    While the Laval family has been growing vines for four generations, it was not until 1971 that Georges Laval began producing estate-bottled Champagne. Now under the direction of George's son Vincent, this is one of the great under the radar properties in the region. Laval’s vineyard holdings comprise just 2.5 hectares, most in the premier cru village of Cumières. Across the seven parcels the average vine age is over 30 years, with the oldest vines of the estate over 70 years of age. Organic viticulture has been practiced since 1971, and despite the challenges of this approach in Champagne, they are now certified by Ecocert. Laval’s wines are harvested ripe and almost never chaptalized, and fermentation takes place in barrel, with indigenous yeasts. The wines are bottled late, usually about ten months after the harvest, and they are neither fined, filtered nor cold-stabilized.

    Cumieres Brut Nature is a blend of 57% Chardonnay, 33% Pinot Noir, and 10% Pinot Meunier, and is fermented in oak before three years in bottle prior to disgorging with no dosage.

    The NV Brut Nature Cumières (2017) makes me feel like I am in the cellar, tasting with Vincent Laval. A Champagne of tremendous purity and nuance, the NV captures all of the flavor intensity, drive and nuance that make the wines of Cumières so alluring. This release, based on 2017, sizzles with nervy energy. Time in the glass brings out layers of perfume and a whole range of red-toned fruits. In a word: terrific. Disgorged: February 21, 2020.     The NV Extra-Brut Garennes is rich, ample and inviting, with all of the textural intensity that is the signature of Vincent Laval’s wines. Readers should expect a rich, boisterous Champagne laced with generous Meunier intensity. Dried pear, hazelnut and crushed flowers are some of the many notes that develop with a bit of air. The Garennes bottling continues to gain in complexity. This is the best edition yet. This release is based on 2016, with 40% reserve wines from 2015, 2014 and 2013. The blend is 90% Meunier with 5% each Pinot Noir and Chardonnay. Drink 2020-2028.

    As the name suggests, Les Quatre Terroirs hails from four terroirs spread across the Grand Cru villages of Ambonnay, Bouzy, and Louvois, along with the Premier Cru village Tauxieres. The assemblage is 77% Pinot Noir, and 23% Chardonnay drawn from 94% 2019 vintage and 6% 2018.

    Les Muits is made from a single parcel of 100% Chardonnay from the Premier Cru village of Tauxieres. While it's rare to find Chardonnay planted here, these specific vines are from a portion of the parcel which sits at the top of the hill planted over a bedrock of pure chalk. Vines here face south-east, and the parcel is made up of two massale selection plantings from 1971 and 1973. Production is a tiny 700 bottles.

Clean acid finish. Creamy strawberry aftertaste. A very good Commercial style.

    A newly re packaged Methode Champenoise and at its price point, very impressive. Bright pale straw colour followed by very fine and very persistent bead. Excellent nose with distinct yeast autolysis and a hint of grapefruit and citrus. Full bodied creamy palate, excellent finesse followed by persistent biscuit, yeast flavours and crisp acid finish. Great everyday drinking.

    A fluffy white mousse holds well eventually subsiding into a pale straw coloured base that has a very fine and steady bead flowing through it. Expressive pear and ripe apple scents are trailed by hints of lemon sherbet and quince like notes. Airy and satiny in its feel the palate has a delicious flavour profile of pears and apples which are complimented by traces of quince and sherbet. Finishes dry with nimble acidity and a long crisp aftertaste.

    Champagne Guiborat is based in the grand cru village of Cramant, right in the heart of the Cote de Blancs. Much of their vineyards are planted in the deep chalk soils of Cramant and Chouilly grand crus, along with a parcel in the Marne near Epernay where they have some Pinot Meunier. While they own 8 hectares of vineyards, three quarters of their production is sold off to Laurent-Perrier, keeping only the best parcels for their own label.

    Prisme is a 100% Chardonnay cuvee exclusively from old vine parcels owned by the family, namely Les Bergeries (Cramant, planted in 1984), Le Mont Aigu (Chouilly, planted in 1970 and 1979), and Les Caurés (Chouilly, planted in 1946 and 1988). The emphasis with Prisme is to display the transparent nature that the chalk soils of Cramant and Chouilly lend to these wines. Vinification occurs in 96% stainless steel, with the balance in neutral oak barrels. Following 7 months on lees the wine is assembled and sees a further 44 months on lees in bottle, and 12 months resting in the cellar before release. Dosage is a very low 1.5g/L.

    The NV Extra-Brut Prisme . 17 is a taut, chiseled wine, based on the 2017 vintage with 13% reserve wines. Offering up notes of citrus zest, verbena, warm bread and fresh herbs, it's medium to full-bodied, elegantly textural and incisive, with racy acids underpinning an attractive core of ripe fruit.     In certain years Richard Fouquet will release a wine solely from the Mont-Aigu parcel (planted 1970), however in the warmer years he chooses to combine fruit from this warm site with the cooler exposure of the Caures vineyard (planted 1946). This 100% Chardonnay cuvee is vinified in stainless steel and rests on lees for 6 months, before a further 68 months on lees in bottle prior to being disgorged with 1.5g/L dosage.

    Incorporating some 16% of lieu-dit Caurés to temper the richness of Montaigu in sunny vintages, Guiborat's 2015 Extra-Brut De Caurés à Montaigu offers up aromas of crisp green apple, white flowers, citrus oil, freshly baked bread and wet stones. Medium to full-bodied, fleshy and seamless, it's racy and charming, with a pure core of fruit, a pillowy mousse and a chalky finish. Drink 2023 - 2038.

    The Weber family of Hofgut Falkenstein have been making ultra-traditional Rieslings in the Saar district of the Mosel region since the mid-eighties; there they farm about 9 hectares in and around the villages of Niedermennig and Krettnach. Erich, the family winzer (winegrower in german) works alongside his middle son Johannes, who has joined him full-time in the vineyards and cellar in recent years. Ever since there has been more of a focus on Rieslings with residual sugar. The emphasis on their work is in the vineyard, where no pesticides, herbicides or fertilizers are employed and cover crops are grown to encourage biodiversity and, when necessary, competition with the vines for water. With their straightforward approach to winemaking the Webers craft light, distinctive and racy Rieslings displaying well-integrated acidity from their low yielding old vines, and are bottled traditionally by the cask.

    The Non-Vintage Pet Nat with Los Nr. 26-23 comes from Weissburgunder harvested in 2022 in the Niedermenniger Herrenberg and was fermented in cask before completing its fermentation in bottle and being released without disgorgement. It offers a superb nose of almond cream, bakery elements, vineyard peach, greengage, mint leaf, yellow peach, and conference pear. The mousse proves very refined and the palate delivers intense and refreshing notes of spices and herbs. The after-taste has some tartness in need of integration. This is a superb Pet Nat. Drink 2025-2032.

    Champagne Hugues Godmé are based in the Grand Cru village of Verzenay in the northern Montagne de Reims, where they farm a total of 7.6 hectares of vines spread across four villages. Their Pinot Noir is sourced from the Grand Cru village pair of Verzenay and Verzy, while much of their Chardonnay is in Villers Marmery, and the Pinot Meunier a touch west in Ville-Dommange. Hugues has long been concerned with the health of his vineyards (along with himself), and made the transition to organic farming in 2006 with certification coming in 2013, followed a year later with biodynamic certification in 2014. Each parcel is vinified separately and dependant on the terroir will have fermentation occur in neutral oak or enamel lined cement tanks, all using native yeasts. Across the range dosage is kept very low, with many wines now bottled as brut nature (zero dosage). As to be expected with wines from Verzenay and Verzy, these Champagnes are sleek and structured, tightly coiled in their youth but with fantastic concentration of fruit.
    The Reserve is a blend of 34% Pinot Noir, 33% Chardonnay and 33% Pinot Meunier that has spent 2 years on lees. A mousse overflowing with exuberance subsides to reveal a pale straw coloured base that has pale gold tinged edges. An exceptionally fine bead shows great persistence. Delightful pear and strawberry aromas are complimented by yeast lees, baked bread, faint honeysuckle and delicate oily cashew like notes. The refined palate makes a satin like entry with mouth watering flavours of pear, yeast lees, citrus and baked bread melding into more subtle nuances of strawberry and roasted cashew on the back half. Airy cream tinged mouth feel finishing dry with vividly sculptured acidity and a long complex aftertaste.

Rich and full with a creamy like texture, the mouth is filled with baked bread, oily toast like characters, citrus and yeast lees with an assortment of dried nuts on the long dry finish. Excellent fresh acidity with a lengthy aftertaste of baked bread, oily toast like characters, yeast lees, citrus and dried nuts. A fuller style with outstanding richness and complexity.

    Emmanuel Lassaigne is one of Champagne's most thoughtful and exciting grower producers, working with the chalky south and southeast-facing sloped vineyards of Montgueux in the Aube department. Lassaigne's extraordinary Champagnes are pushing the qualitative boundaries not just of the Aube but of the entire region. Farming in his vineyards is organic with cultivated soils and harvesting at full maturity. In the cellar, the wines ferment in wood and stainless steel, and they're disgorged by hand without dosage. The style is powerful and vinous but also racy and electric.

    Based on the excellent 2019 vintage, and derived from the lower part of the parcel in front of Lassaigne's winery, planted between 1964 and 1968, the newly released NV Extra Brut Blanc de Blancs Le Cotet wafts from the glass with aromas of toasted nuts, crisp stone fruit, citrus oil and youthful reduction. Medium to full-bodied, fleshy and textural, with tangy acids and a long, saline finish, its reductive profile means that it really rewards some time in the glass. Drink 2023 - 2038.

    This magnum of Le Cotet is starting to open now, with notes of smoke, truffle and brioche over ripe green apple fruit. The bright acidity carries the wine on the palate but doesn't overwhelm at all – the sensation is subtle elegance and finesse, with nothing shrill or harsh. The base is the 2011 vintage (aged more than a year in used barrels on the lees) with about 10% reserve wines; the blend was disgorged (with no dosage) in July 2015. This wine has dynamic freshness and impressive length and should continue to age in a proper cellar for years to come. Drink 2022 - 2040.

    Disgorged in April 2018 with 2.5 grams per liter dosage, Jacquesson's 2008 Extra Brut Grand Cru Avize - Champ Caïn is showing brilliantly, soaring from the glass with a lively bouquet of waxy lemon rind, green apple, walnuts, marzipan and subtle hints of drawn butter and honey. On the palate, it's full-bodied, layered and multidimensional, with terrific concentration, mid-palate volume and structural tension, with a deeper, broader profile than the 2008 Core Bautray tasted alongside. The finish is long, saline and chalky. While Hervé Chiquet observes that Jacquesson has made considerable progress—especially in the vineyards—in the last decade that the 2008 necessarily doesn't reflect, this is nonetheless a brilliant Champagne.     The 2008 Extra-Brut Avize Champ Gain is rich, ample and creamy. Graphite, dried herbs, hazelnut and tropical notes fill out the wine’s ample frame effortlessly. Textural richness and vibrancy melded together make the Champ Gain absolutely compelling. Tropical overtones add shades of nuance to a Champagne that shows all of the resonance and breadth that are such Avize signatures. Dosage is 2.5 grams per liter. Disgorged: April, 2018.     A well frothed mousse subsides to reveal a pale salmon pink coloured base that’s delicately threaded by a fine, persistent bead. Attractive strawberry and raspberry scents emanate from the glass with some musk, subtle yeast lees and chalk notes also evident. Savoury raspberry, strawberry and yeast lees flavours flow across the palate with some peach, light toast and chalky mineral elements lying underneath.     The tightness and tension of this is impressive considering the youngest wine from this is 2015 (hot and dry year), with some wines going back to 2000. Ginger and orange zest. Some creme brulee. It's medium-bodied with apple, pie crust and floral character. It's salty and zesty yet, at the same time, complex and gorgeous. Chamomile and other floral teas highlight everything. Turns rich and flavorful at the finish. Terrific release. Really takes off at the end. Drink or hold.

The result today is a bouquet of incredible complexity, a veritable spice box full of seductive scents including sandalwood, mocha, and leather as well as a waxy note. The palate is perfectly balanced with both ample flesh and breathtaking freshness, and a wide-ranging flavour and textural profile having elements of quince, candied fruit, and spices. A floral freshness takes the upper hand on the long finish of this supremely subtle and light-footed Champagne. Such a beguiling mix of youthful energy with eminent ageworthiness. Readers who can find the 1988 should not hesitate, as it is stellar.

    Krug's just-released 1990 Collection is magnificent. Remarkably fresh for a 26 year-old wine, the 1990 Collection captures the Krug house style at its very best. Floral notes meld into hints of apricot, chamomile, orchard fruit, vanillin and sweet spices. On the palate, the 1990 is creamy, vivid and super-expressive, but what is most intriguing is how fresh the Collection is relative to Vintage Champagne, which has always been a heavier, more oxidative wine. Readers who can find the 1990 should not hesitate, as it is stellar. Drink 2016-2031.

    Aurélien Laherte has been experimenting with a sans soufre (zero-sulphur) cuvée for several vintages, achieving success in 2018 with Nature de Craie. This cuvée is derived from two Premier Cru terroirs in Vertus and Voipreux, featuring vines planted in 1960, 1965, and 1987. The term "craie" refers to the chalky soils which lie on the lower slopes, which provide good exposure and and in turn providing fruit ripeness and no need for additional dosage. The hand-harvested fruit undergoes traditional pressing and maturation in neutral oak barrels, followed by aging under cork for 12 months. Laherte realised the secret to creating a cuvée with zero additions was to let the wine undergo full malolactic conversion, followed by bottling with zero dosage.

    Aurélien Laherte’s Ultradition showcases vineyards from 8 villages of the Côteaux Sud d'Épernay & Vallée De La Marne. 60% Pinot Meunier, 30% Chardonnay and 10% Pinot Noir grown ecologically on limestone soils. The base wine is vinified in a combination of large format foudres, tanks and oak barrels, where it partially goes through malolactic fermentation. The assemblage contains 40% of reserve wines that have been aged in barrel. Finally, the wine spends 6 months maturing on fine lees in bottle before disgorgement for release. 
    Showing ample buoyancy over a pale straw coloured base is a lacy white mousse. A delicate yet very persistent bead finely threading its way through the wines core. Captivating aromatics of yeast lees and baked bread are followed by some citrus, oily toast like notes and hints of almond. Vividly sculptured the palate combines tension with intensity and richness delivering citrusy yeast lees and toasty baked bread flavours over a stimulating finish of subtle cashew and a chalky minerality. Concludes long and refined with a chiselled feel.

    Aurélien Laherte’s Rose de Meunier is constructed from fruit grown in Côteaux Sud d'Épernay & Vallée De La Marne. 100% Pinot Meunier, grown ecologically on limestone and chalky soils. The base wine is made up of 60% direct pressed white wine, 30% maceration (destemmed fruit is left in contact with the skins for a short while) and 10% red wine, which is fermented and matured in a combination of large format foudres and oak barrels. 
    An exceptionally fine and very persistent bead weaves its way through a strawberry pink coloured base after a well formed frothy white mousse dissipates. Filling the nostrils are enticing strawberry and raspberry aromatics which are complexed by some baked bread, yeast lees and light toast notes. Delightfully sculptured by refreshing acidity, the palate has delicious raspberry and strawberry fruits racing across it with yeast lees, baked bread and chalky tones lending further interest. Finishes nervy, crisp and long.

Pronounced pear and citrus aromas stand out from the glass with baked bread and yeast lees characters then taking over. Finishes off with some lightly honeyed toast notes. Sculptured mouthfeel with energetic acidity racing through the elegant yeast lees, toast and citrus flavours. Some light brioche and almond nuances are also evident. Finishes bone dry, tense and crisp with a refined citrus, oily toast, yeast lees and chalk tinged aftertaste.

    The NV Brut Nature Blanc de Blancs marries power with energy to a degree I have not seen before here. In this edition, the Brut Nature is decidedly powerful and broad, with less of the tension seen in some previous releases. It's as if all the Chardonnay flavors have been turned up to the maximum. Orange peel, apricot, chamomile and spice are some of the many notes that fill out the layers. The current release is based on 2017, with reserve wines from 2016 and 2015, all done in neutral oak. Vinous in a way, gently savoury throughout, exceptionally long and runs with so much energy. Beautiful.

    Larmandier-Bernier’s Latitude is a 100% Côte des Blancs Chardonnay from vineyards on the southern side of Vertus. These are vineyards on roughly the same latitude and the name also hints at the breadth of texture that the wines from these sites (having more clay in the soil) tend to offer up. In the cellar Larmandier uses mostly large format casks (almost all the wood now comes from Stockinger in Austria) and less and less steel tanks. The alcoholic and malolactic fermentations take place without inoculation, and there is no fining or filtration. Bottle maturation takes place in the underground cellars over a period of more than two years, and each bottle is disgorged manually, six months before being released and dosed at low, Extra Brut levels.
    Once dissipated, the creamy white mousse leaves behind a pale straw coloured base that has a glimmer of gold to the edges. Nibble and exceptionally fine bubbles rising to the surface. On the nose, aromas of pear intermingle with citrus, yeast lees, light baked bread and hints of sherbet. Long, dry and virile, the refreshing palate consists of baked pear, citrus and yeast lees characters over subtle oily toast nuances and faint remanets of biscuit and cashew. The finish is very dry with crisp, mouth watering acidity and a long refined aftertaste.

    The Extra Brut Blanc de Blancs 1er Cru Latitude from Larmandier-Bernier is a powerful, structured wine. Deep and resonant on the palate, the Latitude packs a serious punch. There is no shortage of depth or intensity, that much is clear. Dried apricot, sage, fennel, crushed stone all open up in the glass, adding layers of nuance. Readers should expect an imposing, rich Champagne that will be at its best at the dinner table. Like all of the Larmandier-Bernier Champagnes, the Latitude will offer its best drinking if opened several hours in advance. This release is 60% 2015 and 40% reserve wines. As always, Latitude emerges from clay rich soils that confer breadth. Dosage is 4 grams per liter.

    Saignée literally means ‘to bleed’. In winemaking parlance, it means to draw the free-run juice of a grape, off the grape skins typically prior to, or shortly after, the start of fermentation. In this case, the grapes (100% Pinot Noir) are allowed to macerate for several days before the juice is drawn off and it is this ‘soak’ that gives the colour and much of the body and flavour to the wine. This technique is now extremely rare in Champagne—it is a demanding method of vinification that requires grapes with an excellent degree of maturity. Hence most rosé (in Champagne) is made by the addition of a little red wine. This bottling is drawn entirely from what is thought to be the oldest Pinot Noir vines in Vertus, and one of the very last 100% Pinot vineyards. As with all of Larmandier’s wines it’s naturally fermented. Larmandier raises part of this cuvée in a Nomblot concrete egg and partly in stainless steel (and more recently he has been trialling amphora as well).
    A fluffy mousse dissipates over a salmon pink coloured base that’s threaded by an exceptionally fine and persistent stream of bubbles. Jumping out of the glass are alluring scents of strawberries, subtle blood orange and raspberry which meld into yeast lees, baked bread and faint cashew notes. Delicious strawberry, raspberry and subtle blood orange fruits have a creamy feel over a back drop of yeast lees, bready characters and traces of sherbet. Dry refreshing finish with mouth watering acidity leading into a long creamed strawberry conclusion.

    This is very dry and vinous with very fine bubbles that wrap themselves around the wine. It's full with lovely fruit that is subtle and encompassing on the palate. Caressing texture and finish. Some pie crust and dry biscuit undertones here. Also white pepper. The base is 2014 and bone dry. Six years on lees. 55% pinot noir and 45% chardonnay. Bottled in May 2021.

Delicate raspberry, winter strawberry and toast scents overlay yeast lees and a chalky minerality. The racy palate features light peach, water melon and winter strawberry flavour which are married to subtle toast nuances. Dry chalky finish with crisp acidity and a sculptured medium length aftertaste that’s fine and elegant.

    Laurent Perrier first released this rosé in 1968, well before it became fashionable to have a pink-hued Champagne in the portfolio. 100% Pinot Noir is sourced from both the north and south sectors of the Montagne de Reims sub-region, and famously draws its colour from skin contact rather than the more usual addition of red wine. It has striking freshness on the nose, bags of pure, zippy strawberry and raspberry fruit flavours, and satisfying vivacity. It's beautifully balanced with a long finish, and calls for a carpaccio of raw salmon.

    Le Brun de Neuville is one of the leading producers in the limestone slopes of the Côte de Sézanne, one the southern sub-regions of Champagne. Their vineyards are predominantly Chardonnay and they are committed to encouraging a sustainable approach to viticulture by adopting increasingly environmentally friendly practices and the resulting wines are certified 'Haute Valeur Environnementale'. The vineyards are fascinating with only a thin layer of soil covering the intensely chalky soil.
    Their Côte Blanche is 100% Chardonnay from the 45 year old vines. The harvest base is 2016 with 52% reserve wines spending 60 months on lees before disgorgement and release.
    Pours with a fine satiny mousse that shows good hold over a pale straw pale gold coloured base. The bead is very persistent and fine. Nosing offers up a classic Champagne sniff of baked bread, dried honey, yeast lees, brioche and cashew that’s quite intoxicating. Rich and expressive with a cream tinged mouth feel and dry chalky finish, baked bread, pear, yeast lees and brioche flavours are quite full across the palate. Citrus and roasted cashew like nuances the back drop. Vivid acidity with a long bready, oily textured aftertaste.

    The Lini family have been making Lambrusco since 1910. A purple tinged mousse disappears to reveal a black purple base wine that has a gentle spritz flowing through it. Intense blackberry, plum and liquorice aromas jump out of the glass followed by some inky earth and spice notes. Fruity blackberry and dark cherry flavours have a freshly crushed berry sensation being infused with lively acidity. Light dried herb and earth nuances are also present. Finishes dry and very refreshing with a vibrant aftertaste.

    An enlightened expression from a season of extremes, this has intensity, ripeness and depth of fruit that is underpinned by chalk soil-derived structure and freshness. Complex nose with lemon and grapefruit aromas, as well as closed red apple, blood orange, light biscuit spices and toasted hazelnuts. Super fresh. The palate starts pithy and fleshy with pink grapefruit, blood orange, red apple, sliced strawberry and nectarine. Expansive and mouth-filling build that is driven by concentrated fruit, Then it tightens and turns to a more mineral edge, before smoothly honed phenolics finish it long. It is 60% pinot noir and 40% chardonnay, 32% oak fermentation in those same proportions, no chaptalization, no malolactic and a dosage of 7g per liter. From organically farmed grapes. Very complex, it strikes a natural balance and is very drinkable already, though will develop well for more than a decade in the cellar.

    The 2014 Cristal is another in a long line of gorgeous wines from Roederer and long-time Chef de Caves Jean-Baptiste Lécaillon. A dazzling, vibrant Champagne, the 2014 impresses with a stunning combination of fruit density and linear energy that brings to mind a hypothetical blend of 2012 and 2008. At times, the bubbles feel totally wrapped up in waves of creamy, resonant fruit to the point the mousse is barely perceptible, especially with aeration. The flavors are bright and finely sculpted, leaning very much into the citrus, floral and mineral end of the spectrum.
    The blend is a classic: 60% Pinot Noir and 40% Chardonnay taken from 39 of the 45 parcels that comprise the Cristal estate. In most vintages, the Pinot components are roughly equally split between Verzy/Verzenay and Aÿ, but in 2014, Lécaillon favored Verzy and Verzenay, two north facing villages in the Montagne de Reims (where rain was less problematic) known for conferring saline energy and vibrancy. Rain was much more of an issue in the Vallée de la Marne. Consequently, some of the Pinots in Aÿ were diluted and did not make it into the blend. Chardonnays were sourced from historic plots in Avize, Mesnil and Cramant. About 32% of the lots were fermented in wood, the rest were done in tank. As always, all of the malolactic fermentations were blocked. In 2014, the growing season was marked by a good spring followed by a cool, wet summer and then very favorable weather in September. I vividly recall that there was not much enthusiasm for the vintage at the outset. Today, though, opinions are starting to change, at least with regards to some wines.
    Since 2012, Cristal has been made entirely from organically-farmed grapes, an approach Lécaillon adopted in order to achieve a more ideal and parallel relationship between sugar and phenolic ripeness. “Champagne is always a battle between picking too early and rot,” Lécaillon has often said during our tastings. One of the other benefits of organic farming is that it naturally lowers yields. As Champagne fans know, the great wines of the 1950s and 1960s were made at a time when yields were in the 5,000 kilo per hectare range. Then, in the 1980s, widespread planting of higher-yielding clones led to an entirely different situation in the vineyard. Today’s permitted yields are 11,000 kilos per hectare, with some variation in years that present unusual growing conditions. With organic farming, yields for Cristal are in the 7,000-9,000 kilo per hectare range. Another innovation at Roederer has been a focus on higher-density plantings with newer vineyards, an approach that encourages low production per vine. But back to the wine. Drink 2024 - 2064.

    The 2014 Cristal is a terrific effort that transcends the vintage. Bursting from the glass with expressive aromas of ripe citrus fruit, nectarine, white flowers, freshly baked bread and subtle hints of honeycomb, it's medium to full-bodied, vinous and fleshy, with an exuberant core of fruit that's girdled by racy acids, resulting in a wine that's simultaneously chiseled and demonstrative, meaning that early appeal doesn't come at the expense of the requisite tension for long-term cellaring. Concluding with a long, aromatic and intensely chalky finish, it is a brilliant Champagne that will offer a broad drinking window. This bottle was disgorged in June 2021 with seven grams per liter dosage. Drink 2021 - 2050.

    This vivid Champagne shows up-front and linear definition, thanks to rapierlike acidity, with finely meshed flavors of ripe black cherry and mandarin orange fruit, raw almond, anise and cardamom spice as well as a touch of honeycomb, which all unfurl and expand on the fine, creamy palate. Sleek acidity continues through to the finish, with additional racy character provided by a streak of minerally saline and chalk, which gains momentum through the midpalate and rings out on the well-cut, lasting finish.     It’s always educational, and a treat, to taste the latest vintage of Louis Roederer’s flagship Cristal Champagne. This cuvee is sourced from 45 separate plots covering just under 200 acres spread between the villages of Verzeny, Verzy, Beaumont-sur-Vesle, Aÿ, Avize, Le Mesnil-sur-Oger, and Cramant. The vineyards are farmed either organically or biodynamically and are planted to a 60/40 split of Pinot Noir and Chardonnay. Each parcel is vinified separately and for the 2014, only 39 parcels made the final selection, with the blend being roughly 60% Pinot Noir and 40% Chardonnay. The wine has the malolactic fermentation blocked and is brought up in a mix of 32% oak and 68% tank. This was a warmer year that saw fabulous springtime weather, a slightly cooler, rainy summer, and a great end of the year. The 2014 fits in nicely in recent vintages and has a style all its own, showing a fleshy, round, nicely concentrated style reminiscent of the 2012 yet not quite the precision of either the 2008 or 2013. Gorgeous and classic Cristal stone fruit, chalky minerality, white flowers, almond paste, and subtle toast emerge on the nose and it hits the palate with medium to full-bodied richness, a supple, almost creamy texture, terrific balance, and a great finish. It’s surprisingly approachable yet I’ve no doubt it will evolve nicely given its mid-palate depth and overall balance. It’s beautiful today and a terrific Cristal to enjoy over the coming two decades or so. It’s unquestionably more approachable than either the 2013 or 2008, but not far off qualitatively.     This is a great vintage for Cristal Rosé. The pinot noir finds a band of power and expressiveness. The power here is impressive, very assertive and rich, really mouth-filling and super deep. This is exceptional and has intense, chalky and fresh, white-peach and nectarine aromas, underpinning red flowers and pink fruit. The palate has a scintillating blend of flesh and mineral cut, packed with such sweet, pristine, white-strawberry flavor and texture. This has such incredible potential. So exciting. Will take another two or three years to resolve. Look out for this! Drink from 2025.

    The 2012 Cristal Rosé is magnificent. When Chef de Caves Jean-Baptiste Lécaillon started to move Roederer towards organically farmed fruit, he started with Cristal Rosé, Roederer’s smallest production cuveé. Because of that, Cristal Rosé is the wine in this range that shows the current Roederer style in its fullest expression. Rich, vivid and crystalline in the glass, the 2012 Cristal Rosé is a Champagne of tremendous gravitas. Chalk, white flowers, sweet red berry fruit, mint and blood orange are all beautifully delineated. The 2012 is 55% Pinot from Ay and 45% Chardonnay from Mesnil and Avize. The Pinot fruit gets a 7-10 day cold soak an is the infused into the fermenting Chardonnay musts. Readers who can find the 2012 should not hesitate, as it is truly magical. Dosage is 8 grams per liter. Drink 2022 - 2052.

    Based in the tiny hamlet of Polisot in the southern Cote des Bars region of Champagne, Dominique Moreau is producing some of the most dynamic and striking wines of the area. Naming her estate after her grandmother, Marie Courtin, Dominique has set out to craft Champagnes which emphasise how her specific terroir can be expressed in a given vintage. Her wines then are single vineyard and single vintage, made with meticulously grown fruit from biodynamically-grown grapes, see no dosage, and sulfur is used sparingly or not at all.

    Éloquence is a tiny production of 100% Chardonnay from a plot of 15-20 year old vines, fermented in used barrels. Given the proximity of this plot to the region, it's no surprise that Eloquence has more than a passing resemblance to the pure and mineral driven wines of Chablis (with bubbles!).

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.

The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
