Spring Bay Bourbon Cask Single Malt Australian Whisky (700ml)
Established in 2015, Cam and Suzy Brett built Spring Bay after falling in love with the coastal region. Whiskies are matured in x Makers Mark bourbon barrels, x-port and x-sherry casks. Three huge rainwater tanks supply the distillery. Brett comments, "Today's rain is tomorrow's whisky. The salt is very important to us, it makes the rainwater sweet rather than salty."

[Cask 322 tasted] Spring Bay Bourbon Cask is one of the primary examples in Tasmania of how quality ex-bourbon casks combined with good, clean, single malt spirit can really shine in the Australian context. This is bursting with bright, floral fruitiness. There are notes of honeydew, geranium and tinned peaches in abundance, with plenty of bright vanilla from American oak. If you’re looking for buttery biscuits and rich malt character, this isn’t going to tick that box, but that light, floral character has a lot in common with Irish and Japanese whiskies. There’s good texture and grip through the palate, which retains its inherent lightness, making this an extremely drinkable single malt whisky, if not the world’s most complex. But if you like lighter, dryer and more floral whiskies (Glenkinchie, for example) that retain the essential heft of single malt, this will do the trick. 91 points - Fred Siggins, winecompanion.com
Notes from the distillery... Colour: Bright Gold. Nose: Immediate sweet notes of vanilla and crème brulee with fruity and herbaceous undertones. Palate: From a bright and sweet opening the flavours build across the palate to a rich, clean alcohol-driven crescendo culminating in a big, warm and comforting glow of spicy tannin hints and peach flesh. Finish: Long and warm with the afterglow fading into semi-sweet caramel and lingering stone-fruit tingles. (Previous Batch 46% Alc./Vol)
