While they own 8 hectares of vineyards, three quarters of their production is sold off to Laurent-Perrier, keeping only the best parcels for their own label.

    Tethys is named after the Greek goddess of water and nursing, and the ancient sea in the Mesozic era that covered what is now known as Champagne. This cuvee presents as the most approachable in their range, consisting of 100% Chardonnay mostly from younger vines planted in 2005 in the Chouilly vineyard of 'Les Caures', with further old vine parcels included from Le Mont Aigu (Chouilly), Les Bergieres (Cramant), and Les Briquettes (Oiry). Soils in each of these parcels are predominantly homogeneous chalk with the difference between each down to the thickness of the chalk and the depth of the topsoil. Each vineyard is vinified separately in stainless steel, before 7 months on lees before bottling, and a further 32 months ageing before being disgorged with an extremely low 2.5g/L dosage.

    Based on the 2019 vintage, complemented by 37% reserve wines dating back to 2015, and disgorged in March 2022, the NV Extra-Brut Téthys . 19 offers up inviting aromas of peach and yellow apple mingled with nuances of hazelnuts, white flowers and freshly baked bread. Medium to full-bodied, satiny and seamless, it's fine-boned, pure and layered, concluding with a saline finish. It's the usual blend of Chouilly, Cramant and Oiry. Drink 2023 - 2033.

    Prisme is a 100% Chardonnay cuvee exclusively from old vine parcels owned by the family, namely Les Bergeries (Cramant, planted in 1984), Le Mont Aigu (Chouilly, planted in 1970 and 1979), and Les Caurés (Chouilly, planted in 1946 and 1988). The emphasis with Prisme is to display the transparent nature that the chalk soils of Cramant and Chouilly lend to these wines. Vinification occurs in 96% stainless steel, with the balance in neutral oak barrels. Following 7 months on lees the wine is assembled and sees a further 44 months on lees in bottle, and 12 months resting in the cellar before release. Dosage is a very low 1.5g/L.

    In certain years Richard Fouquet will release a wine solely from the Mont-Aigu parcel (planted 1970), however in the warmer years he chooses to combine fruit from this warm site with the cooler exposure of the Caures vineyard (planted 1946). This 100% Chardonnay cuvee is vinified in stainless steel and rests on lees for 6 months, before a further 68 months on lees in bottle prior to being disgorged with 1.5g/L dosage.

    Champagne Hugues Godmé are based in the Grand Cru village of Verzenay in the northern Montagne de Reims, where they farm a total of 7.6 hectares of vines spread across four villages. Their Pinot Noir is sourced from the Grand Cru village pair of Verzenay and Verzy, while much of their Chardonnay is in Villers Marmery, and the Pinot Meunier a touch west in Ville-Dommange. Hugues has long been concerned with the health of his vineyards (along with himself), and made the transition to organic farming in 2006 with certification coming in 2013, followed a year later with biodynamic certification in 2014. Each parcel is vinified separately and dependant on the terroir will have fermentation occur in neutral oak or enamel lined cement tanks, all using native yeasts. Across the range dosage is kept very low, with many wines now bottled as brut nature (zero dosage). As to be expected with wines from Verzenay and Verzy, these Champagnes are sleek and structured, tightly coiled in their youth but with fantastic concentration of fruit.
    The Reserve is a blend of 34% Pinot Noir, 33% Chardonnay and 33% Pinot Meunier that has spent 2 years on lees. A mousse overflowing with exuberance subsides to reveal a pale straw coloured base that has pale gold tinged edges. An exceptionally fine bead shows great persistence. Delightful pear and strawberry aromas are complimented by yeast lees, baked bread, faint honeysuckle and delicate oily cashew like notes. The refined palate makes a satin like entry with mouth watering flavours of pear, yeast lees, citrus and baked bread melding into more subtle nuances of strawberry and roasted cashew on the back half. Airy cream tinged mouth feel finishing dry with vividly sculptured acidity and a long complex aftertaste.

    The Reserve is a blend of 60% Chardonnay, 30% Pinot Meunier and 10% Pinot Noir. A creamy white mousse evaporates into a pale straw gold tinged base colour that has a very fine bead showing excellent persistence. Rich, bready yeast lees aromatics tinged with a hint of dried honey rise from the glass followed by oily toast like characters and faint hints of dried nuts. Rich and full with a creamy like texture, the mouth is filled with baked bread, oily toast like characters, citrus and yeast lees with an assortment of dried nuts on the long dry finish. Excellent fresh acidity with a lengthy aftertaste of baked bread, oily toast like characters, yeast lees, citrus and dried nuts. A fuller style with outstanding richness and complexity.

    A 100% Pinot Noir Cuvee disgorged in January 2016 with 6 years on lees. Pours with a very fine lacy mousse that possesses excellent staying power. Pale straw colour with pale gold edges and an exceptionally fine bead that shows good persistence. Beautiful fresh aromatics of yeast lees and baked bread rise to the top over hints of strawberry, light toast and cashew. Very refined yet rich the palate has well meshed flavours of yeast lees, toast and citrus within a light airy mouthfeel over some oily cashew nuances on the dry stimulating finish. Long yeast lees, toast, citrus and oily cashew aftertaste.

    Lassaigne's vintage Blanc de Blancs is perhaps the sweet spot in the range. As a cuvee of 100% Chardonnay from the Le Cotet (35%) and Les Paluets (65%) vineyards, the wine was raised in tank before 8 years in bottle and disgorgement in late 2021. Given the extended lees contact this wine shows an enormous level of depth and complexity.

Lassaigne's extraordinary Champagnes are pushing the qualitative boundaries not just of the Aube but of the entire region. Farming in his vineyards is organic with cultivated soils and harvesting at full maturity. In the cellar, the wines ferment in wood and stainless steel, and they're disgorged by hand without dosage. The style is powerful and vinous but also racy and electric.

    Clos Saint-Sophie was owned by Marcel Dupont, a friend of the French botanist Charles Baltet, author of an important 19th-century treatise on grafting, and Baltet used the Clos for experiments. Rather than having any kind of ecclesiastical origin, the vineyard in fact takes its name from Dupont's wife. In 1876, Emperor Meiji of Japan sent two Japanese to Montgueux to study viticulture at the Clos Saint-Sophie, and in 1877, they imported 100 vines to Japan. Thus, the first plantings in history of vitas vinifera in Japan—on Mount Fuji—are inextricably linked with this small corner of the Aube. Today, the Clos is owned by the Valton family—better known as the proprietor of children’s' clothing brand Petit Batteau—and Lassaigne makes the wine. When most of Montgueux's vineyards were been abandoned after the War, the Clos was one of the few to remain in cultivation, so it represents a living link with the village's past. Clos Sainte-Sophie Blanc de Blancs Brut Nature is from 40+ year-old vines in a 0.4-hectare plot in the centre of the Montgueux and is aged in used barrels from Burgundy and Cognac and a Savagnin ouillé barrel from Ganevat (Jura).

    Based on the excellent 2019 vintage, and derived from the lower part of the parcel in front of Lassaigne's winery, planted between 1964 and 1968, the newly released NV Extra Brut Blanc de Blancs Le Cotet wafts from the glass with aromas of toasted nuts, crisp stone fruit, citrus oil and youthful reduction. Medium to full-bodied, fleshy and textural, with tangy acids and a long, saline finish, its reductive profile means that it really rewards some time in the glass. Drink 2023 - 2038.

    This magnum of Le Cotet is starting to open now, with notes of smoke, truffle and brioche over ripe green apple fruit. The bright acidity carries the wine on the palate but doesn't overwhelm at all – the sensation is subtle elegance and finesse, with nothing shrill or harsh. The base is the 2011 vintage (aged more than a year in used barrels on the lees) with about 10% reserve wines; the blend was disgorged (with no dosage) in July 2015. This wine has dynamic freshness and impressive length and should continue to age in a proper cellar for years to come. Drink 2022 - 2040.

    Disgorged in April 2018 with 2.5 grams per liter dosage, Jacquesson's 2008 Extra Brut Grand Cru Avize - Champ Caïn is showing brilliantly, soaring from the glass with a lively bouquet of waxy lemon rind, green apple, walnuts, marzipan and subtle hints of drawn butter and honey. On the palate, it's full-bodied, layered and multidimensional, with terrific concentration, mid-palate volume and structural tension, with a deeper, broader profile than the 2008 Core Bautray tasted alongside. The finish is long, saline and chalky. While Hervé Chiquet observes that Jacquesson has made considerable progress—especially in the vineyards—in the last decade that the 2008 necessarily doesn't reflect, this is nonetheless a brilliant Champagne.     The 2008 Extra-Brut Avize Champ Gain is rich, ample and creamy. Graphite, dried herbs, hazelnut and tropical notes fill out the wine’s ample frame effortlessly. Textural richness and vibrancy melded together make the Champ Gain absolutely compelling. Tropical overtones add shades of nuance to a Champagne that shows all of the resonance and breadth that are such Avize signatures. Dosage is 2.5 grams per liter. Disgorged: April, 2018.     Since their inception in 1843, Krug Grande Cuvée has been their signature wine, and the most important wine they produce each year. Crafting Grande Cuvée only once a year, Krug now distinguish each release numerically, and provide great insight into the detailed composition via their Krug iD site. While these Edition wines are non-vintage, Krug prefers to call them multi-vintage given they use a large proportion of reserve wines in the blend, normally over 120 base wines spanning 10+ vintages. The 171eme Edition is a staggering blend of 131 wines from 12 vintages back to 2000, with the base wine hailing from the excellent 2015 vintage. The varietal mix of the base wine is 45% Pinot Noir, 37% Chardonnay and 18% Pinot Meunier, and comprises 58% of the blend, while 42% of reserve wines are used from 11 older vintages stretching back to 2000.

    Non vintage? Technically so, but in fact there is a new edition every year, this the 171st, based on 131 wines from 12 vintages dating back to 2000. It is composed of 45/37/18% pinot noir, chardonnay and pinot meunier. Krug’s power is an iron fist in a velvet glove, and it’s my favourite champagne.

    The NV Grande Cuvée 171ème Édition, (2015 base vintage) is bright and focused in the glass, showing notable tension and tons of class. Citrus peel, white flowers, mint and white pepper all lend remarkable brightness to a Grande Cuvée that is built more on linear cut rather than volume. Krug is always among the first houses to pick.     The tightness and tension of this is impressive considering the youngest wine from this is 2015 (hot and dry year), with some wines going back to 2000. Ginger and orange zest. Some creme brulee. It's medium-bodied with apple, pie crust and floral character. It's salty and zesty yet, at the same time, complex and gorgeous. Chamomile and other floral teas highlight everything. Turns rich and flavorful at the finish. Terrific release. Really takes off at the end. Drink or hold.

There’s a smidgen of grippy texture at the end like drinking a light red wine and it does not detract. Less strikingly obvious and glamorous than the 26th edition. This will keep well and develop. The result today is a bouquet of incredible complexity, a veritable spice box full of seductive scents including sandalwood, mocha, and leather as well as a waxy note. The palate is perfectly balanced with both ample flesh and breathtaking freshness, and a wide-ranging flavour and textural profile having elements of quince, candied fruit, and spices. A floral freshness takes the upper hand on the long finish of this supremely subtle and light-footed Champagne. Such a beguiling mix of youthful energy with eminent ageworthiness. Readers who can find the 1988 should not hesitate, as it is stellar.

    Krug's just-released 1990 Collection is magnificent. Remarkably fresh for a 26 year-old wine, the 1990 Collection captures the Krug house style at its very best. Floral notes meld into hints of apricot, chamomile, orchard fruit, vanillin and sweet spices. On the palate, the 1990 is creamy, vivid and super-expressive, but what is most intriguing is how fresh the Collection is relative to Vintage Champagne, which has always been a heavier, more oxidative wine.     Krug's 2008 Brut is slated to be released at the end of 2021, but any readers who purchase the wine will need to exercise considerably more patience if they are to enjoy it in its prime, as it is very tightly wound out of the gates. Unwinding in the glass with a youthfully discreet bouquet of clear honey, dried fruit, walnut oil, Meyer lemon and rock salt, it's medium to full-bodied, deep and incisive, with a racy spine of acidity, a pretty pinpoint mousse and a penetrating, saline finish. The polar stylistic opposite of the rich, demonstrative 2006, the 2008 is a rather understated, taut vintage from Krug that isn't as liberally endowed with the house's characteristic toasty patina as its immediate predecessor.     Aurélien Laherte has been experimenting with a sans soufre (zero-sulphur) cuvée for several vintages, achieving success in 2018 with Nature de Craie. This cuvée is derived from two Premier Cru terroirs in Vertus and Voipreux, featuring vines planted in 1960, 1965, and 1987. The term "craie" refers to the chalky soils which lie on the lower slopes, which provide good exposure and and in turn providing fruit ripeness and no need for additional dosage. The hand-harvested fruit undergoes traditional pressing and maturation in neutral oak barrels, followed by aging under cork for 12 months. Laherte realised the secret to creating a cuvée with zero additions was to let the wine undergo full malolactic conversion, followed by bottling with zero dosage.

    Aurélien Laherte’s Ultradition showcases vineyards from 8 villages of the Côteaux Sud d'Épernay & Vallée De La Marne. 60% Pinot Meunier, 30% Chardonnay and 10% Pinot Noir grown ecologically on limestone soils. The base wine is vinified in a combination of large format foudres, tanks and oak barrels, where it partially goes through malolactic fermentation. The assemblage contains 40% of reserve wines that have been aged in barrel. Finally, the wine spends 6 months maturing on fine lees in bottle before disgorgement for release. 
    Showing ample buoyancy over a pale straw coloured base is a lacy white mousse. A delicate yet very persistent bead finely threading its way through the wines core. Captivating aromatics of yeast lees and baked bread are followed by some citrus, oily toast like notes and hints of almond. The base wine is made up of 60% direct pressed white wine, 30% maceration (destemmed fruit is left in contact with the skins for a short while) and 10% red wine, which is fermented and matured in a combination of large format foudres and oak barrels. 
    An exceptionally fine and very persistent bead weaves its way through a strawberry pink coloured base after a well formed frothy white mousse dissipates. Filling the nostrils are enticing strawberry and raspberry aromatics which are complexed by some baked bread, yeast lees and light toast notes. Delightfully sculptured by refreshing acidity, the palate has delicious raspberry and strawberry fruits racing across it with yeast lees, baked bread and chalky tones lending further interest. Finishes nervy, crisp and long.

Vinous in a way, gently savoury throughout, exceptionally long and runs with so much energy. Beautiful.

    Larmandier-Bernier’s Latitude is a 100% Côte des Blancs Chardonnay from vineyards on the southern side of Vertus. These are vineyards on roughly the same latitude and the name also hints at the breadth of texture that the wines from these sites (having more clay in the soil) tend to offer up. In the cellar Larmandier uses mostly large format casks (almost all the wood now comes from Stockinger in Austria) and less and less steel tanks. The alcoholic and malolactic fermentations take place without inoculation, and there is no fining or filtration. Bottle maturation takes place in the underground cellars over a period of more than two years, and each bottle is disgorged manually, six months before being released and dosed at low, Extra Brut levels.
    Once dissipated, the creamy white mousse leaves behind a pale straw coloured base that has a glimmer of gold to the edges. Nibble and exceptionally fine bubbles rising to the surface. On the nose, aromas of pear intermingle with citrus, yeast lees, light baked bread and hints of sherbet. Long, dry and virile, the refreshing palate consists of baked pear, citrus and yeast lees characters over subtle oily toast nuances and faint remanets of biscuit and cashew. The finish is very dry with crisp, mouth watering acidity and a long refined aftertaste.

    The Extra Brut Blanc de Blancs 1er Cru Latitude from Larmandier-Bernier is a powerful, structured wine. Deep and resonant on the palate, the Latitude packs a serious punch. There is no shortage of depth or intensity, that much is clear. Dried apricot, sage, fennel, crushed stone all open up in the glass, adding layers of nuance. Readers should expect an imposing, rich Champagne that will be at its best at the dinner table. Like all of the Larmandier-Bernier Champagnes, the Latitude will offer its best drinking if opened several hours in advance. This release is 60% 2015 and 40% reserve wines. As always, Latitude emerges from clay rich soils that confer breadth. Dosage is 4 grams per liter.

    Saignée literally means ‘to bleed’. In winemaking parlance, it means to draw the free-run juice of a grape, off the grape skins typically prior to, or shortly after, the start of fermentation. In this case, the grapes (100% Pinot Noir) are allowed to macerate for several days before the juice is drawn off and it is this ‘soak’ that gives the colour and much of the body and flavour to the wine. This technique is now extremely rare in Champagne—it is a demanding method of vinification that requires grapes with an excellent degree of maturity. Hence most rosé (in Champagne) is made by the addition of a little red wine. This bottling is drawn entirely from what is thought to be the oldest Pinot Noir vines in Vertus, and one of the very last 100% Pinot vineyards. As with all of Larmandier’s wines it’s naturally fermented. Larmandier raises part of this cuvée in a Nomblot concrete egg and partly in stainless steel (and more recently he has been trialling amphora as well).

    This is very dry and vinous with very fine bubbles that wrap themselves around the wine. It's full with lovely fruit that is subtle and encompassing on the palate. Caressing texture and finish. Some pie crust and dry biscuit undertones here. Also white pepper. The base is 2014 and bone dry. Six years on lees. 55% pinot noir and 45% chardonnay. Bottled in May 2021.

It has striking freshness on the nose, bags of pure, zippy strawberry and raspberry fruit flavours, and satisfying vivacity.     Their Côte Blanche is 100% Chardonnay from the 45 year old vines. The harvest base is 2016 with 52% reserve wines spending 60 months on lees before disgorgement and release.

Nosing offers up a classic Champagne sniff of baked bread, dried honey, yeast lees, brioche and cashew that’s quite intoxicating. Rich and expressive with a cream tinged mouth feel and dry chalky finish, baked bread, pear, yeast lees and brioche flavours are quite full across the palate. Citrus and roasted cashew like nuances the back drop. Vivid acidity with a long bready, oily textured aftertaste.

Complex nose with lemon and grapefruit aromas, as well as closed red apple, blood orange, light biscuit spices and toasted hazelnuts. Super fresh. The palate starts pithy and fleshy with pink grapefruit, blood orange, red apple, sliced strawberry and nectarine. Expansive and mouth-filling build that is driven by concentrated fruit, Then it tightens and turns to a more mineral edge, before smoothly honed phenolics finish it long. It is 60% pinot noir and 40% chardonnay, 32% oak fermentation in those same proportions, no chaptalization, no malolactic and a dosage of 7g per liter. From organically farmed grapes. Very complex, it strikes a natural balance and is very drinkable already, though will develop well for more than a decade in the cellar.

    The 2014 Cristal is another in a long line of gorgeous wines from Roederer and long-time Chef de Caves Jean-Baptiste Lécaillon. A dazzling, vibrant Champagne, the 2014 impresses with a stunning combination of fruit density and linear energy that brings to mind a hypothetical blend of 2012 and 2008. At times, the bubbles feel totally wrapped up in waves of creamy, resonant fruit to the point the mousse is barely perceptible, especially with aeration. The flavors are bright and finely sculpted, leaning very much into the citrus, floral and mineral end of the spectrum.
    The blend is a classic: 60% Pinot Noir and 40% Chardonnay taken from 39 of the 45 parcels that comprise the Cristal estate. In most vintages, the Pinot components are roughly equally split between Verzy/Verzenay and Aÿ, but in 2014, Lécaillon favored Verzy and Verzenay, two north facing villages in the Montagne de Reims (where rain was less problematic) known for conferring saline energy and vibrancy. Rain was much more of an issue in the Vallée de la Marne. Consequently, some of the Pinots in Aÿ were diluted and did not make it into the blend. Chardonnays were sourced from historic plots in Avize, Mesnil and Cramant. About 32% of the lots were fermented in wood, the rest were done in tank. As always, all of the malolactic fermentations were blocked. In 2014, the growing season was marked by a good spring followed by a cool, wet summer and then very favorable weather in September. I vividly recall that there was not much enthusiasm for the vintage at the outset. Today, though, opinions are starting to change, at least with regards to some wines.
    Since 2012, Cristal has been made entirely from organically-farmed grapes, an approach Lécaillon adopted in order to achieve a more ideal and parallel relationship between sugar and phenolic ripeness. “Champagne is always a battle between picking too early and rot,” Lécaillon has often said during our tastings. One of the other benefits of organic farming is that it naturally lowers yields. As Champagne fans know, the great wines of the 1950s and 1960s were made at a time when yields were in the 5,000 kilo per hectare range. Then, in the 1980s, widespread planting of higher-yielding clones led to an entirely different situation in the vineyard. Today’s permitted yields are 11,000 kilos per hectare, with some variation in years that present unusual growing conditions. With organic farming, yields for Cristal are in the 7,000-9,000 kilo per hectare range. Another innovation at Roederer has been a focus on higher-density plantings with newer vineyards, an approach that encourages low production per vine. But back to the wine. Drink 2024 - 2064.

    The 2014 Cristal is a terrific effort that transcends the vintage. Bursting from the glass with expressive aromas of ripe citrus fruit, nectarine, white flowers, freshly baked bread and subtle hints of honeycomb, it's medium to full-bodied, vinous and fleshy, with an exuberant core of fruit that's girdled by racy acids, resulting in a wine that's simultaneously chiseled and demonstrative, meaning that early appeal doesn't come at the expense of the requisite tension for long-term cellaring. Concluding with a long, aromatic and intensely chalky finish, it is a brilliant Champagne that will offer a broad drinking window. This bottle was disgorged in June 2021 with seven grams per liter dosage. Drink 2021 - 2050.

Sleek acidity continues through to the finish, with additional racy character provided by a streak of minerally saline and chalk, which gains momentum through the midpalate and rings out on the well-cut, lasting finish.     It’s always educational, and a treat, to taste the latest vintage of Louis Roederer’s flagship Cristal Champagne. This cuvee is sourced from 45 separate plots covering just under 200 acres spread between the villages of Verzeny, Verzy, Beaumont-sur-Vesle, Aÿ, Avize, Le Mesnil-sur-Oger, and Cramant. The vineyards are farmed either organically or biodynamically and are planted to a 60/40 split of Pinot Noir and Chardonnay. Each parcel is vinified separately and for the 2014, only 39 parcels made the final selection, with the blend being roughly 60% Pinot Noir and 40% Chardonnay. The wine has the malolactic fermentation blocked and is brought up in a mix of 32% oak and 68% tank. This was a warmer year that saw fabulous springtime weather, a slightly cooler, rainy summer, and a great end of the year. The 2014 fits in nicely in recent vintages and has a style all its own, showing a fleshy, round, nicely concentrated style reminiscent of the 2012 yet not quite the precision of either the 2008 or 2013. Gorgeous and classic Cristal stone fruit, chalky minerality, white flowers, almond paste, and subtle toast emerge on the nose and it hits the palate with medium to full-bodied richness, a supple, almost creamy texture, terrific balance, and a great finish. It’s surprisingly approachable yet I’ve no doubt it will evolve nicely given its mid-palate depth and overall balance. It’s beautiful today and a terrific Cristal to enjoy over the coming two decades or so. It’s unquestionably more approachable than either the 2013 or 2008, but not far off qualitatively.     Pours with a frothy white mousse that shows good hold over a pale straw coloured base that has flashes of pale gold around the outskirts and a nibble stream of bubbles flowing through it. Top notes of peach and strawberry intermingle with yeast lees, citrus and a subtle baked character. Tense and sculptured the palate features chalk tinged flavours of citrus, green apple and delicate lees characters which sit over a minerally oyster shell like backbone. Finishes lean, bone dry and elegant with precise acidity and a tight focused mineral laden conclusion.

Pale gold tinged edges with a very fine bead showing good persistence through its core. Citrus, baked bread, yeast lees and brioche scents make their way out of the glass with ample intensity. Hints of honeyed cashew and ginger lend further complexity. Vibrant pear and citrus fruits are intermeshed with baked apple, yeast lees, almond and chalk characters. Finishes dry, faintly creamed and invigorating.

    Produced from 44% Pinot Noir, 32% Chardonnay, and the rest Meunier, the 2015 Champagne Grand Vintage Extra Brut pours a medium golden-straw hue and is opulent on opening with toasty aromas of baked bread, spiced orange peel, marzipan, and dried peach. Full-bodied, with a pillowy mouthfeel, it has a very nice balance of ripe fruit while retaining freshness Silky textured, its notes of citrus oils and orchard fruits last through the finish. This elegant and warming wine would do fantastically well moving into these cooler fall and winter months. Although I personally enjoy where this is for drinking now, it should hold up over the coming 6-8 years. Disgorged February 2022. Drink 2023-2031.

Flavours of freshly baked bread intermingle with oily toast like characters and yeast less underpinned by subtle cashew and citrus nuances. A dry creamy like finish is counterpointed by good crisp acidity. Long oily baked bread, toast, yeast lees and subtle cashew aftertaste.

Much of the art of great Champagne lies in blending: marrying wines from particular years, plots or grape varieties. Each grape variety has its own characteristics. Chardonnay gives wine with a greenish-gold tinge, refined and long on the palate; rather assertively crisp when young but more expansive once it has acquired its sparkle.
