Rabbit Tale “Cavehill” is one of the company's flagship offerings, labelled as a 'four-grain triple malt' recipe due to its mash bill of 70% Corn, 10% Malted Wheat, 10% Malted Barley and 10% Honey Malted Barley. Aged for a minimum of three years in new American oak barrels, the palate is described as warming with hints of citrus, melted toffee and vanilla bean. 47.5% Alc./Vol.

Other reviews... I’ve got to give it to Rabbit Hole, out of the gate their whiskeys weren’t overly exciting, but as the distillery has matured, so has their approach to their whiskeys. Made in small 15 barrel batches, Cavehill with its unique mashbill offers an interesting flavor profile in an extremely accessible and friendly sip. This is a great next step for many whiskey drinkers looking for something a touch more interesting, but fear going too far over the line. Its approachable delivery of sweet, but not-too-sweet flavors against a more traditional spice and peppery finish works well. It’s young and lacks complexity, but brings a clean and bright taste to its delivery. It's accessible in all the right ways, and while it might not immediately wow, it maintains a level of intrigue that makes it quite a bit of fun to drink. - breakingbourbon.com

...Rabbit Hole's core bourbon brand now carries the name Cavehill, though the liquid remains unchanged. The nose starts with dried red fruits, drying oak tannins, raspberry jam, and an earthy note. A palate of spiced oak, milk chocolate, caramel, white pepper, and sweet black cherry is followed by a lengthy finish of orange peel, honey, sweet lemon cake, creamy chocolate, and pepper spice. Rich flavors, creating an easy whiskey to savor. 89 points - whiskyadvocate.com

Single-vineyard grenache made in the 'cab-mac' (carbonic maceration) style, matured in old, seasoned barrels. Such a pretty wine this, bright in hue with red cherry, plum and raspberry fruits cut with hints of exotic spice, wildflowers, crushed stone, raspberry coulis, wild strawberries, citrus rind, gingerbread and earth. Detailed with plenty of space, tension and verve, a minerally pulse and a real sense of savoury, purely fruited joy. Just lovely drinking. Drink by 2033.

A fluffy white mousse holds well eventually subsiding into a pale straw coloured base that has a very fine and steady bead flowing through it. A blend of 60/25/15% cabernet sauvignon/merlot/malbec. Matured in older French oak for 15 months. A deep-ish crimson red. Another successful, vibrant fruit-driven red from Warramate. Aromas of freshly picked cherries and a hint of bell pepper and cedar lead onto the medium-bodied, quite delicious and fine-boned palate. Ready to trot, but all good if you still have some in the cellar four to six years from now. Drink by 2028.

I've been oscillating between this and its Wait vineyard sibling, struggling to determine which I prefer. While this is not the winner, at least for now, I suggest you buy both. This may well outpace the other in time. There is more intensity, sap and while 'power' is too philistine a word for these beauties, more oomph. Ferrous, even. Yet the mocha seams of oak are more obvious and weighing on the flow, a minor foible to be erased, surely, with patience. Not the pinot-esque beauty queen Wait, but so much to adore. Raspberry bonbon, candied orange peel, vanilla, cardamon and the tamarind entrance of the Marrakech souk. Drink 2022 - 2030.

The 2021 Don Shiraz benefited from the 2020/2021 growing season's respite from previous hot and dry conditions, with abundant winter rain leading to healthy vineyards and slightly above-average crop sets. Despite a dry summer, early canopy growth sustained the fruit, which developed flavor and ripeness early, allowing for harvest with lower sugar and higher natural acidity. The fruit arrived in perfect condition, and the resulting wines from this vintage are noted for their freshness, depth, and personality, marking 2021 as a standout year.
Vinification included a natural soak followed by a week of natural fermentation, with careful extraction methods employed throughout. Post-fermentation, the wine was basket-pressed and underwent malolactic fermentation in oak. The 2021 Don Shiraz opens with a quiet assertiveness, revealing earthy and spicy notes indicative of a cooler harvest. As it unwinds, powerful aromas of red berries, leather, and dark chocolate emerge. The palate is refined and balanced, with assertive tannins, crisp acidity, and restrained opulence. The true depth and complexity of this vintage will unfold over time, promising a remarkable wine experience.

From New York City’s oldest operating whiskey distillery, the first since prohibition. Founded in 2010, Kings County operates out of the 118-year-old Paymaster Building in the Brooklyn Navy Yard. This little gem is described as a "Scotch-meets-bourbon hybrid", aged in a new barrel, yet with a light, smoky, peat-infused finish reminiscent of a single-malt.

Tasting note: Deep polished copper colour. Nice legs. Pencil shavings, new sawn oak, vanilla, orange zest and grilled corn aromas followed by a complex, pure, oily, semi-sweet delivery: Juicy and malt-like in the middle stages then gently tannic, corn-heavy to finish with hints of cocoa, leather and oak shavings. Beautifully textured. The peat remains in the shadows. 45% Alc./Vol.

Other reviews... Dark muscovado sugars mixed with orange peel, liquorice… and peat reek!!! Adorable delivery: thick corn oil is awash with molten muscovado. The smoke keeps a respectful distance, but is there with ever-thickening tannins; spices grow, the peat murmurs, the tannins throb quietly amid residual sugars… Quite stunningly lovely.

Legend has it that this unique bourbon resulted from malt shortage at the distillery. Faced with a waning supply of malted barley (which makes up 20% of KCD's regular mash bill) a distiller grabbed some peated malt by accident to finish the batch. A year later, the spirit was sampled and the results were so delicious that KCD decided to make a thing of it.

To be clear, this is not a classic bourbon finished in a peated cask. It's a whiskey that conforms to the requirements for bourbon, yet is made with a percentage of peated malt. Obviously, this is a practice more commonly associated with Scotch whiskies and the malt Kings County use for this whiskey was even grown and kilned in Scotland. The peated malt represents 30% of the mash bill alongside 70% New York State organic corn (from Klaus and Mary Howell-Martens at Lakeview Organic Grain).

Delicate woody aromas of balsa, fresh cut cedar and hints of liquorice before the sugars come to the fore as banana bread, light sticky date, caramel fudge and vanilla. There's only one 350-liter barrel of the 2021 Chassagne-Montrachet 1er Cru Morgeot, but the resulting wine is lovely, revealing aromas of pear, orange oil, nutmeg and clove, followed by a medium to full-bodied, satiny and seamless palate. 1x 350 litre barrel, unracked, from Les Fairendes. The oak is quite marked at the moment but there is easily enough fruit to cover it. A rumbustious approach with a gorgeous volume of fruit plus of course the oak backing. That will be cleaned up before bottling and this will be excellent. Drink from 2026-2033.

A fleshy, mid weighted Pommard with rich dark to black fruit framed by a study structure.

Domaine Charles Audoin was formed in 1972 by Charles and his oenologist wife Marie-Francoise, starting with three hectares in Marsannay. Their holding has now grown to around 14 hectares that captures some of the best parcels in Marsannay. Their son Cyril joined his father in 2000, and is now in charge of both vineyard and winemaking activities for the Domaine. Cyril is increasingly focused on vineyard health, to deliver wines with pure varietal expression and a sense of place. Rich dark to black cherry and anise flavours dominate the fleshy textured, mid weighted palate with dark plum, spicy vanillin cedar, earth and fresh herb accents tailing off through the back half. Sturdy tannin structure with a long ripe dark to black fruited finish that carries some gentle grip.

Light on it’s feet, fresh and refined with expansive red to dark fruits.

Domaine Charles Audoin was formed in 1972 by Charles and his oenologist wife Marie-Francoise, starting with three hectares in Marsannay. Their holding has now grown to around 14 hectares that captures some of the best parcels in Marsannay. They are among the most serious wines from the area, and while juicy and approachable young, have the capacity to age gracefully for many years.

La Charme aux Pretres is situated in middle of the Marsannay sector, and soils here are a reddish brown gravel over a bed of limestone. This high limestone content tends to produce an open knit wine with great structure and impressive ageing potential.
Dark red core with black toned edges and a red to dark red hue. Captivating the olfactory senses are perfumed like aromas of violet, red to dark cherry and strawberry which are complimented by hints of anise, earthy forest floor, spicy cedar and fresh herbs. Light on it’s feet, delicious red to dark cherry, strawberry, rhubarb and subtle anise flavours flow across the palate with a feeling that’s both refined and supple. Spicy vanillin cedar, earthy forest floor, delicate bramble and dried herb accents lend further interest. Showing ample freshness and polished tannins, it finishes expansive, savoury and spicy.

A long and beautifully refined Burgundy that’s understated in its power.

Domaine Charles Audoin was formed in 1972 by Charles and his oenologist wife Marie-Francoise, starting with three hectares in Marsannay. Their holding has now grown to around 14 hectares that captures some of the best parcels in Marsannay. Cyril is increasingly focused on vineyard health, to deliver wines with pure varietal expression and a sense of place. They are among the most serious wines from the area, and while juicy and approachable young, have the capacity to age gracefully for many years.

Les Longeroies is a relatively large vineyard located in the north of the Marsannay sector on the border with Chenove. The upper part of the vineyard has large amounts of limestone just below the surface, while the lower section has more red marl. Les Longeroies is one of the prime candidates to be promoted to premier cru status, and the wines from here are incredibly refined, yet also serious and well structured.
Showing plenty of depth is a dark red core that has black shaded edges and a vibrant red hue. Alluring scents of violets, red cherries and wild strawberries captivate the olfactory senses with whiffs of red liquorice, fresh herbs, forest floor and spicy cedar also evident. Long and beautifully refined across the palate with a beam of fresh acidity underpinning delicious red to dark cherry, a dash of sour cherry, strawberry and red liquorice fruits. Infusions of fresh herbs, forest floor and delicate spicy cedar nuances lie underneath. Understated in its power it possesses a polished tannin structure and supple mid palate feel. The expansive finish one of elegance and great persistence.

Wonderfully open and enticing with great sour-cherry fruit, this exudes generosity and succulence that’s hard to resist. Ample, fine tannins are already perfectly integrated on the medium- to full-bodied palate. Very long, generous yet precise finish. From organically grown grapes. Drink or hold.

Bright and giving, the 2022 Marsannay Les Longeroies bursts with scents of cherries, red berries, orange zest and peony. Medium to full-bodied, suave and fleshy, with an enveloping core of fruit and supple tannins, it concludes with a bright, mouthwatering finish.

This is aromatically similar to the Clos du Roy but with touches of plum and spice. The super-sleek, intense and velvet-textured medium-bodied flavors aren't quite as austere while displaying a similar level of minerality on the lingering finale that isn't quite as complex, though that of course may well change with cellar time. Drink through 2030+.

They are among the most serious wines from the area, and while juicy and approachable young, have the capacity to age gracefully for many years.

Clos du Roy is the northern most lieu-dit of Marsannay, and the relatively steep south-east facing vineyard sits above the town of Chenove. Soils here are light red with an element of sand, sitting atop a bedrock of hard limestone. Wines from Clos du Roy can be more elegant, aromatic, and approachable.
Red to dark red core with black toned edges and a bright red hue. Perfumed like in it’s intensity, the nose features alluring scents of violet, dark cherry, strawberry and anise which send the olfactory senses into a tail spin. Fresh herb, forest floor and spicy cedar notes are also evident. Rich, fleshy and possessing a gorgeous supple feel the palate is nonetheless fresh and light on its feet. Boasting a superb power wave, moreish red to dark cherry, strawberry and anise flavours expand across the mouth like a peacocks tail. Adding further nuance are notions of spicy cedar, fresh herbs and forest floor. The wonderfully refined conclusion long, spicy and fresh.
Drink over the next 8-10 years.

What an enticing nose of red fruits with only a whiff of toasty oak. Charming and filigree with super-silky tannins and an underlying firmness supporting the medium- to full-bodied palate. You could easily mistake this for a Chambolle-Musigny 1er Cru from a leading producer, particularly in the very long and precise, minerally finish. From organically grown grapes. Drink or hold.

Offering up aromas of cherries, raspberries, rose petals and dark chocolate, Audoin's 2022 Marsannay Clos du Roy is medium to full-bodied, ample and satiny, with bright acids and a succulent, charming profile.

Here a discreet application of wood surrounds the fresh, cool and restrained red and dark pinot fruit where a floral top note adds a touch of elegance. The more concentrated medium weight flavors possess excellent intensity while the moderately firm and youthfully austere finish flashes more evident minerality on the balanced and sneaky long finish. This is built to repay up to a decade of keeping but could reasonably be approached after 5 years. Drink through 2030+.

As I wrote last year, the 1995 Montrose is beginning to drink brilliantly, and this most recent example only confirms that. Wafting from the glass with a classic bouquet of red and black currant fruit, rich loamy soil, cigar box and black truffles, it's medium to full-bodied, deep and layered, with terrific concentration, ripe tannins and lively acids. The 1995 took its time, but this rather structured, powerful vintage of Montrose is now beginning to soften. Drink: 2020-2035.

Here we start to see the slightly austere side of Montrose, and how this helps it to age so gracefully. Exceptionally young at 22 years old, still tightly-structured and richly-scented. Cassis, truffles, cedar, burnished oak, and tobacco are set by lovely placement of tannins that are still fairly bullish and young. Classical and effortless. 63% Cabernet Sauvignon, 31% Merlot, 5% Cabernet Franc, 1% Petit Verdot. Drink: 2017-2035.

    $3900.00 Dozen
    ABV: 47%

"Another fabulous whiskey from Willett." - Jim Murray

Established in 1935 and still a private family owned and operated company, Willett Distillery (aka Kentucky Bourbon Distillers or ‘KBD’) have built a reputation as a bottler for a wide portfolio of brands including Johnny Drum, Rohan's Creek, Noah's Mill and Kentucky Vintage amongst others. In short, they're rather like an American version of a Scottish-style independent bottler. They purchase barrels of young whiskey and age them in their hill-top warehouses south of Bardstown.

Unmistakable in its bottle shaped after a copper pot still, Willett Pot Still Reserve was first released in 2008. This latest expression is a restrained, drier style, so if you're looking for layered vanilla and caramel richness in your whiskey, look elsewhere.

Tasting note: [Batch 15D1 tasted] Honey amber hue. Vapoury spirit before the aroma settles into form; dry and spicy at first developing blood orange, gum and sweet oak notes with further air contact deepening and sweetening the bouquet as vanilla, rock lolly, corn cob and peppermint come to the fore. Medium dry, full bodied delivery. Dried corn, orange zest and cocoa. Firm oak and a touch of tea leaf before the finish gains momentum with a thread of sugars. Concludes peppery, dark rye bread-like, mildly sappy and with solid length. Showcases the flavour range of bourbon and rye with a finely tuned sweet-dry balance. 47% Alc./Vol.

Other reviews... Another fabulous whiskey from Willett. You can so often trust them to deliver and here they have given us a Bourbon showing serious oak injection, yet a sweetness that counters perfectly. 95.5 points - Jim Murrays Whisky Bible 2017

First tasted 2011... Deep gold, brassy colour. The nose has a restraint and softness that's very appealing. Aromas of grilled corn, roasted nuts and vanilla; a hint of blood orange emerges with time in the glass. On the palate, this is a big, spicy whiskey, but by Bourbon standards it's on the drier side. Roast chestnut and dried corn flavours at mid palate, with a hint of rye making an appearance on the finish. Excellent balance and length. 91 points

    ABV: 43%

A bit of an odd age statement, but this is a Travel Retail bottling, so you can expect it to be a little unusual. Perhaps it needed an extra year to combine the sweetness and spice with the classic coastal notes that Old Pulteney is renowned for. Distillery Manager, Malcolm Waring, hand-selected American and Spanish oak casks to achieve the profile. With traditional warehouses exposed to the invigorating sea air, there will be subtle coastal chord ringing through this dram. 43% Alc./Vol.

Notes from the producers... Nose: Rich with deep sweetness. Notes of caramelised apple, warm custard and cinnamon spiced pastries. Towards the end, we see fresh rye bread with bright orange citrus, stone fruits and delicate oak dryness. Flavour: Deep sweetness and spice. Toffee, nutmeg and caramelised popcorn envelop the palate and continue to develop into rich blossom honey, roasted almonds and creamy vanilla. Finish: Spices and honey linger on with a welcome tannic dryness in the form of dried fruits.

There's a tiny amount of strut to this wine. It's a good thing. It tastes of blackcurrant, ground coffee, mint and fresh herbs, and while it's generally elegant it powers confidently through the finish. Drink by 2033. (Tasted February 2016).

Benriach Malting Season Third Edition Single Malt Scotch Whisky (700ml)
    Speyside, Highlands, SCOTLAND
    $144. 99
    Bottle
    $1739.88 Dozen
    ABV: 48.3%

The third annual Malting Season release celebrates the distillery floor maltings which lie at the heart of Benriach distillery. This is a few years older than the first and second editions, with an average age of ten years (combining 9.5 and 10.5 year old stocks malted and distilled in the Autumn of 2012 and 2013). Concerto barley and maturation in a combination of virgin oak casks and first fill ex-bourbon casks continue the established theme. Bottled 2023. 48.3% Alc./Vol.

Other reviews... As a reminder, Malting Season is meant to highlight Benriach’s use of floor maltings (for this release only), a bygone and laborious malting process in use by only one other Speyside distillery. At the time of the line’s launch back in 2021, it was suggested that different barley varietals could be used in future releases, but this third edition, like the two that preceded it, has been made with Concerto barley. Likewise, the maturation has continued the trend of dual cask aging in ex-bourbon and American virgin oak casks. The abv, however, is the lowest of the line to date. We’ve enjoyed the pair of past releases. Let’s see if Benriach can nail three in a row. The nose is once again sweet and malty, chock full of cooked cereal notes. The virgin oak cask comes across a little clearer than past releases with plenty of fresh sawn lumber and concentrated vanilla notes that only serve to enhance the freshness of the aroma. Underneath it all, a bit of straw and faint lemon peel continues an ongoing theme. The palate is once again remarkably crisp and clean with a lightly oily body that shows a bit less of the chewy texture from the second edition. Elegant notes of vanilla cream, clover honey, and almond cookies offer an impressive depth of flavor to savor across the sip. A bit of barley spice accentuates a gentle, even warmth and propels things into a sweet, silky finish accented by notes of minted syrup, stone fruit, and lemon candies. As Chris said of the second edition, another banger. - drinkhacker.com

"A fruitcake-like mix of fruity and spicy aromas (dried and fresh orchard fruits, nutmeg, cardamom) fill the nose with a hint of milk chocolate. The palate is rich and malty, with toasted spice flavors, ginger, and cocoa with additional flavor reminiscent of pear cider and mixed dried fruits. There's a well balanced finish that's simultaneously fruity, toasty, and warming with subtle florality." 91 points - distiller.com

Notes from the producers... Nose: Freshly harvested barley and orchard fruit meld with wild bergamot, pear and meadowsweet honey layered on gently kilned malt. Taste: Smooth creamy malt carries a burst of clementine, floral honey and gentle barley spice. Finish: Medium long, with apricot, malted almond and traces of wild cherry.

Brilliant water like core with subtle highlights of green around the edges. Elevated pear, red apple skin and lime aromas are followed by traces of wet slate and Mediterranean herbs. Crunchy pear and red apple fruits intermix with lime, fresh herb infusions and slatey mineral elements. Excellent concentration finishing dry with zippy acidity and a long mouth watering aftertaste.

A slim and trim, vibrant and crisp white of delicacy, pleasing bitter fruit scents and flavours, touches of stony minerality, a lick of hazelnut-nutty savouriness, a touch of pleasing white balsamic lift, and some white pepper spice dusted over. This has tension, torque and feels terrific to drink. So refreshing, very textural in its powdery, wet river-pebble feel, extends well in the palate and finishes invigorating and bright. Really good here. More of this, thanks. Drink by 2027.

The 2020 vintage for Luna Eclipse Pinot Noir was highly promising, with successful flowering and a long, dry ripening season, though water stress appeared in some blocks due to the dry conditions. Harvest took place from March 15-30 at Eclipse Vineyard, with fruit primarily from the 1992 Pinot Noir plantings. Fermentation included de-stemming and whole berry preservation, with some whole bunch fermentation. The wine underwent a slow fermentation, followed by 12 months of maturation in French oak (20% new) and 7 months in tank. It was bottled unfined and unfiltered, with minimal sulphur additions.

    Other Reviews....
Strawberry pie with some crushed stone and minerality on the palate. Medium to full body. Focused and precise. A little subdued at the finish but it should open up nicely. Drink or hold.

Ripe raspberry, plum and red liquorice scents sail out of the glass followed by some vanillin confectionary and peppered earth notes. 2021 Chateau d'Yquem (375ml)
    Sauternes, Bordeaux, FRANCE
    $499. 00
    Bottle
    $5988.00 Dozen
    Closure: Cork

As the only Sauternes property classified as Premier Cru Superieur, drinking a bottle of Chateau d'Yquem is an experience unlike any other. Situated in the epicentre of prime sweet wine production in France, their unique position and wealth of soil profiles allows d'Yquem to produce wines of enormous complexity with consistent accumulation of botrytis often in years when others struggle.

It was a nervous start to the 2021 vintage, with frost, hail, and mildew confronting the team in Spring. Thankfully Chateau d'Yquem was spared the worst of these impacts, largely due to their favourable geography. Two rainy spells arrived in mid-September and early October leading to generous botrytis accumulation. A three-week window followed with fine weather marked by cool, dry and sunny conditions which slowly concentrated the grapes. Harvest was completed with three successive passes of picking between 30 September and 30 October. 2021 is seen as an incredibly pure vintage, highly aromatic and seductive in these early stages of development.

    Other Reviews....
The 2021 d'Yquem exhibits a complex bouquet of rose, exotic fruits and mandarin orange mingled with spring flowers, rose and crème brûlée, followed by a medium to full-bodied, ample and seamless palate that's suave and layered, with a deep core and a long finish that's lent definition by delicate bitterness that offsets the 148 grams per liter residual sugar. This blend of 65% Sémillon and 35% Sauvignon Blanc was matured, as usual, in all new barrels, but the new oak is perfectly integrated and barely noticeable. Drink 2030 - 2050.

Yohan Castaing - Wine Advocate (Feb 09, 2024)

The 2021 Yquem was tasted in Amsterdam, the first wine poured at a lunch, thereby allowing me a longer period to examine it. Slightly burnished in hue, it has a very attractive bouquet with scents of dried quince, clementine, linseed and subtle candle wax, perhaps more discrete than usual, but certainly fresh and vibrant. The palate is medium-bodied and viscous on the entry, a Yquem with perhaps a lighter chassis than recent vintages, prioritizing poise and purity over horsepower— exactly the right approach in such a challenging season. It opens wonderfully in the glass, gaining more frangipane and kaki fruit scents, though it seems to have a lighter and more tensile finish than the 2020 or 2019. As such, I suspect that it will be comparatively approachable and, of course, delicious. Readers should note that I will probably re-taste the 2021 in Bordeaux during primeur. Drink 2030 - 2060.

Dreamy, subtle aromas of dried fruit such as apricots and mangoes, but also fresh lemons and pears. Then there are caramel and tart tatin undertones with some bananas, pineapple, tangerines and other tropical fruit. Full-bodied, yet it remains vivid and compact, giving it a lightness even though it is really structured. The tannins are throughout the palate but blend in perfectly, giving it a solid presence, like a a diamond. It’s tight at the end, but you know that it will linger for ages, with a lightly chewy and intellectual finish. Touches of sweetness, cloves and bitterness to make it interesting. Dynamic. About 54,000 bottles made. Relatively small harvest. 148 g/L residual sugar.

The complex aromatic profile explodes from the glass with pineapple, papaya, apricot, Meyer lemon, tangerine peels, caramel, honey, vanilla, saffron, cashews, and candied grapefruit in the aromatic profile. The palate resides perfectly in the middle of hedonism, and vibrancy. Clearly, there is ample sweetness, but the racy acidity provides incredible lift, energy, and length. The fruit expresses purity in its tangerines, oranges, mango, papaya, banana, and pineapples all slathered in honey. This is one of those Yquem's that can be enjoyed either as a sweet wine, or due to its vibrancy, with a diverse array of savory, and spicy dishes. Produced from a blend of 65% Semillon and 35% Sauvignon Blanc, 148 Grams per liter, 14% ABV, 3.79 pH. Yields were only 8 hectoliters per hectare. The harvest took place over an extended time, September 12 - October 27, with 4 passes in total. As you can see, the harvest was quite long, but picking the heart of vintage took place mid-to late October. Drink from 2027-2075.

The 2021 d'Yquem is composed of 65% Sémillon and 35% Sauvignon Blanc. It has 148 grams per liter of residual sugar, making for a relatively rich style and the sweetest Yquem since 2017. Pale lemon-gold colored, perfumed notes of orange peel, juicy peaches, grapefruit, and honeycomb slowly emerge from the glass, followed by suggestions of jasmine tea, fresh ginger, and lime blossoms. The palate is fantastically satiny, with great tension and loads of spicy sparks complementing the citrusy flavors, finishing with epic length and a zesty lift. 54,000 bottles were made. The alcohol is 13.9%, and the pH is 3.79.

Tutankhamun gold, maybe a hint of buttercup. I find this more direct and intense than the 2020. Yet this is also a wine that exudes balance and harmony, even at this nascent stage. Beautifully limpid and with a disguised natural power. Supremely aerial. Green apple skin. Saffron. Fresh ginger. A hint of confit ginger too. Lime. White grapefruit. A touch of fleur de sel. Marzipan. White almonds. Mango. Guava. Passionfruit. Pineapple – entirely pure and crisply fresh. All in great purity. This is floral, too. Mimosa. Buttercup (almost the leitmotif here). On the palate I find this tight and tense, yet so incredibly softly textured. And, above all, intense and captivating. Sparklingly striking and dynamic – and held together by the salinity as much as by the acidity, the two in fact working together, giving this an incredible aging potential. Delicate in its intensity. Sapid and with lovely waves of saline-inflected juicy fluidity. Even now this is a wine of very considerable complexity – built from assembling the finest botrytised grapes from the best of the couronne (the crown) of Bommes (with the Château of Yquem at the epicentre). This finishes with the most glorious bitter sugar note – burnt caramel just perfectly on the edge of bitterness. So accessible but so totally ageless and, for now, almost cool in its freshness.

Jameson Single Pot Still Irish Whiskey (700ml)
    IRELAND
    $109. 99
    Bottle
    $1319.88 Dozen
    ABV: 46%

This is the first time since the 1960s that a Jameson Single Pot Still has been made available as a core expression. True to the pot still category, it's triple distilled from malted and unmalted barley and bottled at 46% ABV, without chill filtration making it a Jameson to rival Scottish single malts for depth of flavour. Matured in a combination of five oak casks: Virgin Irish oak, Virgin European oak, Virgin American oak, ex-Bourbon and ex-Sherry, it promises a rich, textural, Irish whiskey experience.

Notes from the producers... AROMA: Opens with wood-driven spices of cinnamon and nutmeg intertwined with rich toasted oak, sweet honeycomb and salted caramel. Zesty fruit notes linger in the background along with dairy fudge, butterscotch and vanilla while the pot still spices continue to build over time complementing the earthy woodland notes and ripe fruits. TASTE: Rich dark chocolate, spicy toffee and ground cinnamon with hints of freshly grated ginger and touches of orange peel. The combination of fresh and seasoned oak adds intricate and layered sweet and smoked-wood tones with delicate tannins, working in balance with the pot still’s silky texture.
