    Chateau Mouton Rothschild holds a unique place in the history of Bordeaux, being the only property to have its ranking changed since the introduction of the 1855 Classification. Originally listed as a Second Growth, through the tireless efforts of Baron Philippe Rothschild to make a wine he truly believed could match the best in the world, the property was upgraded to First Growth in June 1973. Known as the most flamboyant of the First Growth wines, Mouton Rothschild shows the rich and exotic side of Pauillac. Plantings on the 75 hectare property are a mix of 80% Cabernet Sauvignon, 16% Merlot, 3% Cabernet Franc, and 1% Petit Verdot.

    A blend of 98% Cabernet Sauvignon and 2% Merlot, the 2025 Mouton Rothschild is a dense, powerful wine, unwinding in the glass with aromas of crème de cassis, blueberries, espresso roast, cigar wrapper and violet. Full-bodied, deep and dense, it's rich, layered and concentrated, with prodigious mid-palate presence and a long, youthfully structured finish. Small berries in Cabernet Sauvignon, below one gram even in the older vines, explain this Mouton's remarkable intensity of flavor. The grand vin represents 52% of the production and checks in at 13.1% alcohol.

    The 2025 Mouton Rothschild is dense and brooding. Although naturally very, very young, all the elements are so well put together. The 2025 is 98% Cabernet Sauvignon, the most Cabernet ever in the Grand Vin, and that very much comes through in the wine's structure and overall presence. Graphite, lavender, rose petal and menthol build into the rich, heady finish. There's a ton of potential here. Drink 2035-2075.

Medium- to full-bodied with ultra-fine tannins and an endless finish. The tannins lead you on a great trip. It is the most cabernet sauvignon ever used in the blend in recent memory. Balanced and structured. 98% cabernet sauvignon and 2% merlot.

    Deep purple-hued, the 2025 Château Mouton Rothschild is based on 98% Cabernet Sauvignon and 2% Merlot that's resting in 100% new barrels. A blockbuster nose of crème de cassis, smoky tobacco, chocolate, and graphite gives way to a rich, powerful, yet focused and precise Mouton on the palate, with the signature texture this estate is known for, flawless balance, ripe, silky tannins, integrated acidity, and a gorgeous finish. It hit 13.1% alcohol with a pH of 3.76. It's unquestionably a beautiful Mouton in the making, and this château continues to fire on all cylinders.

    A fabulous Mouton with real personality and character and much more seductive than other wines from Pauillac this year. Dark fruit but cool, black cherries and berries with cola and mint touches. Juicy and upfront – immediately salivating in terms of fruit and acidity with gorgeous tannins, chalky, filling but soft not at all dry, fleshy but not too ripe. Intense, voluptuous, almost sensual and not at all austere despite the high percentage of Cabernet. One of the purest expression of what Cabernet can taste like on this site. Velvety, I just adore this for its frankness. Grippy, exciting, full of promise and energy. Wow. A potential 100-point wine. Drink 2035-2060.

    Smoke, cigar box, flowers, Indian spices, cassis, blackberries, espresso, licorice, forest leaves and mint fill the aromatic profile. But here, it is the palate that owns the night with its opulent, flamboyant, luscious, and vibrant personality. Even with all those showy characteristics, concentration, and intensity, the wine manages to feel light on its feet. By the time you have emptied your glass, the wine somehow gained weight, and the tannins turned to velvet, which is perfect to allow you to enjoy the seemingly, never ending finish. The keys to the vintage came from the combination of summer draught, paired with the rains arriving in late August at the perfect moment, helping to aid in the maturity in the grapes, which shaped the vintage characteristics. The wine consists of 98% Cabernet Sauvignon and 2% Merlot, making this the highest percentage Cabernet Sauvignon ever used in the blend.13.1% ABV, 3.76 pH. 52% of the harvest was placed into the Grand Vin. The harvest took place September 5 - September 20. Drink from 2032-2075.

    Based in Pessac-Leognan on the Left Bank of Bordeaux, Chateau Haut-Bailly has 30 hectares under vine planted to 60% Cabernet Sauvignon, 34% Merlot, 3% Cabernet Franc, and 3% Petit Verdot. As it is only recently that the wines have truly excelled, with knock out wines in 2005/2009/2010/2015/2016, they are one of the best values in Bordeaux.

    The 2025 Haut-Bailly was picked between September 4 and 22 at 26.6 hl/ha, raised in 50% new oak. Similar to elsewhere this year, I found a distinct difference between the Grand and Deuxième Vins, this possessing greater delineation and complexity. A mixture of brambly red fruit, briar, a touch of cassis and orange rind that is beautifully delineated. The palate is exquisite: very fine tannins, tangible minéralité, very cohesive and focused, with a very complex, peppery finish that goes on and on and on. Svelte, harmonious and tender, this ranks amongst the best vintages from Haut-Bailly in recent years. Drink 2032-2058.

Floral and savory overtones linger on the clean, supremely polished finish. Very fine. Drink 2035-2065.

    Checking in as a blend of 55% Cabernet Sauvignon, 36% Merlot, 5% Cabernet Franc, and 4% Petit Verdot, the 2025 Château Haut-Bailly is a sensational Haut-Bailly all about finesse and elegance. Ripe black cherries, currants, smoky tobacco, violets, spice, and flowers all define the bouquet, and on the palate, it's medium to full-bodied, with a pure, graceful mouthfeel, ultra-fine tannins, and a very long, elegant finish. It's not a blockbuster, but it's exactly what this terroir yields with its complex, nuanced, layered, graceful style. You should buy this.

    Lovely floral aromatics with an abundance of rose petals. Supple and so smooth, silky tannins and really vibrant red cherry fruit. Quite a brilliant and energetic style. Plump but juicy with acidity that gives a clear backbone and drive. I love the slightly fuller expression, it’s not lacking in depth or attitude and fills the mouth with a fleshy grip yet still lifted, bright and so cool. Impressive. Haut Bailly has been one of the more delicate wines in recent vintages and this is a little more upfront, lively and characterful and I love it for that – while still keeping elegance and refinement. Ripe, punchy, bright, forward. A great success. 4% Petit Verdot completes the blend. Drink 2035-2055.

    Rare in the landscape of Bordeaux, the heart of the Second Growth Chateau Brane Cantenac vineyard has remained relatively unchanged since the 1855 classification with the 45 hectares surrounding the Chateau still used for the Grand Vin. The balance of the 75 hectare estate makes it into the second wine, Baron de Brane. Vineyards are planted to 55% Cabernet Sauvignon, 40% Merlot, 4.5% Cabernet Franc, and 0.5% Carmenere.

    A blend of 80% Cabernet Sauvignon, 18% Merlot, 1% Cabernet Franc and 1% Carmenère (the latter harvested by the winery team after everything else has been picked), the 2025 Brane-Cantenac offers up a rich bouquet of crème de cassis, plums and spices, framed by a deft touch of new oak. Medium- to full-bodied, layered and lively, with powdery tannins that contribute youthful grip on the finish, it checks in at a very classical 13.3% alcohol and pH of 3.62.

    The 2025 Brane-Cantenac was picked from September 2 to 29, finishing with that 1% of late-ripening Carménère, cropped at 32.2 hl/ha. It has impressive purity on the nose, an aspect of the Grand Vin that Henri Lurton and his team have improved immensely over the last decade. Black cherries, bilberry, violet and crushed stone unfold in the glass, classical in style, which is Brane-Cantenac's signature. The palate is medium-bodied with supple, finely sculpted tannins allied with disarming sapidity and brightness. Not powerful like the 2022, yet pixelated with a mineral, tensile, complex finish. Another feather in the cap for Lurton and, moreover, this is often one of the best values on release. Drink 2032-2060.

On the palate, it's medium to full-bodied, with a focused, elegant mouthfeel, beautiful concentration and depth, integrated acidity, and a great finish. Hitting 13.5% alcohol, it's a brilliant success in the vintage and should be snatched up by readers.

    Ripe and juicy blackcurrant aromas, really pure and expressive, fruit forward with iris notes as well. Juicy and friendly with such a lifted, bright and energetic core but grippy too, really wide and filling with the structure and concentration matching the acidity step for step. Firm and streamlined, but there’s purity and I do love the slightly more muscular aspect to this. Maybe less charming than previous vintages but more sophisticated. Clarity is exceptional. Lovely and long. 1% Carménère completes the blend. 3.62pH. 12.1% press wine. Drink 2034-2048.

    Part of Michel Couvreur’s Les Raretés collection. This cuvée represents an enhanced version of Cap a Pie. Composed primarily of Scottish grain whisky distilled in 2007 and aged in old Pedro Ximénez sherry casks, the blend is elevated by approximately 30% lightly peated malt distilled in 2010. Aged in Couvreur's Burgundy cellars for fifteen years and bottled in February 2026 at 47% ABV after minimal reduction and zero filtration, this whisky promises a level of concentration, richness, and persistence not normally associated with the blended category. 900 bottles were produced.

    Considered a high point in the company's maturation know-how, this is the latest in a series of premium curations falling under the 'Alekse' label. For this edition, Scottish malt was matured in a single Colheita Port cask stored in Couvreuer's damp underground cellars for a full 15 years. Sourced from a single Portuguese harvest, the rare 'pipas' (550-liter barrels) have imparted distinctive oxidative notes and a superb fruity richness. For maximum effect the whisky was bottled with no reduction, the final ABV arrived at via slow evaporation. A work of craftsmanship from the inside out, the hand-waxed 500ml bottle comes nestled in a wooden case, confirming the status of this genuine limited edition. 1200 bottles were decanted at a natural strength of 50% Alc./Vol.

    Michel Couvreur passed away in 2013; his son-in-law Cyril Deschamps and his cellar master Jean-Arnaud Frantzen, with the invaluable help of Michel’s devoted wife Marthe and his daughter Alexandra, follow to the letter the philosophy and the motto of the house: Virtute et Opera.

    Other reviews... Good things come in threes, and sometimes that actually holds up. After the 2003 (Amontillado) and 2008 (Oloroso), the 2010 Aleksé is up next. This time: Port instead of Sherry. Once again approved by Alexandra Couvreur, carrying a clear house style. Distilled in Scotland in 2010, aged in Colheita Port pipes in Couvreur’s cold, damp Burgundy cellars, and bottled at cask strength (50% ABV). Colheita Port Pipes are rare in whisky, single vintage, minimum 7 years of oxidative aging for the tawny port. Promising on paper. On the nose, it’s immediately Port-forward: dark, ripe berries, dates, blackberry, alongside roasted nuts and cocoa. With time, honey, vanilla, and a hint of clove come through. On the palate, full and rounded, yet still powerful. Surprisingly accessible for 50% ABV, minimal heat, plenty of structure. Honey and caramel lead into dark chocolate, orange zest, gentle spice, and a touch of tobacco. Balanced, elegant, and very cohesive. The finish is long and spicy, with dry cocoa, dried fruit, and a subtle oak bitterness. Sweetness lingers, but spice takes the lead. A very solid 90 (89) points in my little book. If pricing in the German market were a bit less ambitious, I might actually have rated it even higher. - whiskybase.com

    The House of Michel Couvreur is best known for shipping Scottish distillates to Burgundy, filling them into highly active sherry casks and ageing them in their humid underground caves. Here we have a departure from that practise and something of a landmark release for the company: Hexanobile represents their very first 100% French cuvée, combining approximately ten barrels from three different French distilleries with malts aged from 8 to 12 years. Maturation in sherry casks (fino, Pedro Ximénez, amontillado, oloroso) has bestowed aromatic complexity, vibrancy and depth to the whisky, including notes of chocolate, vanilla, almond, and ripe fruits. Bottled at 46% without filtration.

Mouth: The sweetness of the spices, velvety and creamy at the same time; the coffee, burnt caramel, crushed walnut and lichen arrive all at once on the nuts bringing bitterness and oxidation; subtle toasted/burnt finish. Final: Quite long, with notes of roasted coffee. The reduced alcohol amplifies the creamy and candied character, with cooking spices sprinkling over the dried fruit and raisins. - whiskybase.com

    2025 Chateau La Mission Haut-Brion Pre-Arrival Offer

    Located across the road from sister property Chateau Haut-Brion, the 26 hectare vineyard of Chateau La Mission Haut-Brion is not only equally as accomplished today, it often bests the First Growth wine. In fact if the classification of Bordeaux happened again today you would expect La Mission to be included as a First Growth, such is the quality and consistency of the wines.

    The deep gravel and clay vineyard is planted to 48% Cabernet Sauvignon, 45% Merlot, and 7% Cabernet Franc for the red wine, and 62% Semillon, 38% Sauvignon Blanc for the white. Often seen as a more robust and structured wine than Haut-Brion, La Mission is no less concentrated and complex, and can be extremely long lived.

    A Merlot-heavy blend of 58.3% Merlot, 38.3% Cabernet Sauvignon, and the rest Cabernet Franc that's being raised in 60% new French oak, the 2025 Château La Mission Haut-Brion sports a dense ruby/purple hue as well as juicy black raspberries, currants, smoky tobacco, freshly sharpened pencils, and liquid violet nuances on the nose. Medium to full-bodied on the palate, it has a pure, concentrated, layered mouthfeel, focusing tannins, and beautiful overall balance and length. It's a slightly more inward, focused expression of this cuvée, but that's the vintage, and this has tons to love. I suspect the cellar will be your friend.

Supple, round and generous, filling the mouth – chewy and grippy yet with fleshy and ripe red fruit, nothing drying, underpinned by liquorice and salty stones giving a chalky grip on the finish. Structured and intensely concentrated with energy, focus, depth and layering of texture. Full of mass, vibrancy and character. Not pristinely perfect but fun, plump and hedonistic. Drink 2034-2048.

Concentrated, long, deep, and voluptuous, the wine is almost palate staining in its delivery, coating your palate, yet, somehow it remains energetic, and vibrant. Packed with ripe, powerful fruits, the finish builds as it lingers, and expands seamlessly on your palate. For La Mission Haut Brion, this should start drinking well with just 5-7 years of age, yet, it promises to age for decades. The wine blends 58.3% Merlot, 38.3% Cabernet Sauvignon, and 3.4% Cabernet Franc, 13.6% ABV, 3.73 pH. Harvesting took place, September 1-September 18. Yields were low at 23 hectoliters per hectare. Drink from 2030-2075.

    2025 Chateau Pavie Pre-Arrival Offer

    Chateau Pavie is the largest and most technically advanced of the Grand Cru Classe A properties in Saint-Emilion, but also the most polarising. From the flashy new Chateau and guest reception area, to the opulent, rich and saturated wines, Chateau Pavie continues to divide opinion. What is clear though is since Gerard Perse bought the property in 1998 his efforts to replant the vineyard and renew the winemaking facilities (twice!) have resulted in some of the best wines in their history.

    Today the 42 hectare vineyard is one contiguous block, a rarity in Bordeaux, and is planted to 60% Merlot, 25% Cabernet Franc, and 15% Cabernet Sauvignon. Soil profiles vary across this large area, but the best plots are behind the Chateau on deep, rich limestone and clay.

    The 2025 Pavie is a total stunner. What a wine. Rich and dazzling in its intensity, the 2025 hits all the right notes. Inky dark red/purplish fruit, exotic spice, mocha, espresso and pomegranate literally stain the palate. The 2025 is going to require the better part of a decade to unwind, but it has a ton of potential and a very bright future. This is the first time Cabernet Franc is the dominant variety in the Grand Vin. The 2025 has plenty of the textural intensity readers have come to expect, but with less of the heavy extraction that marked the earlier years. Drink 2033-2065.

    The first time this château has included this much Cabernet Franc in the blend, the 2025 Château Pavie sports a saturated purple hue as well as a pure, focused bouquet of crème de cassis and assorted blue fruits intermixed with graphite, violets, leafy herbs, and freshly sharpened pencil notes. It's a different beast from the classic Pavie style, with a more focused, straight mouthfeel, building yet beautiful tannins, and a layered, seamless texture on the palate. It might miss a touch of the classic Pavie sexiness, but it's incredibly impressive, balanced, and remarkably long. Hitting 14.34% alcohol with a pH of 3.58, this Saint-Émilion was harvested between September 15th and 26th.

Ripe and fleshy fruit on the palate, the tannins have a really chewy aspect that fills the mouth with texture and grip but with a vein of cooling acidity through the middle. Ends soft and cool, with a long minty, liquorice core. Chewy, fleshy, but cool, I quite like the upfront nature, it’s filling and wide but not overly intrusive or dry. Cool blue fruits and a long slightly chalky powdery finish. All the makings of a great Pavie and feels hands off for what It could have been. 3.58pH. A yield of 21hl/ha. Drink 2032-2050.

The waves of rich, dense, opulent, lush, and salty, mineral-infused berries start off strong, and keep on going. The mid-palate, and finish delivers its message of ripe, deep, black, with red fruits, spice, crushed stones, camphor, licorice, and dark chocolate without hesitation through to its endnotes that get close to the 60-second mark. The wine blends 60% Cabernet Franc, 30% Merlot, and 10% Cabernet Sauvignon, making this the highest percentage of Cabernet ever used in the blend. 14.3% ABV. 3.58 pH. This has a sublime bouquet that actually reminds me of the 2020, beautifully defined with blackcurrant, iodine and touches of violet petals. The oak is very well integrated. The palate is medium-bodied with granular tannins, fine acidity, gentle but insistent grip. Quite compact towards the finish, this has a linearity that I really admire, imparting a sense of classicism and "coolness". This is an excellent Lagrange from Mathieu Bordes and his team. On the palate, it's rich and medium to full-bodied, with a pure, layered, graceful mouthfeel, velvety and integrated tannins, ample mid-palate depth, and a great finish. It's another brilliant wine from this château, which has been making absolutely world-class wines for some time now without the recognition they deserve.

    Chateau Pichon-Longueville Comtesse de Lalande is the sister property to Chateau Pichon-Longueville Baron, formed upon the death of Baron Joseph de Pichon Longueville in 1850. The parcel of vines we now know as Pichon Lalande were passed to the Baron’s three daughters, and today is one of the most elegant wines in the Haut Medoc. This elegance should not be confused with being underweight, as the wines have enormous richness and intensity, and age extremely well. Plantings on the large property include a blend of 61% Cabernet Sauvignon, 32% Merlot, 4% Cabernet Franc, and 3% Petit Verdot.

    What a stunning Pichon Comtesse. A salty element on the nose, fragrant blackcurrant. Ripe and softly fleshy, this fills the mouth straight away with the most gorgeous juicy, rich and also cool tannins that are so comforting. Accomplished winemaking where every element adds to the overall impression. Long, muscular but sinewy too. Just a simply gorgeous wine. Almost lightly framed, saline-edged tannins, a grip to the liquorice, cola, mint and crushed stones. Pauillac through and through but with energy, focus and clear detail. Ageing will surely elongate the expression and give depth. A yield of 24hl/ha. Drink 2035-2049.

    The intense floral bouquet kicks off the nose before getting to all of its cigar wrappers, blackberries, cocoa, cassis, chocolate, black cherries, and gentle spices in the aromas. As good as that is, the palate steals the show with its opulent, showy display of sweet, silky, perfectly ripe berries, with touches of cocoa, and sea salt. The intense finish is long, velvety, and vibrant. In short, everything is exactly where it should be. Due to its creamy nature, the wine can be enjoyed young. But it can age for 30-40 years easily. With 2025, the top three things to keep track of was staying focused and ready to pick once the grapes achieved their ideal ripeness was imperative. Picking the Merlot al dente was another key factor. Lastly, being patient for the Cabernet Sauvignon to achieve full, phenolic ripeness sealed the deal. In the cellars, less pump overs early in the fermentation, followed by an infusion of the berries was another key point. The wine blends 81% Cabernet Sauvignon, 15% Merlot, and 4% Cabernet Franc. 13% ABV. 3.7 pH. The harvest took place August 28 - September 24. This is the earliest start to a harvest in the history of Pichon Lalande. Yields were a paltry 24 hectoliters per hectare. Only 55% of the harvest went into the Grand Vin. The wine is aging in 65% new, French oak barrels. Drink from 2032-2070.

    A blend of 80% Merlot and 20% Cabernet Franc from the 9.8 hectares of vineyard planted on the clay-limestone hills of Lussac-Saint-Emilion. The fruit is destemmed and fermented in stainless steel tanks. Extraction is via pump-overs three times a day during ferment (typically 3 to 4 weeks), followed by 12 months maturation in 20-25 % new French oak barriques, depending on the vintage.

    Chateau Giscours in Margaux has been making wine in the region as far back at the 1300’s, but it’s only recently that they’ve earned a reputation for outstanding wines. Extensive replanting of the vineyards and a change in composition to include more Cabernet Sauvignon in the blend has resulted in wines truly reflective of the appellation. Another technology pioneer in the region, Chateau Giscours was one of the first to use gravity to move wine in the cellars. While this practice is common now, it was unique in the 1800’s. They were also one of the first to use optical sorting of the grapes, another common tool used more widely today.

    A fabulous Giscours this year really showcasing the effort and work that's been going on at this estate. Deep and dark nose with blackcurrant leaf, dark chocolate, violets, purple flowers, a medicinal herbal element, mint and cinnamon - but so delicate and precise. Really refined aromatics. So sleek and silky with perfectly balanced tannins that give support but don't overwhelm. Amazing depth and layering here, so well balanced and executed with plenty of concentration but dark and brooding, not heavy or sunny – cool and calm but focused and determined too. Extremely Margaux without any extremes. This really represents the personality of the vintage with Bordeaux energy, tension, focus, juiciness, freshness, ripe and structured ripeness carried by acidity. 3.68pH. A yield of 30hl/ha. Definitely one of the most refined GPLs that I have tasted at this stage, very harmonious, complex and engaging. Superb persistence on the finish, this is a complete Pauillac that is going to give immense pleasure. Drink 2032-2060.

It has a bright nose with blackberry and bilberry fruit, cedar and light cigar box scents in the background, all delivered with commendable delineation. The palate is well balanced with supple tannins, but there is plenty of structure here, very well judged acidity, well-integrated oak with a judicious dash of pepperiness and a floral aspect to the finish. The 14% Petit Verdot just lends a little more malleability to the texture and it should be absolutely delicious once in bottle. If this is released at a good price en primeur, as it has been in the past, then this could represent an astute buy. Drink 2031-2050.

The 2025 may well be the best wine ever produced at this estate.

These factors naturally limit yields and contribute to the concentration, structure and distinctive character for which Great Western Shiraz is celebrated.
    Crafted from mature vines and traditionally matured in oak, Bin No. 0 has long been regarded as a benchmark Australian Shiraz.     Rich, juicy and muscular this is classic Blewitt Springs Grenache delivered with great authority.

    From 65+ year old Blewitt Springs vines with 20% whole bunch fermentation and maturation in old French oak for a period of 10 months. Dark red heart with black toned edges and a red to dark red hue. Enchanting aromas of red to dark raspberry, red liquorice and dark cherry are delivered with impressive intensity trailed by some crushed rock, vanillin spice and peppered herb notes. Rich, juicy and energetic, dark raspberry, red liquorice and red to dark cherry fruits burst across the palate with explosive force. A bed of crushed rock, dried herbs and peppered earth lie underneath. A muscular yet integrated tannin structure together with mouth watering acidity provide wonderful tension. Magnificent depth and concentration of fruit finishing long, expansive and super succulent yet resoundingly fresh.

    Pale in the glass and engagingly savoury, feeling a little less up-front fruitful than the '23 at the same stage, but certainly no less for it. More, perhaps. This is savoury, with pressed flowers, dried cranberry, damson and macerated cherries, warm stone, whole spices – fennel seed, clove, cardamom – and a little blood orange note, speaking to flavour and zesty, sour-fruited tension. The tannins, chalky, pithy, sandy and purposeful is a real feature, as is the fine seam of acid. It’s a wine built with a light, thoughtful touch, confident, layered and very engaging. Drink by 2036.

    The best grenache wines wear their structure, and their delicacy, on their sleeve. This release from outstanding McLaren Vale producer Paralian does both those things. Indeed if you want to know why there’s so much excitement around McLaren Vale grenache these days, buy and drink this wine. It offers ample raspberried, boysenberried, strawberried fruit, throws floral and sweet spice characters into the fray, and then draws all these elements long through the finish via exquisite, earthen, assertive chains of tannin. The words ‘it’s a pearler’ might have been uttered.

    Raspberry, almond and peanut packed milk chocolate, spice and perfume, a subtle nori character too with Japanese ginger tucked in. It’s medium-bodied, red cherry and raspberry, again the almond meal richness, a bright cranberry freshness to acidity, quite some fine sandstone grip to tannin gives it substance and texture, spiced blood orange rolls on a crisp finish of excellent length. A super Grenache, though it’s quite firm and structured, so give it another year or two, I’d say. Drink 2026-2033+

    Other reviews... As you know, specific circumstances cause certain Fino casks to behave differently than is hoped – they loose their layer of flor and gradually move away from the initial Fino profile. Alcohol is added to these casks (up to around 17-18°) and they enter a second phase of oxidative ageing. The symbol on the cask (a vertical stick or palo) would be crossed or cut (cortado) with a horizontal line. Williams & Humbert Dos CortadosAfter some years, such Palo Cortado can be adjusted with alcohol a second time – this is designated as Dos Cortados. Sometimes the name is also used to indicate Palo Cortados with a higher weight than usual, or just a higher ABV due to concentration and age. Tres Cortados and Cuatro Cortados also exist (similar to the Palmas in Fino) but they’re rare. Williams & Humbert is currently the only bodega to use the name Dos Cortados, as far as I know. Although it is now labelled as Palo Cortado, old labels say it’s an Oloroso (see image to the left). This may seem surprising, but keep in mind that the difference between a light Oloroso and a heavy Palo Cortado is sometimes a bit arbitrary. When they grow older, the profiles converges as the oxidative phase dominates. In the end it’s the decision of the cellarmaster rather than a strict classification. Dos Cortados is a V.O.S. sherry with an average age of over 20 years. It’s part of the premium range from this bodega, which also includes the Don Guido P.X. V.O.S. and the Jalifa Amontillado V.O.R.S. Note that Williams & Humbert also produces a rum called Dos Maderas P.X., which is matured in the Carribbean before being finished in Dos Cortados and Don Guido casks. The Dos Cortados solera dates back to the foundation of the Williams and Humbert bodega in 1877, and comprises around 300 barrels. It is 100% Palomino Fino from the pagos Añina and Carrascal. This Palo Cortado has a surprisingly orange colour, almost with a fluorescent hue. Nose: a warm and intense nose, revolving around vanilla pods, caramel and nutmeg. There’s also a big roasted side to it, almost smoky (charcoal). Roasted hazelnuts and almonds. Dried fruits on a second level. Elegant oaky notes and orange zest which hint towards its Amontillado side. Mouth: dry, lively, with a firm acidity and seemingly a little less body than the nose suggested. Some rounded hints of dates, but it’s mostly based on walnut skin, Mediterranean herbs and lemon zest. Salted butter caramel. Some mineral notes in the background.     Black Maple Hill is not a distillery, but rather an ‘independent label’ first introduced in 2000 by a Californian wine and spirits distributor called CVI Brands. Importantly, this is said to be one of the original early era bottlings, as opposed to the newly re-marketed Black Maple Hill bottlings now supplied by a small craft-distillery in Oregon called 'Stein' and packaged in different shaped bottles. We can confirm this bottle's position in the brand's timeline by the "CVI Brands" agency statement which appears on the back label.

    The legend and hype behind Black Maple Hill stems from a belief that early releases were wheated bourbon from Stizel-Weller and bottled by Julian Van Winkle III himself. Later, bottlings were said to have been moved to Kentucky Bourbon Distillers (KBD aka Willett) and made using whiskeys sourced from Heaven Hill. Whatever the truth may be, "...the magical touch of the Van Winkle finger conferred an irresistible desirability, and Black Maple Hill bottlings began to sell for thousands of dollars on the secondary market."

    It's not known precisely which whiskey(s) made it into this bottle. The contents are open to speculation, especially the later iterations which are equivalent to an independent whiskey purchased from another independent whiskey supplier. What is certain is that this is one uber rare and collectable Bourbon.

    "The Kulsveen’s [KBD] oversaw a golden period for the brand, with well-aged bourbons filled into a number of now hugely collectable Black Maple Hill releases. Although KBD had acquired some Stitzel-Weller stock, the majority of their casks came from the neighbouring Heaven Hill distillery in Bardstown, a distillery sadly lost in a fire in 1996 and increasingly desirable ever since... By the late 2000s, a global Bourbon boom had catapulted Black Maple Hill into the spotlight. The irresistible prospect of old-aged liquid capsules of Stitzel-Weller and Heaven Hill swept the Bourbon community, and Black Maple Hill bottlings quickly became an absolute must-have. They developed a cult-following of fans fuelled by curiosity and connoisseurship. Black Maple Hill bottlings were increasingly becoming harder to find and soon were appearing on the secondary market for values far in excess of their original retail price tag. Sadly they were not the only benefactors, and KBD’s own Willett Family Estate brand had surfed the same wave, and the company increasingly reserved its stock for this, limiting what they could make available to CVI Brands and their other contracts. Black Maple Hill was eventually reduced to a non-age statement product, before disappearing from shelves. As they struggled to find an alternative it appeared as though Black Maple Hill was at the end of their story."

    Unlike their flagship port-finished bourbon, this unique and very rare single barrel expression underwent a secondary maturation in a hand-selected sherry cask. Such limited editions have typically been part of the distillery's retail/restaurant exclusives program. We'd expect the outturn to be no more than two or three hundred bottles. It's reported that this particular one ranks as one of the first, if not the very first Sherry Finish single cask to be offered by the distillery. At the time (circa 2023), they also changed the bottle shape to be rounded on the front and flat on the back. There's no specific age statement, but rumour has it that it's somewhere between 5-8 years old and finished in Oloroso barrels for 16 months. The background for the sub-label, which reads "Unanimous Consent" is unknown. 57.9% Alc./Vol. Collectable.

    Notes on Glenallachie 12YO... The GlenAllachie have done it again! The 12 Year Old has won the award for World's Best Single Malt at the 2025 World Whiskies Awards, an honour it previously received in 2021 for Batch #4 of its 10 year old Cask Strength release. Billy Walker considers the 12 year old to be the heart of the core range with some of the very best virgin oak, Oloroso sherry and Pedro Ximenez casks selected. It is slightly less robust than the ten year old, though just as deeply coloured and easily one of the more flavour-packed 12 year olds going around, opening with notes of chocolate box and Turkish delight followed by a medley of dried fruits, cocoa, clove, honey and vanilla, plus no shortage of concentration on the palate; A saturate of dried fruits and spices, orange oils, citrus blossom, chocolate box and dried apricots combine with fine astringency for excellent sweet-dry balance. Overall, fresher, and with a little more 'breed' than the brawny 10. If you enjoy exuberant sherried styles, then this will be right up your alley. 46% Alc./Vol. Non chill filtered. 92 points

    Notes on Glenallachie 12YO Moscatel Wood Finish... Initially aged for over 8 years in ex-Bourbon barrels and then finished for approximately 42 months in hand-selected Moscatel barriques (a Portuguese sweet dessert wine) imparting floral aromas and a luxuriously smooth texture. It's another decadent, fruit-forward Speysider, typical of GlenAllachie’s celebrated wood-finish lineup. Bottled exclusively for Europe, it's unlikely we'll see this one again! 48% Alc./Vol. Non chill filtered.

    Other reviews... The Moscatel cask is mainly noticeable in the nose, where it pours out of the glass very sweet and sticky and light fruity (gooseberries, light grapes, star fruit, etc.). The fruit flavors integrate nicely into the light Glenallachie character without overwhelming the whisky. There is a slight spice in the finish, but it is much lighter than many of its distillery siblings. Overall, nice summer whisky with a lot of pressure and well-integrated alcohol.     One in a series of vintage-dated Auchentoshans released around 2000. Whiskyfun.com tasted a handful of them, and the sister cask to this (cask #509, also from 1966) was the best by a long shot! (90 points) It's reasonable to assume that this should be of a similar standard. Hogshead #508 was bottled at 50.4% Alc./Vol.

    Bushmills 12 Year Old is set to be the distillery's new core product, replacing the 10 Year Old. Like the rest of the range, it’s triple distilled, but comes matured in three cask types: Oloroso sherry butts for depth and dried fruit, bourbon barrels for sweetness and structure, followed by a finishing spell in Marsala wine barriques. While some would like to see the ABV increased to give the whiskey more depth, most consider it a super-serviceable Irish, whose strong point is its amiable character. 40% Alc./Vol.

    Other reviews... Previously only available in Europe, Aurora Australis is now available to Australian consumers. As Hellyers Road's most affordable single malt whisky, coming in at just under $100 and bottled at an approachable 40%, it's the gateway into their more premium and higher abv products. Its pale colour suggests a higher proportion of bourbon casks than many of Hellyers other releases, but there's still plenty of juicy fortified wine on the nose. Light, bright, and youthful, plenty of aggressive spirit jumping out of the glass. The character of excellent Tasmanian malted barley is immediately present, but despite the big nose, the palate is a touch watery at 40%, while still hot on the finish. Lots of nice characters and complexity, but it is buried under its youth and aggressive spirit. Non chill filtered. 84 points - winecompanion.com

    A story tied to a Roman goddess—one could only marvel at the idea of the Romans setting foot in Tasmania (a bit of historical humour there). Colour: white wine. Nose: unexpectedly ultra-fermentative with waxy tallow, roasted artichoke, pickled mushrooms, rainwater, bison grass, ale, and a whiff of mentholated tobacco. An intriguing bouquet that works surprisingly well, though one must question the decision to bottle it at 40%; by the time it reaches Europe, it’s likely shed a degree or two (just a cheeky thought). Mouth: quirky and delightfully so. Strongly fermentative, smoked with an indeterminate natural element, peppery, woody, and bitter, but all wrapped with a pleasant touch of bitter orange and deeply dark chocolate. The emphasis on its idiosyncrasies in this base expression is commendable, especially with that meaty sweetness emerging as it opens—honey and chilli-glazed beef jerky, perhaps. Finish: fairly long, quite bitter, and smoky, showcasing smoked paprika and cocoa powder. Comments: a ‘free whisky’ much like ‘free jazz’—bravo for resisting the lure of the typical PX or mizunara finish. A true, ethical whisky, unapologetically non-mainstream.

    Other reviews... They say 'red wine' instead of 'Rioja'. Don't tell me I'm going to miss the presence of a Rioja in my malt whisky, sweet Vishnu! Colour: dark reddish apricot. There, the red wine is evident. Nose: more vinous, fruitier, more on small red and black berries, with a Burgundy side represented by touches of black cherries. There's definitely a cherry liqueur aspect, but water could change everything. With water: well no, it seems like if they've added guignolet while no one was watching. It's not bad, far from it, but it may be to Speyside malt what Kriek is to Belgian beer, if you see what I mean. For now… Mouth (neat): not bad at all but below Batch 9. Much more cherry jam, and a lot more pepper and ginger. With water: it's very good, it just tastes rather more 'flavoured' than batch 9, which was firmly established in the category of... Let's not repeat those brand names, please. Finish: long, sweet, with a lot of cherry. Comments: on the one hand, I love cherries in general, but on the other hand, the rather superlative Batch 9 had more class and... malt.     The 2025 Clos du Clocher is fabulous. In fact, the 2025 is one of the best vintages I have tasted of late. Clos du Clocher impresses with its energy and vibrancy. Red/purplish fruit, blood orange, mocha, espresso and exotic spice soar from the glass. The blend is 78% Merlot and 22% Cabernet Franc, much of it from older vines that confer notable dimension. Brisk saline notes explode on the close. Drink 2035-2075.

    The 2025 Clos du Clocher was picked from September 4 with the young Merlot and matured in 56% new oak. This has quite an intense and slightly more opulent bouquet compared to, say, the Clinet that I tasted directly prior to my visit. Yet the fruit here is pleasingly pure and focused: blueberry and raspberry fruit, iodine and pressed violets. Fine delineation. The palate is medium-bodied with saturated tannins, quite dense and powerful for a Clos du Clocher though the silver thread of acidity and underlying fine tannins means that there is no excess. Gentle but insistent grip, a little granular in texture towards the structured finish, do not be afraid to cellar this Pomerol for a few years if you wish. Impressive, but be patient and broach its sibling Bonalgue as you wait for this to mature. 13.4% alcohol. Drink 2033-2058.

    A Merlot-heavy blend of 78% Merlot and 22% Cabernet Franc that's being raised 18 months in 56% new French oak, the 2025 Clos Du Clocher comes from a château that deserves more attention in the market today. The wine has a brilliant nose of juicy red and blue fruits with notable complexity in its spicy wood, flowers, and graphite-like nuances. On the palate, it's rich and medium to full-bodied, with a focused, elegant mouthfeel, wonderfully polished tannins, and a great finish. Checking in at 13.3% alcohol with a pH of 3.54, it stays in the focused, elegant style of the vintage and is beautifully done.

    A great Pomerol in the making. Really floral and so perfumed with violets and iris notes. Heady aromatics, so intense and concentrated yet so precise and clean too with really delineated scents. Juicy and bright with strawberry and red cherry, the acidity up front while the fine tannins gently coat the sides of the mouth in a chalky powderiness. Grippy with volume and a lot of tannins but they're so well handled and will soften and round over ageing. Serious but lots to like here – I really like the brightness. Salivating, salty, clean and focused. 3.54pH. 91 IPT. A yield of 32hl/ha. Ageing 58% new oak, 33% one-year-old barrels, 10% small vats and wine globes. Drink 2033-2049.

Broad and ample, with notable textural intensity, Barde-Haut is a highly representative wine from Saint-Émilion's Saint Christophe des Bardes sector.     The 2025 Barde-Haut was picked at around 35 hl/ha between September 13 and 17. This has a fragrant bouquet with raspberry and crushed strawberry scents, which becomes just a tad darker as it aerates, hints of violet and cassis emerging with time. The palate is medium-bodied with smooth tannins, quite plush yet balanced in style, touches of white pepper and graphite towards the elegant, pastille-like finish. This is a promising Barde-Haut that will require just three or four years in bottle. Drink 2030-2050.

    Deep purple-hued, the 2025 Château Barde-Haut has beautiful notes of ripe black fruits, sappy flowers, tobacco, and chocolate on the nose. On the palate, it's rich and medium to full-bodied, with a deep, layered mouthfeel and a great finish. Checking in at 14% alcohol with a pH of 3.45, from healthy yields, this is a seriously impressive Saint-Emilion Grand Cru Classé that's well worth your time and money.

    Flowers and plums fill the perfume. On the palate, the wine is vibrant, juicy, fresh, long, and packed with ripe, sweet, black cherries, chocolate, oceanic influences, mint, and licorice. The finish has great energy, with flesh and length. Clearly, this is one of the best vintages of Barde Haut ever produced. The wine blends 80% Merlot with 20% Cabernet Franc. 14% ABV, 3.45. Harvesting took place September 13 - September 17. Yields were 35 hectoliters per hectare. Drink from 2029 - 2055.
