2012 Henriet-Bazin Eusebe Grand Cru ChampagneChampagne, FRANCE$110. 00Bottle$1320.00 DozenCellar: Drink now - 5 Years (2021-2026)ABV: 12.5%Closure: CorkHenriet-Bazin origins date back 5 generations to two families both deeply rooted in Champagne. The Bazin family were grape growers from the village of Verzenay whilst the Henriet family specialised in Champagne production. It was in the late 19th century that the two families united through marriage, and today the estate is run by Marie-Noëlle Henriet-Rainon, and they produce a range of outstanding champagnes from Grand Cru and Premier Cru vineyards.
Having always wanted a Grand Cru vintage wine in the range, Marie-Noëlle had her wish granted in their crafting of the Eusebe cuvee. The combination of Chardonnay from Verzenay, and Pinot Noir from Verzy and Verzenay shows great balance and elegance. The mix can change, but it will always be Chardonnay and Pinot Noir, with this 2012 a mix of 70% Pinot Noir and 30% Chardonnay that spent 72 months on lees.
Showing excellent hold over a pale straw to pale gold coloured base is a fine satiny mousse. A nibble stream of tiny bubbles flows through its core. The nose is a combination of power and complexity, superb aromatics of yeast lees, baked bread and subtle citrus soar out of the glass followed by oily toast like notes, cashew and subtle brioche. Rich and concentrated yet also stimulating, the palate features baked bread, oily toast like characters and yeast lees over some citrus and roasted almonds. Fullish mouthfeel with a dry chalk tinged finish complimented by crisp acidity. Long rich, textured conclusion.
Drink over the next 4-5 years.

The Weber family of Hofgut Falkenstein have been making ultra-traditional Rieslings in the Saar district of the Mosel region since the mid-eighties; there they farm about 9 hectares in and around the villages of Niedermennig and Krettnach. Erich, the family winzer (winegrower in german) works alongside his middle son Johannes, who has joined him full-time in the vineyards and cellar in recent years. Ever since there has been more of a focus on Rieslings with residual sugar. The emphasis on their work is in the vineyard, where no pesticides, herbicides or fertilizers are employed and cover crops are grown to encourage biodiversity and, when necessary, competition with the vines for water. With their straightforward approach to winemaking the Webers craft light, distinctive and racy Rieslings displaying well-integrated acidity from their low yielding old vines, and are bottled traditionally by the cask.
Other Reviews....
The Non-Vintage Pet Nat with Los Nr. 26-23 comes from Weissburgunder harvested in 2022 in the Niedermenniger Herrenberg and was fermented in cask before completing its fermentation in bottle and being released without disgorgement. It offers a superb nose of almond cream, bakery elements, vineyard peach, greengage, mint leaf, yellow peach, and conference pear. The mousse proves very refined and the palate delivers intense and refreshing notes of spices and herbs. The after-taste has some tartness in need of integration. This is a superb Pet Nat. Their Pinot Noir is sourced from the Grand Cru village pair of Verzenay and Verzy, while much of their Chardonnay is in Villers Marmery, and the Pinot Meunier a touch west in Ville-Dommange. Hugues has long been concerned with the health of his vineyards (along with himself), and made the transition to organic farming in 2006 with certification coming in 2013, followed a year later with biodynamic certification in 2014. Each parcel is vinified separately and dependant on the terroir will have fermentation occur in neutral oak or enamel lined cement tanks, all using native yeasts. Across the range dosage is kept very low, with many wines now bottled as brut nature (zero dosage). As to be expected with wines from Verzenay and Verzy, these Champagnes are sleek and structured, tightly coiled in their youth but with fantastic concentration of fruit.
The Reserve is a blend of 34% Pinot Noir, 33% Chardonnay and 33% Pinot Meunier that has spent 2 years on lees. Excellent creamy white mousse that holds well to eventually reveal a pale straw golden edged base wine. Exceptionally fine bead showing great persistence. The nose sings, displaying a complex aromatic profile of baked bread, yeast lees and cashew with subtle underlying nuances of dried honey, citrus and toast. The palate shows great finesse, vibrancy and freshness and should fill out wonderfully with further bottle age. Possessing richness but without a feeling of fullness, flavours of citrus toast, yeast lees and bready characters are interspersed across the palate with subtle dried honey and cashew also making an appearance. Finishes very dry with crisp acidity and a long distinguished aftertaste of citrus, bready characters, yeast lees, oily toast and cashew. Cellaring is a must – give it 5-6 years.

Hure Freres Invitation Brut ChampagneChampagne, FRANCE$69. 99Bottle$839.88 DozenCellar: 4 - 5 Years (2018-2019)ABV: 12%Closure: CorkThe exceptional quality of growers Champagne is often reason enough to celebrate by popping a cork! Hure Freres (Hure brothers) are located in Ludes, a Premier Cru village from the Montagne de Reims where Pinot is king. When Francois Hure and his brother Matthieu took over the estate in 2005, they brought with them a wealth of knowledge acquired working with the who’s who of Terroir wines in estates such as Domaine de Montille and Chapoutier but also here in Australia, where Francois spent time at Coldstream Hills under the watch of James Halliday.
The Invitation, as the name suggests, is where one should start to discover their wide range of Champagnes. The blend is composed of 50% Pinot Meunier, 35% Pinot Noir and 15% Chardonnay sourced exclusively from family vineyards located in the Montagne de Reims , Vallee de l’Ardre and Vitry le Francois, where they have complete control over grape growing.
It is often said Champagne is made at the press and Hure Freres still use a traditional vertical basket press to obtain the best juice to turn into the base wines ready for the Champagnisation (Methode Champenoise). The Invitation will spend a minimum of 24 months and sometimes up to 36 months on lees after tirage, to gain and enhance complexity. Released as brut with a dosage at 9g/l, lower than the big negoce houses, the results of their careful approach to detail, can certainly be tasted in the Invitation, with a very well defined and precise style , balancing power and elegance with a very fine bead, which is probably the trademark of the brothers as this is a consistent trait throughout their range of strikingly good wines.
Pours well with a creamy white mousse and a pale straw base wine colour. Exceptionally fine and very persistent bead. Nosing reveals aromas of baked bread and yeast lees over some citrus and light toast. Light and lively across the palate but with plenty of richness the palate features flavours of brioche, yeast lees and citrus followed by a hint of grapefruit and subtle cashew. Clean crisp dry finish. Excellent length with a long yeast lees, brioche and citrus aftertaste.

Emmanuel Lassaigne is one of Champagne's most thoughtful and exciting grower producers, working with the chalky south and southeast-facing sloped vineyards of Montgueux in the Aube department. Lassaigne's extraordinary Champagnes are pushing the qualitative boundaries not just of the Aube but of the entire region. Farming in his vineyards is organic with cultivated soils and harvesting at full maturity. In the cellar, the wines ferment in wood and stainless steel, and they're disgorged by hand without dosage. The style is powerful and vinous but also racy and electric.
Lassaigne's vintage Blanc de Blancs is perhaps the sweet spot in the range. As a cuvee of 100% Chardonnay from the Le Cotet (35%) and Les Paluets (65%) vineyards, the wine was raised in tank before 8 years in bottle and disgorgement in late 2021. Given the extended lees contact this wine shows an enormous level of depth and complexity.

This compellingly beautiful wine opens with aromas that include a piercing, lemony fruit, salty minerality, chalk, smoke and spice. On the palate, there is a beautiful tension, but also enough substance to give the wine breadth and a lovely, impressive length. It is structured and very crisp, yet still approachable and easy to drink. It was produced from a blend of the lieux-dits Le Cotet and Les Paluets, exclusively fermented in tank. There is immense ageing potential here and you’ll be rewarded for keeping it. Drink 2022 - 2045.

Clos Saint-Sophie was owned by Marcel Dupont, a friend of the French botanist Charles Baltet, author of an important 19th-century treatise on grafting, and Baltet used the Clos for experiments. Rather than having any kind of ecclesiastical origin, the vineyard in fact takes its name from Dupont's wife. Thus, the first plantings in history of vitas vinifera in Japan—on Mount Fuji—are inextricably linked with this small corner of the Aube. Today, the Clos is owned by the Valton family—better known as the proprietor of children’s' clothing brand Petit Batteau—and Lassaigne makes the wine. When most of Montgueux's vineyards were been abandoned after the War, the Clos was one of the few to remain in cultivation, so it represents a living link with the village's past. Clos Sainte-Sophie Blanc de Blancs Brut Nature is from 40+ year-old vines in a 0.4-hectare plot in the centre of the Montgueux and is aged in used barrels from Burgundy and Cognac and a Savagnin ouillé barrel from Ganevat (Jura).

Notes of citrus oil and crisp yellow orchard fruit mingle with nuances of saffron, anise, dried white flowers and warm bread in a complex bouquet, introducing Lassaigne's 2012 Brut Nature Blanc de Blancs Clos Sainte-Sophie, a full-bodied, layered and concentrated wine that's deep and muscular, with racy acids and a finish that's simultaneously intensely saline and searingly chalky. The new disgorgement of Lassaigne's emblematic NV Extra Brut Blanc de Blancs Les Vignes de Montgueux is a blend of the 2020, 2019 and 2018 vintages, from vines that range between 45 and 70 years old growing on the slopes of Montgueux. Offering up aromas of pear, crushed mint, bread dough and white flowers, it's medium to full-bodied, vinous and incisive, with a satiny attack that segues into a taut, racy mid-palate, concluding with a pungently saline finish. It's an especially strong rendition. Drink 2023 - 2032.

2007 Jacquesson Dizy Corne Bautray Blanc de Blancs ChampagneChampagne, FRANCE$400. 00Bottle$4800.00 DozenClosure: CorkOther Reviews....
The 2007 Dizy-Corne Bautray is soft, silky and quite open. Lemon peel, mint, white flowers and white pepper are some of the notes that give the 2007 its distinctive brightness and energy. Equally polished on the palate, the 2007 is exceptionally silky and finessed in its tactile impression. A wine of classiness and total understatement, the 2007 should drink well for at least another 5-10 years, perhaps more. There is good brightness in the glass, but the wine’s structure is very much medium in body. One of the things that stands out most is the silkiness and nearly imperceptible feel of the bubbles, especially as the wine opens up in the glass. Disgorged January, 2016. No Dosage. Drink 2017 - 2027.

Disgorged in April 2018 with 2.5 grams per liter dosage, Jacquesson's 2008 Extra Brut Grand Cru Avize - Champ Caïn is showing brilliantly, soaring from the glass with a lively bouquet of waxy lemon rind, green apple, walnuts, marzipan and subtle hints of drawn butter and honey. On the palate, it's full-bodied, layered and multidimensional, with terrific concentration, mid-palate volume and structural tension, with a deeper, broader profile than the 2008 Core Bautray tasted alongside. The finish is long, saline and chalky. While Hervé Chiquet observes that Jacquesson has made considerable progress—especially in the vineyards—in the last decade that the 2008 necessarily doesn't reflect, this is nonetheless a brilliant Champagne. The 2008 Extra Brut Premier Cru Dizy - Corne Bautray is showing brilliantly, unwinding in the glass with a youthful bouquet of citrus oil, clear honey, preserved rhubarb and subtle hints of fresh pastry. On the palate, it's full-bodied, layered and multidimensional, with an incisive spine of acidity, considerable concentration and a long, reverberating finish. This is an unusually tensile, racy rendition of this cuvée, and Jean-Hervé Chiquet observes that, in the 2008 vintage, this typically rich wine has embraced its Chardonnay origins more wholeheartedly than usual. It's a terrific wine that will delight Champagne purists. All 5,488 bottles and 304 magnums were disgorged without dosage in April 2018. The NV Extra-Brut Cuvée No. 742 (2014 base) has really opened up since I last tasted it about a year ago. The Pinot is so expressive in the No. 742, a Champagne built on texture and resonance. Based on the 2014 vintage and disgorged with 1.5 grams per liter dosage in July 2018, Jacquesson's NV Extra Brut Cuvée No. 742 continues the house's pioneering series of cuvées that employ reserve wines not in pursuit of a constant "house style" but merely with the aim of complementing each base vintage to maximize its potential. Wafting from the glass with a complex bouquet of walnut oil, dried white flowers, saffron, citrus oil and crisp orchard fruit, along with a delicate top note of fino sherry, it's medium to full-bodied, sapid and incisive, with superb concentration, racy acids and a long, resonant finish. I found it irresistible. Drink 2019-2029.

Rich and toasty the palate features a complex flavour profile of baked bread, roasted almonds, yeast lees, delicate toasted dried honey characters and citrus. Finishes dry and crisp with a lingering cashew nuttiness. Long aftertaste of pear, toasted dried honey, yeast lees and nutty cashew.
Drink over the next 3-4 years.

Very fine perfume incorporating warm bread aromas, citrus pith and mixed candied citrus peel, dried apple, wet slate-mineral-like wafts. It’s got velocity in the palate, chalky, edgy, crystalline, more ‘mineral-like’ flavour and feel, set within the frisky tang of fruit and whoosh of firm bubbles. Really easy to drink, has a succulence in all the mix of things. Great.

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.
The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
