    Celebrating its 150th anniversary this year, Bacardi has just released its first major product innovation in 15 years. Debuted in 2011, this is Bacardi’s answer to the spiced rum category, although the spirit is merely a rum base, so can’t be classified as a rum as such.

    Targeted to a male audience, Ashley Hughes at Bacardi Lion comments, “We anticipate Bacardi Spiced will attract a new generation of male consumers to the brand, one with an irrepressible spirit for adventure.”

    Tasting note: Deep gold / burnished brass appearance. The top note of vanilla ice cream is hard to get passed so we’ll let this sit for a while. Several minutes later the bouquet has expanded to reveal... vanilla... this time over hints of melted butter. No other spices to speak of. The palate repeats the aroma, though with a less sweet delivery. Moderate concentration. Straightforward vanilla profile with almost indiscernible spirit warmth. Concludes slightly drier, with a short vanilla and brown sugar fade. One dimensional. 35% Alc./Vol.

    ‘Spiced’ is the generic name given to any rum to which a local herb or spice has been added and allowed to impart its particular flavour. The most common additives for 'spiced' rums are Cinnamon, Rosemary, Aniseed and Pepper, but often vanilla will dominate contemporary styles. In their purest form, they're an acquired taste, however the best examples are deliciously different and make a flavoursome punch.

    Other reviews... The no-nonsense bouquet opens up with marshmallow, light toffee and light honey. Early taste is sweet and molasses-centric, then at midpalate there’s a spiced honey flavor that gently guides you to the creamy, cake frosting finish.     Don't buy this if your idea of spiced rum is vanilla, vanilla, vanilla. The creators of Dark Matter use fresh ginger, fresh green peppercorn, long pepper and allspice berries, all hand prepared, and it shows. The rum is only very young, so it doesn't stand out in the flavour profile, but the spices are leaping out of the glass.

    Tasting note: Dull copper penny colour shows considerable viscosity. Up front with dense aromas of cinnamon, smoky cardamom, clove, liquorice root and gingery warmth. Follows through with a super silky, creamy, sweet burst of clove, cinnamon, cardamom and vanilla; develops momentum with warming cinnamon and ginger heat. Finishes with sustained intensity. A robust, in-your-face example that's not ashamed to deliver what the label says. 40% Alc./Vol.

    A curiously named spiced rum which references events in the South Pacific during World War II. Islanders were living with little contact with the outside world when they saw a fabulous wealth of goods rain from the sky as the American Army parachuted in tons of supplies ahead of the arrival of its troops. The islanders had never seen such a bounty and even after the cessation of hostilities, continued to worship the "cargo cult" in the belief that the gods would again deliver the goods they'd so enjoyed during the war.

    Brand creator, Jonny Croft, adds, "John Frum's Cargo Cult Rum", drew on yet another element of islander folklore. John was a really popular name among the American troops and they'd introduce themselves (to the islanders) with a handshake, 'hi, I'm John from Alabama,', 'John from Mississippi', etcetera. All the islanders could understand was 'John Frum', so that's what they called all these strangers".

    The rum sources sugarcane from the Ramu River Valley in Papua New Guinea as well as Fiji.

    Tasting note: Polished brass / brilliant clarity. Enticing and well defined aromas of vanilla custard, ginger bread and later hints of clove and baklava; contrasts on the palate which is unexpectedly dry, light to medium bodied, featuring cinnamon, ginger and light vanilla ice cream; builds towards the finish where the grassy rum-base peaks through.     St Lucia Distillers Group of Companies is a small rum distillery situated in the scenically beautiful and agriculturally rich valley of Roseau on the Caribbean island of St Lucia. A passionate team of distillers and blenders work together to produce a range of over 25 rum and rum-related products, many of which have won honours at international competitions. This spiced version contains local spices and fruits including cinnamon, clove, nutmeg, vanilla, coconut, all spice, lemon and orange. Also added is Richeria Grandis – known locally as “Bois Bande” – a bark renowned in the Caribbean as a potent aphrodisiac . The distiller's comment, "We have found Chairman’s Reserve Spice benefits from a combination of steeping certain spices and Bois Bande in the rum for up to a year while the other ingredients are added during the blending process. In this way we can bring out the flavour of the spices and fruits while preserving the complexity and harmony of the underlying rum."

    Considered by some the final word in the spiced rum genre and included in Wine Enthusiast's Top 50 spirits for 2011.

    Tasting note: Brillinat polished copper pot colour. Powerful and engaging opening aromas include bubble gum and ginger biscuit; more redolent of fruit cake in subsequent inspections. A creamy entry follows through to an off dry, stewed fruit, allspice and gingerbread profile with cinnamon, clove and gingerbread competing in the finish. Lovely balance and concentration with the mid palate sweetness nicely tempered in the fade. Up there with El Dorado as one of the best of its kind to hit the market to date. 40% Alc./Vol.

    Other reviews... So this is what all the bartenders have been talking about. Bright copper-penny color and a mulled-wine aroma rich with cloves, cassia bark, and sweet dried fruit notes. The flavor is delicately balanced, sweet and spiced but not too much of either. Ginger, cinnamon, and allspice take the leading role, not vanilla, from the first sip through to the lingering, lightly spicy finish.     Tasting note: Deep sienna brown. Lifted aromas redolent of fresh-sliced fruit cake show no dimunition after ample exposure. Aeration accents glace cherry and hints of liquorice strap. Slightly let down by the delivery which echoes the purity of the aroma but comes across a little flat. The finish redeems the mid palate as liquorice bullet and mild ginger biscuit flavours add some vibrancy. Arguably more like a liqueur than a spiced rum - enjoyable nonetheless. 40% Alc./Vol.

    A blend of Caribbean rums that should appeal to fans of rich, navy-style rum. Many years ago, in the Caribbean Islands, a ship carrying a large quantity of black spiced rum mysteriously disappeared. It is rumored that the ship was attacked by the Kraken, a legendary sea monster known for its deadly tentacles, razor sharp teeth, and insatiable appetite. Even though this story can't be proven, the stories still remain, along with a respectful fear of the sea. The lost barrels of rum were renamed after the Kraken, to both honour and appease him.

    Tasting note: 47% ABV is standard for this elsewhere, however the Australian import is a lighter bottling. Pours sienna brown with copper edges and offers aromas of chico lollies, creamy soda, subdued vanilla and caramel with the spices otherwise indiscernible. Medium weighted and broad in the mouth with moderate sweetness including flavours of chico lollies, dilute maple syrup and creamy soda. Pleasant spicy warmth to finish. Not overtly spiced in the traditional sense. It would be more compelling at a higher proof. Easy drinking. 40% Alc./Vol.

    Tasting note: Clear / very pale straw blush. Warming, semi sweet aromas. Vanilla, then fruity dark chocolate (orange / fig), faint peel freshness and muted cinnamon warmth. A silky, semi sweet delivery that repeats the bouquet with a delicious cinnamon flourish. Ends vanilla-heavy, but with enough spice and vibrancy to balance. 40% Alc./Vol.

Just arrived in Australia, it was matured in oak for one year before being blended, charcoal filtered and mixed with various herbs and spices. The producers recommend adding a dash of pepper sauce or serving with cola.

    Tasting note: Named for the Spanish word for "fire". Confected aromas, redolent of caramel nib milk chocolate. Syrupy, broad, fat and relatively short with the palate repeating the aroma. Virtually zero spices detectable, with the exception of vanilla and a meek pepper / baklava / cinnamon surge at the finish. Liqueur-like and one dimensional. 40% Alc./Vol.

    Created by father-son team Robert and Zachary Brinley with their distillery based in the beautiful Carribean island of St Kitts, Brinley Shipwrecked Spiced Rum is produced utilizing 4-year old Carribean Rum and spiced with Madagascar vanilla, orange, nutmeg, clove, and other tropical spice flavors. Similar to many spiced Rums on the market, Brinley maintains this is best enjoyed as a mixing Rum, but is smooth enough to be enjoyed over ice.

    Tasting note: Presents a pale gold in the glass and opens restrained and not especially spicy at all yielding moderate scents of vanilla custard, creme caramel and iced coffee. A light silky entry leads into a light to medium bodied vanilla / mocha profile that's barely spicy, a little flaccid and short. Concludes with a very delicate warmth. Super smooth but lacks personality. 36% Alc./Vol.

Vibrant aromas of creamy vanilla, butterscotch, and frosted caramel cake follow through on a round supple entry to a fruity medium-to-full body with pure, nicely integrated cinnamon bark and nutmeg seed spiciness and a long, lightly peppery fade.     Pussers have announced a new release in the form of Gunpowder Proof Spiced Rum. Blended to Admiralty specifications and aged for a minimum of three years in once-used charred oak bourbon barrels, it comes mellowed with a subtle blend of spices. These include banana, vanilla, chocolate, cinnamon and a hint of ginger resulting in an incredibly smooth spiced expression with genuine depth and power. Reviews on the blogosphere suggest Pussers is breaking new ground. At a significantly higher ABV, this is guaranteed to pop in mixed drinks and cocktails.     By several reports, this sets a new standard for the category. Far from the segment’s clichés, it's not one of those syrupy rums packed with sweeteners and colourings, rather it's an authentic spiced rum, with very little added sugar (15g) and zero colourings.     This spiced specialty is made from fair trade organic molasses, micro-oxygenated to bring out the flavour of the sugar cane. Additions include whole allspice, cinnamon, clove, nutmeg and vanilla, hand sliced and crushed, as well as hand zested fresh California oranges.

    Readers should note, in any other country, this would be labelled as Rum. The reasoning behind the 'Molasses Spirit' labelling, is that in Australia for a product to be called a rum it must be aged in barrels for 2 years. With this product, the producers, "Greenbar Collective", skip the entire barrel aging and charcoal filtering process, as the filtering process removes a significant amount of the cane profile. Australia is the only country that defines rum this way.

    Visitors to the Bacardi plant have noted that batches are matured differently for different markets, and Australia has its own giant vat for just this reason. Any colour imparted by the mandatory two years in oak is stripped out before bottling.

    Tasting note: Bright polished copper. Ideal clarity. Compelling scents of ginger bread, baklava, cinnamon and clove leap from the glass offering an authentic Spiced Rum bouquet. The palate contrasts the aroma - keenly dry throughout with a breezy opening preluding a convincing cinnamon / clove / ginger flourish that packs some genuine heat.     The El Dorado range of rums, often referred to as the "Liquid Gold of Guyana", are a premium range of rums, produced by Demerara Distillers. In 1992, the company introduced its El Dorado range of rums to the local and international markets. A small allocation has finally arrived in Australia. The distillery has the facilities to produce every type of rum and has assured supplies of its basic raw material, molasses, from locally-grown sugar-cane. Its distilleries are entirely self-sufficient, with their own capability for steam and electricity generation, water supplies, water treatment, quality control and process laboratories. As well as the most up-to-date distillation equipment, Demerara Distillers possesses a wealth of traditional expertise, with old-style Demerara pot stills, and patent rum and alcohol stills. The last fully operating rectangular wooden Coffey still in the Western world continues to be used for the production of the companies finest spirits.

    El Dorado Spiced Rum is a full bodied example of the style and employs all natural flavourings to capture a distinctive Caribbean character. Awarded a Silver Medal at the 1999 International Wine and Spirit Competition of London.

    Tasting note: Bright deep gold colour. Offers up a delightful amalgam of cinnamon, nutmeg and clove coupled with spicy fruit cake notes. The palate is authentically spicy and true to style with its delicious Christmas fruit cake quality repeating the aroma, this time with a wonderful surge of ginger biscuit towards the finish.     The small, yet picturesque island of Mauritius shares a familiar history with many of the Caribbean isles, despite being half the globe away. The island was discovered by the Arabs, mapped by the Portuguese, then colonised by the Dutch, then the French until they surrendered to the the British who set out to capture the island during the Napoleonic wars.

    History tells us that European navies and armies were a thirsty lot who took their drink producing knowledge wherever they traveled. In Mauritius, sugar was widely available, and where there's sugar and a Navy, there's Rum! Poor distilling practises in Rum's early days occasionally allowed volatile compounds (which are both harmful and terrible to taste) to creep into the spirit, these flavours were often masked by the addition of local spices and flavourings. This alternative styled rum eventually became popular, despite the reduced need for masking agents as distilling practises improved.     A spiced rum, based on the full-bodied, high-proof Caribbean rums the seafaring fraternity would have enjoyed centuries ago. Spices include Madagascan vanilla and a good dose of orange peel, finished with a handful of cinnamon, cloves and just a hint of cardamom. The label bears an illustration of a Navy grog tub with the words: “The Queen, God Bless Her”.

    Like its sister spirit from the same company, "Bathtub Gin", the bottle is wrapped in crinkled brown paper, wound with twine and sealed with black wax. Enjoy it neat, or with ice and a squeeze of fresh lime.

    Tasting note: Viscous deep amber / copper colour. Medium fresh aromas of baking spice (think clove, cinnamon, nutmeg) over vanilla and hints of banana cake.     Sailor Jerry rum is labelled as a tribute to both the man, Norman 'Sailor Jerry' Collins and the style of Rum 'Jerry' concocted and consumed whilst serving in the US Navy. Collins lived quite an extraordinary life, heavily influenced by artwork he saw whilst sailing in the Navy, he turned his hand to tattoo artistry, thanks to his Eastern influences and strong bonds forged with Japanese tattoo masters - the same masters that were responsible for the training and development of artists to carry on Japan's ancient tattoo tradition.     An alternative take on traditional spiced rum, Sweetdram blends quality Caribbean rums from Guyana, Jamaica and Barbados and infuses them with grains of paradise, chamomile, lime leaf, fennel and cardamom as well as lapsang and organic figs. The latter are warm-smoked at the distillery. Their heavy phenolic content gives the false impression of an unusual, lightly-peated single malt. Unlike most other spiced rums, this has no added sugar.
