    Sakura bitters are 'hanami' (the art of appreciating cherry blossom) in a bottle. Two different species of sakura are used: Sakura leaves from Nagano and blossoms from Yae. Salted and pickled to concentrate their unique flavour, the distinctive recipe captures the Japanese Spring, imparting a delicate, unique floral note to cocktails. while also offering hints of Morello cherries, dried fruit, cardamom, cinnamon and cedar.     Sourced from the Tokushima prefecture, Yuzu are the best-known Japanese fruit being deliciously tart and reminiscent of a lemon with a touch of bergamot. Its skin resembles a small grapefruit with variable skin texture. The zesty character of this bitters lends itself to Martinis, Whisky Highballs or Gin and Tonics.     Perilla frutescans (Shiso) is an Asian culinary herb belonging to the mint family. In Japanese cuisine, the whole shiso leaf is often used as a receptacle to hold wasabi or various condiments, and as a garnish. The bitters version is prepared using carefully selected blue shiso from the time-honoured Aoba plantation in Chiba. Shiso bitters provide a strong, herbaceous foundation for lighter cocktails, bestowing an almost vegetal element that can stand up to intense flavours. Try it in a Whisky Sour, Gin and Tonic or White Lady. Also recommended with lagers or in a Beetroot, Feta Cheese and Blood Orange Salad. 28% Alc./Vol.

    This is Heather Duncan's Christmas bitters, a limited edition that arose from Dr. Adam Elemgirab's partner's desire to capture the spirit of Christmas in a bottle. The bitters are indeed reminiscent of a Christmas holiday, with the whiff of ginger bread , mulled wine and spiced fruit, resulting from the careful blend of cloves, cinnamon and citrus peels in overproof rum.

Probably something to do with the harshness of our climate - and one native ingredient stood head-and-shoulders above the rest when it came to Økar - Riberries. Otherwise known as Lilly Pilly. Historians have noted that indigenous Australians used to use these as a form of 'candy' - although contemporary palates might be surprised! The Riberry's cranberry-tartness, hints of clove and bark-like bitterness make it well-suited for an Australian aperitif."

     

    Other reviews... The Red Okar is stronger, bolder, more bitter, with a lifted, herbal, eucalypt perfume; the Okar is lighter, softer, with citrusy, almost pink grapefruit character. Both the liquids were cloudy: Brendan Carter tells me he’s still fine tuning the recipe and ultimately aims to make them crystal clear; the flavour is not affected, only the aesthetic appeal.

    This tempered and citrusy bitters is made following an original regional recipe, although Bordiga have adapted and rebalanced it to better appeal to current tastes. In other words, it's a little less bitter than an earlier incarnation from the 1950s. While the Verde variation is based around Alpine herbs and mint, the Rosso expression accents bitter orange and gentian.     It all started with the Americano and an Italian Count who liked it boozy. Created by Gaspare Campari around 1860, the Americano is one part Vermouth and one part Campari topped with soda. It was originally named the "Milano-Torino" - the Campari from Milan and the vermouth from Turin (an important footnote when considering the “classic” Negroni). Legend has it that around 1920, Count Camillo Negroni, wanting a bigger buzz from his spritz, asked a bartender to replace the soda in his Americano with gin. So the Negroni was born - bitter, sweet and so deliciously complex. For some devotees, the greatest drink in the history of drinks.

    Launched in 2016, this 'pre-mixed' version is based on the original Negroni recipe invented over a century ago (equal parts Campari, sweet vermouth and gin), hence the name, ‘Ricetta Originale’. 26% Alc./Vol.

    Several new additions to the Campari range have been launched, ageing the classic bitters in barrels to honour the 150th birthday of founder, Davide Campari. Current master blender, Bruno Malavasi experimented with a range of casks in order to make the final versions. Bourbon barrels were chosen for contributing vanilla notes and delicate oak smokiness.

The complete recipe, kept in a bank vault, is known only to the company's President who overseas weekly production. With worldwide annual sales now exceeding tens of millions bottles, this cautionary attitude is perhaps understandable. What is known is that it contains quinine, ginseng, orange peel, herbs and rhubarb that are steeped in a mixture of water and alcohol. The drink is then coloured with cochineal. It's typically served very cold without ice but with a dash of soda to release the flavours.

    Other reviews...Light red color. Dark berries and spice on the nose. A smooth attack leads to a somewhat sweet, medium-to full-bodied palate with ripe and tart black cherry and dark fruit flavors that give way to a barrage of extremely bitter herb and fruit pit elements that dominate the back palate and linger as the fruity sweetness dissipates. A complex and dynamic aperitif that could use a mixing element to calm down the bitterness.

    Cocktailpunk bitters are handmade in very small batches in Boulder, Colorado. Their bitters do not include any added sweetener or colouring. Instead, they believe bitters should be just that - bitter. A great cocktail incorporates spirits with sweet, sour, and bitter components to achieve a harmonious balance, and Cocktailpunk do their part with great accuracy. Any one in the range is fabulous alone in cold sparkling water, and always useful for balancing often-too-sweet non-alcoholic cocktails.     Smoked Orange. Orange zest is cold-smoked with alderwood, and the result is smoky but not overly intense; a finishing touch of mint adds interest. Built for and absolutely killer in tequila and mezcal drinks, but there are also unexpected and wonderful effects in combination with darker spirits.

    Cherry. Targeted directly at (your) Manhattan. Vibrant cherry, a hint of vanilla, and subtle spice complements the oak flavors in dark spirits, but the flavor profile is simple enough to use wherever a touch of cherry is needed. You'll never need a barspoon of syrup from the Luxardo jar again.

    Orange. Why another orange bitters? Because bitter orange is a fundamental flavor that is essential in a wide range of cocktails. Ours is an elemental orange flavor, complemented by fennel and layered anise notes. Perfect in a Martini, but also at home with almost any spirit.

    Aromatic. The old-school workhorse. Our version of the go-to bitters, a base of baking spice is enlivened by bracing cardamom and anise notes. Use wherever standard bitters are indicated, but revel in the lack of gratuitous sweeteners and colorings. These Aromatic Bitters are perfect alone, but also work beautifully in combination with our Orange or Cherry Bitters.

    Pastiche. Every culture has one: an anise-flavored spirit like Absinthe, Pastis, Sambuca, or Ouzo. Such spirits are widely used in cocktails and tiki drinks... a wash here, a barspoon there, and the result is often a subtle, mysterious accent. Pastiche provides the same results in just a few squeezes, with layered anise, fennel, and licorice flavors. We don't suggest you fake a Sazerac with it, but you get the idea.

    Alpino. Amaro cocktails are all the rage, and Alpino delivers the flavors of a Mountain Amaro in a bitter, convenient, and easy-to-control format. The sage, mint, and herbal flavors can stand in for Amaro and herbal liqueurs in cocktails, but these bitters are useful and very versatile on their own.

    This Mediterranean specialty is testimony to the versatility of the artichoke and was originally launched in 1949 as a spirit based medicine flavoured with Artichoke. Although relatively unknown in Australia, next to Campari, Cynar is the second best selling bitters in the world. The flavour extract actually comes from artichoke leaves rather than the hearts, but also relies on a number of aromatic herbs and spices including orange peel, gentian and rhubarb.

    Deep amber-brown in colour. Slightly medicinal character on the nose and palate. A touch sweet with herbal, citrus flavours; finishing soft and bitter. A very distinctive aperitif that will work equally as a digestive. Enjoy straight or with soda – always use ice. 16.5% alc./vol.

    Since its establishment in 1864, Fee Brothers continue to expand with a portfolio boasting over 80 drink mix products. The company presently has over ten different bitters. Up until now, some of these ingredients have been difficult to find despite being essential for many classic cocktail recipes which are returning to popularity. In general, we've found the Fee Bros range of bitters to be more pungent than other bitters on the market, so they offer fantastic value for money by being used sparingly.

    One of the very few currently on the market, Fee brothers have replicated an old Cranberry bitters recipe which saw its hey day pre-prohibition where it was used in a variety of querky cocktails. Enjoy!

    Little known in Australia, Fernet (pronounced fehr-NEHT)is a liqueur composed of some 40 herbs, including the currently popular St. John's wort.     Like other bitters classics, the recipe for Gammel Dansk remains amongst the most closely guarded secrets of the liqueur world. The reason is clear, since there have been numerous attempts to counterfeit most major bitters brands, however, few have managed to balance a recipe correctly. The original meaning of the word bitters (derived from the Gothic "bitan", to bite) was a medicine generally made of Peruvian bark or quinine, and then, more especially, alcoholic liquors impregnated with extract of gentian, quassia, wormwood, orange peel, etc. In the Netherlands, the production of bitters using corn spirit as a base began as early as the sixteenth century with companies like Lucas Bols in Amsterdam being founded in 1575. Interestingly, when Gaspare Campari first sold his classic aperitivo in Milan he identified his recipe as Bitter all’uso d’Hollanda (bitters in the Dutch fashion). Indeed, legend has it that the term "cocktail" originates from the same period when the early Dutch settlers were said to have used quills plucked from cock’s tail feathers to paint infected tonsils with a form of homemade alcoholic bitters. Traditionally bitters has been used almost entirely as an adjunct to gin, though a few people still use bitters with sherry. Today bitters is indispensable in the creation of many classic cocktails.

    The 30 odd herbs and fruits used in Gammel Dansk Bitters are selected for their aromatic, sharp and bitter qualities. The drink is extremely popular in Denmark, served at room temperature in small glasses, where it is has become the second best-selling spirits brand in the country.

    Tasting Notes: Deep copper colour with a slightly viscous appearance. Semi-sweet, herbal aromas recreate a potpourri of lavender, clove, sarsaparilla, rosemary, anise and caraway. Entry is silky with a good concentration of rooty, herbal, woody flavours that are pleasantly astringent and bitter sweet. Gently spicy with the spirit adding just the right amount of warmth. Finishes clean, dry and appropriately bitter with an anise / spice fade. We like adding a dash of this classic to lacklustre beers.     While living in San Francisco in early 2007, Avery and Janet Glasser used high proof spirit and a variety of herbs, peels and spices to create what would be their prototype recipe for the Xocolatl Mole Bitters and catalyst for their new venture. Inspired by the classic Mole sauces of Mexico, this bitter was originally designed to pair with aged tequila, but we have found that it works beautifully with aged Rum, Bourbon and Rye as well. We're big fans of putting a dash in an Old Fashioned or Manhattan, and new classics like The Conference or the Latin Quarter just wouldn't be the same without them.

    Note: Reputedly, this is equivalent to Bittermens Xocolatl Mole bitters, only produced by 'The Bitter Truth' under a licensing agreement that ended in July, 2010. The Bitter Truth products were modified to meet available European ingredients and are no longer being produced. So when they’re gone, they’re gone! This is a 200ml bottle, larger than the current Bittermen's 118ml, but bottled at a slightly lower ABV and priced accordingly.

A long tradition of Bitters.

The genesis of many early bitters formulas lay in the requirement for an elixir to combat ailments. Whether it's a wine or spirit that forms the base, the alcohol serves to function as a solvent for botanical extracts (typically gentian, quassia, wormwood, orange peel, etc.), as well as being a preservative. Following the early commercial success of medicinal bitters like Angostura, Orange Bitters was another development that bought bitters into the mainstream as a popular cocktail ingredient. Today, the bitters category also encapsulates traditional European styles like Cynar and Gammel Dansk, sometimes consumed after a meal or added to beer.
