stellar 2007 to their cellars, as the nervy, taut 2008 needs time. The 2008 is 55% Pinot Noir (from Aÿ, Verzy, Verzenay and Mareuil) and 45% Chardonnay (from Chouilly, Avize and Cramant), with 9% still wine from Mareuil. It is the first vintage that includes a portion of wines (17%) done in barrel and the first vintage in which the magnums were aged on the cork rather than on crown seal. Dosage is 7 grams per liter.     A frothy white mousse holds well over a salmon pink coloured base that has a very fine and persistent bead flowing through it. Streaming out of the glass are delightful aromas of peach and strawberry which are followed by hints of brioche, yeast lees and ginger. Racy pear, strawberry and yeast lees flavours meld into subtle baked bread and mineral characters. The satiny textured mid palate counterpointed by crisp nervy acidity on the finish which lends a vividly refreshing effect to the long aftertaste.

A delicate pink color is accompanied by gorgeous sweet cherry, strawberry, and mineral-like scents, assertive medium-bodied flavors, a delicate, crisp personality, and surprising depth as well as persistence.     This superb Champagne from another of our favourite houses opens with a white frothy mousse and shows excellent hold. Once dissipated, the pale gold straw coloured base wine emerges with exceptionally fine and profuse bead showing terrific persistence. The nose delivers a superb Champagne sniff with complex notes of baked bread, yeast lees, some toasty characters, a touch of citrus and some roasted almond end notes.     The family owned house of Billecart Salmon has now been in business for over 180 years, and although not particularly well known, it consistently produces some of Champagne's finest cuvees at accessible prices. Their outstanding Blanc de Blancs is a wine that is all about refined elegance.

    Tasted February 2011: Pouring with a white creamy mousse that shows good hold, it presents a very pale straw base wine with very fine and exceptionally persistent bead. The palate displays great elegance and precision along with a creamy texture delivering a sophisticated flavour profile of baked bread, yeast lees, cashew and citrus followed by some light toast characters.     This release of the NV Champagne Blanc De Blancs is with the 2018 vintage base as well as 37% reserve wine. A bright medium yellow golden hue, it opens to a lifted and dewy profile with notes of linen, pear, and a hint of tropical fruit of passionfruit and quince coming through. Floral, fresh, and medium-bodied, it floats on the palate with a weightless, airy feel and a very pretty nature throughout. It has a fine mousse and a clean, chalky textured finish that tapers away. It will be very appealing now or over the next 12-15 years. It has the addition of 3.9 grams per liter dosage and was disgorged in May 2024. Drink 2024-2040.

    A fine satiny mousse slowly recedes to reveal a straw pale gold coloured base that has a steady bead flowing through it. Nosing draws out aromas of ripe pear, baked bread, yeast lees and hints of strawberries and quince. An energetic, modernist style of Champagne, the palate has a chalk tinged mouth feel with flavours of pear, wild strawberry and quince melding into an oily baked bread, yeast lees and roasted hazelnut back drop. Finishes dry with refreshing acidity and a creamy edged, hazelnut laced aftertaste.

    The NV PN AYC 2018 is the newest edition in Bollinger’s range of single village-based Champagnes, a series of wines created by former Chef de Caves Gilles Descôtes, who passed away earlier this year. Tense and vibrant, with notable saline intensity, the AYC (based on Aÿ) sizzles with energy. Dried pear, crushed flowers, mint, sage, chalk and light pastry notes all race across the palate. This release is 53% 2018 and 47% reserve wines, a big part of which are Bollinger’s famous reserve magnums (in this case 2009 Verzenay Pinot), plus dollops of 2017 and 2016 wines. The 2018 was done in equal parts oak and tank. Dosage is 6 grams per liter, but the impression is of a slightly drier style. The combination of a very warm base vintage blended with a high proportion of reserve wines yields a Champagne of notable complexity and texture. Drink 2023-2038.

Full-bodied, with freshness throughout and a hint of warmth on its beautiful finish, this is the most successful of the wines from this line that I have tasted to date, offering fantastic length and gorgeous depth of fruit. It’s going to only improve with another few years in bottle, but it’s gorgeous now. Drink 2024-2034. Dosage 6 grams per liter.

    Bollinger’s 2007 R.D. is superb, but it is also a wine that reflects the nature of a unique and challenging growing season. In most vintages the R.D. is marked by the distinct creaminess and breadth of Aÿ Pinot Noir. Two thousand seven, though, was a difficult year marked by very dry weather, rain at the end of the growing season and an early harvest in August, something that was not as common as it has become. Selection was essential. For the 2007, the blend is composed of just 14 villages compared to the more typical 18-25. Verzenay is the main Pinot component while Cramant plays the leading role in the Chardonnays. For these reasons, the 2007 is an R.D. driven by more focus, energy and tension than readers are used to seeing. Lemon confit, dried flowers, sage, mint, crushed rocks, almond and ginger are some of the aromas and flavors that give the 2007 its complex, multi-faceted personality. Drink 2022 - 2047.

    Disgorged on July 10, 2020, with three grams per liter dosage, Bollinger's eagerly awaited 2007 Extra-Brut R. D. is beautiful, unwinding in the glass with aromas of crisp orchard fruit, citrus pith and white flowers mingled with hints of honey, orange oil, buttery pastry, English walnuts and delicately spicy bass notes. Full-bodied, vibrant and incisive, it's unusually elegant and structurally fine-boned for what is routinely one of Champagne's more muscular tête de cuvées, with a bright spine of acidity that's cloaked in vibrant, concentrated fruit, complemented by a pearly pinpoint mousse and concluding with an intensely sapid finish. Long and penetrating, this is a tightly coiled R. D. that will reward bottle age. Drink 2021 - 2037.

    PN TX17 is the latest release of the now yearly special releases from Bollinger designed to highlight specific terroir in the context of house style. While the first two releases highlighted the village of Verzenay, ths year the shift is to Tauxières with 51% sourced from this premier cru village. Tauxières is not often spoken about, yet as a village that is late to ripen it will become more important in the years ahead, and one of the key reasons Bollinger has chose it this year. Completing the blend is additional Pinot Noir sourced from Aÿ, Verzenay and Avenay, along with reserve wines from 2016, 2009 and 2006. Dosage is a low 4g/L.

    From the commune of Tauxières and the 2017 vintage, Bollinger's new NV Brut Blanc de Noirs PN TX17 exhibits aromas of crisp pear, orange zest and wet stones mingled with subtle hints of warm bread and dried fruits. Medium to full-bodied, pillowy and fleshy, with tangy acids and impressive ripeness for the vintage, it concludes with an elegantly mordant finish.     The NV PN TX 17, 100% Pinot Noir from Tauxières, is the next wine in Bollinger’s new series of single-village Champagnes. Bright and punchy, the 2017 is redolent of pear, dried flowers, mint, chalk and sage. Aromatically, the 2017 could easily be mistaken for a Blanc de Blancs such is its purity, but the richness and resonance of Pinot are unmistakable on the palate. This is an especially, vinous, layered Champagne that offers striking interplay between its intense fruit and the mineral, saline and savory-laced frame that holds it all together. On the palate, the immediate impression is of a certain unctuosity providing great charm, and even the structure has round contours, but it seems to tighten on the chalky, airborne finish. The salinity that marked the previous two iterations of this PN series seems less present, with this one having more notes of pastry and hazelnuts as well as some zesty citrus, but airing adds an iodine-like tang.     Powerful and complex this is a stunning rendition of Bollinger’s La Grande Annee

    A blend of 61% Pinot Noir and 39% Chardonnay sourced from 19 different crus, mainly Ay and Verzenay for the Pinot Noir whilst for the Chardonnay Chouilly and Oiry. Fermented entirely in aged oak barrels.
    A fine, satiny mousse slowly recedes to reveal a pale straw gold tinged coloured base that has a nibble stream of delicate bubbles flowing through it. The nose is magnificent, complex aromatics of baked bread, yeast lees and brioche soar from the glass with cashew, subtle citrus, hazelnut and ginger ensuing. On the palate Bollinger’s hallmark richness and power are shaped by vivid acidity with mouth filling flavours of baked bread, citrus, yeast lees and cashew trailed by some brioche and almond like characters. Dry chalk tinged finish with a long airy yet sculptured aftertaste.

    The 2014 La Grande Année is stunning. In fact, it is one of the best recent editions I can remember tasting. What comes through most is the wine’s sizzling energy and tension, qualities that aren’t often associated with Bollinger, where the Champagnes tend to show more breadth and volume. In 2014, readers will find a Grande Année built on linear intensity and drive.
    The 2014 is a blend taken from 19 villages, 61% Pinot Noir and 39% Chardonnay instead of the more typical 70/30 mix. For the second time in two decades (the first was 2007), Verzenay takes the lead in the Pinots over Aÿ, more or less an inverse from the norm. Verzenay, a north-facing village in the Montagne de Reims that saw less rain than Aÿ and most of the Vallée de la Marne, yields Pinots of energy more than volume. That, married with Chardonnays mostly from the Côtes des Blancs (predominantly Chouilly, Vertus, Oiry and Cramant), results in a truly magical Grande Année that will delight Champagne fans for several decades.     The 2014 Champagne La Grande Annee Brut is 61% Pinot Noir and the rest Chardonnay, with 7 grams per liter dosage, and sees more fruit coming from Verzenay. I loved this wine last year, and it did not disappoint at this tasting either. Perfumed and mineral-tinged notes of saline and lemon custard lift from the glass, and it’s medium to full bodied on the palate, taking on a more focused and linear feel while remaining quite powerful, with salty minerality. I love the tension this brings, with a long, persistent spine of acidity, and it’s aging at a very slow rate. Drink 2024-2044. Disgorged in February 2023.

Today, the 2012 is naturally quite young and still shows the tension of a Champagne that was disgorged just a few months ago. Readers who prefer Champagnes with softer edges and a bit more flavor complexity will want to cellar the 2012. I have to admit, I very much like the wine today, in its youthful state, where its energy and focus are front and center. The 2012 is a blend of 67% Pinot Noir and 33% Chardonnay taken from 21 villages built around a core of Aÿ and Verzenay Pinot Noir and Le Mesnil-sur-Oger and Oiry Chardonnay, crus that are quite complementary. Clean, crisp, and chiseled on the palate, it’s much more firm and tight than the Special Cuvée, yet has a great finish, impeccable balance, and bright acidity. A blend of 62% Pinot Noir, 24% Chardonnay and the rest Pinot Meunier, with 30% vinified in barrel, it spent 30 to 36 months on lees. Give it a year or so.

    This is the second of the now yearly special releases from Bollinger designed to highlight specific terroir in the context of house style. While this release follows a similar formula to the inaugural release, with the village of Verzenay the focus, each year the team will determine which of their sources performed best and deserve to be singled out. Verzenay grapes constituted 47% of the final blend this time round, compared to 48% last year. The cuvée is made from three different years, with 2016 as the base wine supplemented by wine from 2015 and from reserve magnums of 2006, also from Verzenay.

    Soft, open-knit and wonderfully inviting PN VZ 16 is a worthy follow up to the sublime 2015 that launched this new Blanc de Noirs in the Bollinger range last year. Sweet red cherry, Mirabelle, spice, mint and dried flowers all grace this wonderfully translucent, expressive Blanc de Noirs. North-facing sites in Verzenay that confer tension and energy make up about half the blend, with wines from Aÿ, Bouzy and Louvois playing supporting roles. Vinification is done in equal parts steel and oak. This release is based on 2016 (50% of the blend), with reserve wines that go back to 2006, including 23% from reserve magnums. Readers who enjoy Blanc de Noirs will adore the PN VZ 16. I find the interplay of vibrancy and the creamier notes that are so typical of the house style to be incredibly appealing. Dosage is 6 grams per liter. Drink 2021 - 2033.

    The 2012 Bollinger Grande Annee sits well in the glass with a foamy white mousse showing excellent hold over a straw to pale gold coloured base that has a steady stream of tiny bubbles flowing through it with great persistence. The refined nose has an understated intensity to it with scents of brioche, yeast lees, citrus and baked bread escaping from the glass. Light toast, cashew and honeyed characters are also present. The beautifully detailed palate shows an air of refinement, eloquently combing richness with freshness and a light satiny feel. Rich baked bread and yeast lees flavours are the drivers with citrus and pear fruits in the background along with cashew, light dried honey and faint toast. Dry chalk tinged finish with crisp mouth watering  acidity leading into a very long, finely textured aftertaste that possesses great poise and balance. A superb Grande Annee that showcases the finesse of the vintage.

Full-bodied, deep and muscular, the 2012 is blockier and broader-shouldered than its 2008 predecessor, with a weightier and even more concentrated palate built around a bright spine of acidity, concluding with a chalky finish that carries appreciably dry extract. This isn't quite as elegant as the exquisite 2008, but it is a superb effort and obviously built to age. Drink 2024-2050.

Citrus peel, orchard fruit, brioche, dried flowers and chamomile are all finely knit in a Grand Année built on energy and persistence more than size. Readers will find a restrained Grand Année in 2012. There is plenty of the textural richness that is such a signature of the house style, but I am also struck by the wine's freshness. Best of all, the 2012 will drink well right out of the gate. It is quite expressive today, even in the early going. Drink 2020-2030.

    An exceptional Bollinger La Grande Annee that manages a fine balance between richness, power and freshness.

    Sourced solely from Grand Cru (91%) and Premier Cru (9%) vineyards the wine was entirely fermented in small oak barrels in which oxidation can be carefully controlled. The final blend comprised of 70% Pinot Noir and 30% Chardonnay. Pours well with a frothy white mousse sitting over a straw pale coloured base. Exceptionally fine and very profuse bead. Heady aromas of yeast lees, toast, honeyed characters and roasted nuts waft out of the glass with pear and citrus notes also evident. A rich, textured core is detailed with complex flavours of yeast lees, baked bread, oily toast and dried honey flavours set over a back drop of cashews and roasted almonds. Finishes dry with some refreshing crisp, citrus infused acidity. Long creamy aftertaste of baked bread, yeast lees, toast, citrus and honey coated roasted nuts. Rich, toasty and creamy but fresh.

Extra Brut blends 66% Pinot Noir with 34% Chardonnay from 16 crus, 88% of which are classified as Grand Cru. The wine opens with a very clear, deep, rich and aromatic but also pure and mineral-fresh nose of crushed rocks, cherries, brioche, pain aux raisin, white nougat, chalk and ripe, yellow-fleshed fruits. Highly elegant and complex on the weightless yet persistent and salty palate, this is an intense, densely woven, firmly structured yet elegant, beautifully refined and refreshing "recent disgorgement" (February 2018) that reveals just a kiss of oxidative flavors that adds even more complexity. French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.

The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
