2020 Pascal Bouchard Beauroy Chablis Premier Cru

Certified organic and biodynamic with fermentation taking place in mix of stainless steel (75%) and oak barrels (25%). Maturation takes place in the same vessels on lees for a period of 10 months. Brilliant pale straw to straw colour with a subtle glimmer of green around the edges and a watery hue. Delightful scents of pear, lime and dried honey are overlaid with a mix of oyster shell, wet stone and gun flint notes. Rich pear, lime and subtle dried honey flavours are wonderfully rounded in their feel with wet stone, oyster shell and flinty mineral elements lying underneath. Finishes dry with brisk acidity and a long flinty aftertaste.
Drink over the next 4-5 years.
