    In 1818, Madame Clicquot made the first-ever "rosé d'assemblage" champagne by mixing some of her red Bouzy wines with white ones. La Grande Dame Rosé honors her idea by using 90% Pinot Noir from the historical Grands Crus of Aÿ, Verzenay, Verzy, Ambonnay, and Bouzy, enriched by 10% Chardonnay from Avize and Le Mesnil-sur-Oger. This base is then blended with 13% Pinot Noir red wine exclusively from the 'Clos Colin' parcel, situated in Bouzy. Aged on lees for 10 years in bottle before being disgorged and topped with a dosage of 8g/L.

    The 2012 Brut Rosé La Grande Dame is the finest wine I've tasted from Veuve Clicquot in several decades. Offering up aromas of red berries, bee pollen, orange zest and freshly baked bread, it's medium to full-bodied, pillowy and precise, with a deep core of fruit and a vibrant, tightly coiled profile, concluding with a penetrating, sapid finish. This isn't the muscular, powerful Clicquot style of yesteryear, but it's a compelling effort in a fine-boned, more polished register. Drink 2023 - 2038.

    The new 2012 vintage of Veuve Clicquot's top rosé sweeps in full of dynamics and detail, the 13% proportion of red wine bringing a succulent red apple, rose and poached strawberry fragrance to 2012's finessed, narrowing build. There's an intriguing smoky/reductive streak at present too, setting off the fruit-forwardness and creamy undercurrent with a touch of drama and energy. This has the volume and immediacy to enjoy now, but even more impressive is the precision and build of a truly cellar-worthy rosé. 92% Pinot Noir from Äy, Verzenay, Verzy, Ambonnay and Bouzy (13% as red wine from Bouzy), 8% Chardonnay from Avize and Le Mesnil-sur-Oger. Aromas of raspberry and winter strawberries are apparent on the lifted nose followed by yeast lees, light ginger and chalky mineral notes. The spritely palate has a racy, airy like feel with flavours of raspberries and creamed tinged strawberries melding into yeast lees, citrus and chalky mineral characters. Dry vibrant finish with a stimulating and layered aftertaste.

Distinct yeast lees and baked bread aromas show notable depth out of the glass intermixing with dried honey, roasted almonds and brioche along the way. Rich, mouthfilling flavours of baked bread, yeast lees, citrus and grilled nut are fresh and focused yet also have a pleasing viscosity. Oily toast and brioche like characters are also present.     The Veuve Fourny Champagnes offer great value. The Fourny family have been growing vines in the Premier Cru of Vertus since 1856 with the fifth generation currently at the helm. The Blancs de Blancs is 100% Chardonnay sourced from vines over 40 years old and is aged for a minimum of 2.5 years on lees with 20% reserve wines included in the blend. Pours with a frothy white mousse that holds well over a pale straw coloured base with pale gold tinged edges. A nibble stream of tiny bubbles flowing through it. Pronounced aromatics of baked bread, pear and yeast lees aromas fills the nostrils with oily toast like notes and honeyed almond scents ensuing. Rich and full in the mouth expressive baked bread, yeast lees and oily toast flavours have a creamy textural feel with some pear and citrus characters also in the mix. Dry crisp finish with a long richly flavoured aftertaste.

    A personal favourite of mine. Its foundation is three consecutive vintages, with 20% of reserve wines. Extensive use of French oak during maturation. Dosage only 5g/l when disgorged in March 2023. The bouquet is flowery, the palate gently filled with honey and brioche.

    An 80% Chardonnay and 20% Pinot Noir blend that includes 40% reserve wines. The fruit comes from several vineyards near the village of Vertus where the Chardonnay plots produce wine that's quite fine and minerally, whilst the Pinot Noir component is fuller, richer and more fleshy. Slopes face South and South-East giving optimal maturing conditions. Average age of the vines is 40 years and the wine spends 2.5 years on lees.
    A buoyant mousse sits atop a pale gold coloured base wine which is threaded by a very fine and profuse bead. Showing ample intensity out of the glass is a mixture of baked bread, pear and yeast lees aromatics which are trailed by citrus, brioche and hints of honeyed cashew. Rich and full on the palate but with a surprisingly brisker feel than the Blanc de Blancs, vibrant yet mouthfilling flavours of yeast lees and oily baked bread are intermeshed with citrus, toast and almonds. Finishes dry and crisp with a long aftertaste that has a lingering oily toast and yeast lees like component to it.

    The vineyards here lie closer to Chablis than to Épernay, both in distance and geology, with soils dominated by the same Kimmeridgian limestone for which Chablis is famed. Gautherot’s wines take their deep and powerful personalities from these soils and the (relatively) sunnier climate of the southern Aube. His wines all come from a single harvest—noted by the “R” number on the back label—with the exception of the Fidèle cuvée, which sees a small addition of 5-10% reserve wine from a perpetual blend started in 2001. His winemaking abhors any kind of manipulation in the cellar. Gautherot uses the traditional Coquard press and the juice is transferred into oak or amphorae via gravity rather than being pumped.     Textures is one of Gautherot’s newest cuvée; a rare, 100% Pinot Blanc Champagne crafted from vines in the Fonnet vineyard (planted between 1995 and 2000). Gautherot describes it as his “easiest” wine, i.e. the one that is the easiest to drink young. There is certainly more pulpy texture (hence the name), more fruit, and easier-going refreshment than in his Blanc d’Argile. There is also ample intensity and a great deal of poise and interest on offer, and a complexity that comes from the aging. This is a unique, one-of-a-kind expression of the Côte des Bar. You can expect candied citrus, floral and ripe lemon aromas and flavours, a generous, not-quite-creamy palate and a twist of gentle, refreshing bitterness on the close.

This plot has become the base of what Antonio Galloni calls “one of the most beautiful and distinctive wines in Champagne.” Fermentation for this wine was wild and took place in 4-10 year old, 500 and 600 litre barrels, with a small a portion of fruit fermented and raised in Georgian amphora. As with the Fidele, this wine spent roughly 15-18 months in bottle on lees, before being disgorged by hand with zero dosage.

    Bertrand Gautherot has been quietly working away in the hamlet of Buxières-sur-Arce, in the Aube’s Côte des Bar region of Champagne, yet his wines have not escaped the attention of the top restaurants and retailers of the world. Each year Vouette & Sorbee allocations are eagerly awaited, and these exceptionally fine wines are consistently some of the best and most unique expressions from the area.

    The vineyards here lie closer to Chablis than to Épernay, both in distance and geology, with soils dominated by the same Kimmeridgian limestone for which Chablis is famed. Gautherot’s wines take their deep and powerful personalities from these soils and the (relatively) sunnier climate of the southern Aube. His wines all come from a single harvest—noted by the “R” number on the back label—with the exception of the Fidèle cuvée, which sees a small addition of 5-10% reserve wine from a perpetual blend started in 2001. His winemaking abhors any kind of manipulation in the cellar. Gautherot uses the traditional Coquard press and the juice is transferred into oak or amphorae via gravity rather than being pumped. Primary fermentations are always carried out with natural yeasts and riddling and disgorgement are all done entirely by hand. The wines are bottled without fining or filtration and without dosage. The results are some of Champagne’s most original and delicious wines: wines of distinctive personality, energy and sense of place.

    Textures is one of Gautherot’s newest cuvée; a rare, 100% Pinot Blanc Champagne crafted from vines in the Fonnet vineyard (planted between 1995 and 2000). Gautherot describes it as his “easiest” wine, i.e. the one that is the easiest to drink young. There is certainly more pulpy texture (hence the name), more fruit, and easier-going refreshment than in his Blanc d’Argile. There is also ample intensity and a great deal of poise and interest on offer, and a complexity that comes from the aging. This is a unique, one-of-a-kind expression of the Côte des Bar. You can expect candied citrus, floral and ripe lemon aromas and flavours, a generous, not-quite-creamy palate and a twist of gentle, refreshing bitterness on the close.

    Disgorged in April 2021 with 1.6 grams per liter dosage, Renoir's NV Extra-Brut Grand Cru Le Terroir (2018 base) is showing very well, unfurling in the glass with aromas of nashi pear, crisp yellow orchard fruit, clear honey and freshly baked bread. Medium to full-bodied, deep and concentrated, with a layered but tightly wound core of fruit that's girdled by bright acids and animated by a pinpoint mousse, it will reward at least a year or two on cork with greater range and plenitude, and it will live for a lot longer. Lush with ripe fruit, the NV Champagne Assemblage Terroir Extra Brut is all about its pure and rich liqueur, which is hard to resist, offering aromas of Bing cherry, fresh peach, and dewy fresh flowers. Rich, ample and mineral but also intensely perfumed, the Avizoise has so much going on. Vinification in oak and aging on the cork seems to really bring out soft contours to match the wine's sculpted, translucent feel.     Half of this is from Les Champs Boutons in Avize and fermented in tank, while the other half is from similar terroir in Bionnes and Buzons in Cramant, just 100 meters away, and vinified in barrel. It feels unusually concentrated and ripe for the vintage, showing a subtle richness and depth on the palate, yet it’s held within a sleekly chalky frame, its salty, briny minerality increasing in intensity on the finish. It’s a superb edition of this cuvée, warranting at least another five to six years of post-disgorgement age to allow it to show its best.

    Disgorged March 2019. Avizoise is sourced from vines of up to 60 years old in the clay-rich (argilo-calcaire) coteaux d’Avize vineyards of Les Robarts and Les Gros Yeux. The richer soils in these two neighbouring sites give a deeper, more powerful and textured expression of Avize than the Minéral. Again, the 2012 does not disappoint although it is still tightly wound for now. Expect a super-complex wine with floral and mixed citrus fruit leading to a long, pithy and chalky close. The wine is aged entirely in 600-litre demi-muid, and the fermentation in bottle is carried out under cork rather than crown seal. Dosage is 3 g/L and the 2012 spent around 70 months on lees.

    Agrapart's 2011 Extra Brut Blanc de Blancs Vénus Grand Cru is a dream wine. Deceptively medium in body, the Vénus is all about nuance, sensuality and layers. Vibrant and finely sculpted, the 2011 exudes class. Hints of lemon peel, minerals and flowers add complexity, but it is the total package here that is most impressive. Today, the Vénus is dazzling. Vénus emerges from the La Fosse lieu-dit, a site that was first planted in 1959, and that, miraculously, has never been worked with mechanical methods. Disgorged: May 2017 and bottled with no dosage.

Powerful and ample in the glass, the Minéral is both broad on the palate and also somehow incredibly refined in feel, an appealing combination to be sure. There is so much to admire in the 2012, including its exceptional sense of total harmony. Dried flowers, almond, mint and dried apricot are all nicely layered in the glass, but again, it is the wine's poise that is truly mesmerizing. The Minéral is a blend of old-vine fruit taken from sites in Avize (Les Champboutons) and Cramant (Les Bionnes). Dosage is 5 grams per liter. Disgorged: March 2019.

    Disgorged May 2019. This is a very special wine from a very special plot of dirt. It comes from one-third of a hectare of vines in the renowned Avize vineyard called La Fosse. The vines here were planted in 1959 so they are extremely old by Champagne standards. It’s therefore a single parcel cuvée made in tiny quantities each year. The wine is named after the Boulonnais mare, Vénus, that first ploughed the vineyard. Apart from being ploughed by horse, this 0.3-hectare section of La Fosse lies on the very chalkiest portion of the slope near the village, contrasting with the more clay-rich soils of the Avizoise cuvee. Vénus is today one of the truly great cuvées of Champagne; it always shows incredible depth and yet retains finesse and subtlety, with pillowy layers of texture and serious complexity. In a year like 2012, it is mind-blowing. As always it is non-dosé and the 2012 spent over six years on lees. It is a magic, intense wine that can really benefit from decanting when young. It will also benefit further from two or three years further ageing and demands food. Treat it like a great white wine, served at the table with proper wine glasses, and you will be greatly rewarded.

    The 2012 Extra Brut Blanc de Blancs Grand Cru Vénus is ethereal, elusive and eccentric. It is also mesmerizingly beautiful. The expression of fruit is a bit richer and riper than in the other 2012s, with orchard fruit and tropical overtones that give the wine a sense of inner perfume and raciness. Soft curves and striking aromatics make for a stunning Champagne, an impression that is reinforced by the super-refined mousse. Persistent, racy and over, the Vénus is simply fabulous in 2012. Old vines planted in 1959 in the La Fosse lieu-dit inform the Vénus. Non-dosé.

    The 2011 Extra Brut Blanc de Blancs L'Avizoise Grand Cru has more than enough brawn and depth to fill out its frame. The richness of fruit of this clay-rich site, along with the flavor complexity that is gained through aging on the cork results in a rich, vinous Champagne built on layers of flavor and vertical structure. As good as the 2011 is today, I would prefer to drink it on the earlier side given the challenges that 2011 presented. This is a superb wine for the year and a real revelation. Bursting with aromas of pear, toasted brioche, dried fruit, spices, smoke and stone fruit, it's full-bodied, pillowy and concentrated, with an elegantly muscular profile, tangy acids and a long, saline finish. Deep, complex and layered, it's lent complexity both by its longer passage sur lattes and also by the presence of reserve wines and its élevage in old Bollinger barrels, some dating back to the 1920s. Readers who appreciate rich, sapid, patinated, dry Champagnes—the so-called "goût Anglais" historically favored by the English market—will find in the Brut DMY everything they have been looking for.     Aged for six years on the second lees, the yellow-golden NV Brut The V6 Experience is a Bouzy Pinot Noir that displays great purity and intensity but also reduction on the mineral-scented nose. This is deep and complex, but it needs all our patience and perhaps even a decanter or at least a big glass and lots of aeration. The palate is rich and powerful, firmly structured, very tight and still astringent on the finish, but there is so much finesse paired with power, concentration and fruit, which give the V6 a promising future. The wine just starts a bit slowly (like a rocket, which is pictured on the label), but it will most probably go very steep in a couple of years. I have ever had this cuvée before, so I can only guess, though. Drink 2021 - 2027.

    The 2009 Brut Dream Vintage is a very pretty, expressive Champagne. Hazelnut, dried flowers, spices, mint, chamomile and lightly honeyed notes are all wonderfully laced together. Medium in body, radiant and quite open, the 2009 will drink well upon release.  Drink 2018 - 2029.

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.

The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
