A blend of 70% Pinot Noir and 30% Chardonnay that’s matured on lees for 4 years. A buoyant mousse gradually subsides to reveal a pale straw coloured base that has pale gold tinged edges and a fine stream of tiny bubbles flowing effortlessly through its core. Enthralling the olfactory senses are alluring aromas of baked bread, citrus and yeast lees with hints of cashew, oily toast like notes and dried honey also evident. Rich yet highly finessed with a light airy feel across the palate, flavours of pear, yeast lees, citrus and baked bread are vividly sculptured by refreshing acidity. Delicate cashew and toast elements linger underneath. Finishes dry with a long precise, chalk tinged aftertaste.

A great 2015 vintage champagne! Super-elegant synthesis of pinot noir and chardonnay character with a dazzling interplay of complex red apple, citrus and delicate floral aromas with racy acidity and chalky minerality, that is animating for mind and body. Unusually graceful finish for the vintage. 70% pinot noir from Verzy, the highest point of the Montagne de Reims, that’s also very close to the forest. 30% chardonnay from Chouilly, another rather cool location. From biodynamically grown grapes. Drink or hold.
