    Billecart-Salmon’s ever reliable Reserve Brut is made from a blend of 30% Pinot Noir, 30% Chardonnay and 40% Pinot Meunier and spends 30 months ageing on its lees. 50-60% of the blend is made up of reserve wines.
    Buoyant and frothy upon pouring, the mousse fades into a pale straw coloured base that has flecks of pale gold to the edges and an extremely fine and persistent bead flowing through its core. A classic sniff of yeasty baked bread characters is followed by pear, cashew, hints of dried honey and brioche. The delicious palate has a satiny and airy like feel to it and features a flavour profile of baked bread, pear, yeast lees, subtle cashew, citrus and brioche. Dry crisp chalked tinged finish with a long and delicately creamy aftertaste.
    Drink over the next 3-4 years.

    The 2007 Brut Cuvée Nicolas François Billecart is positively stellar. Elegant, polished and sophisticated, the 2007 dazzles with effusive aromatics and gorgeous balance. It's not an obvious wine, though, but rather a Champagne built for long, patient cellaring. The 2007 is 60% Pinot Noir and 40% Chardonnay taken from Mareuil-sur-Aÿ, Ambonnay, Verzenay and Verzy for the Pinots and Chouilly, Avize, Cramant and Mesnil for the Chardonnays. In other words, as good as it gets for villages. The wine was done mostly in tank with about 15% of the lots vinified in oak. Dosage is 6 grams per liter. Drink 2027 - 2047.

    Disgorged with six grams per liter dosage, the 2007 Brut Cuvée Nicolas François is showing very nicely, offering up aromas of fresh bread, citrus oil, crisp yellow orchard fruit, white flowers, verbena, macadamia nut and hints of biscuity complexity to come. Full-bodied, chiseled but fleshy, its vinous core of fruit cloaks the vintage's brisk acids to achieve real plenitude in a year that's sometimes rather tautly austere. Long and penetrating and complemented by a pretty pinpoint mousse, this is a real success. Drink 2021 - 2041.

One for the cellar. 60% pinot noir and 40% chardonnay. Disgorged 19 July, 2020. Wonderful now, but needs time to come together. Better from 2024 onwards.

    Created in 1988 as a tribute to the co-founder Elisabeth Salmon, this cuvee is an elegant and refined rosé composed of 55% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne, along with 45% Chardonnay from the Côte des Blancs. Less than 10% of the Pinot Noir is vinified as a red wine, with these old vine grapes sourced from the south facing slopes of the Valofroy vineyard located in Mareuil-sur-Aÿ. This 2008 rendition shows all the traits from this magnificent year, a highly refined wine with wonderful delicacy of texture and flavour. Dosage is 7g/l.

    Disgorged with seven grams per liter dosage, the 2008 Brut Rosé Cuvée Elisabeth Salmon is one of the finest wines I've tasted from Billecart in recent years. Unwinding in the glass with aromas of peach, mandarin oil, warm bread, red berries and petals, it's full-bodied, deep and vinous, with lovely mid-palate amplitude, terrific concentration and bright girdling acids. In what is quite a tightly wound vintage and from a house whose style is rather understated, this is a dramatic, fleshy wine that concludes with a long, flavorful finish. Drink 2022 - 2048.

    This is very vinous with aromas of iron, strawberries, old roses and geraniums. So aromatic. Full-bodied, really intense and layered with super dryness and depth. Lots of saline and spicy character at the end, such as clove and pepper, as well as hints of flowers and melted butter. Strawberry tart at the end. 17% in aged oak casks. Blend of 55% pinot noir from six villages (Mareuil sur Ay, Ay, Bouzy, Ambonnay, Verzenay and Verzy) and 45% chardonnay from three Grand Crus (Mesnil sur Oger, Cramant and Chouilly). 9% of the blend is red wine from a parcel in the village of Mareuil sur Ay. Bottled June 2009 and disgorged July 2019. Drink or hold.

    The 2008 Brut Rosé Cuvée Elisabeth Salmon explodes from the glass with a mesmerizing array of aromas, flavors and textures. Blood orange, cinnamon, mint and dried flowers. The 2008 is incredibly young, but it is also incredibly tempting. Patience will be rewarded. In the meantime, readers might enjoy adding a few bottles of the stellar 2007 to their cellars, as the nervy, taut 2008 needs time. The 2008 is 55% Pinot Noir (from Aÿ, Verzy, Verzenay and Mareuil) and 45% Chardonnay (from Chouilly, Avize and Cramant), with 9% still wine from Mareuil. It is the first vintage that includes a portion of wines (17%) done in barrel and the first vintage in which the magnums were aged on the cork rather than on crown seal. Dosage is 7 grams per liter. Drink 2028 - 2043.

    A superb vintage of this renowned prestige cuvée, this is made from a base of 55% Pinot Noir and 45% Chardonnay, to which is added 9% of red wine. Despite ageing on its lees for 10 years, it remains almost shockingly youthful, its vividly primary flavours of red cherry, strawberry and nectarine wrapped up in a taut, tense frame. It’s silky in texture and intricately complex on the long, elegantly harmonious finish, underlined by a saline chalkiness, and it demonstrates all the requisite completeness and character for long ageing, promising a slow and dignified evolution to come. Racy pear, strawberry and yeast lees flavours meld into subtle baked bread and mineral characters. The satiny textured mid palate counterpointed by crisp nervy acidity on the finish which lends a vividly refreshing effect to the long aftertaste.

    What was one of the best value non vintage Champagnes on the market has just got even better. Previously labelled as Brut Reserve, the team at Billecart, have made a number of quality improvements to the core elements of this Cuvee and have rebranded it ‘Le Reserve’. The key changes being as follows:-
    - Extended aging on lees, increased from an average of 30 months to 50 months.
    - Reduced dosage (extra brut, 3g/l) for greater purity and expression of terroir.
    - More depth with 15 different vintages in the bottle
    - Larger proportion of wines vinified in barrels, adding richness and density.

    A rich, mouthfilling yet tense and stimulating Champagne that delivers remarkable complexity for the price.

    A blend of 43% Meunier, 29% Chardonnay and 28% Pinot Noir with over 50% reserve wines included in the blend. A buoyant, satiny mousse floats over a pale straw to straw coloured base that has pale gold tinged edges. Fine, nimble bead with alluring aromas of baked bread, yeast lees, oily toast, citrus and brioche wafting through the nostrils. Rich and mouth filling yet simultaneously tense and stimulating, the palate is laden with baked bread, yeast lees and citrus flavours which sit over an oily toast and almond back drop.     Entirely vinified in oak this Champagne pours well with a white frothy mousse followed by a deep straw pale gold base wine colour with a very fine bead that has excellent persistence. The nose is quite rich and full exhibiting aromas of toasty yeast lees, almond, baked bread and hazelnut. Reflective of the nose the palate possesses big rich flavours of toast, yeast lees, almonds and baked bread finishing with some nutty hazelnut like characters on the back palate. Clean dry finish with a nice creamy mouthfeel. Long aftertaste of toasty yeast lees, almond and hazelnut.

    The complex bouquet reflects the primary fermentation in oak casks; the palate no less so thanks to the quality of the premier and grand cru reserves, also matured in oak.     Composed of 48% Pinot Noir, 32% Chardonnay, and the rest Meunier, the NV Champagne Sous Bois is always aged on lees for five years. Made with 26% reserve wine and two grams per liter dosage, it pours a touch deeper golden straw color and is aromatic of fresh baked bread, marzipan, peaches, and marmalade. It’s not as oaky as I’d remembered it from previous tastings, with the blend feeling more harmonious and integrated. Full-bodied but not overly opulent, it fills the palate with a supple richness although it’s fully dry, and its nuttiness is still present but doesn’t dominate the wine. It would be paired exceptionally well with Comte cheese. 2 grams per liter of dosage, disgorged the second quarter of 2023. Drink 2024-2040.

    The family owned house of Billecart Salmon has now been in business for over 180 years, and although not particularly well known, it consistently produces some of Champagne's finest cuvees at accessible prices. Their outstanding Blanc de Blancs is a wine that is all about refined elegance.

    A very classy drink.

    A buoyant white mousse sits atop a straw to pale gold coloured base wine that’s threaded by a very fine, steady stream of tiny bubbles. Refined aromatics of pear, yeast lees and citrus meld into baked bread and subtle oily toast like notes with hints of almond also evident. Showing lots of finesse the elegantly creamed palate is flavoured with pear and yeasty baked bread characters over a back drop of roasted nuts and refreshing citrusy acidity. Long yeasty baked bread, pear, roasted nut, oily toast and citrus aftertaste.

    Tasted February 2011: Pouring with a white creamy mousse that shows good hold, it presents a very pale straw base wine with very fine and exceptionally persistent bead. The nose delivers a refined sniff with aromas of baked bread, light cashew, almond, yeast lees, citrus and toast. The palate displays great elegance and precision along with a creamy texture delivering a sophisticated flavour profile of baked bread, yeast lees, cashew and citrus followed by some light toast characters. Superb length and persistence with long aftertaste of yeast lees, baked bread, cashew and hazelnut.

    This release of the NV Champagne Blanc De Blancs is with the 2018 vintage base as well as 37% reserve wine. A bright medium yellow golden hue, it opens to a lifted and dewy profile with notes of linen, pear, and a hint of tropical fruit of passionfruit and quince coming through. Floral, fresh, and medium-bodied, it floats on the palate with a weightless, airy feel and a very pretty nature throughout. It has a fine mousse and a clean, chalky textured finish that tapers away. It will be very appealing now or over the next 12-15 years. It has the addition of 3.9 grams per liter dosage and was disgorged in May 2024. Drink 2024-2040.

Prosecco sparkles here in pale lemon hue, chalky lemon, apple, nashi pear and, unusually, quite lifted aromatics. Good strong bubble and lemony goodness to follow with a touch of spice. Plenty to like.

    A multi vintage Sparkling Shiraz that contains reserve wines going back to 1997, Bleasdale freshening up the base blend every Spring by adding a portion of new vintage Shiraz to it. Fermentation takes place in open vats before maturation in a mixture of seasoned oak barrels and stainless steel tanks.

    A frothy purple tinge mousse shows good hold over a black dark coloured base wine that’s finely threaded by a nibble stream of tiny bubbles. Lifted blackberry, dark chocolate and liquorice scents combine with vanilla, light toast and traces of earth. Rich, full and satiny, the palate is awash with blackberry and liquorice fruits which create a luscious textural feel. Vanillin oak, subtle dark chocolate and earth elements also chime in. Excellent depth and concentration with a long succulent aftertaste. A great match for the Christmas Turkey.

The mouth filling palate is engulfed with rich baked bread, yeast lees and brioche flavours which provide the front half with a full creamy feel. Lingering through the back half are honeyed cashew elements, toast and chalky characters. Finishes dry with sculptured acidity providing structure. Concludes long and decadent.

    Bollinger's 2015 Brut La Grande Année Rosé was disgorged in May last year with seven grams per liter dosage. Offering up deep aromas of orchard fruits, blood orange, mandarin rind and peach mingled with nuances of coffee, praline and fino sherry, it's medium to full-bodied, pillowy and layered, with a broad attack that segues into a vinous palate framed by high levels of structuring dry extract that makes its presence felt on the sapid, nutty and penetrating finish. Given the skin maturity and inherent structure of the year, the Bollinger team elected to include only 4.5% of still red wine in the blend, a comparatively low percentage. Drink 2024-2045.

    This rosé has much in common with the forward, bold release of La Grande Année blanc, as the wines share 95% of their blend. The 5% red wine from La Côte aux Enfants that goes into this rosé, though, adds a light touch of red apple, strawberry and rosehip, playing on some of the bay leaf spice in the blend while adding an extra dose of structure and apple skin bite on the palate. This is a structured but engaging rosé that could promise its best – and reveal a little more of its creamy, nougat richness - with further ageing. 60% Pinot Noir and 40% Chardonnay from the Montagne de Reims, Grande Vallée de la Marne and Côte des Blancs, with 5% red Pinot Noir addition, all fermented in small oak barrels and disgorged in May 2023 after seven years on lees.     Pale, slightly gris salmon pink (a little paler than the Billecart 2012 Elisabeth Salmon rosé tasted alongside). Heady, mushroomy, off-dry, sumptuous Bollinger gloriousness on the palate. I wonder what the dosage is, and whether the richness comes mainly from the fruit and oak? Finishes dry, but with wonderfully soothing impact on the palate. Relatively gentle mousse. Really gets to the deepest part of the throat. Sensational! Drink 2024 – 2038,

Rich, voluminous and full across the palate yet remarkably fresh and energetic, mouth filling flavours of pear, baked bread and oily toast like elements are shaped by vivid acidity. Flashes of citrus, cashew and chalky mineral accents linger across the back half. Concludes long, expansive and satiny with a buttered toast element to the finish.

    Bollinger's 2015 Brut Grand Année is an intriguing wine in that is clearly reflects the decision to pick on the later side in order to avoid vegetal notes derived from the mismatch of alcoholic and phenolic ripeness. "Balance was hard to achieve in 2015," Chef de Cave Denis Bunner notes. "At 10% in sugar, the fruit was simply not ripe. We had to wait to reach the optimal window of ripeness." Bunner also opted to increase the Chardonnay, so the blend is 60% Pinot Noir and 40% Chardonnay, as opposed to the more typical 70/30 blend, with more Verzenay than Aÿ in the Pinots. Dried citrus peel, sage, menthol, sage, tangerine peel and spice build with some coaxing. Light tropical overtones develop with aeration. There's real density and textural richness here. This will be a fascinating vintage to follow. Stylistically, it is the complete opposite from the much more linear 2014 that precedes it. Dosage is 8 grams per liter.

The wine has turned out beautifully, exhibiting a more muscular, old-school Bollinger profile in contrast to the unusually racy, fine-boned 2014 that preceded it.     A forward vintage for La Grande Année, with warmth evident in its roasted orange, Comice pear and Mirabelle plum, all polished with a sense of savoury maturity that is very Bollinger at heart. There’s a little more oxygen influence seemingly at play than in the 2014, with brine, nuts and a little dried leaf character already taking this far beyond fruit. The food-friendly chewiness of 2015 is there, but the mousse is supple and the Chardonnay brings the wine to a close with a fine, cooked lemon snap.     The NV PN AYC 2018 is the newest edition in Bollinger’s range of single village-based Champagnes, a series of wines created by former Chef de Caves Gilles Descôtes, who passed away earlier this year. Tense and vibrant, with notable saline intensity, the AYC (based on Aÿ) sizzles with energy. Dried pear, crushed flowers, mint, sage, chalk and light pastry notes all race across the palate. This release is 53% 2018 and 47% reserve wines, a big part of which are Bollinger’s famous reserve magnums (in this case 2009 Verzenay Pinot), plus dollops of 2017 and 2016 wines. The 2018 was done in equal parts oak and tank. Dosage is 6 grams per liter, but the impression is of a slightly drier style. The combination of a very warm base vintage blended with a high proportion of reserve wines yields a Champagne of notable complexity and texture. Drink 2023-2038.

Full-bodied, with freshness throughout and a hint of warmth on its beautiful finish, this is the most successful of the wines from this line that I have tasted to date, offering fantastic length and gorgeous depth of fruit.     A rich though youthful golden hue, the NV Champagne Special Cuvée Brut is classic and ripe with lush, rounded, and complex aromas of golden apricot, hazelnut, wet stone, and black cherry. Made with 45% of the wine coming from the 2019 vintage, with 55% reserve wine, it’s full-bodied yet elegant and light on its feet, with a ripe and luxurious feel and just a hint of warmth on the finish. The mousse is refined and rounded. Long on the palate, it's inviting now but will have plenty of life ahead of it if stored property. This exceptional cuvée with its distinctive personality continues to be one of the best entry wines to the range from this house and is a benchmark wine for them.

The notion of using such a diversity of vineyard sites is to provide complexity to the base wines. Domaine Chandon in the Yarra Valley employ a similar process. These 120 micro climates each provide the wine maker with base material that when blended together will create the sensation of considerable complexity. The art of blending is critical and at Bouvet the third generation of blenders from the same family are in charge - in fact they have been creating the blend for the last 60 years. State of the art, temperature controlled stainless-steel fermentation tanks, computer-regulated 'gyropallets,' or riddling machines, highly advanced freezing and disgorging equipment and micro-wave cork heaters have brought Bouvet’s vinification facility to the technical forefront. The winery itself however, remains an impressive monument to the region’s history with the wines spending their final maturation period within freestone cellars built by Saint Florent monks around 1040 AD. Many don't know it, but Australia actually pinched the idea of Sparkling red from the French.
    Made from Cabernet Franc, Bouvet offer a delightful alternative interpretation that's in a lighter, drier style. Produced from Cabernet Franc this sparkling red pours with an excellent purple tinged frothy mousse that shows good hold. Dark ruby red base wine colour with very fine bead showing good persistence. The nose shows good lift with scents of ripe plum and blackcurrant dominate followed by some delicate toast and spice notes. Medium bodied the palate is filled with rich luscious blackcurrant and dark plum flavours along with some toast and a touch of spice on the dry finish. Creamy mouthfeel. Medium to long ripe blackcurrant, plum and spicy toast aftertaste.

    In 1964 Annamaria Clementi purchased a small house called ‘Ca’ del bosc’ and two hectares of land, surrounded by chestnut woods. The first vineyards were planted in 1968 and two red wines were released in the early 1970’s. Her son Maurizio Zanella, inspired by a trip to Champagne at just 17 years of age, returned with a vision to make great sparkling wine. What was once a small house in the countryside has since grown to be the eminent sparkling wine in Italy and one of the best in the world. Cuvée Prestige is both the essence of Franciacorta and the Ca' del Bosco style. A combination of 134 vineyards contribute to the blend of 75% Chardonnay, 10% Pinot Bianco and 15% Pinot Nero. The grapes are vinified separately and 20% of reserve wines are selected from the cellars to give the wine its distinctive and complex character. The wine refines for 28 months before release and is bottled with just with 1.5 grams of sugar per litre (= Extra Brut) and 48mg of sulphur.
    A plentiful mousse holds well in the glass after being poured. A pale straw coloured base with flecks of pale gold around the edges has an exceptionally fine and persistent bead flowing through it. Pronounced ripe pear, baked apple and yeast lees aromas have a subtle dried honey overlay with emerging baked bread notes also evident. Quite rich and mouthfilling, flavours of pear, ripe apple, yeast lees, baked bread and citrus are backed by a sculptured spine of crisp acidity. Finishes dry with an aftertaste that’s long, refined and refreshing.

    Entirely Chardonnay, the bright straw/silver-colored the 2014 Champagne Blanc Des Millénaires has light reduction with beautiful smoky framing as well as notes of white peach, tangerine, fresh flowers, and chalky salinity. Medium-bodied, it has a refined mousse, a silky texture, and a long, elegant finish. It’s not an obvious wine at this stage, but it’s pleasing. It will benefit from time in bottle and drink well over the next couple decades. I like the fruitiness and freshness on the palate. It should pair well with shellfish. Drink 2024-2044.

    The only Blanc des Millénaires made during Thierry Roset's brief tenure as cellar master of Charles Heidsieck before his untimely death after the 2014 harvest. The wine was blended by Cyril Brun. It has seen less time on lees than the previous 2007 and 2006 wines – between eight and nine years rather than 12 – but the decision feels apt for this beautifully delicate, bright and serene edition of one of Champagne's top, if lesser-known, prestige Blanc de Blancs, emphasising purity over creamy richness. There are plenty of ripe aromatics, with fuzzy fragrant apricots, mandarin and even some fresh mango playing with hazelnut and coffee macaron complexity just starting to fire up. There's a quiet, calm insistence to the palate, more similar to the 2004 than the tension and drama of the 2007 or the generosity of the 2006. It seems set to be one of the vintage's top performers. Chardonnay from Cramant, Avize, Oger, Le-Mesnil-sur-Oger and Vertus, entirely vinified in stainless steel with full malolactic fermentation. Dosage: 9g/L. Drink 2025 - 2038.

    Masses of very fine bubbles on first pouring. Inviting, almost ethereal chalky citrus aroma. Masses of mouth-watering tension and freshness, with great precision. Tightly wound but not lean because it is so well balanced. Pure, chalky, crisp and very long. Elegant, gently complex, with only subtle creamy/yeasty autolytic character. The crisp citrus fruit still dominates after all this time on the lees, though the lees ageing shows in the rich texture. Drink 2024-2032.

    This is the follow-up to the legendary 1995, and is only just being released. Intense roasted hazelnut and nougat bouquet, lots of aged characters and very, very complex. An extraordinary wine, beautifully balanced and the acidity which kept it in the cellar for so long is no longer obvious. Drink 2024.

    The bouquet of the 2013 Brut Millésimé is compellingly fresh and minty, complicated by notes of white fruit—notably pear and apple—citrus and gentle spices, as well as a light touch of smoke. With aeration, elegant pastry notes come to the fore. On the palate, this is a structured, tension-filled but airborne Champagne with racy acidity, fleshy and charming texture and a long, penetrating finish. It should age well over the next eight to 10 years. Disgorged in 2022 with nine grams per liter, this is a blend of 57% Pinot Noir and 43% Chardonnay. Drink 2023 - 2038.

    An alluring, detailed aroma that is reserved and layered rather than hugely outgoing at present. There’s some maturity though, a measured weight of light apricot, ripe pear and pale strawberry fruit. Delicacy is the main theme, with touches of blossom, white peach, and only a quiet praline and caramelised apple richness. Less austere than the 2008, more focused than the 2012 and already quietly harmonious, this superb 2013 closes with chalkiness and verve. This could well prove the most finely tuned of the recent Charles Heidsieck vintage releases. 57% Pinot Noir, 43% Chardonnay with nine years on lees. Drink 2023 - 2040.

    Disgorged in January of 2023, the 2013 Champagne Millésime Brut was the last vintage from the cellar master for Heidsieck prior to Cyril Brun. The 2013 Champagne Millésime Brut is a bright straw yellow color and is based on the crus of Les Mesnil, Avize, Averney, and Aÿ. It’s fresh with aromas of wet stones, fresh quince, and fresh jasmine flowers. It has a chalky and focused texture, with ripeness to balance it out, and a long, graceful finish. At this stage, it feels more forward with 57% Pinot Noir and the rest Chardonnay. A more mineral-tinged expression, it has a lot of charm and the promise of longevity over the coming two decades. It will be interesting to see how the Pinot shows itself over time. 8 grams per liter dosage. Drink 2024-2044

    Intense aroma that combines ripe fruit – both citrus and pear – and also a touch of jasmine, as well as a deep, inviting yeasty autolytic character. Extremely complex and rewarding. On the palate, that same depth of yeasty/toasty character and the intense freshness of youthful fruit. An endless stream of very fine bubbles rising from the centre of the glass with bigger bubbles clinging to the sides – looks quite unusual. A powerful, long and vibrant wine that seems younger than its years. Extreme but balanced freshness with a slightly chewy finish as it warms up, as well as a suggestion of non-sweet honey. Excellent depth. Drink 2023 – 2032.

    Cyril Brun considers the 2007 vintage more interesting for Chardonnay than 2008, and Charles Heidsieck's 2007 Brut Blanc de Blancs Blanc des Millénaires is certainly a compelling wine. Unwinding in the glass with scents of crisp stone fruits, honeycomb, buttered pastry, yellow apples, pear and freshly baked bread, it's full-bodied, ample and seamless, with a concentrated core of fruit and a chiseled, racy profile. Combining generosity and tension, it's a terrific new release. Drink 2023 - 2043.

    Seven up for Charles Heidsieck; the seventh release of their magnificent Blanc des Millénaires Champagne, the 2007. Their charismatic chef de caves, Cyril Brun, describes the wine as ‘dangerous’, as in dangerously good, and it is hard not to concur. The legendary Daniel Thibault, who made the first Blanc des Millénaires in 1983, was aspiring to make a very specific style of Chardonnay, rich and indulgent at the same time as being classical and rigorous of construction, a deft paradox in other words. The 2007, child of a cooler, more linear vintage than the rather heady 2006, has achieved this ambition with great aplomb. Cyril is confident that stylistically the 2007 will be closest to the 2004 and the 1995, both greatly lauded and both of which have had an unfailing capacity to win virtually every competition into which they are entered. The pale gold shimmers invitingly, its mousse discreet yet persistent, its aromatics hitherto dominated by notes of grapefruit, yuzu, citrus and quince, behind that sourdough, flint-stone and intimations of toast and honey, both of which will become more pronounced over the splendours of a long life. 20% each of five great villages, all but Vertus ranked as Grand Cru, have provided the raw materials for this most magisterial of Blanc de Blancs Champagnes. Dosed at 7.3g/L (the lowest ever at Charles) and disgorged in July 2021, with a smart new bottle design. Drink 2022 - 2032.

    This blend of 40% Pinot Noir, 40% Chardonnay and 20% Pinot Meunier is sourced from up to 60 different Crus in order to maximise complexity and is made up of 50% reserve wines, many of them more than 10 years old to provide additional richness. Pours well with a creamy white mousse and pale gold base wine colour. Very fine delicate bead showing excellent persistence. Refined aromas of yeast lees and brioche are overlaid by some toastiness with following notes of baked bread and cashew. Showing both richness and finesse the palate has seamlessly integrated flavours of baked bread, yeast lees and toastiness over some almond and brioche. Clean dry finish with a moderately creamy mouthfeel. Long aftertaste of baked bread, yeast lees, cashew and toasty brioche.
    Drink this outstanding Champagne over the next 4-5 years.

    Very impressive for a "regular" non-vintage Brut, not only in terms of aromatic complexity - candied citrus, dried peach and fresh mirabelle plus a hint of bread dough - also in terms of texture, the creamy, rich and crisp sides of the wine neatly interlocking. Long, structured finish. A cuvee that's half 2018 and half reserve wines, some of which are a couple of years old, but many of them are five- to 10-years-old, with several over 10-years-old. French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.

The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
