Established by Salvatore Pala in 1950, today, sixty years later Mario Pala represents the third generation of the family to run this famous estate. The winery is located in Serdiana, a small town some 20km from Cagliari, the capital of Sardinia and specialises in Vermentino and Cannonau.
Brilliant very pale straw colour with greenish tinged edges and a watery hue. Lime and spicy green apple aromas jump out of the glass with notions of pear, fresh herbs and wet slate also apparent. Scrumptious pear, lime and red apple fruits are delivered with terrific intensity and textural volume in the mouth. Infusions of spicy fresh herbs and wet stone lie underneath. Finishes dry with crisp acidity and a long super delicious aftertaste. A fantastic example of Vermentino.

Brilliant pale straw coloured core with highlights of green around the outskirts and a watery hue. Attractively scented and quite expressive, the nose offers up white peach, dried honey and subtle cashew aromas followed by some biscuity nougat and spice notes. Rich and beautifully shaped in the mouth, fleshy white peach, ripe nectarine and dried honey flavours overlay a delicate cashew, biscuity nougat and spicy crème brulee back drop. Good underlying freshness finishing long, deeply flavoured and creamy textured. Outstanding value at just $20.

L'Oree Delys is a vineyard located in the commune of Milly, with the vines planted in 1938. The plot is north facing, situated next to the premier cru vineyard of Les Lys. Pascal uses only indigenous yeast for fermentation, and vinifies this wine with 50% in stainless steel vats and 50% old neutral oak.

From vines planted in 1938 not far from premier cru Les Lys, the 2020 Chablis Vieilles Vignes L'Orée Délys reveals attractive aromas of citrus zest, honeycomb, white flowers and pear, followed by a medium to full-bodied, satiny and incisive palate that's pure, fleshy and precise. This is a strong effort from Robin. Drink 2022 - 2030.

Delicate pear and citrus aromas mix with dried nut and saline like notes. Pear and citrus fruits carry nice shape across the front half of the palate with wet stone, subtle dried nut and saline elements the back drop. Finishes very dry with brisk acidity and an elegant, savoury aftertaste.

Bougros, along with Les Preuses, was a later addition to the grand cru vineyards, and sits towards the northern end of the limestone-rich Kimmeridgian soil slopes. Lower down the hill, Bougros gets good sun exposure and while it can show more power and richness than some other grand cru sites, it still maintains an intense mineral core.

Les Preuses is an excellent plot within the grand cru Chablis vineyards, situated at the northern end higher up the slope from Bougros. Excellent access to sunlight, along with the limestone bedrock below the vineyard, allows the wines from Les Preuses to balance richness with exquisite finesse.

An elegant, pure and quite airy nose freely reveals its combination of white flowers, essence of poached pear, anise, mineral reduction and shellfish. The delicious and more refined if less powerful flavors possess a Zen-like sense of harmony on the mineral-driven, balanced and beautifully long finale. This will need to develop more depth with time in bottle but that is one of the strong points of a fine Preuses - it almost always develops well. Drink 2030+.

The 2020 Chablis Les Preuses Grand Cru is a little more expressive and delineated on the nose compared to the Les Clos at this stage, offering yellow plums mixed with light spicy scents and a touch of smoke. The palate is well balanced, wonderfully defined and powerful, but much more elegant than the Les Clos, with a gorgeous apricot-tinged finish and a peppery aftertaste. Superb. Drink 2025-2045.

There is again very good volume to the sappy and powerful larger-scaled flavors that terminate in a lemony, austere and highly persistent finish that isn't quite as complex, at least not yet. The 2020 Chablis Les Clos Grand Cru is very reduced on the nose, although there seems to be good concentration here and Piuze commented that this is nothing unusual. The palate is well balanced, quite primal, rich and slightly honeyed, leading to a powerful finish where I am just seeking a little more delineation. Let’s see how this turns out in bottle. Drink 2024-2040.

There is less concentration but more refinement to the utterly delicious middle weight flavors that are also supported by lemon-tinged acidity on the very dry, focused and lingering finale that is youthfully austere. Here too at least some patience is advised. Drink 2027+.

The 2020 Chablis Les Butteaux 1er Cru had received a bit of SO2 a couple of days before my visit. For that reason, it is a little muted on the nose, opening gradually to reveal yellow flower scents. The well-balanced palate offers grapefruit and melon notes, a fine bead of acidity and good weight on the finish. It does need to cohere in the glass, but this has good potential. Drink 2023-2035.

The rich and even fuller-bodied flavors brim with dry extract that imparts a sappy texture to the citrusy, clean and very dry finale. This delicious and refreshing effort will need to add better depth to achieve the upper end of my predicted ranged. Drink 2027+.

The intense palate is very well balanced and powerful. Quite fruit-driven and rounded toward the finish, so I suspect this will drink earlier than Piuze’s other cuvées. Delicious. Drink 2023-2033.
