To many in the wine world, Cabernet Sauvignon is king. The Redbank Vineyard, overseen by its founder Neill Robb, has been cultivated without irrigation since its establishment. The vine roots have extended deep into the hillside soil, primarily consisting of shale and mudstone. This soil also features an iron-rich top layer of reddish-brown loam, which is crucial for retaining water. After three weeks of fermentation, the wine was pressed to a combination of new Stockinger 300L barrels (30%), Spanish stoneware jars and seasoned thin-staved Bordeaux barrels for 12 months of maturation. The wine is then racked to stainless steel tanks for four more months of settling, before bottling without any additives except a small amount of sulfur.     What a coup that cabernet enthusiast and cheerleader Josh Cooper gets fruit from this vaunted and celebrated Pyrenees vineyard! Proprietor Neill Robb still farms the 1970s planted vines.
    Dark chocolate, dark plum, dark cherry, dark plum, you get the gist… It’s a vortex of potent and powerful cabernet flecked with mint, eucalyptus, cedar, clove, rich and smooth, though ribbons of fine, firm tannin, slightly bitter, do a wonderful job of tensing the wine up and guiding the lengthy persistence of these flavours. Fantastic wine, I hound the glass seeking the characters and textures on hand – an orchestral wine of high drinkability and prized age worthiness. Mega attractive. Drink 2023 - 2040+.

    Very cool that Balgownie, already excellent, gets a go from Josh Cooper here. And go he does.
    A significant cabernet for Australian wine, again. Elegant, refined, silky as with an authority of silty tannin that stretches long into the distance. Blue fruits here, violets and lavender, green olive, tobacco, faint eucalyptus, rosemary and sweet spices. It sits at medium weight, poised, everything seamless and in its place and delivers a rush from the perfume, evocative, serious all over. The wine is delicious and refreshing while being backed with fruit, tannin, cool acid profile, mineral charm, herbal elements, savoury qualities. Fine, fine wine. Watch it go. Drink 2023 - 2045+

    I have a distinct soft spot for the Cabernet wines produced in the 70s and 80s by the pioneering wineries of Central and Western Victoria, many of which seem ageless even now”, says Josh Cooper, and don’t we know it! The top flight cabernet producers of Australia now have Josh tailgating, and then some. Pyrenees site, organic farmed.
    This is athletic and poised, a wine of tannin-driven tension and freshness, corkscrews of fine, puckering chew in a weave. It’s exceptional in its length and persistence but shows impressive depth of fruit character too – blackberries, black olive, beautifully struck eucalyptus, black pepper, cola and charred spice. It’s aromatic and flavoursome, but the wine seems way more about its architecture and precision, with a strong sense of longevity for the wine in tow. It’s a treat to drink now, regardless.     The Williams Vineyard, established in the 1970s near Kyneton, is historically significant in the Macedon Ranges region. Laurie Williams originally planted it, and later, it was managed by Alec Epis. Over the years, the vineyard has produced high-quality, age-worthy wines under various labels, including Flynn and Williams and Epis and Williams. This wine is a collaboration between Joshua Cooper and Tim Flynn, whose father was the winemaker for the original Flynn and Williams wines. This vintage is likely to be the final one from this important site. After three weeks of fermentation, the wine was pressed to a combination of one-year-old Stockinger 300L barrels and seasoned thin-staved Bordeaux barrels for 12 months of maturation.     Well, this is something else. And something that a few of the older gen have been raising an eyebrow over, knowing the vineyard, the older wines, the legacy. Meanwhile Josh Cooper forges ahead with his cabernet/Claret agenda with an eye on medium weight reds of that vin de garde style. While Josh drinks an obnoxious amount of cabernet, and foists it onto all and sundry, he’s making a pretty good point about fine wines of this ilk and turning a freight train around on ideas around avant garde winemaking and what it encompasses – I love this.
    It’s magnificent. It delivers on the promise. It feels like whimsy met deliciousness in a dark alley and made a pact. Sleek, silky, so fine and lacy, dark fruited, midnight but with that shimmer of moonlight. Poetry in a glass, the ultimate wine wankers dog whistle and yet here we have a wine of immense and broad appeal for those seeking vitality, fine tannin, freshness, drinkability. Dark cherries, violet floral lift, rhubarb, sweet earthiness, alpine herbs, faint mahogany and new leather, anise in scents and flavours. So very compact but feathery, succulent to the max and a swish of the finest, dried herb-laced, silty tannin. It’s impossibly good, impossibly delicious. And, I bet, will last a generation. Sheesh. The mountainside nature of Dash Farm provides incredible freshness to the wine. After three weeks of fermentation, the wine was pressed to a combination of new Stockinger 300L barrels (30%) and seasoned thin-staved Bordeaux barrels for 12 months of maturation. The wine is then racked to stainless steel tanks for four more months of settling, before bottling without any additives except a small amount of sulphur. This medium-weight cuvée is notably intense and embodies the classic "Claret" style. It's filled with dark berry fruit and is complemented by finely textured gravelly tannins. While already quite enjoyable, this wine will become even more complex and rewarding with some moderate aging. Decanting well is recommended when drinking in its youth.

    Just outside the Macedon Ranges wine region border, a cool site nonetheless and an attractive proposition to bolster Josh Cooper’s cabernet suite.
    It’s a wine not quite in its groove but the DNA of fine wine is in here. Concentrated mulberry, black olive, black plum, hazelnut, piquant dill and white pepper meshed together in the bouquet and palate. There’s good depth of flavour and requisite, finer grain tannin profile, a sluice of blood orange acidity keeping things perky, but the feel isn’t quite as seamless as the higher grade cabernet releases of Josh Cooper. That being said, you can see that the folding in of everything will be nigh, and the wine will mellow into its savoury and dark fruited elements well. Drink 2026 - 2035+

    A new super cuvee from Josh Cooper, a star winemaker who has firmly planted his reputation in a relatively short while, but with aplomb. And a focus on cabernet, which for a young fella seems antithetical, but high quality Claret is his guiding light.
    This is a blend of four vineyards 45% Greytown, 37.5% Balgownie, 15% Redbank and 2.5% Williams Vineyard. The detail from Josh explains that Greytown is a 1950s co-planted site of shiraz and cabernet from the northeastern side of Heathcote, Balgownie is the prized 1970s block from there which features in another Josh Cooper wine with stunning results. Redbank is the 1970s planted cabernet as nurtured by legendary Stuart Anderson (ex-Balgownie) and Neill Robb, while the dash of Williams Vineyard makes for an interesting inclusion off a site also planted in the 1970s, that ended up in notable wines under the Flynn and Williams brand. The wine spends time in one year old oak of two sizes and styles.
    It’s a very elegant, old school-good school feeling wine. I think the first comment, and first reaction, was that toasty, spicy oak is a strong influence in the wine, but not untoward per se, just a bigger player than expected in comparison to other Josh Cooper cabernet releases. It feels a little gritty in a way, good, and the extension of flavour is superb, dark cherry, cassis, violet floral notes with liquorice, dried herbs and faint eucalyptus are in the mix. Fruit tannins are lithe, drawing the wine into a composed, medium weight, flow and pucker. It’s a wine that feels like it perhaps would be best in a year or two, or released as such, to find that immersion of woody spice in a better place, but you can readily appreciate a wine of elegance, grand scent and flavour, and of course promise. It’s pretty darn great. Drink 2025 - 2040+

Medium weight, fresh and vibrant, yet also offering fantastic complexity and serious tannin. The wine will age into the medium term as well as drinking well now. Expect cassis, gravel, cedar, wild herb and violet. A Cabernet with great clarity of flavour and aromatics, and a seriousness of structure. The wine is best enjoyed decanted to reveal its true potential.

    Shay’s Flat is organic farmed. Cabernet quickly becoming the metier of Josh Cooper, despite the prowess with chardonnay and pinot noir. And my, does he consume a lot of (young and old) Claret in his spare time. Alongside his stamp collection and his tartan elbow patch blazers.
    This has energy and sleekness. A firm and tightly wound cabernet of cassis and currants, liquorice, brined black olive and autumnal leaf characters. Flavours and aromas are similar here. Ultra fine, al dente tannins are slippery then build into a lingering, generous pucker. While fruit feels ripe and rich it’s settled into strong, minerally sluices and the wine finishes mouth-watering and grippy at once. This is very good. Drink 2022 - 2035+

    Joshua Cooper is a producer whose wines I buy in my spare time and drink when I'm not working. The wines are detailed and interesting, and that's something I really value, along with distinction, specificity, place and identity. So, the 2021 Shay's Flat Cabernet Sauvignon leads with a leafy, cassis-riddled nose, which is brambly and spiced, with lotus leaf/humidor (to quote a friend), star anise, mountain herbs, coal dust, salted licorice, ash/embers and blackberries. In the mouth, the tannins are svelte and streamlined—they shape the fruit but it's an invisible caress—and their finesse is like finely milled powder. While tasting, the rockiness of the place evokes earth and minerals in the mind. The cool part about this wine is its austerity of line and structure: it packs flavor and complexity and freshness into a fine-boned package. It's awesome. Thrilling, actually. Drink 2022 - 2037.

    The fruit for this Cabernet was sourced from the Wetherall property - one of Coonawarra's best kept secrets. The family have been growing grapes for the big boys for decades from Terra Rossa blocks in the heart of Coonawarra, and the big boys have been happily making exceptional Coonawarra Reds without even a whisper as to where the grapes have come from!

    With over 5 years bottle age under its belt, this is prime Coonawarra drinking.

    Deep midnight black colour with a very dark red black tinged hue. Elevated scents of blackcurrant, mulberry and cedary tobacco characters are trailed by hints of black olive, dried herbs and spice. Medium to full in body, a wave of rich blackcurrant and mulberry fruits flood the mouth underscored by dusty vanillin cedar, tobacco leaf, black olive, dried herb and spice nuances. Still retaining good freshness, well integrated fine grained tannins provide excellent structure. Fleshy mouthfeel with a long dark fruited aftertaste that’s complexed by accents of dried herbs and tobacco. A classic Coonawarra Cabernet in all respects.

    The fruit from this excellent vintage comes off a mix of the original 1973 plantings at Juniper and another vineyard about six kilometres away. It’s a vibrant, high energy wine with a strong varietal influence. Quite a deal of tannin evident which is probably a result of the small vintage and intensity from the berries. Love the chalky palate feel and driving intensity which is a feature of 2020. Balanced with exceptional fruit definition. A class act and great value. Drink 2021-2033.

Man alive, this packs a punch, with alternating layers of cassis and tannins that go on and on.     Low yielding fruit, hand-picked. Shouldn't this be the norm rather than bragging rights at this price? Admittedly, the range of Cabernets at this address is like no other. The saturation of fruit, miraculously fidelitous to variety and place, is impressive. Blackcurrant and mulberry; anise and tapenade; sage and bouquet garni, barrage across the mouth, staining every pore. Powerful, sure. But not galumphing. Long and impressive for the idiom. Like eating wine, rather than drinking it. Drink by 2035.

    A 76/12/8/4 blend of Cabernet Sauvignon, Shiraz, Merlot and Petit Verdot from the single-site estate vineyard, in Pokolbin, Lower Hunter Valley. Low-cropping vines that are a combination of volcanic hill, with a south-easterly aspect at an elevation of 50-100m. The soil is heavy red clay, with limestone beneath. Vines are pruned heavily for low production, high-quality fruit and trellised with vertical shoot positioning. The grapes are hand-picked early in the morning, and crushed into open fermenters, where they are gently hand-plunged every 6 hours for a week before being transferred to old (French oak) casks for natural settling. In the spring the wine is transferred to small French oak barrels (225-litre) for a year before bottling.

    Best known for producing arguably Australia’s greatest Chardonnay, Leeuwin Estate’s Art Series Cabernet Sauvignon has demonstrated over recent vintages that it can match it with best of the region and comparatively still remains under priced when compared to other Margaret River heavy weights such as Cullen & Moss Wood.
    Predominately Cabernet Sauvignon with a 4% Malbec component also included in the blend, this wine was matured in French oak (50% new) for a period of 22 months.
    Totally opaque black dark red colour with a deep dark red hue. Compelling aromas of red to black currant, violet and mulberry captivate the olfactory senses with vanillin cedar, tobacco, subtle dusty earth and bay leaf scents ensuing. Rich red to black currant and mulberry fruits are generously layered across the regal medium bodied palate with vanillin cedar, tobacco, earth and bay leaf elements lying underneath.     The 2019 Art Series Cabernet Sauvignon has admirable fruit presence in the mouth. As an immediate follow on from the great 2018 vintage, the 2019 vintage was cooler and wetter, but the average quality across the region was excellent. In many corners, the quality is argued as being on par with the 2019; it comes down to a matter of preference. Here, the wine is elegant and fine, very aromatic. It's an excellent wine and a clear statement about the direction and refinement of the Cabernet program at Leeuwin. Drink 2023-2045.

    The 2019 Yarra Valley Cabernet Sauvignon is herbal, savory and spicy on the nose, with notes of dried petals and bay leaves, orange peel, licorice bullets and garden mint. In the mouth, the wine is elegant, supple and very pretty. It helps to understand the unexpected nose, once the wine is in the mouth—it makes sense, somehow. This has lovely balance. 13% alcohol, Stelvin closure.

    A success story of long term agricultural diversification, the Majella property was originally owned by Frank Lynn, and bought in 1960 by his nephew, George, for a prime lamb enterprise. Viticulture was not on the agenda until 1968, when George, encouraged by his friend, Eric Brand (of Brand's Laira fame) decided it would complement the sheep. Eric purchased the fruit for Hardy's, but the deal later fell through and for a couple of vintages tonnes of premium grapes were left to rot. The risk ultimately paid off. Majella have since had a long term contract supplying Wynns and today, plantings have continued to expand (150 acres now under vine), with Cabernet the flagship varietal. First produced in 1994, Majella Cabernet Sauvignon has quickly established a reputation as one of Coonawarra’s best.
    The 2020 Coonawarra vintage was one of excellent quality but low yields. Maturation took place in a mix of new and second use French oak hogsheads for a period of 18 months.
    Midnight black heart with a deep dark red black tinged hue. Intense red to black currant and ripe mulberry aromas are interwoven with vanillin cedar, subtle earthy tobacco and bay leaf notes.     The interesting thing here is the tannin. Indeed, as good as the fruit is, tannin is the defining aspect. It spreads from the mid-palate onwards, assertive and dry, fine grained but commanding. It gives a pronounced sense of gravity, but it also calls into question the wine's balance. It otherwise offers trademark blackcurrant, boysenberry, mint and cedar flavours, all of which are delivered in both delicious and substantial volume. Drink by 2038.

    The 2019 Cabernet Sauvignon is a pretty rich, bombastic wine, especially for Mayacamas. A blast of dark fruit, incense, tobacco, licorice, spice and mocha hits the palate. I would give the 2019 at least a few years in bottle to settle down, as it is quite the powerhouse today. This is an unusually flamboyant wine with plenty of richness and a bit less in the way of subtlety. The opulence of the vintage comes through loud and clear. Drink 2027-2041.

    Moving to the current releases, the 2019 Cabernet Sauvignon is clearly on another level.     Made from fruit from from a north-facing slope on Hans and Anna Orth's vineyard on St Huberts Road in Coldstream; 100% whole bunches, 10% new oak. A saturated crimson purple. Made more in the style of the Loire Valley's Chinon than Australian cabernet sauvignon, there's a lot going on here with its aromas of blackberries and blackcurrants, together with salted licorice, black olives and spice-rack spices. Saline on the palate, with good depth of fruit and fine, dusty tannins, this is a wine to be enjoyed with food, now and over the next 5 or so years. Drink by 2027.

Enticing red currant, red liquorice and ripe mulberry scents drift from the glass with hints of violets, cedary tobacco characters, light earth and fresh herbs also present. The delightful mid weighted palate is richly flavoured with ripe red currant and mulberry fruits. Notions of red liquorice, subtle vanillin cedar, earthy tobacco and bay leaf flow onto the back half. Great refinement and polish with seamlessly integrated tannins and a long highly finessed conclusion that shows a youthful freshness.

    A blend of 96% Cabernet Sauvignon, 2% Cabernet Franc & 2% Petit Verdot matured in French oak barriques of which 15% were new. Pitch black core with a deep bright dark red black tinged hue. A wonderful array of red to black currant, red liquorice, violet and mulberry aromatics sail out of the glass followed by some toasty cedar, tobacco, black olive and subtle bay leaf notes. Rich and silky in its feel the medium bodied palate is flooded with a mix of red to black currant and red liquorice fruits that show superb power and length. Notions of vanillin cedar, tobacco, subtle black olive and bay leaf chime in on the back half. Super fine tannins are seamlessly integrated. Concluding impressively long and refined this is already seductive drinking.

    This is a masterclass in refinement. It is svelte and streamlined, the cool, mineral spool of flavour across the tongue is what the 2019 vintage can look like at its most restrained and harnessed. The length of flavour basically flutters out over the finish, so weightless and enduring. The 2018 that came before it had a thundering, legendary quality - legs widespread, hands on hips, power pose. This is the creative in the family, the quiet guy. It's intriguing and intelligent and thoughtful ... poignantly red fruited, spicy and super-supple. I'm descending into hyperbole. It's unnecessary. This is another great Moss Wood release. Drink by 2042.

    There was some debate around a decade ago that this iconic Margaret River winery had lost a little of its glitter and that the wines were not what they once were. I was not quite as onboard with that as some – in fairness, it is not easy to remain at the pinnacle for a half century – but in recent years, the levels of quality they have attained have put to rest any such doubts. These guys now make some of the most thrilling wines in Margaret River and none better than their Cabernet. There are some world class Cabs made in the region and the MW sits with the very best. This vintage ranks with the finest of recent releases and there have been some crackers. To be honest, to look at this, I slipped it into a tasting which friends had organised, which was of some “super-second level” Bordeaux and great Margaret River Cabernets, from vintages as far back as 1990, right up to today. It will give an indication of how well it went if I tell you that one friend, not usually known for purchasing anything other than the great wines of Europe, rang the next day to say he had already picked up a six pack.
    96% Cabernet Sauvignon and 2% each of Cabernet Franc and Petit Verdot, this is elegance personified. A low yielding and slightly cooler vintage, the grapes went into small open tanks for fermentation, with thrice daily hand-plunging. 15 days on skins and then pressed to tank before it was racked to French oak, 15% new. Over two years maturation. As mentioned, elegance personified. A silky combination of coiled power and finesse, this is a glorious Cabernet. Blackberries, spices, tobacco leaves, kid leather, violets, cigar box notes, aniseed and delicately integrated oak. There is a gossamer-like web of complexity weaving through the wine. Seamless, great length and cashmere tannins. This is a brilliant wine. Ten years, twenty years? How long have you got? If you are serious about great Australian Cabernet, this is a must for your cellar.

    Generally, contrary to many, I tend to favour 2019 Margaret Cabernet over 2018. A bit more brooding, dense, tight, ‘minerally’, and all that.
    Powerful, compact, brooding sort of style, but tight too, all black fruit, dark chocolate, a seasoning of bay leaf and baking spice, some floral notes peeping over the top. Tannin is earthy and dense, but smooth and layered, boysenberry and dark raspberry, firm acidity set neatly inside, and a tobacco and black olive savoury finish of length and intensity. A very strong release, indeed maybe the best in the last decade. High drinkability, even early.

Medium to full bodied palate displaying great elegance, fnesse and power. Flavours of ripe blackcurrant, spice and mulberry are followed by some cedar and cigar box back palate favours, all seamlessly integrated with outstanding depth and persistence. Very long aftertaste of confectionary, violets, cassis and cedar.

    The 2012 Quintet is balanced and bloody on the nose; it's not as overtly savory perhaps as the 2014 tasted next to it, but certainly, there are gamey inflections entrenched in the red fruit. It has hints of clove and cardamom pod, roast beef crust and hints of asphalt/roadbase, moving in the more mineral/ozone/petrichor space. There are also notes of lead pencil and graphite. This is an intriguing wine. It finishes clean and mineral and cool. It's as tight as it is persistent. I find this to be quite a zen/placid wine, like the surface of a still body of water—unbroken and seamless. I like it a lot. It may be more polarizing than some others in this lineup, but for me, this is the picture of elegance. "A foot in the old-school Mount Mary camp, I feel like my grandpa would really take his hat off to that, in the context of the 1970s and 1980s." 12.9% alcohol, sealed under natural cork. The back label reads: "In loving memory of Marli Russel 1926 - 2012." Drink 2023 - 2060.

    The hue is bright, although not deep - indeed crystal clear; the scented, perfumed red berry bouquet leads into a juicy palate with no green notes, just a touch of mint; it is long and evenly balanced, and will provide much pleasure over the next five or so years, thereafter is in the lap of the gods.

    Mount Mary needs little introduction. Established in 1971 by Dr. John and Marli Middleton, it was one of the first vineyards planted during the resurgence of the Yarra Valley as a premium grape growing region.     This wine was produced from secondary fruit as a result of a devastating frost event in the early hours of October 23rd 2006 which destroyed the primary crop. Whilst significantly different to 'normal' vintages it is not without merit and we have released this wine as a 'not for sale' gift to our dedicated customers who have shared and endured the seasons with us over the years.

    The Mount Mary Quintet vineyard features Cabernet Sauvignon (50%), Merlot (25%), Cabernet Franc (15%), Malbec (5%), and Petit Verdot (5%). The blend's composition varies seasonally due to factors like fruitfulness and fruit set and is fermented on skins for 12-16 days, followed by 22 months of barrel maturation. The blend includes 25% in large oak (1500L+), 30% in new barriques (225L), and the rest in 2-5 year old barriques.

    "The 2021 is a Quintet to sit comfortably alongside our famed 1990, 2015 and 2019 renditions. The nose offers red cherry, violets, spice and some earthy undertones. The palate is driven by red fruits, intertwined with spicy French oak; however, it is really the quality of tannin that defines this wine on the palate. Not since the 2013 vintage have we seen this quality and quantity of fine grain tannin present, giving this wine such an appealing structure and persistence through the palate. It will age tremendously well for at least 3 decades."

    A blend of 45/30/17/6/2% cabernet sauvignon/merlot/cabernet franc/malbec/petit verdot. Fermented with whole berries and at different temperatures, depending on the variety. All varieties are matured in both barriques and 1600L foudres for 12 months then racked into barriques (35% new) for another 10 months before blending and bottling. A saturated purple-red. This is a special Quintet (and I don't say this lightly) from the first. Aromas of blackberries, blackcurrants, dark cherry skins and crushed violets. A whisper of pencil-shaving oak. An elegant, concentrated, pure and structured wine that will become even more special with time. As I was tasting it, Radiohead's opening track from Kid A came to mind. Everything in Its Right Place, indeed. Drink 2023 - 2040.

    Among the ten vintage flight that I was privy to, this is arguably the finest of them all, sitting pretty alongside its rival, the stunning 2015. Medium-bodied, taut and understated, as the Quintet always is. Graphite, pencil lead, blood plum and a fleck of red and black currant. The wine's signature, a kit of gorgeous, sinuous tannins that reflect the later picking windows of more recent years. This could easily be nudged up a point. Best after 2028.

    It's no secret that the Quintet is one of my favorite Cabernet blends in Australia. I collect a few bottles for my cellar each year because of three reasons: they speak of site and place eloquently and gracefully, they age in the same manner, and despite every and any season, the dry-grown vines prevail. I love the vintage variation through the lens of house style; these are natural feeling, unforced vineyard wines and a proud statement of what is possible in the world of global Cabernet, and Australian Cabernet more specifically.
    So, the 2021 Quintet comprises 45% Cabernet Sauvignon, 30% Merlot, Cabernet Franc 17%, Petit Verdot 6% and Malbec 2%. On the nose, there is a forest of red berries—mid-weight and balanced in their flow of aromatics. It has notes of pomegranate, cassis, a hint of cocoa, graphite and tobacco, star anise and salted licorice. In the mouth, the calling card of this estate is undoubtedly the tannins, and they flow and weave through the fruit at every turn. This is a silken wine, the tannins like carded silk. If you've ever carded fleece or a raw substrate like that, you know the satisfaction and progress of that process. The tannins here have that open-weave, unfettered feeling—they are what they are and are not created/built/etc. There is nothing forced here. The season has yielded a balanced and fine wine, and the tannins feel like they plume through the fruit, like blood in the water. I cannot separate the fruit from the tannin. It's chewy. Excellent. I'm looking forward to seeing this again in a decade. Drink 2023 - 2063.

    45% Cabernet Sauvignon, 30% Merlot, 17% Cabernet Franc, 6% Malbec, 2% Petit Verdot. All the good things. I tasted a 2021 Coleraine the other day, and in many ways, this wine echoes that one. And last year I opened an 18 MM alongside an 18 Coleraine, and it was the same kind of thing. Obviously they are different, and yet, they have a kinship. I think it’s to do with this restrained intensity, acid and tannin balance, and quintessential Cabernet blend perfume. Just an observation really. If you’re feeling flush, you should try it yourself some day. I can pretty much guarantee you won’t have a bad time.
    The pencils and the perfume, crushed small berries, essence-like in a way, with tobacco and a little crushed leaf. It’s medium-bodied, tense and so controlled, firm graphite tannin, a clean cranberry crunch to acidity etches it so finely, and the finish is floral, stony and supremely long. Frisson and finesse. It’s a magnificent wine, and one for the ages. Drink 2026 - 2047+

    Tasting Note: An extraordinary bottle of wine, even 'blind freddy' can tell that it's 'posh'. This wine definitely draws its inspiration from Bordeaux First Growth, and in particular, Chateau Lafite and Chateau Latour in its finesse and construction. It's almost impossible to compare this wine with other Australian reds, as neither its structure or flavour conforms to an Australian norm. It is without a doubt a world class wine. Made by Mario Marson, John Middleton's winemaker at Mount Mary, the wine is a reaffirmation of the fact that Australia is capable of producing First Growth quality and finesse. Deep crimson colour, with purple mauve hues. Superb complex aristocratic nose, powerful aromas of violets, blackcurrant, spice and cedar fill in the nose with an aire of grace and confidence only seen in First Growths. The palate is superbly structured - elegant, and yet filled with remarkable power and concentration of flavour. A seamless marriage of component parts - Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petit Verdot. Exquisite balance with very long aftertaste of cedar, violets and blackcurrants. A totally refined experience. Cellar 8-15 years.

Cabernet in Australia.

Cabernet Sauvignon came early to Australia around 1831, forming part of James Busby's collection. Canes were imported from Chateau Lafite by Paul de Castella for his Lilydale vineyard in the 1940s. Today, several superstar Aussie Cabernets have become international wine icons including Mount Mary, Cullen and Moss Wood. Low yielding, fully ripened fruit is vital if one wishes to capture Cabernet's classic blackcurrant flavour and avoid the green, vegetal / leafy / methoxypyrazine characteristics that come from over-cropped, under-ripe fruit. The best examples are austere and structured in youth, with a core of fruit emerging after extended cellaring. They can be exceptionally long lived.

However, several less obvious South Australian efforts rank among the country's most prized, including the exuberant Penfolds Bin 707. The reality is Cabernet performs well in almost all regions, and retains its popularity as a contrast to Shiraz, with a more food-focused approach.
