This wine commemorates Bouvet's 150th anniversary in the Loire Valley wine trade with a special release produced from 100% Chardonnay. Pours with a white frothy mousse that dissipates relatively quickly to reveal a pale straw coloured base wine with pale gold edges. Very fine bead showing excellent persistence. Nosing reveals aromas of pears and subtle baked apple characters overlaid by toast with yeast lees and quince also evident. Fresh and vibrant the palate is filled with pear and baked apple characters followed by some toast and yeast lees. Clean dry finish with an aftertaste of pears, baked apples and yeast lees.

Excellent white creamy mousse with a pale straw pale gold edged base wine. Exceptionally fine bead showing excellent persistence. On the nose baked bread and toast top notes are followed by some subtle pear and citrus aromas. This is the driest of the Bouvet collection and also the most Champagne like delivering flavours of pear and citrus overlaid by yeast lees and some toast. Dry finish with moderately creamy texture. Good length with aftertaste of pear, yeast lees and baked bread.

After many years of ownership by Champagne Taittinger, Bouvet Ladubay is once again fully owned by the Monmousseau family who have continuously run the business since their purchase in 1932. Bouvet Ladubay employs precisely the same wine making process as Grand Marque Champagne, delivering French sophistication at an everyday price. The grapes for the Bouvet 'Blanc' Methode Traditionnelle are Chenin Blanc, which had been grown in the Loire Valley prior to the Roman conquest of France. Bouvet source their grapes from 120 properties around Saumur - spread over an area of 15 x 30 kilometres. The notion of using such a diversity of vineyard sites is to provide complexity to the base wines. Domaine Chandon in the Yarra Valley employ a similar process. These 120 micro climates each provide the blender with base material that when blended together will create the sensation of considerable complexity. The art of blending is critical and at Bouvet the third generation of blenders from the same family are in charge - in fact they have been creating the blend for the last 60 years.Tasting Note….

The Instinct Cuvee du Millenaire was created by Bouvet in 2000 as the pinnacle of their Sparkling wines. A very fine lacy white mousse showing good buoyancy, sits over a base that’s pale straw in colour with pale gold edges. Very fine and persistent bead. The nose shows a little more richness than the other Bouvets due to its extended bottle age with aromas of pear and brioche combining over yeast lees, oily toast like characteristics and bready citrus end notes. Fuller and richer in the mouth the palate has a Champagne like flavour profile of baked bread, oily toast like characters and citrus with lightly roasted almond and brioche nuances following on. The mouthfeel shows great refinement and good tension with a dry mouth watering finish. Excellent persistence with a long creamy aftertaste of baked bread, light cashew, citrus, yeast lees and faint brioche.

If you are looking for a quiet storm of a Tasmanian sparkling, Bream Creek, east of Hobart, will fill that desire. A blend of Pinot Noir and Chardonnay, the Cuvée Traditionelle typically spends at least 5 years on lees before disgorging and will continue to age in bottle for several years from its release and the 2014 does not deviate from the quality I have come to expect from them.
A rich and buttery brioche, honeycomb, lemon curd, peach blossom and vanilla yoghurt on the nose, the freshness of youth is evident amongst the autolytic characteristics but on the palate, its youth is truly revealed. Crisp green apples, oyster shells, white nectarines, fresh lemon zest all find their way to the front with those toasty notes taking a back seat. Pure elegance with a clean and lean lingering finish, this is a stylish sparkling wine to either drink now or cellar for up to a decade. Drink 2020-2030.

The 2017 Blanc de Noirs Les Ursules is superb, mingling aromas of pear, mandarin and stone fruit with hints of fresh bread, pastry cream and iodine in an inviting mélange. Full-bodied, layered and fleshy, it's a concentrated, chiseled Ursules that's built for the cellar, with racy acids and a long, penetrating finish. While the reputation of the 2017 vintage in Champagne isn't great, you wouldn't know that from tasting this brilliant cuvée. As readers will remember, Les Ursules was the vineyard with which Cédric Bouchard began Roses de Jeanne, and he notes that of all the wines in his range, it's always the highest in acidity, the slowest to ferment and the slowest to conclude its malolactic fermentation. This offers a discrete but complex array of scents with fleeting aromas of Japanese yuzu and lemon verbena, even a hint of rosewater in the background. The palate is beautifully balanced with unerring harmony; it’s not intense, yet elegant with just the right amount of bitterness on the finish to keep you on your toes. Derived from a 73-acre, southwesterly exposed site that's one of Bouchard's highest-altitude parcels, the 2013 Blanc de Noirs Côte de Béchalin wafts from the glass with a deep bouquet of citrus oil, mandarin, beeswax, white flowers, apricot and apple. Medium to full-bodied, racy and concentrated, it's vinous and tightly wound, with a bright spine and a long, chalky and aromatic finish. The 2013 is finer-boned and more incisive than its more muscular 2012 counterpart, and it displays some exotic aromatic top notes that reflect the late growing season. Bouchard recalls that he began picking on September 26, 2013, and finished in October, just before the rain set in.

Candied lemon peel, almond, mint, sage and baked apple tart are some of the many notes that open in the glass. There is a sense of energy to the 2013 that is so beguiling. Medium to full-bodied, textural and enveloping, it's one of the most gourmand, generous renditions of Val Vilaine to date, yet it remains beautifully precise and vibrant—even racy. It will be hard to resist young, but I suspect it will also evolve very gracefully in the cellar. As usual, while this is officially a "non-vintage" cuvée, the code "L18" on the label designates the year from which it is entirely derived.

As readers will remember, this series is from a 0.11-hectare south-facing plot planted with five different massal selections of Chardonnay.

Time in the glass brings out hints of passion fruit and white flowers. Bright and energetic, with terrific focus, the Haute Lemblé is also a bit more open-knit in the early going than it can be. A mélange of crushed rocks, mint, white pepper, smoke and citrus infuses the 2015 with crystalline intensity. The purity of the Chardonnay fruit is just remarkable. All of the elements build to a heady crescendo of aromas, flavors and textures. Racy and explosive, the 2015 Haute Lemblé dazzles from the very first taste. Medium to full-bodied, enveloping but incisive, it's built around a bright spine of acidity and a concentrated core of ripe but beautifully vibrant fruit. The 2017 is a bit racier but also a touch less concentrated than the 2016 rendition, a wine that would get my nod as the best Val Vilaine to date.

Beautifully resonant and inviting, the 2017 is so gorgeous. Pear, baked apple, dried flowers, mint and spice all build as the 2017 opens up in the glass. More than anything else, the 2017 impresses with its poise and raciness. The slightly reductive character found in some previous releases is not present in the 2017, and that really lets the purity of the fruit shine through. Bouchard does not push this site to the degree he does most of his other vineyards, so the Val Vilaine doesn’t quite offer the complexity of the top wines here, but words really can’t do justice to just how delicious the 2017 is. Moreover, the Val Vilaine is a terrific introduction to Cédric Bouchard and his wines, especially for readers who can't find some of the more smaller-production cuvées. Non-dosé. The 2011 is already beginning to show tropical overtones and other notes that indicate it is close to peaking. For that reason, I would prefer to drink it sooner rather than later. Non-dosé. The poor prices offered to growers in those days by the "grande maisons" were such that it only made sense for growers to follow a move initiated in 1911 during the revolts of Champagne, and attempt to carve their own piece of the market.
The originality of the Chaines dÈtoiles Brut Reserve resides in a higher proportion of Pinot Meunier that accounts for 50% of the varietals in this Champagne, Chardonnay being 35% and 15% of Pinot Noir. The Meunier contributes greatly to the uplifted aromatics while the Chardonnay and Pinot Noir lend freshness and structure to the blend. Aged in bottle for an average of 3 years, this lands at a remarkable price point for quality Champagne into Australia.Pours with a white creamy mousse that shows good hold. Pale gold base wine colour with exceptionally fine and persistent bead. Superb classic Champagne sniff revealing notes of baked bread, yeast lees and toast followed by some almond end notes. Full flavoured and quite rich the palate delivers mouthfilling flavours of yeast lees, toast, baked bread and brioche with the toasty yeast like characters persisting onto the back palate. Almost creamy like texture with clean crisp dry finish. Excellent depth with long toasty, yeast lees and baked bread aftertaste.

Light and airy but also very zesty across the palate, blood orange, tangerine and ruby grapefruit flavours have a fruit tingle like feel. Finishes very dry, slightly tart and crisp with some lemon sherbet and chalky mineral characters also present. Zingy and highly refreshing aftertaste.

Yes, I marvelled at the continuing availability of this wine in last year’s Top 100, changing to disbelief this year. Yet there aren’t any tricks other than the perpetual youth of the wine, not released until 2010. It has a stunningly complex, gloriously rich, almost unctuous, mid-palate, yet steps up a gear with the twist of citrus peel on the finish before the lingering aftertaste takes you back over all that has gone before. If you question the perpetual youth of the wine, try to find the Blanc des Millenairs 1983, released after 30 years’ maturation.

James Halliday - Top 100The 1995 Brut Blanc des Millenaires shows just how compelling this often overlooked vintage can be. Layers of lemon, pastry spices, crushed rocks and savory herbs literally jump from the glass in this exquisite, perfumed, beautifully delineated Champagne. The 1995 shows lovely flavor complexity and nuance from its extended time in bottle, yet it also retains plenty of freshness, verve and acidity. This is a great showing from Charles Heidsieck. The 1995 was made before the tenure of the house's current team, headed by CEO Cécile Bonnefond. It will be very interesting to see what develops at this historic property over the coming years.

Apart from both buying and growing premium Chardonnay, Pinot Noir & Pinot Meunier fruit, Moutard's fascinating range employs the lesser known Champagne varietals, Arbanne, Petit Meslier and Pinot Blanc. While these varieties are permitted and were once largely planted around Aube, they're now rarely encountered in Champagne (less than .05% of total plantings), having fallen out of favour due to their sensitivity to frost, amongst other factors. Tasting Notes: An impressive N/V. Excellent creamy mousse with very fine bead, showing very good persistence. Straw colour base wine. Aroma of biscuit and yeast lees – just a touch restrained at first. The Champagne follows through to a generous full bodied creamy palate with nuances of biscuit, winter strawberry and just a touch of citrus on the back palate. Clean finish. Long biscuit aftertaste. Extremely limited quantities.

Ninety percent of the fruit comes from the Whitlands vineyard with an elevation of 850 meters and red soil, contributing to tight acidity and purity of fruit. Mouth watering flavours of pear, yeast lees and citrus are delivered with ample concentration over a back drop of brioche, subtle cashew and chalky mineral elements. Gently creamed mouth feel with a dry, crisp and lengthy finish.

Aromas of pear and baked apple mingle with toasted bread, yeast lees and citrus. Crisp and racy the palate has a refined flavour profile of pear, baked bread and yeast lees over roasted almonds. Finishes dry with a twist of citrus and a faintly creamed but otherwise sculptured aftertaste.

Elevated scents of baked bread and yeast lees combine with hints of pear over light citrus infusions and a subtle toastiness. Fresh and creamy in texture the palate features mouth watering flavours of baked bread, yeast lees and citrus followed by some cashew and a faint hint of toasted honey on the crisp dry finish. Aftertaste of yeast lees, bready characters, roasted nuts, traces of dried honey and citrus. An excellent Chandon that has a rich yeast lees character.

This hits quality right on the buzzer. Lemon pie, stone fruit, baked apples, fennel and spice, a yeasty-creaminess adding yet more texture and interest. It dazzles mostly with its freshness but there’s substance to back it up. Very good fizz.

Finishes dry with vibrant acidity and an aftertaste of citrus, pear, yeast lees, sherbet and traces of cashew.

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.
The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
