    'Tailored' is the long-awaited replacement for the stellar but now discontinued Nikka 12 year old. Released in 2019 with a similar presentation, the age statement is gone, but reports suggest the quality is not far off - plus you get it for considerably less. Judging by the taste, some have said they'd be surprised if the average age is much less than 12 years. The likely reason for dropping the age statement is that it gives Nikka more flexibility to focus on maintaining a steady profile and consistent availability. Like its predecessor, the aim of Tailored is to create a malt-heavy assemblage that honours all that's great about Japanese blends, deftly balancing pot still whiskies from Miyagikyo (light & elegant) and Yoichi (peaty and more robust) with a judicious splash of Nikka's award winning sweet Coffey grain. Nikka note on their website that this doesn't qualify as a 100% Japanese whisky, so it's almost guaranteed there's some Ben Nevis in the mix too - no bad thing. The malts were aged in Sherry barrels and finally bottled at 43% for a little extra depth. If you've enjoyed premium blends like Hibiki Master's Select, try this on a whim and you won't be disappointed. At the very least, the sculpted decanter with its huge wooden stopper is going to premiumnise your bar shelf.

    World Whisky Awards Category Winner for Best Japanese Blend in 2015.

    A long time best seller for Nikka and one of the company's classic brands, but almost never seen in Australia, the Super Nikka was introduced to the market in 1962. Despite being classified as a blend, it's reported to contain a high proportion of malt from the Yoichi and Miyagikyo distilleries.

    Quite youthful aromas of citrus fruit, sherry wood spices and a touch of smoke. The palate is mellow with some citrus and plenty of sherry wood spices. Quite balanced with a good citrus complexity and a slightly smoky finish.     Whisky is big business in Japan with Scotch whisky being especially popular, yet with their own history of brewing and sake production, it's only logical that the Japanese are now making whisky too. What began as a conscious imitation of Scotch, now has a style all of its own, and since commercial production began in the early 20th century, the quality has been steadily improving.

    Today, most of the malt whisky produced in Japan is for blending but Japanese distillers generally don't trade casks in the manner that Scottish distillers do. Consequently, it's up to each distillery to produce a diversity of styles that will form the base components of 'house blends' that offer unique and complex flavour profiles. Some Japanese blends will even include a percentage of Scotch whisky, rather than whisky from rival local distillers. This jealous reluctance to exchange is considered one of the major obstacles holding the industry back from the prominence it deserves: In a number of blind tastings recently organised by Whisky Magazine, which have included Japanese single malts in the lineup along with malts from distilleries considered to be among the best in Scotland, on more than one occasion, the results have had Japanese single malts scoring higher than their Scotch counterparts.

    After a long absence from the Australian market, we've finally managed to secure some world class Japanese whiskies from the Nikka distillery, Japan’s second largest whisky producer after Suntory. Now owned by the brewer Asahi, the company was originally set up by Masataka Taketsuru, who built Yoichi distillery in 1934, having previously spent two years studying the art of distilling in Scotland. (He also developed the now famous 'Yamazaki' distillery in Kyoto for Suntory which he managed for ten years).

    Yoichi typically produces rich, peaty and masculine malts. The whiskies get their distinct aroma and body from direct heating distillation, in which the pot stills are heated with finely powdered natural coal - a traditional method that's hardly used today, even in Scotland.

    Tasting note: Nose: Pronounced, astonishingly fresh, dry, peat. Palate: Mint creams, then orangey. Finish: After the creaminess, the peat surges back. Clean, sweetish, soft smokiness.     Vague echo of oak sappiness rescued by top-notch weighty barley. The tongue is forced to inspect the roof of the mouth countless times as wave upon wave of complex barley-honey notes rocket around the palate. Long with a tangy coppery richness that counters perfectly the barley, golden syrup and toffee. Mildly dodgy nose, overly toffeed finish… and still it’s a lightweight treat!

    Back in 2015, Nikka announced they were discontinuing their age statement and No Age Statement (NAS) releases for the Yoichi and Miyagikyo labels and consolidating them into two new bottlings. These whiskies have now arrived in Australia. Two NAS versions that differ slightly to the previous versions now represent the entire portfolio. It was yet another move that triggered a buying rush. Reports have it that Tokyo is now pretty much out of age statement Japanese whiskies, unless you visit bars or auction houses.

    Nikka's reasons for the radical new strategy are now familiar. They simply have no old stocks to sell.
    Decades ago, both local and world demand for Japanese malts was low, so few barrels were being laid down for extended periods.

    Stefan Van Eycken, writing for www.nonjatta.com explains "...there were years, at both Yoichi and Miyagikyo distillery, when the barrels laid down for maturation could be counted on the fingers of one hand. The ‘stock shortage’ is not an excuse or a PR stunt – it’s very real. Sources within Nikka have said that it is ‘likely’ that age-statement single malts will be brought back in 5 or 6 years’ time. No official statement to that effect has been made for the simple reason that doing so – in Japan – would be interpreted as a promise (which could come back to haunt them in 6 years’ time)."

    The dropping of age statements doesn't always translate into a drop in quality. Early reviews for both new releases have been very positive. Evidently, Chief blender Tadashi Sakuma has risen to the challenge of creating a great assemblage from a restricted inventory.

    Other reviews... Yoichi age statements are gone for now, but if the whisky stays this good, I can live with that. Black earthy peat, smoldering fires, a turned-out pocket of briny seashells, whole lime, lemon twist, sugared orange, ground ginger, and licorice. Silky smooth, with light, fruity sweetness developing into tangy Spangles, kiwi, and lime juice. The smoky peat is the weft woven through the fruit structure’s warp. The finish is insanely long: menthol, peat, and leather.

    Gamboge/flax/chardonnay color; unblemished clarity. In the first nosing passes I pick up all sorts of malty scents, from nougat to candied almond to malted milk balls to milk chocolate to maple; secondary whiffs after more aeration discover salted butter, lightly smoked, toasty aromas that are basically dry, but also nicely rounded and supple. Entry is savory, bittersweet, grainy, toasted bread-like, nutty; midpalate features a medium full texture that caresses the palate while the dry-leaning flavor profile highlights the malty grain and wood resins, especially the tannic acid which dries out the flavor so that by the finish it’s squeaky clean and tight. A really tasty, well-made malt.

    One of the most impressive (and affordable) Japanese whiskies to have ever hit the Australian market. "I have been drinking this for a very long time - and still can't remember a bottle that's ever let me down." - Jim Murray.

Consequently, it's up to each distillery to produce a diversity of styles that will form the base components of 'house blends' that offer unique and complex flavour profiles.

    Nikka Straight from the barrel is no exception. Composed of blended single malts from both the Miyagikyo and Yoichi distilleries along with an element of grain whisky that's all matured in first-fill bourbon casks. Good reviews are not hard to come by, with web based whisky enthusiasts describing this as an excellent value Japanese blend and all round great introduction to the Nikka style. Jim Murray's also a fan, stating "I have been drinking this for a very long time - and still can't remember a bottle that's ever let me down."

    Tasting note: [Batch 24J12B] Deep gold / bright copper appearance. The aroma is pristinely clean and reminiscent of some class sherry bottlings, there's suggestions of biscuity malt, vanilla and juicy dried fruits. At the same time it frustrates - even after extended time in the glass it’s shy to reveal better definition. In the mouth, soft, gentle spices unfold a blanket of sweet, nutty, chewy malt and dried fruit flavours. A hint of smoke in here too? Clean, slightly tingly mouth feel as the spices increase, but overall this shows good balance at +50%. Finishes as it began - with the spices more settled and drying as the delicate malt lingers through the aftertaste. 51.4% Alc./Vol.

    Previous tastings... [Batch 04J080] Deep, bright gold appearance. Aromas include toasty cereals, straw, cocoa, pear and spices beautifully intertwined. A huge, spicy entry is semi sweet with stewed pear, dried apricot and a chewy texture. Very well balanced at cask strength. Drying pear, spice and vanilla aftertaste. In all a little bit like a rye heavy Bourbon. Certainly one of the most impressive and affordable Japanese whiskies to arrive on the Australian market. 51.4% 94 points

    Other Reviews... A high-strength blend that takes no prisoners. The color is full gold and the first thing that hits the nose is a complex mix of restrained smoke (sandalwood, cigar), fennel, and celery before semi-dried tropical fruits and orange peel take over.     One for no age statement naysayers. An eloquent expression of sweet osmanthus, baked lemon, yuzu, violin resin, rich malts, and bonfire aromas on a favorite woolen jumper. It glides across the tongue with sweet barley sugar, but attests to greater depths; grapefruit, spicy ginger, and mandarin developing milk chocolate-coated, candied lemon flavors. A firm finish: green cardamom spices slowly releasing their grip on the front of the palate, leaving clingy vanilla.     ...Marigold/deep straw color; superb purity. Immediate smells after the pour are grainy, malty, and like brown rice, with background touches of baking spices (allspice, mace), tofu, and soy sauce; secondary inhalations encounter “greener”, more vegetal aromas that eclipse the baking spices. Entry is subtle, keenly spicy (the baking spices make a big return), desert dry, and moderately malty; midpalate features a delightfully and satisfying crisp flavor profile that borders on being astringent and edgy as the maltiness merges nicely with the resiny oak, providing a tightly focused taste experience that’s clean and intensely grainy. Finishes a little too short, deeply malty, and even now a touch peppery. Had the aftertaste not dropped off too abruptly, I’d have given this single malt a fifth rating star.     Lots of very warm reviews on the blogoshere for this no-age-statement expression of Nikka which reportedly over-delivers for an entry level whisky. Named after the company's founder, Masataka Taketsuru, and aged on average for around 10 years, it includes whiskies from the Miyagikyo & Yoichi distilleries, including malt matured in Sherry casks.

    Other reviews... The luxe aroma mixes rich butterscotch and apple sweetness. On the palate, this whisky is light and gentle, interspersing fruit and smoke and finishing with a spark of cinnamon heat. Add a splash of water; recommended for sipping. 43% Alc./Vol.

    Yet another first for Australia - Nikka decided to add their Coffey Malt to their core portfolio in 2014. It completes the Coffey range, originally launched in September 2012 with the Nikka Coffey Grain. Each offers insight into the whiskies that constitute the base of Nikka’s blends. This edition is produced from 100% malt, though technically it's not a single malt due to its distillation in Coffey stills (Nikka imported two from Scotland in 1963). Scheduled as a European exclusive, we're very fortunate to have received a tiny quantity into Australia.

    Tasting note: Brilliant deep gold colour. Semi-sweet aromas of creamy soda, creme caramel, vanilla bean and shortbread followed by flavours of butter menthol lozenge, cream biscuits and an ultra pure, high pitch vanilla bean, dried coconut finish that maintains excellent sweet/dry balance. Creamy soda and bounty bar aftertaste. A gorgeous, one of a kind, melt in your mouth malt that's a must try. 45% Alc./Vol.

    Other reviews... Now a hugely welcome part of the core range, this whisky—made in Coffey stills at the Miyagikyo distillery—uses 100% malted barley as its base. The nose is all tinned peach, tropical fruit juice, and baked banana, with a surprising green celery note, coconut, and sherbet. The palate is silky, with some chocolate, biscuity oak, and orange blossom honey. Water brings those green notes forward to add freshness to the peach cobbler sweetness. The grain revolution builds. 45% Alc./Vol.

    Jim Murray's Japanese Whisky of the Year for 2023.

    Grain whiskies are almost entirely reserved for the blended whisky market, where the grain component can be thought of as the 'neutral canvas' background. The more robust and flavourful Single Malts represent the colours in the blender's palate. Grain whiskies aren't necessarily bland, but they do tend towards lighter, leaner styles. This is because the raw materials and the equipment used to make grain whisky are different than those found in the production of single malt. In grains, usually unmalted wheat or maize (corn) feature, together with a small amount of 'green' malt (barley which has germinated but not been kilned). Usually about 16% malt is added in order to convert the starches in the other cereals into sugar, so it can be turned into alcohol by the yeast. The distillation process further sets grain whiskies apart: Rather than being pot distilled, they’re produced via column stills. Also known as 'Continuous' or 'Coffey Stills', this revolutionary invention from a French born, Irish raised Dublin Excise Officer, Aeneas Coffey, has forever changed the way most spirits are made. Significantly more efficient than the Pot still, column stills can produce a consistently light bodied and clean spirit to a pre-determined strength.

    While the category is rarely marketed, there are several outstanding grain whiskies that are worth seeking out. Nikka's is one, and all the more unusual for being Japanese. Nikka have released a number of single cask Coffey distilled grain whiskies over the last few years. This is a larger scale offering, produced mainly from corn using their continuous Scottish-made Coffey stills at Miyagikyo. Tasted from a 40ml sample, the whisky yields superb scents of vanilla cream combined with hints of ripe pear or dried banana. Second pass finds tea biscuits and shortbread with the creaminess maintained. Silky, almost oily delivery offers semi-sweet Irish pot still-like flavours: vanilla wafer, muesli, then added pepper to finish. Concludes sufficiently fresh, caramelly, vanilla-heavy with shortbread and lingering sugars in the aftertaste. Irish whiskey meets Venezuelan rum. Delicious. 45% Alc./Vol.

    Other reviews… I'll just repeat about the finish exactly what I wrote last year... because nothing has changed: it is identical... every year I look at the latest bottling of this astonishing grain, searching for a weakness here, a failing there. But no. Guaranteed consistency: it is like a song you know the words to and can sing along with. I has always linked silk with China... until I found this whisky all those years back.     ...Sweet, with subtle, crisp, nutty oak, then comes fudge, ripe banana, and peach. The overall effect is like eating vanilla ice cream with toffee fudge and hazelnut sprinkles. The structure is thick and physical, the palate sweet and quite fat, with light hints of raspberry, fruit salad. A jag of acidity freshens the delivery on the finish.     "This is not "Japanese Bourbon" or even "Japanese Corn Whiskey." This is quite something...else. There is no age statement, but the benchmark for this whisky is 8-12 years. The profile is carnival candy filled, and while it is slick, it is not sticky sweet on your palate.     For their Select Cask series, Paul John in Goa has created a pair of malts finished in different sherry casks. This particular edition was allowed a period in Pedro Ximénez casks, so if you like the thought of dried fruits mixed in with some cakey notes, you should find plenty to like here - starting with the bouquet. Packed with dried peels, raisins, fruit slice and dark chocolate, the palate shares the same appealing bittersweet quality (it's not as sweet as you might anticipate). Fruit mince pie, tangy peels and ginger bread are the keynotes through to the cocoa-laced aftertaste. Trace sulphur too. Adding water tends to flatten the profile, so this is one whisky where its qualities are best uncut. The high ABV boosts the bang for your buck. 48% Alc./Vol. Non chill filtered.

    Following the lead of Asian whisky brands like Nikka and Kavalan, Paul John have created an entry level whisky at an even more affordable price point than their core range. This one's an unpeated expression, made from Indian six-row barley and matured in 2nd and 3rd fill American oak casks for around three years.

    Notes from the producers... Nose: An attractive honeycombed bourbon with luscious fruitcake, with a light whiff of enticing caramel pudding. Taste: A delightful soft honey with a slight salt-edged barley; an excellent mouthfeel with honeycomb sweetness. Finish: Immensely long, and richly flavoured with dissolving honey, barley, and succulent vanilla. Balance: A joyous barley plays intricately with high quality oak, that offers a dash of true goan pleasure! 40% Alc./Vol.

    Paul John ‘Brilliance’ is the first in the range. An un-peated malt matured in ex-bourbon casks. The second is ‘Edited’ with about 20% of the malt being peated Scottish, and again, matured in ex-bourbon American oak casks. Both are non chill-filtered.

    Tasting note: Polished copper. Offers up fruity malt, hints of ginger bread, light cinnamon and vanilla. Similar in many ways to "Edited" but with the oak adding firmness and drying the mid-palate. Fresh and lightly spiced delivery; some nice fruit'n'nut chocolate characteristics feature amid the juicy malt. Excellent balance. 46% Alc./Vol

    Other reviews... Paul John is taking its entry into the world of single malt very seriously, and very slowly but surely. After two single cask offerings to find its range, Brilliance and Edited are its first general releases. Brilliance is unpeated and is a delight: rich, full, young but not immature, and with lime and citrus Starburst chews, sweet candy, and some icing sugar, it trips across the palate. The Classic is a little prickly in the opening sniffs including notes of pepper, honey and sponge cake and a mildly acidic volatility; five minutes softens the bouquet considerably and draws out a superb fruity core of peach, light vanilla and dried coconut. Intense, peppery entry; coats the tongue with a slow-motion wave of spicy, semi-sweet, bristling malt. Finish is mildly bittersweet with warming spirit heat, plus vanilla oak input and hints of biscotti; late fruitiness and tingly peppers carrying the aftertaste. Non chill filtered. 55.2.% Alc./vol.

    ...Sticky, spiced-coconut desserts, grapefruit, clove, allspice, and crispy bacon on the nose of this NAS whisky matured in bourbon casks. Sharp with lime, grapefruit, and lemon zest that settle down to green fruits, Jell-O, and dry spices. Do dilute, as water lets the spices leap from the glass, strips down the acidic attack, and accentuates the fresh apple and cinnamon. It doesn’t need much water, but it’s eminently better with a dash. 84 points

    Tasting note: Bold, but not as overtly peaty as the name might suggest. Gentle puffs of smoke come between the honey-soaked barley, giving a Highland Park-esque feel to the nose. Full, vaguely fruity, superbly weighted, effervescent malt - the phenols glaze over the barley rather than smother it. No shortage of flavour. At the finish, an earthy, farmyard-like character is accented, the peat taking on a lanolin-like aspect through the final stages. 46% Alc./Vol. Non chill filtered.

    Fans of all things peaty will find this difficult to resist. Not only brilliant whisky, but a new bargain in its genre.

    Located in the tourist region of Goa, John Distilleries have been producing huge volumes of blended whisky since 1992. Original Choice, one of their top brands, sells over one million cases a month. The Distillery entered the single malt scene in 2008 as a ‘pet project’ that like Amrut before it, has quickly gained world wide attention. Distiller Michael John employs local ingredients, although, the peated releases source peated malt from Scotland. The maturation periods in India are reminiscent of those in many Australian distilleries. After only three years, a hogshead has 150 bottles left in it (compared to around 350 in a Scottish equivalent). Not surprising given that the average temperature in Goa is around 31 degrees celsius.

The Peated starts out with a lovely sweet, cocoa edge to the bouquet; second pass finds wet wool and barley sugar combining to great effect. Further aeration highlights oatmeal and honey interchanging with earthy peat. A farmyardy aspect follows as lucerne mulch and hints of manure, and later still, cough lozenge and faint citrus. Mouthwatering, sweet entry leads into a superbly integrated, concentrated, peppery profile; Winds up with with Fisherman's friend, liquorice root, dried fig and salivating, creamy malt. Peat lingers in the fade. Complex, poised and powerful, this precocious effort seems to only get better each time you taste it - fans of all things peaty will find it difficult to resist.     Peat, biscuit, fir tree sap, oil and fruit cake, a tightly woven fabric, smoke pumped through a mesh of sweet, rich, alcohol sodden raisin. All power to the black fruit bomb. A mouth filling whopper of a whisky, the smoke riding the sweet as it billows up and back, the finish is ever so long, a fragment of cinnamon tempering the sugar. It’s Christmas less the glitz.     ...Earthy notes, with plain chocolate nibs, malt drinks, and a little leather. There’s a subtle smoky air; nothing too astringent or overpowering. It’s great to try if you’re new to peaty whiskies or were put off by a peat colossus from Islay. Fig, plums, and soft prunes, though it’s mouth-puckering neat, so cut it down. Then, the fruit rounds out beautifully, allowing some gentle spices to shine through with some coffee bean notes at the end.     Edited is the medium peated version of Paul John. Polished copper. Rock candy, brittle malt with later hints of peppermint contributing freshness. Later toffee apple? Supple and well rounded in the mouth; nicely balanced with an almost fleshy texture with flavours of dried fruits and plush malt underscored by gentle spices. Good length. 46% Alc./Vol.

    'Myth' is the second whisky in Penderyn's 'Dragon' range of 41% ABV expressions, along with Celt and Legend. This departs from the distillery's commonly found style of ex-Madeira wine cask-finishing, preferencing ex-bourbon and ex red wine casks. There are less pedestrian flavours of melon and green apple suggested through the vanilla and biscuity malt. It is arguably the fruitiest in the collection while remaining a subtle, low-key experience with little to no burn, leaving the impression of a well-made blend. Non chill filtered.

    ... [+/- 2017 bottling] Not the first time we’re trying this entry-level NAS. Hope they improved it a bit… Colour: straw. Nose: difficult, acidic and full of iron and concrete. Milk, yoghurt, mud, cow stable… Not too sure here… Mouth: better on the palate, with some tropical fruits yet again (much fewer than in the 2007 and 2008 though), probably from fresh bourbon, then some lighter vanilla and touches of barley water. Feels like a blend, with this lightness. Quite some sawdust, not the best part. Finish: medium but a little planky. Flour, tapioca, sawdust… Comments: I had hoped this baby would make it to 80 but the sawdust handicapped it in the end. Good but not quite mythical, I would say. 78 points - whiskyfun.com

    Like the other expressions in the series, 'Legend' carries the Red Dragon as a feature. It's the same symbol that appears on the national flag of Wales and the Royal Welsh badge bears the motto, ‘The red dragon inspires action.’ Matured in x Bourbon casks before receiving a further maturation in x Madeira wine casks, this is a whisky of restrained stye, both on the nose and palate. In moments akin to a light grain or Irish blend, there are mere suggestions of tropical fruit and citrus punctuating the soft barley and muesli, augmented by wisps of pepper, while frail notes of honey and melon surface in a clean, crisp finish.     This edition was matured in bourbon but finished in Madeira casks, which lends it a honeyed, sweet nose of cream soda, lychee, whole almond, and dried tropical fruit. Smartly, the finishing cask gives a lift but never dominates. A fresh, clean taste, but the mouthfeel has a frailty, so although you will find lemon, icing sugar, candy bananas, and molten honey, this doesn't quite live up to its rousing name. 78 points - whiskyadvocate.com

    This rather good after-dinner dram is finished in peated Islay whisky casks. It is not a peated Welsh whisky, but don’t let that stop you. With its refreshing aromas of lemon floor polish, pine needles, gentle antiseptic, smoked fish, and breezy beach bonfires, we can cheerfully drop the pedantic objections to its name.     Like the other Celtic nations, Wales has a long history of distillation dating back to the 4th century with a man known as Reaullt Hir distilling on Bardsey Island off the North Wales coast. The ingredients of this early spirit, known universally as “aqua-vitae” or ‘gwirod’ in the Welsh language, was a mix of barley, yeast and honey distilled to make a basic raw spirit. Much later in 1705 a small commercial distillery at Dale in Pembrokeshire opened. This was owned by Evan Williams's family who later emigrated to the USA and helped found the Kentucky Whiskey Industry. (His name is attached to a number of high quality bourbons to this day).

    In September 2000, history was made when the first distillation was carried out at The Welsh Whisky Company's ‘Penderyn Distillery’. Launched on St David's Day to huge critical acclaim from both "ordinary” consumers and acknowledged whisky experts, including whisky writer, Jim Murray, who had the privilege of been the first person outside the company to analyse the new product. “I told them they were tasting not just a historic malt whisky, but one that deserved the highest praise in its own right.”

    The Welsh Whisky Company uses a unique design of still - a single 'pot' beneath a tall rectifying column was developed by a team led by Dr David Faraday (a descendant of Sir Michael Faraday, discoverer of the electrolytic cell). Whilst Scottish distilleries generally use two conventional stills for their production, and the Irish three, the technology developed at Penderyn enables an extremely 'clean' and flavourful spirit to be produced from the single still. The design is also extremely energy efficient. Malted barley wash to Welsh Whisky's specification is obtained from the well-known Welsh regional brewer, S A Brain & Co. The majority of the whisky is matured using casks sourced from Jack Daniel's, Evan Williams and Buffalo Trace, and typically bottled at 46% without chill filtration.

Salivating, gristy barley makes an early entrance but the real surprise is the oils which run through the body, giving unusual scope and depth for a Celt; the mid point Demerara sugars are by now crisp and friable, contrasting beautifully with the oils; Long, enigmatic and returning an extra charge of peat smoke for good measure. Penderyn, the best known of the small but growing number of Welsh distilleries, is in the process of constructing a second distillery with a visitor center in Swansea anticipated to open in 2021 and has proposed a third facility for Llandudno.     Fans of Irish whiskies will be familiar with the results of triple distillation. It helps to concentrate alcohol, but also helps to create lighter, more fruity flavours. Pokeno's new make is already incredibly sweet and smooth due to an extremely slow distillation which allows the maximum amount of reflux. Having only two stills, they performed two additional distillations in their 3600 litre still, each time taking a very small heart cut (approximately 20% of the run). These further distillations have "pushed the profile to the next level", while maturation in A-grade, first-fill bourbon barrels has capped off a wonderfully smooth, sweet and honeyed malt. For some tasters, this will be the pinnacle of the Exploration Series. 49% Alc./Vol.

    Notes from the producers... On the nose there is rich honey and vanilla with hints of citrus and toffee. In the mouth rich vanilla bean and butterscotch mingle with notes of sweet citrus and a hint of pepper clove. There is a long rich finish.

    New releases from Pokeno in the North Island of New Zealand have arrived. Already sold out at the distillery, this bottling represents the first in the 'Exploration' series and introduces the native Totara wood, the indigenous tree of Aotearoa. Historically, its hard, straight-grained timber has been used to build homes, carvings, weapons and containers for storing food. When used for maturing whisky, it imparts sweet, creamy notes. The team at Pokeno opted for 200 litre barrels that received a light toast and char. After maturation in first-fill bourbon casks, the whisky was finished in the Totara wood. Founder, Matt Johns describes the result as having a creamy coconut note with sweet-scented sap, ripe white peach and freshly cut wood. 46% Alc./Vol.

Free from the volume pressures that larger-scale, big-brand producers face, founder Matthew Johns and head distiller, Rohan McGowan revel in the ability to experiment with long ferments and slow distillations in order to extract the maximum body and flavour from the barley, which they source from three family-owned farms in the South Island. “As an independent distillery, and a small team passionate about our craft, we’re entirely driven by quality, not volume; on doing things our way, not the easy way – with no compromise on any part of the process,” says Johns.

    Revelation is fully matured in first-fill bourbon and New Zealand Red Wine casks from one of the distiller's favourite wineries.     Mexico has a long history of distilling but they're only just catching on to whisky, capitalising on the nation's sixty-four native varieties of corn. Mash bills are upwards of 70% corn, sometimes 100%, and the styles and production standards often reflect American whiskeys - but that's not necessarily the case. Instead of pretending to be Bourbon, Mexican producers are seeking to highlight the culture of Mexico as the ancestral home of maize with lighter-bodied, elegant sipping whiskies and restrained barrel input. To date, there are over a dozen distillers and even more brands, the vast majority of which have diversified from mezcal to experiment with the country's heirloom varieties. The Koch Group is one. They began producing Whisky Prieto and Prieta in 2018 under the guidance of Txomin Alcorta, a French Master Distiller with experience in Cognac. Their whisky is 100% corn-based. Fermentation takes place in stainless steel with copper stills employed "...in the style of cognac and mezcal". 43% Alc./Vol.

    Notes from the producers... Aromas: Red apple with honey, vanilla and hazelnut notes with a hint of dried peach. On the finish tiramisu and a delicate scent of caramelised wood. On the palate: Creamy texture, combination of Neapolitan custard and cinnamon. Dry finish with notes of maples syrup and cherries. Slight pleasant acidity and hints of tobacco in the aftertaste.

    'Dreifaltigkeit' means trinity in German, and this whisky apparently gets its name from a local Swiss mountain peak. Reportedly the barley is smoked in multiple ways – first wood-smoked in beech and oak woods, then re-smoked with local peat from the Appenzell Highmoor. It's said to be a polarising experience, even for peat freaks.     Peat cut from the moors in Appenzell is used to make peated malt that is then matured in beer casks. The nose has rich woodsmoke, leather, charred oak, bruised orchard fruit, and a mild pepperiness. Unsweetened chocolate, dark fruit, clove, and ginger lead to an intense spicy peak, diluting to leave hazelnut ganache, chocolate brownie, and a gentle smoky character. 88 points - whiskyadvocate.com

    [circa 2021 bottling] We're in Appenzell and unless you're a native German speaker, please try to say 'Dreifaltigkeit'. Bravo! Indeed that means 'trinity' in German. This was matured in old beer casks, a typical set-up at Säntis. Colour: deep gold/amber. Nose: with bags of pencil shavings and tons of pinewood chips, this should work well as a spread over your barbecued ribs. Seriously, I think this is awesome, totally deviant in a great way, and more and more on smoked and grilled bacon. Spectacular, I can't wait to check what will happen once water's been added. With water: same but with even more pinewood. A little aquavit, perhaps, Schinken häger… ever heard of  Schinken häger? Mouth (neat): total extreme fun. Tons of smoked bacon, litres of Jägermeister and Fernet Branca, and this feeling of drinking sauna oil. With water: more tar, myrtle liqueur (first time I'm finding this much myrtle), salty bacon… Finish: very long. Perhaps a tad too long in fact, you'll need a break before you pour another whisky.     Why is it that so many great beer-producing European nations, many of them with Germanic roots, didn't progress to whisky making? Appenzeller brewery makes this malt using old beer casks, and they have softened the edges of the malt and given it a liquid honey frame around which woody-earthy notes and unripe dates create an intriguing mix.     Other reviews... Fabulous sherry trifle on the nose and a marvelously confident delivery makes for a storming start to this flavoursome malt. Indeed, despite the healthy sherry influence on the delivery, the malt makes its presence felt in both the flavour and texture.     Famous as the country’s highest distillery, Shinshu Mars has drawn comparison with Scotland's Dalwhinnie. They offer blends as well as their own Japanese whiskies under various names including 'Komagate', 'Iwai', 'Mars' and more. It gets confusing, but what’s clear is they set a high standard for most of the liquid they bottle. Yet another sub-label in Shinshu's portfolio is the ‘Cosmo' range, named after a mountain in Japan's Central Alps nearby the distillery. Featuring their own malts blended with whiskies from undisclosed Scottish sources, this limited edition was extra-seasoned in red wine casks for a year before bottling.     High up in Miyata village on Kuyshu Island is the Shinshu distillery (aka "Mars"), founded in 1985 by Hombo Shuzo Ltd, a producer of shochu since 1872. Shinshu’s whisky is distilled only during the island's harsh winters. In operation from 1985-1992 and then 2011 to present, this is actually Shuzo's third domestic distillery. The previous have been the Yamanashi Distillery (1960-1969) and the Mars Kagoshima Distillery (1978-1984).

    Iwai Tradition is a malt and grain blend described by thejapanesewhiskyreview.com as "...a great session whisky."

    ‘Cosmo’ (which refers to a mountain near the distillery), is a relatively recent label for this producer. New for 2019 comes a blended malt composed of the distillery's own spirit as well as Scotch malt whisky imported in bulk, with the final combination finished in ex-Manzanilla sherry casks. Light and fresh like Finos, Manzanilla sherries are aged close to the coast in Sanlúcar de Barrameda, Spain. They're typically bone dry styles with a salty tang.

    Notes from the bottlers... this builds on the soft and smooth mouthfeel of standard Cosmo, adding aromas of dried fruit, brown sugar, and maple syrup. Chocolate and coconut on the palate, with a slight bitterness. 42% Alc./Vol.

    A hint of what's to come... Tsunuki is a new Mars distillery, located on a historic site in Kagoshima. With this second operation, Shinshu's owner, Hombo Shuzo will continue to expand his portfolio which presently includes the Komagatake single malts, Iwai Tradition, Twin Alps, Tsunagu blended whiskies and the Cosmo labels. Opened in 2016, the heart of the Tsunuki facility is located just next to the family home of the descendant of the founder of the brand (now transformed into a tasting bar and shop). Cask no 5113 yielded just over 200 bottles at a cask strength of 59% Alc./Vol. Extremely limited.

    As of 2024, Host (pronounced “hurst”), is the latest addition to Stauning's portfolio. The blend of rye and single malt is named ‘harvest’ in honour of the Danish landscape and the country’s grains which are 100% floor malted and kiln dried at the distillery. Alex Munch, one of Stauning’s founders, comments: “Each harvest, farmers give over a portion of their fields to wildflowers, adding a riot of colour to the stretches of grains that carpet the land. We created HØST to celebrate the closeness of nature and nurture, the deliberate rye and barley hand-in-hand with the sudden colour of wildflowers, just as our modern, sustainable distillery sits alongside acres of green fields.”

    Matured on-site in heavily charred new American oak and first-fill Port barriques, this well-balanced dram is perfect for beginners: Easy on entry and easy to the last with a blended malt kind of feel and a fruit bread character throughout.     Other reviews... It says ‘Smooth & Delicate’—well, what’s that about then? Seems to be a 50/50 split of malted barley and rye, aged in a mix of American virgin oak, ex-Bourbon, and ex-Port casks. We reckon, with a bit of luck, this could work. Colour: gold. Nose: very light, but not unpleasant, rather like an herbal tea. Might even call it a breakfast whisky. Fresh bread, gentle fennel, caraway seeds, and a touch of spice… Mouth: it’s good, not even too weak. There’s bread and spices aplenty, but it tends to nod off after thirty seconds or so, becoming a bit drying. Finish: fairly short, though nicely bread-forward. Comments: It’s from a Diageo-backed distillery, so they clearly know what they’re up to, and it’s really not bad at all. Just a pity about the ABV—perhaps a typo crept in somewhere during production?     Made using barley smoked over heather and local peat, this is a nice addition to Stauning's core range. The style echoes Ardmore or peated Arran's with more sweet wood smoke or Highland peat than maritime character; the whisky glides across the tongue with a creamy, malty middle that gets lightly fruity and finely tannic towards the finish. Spices build, the smokiness persisting like a silky glaze over the malt, adding texture and length, ending with a delicious warming tang. Matured for 5-6 years in a mix of first-fill Bourbon, Madeira, Jamaica Rum and Virgin American oak casks. 47% Alc./Vol. Non chill filtered. Batch 1-2022 tasted from a 50ml sample.

    ...You cannot not love a Distillery that would name some of its whiskies 'Kaos' or 'Bastard'. Now 'Smoke' is a little more civilised, I'm wondering why they haven't used 'b**** smoke' or even 'f**** smoke' instead. Colour: gold. Nose: mega-LOL. Sauna oils, burning rubber (dragster after a race), bicycle inner tube, teak oil, glues and greases, gun oil, brand new Harley dealership, new Tesla… I'm sure you're following me. Love this. Mouth: huge fun. Wondering if they haven't used smoked water, or if they haven't kind of barbecued some unsmoked rye whisky of theirs, or used any other unmentionable processes. Who cares, I'm a fan of this 'whisky' that got off the beaten tracks long ago. Salty rubber? Snuff? Chewing tobacco? All-purpose industrial grease? Finish: long. Chewing salted tyres. I know. Direct-fire distilled from floor malted rye and matured for 3-4 years in new American oak, this big yet balanced Danish whisky offers generous rye character from start to finish. Dense, toasty grains on the nose follow through to a full bodied, rounded, spiced-up delivery that pulls through flavours of crusty rye fruit bread as well as hints of caraway, vanilla bean and dark chocolate, ending tactile, oily and intense. The unusual nose presents muted prune and dried peel aromas with burgeoning rye richness; Harder to pin down on the palate, falling somewhere close to a drier style malted rye, then slightly nondescript through the middle stages before developing cinnamon, bitter peel and herbal definition as the vermouth rallies.     Curiously named after a 1930s Danish political slogan, Kaos is a combination of Stauning's unpeated malt, smoked malt and malted rye whiskies. The aromas are sweetish with suggestions of poached fruits and dark rye over a rich coffee-chocolate-malt background. A full bodied, chewy delivery conjures flavours of dried fruits, toasty rye bread and cocoa followed by fresh oak shavings and wood spices - you might also detect some faint wood smoke in the aftertaste. A bit of everything going on here, with the toast and chocolate keynotes recalling Glenmorangie Signet. 46% Alc./Vol.

    ...With such a name, this baby couldn't not have piqued my curiosity. This little chaotic whisky is a self-blend of Stauning's rye with their peated malt and was aged in first fill bourbon and virgin American oak. Aye, we're ready… Colour: light gold. Nose: a lot of fun, with smoked mangos, litres of chamomile tea, eucalyptus, cough syrup, rye bread, a saucerful of muesli (not secrets), then rather liquorice and even a little tar. No dissonances this far, we're good. Very moderate vanillaness, we're even better. Mouth: very good, pretty bombastic, with huge fruits (melons, apricots, mangos) and this bready smoke that's not seen everywhere. Touches of juniper and caraway, a little nutmeg, then fruit breads and even a little sourdough bread. We call that süweck here in Alsace. Finish: rather long and more on liquorice. Lightly salted liquorice. Comments: a joyful whisky that's both very excellent, innovative (for once, when some whiskymakers innovate they do not have exactly the same innovations as everybody else), and just fun.     This three year old rye sees a six month finishing in x-mezcal casks. Initially shy, the nose has an almost floral-grassy quality, developing with cocoa and a vague fruitiness. At first sip, the malted rye and barley provide a mouthfeel and taste that suggests a single malt. The character of the grain gains momentum as buttered dark rye bread with a spiciness typical of the genre. Pickled ginger, wasabi heat and suggestions of dried herbs and wood smoke complete the finish. Almost as delicious as it is difficult to classify. 46.3% Alc./Vol.

    ...Wie bitte, what bastard? Can you, in non-Japanese whisky, bear the name of a distillery and yet be a bastard? In any case, this is 70% malted rye and 30% malted barley, aged in deep-charred casks, and finished in… drumroll please… Mezcal! So yeah, an utter bastard… Colour: gold. Nose: right, perhaps a little too much. You do get the agave-y smells, which are always extremely singular, and you get that rich floral fruitiness that you could find in some young American ryes. Violets, lavender, sour peaches, then moist high-honey gingerbread, more gingerbread, even more gingerbread, a cartload of gingerbread… And tequila! Not too sure, but good fun. Mouth: this is almost tweaked aquavit, almost a real shamble... So, ginger wine, tonic, tequila, lavender, rye bread, gingerbread (you bet), beech smoke, pink pepper… Finish: rather long, round and yet fruity and spicy, with more sweet 'ex-char' vanilla. Comments: we've heard Diageo were doing stuff with whisky and tequila, but it is the first time I'm encountering such an UFW (unidentified flying whisky).     These do not come past our door all that often. Originally sold to investors who were given the chance to purchase a whole barrel of Yamazaki, as well as choose the resulting maturation period, the "Owner's Cask" series has since, reportedly, become a cellar door release. This particular one was bottled in honour of the Port of Yokohama celebrating the 150th anniversary of its opening. This bottle represents an opportunity to taste a more pure and transparent expression of Yamazaki whisky. Distilled in 1995 and bottled in 2008 at 61%, grab yourself a piece of Japanese whisky history.

    Released to Global Travel Retail in October 2020, this hybrid combines whiskies from the five most noteworthy regions in the world - Japan, Scotland, Ireland, Canada and the U.S. Suntory's Chief Blender, Shinji Fukuyo named the concept whisky 'Ao' meaning “blue” in Japanese, intended to evoke “the oceans that connect these distilleries together.” It's a whisky that pretty much does what the label suggests, offering a complex nose that wanders from sweet grains to more robust malt while also suggesting young Bourbon and trace smoke. Supple and integrated, the palate is a demonstration of Fukuyo's skills, starting out with faint citrus, vanilla and tea biscuits, building body and wood spice into the gently malty / smokey finale. It's followed by fruit'nut'chocolate and a light bourbon (or grain whisky) character through the aftertaste. Ultimately resembling a well-crafted malt-heavy blend, 'Ao' possesses some of the weight and character of a fruity Speysider, but with the grace and sweetness of an Irish Pot still or Canadian grain giving overall form and definition - especially through the finish.     Other reviews... The nose of the whisky evokes Scotch mostly, arguably a blend (which is fitting, considering that’s basically what this is) vs. a single malt. Notes of well-toasted, heathery grain, a touch of smoke, and some lemon-heavy citrus are all evident, along with a honey note that recalls some Irish bottlings. The palate doesn’t really shake the boat, offering a malty core that’s touched with milk chocolate and some vanilla — perhaps the Jim Beam showing through, though just barely. From there the whisky adopts an earthier note, sultry but subtle, and nodding at some of the more aggressive wood elements you’ll find in Suntory’s Japanese stock, finishing with a reprise of citrus, just a bit. The balance, much to my surprise, is impeccable. While you’d have to be a savant to pick out all the component elements, Fukuyo has put them together so artfully that one really doesn’t feel like they need to bother trying.     "There's a very gentle mix of char and peat smoke on the nose. Sweet malt, toasted oak and a fruity note (mostly oranges) come through as well. The whisky is moderately rich on the palate with sweet/tart flavor profile mixed with barrel spices. There's a more than average length to the bittersweet finish. Very easy to drink. Overall, taste wise you get more of the European and Japanese whiskies coming through than the North American ones. Overall, an intriguing whisky, which for the price, makes a good value.     This is a new expression for 2018, rather than a replacement for the discontinued Hibiki 17 year old, and based on an entirely new recipe (some x wine casks are included in the vatting). Scheduled for bars and restaurants across Japan, Blender's Choice comes with no age statement making it the third label under Hibiki’s growing portfolio of age-mystery whiskies (the others being Japanese Harmony and Japanese Harmony Master’s Select).

    Other reviews... Definitely a hearty oak base here, yet it manages to simultaneously remain quite light on the tongue. Sweet wine starts to peek through along with a bit of vanilla towards the end... A young, tingling spiciness takes us through more of that forest, but mizunara obviously has another appointment, since it all drops off a tad too quickly if you ask me. Very dry and leaves me reaching for my chaser. Oh it’s younger than 17 years and it shows. But that’s not necessarily a bad thing. Hibiki Blender’s Choice does take you along a decent progression of aromas and flavors, which frankly, is exactly what a blended whisky should be doing.     Considerable progress has been made by the Japanese in popularising their own whiskies which very often contain a large proportion of Scotch Malt whisky to enrich the flavour. Investment in the Japanese industry is large and major brands such as Suntory and Nikka have become very popular in their home market. We must say this has not been the case in Australia for one obvious reason: their prohibitive price in relation to the genuine article. This frustrating reality ensured we only ever sold one bottle of Japanese whisky for the many years that we stocked them – and that bottle was to a Japanese tourist! The situation is now changing and our latest shipment makes a range of these world class offerings more accessible than ever.

    Apart from Single Malts, Suntory also produce a premium series of blended whiskies under the label 'Hibiki' (meaning 'harmony'). However, the Hibiki 17 year old contains an unusually high proportion of Single Malt for a blend, upwards of 50% according to one of the company's blenders. Thirty different malts are employed from Suntory's three distilleries, most with an age well above 17 years. The Hibiki was recently awarded a Gold 'Editor's Choice' award from Whisky Magazine, picking up the top prize in its category at the World Whisky Awards in 2010.

    Tasting note: Bright gold. Fairly subdued showing hints of almond and dried grass. Great balance as this glides through the mouth with flavours of almonds, sweet cereals and cocoa followed by a light fruitiness towards the finish. A thread of peat through this? Being overly shy on the nose slightly detracts from what's otherwise a delicious whisky. 43% Alc./Vol.

    Shinjiro Torii, the founder of the Suntory company, was a pharmaceutical wholesaler importing liquor from the West before he was inspired to create a uniquely Japanese whisky. In 1923 he built the country's first malt whisky distillery (in fact, the first of its kind outside of Scotland) on a site in the Vale of Yamazaki outside Kyoto where pure water, a diverse climate and high humidity made it an ideal environment for whisky production and maturation. To complete the formula, Torii hired Masataka Taketsuru (of Nikka fame) who had studied the art of distilling in Scotland. In 1929, the company introduced Suntory Shirofuda (Japanese for white label), Japan's first genuine domestically produced whisky. Kakubin (square bottle), a premium Japanese whisky, was born in 1937. The whiskies have become more and more sophisticated over the decades, in particular the older bottlings under the Yamazaki label.

    Local malting of barley was abandoned in 1969 and today malted barley is bought from Scotland. A significant number of European oak x-Sherry casks (mainly oloroso) make up the maturation regime for this whisky; second come x-Bourbon American oak casks, then a small percentage (approx 5%) from the domestic Japanese oak species, 'Mizunara'. Japanese oak tends to impart spicier, sweeter and sometimes more tannic notes than the previous two. Experimentation continues with sandalwood and cedar as well as casks which have previously contained Japanese Plum wine.

    Other reviews... Deep, mature in nature, and very complex. Notes of polished leather, maple syrup, and dark pit fruit, with suggestions of tobacco smoke, wood shavings, and unsweetened chocolate. References to fine old bourbon and ultra-matured pot-still rum provide intrigue. Proof that Japan produces some outstanding, distinctive whiskies. Nicely done! 93 points - maltadvocate.com
