2012 Bouvet-Ladubay Instinct Cuvee du Millenaire

The Instinct Cuvee du Millenaire was created by Bouvet in 2000 as the pinnacle of their Sparkling wines. Produced from Chenin Blanc and Chardonnay grapes it displays a fine plentiful mousse that shows good hold. Light straw colour with pale gold edges and an exceptionally fine and persistent bead. A lifted bouquet reveals aromas of pear, subtle quince and toast followed by some yeasty baked bread and spicy cashew notes. Rich yet vibrant and fresh the palate features mouth watering flavours of pears, citrus and toast over some oily baked bread characters and yeast lees. There’s a feeling of creaminess to the mid palate finishing dry and crisp. Excellent persistence with a long aftertaste of pears, citrus, baked bread, subtle toast and yeast lees.
Drink over the next 4-5 years.
