Thomas Bouley is very much the insiders secret, more famous with his fellow vignerons than with collectors chasing the next 'superstar' seen on social media. That Thomas resists putting his name on the front label of his wines (preferring to keep his father's) is typical of his humble and low key approach. Based in Volnay may also add to his relative anonymity, however we suspect this is changing rapidly as word gets out of just how spectacular his wines are, and of the continual improvement seen since he began working with his father in the early 2000's.
Meticulous attention to detail in both the vineyard and winery are notable here, and key to why Thomas is so highly regarded by his peers. Yields are moderate, and in the cellar whole cluster ferments are used more with his clay rich sites (Pommard Fremiers, Volnay Clos des Chenes), while those with thin white soils (Pommard Rugiens-Hauts, Volnay Caillerets) are largely destemmed. New oak use is minimal, and each wine spend two winters on fine lees before bottling.

Wafting from the glass with notes of sweet cherries, strawberries, vine smoke, raw cocoa and spices, the 2020 Pommard Village is medium to full-bodied, cool and layered, with terrific depth at the core and a lively spine of acidity that carries through the long, saline finish. As usual, the blend is dominated by the cool, northeasterly exposures of the windy lieu-dit of Valmuriens. Drink 2025 - 2045.

A blend of 85% Pinot Noir and 15% Chardonnay based on the 2018 vintage (65%) with the balance made up of reserve wines. Matured on lees for 30 months. A nimble mousse dissipates to reveal a pale straw coloured base with apricot gold tinged edges that’s threaded by a fine bead that shows excellent persistence. Elevated pear and strawberry aromas are followed by some yeast lees, brioche and citrus notes. Quite full and expansive in the mouth the palate features a complex flavour profile of ripe pear, baked bread, yeast lees, strawberry and refreshing citrus. Dry chalk tinged finish with crisp acidity and a highly flavoursome yet focused aftertaste.

Disgorged JAN21. A blend of 85% pinot noir and 15% chardonnay. Mostly 2018 vintage but with 35% reserve wine, which is no slouch. Organic farmed. I really like these Champagnes.
Sweet perfume with just-ripe apricot, coconut, nougat with Parisian almonds in the mix. Pretty. The palate is zesty in bubbles, creamy yet light on with a sense of elegance and freshness writ large. Poised. Good detail of yeasty complexity on green apple with grapefruit pithy coolness and zing. Delightful and feels fancy. Drink 2023-2030.

Matured in oak casks, 30% new, for a period of 18 months. Black as night heart with a deep dark red black tinged hue. Pronounced ripe black cherry and liquorice aromas infused with smoky cedar and clove mix with dried herb, earth and peppered dried meat notes. Rich and fleshy textured the full bodied palate features spicy black cherry and liquorice fruits over a back drop of toasty vanillin cedar, earthy graphite, dried meats and peppered herb characters. Meaty mouthfeel with slightly chewy tannins and a long aftertaste that’s both ripe and savoury.

Aromas of raspberries, peaches and strawberries are trailed by hints of spicy blood orange and wet stone. Full, concentrated and possessing a supple texture, delicious blood orange, peach and strawberry fruits overlay a wet stone back drop. Finishes dry with soft acidity and a long delicately spiced aftertaste.

A new Lark made using their own Central Highlands Lake district peat bog. The distillery employs an innovative post-malt smoking process resulting in a different flavour profile than traditionally peated whisky. In fact, the Scotch Whisky Industry have shown particular interest in their proprietary method. The peat is influenced by the decaying forest matter of the Tasmanian vegetation surrounding the bog. This is not comparable with anything you might consider peaty from Scotland. In fact, most will find the smoke indiscernible. Arguably, it has contributed a light oiliness and some bush character to the sweetness of the malt, specifically a sense of native flora in nuances of roasted wattle seed, wild aniseed and pepper berry. It's all extremely subtle. Put peat to one side, and this is a completely satisfactory whisky boasting balance and impressive purity. 46% Alc/Vol.
Other reviews... Lark’s way of smoking its malt has always been a bit different, taking already malted barley and smoking it over Tasmnian highland peat rather than using imported smoked grain. The result is Lark Tasmanian Peated, the first 100% Australian smoked whisky ever made. Incredibly well integrated on the nose, like gently smoked honey, there’s none of the aggressive iodine and campfire you get from smoky Scotch. Lanolin, plum pudding and pipe tobacco combine to form the memory of Grandpa’s jumper. Quite sweet on the palate as the fortified wine casks make their presence known, and with a soft texture that could use just a little more weight. The finish offers gentle, earthy smoke and minerality that speaks to the Tasmanian highlands that inspired this whisky. Where the Classic Cask is almost too subtle, this is nuanced in all the right ways. An incredibly enjoyable whisky and a true Aussie classic. 96 points - Fred Siggins, winecompanion.com.au

Voted World's Best Pot & Column still Rum at the World Rum Awards 2020.
In 1742, Deptford Dockyard was the Royal Navy Victualling Board’s main spirit depot; housing 30 storage vats that accommodated and aged more than 250,000 gallons of rum. From here, they supplied the Fleet with a flavourful blend of ‘Empire’ rums from British Navy suppliers in the Caribbean. While little is known about early Admiralty specifications, the blend was done “in such proportion as experience had shown was preferred by the men.”
As is now popular rum folklore, the final daily rum ration was served on 31 July 1970 at 6 bells in the forenoon watch (11am), ending a Royal Navy tradition of more than 300 years. Some sailors wore black armbands, tots were 'buried at sea' and in one navy training camp there was a mock funeral procession complete with black coffin and accompanying drummers and piper.
To commemorate the 52nd anniversary of Black Tot Day, as it became known, Pusser’s have introduced a limited-edition Deptford Dockyard Reserve at Navy proof, featuring a blend of high-ester distillates from Caribbean countries in Great Britain’s naval past (Guyana [Demerara], Trinidad, Barbados and Jamaica). Offered at the same strength that bulk underproof rum was historically stored at the Dockyards, the hefty ABV is intimidating until you taste it. Aged for a minimum of three years in x-Bourbon barrels but tasting much, much older, Deptford Dockyard is a medium-bodied rum, shy on the nose while boasting beautifully integrated flavours of Christmas cake, orange zest and festive spices that draw comparisons to heavily sherried single malt. Its restrained power dials down with liquorice bullets, chico lollies, cinnamon buns, brandy sauce and lingering molasses cake. Easily approached uncut, think of it as a cross between richer, darker Demerara styles and high ester Jamaicans - less the extreme funk. 54.5% Alc./Vol.

In 2021, Theo was invited to visit a mature, 10-hectare vineyard in the Bray district of the Maconnais that two investors had recently purchased. Dancer immediately saw the potential of the mature vines and limestone-rich soils. He agreed to manage the project, but only on the condition that he could control everything. Taking over in July 2021, with the help of full-time vigneron Bastien Cubillé, Dancer immediately began raising the vineyard work to his standards, bringing the soils and vines back into balance, planting cover crops, and cultivating inter-vine.

Medium-bodied, fleshy and incisive, with tangy acids and a long, saline finish, it's a terrific debut effort for this new project. Maturation was in used 500-liter barrels.

The Roc Breïa 2021 Pinot Noir is just as charming as its white counterpart, bursting with aromas of red berries, plums, rose petals and orange rind. Medium-bodied, open and supple, with melting tannins and a lively, succulent profile, it will drink well on release. The Pinot Noir was vinified with some 50% whole bunch this year, followed by maturation in large used barrels.

Théo Dancer is the ambitious and tallented winemaker now heading up the family Domaine Vincent Dancer winery based in Chassagne-Montrachet. Like his father before him, Théo studied at Lycée Viticole de Beaune while working with his father part-time. He joined the domaine full-time in 2021 and is already making a significant impact. In addition to his work with his father, Théo has also taken on an exciting new project in the Mâconnais (Roc Breïa) as well as starting his own micro-négoce, sourcing fruit from several exciting vineyards across northern France.
Emphasising purity and terroir rather than flor-aging notes, this is Savagnin ouillé (topped up) sourced from the fossil-rich marl soils of L’Étoile, in Jura’s southwest. The grapes were pressed and put directly into large oak barrels.

Other reviews... This Jamaican rum-finished Cardhu has a nose dominated by grapefruit flesh, with white pepper, ripening mango, zested lime, clementine peel, and grilled pineapple. The palate has bitter citrus and grapefruit acidity, pepper, clove, and a belligerent rush of cask-strength alcohol that cries out to be quelled with water. Once subdued, the rum sweetness shines alongside flavors of dried mango, green banana, vanilla, and aniseed. 86 points - whiskyadvocate.com
...More of this year's very esoteric and lavishly illustrated Special Releases. This one matured in refill American oak and was then finished in Jamaican rum. They've also filled some of those very lovely 20cl bottles, as they did in the past with some Port Ellens and some… Loch Dhu. And the Classic Malts, naturally. No, nothing to do with shrinkflation. Colour: white wine. Nose: a little fruity glue at first, or nail polish, with some peach and strawberry syrups, then indeed a few tropical fruits from the rum, mostly pineapples, as well as fresh raisin rolls. This was finished in Jamaican pot-still rum but I'm not fining anything really 'funky'. Probably not what they would have tried to come up with in the first place. With water: perhaps, indeed, a little olive oil, which would make the texture rather a little thicker on the nose. Some good folks are making chocolate using olive oil, which I find rather good too. Nice nose, nonetheless. Mouth (neat): really to my liking, rather spicy but more malt whisky than rumsky, if you see what I mean. It's just a little hot. More raisin rolls. With water: the rum's influence got more obvious, with more pineapple, a little more olive oil, Juicy Fruit… Finish: medium, on allspice, honey and, perhaps, papaya ice cream. A touch of viognier too but indeed, viognier can get very tropical. A wee salty smokiness in the aftertaste. Comments: you could argue that we need no one's help to make our own rumskies (try 85% young Highland Park or Clynelish with 15% young Hampden or Worthy Park, for example) but it's good. Wat's more, I don't think 'Cardhu needs rum' was the message in the first place, was it? 85 points - whiskyfun.com

Other reviews... White pepper and orange on a wave of high alcohol grow into a spicier proposition with allspice, apple, melon, Chinese pear, and mincemeat. Silky mouthfeel with candied orange, warm sherry notes, and pulsing spices, developing more of a waxy texture mid-palate, followed by a slightly bland ending of vanilla and star fruit. ...The cask-bill here gathered refill American oak, PX and oloroso. Hope this gumbo won't have offset the Distillery character, but probably not, Diageo do care about Clynelish! What's sure is that it was a good idea to hire Syd Barrett's little nephew to do the names and stories… Colour: straw. Nose: it's pretty fascinating to have this one after the more elementary (in the best sense) TWS. Nutshell, the sherry has erased a part of the bright fruitiness and added some wine, walnuts and teas. English breakfast tea, naturally. With water: a little more fruitiness but walnut skins and other fruit peelings, and even eucalyptus tea tend to dominate. But the paraffin and beeswax are there, hurray. Mouth (neat): the fruits and rather a lot of paraffin are having the upper hand this time. Once more, a little bitter oak coating that, even chlorophyl. With water: very good, if a little cask-heavy indeed. A notch harsh, perhaps, otherwise oranges and a little honey are adding some needed lightness, although this isn't fruity whisky by any means. Finish: rather long, but the oaks and their spices are at the helm. Some raisins from the PX (I would suppose) in the aftertaste, plus a faint saltiness. Comments: super-good, it's just that I shouldn't have had the rather pristine young 2011 just before this one. My bad. 84 points - whiskyfun.com

The Californian project of two classic houses of France, Racines is led by vignerons Étienne de Montille and Brian Sieve of Burgundy and Rodolphe Péters of Champagne. The aim of this collaboration is to create a range of Pinot Noir and Chardonnay from the cool-climate of the Sta. Rita Hills, in Santa Barbara County, drawing upon each individual’s experience and knowledge from the Old World. The resulting wines, thanks to careful handling and “classic” (as in less hands-on) winemaking, highlight each specific terroir with purity and transparency.
Two north-facing parcels of Chardonnay make up the Bentrock vineyard. One sits a little higher, overlooking the Sta. Rita Hills, in a very exposed perch on rocky soils; the lower one, protected by the hilltop parcel, is located slightly to the east and has more soil (a mix of sandy and clay loam).

All the classic S&B signatures come through, kicked up with an extra touch of textural richness. Creamy and silky in the glass, the 2019 is outrageously beautiful. Lemon confit, marzipan, white flowers and tangerine oil are some of the many notes that build in a soft, silky Chardonnay that dazzles from start to finish. Impressive. Drink: 2023-2031.

The 2019 Pinot Noir Sanford & Benedict is a powerful, brooding wine. The high percentage of stems (75%) undoubtedly adds savory intensity, but it also masks some site character. The 2019 is a gorgeous wine, but it is also austere and not an especially typical expression of this site. I hope to have a chance to taste it in a decade. Drink: 2024-2039.

A ripe but cool, pure and airy nose freely offers up its notes of plum liqueur, violet, lavender and wet stone. There is impressive intensity to the chiseled medium-bodied flavors that possess very fine mid-palate density as well as an almost aggressive minerality on the moderately austere, compact, long and balanced finale. This is excellent and historically, is a wine that always ages well. Drink through 2032+.

The 2020 Volnay Les Taillepieds 1er Cru comes from two parcels is 90% whole cluster. Brambly red berry fruit is mingling with black pepper, clove and touches of undergrowth. The palate is medium-bodied with quite succulent tannins, more rondeur here than the other Volnays, plush and quite luxuriant wiht a sensual and very pure finish. Superb. Drink 2025-2048.

90% whole cluster. Imperial purple. This wine has the ideal balance between whole bunch freshness and the fruit of the vintage, which does not have an exaggerated ripeness here. Tight firm finish, crunchy with dry tannins which should resolve without difficulty given a little time.

The 2020 Clos de Vougeot Grand Cru has one-third whole bunch. It has a precise bouquet and very pure with ebullient red fruit laced with crushed stone. Wonderful focus. The palate is medium-bodied with silky smooth tannins, fine depth and cohesion, well-integrated oak with dark fruit and brown spices emerging towads the persistent finish. Excellent. Closure: Diam. Very erratic rows here, I am told, so it is ploughed by horse. 13% alcohol, 3.65pH, one third whole cluster. I loved the bouquet of this wine which has ethereal qualities. Then, on the palate, I found it a little less concentrated than I was expecting. It will still be a delicious wine though, in the medium term.

The Grandfather release in this consignment breaks the fifty year barrier and is one of the earliest (and oldest) Family Cask bottlings we've been able to secure to date (a 1954 is currently listed at $20K if '66 isn't your year). Almost certainly nearing the distillery's final warehouse stocks from the era, it is investment grade whisky, obviously desirable for any collection or premium bar as single malts of this rarity continue to defy the odds, increasing in value and becoming the 'assets' of a decreasing few. Purists who insist on opening a bottle may expect a punchy and slightly wilder ride than many contemporary Glenfarclas' while also delivering an amazingly, deep sherry infused experience that should set a benchmark for well-aged Speyside malts. The softer side of Speyside is on show in this deeply coloured Tamnavulin. Finished in three different types of sherry casks, the nose offers a delicate and gently sweet sherry infusion leaving the malt intact, American oak adding an undercurrent of vanillas. At first dryish and Oloroso-like, by mid palate this develops impressive weight and mouthfeel with a brief burst of fruit cake and a thrust of warming spices. The finish lingers with more dried fruits (think PX), bitter peel and a late succulence. The wine input is sensitively handled, and at just 40%, the depth of flavour unexpected. Prepare to be surprised.

Readers should give the 2017 at least a few years in bottle, as it is not at all ready to drink now. The 2017 embodies the house style at Querciabella these days nicely. The wine is rich and deep, but not at all overdone. Drink 2024 - 2037.

Vanilla, cakes, Nutella, macchiato. Starbucks whisky. With water: more Nutella. I just hope no orang-outangs have been harmed along the process. Mouth (neat): good for sure but indeed, there is a lot of Nescafé and Nutella. With water: roasted hazelnut and more Nescafé. Finish: medium, very dry, pretty oaky. Indeed, the 2018 Brunello di Montalcino does reveal a rather austere approach with dried fruit, blackcurrant and fig. I wish there was just a hint more fresh fruitiness to those aromas, but the wine has already veered toward an evolved stage. This prompts me to suggest a shorter drinking window. There is a hint of dryness to the tannins, and the acidity is welcome. Drink: 2024-2035.

In 2018, Andrea Costanti used fewer tonneaux than usual, opting instead for larger, less oxidative casks, a significant portion of which were new. This lends some oak nuances but doesn’t detract. Aromas of exotic spice, violet and chestnut are amplified by a touch of volatile acidity. Those dark purple floral notes carry through to the palate, which brags lovely weight with balanced proportions and mouthwatering, citrussy acidity. The tannins are weighing down the finish right now, but give this another year or so to come together and it should be a joy to drink. Drink: 2024-2037.

Bryan Martin has been producing thought-provoking wines in Murrumbateman wine country since 2001. Their Estate vineyard is managed sustainably, focusing on soil health, and foregoing synthetic chemicals, herbicides, and fertilisers. Fruit is also sourced for their Regional Series from the surrounding Young, Hilltops & Canberra District regions.
The Estate Riesling is sourced from mostly 25-year-old vines grown on granite soils at 650 metres elevation. After approximately 24 hours on skins, the fruit was direct-pressed to two ceramic eggs for fermentation and a year-long élevage with lees. It was then racked to old foudre where it rested before being bottled unfined and unfiltered.

Gosh this is good. We know this from prior, but the reminder is strong and evocative in the glass. It’s that powdery texture mixed with glass shards of acidity. The strong scents of fresh squeezed lemon, perfect Tommy’s Margaritas, green apple freshness. Intensity and crystalline texture yet so much drinkability and refreshment. Faint savouriness? That too. And a quartz-like minerally finish matched to light almond with citrus spiked over the lot. Wow. Drink 2021 - 2035.

That puckering texture! It’s a delight. Honey nut cornflakes, green apple, lime, halva, green herbs and pink grapefruit tang through it. That chew is delicious. The wine is fragrant, lots going on, it’s a treat to drink and feels destined for dinner tables, coming alive with food. Drinkability is through the roof and quiet complexity in tow. Pax Wines is the venture of husband and wife Pax and Pamela Mahle, who craft a range of "Rhone-influenced" Syrah from a selection of vineyards on the cooler, coastal areas of Sonoma. An ex-sommelier, Mahle swapped "the bowtie for some dirty boots" - in his own words - focusing on elegant and aromatic Rhone varieties strongly influenced by the time he spent visiting cellars in France; Raymond Trollat and Pierre Gonon are amongst his strongest reference points. All his Syrah are single varietal, 100% whole cluster and foot-crushed with no commercial yeast employed. The resulting wines are marked by a distinctive freshness, "much finesse" and "much purity", as noted by Antonio Galloni.

The 2021 Syrah Sonoma Hillsides is towering and statuesque in bearing from the very first taste. I don’t think I have ever tasted a Sonoma Hillsides with this much finesse, this much purity. A wine of vertical energy, the Sonoma Hillsides possesses tremendous depth from start to finish. In many vintages the Hillsides leans towards a darker expression of Syrah. The 2021, on the other hand, is marked by more of a red/purplish fruit profile, with bright floral and citrus overtones that confer freshness. Once again, Pax Mahle made one of the truly epic wines of the year. His Sonoma Hillsides has been one of the very finest wines in Northern California for a number of years now. Drink: 2024-2036.

Matured for 12 months in one third new oak. Deep dark red black core with a dark red hue. Spicy red plum, red currant and red liquorice aromas intermingle with earth and fresh herb notes. Rich juicy dark cherry, plum and red liquorice fruits are delivered with ample concentration across the fleshy textured mid weighted palate. Some earth, infusions of fresh herbs and spice lie underneath. Seamlessly integrated velvet like tannins finishing with a lick of blueberry like freshness and a long polished aftertaste.

Fermented wild. Unfined and unfiltered. The sort of wine, unfettered and pure of intent, that could be considerably more expensive. Blueberry and florals. A twine of ferrous tannic persuasion, dried tobacco and a verdant smattering of herb. The finish, long and persuasive. Drink by 2031.
