Elijah Craig 12 Year Old Barrel Proof Bourbon Whiskey (750ml) - Batch A119Kentucky, UNITED STATES$299. 00Bottle$3588.00 DozenABV: 67.6%Unanimous praise as one of the great batches in the Barrel Proof series. Strictly limited to one bottle per customer.
A non chill filtered release with previous editions garnering considerable praise from Bourbon enthusiasts, including No.1 in Whisky Advocate's 2017 Top 20. This particular batch left Jim Murray impressed. In fact, it was one of the highest rating Bourbons in his 2021 Whisky Bible. Sheer chance led us to discover and import a tiny quantity for Australia. While it's not the most sophisticated Kentuckian of recent years, it is one of the most emphatic: The aroma packs a punch with a straight-from-the-barrel whiff of nose prickling, penetrating alcohol; Shellac develops into vanilla bean and fresh sawn oak with cinnamon and toasted coconut in support. The entry is creamy, vanilla-heavy; mid palate is dense and chewy, though surprisingly approachable until the atomic ABV explodes in a mouth-coating, mouth-tingling wave of oaky sugars and booming spices. Layers of orange zest, cocoa, caramel and vanilla are left in the wake. Whew! If you're looking for a whiskey to separate the men from the boys, this is your bottle. Batch A119. 67.6% Alc./Vol.
Other reviews... When you get this degree of toastiness from a Bourbon, either there has been one hell of an average temperature rise in Kentucky. Or this has been plucked from near the top of a warehouse where it has been cooking happily for over a decade. The result is a Bourbon that takes no prisoners. It is also a fascinating bourbon, not just because of the intensity of the blood oranges on the nose or the prickle of the splinters on the palate. But it is because it shows an inordinate degree of copper in the flavour profile, the mid-point to the finish in particular. It is as though something was just done to the still, maybe some repair work, just prior to this being distilled. And that to the blindingly busy small grain input and the result is a bourbon of cor blimey richness!
96 points - Jim Murray's Whisky Bible 2021[previous batch] As bourbon matures in new charred oak barrels over time, it approaches a perilous point when the oak dominates the flavor. To sip Elijah Craig at 12 years of age—at full barrel proof, without dilution or filtering—is to taste bourbon at its apex, so dangerously close to going over the crest of the hill, yet delivering a massive mouthful of incredibly robust flavors that drape leathery oak over a gooey caramel core, sprinkled with baking spice, while candied nuts and tobacco leaf notes appear on a drying finish dusted with cocoa. 94 points - whiskyadvocate.com
[previous batch] A top tier barrel proof bourbon that deserves to be experienced. If Heaven Hill can ever catch up with demand on this one and make it more readily available, watch out. It could send shock waves through the barrel proof bourbon market. - breakingbourbon.com

Filey Bay Moscatel Finish Single Malt English Whisky (700ml)UNITED KINGDOMReduced from $165.00$130. 00Bottle$1560.00 DozenABV: 46%With two Forsyths pot stills and a four-plate copper column, the Spirit of Yorkshire distillery have plenty of options when it comes to nailing a house style. This example falls into the experimental category, however it's now sold out at the distillery, so we can assume the experiment was a success! While sherries like Pedro Ximenez and Oloroso are well known in single malt whisky maturation, Moscatel is much more unusual. The varietal is known for its floral aromas (orange blossom, jasmine and honeysuckle) as well as citric notes like lime and grapefruit. The Yorkshire team initially matured this expression in 200 litre bourbon casks (filled in 2016), before transferring it to 250 litre Hogshead barrels that previously held Spanish Moscatel. The result is summed up as a really interesting, flavourful whisky - light and soft but with layers of tropical fruit and sweet spice. You can also expect notes of honeycomb, orange marmalade, dried fruits and cocoa. Very limited stocks from an outturn of 6000 bottles. 46% Alc./Vol. Non chill filtered.
Other reviews... A gorgeously weighted, charismatic malt with a sublime usage of fruit which does not - and this is so rare these days - overburden. 94.5 points - Jim Murray's Whisky Bible 2022

Filey Bay Flagship Single Malt English Whisky (700ml)UNITED KINGDOMReduced from $150.00$120. 00Bottle$1440.00 DozenABV: 46%The Spirit of Yorkshire distillery has been in operation since May 2016 and is a first for the district. The team has already received rave reviews for multiple expressions, in particular its first and second releases, now superseded by the ‘Flagship’. Rated 95 and 93 points respectively, Jim Murray commented of the inaugural bottling, “I have to say that the first thing that flashed through my mind on tasting my first mouthful was: Glenfiddich!… I’m talking about the classic non-age statement version, for years its trademark brand, that was sadly lost a great many years ago to make way for the 12 year old. When you taste this, you’ll see why. It is the sheer elan, the fabulous brightness of the whisky that both wins your heart and takes you back the best part of a couple of decades, youthful, fun and stunningly well made…” Expect something similar in this latest batch. Also on offer is a Moscatel finish, rare for whisky maturation (94.5 points) and an STR matured malt bearing the influence of industry legend, Dr Jim Swan (he helped with the Filey Bay startup a year before he died. It partly explains why these whiskies are so good.). Unfortunately this shipment was too small to permit us opening any of them to taste. Be the first!
Other reviews... [First release tasted] Fresh and massively satisfying... 95 points - Jim Murray's Whisky Bible 2022
[Second release tasted] An encouraging step toward their flagship single malt, this lemon-pale dram evokes aromas of lemon, herb gardens, clotted cream, marshmallow, and a little vanilla. It’s sweet as candy, with flavors of sugared almonds, Sweethearts, butter icing, candied lemon peel, pancakes, and a finish of peppery arugula leaves. (6,000 bottles) 88 points - whiskyadvocate.com, reviewed by: Jonny McCormick 2020
[Second release tasted]... It’s the first time I’m trying this make. Apparently, it is a combination of pot and column spirits, so a self-blend or a single blend if you like, although it’s labelled as a single malt. Not too sure what the rules are in Boris Country, or are you allowed to call it a single malt if your column(s) does not rectify much? Just speculating, let’s try this baby… Colour: white wine. Nose: light and rather gracious, on pears, vanilla, melons, acacia honey and fresh maple syrup. I am not getting any graininess I have to say, and for sure no varnish, would love to have a look at their column. Mouth: indeed, it is sweet, fruity and easy, with bonbons, preserved pears and peaches, pineapple, and a little barley water. Shall we say we’re finding an Irish side to it? Finish: medium, fresh, easy, leaving your mouth as fresh as a baby’s. Comments: rather the opposite of the previous German drop, but I find it just as good. The high quaffability is a plus. 82 points - whiskyfun.com

Very limited stocks. Tasting note: [20ml sample] Brilliant amber. The cocoa and stewed plum bouquet is brimming with malty richness. Blockbuster stuff with a huge, oily attack; Salted caramel, toasted oak and vanilla drive the finish. Don’t look for complexity. Maturation took place in American white oak barrels. 'Fuyu' means winter in Japanese. Tasting note: Deep amber gold. Cocoa, light cinnamon, vanilla and hints of ripe peaches follow in a soft, medium bodied whisky offering flavours of gobstopper, ginger and late fruit cake. Ends crisp and moreish with buttery vanillan oak through the aftertaste. A youthful, Bourbonesque blend with satisfying sweet/dry balance. 40% Alc./Vol. - 2006 George T. Stagg Barrel Proof Release 140.6 Proof (70.3%) Straight Bourbon Whiskey (750ml)Kentucky, UNITED STATES$1299. 00Bottle$15588.00 DozenABV: 70.3%Other reviews... These Stagg releases are becoming legendary. This one, while not the best of the bottlings, maintains the Stagg reputation. When compared with the earlier release in 2005, this Stagg expresses a shade less oak. It’s also more subtle and creamier on the palate. It’s clean, superbly balanced, and very drinkable-even at higher strengths. Light toffee, maple syrup, and caramel corn provide a bed of sweetness. Layered on top are notes of candied fruit, crisp mint, vanilla, and polished oak. Soft finish. Just don’t add too much water to it because the flavors seem to lose their cohesiveness at lower strengths. Drink this whiskey at a strength higher than you normally would to fully appreciate it. 92 points

2019 Glann ar Mor Kornog Saint Ivy Cask Strength Single Malt French Whisky (700ml)Brittany, FRANCE$299. 00Bottle$3588.00 DozenABV: 58.2%'Saint Ivy' is one of Glann ar Mor's annual releases, offered each May and bottled at cask strength from a single Bourbon barrel. Every year these get better, with the 2019 edition gaining a rave review from Jim Murray. We have received a tiny allocation. Non chill filtered. Other reviews... A much sharper vintage than the 2018 with passion fruit replacing the citrus. Less phenols...but the mint on the finish is what sets this apart... this enters an entirely different dimension, with the cocoa and Manuka and ulmo honey mix making this not just the best finale from this distillery, but among the top three of any malt I have tasted so far this year. 58.2% Alc./Vol.
95 points - Jim Murrays Whisky Bible 2020 [2018 release tasted] The subtle sweet smoke, like singed rocks around a beach fire, becomes more pungent if left unattended. Underneath, aromas of sweet lemons, tropical fruits, lemongrass, and smoked olives abound. Juicy sweetness, with a real concentration of mango, papaya, and sugary boiled candies melds into flavors of vanilla and Battenberg cake. After a concluding rush of pepper, the smoky fumes permeate through the back end. Oh boy! Ridiculously good!
92 points - whiskyadvocate.com, reviewed by: Jonny McCormick (Winter 2018) [2013 release tasted]. What an easy name! It's a single cask this time, maybe not quite ex-Ivy League or is it? Colour: straw. Nose: well, careful, this is a bit strong. It seems that it's a little more medicinal than the others but not sure. Water please... With water: a wee tad raw and barleyish, maybe, when compared with the previous one. A feeling of sake, maybe, but otherwise it's all perfect. Well I love good sake. Mouth (neat): an ultra-lemony peat, this seems to be more or less the Taouarc'h Kentan 13 BC (phew) at a higher strength, with more pepper too. Not too sure, this is no jet fuel but it's really strong. With water: the salt comes out, together with lemons and grapefruits. All that is very peated, naturally. A little less oily and fat this time, but of course all that depends on the amount of water you're adding, on the kind of water, on the way you add it and on the waiting time (never taste whisky just after you've added water, always wait for a few minutes! Sipping is fine...) Finish: long and just excellent. Don't I detect touches of pineapples again? That's youth! Comments: another obvious winner, it's just that the superb Taouarc'h Kentan 13 BC (yeah yeah) may have overshadowed it a tiny-wee bit. 88 points - Serge Valentin, whiskyfun.com -

Glann ar Mor Kornog Roch Hir Peated Single Malt French Whisky (700ml)Brittany, FRANCE$175. 00Bottle$2100.00 DozenABV: 46%Martine and Jean Donnay established the "Celtic Whisky Compagnie" in 1997 and began distilling in 1999 with Glann ar Mor's first bottling of unpeated single malt hitting the market in late 2008. By November 2009, a peated malt was released (30-35 ppm) under the Kornog label, meaning "West Wind" in Breton. The distillery is located on a seafront, hence the name, which translates "At the edge of the sea". The packaging further emphasises the locale, featuring a graphic of the Héaux de Bréhat lighthouse. This is a traditional operation that employs small stills, 100% live flame for both the spirit still and the wash still / slow distillation, wooden washbacks and seaside maturation. Currently the whiskies are just over 3 years old, but already show surprising complexity and balance. For instance, the very first bottling of Kornog won a Silver Medal at the 2009 "Malt Maniacs Awards", with a score of 87 points which compares very favourably with iconic Islay whiskies. Jim Murray has been extremely enthusiastic of several bottlings including this. Tasting note: Matured in a bourbon cask for 3 years. Bright pale straw gold. Opens with intense aromas of lanolin / wet wool. Air contact drops the peat a notch bringing forward dried apple, cinnamon and light cocoa. Follows through with an oily, cereal, crisp malt delivery with the finish upping the richness adding cocoa-laced peat, walnut slice and lanolin carrying through to the aftertaste. Exhibits a freshness, balance and staying power that belies its youth. A whisky that's both delicious and distinctive. 46% Alc./Vol. Other reviews... beautifully distilled, superbly matured. 95 points - Jim Murrays Whisky Bible 2017 -

Malt lovers may find resemblances to Campeltown's finest here: Direct fire stills give a toasty edge to the nose, while poached pear fruitiness develops alongside suggestions of almond biscotti, sponge cake and straw bail. It's soft on entry with a grassy edge through the middle, but balances beautifully. The finish turns creamy, toasty and delicately salty with hints of white pepper and vanilla through the aftertaste. A cereal / coastal style that really works. 46% Alc./Vol. Non chill filtered. Extremely limited stocks. -

The peat has a mezcal-like edge, in this case there's opening suggestions of vinyl and varnish, mingling with vaguely green notes (white pepper, dried grass). Aeration accents the sweet barley as honey, boiled confectionary... marzipan? More definitive peat in the mouth, also flavours of toasted fruit cake, trailing off with green-wood smoke and a mildly grassy bitter-sweetness. Always engaging, this distillery has established a distinctive style early on. Non chill filtered. 46% Alc./Vol. Other reviews... Glossy polished brass. Thick oily peat in the opening stage, dripping with toffee apple, choc fudge and barley sugar richness. Several minutes air contact adds cocoa, drops the peat input and edges towards dried fruits / dates / figs. Slightly bittersweet with unusual flavours suggesting marzipan or toasted dark rye; several quirky notes are difficult to pin down. Dries before choc-sponge cake re-surges at the finish. Dave Broom of maltadvocate.com is an enthusiast for French whisky, especially Glann ar Mor and his review is below.
Dave Broom comments, "French whisky encompasses a wide range of approaches and flavours, from the hugely aromatic P&M from Corsica to the understated Alsace whiskies of Elsass, Meyer’s, and Uberbach. There is a trio of whiskies from Brittany. Guy le Lat’s Eddu uses buckwheat to create a whisky that out-ryes rye. Distilerie Warengheim makes the most widely-seen whisky, Amorik. But for this writer the one to watch is Glann ar Mor (‘by the sea’), established in 2005 by Jean Donnay. A traditionalist approach: direct fire, wooden washbacks, wild yeast, and worm tubs yield a single malt whisky that, though barely over the 3 year legal limit, is already complex: think barley sugar and apricot. The fire and the worms give the mid-palate some real weight (boding well for longer-term maturation), but the slow distillation has added floral notes that dance on top. Tasting note: The whisky has spent 3 years in a Bourbon cask. Polished brass. Thick, oily peat at first before a dryish / mildly fruity nose which is also slightly grassy. Sweeter in later inhalations revealing sponge cake, wax, oil (linseed?) followed by hints of dried apple, straw bale and vanilla after five minutes aeration. An odd yet appealing combination. Gentle yet fresh delivery with crisp / grassy malt and subtle herbal-tea like flavours. An unusual arrangement. Keeps you guessing. 46% Alc./Vol. Other reviews... [NB - Review is for 2012 bottling] Glann ar Mor is a rising star in the world of whisky, one of three very impressive distilleries in the Brittany region in Northern France, and this new single malt, fresh from the cask at the back end of September, is its finest release yet. A mixture of soft tinned fruits, especially sweet pears in syrup, sweet vanilla ice cream, and a delicate but assertive earthy underbed make this an utter delight. Magnifique. 92 points

Matured full-term in x sweet white wine casks from Bordeaux, we have a small once-off allocation now on offer. Tasting note: This dense and oily Kornog has a combination of coastal notes mingling with earthy peat smoke. Considering Israel shares a climate comparable to other 'new' whisky producers like Australia, India and Taiwan, you can expect these spirits to peak relatively young. This unusual bottling from a two grain mash (malted barley and wheat) spent 30 months in a red wine cask, following which a portion was then finished for six months in a 50 litre cask which previously held brandy (also distilled at Golan Heights). Released to celebrate Israel’s 70th Independence day, the final outturn was a miserly 70 bottles!

More from maltandoak.com on the creation and the insanely low outturn of this Single cask gem:
"In the early days of the [Golan Heights] distillery, casks were filled directly off the stills, and it took more than one spirits distillation to fill a 225 liter cask. This cask was filled with only 130 liters and placed in storage. David discoverer that he didn’t fill the cask all the way up only when he first looked at the spirit, at about 6 months. These were the very early days, and stock that was 6 months into the maturation was about a sixth of the way done, so refilling it and resetting the clock made no sense. Thus, the cask matured with only 130 liters, and three years later, with 17% gone to the angels, yielded only 109 liters. Due to the small amount, David chose to bottle the whole amount at 46% and not offer his customary 40 bottles (!) per cask at cask strength."
The vessel in question was first fill x-Cabernet French oak cask with a final yield of just 190 bottles - we have less than a handful on offer.
Tasting note: Deep gold / minor particles evident. Sweet oak and malt, evolving with muesli, Turkish Delight, rose water and dried cranberries. Lovely plush mouthfeel supported by warming spices; balsa wood and subtle green notes (juniper?) as well as flashes of bubble gum through the aftertaste. Excellent balance. Solid, youthful malt with references to Port matured Australian styles. 46% Alc./Vol.

1989 Hammer Head 23 Year Old Single Malt Czech Whisky (700ml)CZECH REPUBLIC$165. 00Bottle$1980.00 DozenABV: 40.7%A whisky with quite a story behind it…
In Communist-era Czechoslovakia, whisky became the preferred tipple of several high ranking officials. Unfortunately, importing it from the West was impossible. The group located a single small distillery in the motherland (it also had a hammer mill). It dated from around 1928. Learning on the job, they sourced local barley with water shipped in from the Bohemia region. Scottish Peat was imported and Czech casks were used for maturation. The operation was to last about five years, during which time the malt became quite prized. In 1989, the Berlin Wall came down. Europe changed forever. The warehouse inventory was forgotten and the casks lay dormant in the cellars of the old distillery for over twenty years when an independent company purchased the operation. After tasting the lost barrels, they were so impressed, they decided to market the remaining stocks. Bottled under the name 'Hammer Head' in honour of the old Mill, the first edition was a 20 year old followed by this 23 year old. The latter was reportedly a favourite of Boris Yeltsin. Originally released in the US only. Extremely limited, one bottle only.
Other reviews… Floral, resinous, almost hoppy on the nose, with dusty cedar chest, old leather chair, white pepper, licorice, and an intriguing tangy note, like pickles. The palate’s intense oakiness is tempered by an herbaceous sweetness and integrated spice—cinnamon, cubeb, and allspice, with chalky minerality. There’s a savory and saline quality that lingers into the finish, which is spicy and dry with oak tannins. Distilled in 1989 in what was then Czechoslovakia, using Czech peat, and matured in Czech oak casks. 91 points- whiskyadvocate.com, reviewed by: Susannah Skiver Barton (Summer 2018)

From a now closed distillery - Hanyu shut down in 2000 and was dismantled in 2004.
Thankfully the stocks were saved by the founder's grandson who rebuilt the distillery and kick-started production in 2008, marketing under the Chichibu label. This super rare bottling is from the last reserves of Hanyu's whisky. Sub titled "The Final Vintage of Hanyu", 3710 bottles were produced. 46.5% Alc./Vol.

- 2000 Hanyu Distillery Ichiro's Malt Ace of Clubs Cask No.9523 Cask Strength Single Malt Japanese Whisky (700ml)JAPAN$14999. 00Bottle$179988.00 DozenABV: 59.4%Extremely rare. Normally only available via auction - or if you visit Japan and taste it in a bar. Part of the "Card Series', the Ace of Clubs was distilled in 2000 at the now closed Hanyu Distillery. Caught by the Japanese recession, the operation shut down the same year. Enter Ichiro Akuto, the grandson of the founder. Akuto purchased the remaining casks, progressively marketing them under playing card labels. Since then the Card series has garnered a cult following, with cashed-up collectors vying to secure all 54 bottles in the set. This edition was bottled in 2012 after initial maturation in a hogshead followed by a finish in a Mizunara Japanese oak cask. One only to sell. 59.4% Alc./Vol. Other reviews... Ichiro loves Japanese oak (mizunara) and here’s a finished example. You need water, however, to be able to discern those characteristic incense notes. Without it, you’re in a world of vanilla and resin. The neat palate is hot but firm, with some red fruits and an allspice note. Water is needed, and does allow a fresh acidity to come through on the finish; sadly it also adds tannic bitterness. A tricky balancing act.
81 points - whiskyadvocate.com, reviewed by: Dave Broom (Summer 2013) Nose: very fragrant, old temples, marzipan and a hint of eucalyptus; Palate: candied orange peel, tropical fruit punch; lots of wood spice; Finish: very long; spicy elements slowly fade leaving an incense afterglow. With the ‘Ace of Clubs’ and the ‘Six of Hearts’ – it depends on the mood I’m in: some days, I just can’t get enough of the mizunara aura of the former; other days, I really enjoy the contrast between the nose and the palate of the latter. If you ever come across one of these Cards that’s open – at a friend’s place or at a bar – don’t hesitate! With so many of them just sitting in collections, it would be a crime not to assist them in fulfilling their destiny, which is: to spoil the senses with a pleasure only they are capable of giving. - nonjatta.com - Ichiro's Malt & Grain Single Cask No.4080 Cask Strength Blended Japanese Whisky (700ml)JAPAN$999. 00Bottle$11988.00 DozenABV: 59%Japanese whisky doesn't get much rarer than this! Japanese whisky lovers have another 'concept whisky' to add to their portfolio, following on from the Shinshu Mars Distillery Komagatake x Chichibu Malt Duo released earlier in the year. Both are blended malts made by exchanging new make from Mars Whisky (Komagatake) and Venture Whisky (Chichibu), with each matured at the other's distilleries. It's the first initiative of its kind in the Japanese whisky industry.
While Mars Shinshu Distillery in Nagano Prefecture is located high in the mountains where the climate is cold, Chinchibu is in the warmer Saitama Prefecture at a lower altitude. Over six years, the whisky's matured in their respective locations, with progress monitored.
"Getting reports on the maturation status from the other distillery was like hearing about my children growing up in a different city," said Mr Kunai, the Director and Master Blender of Mars Whisky. Both components were distilled in 2015, exchanged, matured at each distillery's warehouse and then vatted. The concept was started in the hope that the exchange of raw spirits, which is a common practice in Scotland, could be realised in Japan. Bottles are already fetching super premium prices on the secondary market. 10,200 bottles of Ichiro's blend are on offer globally. 53.5% Alc./Vol. Non chill filtered. Very limited allocation.

- Ichiro's Malt MWR Mizunara Wood Reserve Pure Malt Japanese Whisky (700ml)JAPAN$299. 00Bottle$3588.00 DozenABV: 46%
"Once encountered, never forgotten. " Chichibu founder and craft distiller, Ichiro Akuto, has created a vatting of single malts and matured them in Japanese Mizunara oak casks (Quercus mongolica), commonly referred to as Japanese oak. Suntory set a precedent for experimenting with this indigenous species. It presented a logical alternative for distillers after the Second World War when supplies of foreign oak were difficult to source, but it turned out to be a far from ideal vessel. Mizunara's loose grains tended to cause leakage, and also created challenges in terms of timber selection and cooperage. Blenders at the time had few kind words to say about the wood. For consumers today, the obvious question is "Does Mizunara oak give a distinctive flavour to whisky?" Nonjatta, (www.nonjatta.com), one of the better sources for information on Japanese whisky, writes that most agree that it does. "This special taste/aroma has been variously described as evoking "sandalwood", a type of oriental incense called "kara" etc.. However, more recently, scientific research has focused on a distinctive coconut aroma associated with Mizunara barrels. A paper delivered by Yushi Noguchi at the Worldwide Distilled Spirits Conference 2008 in September tried to pin down this characteristic and makes fascinating reading. The researchers, supported by Suntory, The International Centre for Brewing and Distilling and the Scotch Whisky Research Institute, asked a panel of testers to score how much coconut smell they detected in two types of whisky: one matured in Mizunara and the other matured in White Oak barrels." The upshot was that Mizunara matured whisky tends to offer more definite coconut aroma. Other sources (see Dave Broom's review below) suggest it contributes attractive sandalwood notes. The whisky comes non chill filtered at 46%. Other reviews... The Ichiro of the title is Ichiro Akuto, scion of the family which owned the now demolished Hanyu distillery, and proprietor of the brand new and incredibly cute (yes…distilleries can be cute) Chichibu distillery — even the name’s cute. This release is a vatting of different (un-named) single malts from more than one distillery which have been aged in Japanese oak (mizunara, or Q.Mongolica). Mizunara has a highly distinctive aromatic spectrum — the Japanese say that it smells of temples, specifically the incense which scents Zen temples, but while totally accurate, that’s not much help if you haven’t been to one. Think of a heavy, exotic aroma of allspice, sandalwood, even redwood, and you’re almost there. In fact, if you think of the perfumed aspects of rye, but turned up a notch, then you’re in the right ballpark. In this one there’s even a hint of trail bar — maybe it’s a hike in a California old-growth forest. The palate is soft and slow to start, then picks up mouthwatering acidity — there’s that rye parallel. Green plum and peach, balanced with spiciness on the end. Once encountered, never forgotten.

Tasting note: One of a series "on the way" to a five year old release. Flawless bright gold. Whisper-soft, floral aromas of pear drops, cream tea biscuits, smoky cardamom and possibly a trace of peat. Medium bodied showing amazing poise and grace at high ABV, this offers super pure flavours of spicy stewed orchard fruits, jasmine, vanilla and a juicy, lip-smacking malt finish. Ichiro has taken the further step of establishing his own cooperage and one of the first projects he's instigated is to make quarter casks of 120-130 liter capacity from bourbon barrels, a practise first employed by the Scots. The smaller casks tend to accelerate maturation. Distilled in 2010 and bottled in 2014. 6200 bottles of 2010 Chibidaru are on offer worldwide. Other reviews... [2009 bottling tasted] Chibidaru is a Japanese slang term meaning “small,” which is appropriate given the size of the cask—quarter-size—used for maturing whisky from a chibidaru distillery. This has the intensity of youth with some lemon meringue pie, pomelo, and hint of night-scented stocks. As the nose suggests, this is a wee (chibidaru) sweetie with mouthwatering citrus character and soft-centered sweetness moving to mace, strawberry, and a popping candy finish. Kamiki Blended Malt Japanese Whisky (500ml)JAPANReduced from $119.99$99. 99Bottle$1199.88 DozenABV: 48%Made using local malts combined with malts from around the globe, Kamiki is the world's first whisky to be finished in casks made from yoshino-sugi (often referred to as "Japanese cedar", a particularly aromatic type of wood). Assuming this is around 4-5 years old, the colour is advanced. Notable is a fresh fragrance of pine or cedar, but it feels more-or-less attuned to the barley. The robust, malty delivery manages to hold its own against a massing, tantalising injection of wood. Crushed pine buds and cigar box get more salient towards the finish. Fanning spices and cedar shavings complete what is one of the more extreme Japanese creations tasted to date. 48% Alc./Vol. Non chill filtered.

Kamiki Sakura Wood Blended Malt Japanese Whisky (500ml)JAPANReduced from $134.99$99. 99Bottle$1199.88 DozenABV: 48%"...hell bent on taking whisky to new cedary levels..." - Jim Murray's Whisky Bible.
The third in a trio of “Japanese” whiskies under the Kamiki label (reportedly, not all of the components were Japanese, which is not unusual). This is matured in native cedar followed by a finishing in Sakura wood - aka Japanese Cherry Blossom - prized, though rarely used for whisky maturation. It's slightly deeper in colour than the 'Kamiki Original', but otherwise similar in every way. Having the cedar piquancy turned down a notch allows the malt to reveal nuances of exotic dried fruits (banana, mango) and the overall balance is improved. The style here is like some older Juras, only more full-bodied, and with conifer freshness in lieu of coastal character. Very limited stocks. 48% Alc./Vol. Non chill filtered.
Other reviews... Cedar!!! Concentrated...sharp and even slightly taut on delivery; first getting tighter with the cedar and then relaxing with the sweeter butterscotch tart; settles down with an attractive lushness for a short while.; slightly citrusy sugars... but then the tannins get serious... this distillery seems hell bent on taking whisky to new cedary levels and taking us to new tannin territory. I am really beginning to get a taste for this unique stuff, though they need to work on the finish slightly to prevent the tannins from getting too frisky. 94 points - Jim Murray's Whisky Bible 2021
