AN OLD FAVOURITE RETURNS TO AUSTRALIA. After innumerable requests (with some customers begging us to bring this obscure liqueur back), we decided to import it ourselves. Irish Mist is a variety of Whisky liqueur, and claims to be both older and superior to any Scottish version! The unique recipe is reportedly over 1200 years old and based on a classic blend of clover and heather honey, exotic herbs and mellow Irish Spirits. According to lore, the liqueur was all but lost until Desmond Williams of the Tullamore Distillery came across a manuscript containing the recipe that magically appeared in the 1940s. Mr. Williams took this and adapted it, using Irish whiskey as the base.
Tasting note: Deep tawny in colour with a copper rim. Sweet herbs & citrus peels on the nose. Wonderfully deep palate replete with rich honeyed, raisined flavours and a thick, luscious mouthfeel. Christmas pudding in a bottle! The sweet spirit rises in the finale and warms the heart. Good balance - not cloyingly sweet. A worthy counterpart to its Scottish 'cousins'. 35% alc/vol
Other reviews... Of all the honey-flavored liqueurs I’ve tried, Irish Mist is probably the mildest around. It’s Irish whiskey imbued with honey and “natural aromatic spices,” but the flavor is quite muted. A touch of honey, maybe some cinnamon and cloves, all on a very mild whiskey base. Released in September 2015 (originally for committee members only), this is reportedly the last of the Supernova series and potentially one of the most compelling to date. At 100ppm the peat will be firing on all cylinders. Expect something akin to a super-charged Corryvrecken. Very limited stocks.

Few whiskies pulse so impressively, or smoky, the next gritty, then acidic...Not peat on steroids, as someone once described it, to me this is far too natural and beautiful...a huge beast of a malt with seemingly insurmountable peat...until it encourages, then allows you to climb on its back. Pure and intense aromas of pink grapefruit and a gently bitter medley of fresh herbal notes; just as complex in the mouth, and seamlessly integrated, this ups the bitterness on last year's release and lingers even longer in the aftertaste. [2015 edition / taken from a 30ml sample] Cloudy / translucent autumn leaf brown with fine sediment. Aromas of grapefruit / plum / pepper / curry leaf? Entry is dried herb-like yet fruity building with prune, sweet spice and lively acidity. Finish adds an superb bitter-herb power wave. Ends delicately bitter, grapefruit-like and long. 93 points 21.5% Alc./Vol.
Other reviews... My “wine” of the weekend, though, was Nocturne, a new amaro (or bitter fortified digestif liqueur) from Victorian vermouth producer Maidenii. This incredibly complex, startlingly original drink started life as a barrel-aged rose, with layers of flavour then built up through additions of botanicals such as quandong, pepper, munthurri berries and black truffle, and a mouth-hugging bitterness provided by gentian and angelica. It’s very limited — just one barrel, or 300 bottles of this first release were produced... it’s one of the most remarkable fluids to have flowed across my tongue all year. - Max Allen

In 1817, the future King George IV of England asked Hennessy to supply him with a “very superior, old and pale cognac”. By the end of the 19th century, V.S.O.P, as it had become known, had firmly established its reputation among the nobility. The product of a gradual blend of over 60 eaux de vie taken from the four leading vineyards in the Cognac region, V.S.O.P is slowly matured in old barrels from which most of the tannin has been extracted. Try it with a Cohiba cigar. 40% alc./vol.
Other reviews... The hollow bouquet emits only fey scents of vines and green vegetation. The palate entry is very sweet, nearly syrupy; the midpalate is the best phase as rounded flavors of dark toffee, nougat, and maple work nicely together. The highly aromatic cognac begins with fruits, but they have moved into the dried fruit territory with raisins, apricots and dates. Floral aromas are strong as well leaning towards violets. A mulled wine aroma lingers about with the baking spices of cinnamon and clove standing out in particular. As you move into the palate, there's a tangy liveliness to the brandy with the notes from the aroma still present. There's a noticeable sweetness present, but it isn't cloying. There's just enough of a bitterness at the finish to make it interesting. This is a good step-up for beginners just getting into cognac as it isn't just all about fruit. 85 points - distiller.com

In 1986, Eric Dhondt and Edith Grellet decided to stop selling off grapes to negociants and started Dhondt-Grellet. Their focus on farming translated into honest Champagnes from great holdings across the Côte des Blancs. Now with their son, Adrien, assuming a larger role, they are refocusing their efforts and producing some of the best Champagnes they ever have. Nowadays the company is lead by Eric and Adrian.
The vineyard is situated primarily in Grands and Premiers Crus of Cote des Blancs namely Cramant, Chouilly, Cuis but also Sézanne for their Chardonnays. They also cultivate some Pinot Noir in the Vallée the la Marne. Mainly located in mid hillsides on easy to work, very lightweight calcareous soils, their plots enjoy an outstanding location and a southeast exposure. The average age of the vines is 40 years. They also have their own cellars in Flavigny to age the wines before bringing them on the market. Les Terres Fines is their 100% chardonnay from premier cru vineyards from Cuis.

Disgorged in June 2021, the NV Extra Brut Blanc de Blancs Premier Cru Les Terres Fines (2018) offers up aromas of ripe citrus fruit, green apple, fresh bread, peach and toasted nuts. Full-bodied, ample and vinous, it's fleshy and generous, with lively acids and an enlivening pinpoint mousse. Seamless and complete, it concludes with chalky grip. Drink 2021 - 2028.

The NV Champagne Blanc de Blancs Les Terres Fines Extra Brut was vinified in barriques and is more vinous in its aromas of toast, baked apple, and Meyer lemon. The palate is dry and ripe, with notes of pear, peach, smoke, and white flowers. It has underlying tension and is persistent in its length. Its assertive style will need some time to unwind and harmonize to its full potential. Disgorged July 2021. Drink 2024-2036.

Established in 2015, Cam and Suzy Brett built Spring Bay after falling in love with the coastal region. Whiskies are matured in x Makers Mark bourbon barrels, x-port and x-sherry casks. Three huge rainwater tanks supply the distillery. Brett comments, "Today's rain is tomorrow's whisky. The salt is very important to us, it makes the rainwater sweet rather than salty."
Other reviews... [Cask 322 tasted] Spring Bay Bourbon Cask is one of the primary examples in Tasmania of how quality ex-bourbon casks combined with good, clean, single malt spirit can really shine in the Australian context. This is bursting with bright, floral fruitiness. There are notes of honeydew, geranium and tinned peaches in abundance, with plenty of bright vanilla from American oak. If you’re looking for buttery biscuits and rich malt character, this isn’t going to tick that box, but that light, floral character has a lot in common with Irish and Japanese whiskies. There’s good texture and grip through the palate, which retains its inherent lightness, making this an extremely drinkable single malt whisky, if not the world’s most complex. But if you like lighter, dryer and more floral whiskies (Glenkinchie, for example) that retain the essential heft of single malt, this will do the trick. 91 points - Fred Siggins, winecompanion.com

The 2016 Cantenac Brown seems to have grown aromatically since I last tasted it a few months ago. More complex than I remember, this offers a cornucopia of scents: blackberry, briary, cedar and a lovely mintiness that recalls Palmer. The palate is silky smooth with great depth and delineation, satin-like, multi-layered, precocious black fruit laced with black pepper, tea leaves and cloves, all fanning out gloriously towards the finish. Bon vin! Tasted at the Cantenac Brown vertical at the château. Drink 2025-2055.

A solid step up and a brilliant Margaux, the 2016 Cantenac Brown checks in as 68% Cabernet Sauvignon and 32% Merlot raised in 60% new French oak. Black cherries, currants, smoke tobacco, graphite, and hints of earth all emerge from this beautifully layered, medium-bodied, and concentrated 2016 that shines for its purity and precision, while still offering beautiful depth of fruit. Give it 3-4 years and enjoy this fabulous effort over the following 2-3 decades. Drink 2022-2052.

Equipped with two gorgeous Holsten stills, Brookvale locals, David Whittaker and Vanessa Wilton are driven to create spirits that capture the diversity of Australian botanicals, exploring above and below the ocean to create that something special. Presently offering two vodkas, a White Dog malt and this contemporary-styled gin, the spirits are meticulously monitored during distillation and rather than computer controlled cuts, Manly rely on well-tuned noses to capture as much flavour as possible.
Produced from a wheat base, botanicals for the gin include Sea Lettuce, Pepper Leaf, Anise Myrtle, Finger Lime and Orange Peel. The odd botanical here is obviously the marine addition. It was inspired by Elijah Holland, head chef at "Powder Keg", a restaurant and gin bar in Sydney. He recommended it as a novel 'North Beach coastal influence' for the gin's profile.
Tasting note: Clear with thick tears down the sides of the glass. Excellent aromatic lift includes aromas of pine needle, fresh citrus peel (lemon / lime) and delicate white pepper. Dry, cool-mint confectionary-like flavours (Lifesavers?), followed by muted lime juice and a chalky, lemony finish. Light piney aftertaste. An engaging citrus-led style that will shine in summer cocktails. 43% Alc./Vol.

Small batch bitters are surely making their mark on the cocktail scene, with cocktail enthusiasts and bartenders rediscovering the long lost recipes of the golden era and coming up with new signature flavours which help create the palate of the New Age Cocktail.

While living in San Francisco in early 2007, Avery and Janet Glasser used high proof spirit and a variety of herbs, peels and spices to create what would be their prototype recipe for the Xocolatl Mole Bitters and catalyst for their new venture.

The summer of 2010 marked a dramatic rebirth for Bittermens: winding down previous licensing agreements, striking new partnerships (i.e. The Bitter Truth) developing new products and most importantly, leasing a commercial kitchen. All Bittermens products are now being made by hand at their Brooklyn facility using primarily organic ingredients.

This bitters recipe was conceived when the question was posed whether the company ever considered making Falernum (a sweet syrup containing flavors of almond, ginger and/or cloves, and lime). Since the company do not indulge in cordial production, it was decided to see if it was possible to create a bitter designed with tiki cocktails in mind. The end result incorporates flavours of Cinnamon and Allspice with a strong cast of supporting spice flavors from both the Eastern (Polynesia) and Western (Caribbean) schools of tropical cocktails.

Developed to capitalise on the popularity of the Stolichnaya brand, this is a unique super-premium release produced from 100% grain, using a patented 'freeze-filtration' technique. The first step in Stolichnaya’s reinterpretation of the process is to pass the spirit through a special silver filter upon which the vodka is frozen to -18C. During the freezing, the vodka becomes glycerine-like, and the solubility of different impurities reduces. The liquids density increases causing all the impurities to freeze against the walls of the filtration tanks. These unwanted crystalline substances are then discarded from the distillate resulting in one of the finest and smoothest vodkas on the market today.

A silky, effortless entry leads to a glycerous, dryish medium-to-full body of sweet cream, powdered sugar, talc, and tarragon, and honeyed lemon verbena flavors. In 1865, inspired by the decorative handle of his office window, Maurice Hennessy created the star symbol that he would use to classify his cognacs. Thus was born the Three Star Cognac, better known today as V.S. Hennesey V.S. is a blend of more than 40 eaux de vie from the four premier growing areas of the cognac region. Hennessy V.S has traditionally been enjoyed after a meal, but it is also very popular mixed with ice and soda water, tonic, orange juice or ginger ale, as a long drink.
Tasting note: Brassy gold with gold hue. Moderately aromatic nose yields subtle aromas of dried fruits, old wood and pepper. An off dry, medium to full bodied palate offers flavours of boiled confectionary and dried fruits with a peppery kick, before a drying tannic finish sets in. Reasonable aftertaste of pepper and sweet leather with a touch of caramel and tumeric. Entry level cognac. 40% alc./vol.

(Tasted early 2000s) A magnificent wine! Opaque, with a crimson/purple edge. The nose is filled with aromas of violets, spice and vanilla. The palate is monumental - bigger than some of the 'biggest'. Literally grape concentrate of blackberry and plum. Firm tannins, yet well balanced and supported by the volumes of ripe fruit. Very powerful - mouthfilling - spectacular depth of flavours and aftertaste.

An aromatised wine from Italy's Piedmont district made using Barbera grapes and flavoured with quinine bark and herbs, amongst other ingredients.
Tasting note: Translucent alizarin red with light crimson edges. Bright and fresh aromas of grapefruit, rhubarb, sage, bay leaf and cardamom following through with gently bitter flavours of fresh red grapes, Summer pudding, gentian, incense and a warming, mildly tannic, bone dry finish. Launched in December 2012, Herno Gin was the most awarded gin at The Gin Masters 2013, which was arranged in London in the end of June 2013. It's an event that has fast become one of the most respected and high profile trade competitions in the industry, attracting many entries from leading brands all over the world. This year 49 gins participated.

It all started in 1999. Jon Hillgren went to London together with a few friends to start working as bartenders. He discovered gin. During the years that followed the discovery evolved in to an interest in gin crafting. After tasting about one hundred gins, academic studies and subsequent visits to distilleries around the world, Jon finally founded Herno Distillery in 2011.

Situated in the village of Dala just outside the City of Härnösand in Ångermanland, Sweden, it is the country's first dedicated gin distillery and the world's northernmost.

Production employs only organic ingredients and none of the gins are chill filtered.
Botanicals include juniper berries from Hungary, Coriander seeds from Bulgaria, hand peeled lemon, Lingon berries from Sweden, Meadowsweet from the United Kingdom, Black Pepper from India, Cassia from Indonesia and fresh Vanilla from Madagascar.

Founded by Becky and Scott Harris in 2009 as the first legal distillery in Loudoun County, Virginia since Prohibition, "Catoctin" (pronounced Ka-TOCK-tin), derives its name from the Indian tribal word "Kittocton" which, legend has it, meant "place of many deer". There's a conscientious pursuit of high quality food and spirits at the distillery where preference is given to organic grain and fruit, sourced locally when possible. Beck Harris heads the team as chief distiller. While many craft distilleries claim the title of 'handmade,' or 'small batch', Catoctin walks the walk. The venture is going from strength to strength with an ever-growing number of significant awards. Catoctin's "Cask Proof" rye results from an "impulsive" selection of used Chardonnay casks, Bordeaux casks and x peach brandy barrels which are used to finish the whisky.
Tasting note: Deep polished copper / thick legs. A five minute bouquet that's relatively closed in the early stages. Peppery spirit recedes with exposure slowly upping the intensity and introducing notes of rice pudding, leather handbag and mint choc-chip cookie. Creamy, soft entry preludes and intense, bittersweet, peppered rye, vanilla and mint chocolate attack. Well balanced, with the mid palate flavours carrying through to a cough lozenge fade. This is one extended age Bourbon that defies its age and one that blew John Hansell's mind rating this a whopping 96 points. One bottle only to sell.
Other reviews... Very well-balanced and mellow on the nose and palate. Sweet notes of mature dark rum, toffee, nougat, and candy corn dovetail with dried apricot, golden raisin, hot cinnamon, soft mint tea, and vanilla. Polished leather and tobacco leaves on a long, contemplative finish. This is what ultra-mature bourbon should taste like: all the depth and complexity that comes with this much aging, without all the excessive oak. The wood is there, but it never crosses the line. The next closest Heaven Hill bourbon in age is the Evan Williams 23 year old for the export market. There's no comparison. The Evan Williams 23 year old is way past its prime. This Parker's Heritage Collection has it easily beat. In fact, this Parker's shows less oak and lethargy on the finish than the 129.6 proof expression of last year's inaugural 1996 vintage Parker's Heritage Collection, a whisky less than half its age. (There were three different expressions, and I thought the other two were outstanding). Parker Beam chose these whiskeys from the third floor of Warehouse U. Distilled with 13 botanicals, rather than four or five which is more typical, this wonderful new Australian gin includes natives such as lemon and anise myrtle, sage and pepperberry, while the citrus profile is derived from kaffir lime and ruby red grapefruit, which distiller and owner, Kylie Sepos says is a lot softer than using lemon or lime citrus. The signature botanical is native bee sugar bag honey.

Their gin is triple distilled in a 1200 litre locally made copper pot still and employs coastal rainwater which is both soft and sweet. Offering woodier, stemmy pine on the nose, bolstered by wattleseed, which tends to this woody aroma with slight bitter coffee and dry spice. The palate offers riches of oily juniper and resin, encapsulating the botanical and keeping it at the forefront of flavours in full abundance. Other botanicals offer support and help bounce the juniper around. Notes of preserved lemon and hints of spice keep the spirit interesting. Using rainwater is an intriguing choice to cut the gin to the desired alcohol percentage; it is done by distilleries around the world using a variety of spirits. Rainwater is incredibly low in minerals; the process of water becoming rainwater is not dissimilar from vapour distillation. Distillers in areas of low pollution may choose to use rainwater to create softness within their spirit. The proprietary red, the 2014 Rubicon (96% Cabernet Sauvignon and the rest Merlot and Petit Verdot) has a saturated black/purple color and a nose of blackberry and cassis with some camphor and charcoal. Chewy, rich and full-bodied, with exceptional precision and personality, this is a stunningly delicious and complex wine with a good 25-30 years of further potential. It is the antithesis of the rustic, somewhat coarse reds that were made under the Rubicon moniker when Francis Ford Coppola first acquired the Inglenook estate. Kudos to him for making dramatic improvements. Approachable already, this wine won’t hit its stride for another decade and will last 30 or more years.

It has a composed bouquet with fine delineation, crushed rose petal and cold wet limestone permeating through the black and red fruit. It conveys the imperious personality I like from my Clos Saint-Denis. The palate is medium-bodied with ripe tannin, black fruit stained with orange rind and white pepper, conveying the structure and slight aloofness I appreciate in young Clos Saint-Denis, reassuring that this will age over 15-20 years. This is lip-smackingly delicious and just utterly superb.

During the 1970s and 1980s, Michter’s Original Sour Mash was the distillery’s single most popular product. While the “Sour Mash” moniker originated from the whiskey production process of the same name – whereby some previously fermented mash is used as the starter for the new mash to be fermented, much like making sourdough bread – Michter’s Sour Mash earned distinction for its taste, combined with its unique grain selection. In fact, it can't really be categorised as a rye or a bourbon. After disappearing from the market in 1989, this old-school favourite made a triumphant return in 2012 as part of Michter's entry level US*1 range. Our tasting of batch L14B90 tasted found moderate aromas of blackpepper cracker biscuit, dried apple and charry vanillan oak. Mid weighted, fairly lean and dry in delivery with subtle vanilla, dried apple and sweet spice flavours (cinnamon, clove) the finish adds hints of peppermint tea, menthol tobacco and ryvita biscuit in the fade with some late sugars adding length. If you had to classify it, call this a 'Bou-rye' style. 43% Alc./Vol.

If you thought Ardbeg would never release another age statement, you've just been proved wrong. In a surprising move, Ardbeg has skipped the 17-18 year bracket, instead opting for an unusual 21 year old expression. Importantly for drinkers and collectors, the distillery switched from its original decision to make this a Committee exclusive (that's the 120,000+ strong fan base that helps to ensure Ardbeg stays afloat) offerring this as a general release (albeit as a limited edition). Bill Lumsden, head of whisky production at Ardbeg, says "the whisky for this expression was distilled in 1993 and 1994 when Ardbeg was owned by Allied Domecq and only operated for a few weeks each year to produce peated malt whisky primarily for blending use."The owners of the casks (Chivas Regal) agreed to sell them back to Moet Hennessey - Ardbeg's parent company.
In an interview with Mark Gillespie from www.whiskycast.com, Lumsden elaborated: “They very kindly agreed to sell us that stock back…now, when you buy stock back from someone which has been destined for blends, you’re never certain as to the quality of the wood that it’s been filled into. Prior to the purchase, I was sent samples from six or so casks out of the 270 or so we bought, so obviously when the deal went through and I had the stock moved to Ardbeg Distillery on Islay (it had been matured in Chivas Brothers warehouses on the mainland), I sampled every single cask, and I have to say I was very pleasantly surprised at how good the stock was.”
Ardbeg’s production was halted in 1981, resumed in 1989 by Hiram Walker but continued at a low level until late 1996. Most Ardbeg enthusiasts will have tasted little from this distillery's 1994-1995 quiet period so this represents a genuine slice of Islay history.

While the Laval family has been growing vines for four generations, it was not until 1971 that Georges Laval began producing estate-bottled Champagne. Now under the direction of George's son Vincent, this is one of the great under the radar properties in the region. Laval’s vineyard holdings comprise just 2.5 hectares, most in the premier cru village of Cumières. Across the seven parcels the average vine age is over 30 years, with the oldest vines of the estate over 70 years of age. Organic viticulture has been practiced since 1971, and despite the challenges of this approach in Champagne, they are now certified by Ecocert. Laval’s wines are harvested ripe and almost never chaptalized, and fermentation takes place in barrel, with indigenous yeasts. The wines are bottled late, usually about ten months after the harvest, and they are neither fined, filtered nor cold-stabilized.

The NV Extra-Brut Garennes is rich, ample and inviting, with all of the textural intensity that is the signature of Vincent Laval’s wines. Readers should expect a rich, boisterous Champagne laced with generous Meunier intensity. Dried pear, hazelnut and crushed flowers are some of the many notes that develop with a bit of air. The Garennes bottling continues to gain in complexity. This is the best edition yet. This release is based on 2016, with 40% reserve wines from 2015, 2014 and 2013. The blend is 90% Meunier with 5% each Pinot Noir and Chardonnay. Drink 2020-2028.

Bas Armagnac, lying to the sandier west of the Armagnac region, is where the Armagnacs are fuller but more supple with a scent of prunes or plums when a little of the spirit is rubbed in the hands. It is named for its lower altitude, rather than lower quality. In the Western part, Sablo-Limoneux is mostly sand, and makes acidic wine. Sablo-Fauves is rich in ferrous minerals that contribute to both colour and flavour in the wines. The Eastern part of Bas-Armagnac has boulbène, a heavy topsoil that covers subsoil of clay and sand. Bas Armagnac is one of the very few places where sandy soil is considered desirable. In fact, Armagnac from the Bas region is considered to have the most finesse, also tending to yield spirits that are very supple in their youth. Here is a case in point. The plump bouquet offers notes of toffee apple, dates, liquorice all-sorts, vanilla and cocoa, while the silky entry builds into a semi sweet, softly spiced, medium bodied brandy that’s very raisiny and fruit cake-like; a little broad at mid palate, though pleasantly spicy and balanced, it finishes with a long vanilla, raisin and cinnamon aftertaste. At 4-5 years old, fruity, youthful styles like this lend themselves to cocktails as well as offering the perfect introduction to Armagnac on a budget. 40% Alc./Vol.
