Enjoyed as an aperitif wine and popularised as a key ingredient in cocktails like the "Bellini" and the "Spritz", Italian Prosecco offers an aromatic, crisp and affordable sparkling wine experience. Its subtle flavours of pear, white peach, and honeycomb are best appreciated in the wine's youth. Styles can be spumante ("sparkling"), frizzante ("semi-sparkling"), or tranquillo ("still"), depending on the perlage.

Nine provinces spanning Italy's Veneto and Friuli Venezia Giulia regions produce Prosecco using grape varieties like Glera (primarily), Verdiso, Bianchetta Trevigiana, Perera, Chardonnay, Pinot Bianco, Pinot Grigio and others besides.

Prosecco Superiore DOCG comes in two varieties: Prosecco Conegliano Valdobbiadene Superiore DOCG, which can only be made in the Treviso province of Veneto on the hills between the towns of Conegliano and Valdobbiadene (north of Treviso), and the smaller Asolo Prosecco Superiore DOCG, produced near the town of Asolo. Prosecco from these regions can be made Methode Champenoise (i.e. as Champagne is). The rest is made in the “charmat” method, AKA the “tank method", a simpler, faster process so named after its inventor: The still wine is run into a sealed tank, given its dose of yeasts and yeast food, and when fermentation is partly complete, the wine is run into strong bottles under pressure.
