    When gin became popular during the Prohibition era of the 1920's, most people in the United States drank the poor quality, homemade spirits found in speakeasies. This alcohol -then called bathtub Gin - was the most popular spirit being made in the United States because it was the easiest to distill. What'smore, gin, unlike whisky, did not require any aging in oak barrels which were expensive and cumbersome to store and conceal.

    Bathtub Gin was made by placing a large quantity of (often dangerously) low-quality, de-natured alcohol in a home bathtub. The poisons were removed from the liquid to recover ethyl alcohol that was then flavoured with juniper berries, diluted and put into bottles. The highly variable quality of the spirit meant that consuming it in any quantity was a dangerous venture that cost some party-goers their lives. It has also being suggested that the many extravagant cocktails of the Jazz era owe their inspiration to disguising the disgusting taste of bathtub Gin. Thankfully, this is that kind of drink by name only...

    Tasting notes: Pours almost water-like with a very pale straw blush and thick legs. Closed at first but opens up with heavy, oily aromas of liquorice root and white pepper in the initial pass with air contact drawing out juniper, smokey cardamom, citrus peel and subtle herbaceous notes. Big, viscous entry leads into an exceptionally concentrated, oily, lemon lozenge, white pepper and dried juniper hit. Fabulous purity and balance. Concludes mouth-numbing, super long and with more than a touch of Fisherman's Friend at the finish. Punchy and about as big as gin gets. 69% Alc./Vol.

    Following the trend for pink gins, the Combier distillery hand-picks local strawberries then macerates them in small batches followed by a five hour distillation process. Their London dry gin is then infused with 2% strawberry liqueur resulting in a fresh and elegant style with subtle berry notes and a pink blush.     Fashioned after Holland’s renowned malt wine genevers, Ransom Dry Gin combines the maltiness and hop aromas of the style with a decidedly more intense botanical infusion. In Ransom's words, "The selection of botanicals for this gin was done with tradition in mind, but we also sought to capture the essence of our terroir with the inclusion of the iconic Oregon Marionberry and local hops.     Started with a small life savings and a fistful of credit cards, the Ransom Project was launched in 1997, with the distillery making small amounts of grappa, eau d'vie and brandy. Gin and whiskey were added to the lineup in 2007. Their Old Tom Gin is a historically accurate revival of the predominant Gin in fashion during the mid 1800's and the golden age of American cocktails. It's a slightly sweeter rendition of the classic London Dry.

    Ransom's recipe was developed in collaboration with historian, author, and mixologist extraordinaire, David Wondrich. Old Tom is the Gin for mixing classic cocktails dating from the days before prohibition. Its subtle maltiness is the result of using a base wort of malted barley, combined with an infusion of botanicals in high proof corn spirits. The final distillation is run through an alambic pot still in order to preserve the maximum amount of aromatics, flavour and body. Only the "heart of the hearts" (the very best portion of distillate) is retained for this special bottling. The distillate is then cask aged for three to six months - sometimes longer. Six botanicals are used: juniper berries, orange peel, lemon peel, coriander seed, cardamom pods and angelica root.

    Tasting note: Brilliant amber gold with a coppery blush. Delightful, lifted bouquet offers up lemon barley sugar, sweet oregano, sage and hints of juniper. Light, creamy entry. A subtle amalgam of coriander seed, cardamom, raw root vegetable with gently peppery juniper to finish. Wonderfully soft. A barrel aged cross-genre style that's not as sweet as you'd expect.     Made at Benromach (a distillery better known for their single malt whiskies). The botanical selection is inspired by Scotland’s mountains, forests and coastal fringes and features the likes of bitter orange, sea buckthorn, heather and rowanberries alongside the requisite juniper. It's distilled in an affectionately named copper pot still, ‘Peggy’ using the vapour-infused method which steams the neutral base spirit through the botanicals. Dry and spicy aromas include coriander seed and white pepper over juniper, orris root and refreshing citrus peel. The palate is peppery, medium to full bodied with flavours of juniper, citrus, coriander finishing grassy, spicy, and crisp, juniper and bitter peel lingering through the aftertaste.     Other reviews... Red Door’s bright red bottle evokes fruit and mystery, but this is a very straightforward gin with few major surprises, despite the oddball ingredients. The nose: Tons of juniper, and lots of angelica-driven earthiness. There’s a maritime hint here, but it’s muted; the juniper is all but overpowering. The palate is more savory and earthier than you’d expect, notes of underbrush giving the body a certain sense of dusky pungency. A punch of lemon peel, almost closer to lime leaf, lingers on the finish, as does a pinch of salt and a twist of pepper. It’s clean but a bit brooding, still coming across as hewing too close to the ground, with not enough of a lift into the trees spread out above. There’s just a hint of sweetness as it fades out, but it could use more — or more complexity, at least. - drinkhacker.com

    A gold medal winning gin from Doghouse Distillery in London. Made using a wheat spirit base that they distill themselves rather than outsourcing, fourteen botanicals are included in the mix: juniper, coriander, angelica and orris, as well as more unusual green, leafy items such as bay, sage, winter savoury and cardamom. These provide a fresh pine, herbaceousness on the palate. The addition of the West African pepper 'Grains of Paradise' contributes warmth. Given all those ingredients, it's surprising how fruity Renegade is on the nose; Our tasting from a 40ml sample revealed ripe red apples and poached pears over background potpourri. The palate is more classically styled with a tangy combination of pine resin, fresh herbs (thyme / sage) and perfectly tuned heat in a juniper-driven finale that's creamy-yet-dry. There's nice vibrancy throughout, making this very sessionable indeed. Try it with premium Indian Tonic Water and a sprig of rosemary. 42% Alc./Vol.

    New Zealand distillers are slowly catching up to Australia's burgeoning gin scene. The latest entry was launched by a group of gin enthusiasts in 2014. Located in Auckland, 'Rogue Society' employs a hand beaten 19th century John Dore copper pot still. Their wheat based spirit is infused with a botanical range that includes juniper, lemon peel, orange peel, coriander seeds, cardamom, cinnamon, cassia bark, orris root and nutmeg.

    Co-founder, Richard Bourke comments, “We’ve been working on it for about three years. We always used to get together and enjoy drinking gin, sampling different kinds of gin from offshore, and we realised that a lot of people didn’t share the passion that we did for gin. We called this gin grief, and we saw it in people who maybe didn’t understand gin as well as we did, or those who maybe had a bad experience with gin, or maybe didn’t like tonic. So we went out and decided to create our own gin brand, and our own label,” says Bourke.

    Reportedly based on a 300 year old recipe, the gin comes handsomely packaged in a replica centuries-old Geneva style bottle.

    Tasting note: Crystal clear, moderately viscous appearance. Vibrant and expressive aromas of lemon myrtle yoghurt, white pepper, light cardamom and coriander seed. A medium bodied, cream-textured and mildly peppery entry is followed by flavours of juniper, grapefruit and coriander seed and a tangy, peel finish with good length and freshness.     Tasting note: Piercing alcoholic lift carries muted drier styled aromas; two minutes air contact draws out orange and lemon peel, white pepper and background juniper. Fills out after air contact but the citrus (more so orange peel) remains the key note. Initially a little hollow flavour wise but builds to a full throttle citrus / pepper / juniper attack. Finish highlights tongue nipping spices followed by a creamy flood of sweet citrus oils. Concludes brisk, dry and cleansing.

    A meeting of Vietnamese and French cultures, perfect for Summery, Asian-inspired cocktails. One lot only reduced below cost price.

    Considered the first ever 100% Asian botanical Gin, Royal Sedang is made using a long maceration of chosen botanicals in order to achieve full extraction of flavour components. The production process is a slow and careful one that can take six to eight weeks. Botanicals include lime, lemongrass, ginger, litchi, jasmine tea, coriander followed by a slow reduction with pure spring water. Aromatically, it's described as "...a meeting of Vietnamese and French cultures, reminiscent of entering into a fresh food market in Vietnam or enjoying a fruit breakfast at a hotel bar".

    Tasting note: Clear. Asian styled aromatics leading with coriander, ginger root and lemongrass over background juniper. Second pass highlights mandarine.     Rutte has been an expert in creating and distilling superb juniper-based spirits for almost 150 years. Based in Dordrecht near Rotterdam since its foundation by Simon Rutte in 1872, the range includes Rutte Old Simon Genever and this specialty "flavoured" gin, reportedly based on a 19th century recipe from the distillery’s founders. Everyday celery is the signature ingredient here, although reportedly, it doesn't dominate. It's recommended as the essential gin to use in a Red Snapper cocktail. The vegetable notes are accentuated when mixed with fresh celery and tomato juice.

    Other reviews... The celery notes are quite complementary, and the overall flavor profile is not wildly contemporary. Plenty of juniper and traditional gin spice round the flavor out. I might even suggest that this is a “classic style gin” with a dash of celery. It’s not overwhelming, and it’s nicely balanced.     Sacred founder and distiller Ian Hart grew up in the same house and London suburb of Highgate where Sacred Spirits was born. Ian was always fascinated with chemistry, and first turned to exploring his love of French wine. He then switched gears to distilling gin, and after a few trials, made his first bottle of gin (bottled by Hilary Whitney, his partner). They took the bottle to Ian's local pub and offered free samples and received direct, unfiltered feedback from some seasoned regulars. On recipe 23, the locals gave him the stamp of approval, and Sacred Spirits took off from there.

    Ian and Hilary refuse to follow the idea that pot distillation is the only and best way to make gin. They've proved that vacuum distilled spirits are every bit as flavourful than their pot distilled brethren. It's their opinion that because vacuum distillation occurs at a much lower temperature, it leaves the uncooked distillate lusher and fresher.

    A fortuitous experiment with mastic gum led to this novel gin. The northern Greek island of Chios is the only place where the mastic tree grows. Since ancient times, the tree’s sap has bestowed good fortune and prosperity on the island’s people.     Rowland and Shelley Short came to McLaren Vale around 2011. Rowland - an old sea dog, and therefore an enthusiastic gin drinker decided to bring to fruition his dream of a small batch artisan gin. It became an exercise in perfect sustainability - gin made from grapes grown on the property, then distilled on the property and finally bottled on the property - all by hand. Being a South Australian, some botanicals needed to be native to the state: Muntrie berries from the Coorong were chosen along with lemon myrtle from the Adelaide Hills. Rowland's grandson suggested “Settlers” as a name for the new spirits, picking up on the history of South Australia and its free settlers who arrived from the UK to take up land grants in the early 19th century. A diverse range of styles are now on offer, including pomegranate, breakfast tea, barrel aged and sloe gins, to name a few.

    The Yuzu fruit is a cross between a mandarin, a grapefruit and a lemon with a very oily and aromatic skin. Its roots are in Japan where it's almost the national fruit. This gin was made from Australia’s first commercial crop of the Yuzu. It has intoxicating aromatics and a racy acidity with citrus overtones.

    Established in 2014 as a sustainable project, Silent Pool Distillery is named after a nearby natural spring lake which is also the distillery's water source. Located in the southeast of England in the Surrey Hills countryside and produced entirely on site by Cory Mason, the gin employs 24 botanicals including lavender, chamomile, citrus, kaffir lime, local honey and juniper.

    Unlike many other gins, Silent Pool is distilled using a column still. Mason comments, "Through precise control over a series of plates and cooling pipes, we are able to separate the exact flavour we want from each botanical that we use. In this way, we can break down the botanical, and capture only the section of it that we want to use in our gin.

    The operation is run on a reclaimed wood-fired steam boiler from the 1970s, previously used to power a crane on Liverpool docks. Sustainable hardwood is sourced from the local Albury forest and gives the whole operation a very low carbon footprint as well as truly local credentials.

    Tasting note Medium intense, peppery whiffs building with fresh juniper, lemon/lime peel, lavender and chamomile tea. Very piney on entry, with lemon and lime accented through the middle. Finish is drying, with lively spices and gentle cinnamon warmth. Ends pure, fresh and mildly sappy with pine and lavender lingering in the aftertaste. A well balanced sipper for elegant Martinis. 43% Alc./Vol.
