    Copper House gin is distilled from three locally-grown grains: barley, wheat and oats. Adnams Masterbrewer, Fergus Fitzgerald, makes a beer 'wash' from these grains which is fermented to around 6% abv without the addition of hops. Head distiller, John McCarthy, then takes this beer and puts it through a 'beer stripping' column which removes all the alcohols to create a 'low wine'. The 'low wines' are subsequently distilled in a hand-made copper rectification columns to create a clean, pure spirit. The spirit is then returned to the copper pot still to be redistilled and infused with thirteen carefully chosen botanicals. John spent several months experimenting with different blends to create the signature First Rate flavour with integrated aromas of juniper berries, spice and fresh citrus. 48% Alc./Vol.

    "Distilled by the light of the full moon" this strikingly presented gin promises one of Europe's most curious contemporary gin experiences. Produced just twelve times a year in line with ancient agricultural practises, distillation takes place only when the moon is full. A triple-distilled grain base is run through a copper alembic. Twenty one botanicals run the gamut of gin ingredients: Traditional juniper, coriander, orange rind and lemon rind, samphire, sage, verbena, sweet chamomile, Mahon chamomile, rose petals, balm, rock tea, thyme, fennel, angelica, cardamom, mint, pennyroyal, chenille and agrimonia. Mediterranean muscat grapes (used in the creation of Moscato) are finally added as a kind of a finishing to provide sweet, floral notes. 40% Alc./Vol.

    Other reviews... Bright floral and refreshing bouquet, driven by hawthorne, eucalyptus and coriander. Ethereal lightness on the palate with slight hints of peach skin and green apple.     The newest Gin from this progressive Kyneton distillery is Animus’s riff on a London Dry Gin. Compared to their overproof core range of Gins, Octet lands at a more traditional 40% abv and is heavily pitched with juniper as opposed to the more citrusy profile of the Macedon Dry and friends. Here, the distillers have worked with eight botanicals, hence the name Octet. Alongside lemon, coriander seed and angelica, the inclusion of local, hand-harvested fig leaf and locally sourced first-press extra virgin olive oil speaks of Animus’s deep connection to their place. The result tastes as good as it looks. As always, the high standard of Animus’s ingredients and labour-intensive attention to detail are on full display. Expect big juniper flavours juxtaposed with sweet and spicy fig leaf, while the extra virgin olive oil provides a herbaceous, grassy edge and unctuous, silky weight. As always, the Animus team have threaded the needle well; it’s a beautifully balanced and flavourful Gin crafted with the trade in mind and sits comfortably in ‘first-pour’ position.

    Founded in 2015 by four friends, Animus Distillery soon outgrew its Fitzroy origins and is now located in central Victoria. Triple filtered, 100% Australian grain spirit is used and many of the botanicals (all vapour pressed in a 50L copper still) are grown on the property. During production botanical baskets are changed every few litres and the final ABV is kept relatively high in order to maximise flavours.

    Tasting note: Clear. Opening sniffs are moderately peppery / spirity with floral-yet-earthy scents of dried herbs (tarragon / lavender / thyme?) and white pepper over background citrus oils. Air contact adds green juniper and lime peel to the mix. A lively, concentrated, resinous delivery includes early juniper followed by an alluring mixed herb / pepper combo with distinct lime peel, subtle smokey cardamom, cinnamon and saffron at the finish. Concludes mildly oily, tongue tingling and medium long. A robust, full bodied style with a touch of Asia to it. 50% Alc./Vol.

    This is sloe gin with a distinctly Australian intensity and character.     This is part of Applewood's "Seven Deadly Gins" series. Produced from a floral grape spirit in which fresh cherries from the 2016 harvest were macerated for 12 months (courtesy of Lennane Orchards). This was then distilled into a crystal clear cherry-rich spirit into which 50kg of fresh Raspberries was macerated for seven days. This sticky, thick, semi-sweet (and bright pink) liquid was finally infused with a super-bright Gin crafted from Lavender, Vanilla, Camomile, Earl Grey, Cinnamon, Star Anise and a mandatory double-dose of juniper. Very limited stocks.

    Tasting note: Translucent pink. Semi sweet aromas of raspberry jube and black currant juice over fresher citrus and dried herb notes. A moderately tart, acidic thread to the delivery with an emphasis on ripe, red berries. Concludes with nice vibrancy and a late berry rush. Like a well made sloe gin. 43% Alc./vol.

    'Killara' is the new project of Kristy Booth, formerly head distiller and general manager at her parent's business, "Lark Distillery". Kristy has eighteen years experience in the industry and has won numerous awards both nationally and internationally. “I’m not out there to take over the world. I’m just focused on quality” says Booth. The long term intention is to sell whisky, but as of 2017 Killara is marketing gin, as well as selling new make spirit to bottlers who will mature it to re-sell (in Australia, new-make needs at least two years in a barrel to be called whisky.)

    Reportedly produced from a neutral cane base-spirit, the gin includes traditional botanicals like juniper, coriander and lemon. The remainder aren't disclosed.

    Tasting note: [Batch 2 tasted] Beams from the glass with ideal clarity. Moderately fresh, muted notes of distant juniper, white pepper and lemon peel. Silky, with a light-to-medium body and hints of citrus; otherwise meek botanical input. Middle stage turns creamy, semi-sweet and attractively white rum-like (sponge cake and creamy soda). Ends gently warming, slightly limp / fleeting / lacklustre. 40% Alc./Vol.

    More from Applewood... We've worked with Finger Limes since pretty much our inception, but we've only decided up until recently that we were ready to create a gin that was solely dedicated to them. We'd seen Finger Limes used fairly extensively in the Australian distillery scene - alongside its almost cult-like usage in the restaurant industry - so we decided to spend a bit more time celebrating the Desert Lime and a few other indigenous botanicals that we were more captivated by. But after almost five years we thought it was finally time to make a spirit that encapsulated everything we love about the Finger Lime or Citrus Australasica.

    A long snacked on citrus by Indigenous Australians, due to their abundance in the sub-tropical parts of Australia, particularly the rainforests of Northern New South Wales and the more Southern parts of Queensland. Their now-famous vesicles of citrus contain outrageous amounts of Vitamin C - three times more than your average mandarin - alongside huge quantities of Vitamin E, which do well in disease prevention. Indigenous Australians also used to turn the skin into a pulp for use as an antiseptic!

    As Colonisation began, a large portion of their population was cleared for dairy farming land, their populations we're dwindled down to a 100km radius, but thankfully, particular colonists saw a potential for cultivation and agricultural success, and by the 1990s, the finger lime had built itself a reputation of being one of Australia's more prominent native ingredients - especially more on the fine dining scene. A classic garnish for things like oysters and due to innate citrus nature, usage in fresher and more south-east Asian influenced dishes - which is the avenue we headed down when crafting our Finger Lime Gin, with influence from flavours like kaffir lime leaf, basil and a boost of citrus from our champion desert lime, for arguably one of our finest gins yet.

    In Applewood’s words: ”We wanted to focus on what makes a Gin 'rich' - like - really rich...stupidly rich...like mother's milk...so of course - a double dose of Juniper (as per all our limited editions) was mandatory. We then played around with some blow-your-head-off Gentian Root, Roasted Wattleseed, Cloves, Earl Grey Tea, Double-Dose of Fresh Valencia Orange Peel - then we tightened the nuts and bolts on this baby with some Green Cardamom, Pepperberry - and the rug that tied the room together? Some Almonds and the allusive Orris Root.

    "But we didn't stop there. We then raided the distillery for some barrel aged brandy-base - and settled on an experimental spirit that we spiced with Chai herbs from the folks out at Quo Chai - which we matured for 18 months in some American octave (80L) casks that held some of Australia's richest, most expensive Shiraz for 4 years - blending the spirits together for some serious weight and presence."

    Tasting note: Bright gold / dazzles in the glass. Lots of cardamom to the nose with light pepper warmth, clove, developing juniper and ripe citrus freshness. 2-3 minutes air contact offers a mixed bag of Indian spices.     Applewood’s 7th in a series is arguably their most creative Gin to-date, best described in their own words according to the rather in depth production method.

    If you've ever had the pleasure of a fat-washed spirit or cocktail, you know the depths of flavour that can be achieved using this novel method...but Applewood wanted to know what happened if you flavoured that fat even more. The science is actually quite sound - for many years, perfumeries have been capturing the most delicate aromas in a process called enfleurage - a process where a wax (or fat) is used to diffuse via saturation, the most fleeting of aromatic compounds that simply cannot be extracted via distillation.

    Applewood have always toyed with the idea of capturing smoke in a Gin, but they didn't want to weigh the entire blend down with an overt ashy-ness. They also struggled with the idea of using high strength spirits near anything producing smoke...so bacon fat became their vehicle for flavour.

    Working with local Gumeracha Gourmet Meats - they rendered some bacon fat then hot-smoked it. They then prepared a Gin-base with a mandatory double-dose of Juniper - a bunch of richness from Oak Chips, Cocoa Nibs, Vanilla, Macadamia and a bunch of Fresh Orange Peel - then brought it together with heavy-handed proportions of Gentian Root and Cinnamon.

    After a low-and-slow distillation to retain the richest of characters, they melted the bacon fat - and added it to the entire batch of Gin, mixing vigorously. An overnight stint in the freezer solidified the fat - and a crystal clear liquid was decanted off the top...only this time - with all the aromatic power that smoked bacon can deliver… If that wasn't enough - they tipped a couple bottles of Canada's finest Maple Syrup into the mixture! 43% Alc./Vol. Very limited stocks.

    Tasting note: Pale straw colour. Opens semi-sweet, cough lozenge-like, becoming more sappy / resiny after brief exposure. Second pass accents orange zest, hints of wood smoke and piney freshness. A silky, viscous gin that unfolds in stages: first appropriately gin-like with citrus peel and botanicals to the fore, then turning semi-sweet, oily, textural. Drier in the closing phase offering traces of vanilla, cinnamon and late butter menthol lozenge. Trace juniper balances the whole.     Part four in Applewood’s themed series that matches a gin to each of the seven deadly sins. Being no strangers to bathtub-style Gin production this seemed the perfect project to stretch Applewood’s creativity....

    A basic Gin recipe of Juniper, Adelaide Hills Saffron, Cinnamon, Star Anise, Clove, Chamomile, Wormwood, Licorice Root, Angelica Root and Orange Peel - and the creativity? They weren't going to bother distilling it... ”But then the real Sloth kicked in...we accidentally forgot about it (no joke). A week later, the resultant Gin was so incredibly intense and bitter - we were to scared to bottle it. One bright spark suggested we just see how it distills...and it filled the room with the most spicy, aromatic power...it was a sight to behold. We really wanted this Gin to champion Juniper, so we macerated some more post-distillation...Then we accidentally forgot about it again! Sloth-strikes-back! Upon finding the golden-wonder of a Gin (courtesy of Juniper swimming in it for days)...we were utterly impressed by the distinctive aroma, mouthfeel and texture.     Tasting notes: Deep, weighty juniper to the nose; pine needles, warming pepper and chamomile with developing citrus peel and herbal freshness.     Launched in 2017 and created by Master Distiller, Arko Ryynänen and Michelin starred chef, Jaakko Sorsa, the Arctic Blue Gin range is distilled at Nordic Premium Beverages Distillery located in the small village of Ilomantsi in Eastern Finland. The company behind the operation is also the country's oldest winery. Produced using botanicals from the freezing northern regions of Finland, Arctic Blue has been described as "like walking through a wild bilberry forest on a misty morning." Boasting powerful aromas of juniper, liquorice root, grapefruit and tart red berries, it's a medium to full-bodied, vibrant, warming gin with piney juniper, coriander seed, citrus zest and a burst of white pepper adding length and depth to the palate. Wild berries from the forests of North-Karelia are key botanicals, and the berry notes are amplified with minimal water (or tonic), which also turns the gin cloudy white.     ...Arctic Blue Gin delivers an abundance of Nordic character with fragrant pine notes, subtly fruity bilberry and delicate florals. These three pillars of the flavour profile are beautifully supported with undertones of cardamom, coriander seeds and anise, and the mouthfeel is smooth, full and crisp. With Tonic Water, the piney juniper notes are elevated further alongside floral rose, while the bilberry character brings a very gentle sweetness that lingers enjoyably.
