Ah, now we’re talking. Sparkling shiraz, one of Australia’s great wine styles and a personal favourite of mine, especially at Christmas... actually any time. Sourced from McLaren Vale and the Adelaide Hills. This is not a monster but has tremendous fruit flavours revealing typical savoury plum, dark chocolate and spices with a captivating overriding perfume. Smooth and beautifully poised through to its finish. Lovely sparkling shiraz. Cellar: 10 years.

Never understand why we see so little of this most joyous style of wine. That foaming purple filling the glass, surely brings a smile to every face. This is all chocolate, truffles, mocha, spices and coffee beans. Lovely blackberries and dark plums. A blend of fruit from both McLaren Vale and the Adelaide Hills. Very gentle sweetness, as one expects with the style. Good length. No reason it can’t be cellared, but it seems a better idea to drink it now and then buy more. Delicious.

Other reviews... [tasted 2016] True to the character of Coonawarra cabernet, this is a cuvee that sings with all the complexity of deep reserves, a blend from '14 back to '95. Black- and redcurrant fruit meets dark chocolate and notes of red capsicum on a long and bright finish. Firm, fine tannins are well handled and promise a long future. A standout in the sparkling cabernet stakes.

First tasted August 2007 This wine should impress, but fails to do so – the base wine has been blended from 8 vintages of Reserve wines and kept on lees for 5 months. The wine starts badly, there is virtually no mousse and very little bead – in fact it could barely be described as being spritzig. Deep crimson colour with deep crimson hue. Hints of chocolate and spice on the nose, with a slight effervescent sensation on the palate. Dry tannins overwhelm the fruit component. Aftertaste of plum and stewed fruit.

Sparkling Shiraz is a unique Australian wine that’s synonymous with the Great Western region having been in production since the early 1900’s. The base wine for this cuvee is left on yeast lees in bottle for 24 months or more and disgorged in the traditional method. The dosage liqueur contains a small quantity of very old Best’s Liqueur Muscat.
An exuberant frothy dark red tinged mousse slowly subsides to reveal an inky black dark red core that’s finely threaded by a steady stream of tiny bubbles. The olfactory senses are engulfed by heady ripe blackberry, liquorice and dark chocolate aromatics followed by lightly toasted vanillin oak, dark plum and spice. The colour here is something else; it makes deep purple look insipid. Blackberry and violet, dark boiled XMAS cake, chocolate and leather, with a slightly briny character too. It’s dense and tannic, full of juicy purple flavour, along with raspberries, salt beef and spice. It’s almost more savoury than simply sweet, and has layers of complexity and a full throttle finish rolling with dark chocolate and a thick pillow of tannin. Pretty much, this is how you do it. Almost ready now, but will really be better still in a few years. Drink 2017-2029+

Deep red colour with a trace of purple. The bouquet is savoury, with dried herb and earthy notes, traces of vanilla, chocolate and spices. The wine is rich and medium to full-bodied, with appropriate mid-palate sweetness followed by drying but soft tannins and a touch of licorice. In our opinion, the best Sparkling reds are made entirely from Shiraz, however, winemakers often choose to experiment, with a variety of grapes. At Fox Creek, they have chosen to add Cabernet Franc to the blend, which has tended to dry the wine out too much, and move it out of style – but that’s a personal observation some might like to challenge.Opaque crimson black colour with excellent deep mauve mousse. The nose is a little subdued, with aroma of blackberry, liquorice and raspberry. Generous palate flavours but quite dry, with raspberry, blackberry and liquorice dominant. Fine dry tannins, followed by long liquorice spice aftertaste. Cellar 4-5 years

This solid sparkling red builds its base with fruit from mature Mclaren Vale Shiraz vines combined with a tiny batch of older Grenache that adds both lift and spice. This is then finished off with a small batch of fortified vintage Shiraz from Ben’s prized Piebald Vineyard, which brings the subtle sweetness to an otherwise rich and complex wine.

Pours with a good creamy purple tinged mousse which once dissipated reveals a bright dark red base wine colour with a very fine and profuse bead. Pronounced aromas of ripe blackberries and liquorice are overlaid by some dark chocolate with vanillin oak end notes. Rich luscious flavours of ripe blackberries and dark chocolate are to the fore followed by some dark plum, liquorice and vanillin oak nuances. Creamy texture finishing relatively dry with a medium to long aftertaste of dark plum, dark chocolate, liquorice and vanillin oak.

Regardless of the variety, Australian wines are invariably measured against benchmarks, usually based on ‘old world’ wine styles. However, there is one style of wine where the French missed their chance, and even though Australia pinched the idea from them, the difference is that Australia got it right. Our distinctive sparkling reds are a sheer delight.

In the 1970’s, examples like ‘Cold Duck’ had a reputation as the favourite of ladies of ‘easy virtue’ (and also of girls who were inclined to wish that their own virtue was not quite so difficult). Mercifully the fad self-destroyed, but in the process very nearly took Australian sparkling "burgundy", as it was then known, with it. Since then, Australian winemaker’s passion for the style has evolved into a more serious affair.

Australia has made a definitive stamp on the wine world with our own robust examples typically made using Shiraz. Bold Sparkling reds from the Barossa and Central Victoria now exemplify the style, offering deep crimson coloured wines with creamy mousse and luxurious fruit flavours. The best examples can be aged for over a decade. Always served chilled, Aussie Sparkling Reds have become a tradition at the Christmas dinner table for many families. When you buy Sparkling reds online at www.nicks.com.au, you can get it shipped Australia wide free of charge for orders over $200.
