Based in the village of Ecueil where most of his holdings are located, Fred also farms a handful of vines across into Villiers-aux-Noeuds, along with most recently accessing plots in Le Mesnil and Oger. His wines are largely based on Pinot Noir, with a smaller amount of Chardonnay, and while initially there was a focus on fermentation in stainless steel, more increasingly his wines are raised in barriques and demi-muids. Each of his wines are born out of inspiration and intuition rather than any sort of set formula, and are routinely some of the best expressions of terroir viewed through the vagaries of vintage.

    Le Noues is a new line composed of 100% Pinot Noir from some of the best plots that previously would make it into his L'Ouverture bottling. Fermentation occurs in demi-muid before ageing on less for three years.

    Rich, full and generous in the mouth with a long fluffy textured finish.

    Seppelt has a rich history dating back to the 1890’s, being a global pioneer of the uniquely Australian wine style, Sparkling Shiraz. Although precise records are scarce, it is believed that Charles Pierlot, working at Hans Irvine’s Cellars (which became Seppelt in 1918), experimented with producing some of Australia’s earliest ‘Sparkling Burgundy’ wines in 1892. 
    An amply endowed dark red tinged mousse sits atop a midnight black dark red tinged core that has a very fine and nimble stream of bubbles flowing through it. Pronounced aromas of dark plum, liquorice and dark chocolate flood the olfactory senses followed by some vanillin oak and earthy mocha notes. Mouth filling ripe blackberry, liquorice and dark plum fruits engulf the palate with notions of dark chocolate, vanillin oak and subtle earth extending across the back half. Concentrated and voluminous it has a long fluffy textured finish.

    A buoyant lacy white mousse shows good hold over a very pale straw coloured base that has a fine bead coursing through it. Elevated pear and Jonathan apple aromas flow out of the glass trailed by some peach and subtle lees notes. Light and vivid the palate features pear, citrus and red apple fruits which are framed by crisp acidity which lends a sculptured feel. Some delicate chalky lees characters are also apparent. Finishes very dry and refreshingly lean.

    Occupying a stylistic middle ground between the incisiveness of the 2013 and the fleshier textures of the 2012, Taittinger’s 2014 Blanc de Blancs Comtes de Champagne—disgorged in July 2024 with a dosage of nine grams per liter—has turned out beautifully. It offers aromas of orange peel, peach, pear and brioche mingled with hazelnut and burnt buttered toast. On the palate, it is full-bodied, ample and textural, with a layered yet crisp core of fruit, considerable tension and a long, chalky finish. Harmonious and racy-fresh though it is, this is a marginally richer rendition than the 2013 tasted alongside it, yet both promise excellent longevity and will make for fascinating comparative tastings in the years to come. Drink 2026-2054.

    The 2014 Comtes de Champagne is pristine. In this tasting, it comes across as a mini-2008, similar in its linear personality, with just a touch more mid-palate creaminess. Readers will find a Comtes that plays in the realm of tension and energy. Citrus confit, white flowers, chalk, mint and chamomile are all finely sketched. Light tropical overtones grace the finish.     Taittinger's Comtes de Champagne shines in 2014. It's a vintage that offered crisp yet open and beautifully defined wines from the grand cru Chardonnays of the Côte des Blancs. This is still primary and youthful, its zesty roasted grapefruit, sweet clementine and pineapple flavours meet juicy white peach and gentle ageing flavours of demerara sugar and toasted brioche. It's a little less intense and dynamic than 2013 but equally fine in its restrained, racy energy. With even a short time on cork the classic toasty Comtes richness will start to emerge. Drink 2026-2040.

Full-bodied and juicy all the way through, it is ripe with loads of wild berry fruit and has a long and slightly warming finish.     The Taittinger Vintage Brut is produced exclusively from first press wines, blended from 50% Chardonnay and 50% Pinot Noir.     Holding well over a pale straw gold tinged base is a gorgeous, plentiful mousse with a very persistent and nibble bead flowing through its core. Classic Champagne aromatics of baked bread, yeast lees and citrus engulf the nostrils followed by some oily toast like notes and faint honeyed cashew scents. Rich, full and creamy textured in the mouth, the palate features concentrated flavours of baked bread, yeast lees, cashew and citrus over a delicate dried honey, oily toast and brioche back drop. Refined airy feel with mouth watering acidity. Finishes long, enveloping and expansive.

Full-bodied, vinous and fleshy, with an enveloping core of fruit, racy acids and a pillowy pinpoint mousse, it's a gourmand, concentrated wine with the substance to evolve with grace in the cellar.     Pear and apple fruits lead the way in this stimulating Champagne that has a dry, chalk tinged finish.

    A blend of 40% Chardonnay, 35% Pinot Noir and 25% Pinot Meunier. A fine plentiful mousse gradually subsides to reveal a pale straw coloured base that has pale gold tinged edges and a nibble bead flowing through it. Nosing offers up pear and ripe apple scents which are complimented by brioche, dried honey and yeast lees notes. Pear, apple and yeast lees flavours stimulate the palate with some baked bread, citrus and subtle roasted almond characters lying underneath. Crisp acidity with a dry, chalk tinged finish that lingers gracefully.

    In 1818, Madame Clicquot made the first-ever "rosé d'assemblage" champagne by mixing some of her red Bouzy wines with white ones. La Grande Dame Rosé honors her idea by using 90% Pinot Noir from the historical Grands Crus of Aÿ, Verzenay, Verzy, Ambonnay, and Bouzy, enriched by 10% Chardonnay from Avize and Le Mesnil-sur-Oger. This base is then blended with 13% Pinot Noir red wine exclusively from the 'Clos Colin' parcel, situated in Bouzy. Aged on lees for 10 years in bottle before being disgorged and topped with a dosage of 8g/L.

Offering up aromas of red berries, bee pollen, orange zest and freshly baked bread, it's medium to full-bodied, pillowy and precise, with a deep core of fruit and a vibrant, tightly coiled profile, concluding with a penetrating, sapid finish. There's an intriguing smoky/reductive streak at present too, setting off the fruit-forwardness and creamy undercurrent with a touch of drama and energy.     The Veuve Fourny Champagnes offer great value. The Fourny family have been growing vines in the Premier Cru of Vertus since 1856 with the fifth generation currently at the helm. The Blancs de Blancs is 100% Chardonnay sourced from vines over 40 years old and is aged for a minimum of 2.5 years on lees with 20% reserve wines included in the blend. Pours with a frothy white mousse that holds well over a pale straw coloured base with pale gold tinged edges. A nibble stream of tiny bubbles flowing through it. Pronounced aromatics of baked bread, pear and yeast lees aromas fills the nostrils with oily toast like notes and honeyed almond scents ensuing. Rich and full in the mouth expressive baked bread, yeast lees and oily toast flavours have a creamy textural feel with some pear and citrus characters also in the mix. Dry crisp finish with a long richly flavoured aftertaste.

Slopes face South and South-East giving optimal maturing conditions. Average age of the vines is 40 years and the wine spends 2.5 years on lees.
    A buoyant mousse sits atop a pale gold coloured base wine which is threaded by a very fine and profuse bead. Showing ample intensity out of the glass is a mixture of baked bread, pear and yeast lees aromatics which are trailed by citrus, brioche and hints of honeyed cashew. Rich and full on the palate but with a surprisingly brisker feel than the Blanc de Blancs, vibrant yet mouthfilling flavours of yeast lees and oily baked bread are intermeshed with citrus, toast and almonds.     Textures is one of Gautherot’s newest cuvée; a rare, 100% Pinot Blanc Champagne crafted from vines in the Fonnet vineyard (planted between 1995 and 2000). Gautherot describes it as his “easiest” wine, i.e. the one that is the easiest to drink young. There is certainly more pulpy texture (hence the name), more fruit, and easier-going refreshment than in his Blanc d’Argile. There is also ample intensity and a great deal of poise and interest on offer, and a complexity that comes from the aging. This is a unique, one-of-a-kind expression of the Côte des Bar. You can expect candied citrus, floral and ripe lemon aromas and flavours, a generous, not-quite-creamy palate and a twist of gentle, refreshing bitterness on the close.

His winemaking abhors any kind of manipulation in the cellar. Gautherot uses the traditional Coquard press and the juice is transferred into oak or amphorae via gravity rather than being pumped. Primary fermentations are always carried out with natural yeasts and riddling and disgorgement are all done entirely by hand. The wines are bottled without fining or filtration and without dosage. The results are some of Champagne’s most original and delicious wines: wines of distinctive personality, energy and sense of place.

    Textures is one of Gautherot’s newest cuvée; a rare, 100% Pinot Blanc Champagne crafted from vines in the Fonnet vineyard (planted between 1995 and 2000). Gautherot describes it as his “easiest” wine, i.e. the one that is the easiest to drink young. There is certainly more pulpy texture (hence the name), more fruit, and easier-going refreshment than in his Blanc d’Argile. There is also ample intensity and a great deal of poise and interest on offer, and a complexity that comes from the aging. This is a unique, one-of-a-kind expression of the Côte des Bar. You can expect candied citrus, floral and ripe lemon aromas and flavours, a generous, not-quite-creamy palate and a twist of gentle, refreshing bitterness on the close.

    Le Terroir is a blend of 50% Chardonnay and Pinot Noir from his village in Verzy, and the soil here is chalk with clay topsoil. Starting with a base vintage, this is supplemented with 20% reserve from the previous year. The wine is fermented in neutral oak with native yeasts, undergoes full malolactic, before spending around 11 months in barrel and 24 months on lees in bottle. Dosage is very low, under 2g/L.

    Disgorged in April 2021 with 1.6 grams per liter dosage, Renoir's NV Extra-Brut Grand Cru Le Terroir (2018 base) is showing very well, unfurling in the glass with aromas of nashi pear, crisp yellow orchard fruit, clear honey and freshly baked bread. Medium to full-bodied, deep and concentrated, with a layered but tightly wound core of fruit that's girdled by bright acids and animated by a pinpoint mousse, it will reward at least a year or two on cork with greater range and plenitude, and it will live for a lot longer. Drink 2021 - 2038.

    Composed of equal parts Pinot Noir and Chardonnay, with the base wine from 2020, the NV Champagne Assemblage Terroir Extra Brut pours a copper straw hue and comes entirely from the village of Verzy. Lush with ripe fruit, the NV Champagne Assemblage Terroir Extra Brut is all about its pure and rich liqueur, which is hard to resist, offering aromas of Bing cherry, fresh peach, and dewy fresh flowers. Inviting on the palate, it is clean and lifted, with nothing heavy or imposing about it, and is balanced with a pillowy mousse. Drink 2024-2034.

The old selection massale vineyard was planted in 1961. The wine spends 36 months on lees before disgorgement at very low Extra Brut levels around 1g/L.

Inviting and rounded on the palate, it takes on more focus and crystalline energy than the nose would suggest, with a pillowy mouse, an elegant mouthfeel, a silky texture, and a ripe feel through the finish. This very distinctive and powerful wine from Adrien Renoir is drinking well now and will continue to drink well over the next 10-15 years.

    Les Vignes Goisses is a very special bottling of 100% Pinot Meunier from a vineyard planted selection massale in 1962. This parcel is defined by its sandy soils over a clay-limestone base. After 36 months on lees this is disgorged with zero dosage.

    The 2014 Extra Brut Blanc de Blancs Grand Cru Minéral is a powerful, intense Champagne that captures all of the natural power of these old vines in Avize and Cramant. Aptly named, the Minéral is infused with tremendous mineral and soil inflections that give a real feeling of gravitas. Crushed rocks, slate, chalk and citrus accents are some of the many nuances that emerge with a bit of time in the glass. This release is fabulous. It is also a reticent wine, though, so at least a year or two in bottle will help soften. Dosage is 3 grams per liter. Disgorged: April, 2020.

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.

The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
