Sparkling Shiraz is a unique Australian wine that’s synonymous with the Great Western region having been in production since the early 1900’s. The base wine for this cuvee is left on yeast lees in bottle for 24 months or more and disgorged in the traditional method. The dosage liqueur contains a small quantity of very old Best’s Liqueur Muscat.
An exuberant frothy dark red tinged mousse slowly subsides to reveal an inky black dark red core that’s finely threaded by a steady stream of tiny bubbles. The olfactory senses are engulfed by heady ripe blackberry, liquorice and dark chocolate aromatics followed by lightly toasted vanillin oak, dark plum and spice. Rich dark plum, blackberry and liquorice fruits are delivered with terrific concentration and power. Lying underneath is subtlety toasted vanillin oak and traces of earthy dark chocolate. Luscious mouthfeel finishing dry and vibrant with a long fruit laden aftertaste.
