  All that's left of the Caroni Estate Distillery, a small piece of liquid Caribbean history.

   

  While the Caribbean has a long history of rum, a significant part of this history has been irretrievably lost.
  Trinidad once boasted more than 50 distilleries. The number dwindled to eight by the 1950s and now only Angostura remains. The decline was mostly due to the demise of the local sugar industry (Trinidad now imports molasses for rum production).

  This increasingly rare bottling represents a small part of that era.
  The Caroni Estate Distillery (est. 1918), closed in 2003 and is now sadly, demolished. It was built on the site of an old sugar factory and for a period supplied rums to the British Navy. At the time, there were some eight to ten other sugar factories operating, each producing different types (and qualities) of rums, bought up by merchants and sold to rum shops all over the island.

  Caroni gradually increased the quality of its distilling process, moving on from its original cast iron still to a wooden coffey still, until 1945 when they acquired a copper still which was followed by a single column in 1957 and then a four column Gerb Herman still in 1980. Rums from the estate gained a reputation for being particularly flavoursome.

  After the 2003 closure, some Caroni casks made their way back to the U.K. Berry Brothers & Rudd, the U.K.'s oldest wine merchant, secured a number of these for future release. We're pleased to be able to offer an allocation of what is unquestionably a true collector's and connoisseur's delight.
  Once these are gone, they're gone forever.

  Tasting note: Brilliant polished copper colour. Enticing opening scents of custard, sweet spices (nutmeg, cinnamon, vanilla) followed by banana cake and dilute golden syrup. Second pass finds caramel and milk chocolate with cut grass & subtle menthol-like notes retaining the freshness throughout. Follows on the palate with a semi sweet, silky delivery including roasted nuts, buttered raisin toast, light golden syrup and a gently tannic, fresh, grassy, cough lozenge accented finish. Outstanding. 46% Alc./Vol.

  Tasting note: Attractive bright polished copper. Issues a prickle in the first inhalations presenting aromas of jelly bean, mocha and muted brown sugar. Aeration yields more in the way of creme caramel and golden syrup with the peppery undertones remaining. Palate is slightly harsh and bittersweet but agreeably balanced by a late sweetness in the form of marzipan, dark chocolate and chico lolly into the fade. 54.5%Alc

  A new Aussie rum from the team at Black Gate, better known for their cracking single malts. This is produced from molasses in a traditional copper pot still, then matured for two years in a second fill 100 litre ex sherry cask. A final twist sees the rum finished in a 100 litre ex ginger beer cask, pushing this into spiced rum territory. 161 bottles on offer.

  Tasting note: Brilliant gold. Ideal clarity. Nosing finds an amalgam of golden syrup, ginger bread and green banana. Entry is hollow, subdued, understated. Builds to an intense, off-dry ginger beer attack that pretty much eclipses any trace of rum, excepting the spirit heat. Rounds out like a double barrel Dark'n'Stormy, which is essentially what this cask experiment is. Ginger beer defines the aftertaste. Great if that's the sort of thing you like, but the ginger will be over bearing for Rum purists. 51% Alc./Vol.

The distillery aims at using local grains and fruits for all of its products. The rum is double distilled in a direct fired copper pot still and made from fermented refinery molasses.

  Tasting note: Bright amber gold. Reveals intense aromas of caramel fudge, cornflake honey crackles and deep vanilla in the opening sniffs. Later inspection finds the bouquet shift towards golden syrup. Gently bittersweet and surprisingly sedate given the high abv with medium dry banana fritter, honey crackle and cocoa flavours.   For the fourth evolution of the Master Blender's Reserve, Oliver Chilton has looked to create a blend that is closer to the original Navy rum with a heavier mouth feel and rich notes of wood smoke, espresso and cacao. As always, he has put his own spin on the assemblage, this year including a rum from Grenada, distilled in 1993, to add depth and accentuate a rich orange oil notes from the Perpetual Reserve. As always, the blend begins with rum drawn from the previous year's Master Blender’s Reserve - this works in a similar way to a Solera, whereby one-third of a blend is held back for another year and blended again. In 2023, casks were selected from Trinidad, Barbados, Jamaica, Guyana and Grenada (see below for a comprehensive breakdown). Notably, a higher proportion from Guyana component was included, the thick liquorice and muscovado in this rum helps recreate the unique flavour profiles they exhibited over half a century ago.

 These five blends were then brought together and married with the Perpetual Reserve, as well as some of the original Navy Rum from 1970, keeping the liquid history alive. Chilton comments, "With a larger focus on older rums from Guyana and the addition of 30-year-old rum from Grenada, a real sense of maturity and status has developed. It is such a privilege to be able to keep back stock from each blend to mature on and use as the heart of the next iteration of Master Blender’s Reserve, reimagining a blending technique used for so many decades by the rum blenders of the Navy.” 54.5% Alc./Vol. Non chill filtered.

  Stepping away from whisky for a moment - possibly the only other wood-aged spirit capable of arousing the same passions comes from ‘the reed which brings forth honey’ (without the help of bees)– mainly because it’s capable of a similar dizzying complexity and diversity that whisky achieves.
  Here's one that comes with a strong "buy now", and for more than one reason.

  This is the fourth instalment from Elixir Distillers under the Black Tot label and marks the 50th Anniversary of the abolition of the Royal Navy's daily rum ration. To commemorate “Black Tot Day”, Head Blender, Oliver Chilton together with co-founder Sukhinder Singhhas created a limited edition Caribbean rum and bottled it at navy strength. It includes some incredibly old and genuinely rare stocks, noted marques for the (majority) Guyanese rums, including distillates from a wooden pot still to a multi-column still with age statements from 9 to 42 years. A splash of the original Royal Navy rum, continuously blended in wooden vats from the early 1800s through to 1970 has been thrown in for good measure.

  The vision wasn't to make a replica of the original navy rum or copy new Caribbean expressions, but to create something that sat in between. Also, Sukhinder prefers older and richer old-school navy style rums while Chilton likes fresher and funkier modern rum. They started with the four pillars of Royal Naval rum – the islands of Jamaica, Barbados, Guyana and Trinidad. Samples were then pulled from casks and rums were blended.
  

  Two thirds of the liquid went into glass – the rest went back into casks. This will be an ongoing project with a new rum each year, each starting from the previous year’s blend. But as much as we look forward to tasting those bottlings, deep down, the rum lover and collector in us knows this is the one to get (besides, it's not guaranteed you'll see the same proportions of now semi-mythical Caroni and Uitvlugt in later iterations). Flavour wise, it's streets away from industrial-scale saccharine rums. If you prefer 'adult' rums to 'drinkable' but overly-sweet and monotonous modern styles, this will be worth every cent. 5000 bottles are on offer globally. Get in before everyone else wakes up.

  Tasting note: Mahogany colour. Brooding depths to the layered nose: Molasses cake and liquorice strap. Plantain and drier vanillas. Fruit cake, cinnamon, nutmeg and bitter cocoa. The sugars are evenly matched against the funk and freshness. Unravels with stunning length as the alcohol pulsates the taste buds. Sweet and dry, old and new, wrangle together; liquorice strap meets grassier / fruitier notes. Raisin cake meets bitter dark chocolate. Rancio and resiny oak give an hors d'age Armagnac feel to the finish, followed by walnut slice, dried banana, cinnamon and ginger bread. Rebounds with mocha, dried fruits (raisin / date) and brandy cream sauce and lasts for minutes. A contemporary rum with an old soul that demonstrates Chilton and his blending team are at the top of their game. 54.5% Alc./Vol. Non chill filtered. Zero sugar added. 5000 bottles.

  Official tasting notes... Nose : We are greeted with cinnamon sticks, sprinkled with nutmeg, toasting in the oven. Then a deep richness, akin to caramel-glazed apple tart, with some citrus elements rolling in. There is also barbecued pineapple and grapefruit zest, balanced by notes of melting chocolate raisins and freshly ground Jamaican blue mountain coffee. With more time, a hint of well-aged spirit emerges, reminiscent of dusty books in a historic library. Palate : From the first sip, the palate is almost overrun with the combination of liquorice sticks and vanilla bean paste. As the flavours coat the mouth, lime juice married with 80% cocoa dark chocolate appears, which slowly deepens to brandy-poached pears. A backbone of dried mint and tarragon is married with natural sweetness and a touch of nuttiness, in the form of bananas and walnuts. Finish : Long and lingering, with flavours of mint chocolate chip ice cream and soft liquorice, dipped in sherbet. The rich flavours of a whole-milk latte topped with cream dissipate to leave a pleasant dryness, leading to another sip.

  On Friday 31st July 1970, serving seamen of the Royal Navy mustered one last time for the daily issue of rum, a tradition that had begun nearly 240 years earlier in 1731. Nearly fifty years after the end of the Royal Navy rum ration, independent bottlers, 'Elixir Distillers' have launched Black Tot 40 Year Old, a fitting follow up to the original "Last Consignment".

  Produced in 1975 using the world's only operational Wooden Double pot still, the Port Mourant, a total of six casks were filled resulting in just 606 bottles at 44.2% ABV. Indicative of the molasses based rums that would have been at the heart of the original Naval blend, it is a 100% Demerara style and comes beautifully packaged in a lacquered black box and an impressive heavy set, wax dipped, gold-etched bottle. We have two only available. This exceptionally old, undiluted, all natural expression is the result of incredible spirit, high quality casks and time alone. It will be the jewel in the crown of any collector or enthusiast.

  Oliver Chilton, manager of Elixir Distillers, creators of the Black Tot rum brand, explains, "Guyana has long been famed for creating 100% demerara rum but for us to acquire casks holding such old liquid from the island is now very rare. Our first Black Tot bottling back in 2011 featured the last of the actual rum served by the British Navy up until 31st July 1970, which was made in a solera system that had been in continuous use for around 50 years. And so the next chapter of the Black Tot story is a unique 40 year old demerara rum paying homage to a unique naval tradition."

  Notes from the producer... NOSE: Dense liquorice, star anise and fruity black olives roll out of the glass, accompanied by heady cigar smoke and fragrant pine. Warm and ripe citrus fruit – orange and lemon flesh and peel – blends with spicy cinnamon and nutmeg. PALATE: Thick dark treacle and olive brine mix with cherry concentrate and charred oak. The texture is rich and heavy, enveloping your mouth and exploding with intense flavour. More smoke comes through on the palate, mixing with the flavours of plump sultanas, bittersweet raisins and juicy blackcurrants. Notes of liquorice and five spice intertwine with the fruit and smoke. FINISH: The balance between sweet and savoury is extraordinary and keeps developing on the palate, creating a finish that lasts for an age. 44.2% Alc./Vol.

  315 Years of British Naval History

  On July 31st 1970 a 300 year-old Royal Naval tradition ended at precisely 6 bells in the forenoon watch (11am) when the last rum ration was issued aboard ships of the Royal Navy - a day to be forever remembered as Black Tot Day.

  With the withdrawal of the rum ration, the Royal Navy had little use for the remaining rum stocks which were filled into wicker clad stone flagons and transferred to HM bonded warehouses where it remained undisturbed, being only broached for use on State Occasions and Royal Weddings until now.

  The precise makeup or age of the rum cannot be specified but records support that it was probably distilled in the 1950’s and was imported from the West Indies. Nevertheless, a slice of history is up for grabs, the likes of which we couldn't imagine ever being seen again!

  Tasting note: Pours a deep copper/mahogany colour with some minor sediment evident. Perfumed aromatics exude layers of molasses, brown sugar, liquorice all sorts and new leather. Entry is semi sweet and soft, building with exceptional concentration. Mid palate is off dry with a momentary burst of date and raisin, becoming dry, spicy and fruit cake like. Stunning length as the flavours repeat in waves. Finish is progressively drier as delicate, powdery tannins enter. Impeccable balance. Concludes super fine and dry with notes of charry oak, sarsaparilla and cigar box. The persistence of flavour is nothing short of remarkable as the aftertaste reverberates in the mouth for ten minutes plus. An exhilarating rum experience. 54.3% Alc./Vol.

  The Nose - Initial treacle notes precede dark chocolate with super-ripe black fruits, muscovado sugar and walnuts. A drop of water releases notes of black banana, liquorice root, tamarind paste with and exotic edge of balsamic.

  Notes on Black Tot Master Blender's Reserve...

  While comparisons with the inaugural release are inevitable, the Master Blender's Reserve is not simply a slightly older version of last year's 50th Anniversary rum, but a different composition altogether. Different countries, still types and ages have contributed with Head Blender, Oliver Chilton opting for a 'fruitier' expression. It also celebrates the 100th Anniversary of the last rum ration given to the Australian Navy after separating from the Royal Navy, although Australians serving on British ships could still receive rum - in 1921 this was also forbidden. Adding substance to the sentiment, 6.7% of the blend is from Beenleigh Distillery (ten years aged in Queensland and four years continentally). At its heart is the 'perpetual' base spirit (14% of last year’s 50th Anniversary release), re-casked into ex-sherry butts and blended with rums between 9 and 24 years old from Guyana, Barbados, Trinidad, Jamaica. These make up the majority of the blend. 6000 bottles are available globally, however Australia's allocation will be closer to several hundred.   Bristol Spirits Limited specialise in seeking out small parcels of Caribbean's finest rums including single barrels, single estate or even a single still to show rum in its true unblended form. Ageing takes place at the distillery and/or in the UK. Minimum filtration allows the natural characteristics of each rum to shine.

  Rum and the sea are inseparable, and no rum is more akin to the sea and the seaman than is British Navy Pusser’s Rum. For more than 300 years, sailors of Great Britain’s Royal Navy were issued a daily ration of rum by the Purser (corrupted to 'Pusser' by the Jack Tars). From 1655 until the traditions termination on August 1st 1970, 'Pusser’s Rum' was one of the few daily comforts afforded those early seamen of Britain's Navy as they fought across the globe to keep the Empire intact and its sea lanes open. British Navy Pusser’s Rum is the same blend of six West Indian rums as discovered during the Navy’s expeditions and served on board Their Majesties’ ships for three centuries. Today, it is still blended in accordance with the Admiralty’s exacting specifications of 1810.   In 1742, Deptford Dockyard was the Royal Navy Victualling Board’s main spirit depot; housing 30 storage vats that accommodated and aged more than 250,000 gallons of rum. From here, they supplied the Fleet with a flavourful blend of ‘Empire’ rums from British Navy suppliers in the Caribbean. While little is known about early Admiralty specifications, the blend was done “in such proportion as experience had shown was preferred by the men.”

  As is now popular rum folklore, the final daily rum ration was served on 31 July 1970 at 6 bells in the forenoon watch (11am), ending a Royal Navy tradition of more than 300 years. Some sailors wore black armbands, tots were 'buried at sea' and in one navy training camp there was a mock funeral procession complete with black coffin and accompanying drummers and piper.

  To commemorate the 52nd anniversary of Black Tot Day, as it became known, Pusser’s have introduced a limited-edition Deptford Dockyard Reserve at Navy proof, featuring a blend of high-ester distillates from Caribbean countries in Great Britain’s naval past (Guyana [Demerara], Trinidad, Barbados and Jamaica). Offered at the same strength that bulk underproof rum was historically stored at the Dockyards, the hefty ABV is intimidating until you taste it. Aged for a minimum of three years in x-Bourbon barrels but tasting much, much older, Deptford Dockyard is a medium-bodied rum, shy on the nose while boasting beautifully integrated flavours of Christmas cake, orange zest and festive spices that draw comparisons to heavily sherried single malt. Its restrained power dials down with liquorice bullets, chico lollies, cinnamon buns, brandy sauce and lingering molasses cake.   Matured for three years in first-fill Bourbon barrels and released at an eye-watering strength - as it was traditionally shipped to the Royal Navy victualling yards in Deptford, Gosport, and Devonport for blending and dilution. At Trafalgar on October 21st, 1805, although outnumbered, he defeated the combined navies of Spain and France. In this fierce battle that would determine who ruled the waves for the century that followed, Nelson sank or captured 19 of the enemy while losing not a single British ship. Unfortunately, at the age of 47, he was mortally wounded and died three hours before the end of the battle with the knowledge that victory was his. For the journey home, his body was carried on board HMS VICTORY, his flagship. Legend has it that to preserve it during the long voyage, they placed him in a large cask of Pusser's Rum. Upon arrival in England, it was discovered that the jack tars (sailors) had drilled a small hole at the base of the cask and drank all the rum - thereby drinking of Nelson's Blood. This term is still widely used today by Navy and history buffs as their alternative name for Pusser's Rum.

  Pusser's, 'the single malt of rum', has recently added a magnificent 'Yachting Decanter' to its popular range of rum-filled ceramics, paying tribute to a magnificent sport which had its beginnings in the 1600’s. Many consider that the first recorded yacht race took place under King Charles II on September 6, 1662 out of Greenwich, England. Since then, modern yachts and rigs have evolved from the heavier, cumbersome vessels of those early days to the sleek, greyhounds of the seas of today.
  
  The major design around the base of the decanter depicts most all of the modern rigs that are sailing today, [see below] including the popular one-design classes. The original art was commissioned by Pusser’s and painted by A. D. Blake of New Zealand, recognized as one of the world’s foremost marine artists.
  
  On the decanter’s shoulder are the names of the current world’s most prestigious yacht races: The America’s Cup, the Transpac, the Volvo Ocean Race, Fastnet, Vendée Globe, Chicago-Mackinac, the Bermuda Race, the Admiral’s Cup and the Sydney to Hobart. Three smaller cameos also adorn the shoulder: Captain Joshua Slocum's 'Spray', Captain Slocum was the first man to sail alone around the world from 1895-1898; the Schooner 'America', winner of the first America's Cup Race on August 22, 1851; the 'Jolie Brise', winner of the first Fastnet Race in 1925.
  
  The large, hand-cast ceramic stopper has a countersunk center with a colorful Pusser's Navy Rum life ring logo. Its facing edges are trimmed in gold, and frame the flag signal for 'Splice the Main Brace!' The Killick's fouled anchor, the official anchor of the Royal Navy, is repeated in gold on the decanter's neck.

For more than 300 years, from the earliest days of wooden ships and iron men, sailors of Great Britain's Royal Navy were issued a daily ration–or "tot"–of rum by the ship's "Purser" (corrupted by the sailors to Pusser's). Prior to 1740, the men's daily tot of Pusser's Rum was a pint a day, which they drank neat, that is without water! Before battle, they were issued a double 'tot', and always after victory for a job well done! From 1655 to the 19th century, Pusser's Rum was one of the few daily comforts afforded those early seamen of Britain's Navy as they fought around the globe to keep the Empire intact and its sea lanes open. It was not until July 31st, 1970 that the Admiralty Board abolished the daily issue of Pusser's Rum. "Times had changed", they said as they concluded that "in a highly sophisticated navy no risk for margin or error which might be attributable to rum could be allowed". And so it was that the daily issue of Pusser's Rum, which had stood the test of time as the Navy's longest serving tradition for over 300 years, was cast aside like a piece of flotsam and jetsam where it lay quietly until 1979. In 1979, Charles Tobias–entrepreneur, global sailor, raconteur–sought to resurrect the Pusser's Rum tradition. He obtained the rights and all the blending information from the Admiralty, and formed Pusser's Ltd. on Tortola in the British Virgin Islands and began bottling and selling this storied spirit in 1980 to the public for the first time. (Prior to then, it was restricted to the Royal Navy). British Navy Pusser's Rum is the same Admiralty blend of five West Indian rums as issued on board British warships, and it is with the Admiralty's blessing and approval that Pusser's is now available to the consumer.

  Today's Pusser's Rum, known as "the single malt of rum" is still produced in exact accordance with the Admiralty's specifications for rum. Unlike most rums, Pusser's uses no flavoring agents. It is 100% natural. In 2001, Pusser's was awarded the "Gold Medal - World's Premier Dark Rum" at the International Wine & Spirits Festival. In 2003, Pusser's Rum won a "Double Gold Medal" at the San Francisco World Spirits Competition and a Gold Medal at the same festival in 2005.

  This special hand cast porcelain ships decanter is laden with the imagery and symbolism of the Royal Navy. Reproduced in detail, the decanters decorative feautures include: The Admiral Lord Nelson Cameo, The Royal Navy Traditional Toasts Cameo, The Rule Britannia Cameo, the Seven Seas Cameo around the base – even the stopper bears designs and insignas which will be familiar to any navy enthusiast. The Traditional Royal Navy Toasts Cameo can be found on the back of the decanter – (In the early days, up until about 1900, the officers also received rum. In the Ward Room of the Officers Quarters, the daily dinner ritual (at noon) was to toast the reigning monarch, which was then followed by the toast of the day. This ritual is still in effect.)   A note on Ships Decanters…Ships decanters had their beginnings in the early naval sailing ships of the Royal Navy, and it would have been an exception to have found a captain's cabin without one- from the smallest to the largest vessel. The general shape began to develop sometime in the second half of the 18th century, and nothing much is heard of them until a well known British Admiral by the name of Rodney introduced one at a victory celebration on board his flagship following the famous Moonlight Battle and the Battle of the Saints in 1780 and 1782. His decanters had an especially broad base, some of them up to 12-inches in diameter, to ensure stability when used at sea in wardrooms or officers' cabins. It's said that the true test of a ship's decanter is when the shortest distance from the outer edge of the pouring lip to the edge of the base be equal to or greater than the outer circumference of the pouring lip.   "Released 22nd May 2006, was Limited to 5142 bottles, but rum was running low at the 4800 bottle mark and production numbers didn't actually reach 5124. The highest known number to exist is currently 4870, it is believed that only 4890 were produced. This is the oldest rum that the B.D.C has ever released to the public. It is a blend of rums aged between 18 & 22 years in 15 different small oak barrels. The oldest rum used was laid down on August 11th 1984 and the youngest was laid down on September 17th 1987. Shaun Barry was the man in charge of blending the rums. Each bottle is numbered and has the signature of Master Distiller "Kevin Gott" printed on it. Each bottle was sold with a display box and COA."

  Using the ingenuity that Aussies are famous for, the Bundaberg distilling team have created an incredibly smooth rum, using a unique red gum filtration process. The rum goes through a similar double distillation and aging process as standard Bundy UP, but then goes through three separate filtration processes which create an incredibly smooth profile. This process removes some of the stronger flavour compounds which exist in the regular Bundaberg UP, and allows some of the more subtle flavours to shine through.

Released in 1988, the 1888-1988 Bundaberg Rum Centenary Rum Decanter was selected and matured to celebrate 100 years of Bundy. The rum is reportedly a five year old from Vat 100 - the same vat that produced the 1985 Bundaberg Black. The dovetailed timber chest was manufactured in the United States.

  The brain-fruit of Bundy's noble Master Distillers' Collective, ''Dark Oak'' was inspired by local barrel-baron Dave Schmeider, who handcrafted the original oak barrels used to create this rum. To honour the humble cooper, our master craftsmen filled heavily charred American Oak barrels with some of their richest and most delicious rum reserves.

  According to a report in the News Mail, it's been as eagerly anticipated as any release. One Rum lover, "Benjamin Nutley was determined to be the first person to get his hands on the Bundaberg Distilling Company's latest limited edition.

  Mr Nutley, 21, said he and three other Bundy locals were camping outside the Bundaberg Rum Bondstore for 25 days to secure their place at the front of the line.

  "I just really love my Bundy Rum," he said.

  Mr Nutley arrived on Wednesday and said it was his fifth time camping out for a rum launch.

  "We have people on call to bring us out food in return for one of the bottles," he said.

  Armed with monopoly, puzzles and cards he has plenty of entertainment.

  But Mr Nutley said he won't be drinking his bottle. "I've already collected seven so this will be number eight, " he said.

  Bundaberg Distilling Company Bondstore branch manager Haydn Jobson said rum fans were sure to enjoy the Barrel House's latest creation. "Dark Oak will be the fourth limited edition bottle to be released from the Bundaberg Master Distillers Collective," he said.
