Saint Felix Wild Forest Gin (700ml)

A fortuitous experiment with mastic gum led to this novel gin. The northern Greek island of Chios is the only place where the mastic tree grows. Since ancient times, the tree’s sap has bestowed good fortune and prosperity on the island’s people. Celebrated for its rarity and diverse uses, including cooking and the creation of spirits, Saint Felix chose mastic as it’s high in alpha-pinene – just like juniper – offering a musky and pine-like taste that's perfect for gin. Cold and pot distillations were employed to harness the piney notes of the gum, paired with a bouquet of more traditional gin botanicals like juniper, angelica root, rosemary, bay leaf as well as native lemon myrtle. The aromas kick off pure, clean, fresh, juniper-forward and moderately intense. Don't be put off by the relatively low ABV - this delivers surprising concentration, and the flavours of crushed pine buds, rosemary and ripe lemon zest come wrapped up in a deliciously rounded, Pastis-like mouthfeel. How to serve? Keep it simple, over ice with a premium tonic, spruce it up with a slice of lemon. 42% Alc./Vol.
