The palate is quite toasty and has a faint creaminess to it with a refreshing dry finish. Citrus, toast and yeast lees overlay some subtle roasted almond characters. Aftertaste of citrus, toast, yeast lees and roasted almonds.

    Retasted May 2011: Good, white, creamy mousse that quickly dissipates with pale straw gold base wine colour. Very fine and persistent bead. Lifted aromas of baked bread and yeast lees are followed by some cashew and light toast notes. The palate is quite refined but also possesses good richness with flavours of baked bread, yeast lees and light roasted almonds, with some toast end notes. Clean, crisp, dry finish with an almost creamy like texture. Aftertaste of toasty baked bread, almonds and yeast lees.

    First tasted November 2000: An excellent example of non vintage Champagne. Brilliant, pale straw colour. Fine, persistent bead. The nose is impressive, with a pronounced yeast autolysis aroma over a biscuit background. Creamy texture, with a remarkable degree of finesse and concentration of flavour. Perfect balance, with long biscuit yeast lees aftertaste.

Buoyant and lacy, the mousse sits over a pale straw coloured base that has a fine stream of nibble bubbles flowing through it. Distinct yeast lees and baked bread aromas show notable depth out of the glass intermixing with dried honey, roasted almonds and brioche along the way. Rich, mouthfilling flavours of baked bread, yeast lees, citrus and grilled nut are fresh and focused yet also have a pleasing viscosity. Oily toast and brioche like characters are also present. Dry crisp finish with a long, rich gently creamed aftertaste.

    The Veuve Fourny Champagnes offer great value. The Fourny family have been growing vines in the Premier Cru of Vertus since 1856 with the fifth generation currently at the helm. The Blancs de Blancs is 100% Chardonnay sourced from vines over 40 years old and is aged for a minimum of 2.5 years on lees with 20% reserve wines included in the blend. Pours with a frothy white mousse that holds well over a pale straw coloured base with pale gold tinged edges. A nibble stream of tiny bubbles flowing through it. Pronounced aromatics of baked bread, pear and yeast lees aromas fills the nostrils with oily toast like notes and honeyed almond scents ensuing. Rich and full in the mouth expressive baked bread, yeast lees and oily toast flavours have a creamy textural feel with some pear and citrus characters also in the mix. Dry crisp finish with a long richly flavoured aftertaste.

    A personal favourite of mine. Its foundation is three consecutive vintages, with 20% of reserve wines. Extensive use of French oak during maturation. Dosage only 5g/l when disgorged in March 2023. The bouquet is flowery, the palate gently filled with honey and brioche.

    An 80% Chardonnay and 20% Pinot Noir blend that includes 40% reserve wines. The fruit comes from several vineyards near the village of Vertus where the Chardonnay plots produce wine that's quite fine and minerally, whilst the Pinot Noir component is fuller, richer and more fleshy. Slopes face South and South-East giving optimal maturing conditions. Average age of the vines is 40 years and the wine spends 2.5 years on lees.
    A buoyant mousse sits atop a pale gold coloured base wine which is threaded by a very fine and profuse bead. Showing ample intensity out of the glass is a mixture of baked bread, pear and yeast lees aromatics which are trailed by citrus, brioche and hints of honeyed cashew. Rich and full on the palate but with a surprisingly brisker feel than the Blanc de Blancs, vibrant yet mouthfilling flavours of yeast lees and oily baked bread are intermeshed with citrus, toast and almonds. Finishes dry and crisp with a long aftertaste that has a lingering oily toast and yeast lees like component to it.

    Adrien Renoir is one the brightest new talents to emerge from Champagne in recent years. Working with his father Vincent for several years at their 7 hectare domaine in Verzy, in 2019 the wines were re-launched under his name, and in quick time has caught the attention of educated Champagne drinkers the world over. One of the first changes he insisted on was abandoning herbicides completely, and the estate vineyards are certified organic as of 2020. Oak use too has increased, along with more focus on specific parcels for his lieu-dits bottlings. In the cellar fermentations occur with native yeasts, lees stirring is practiced, and there is no sulphur used at bottling.

    Les Vignes Goisses is a very special bottling of 100% Pinot Meunier from a vineyard planted selection massale in 1962. This parcel is defined by its sandy soils over a clay-limestone base. After 36 months on lees this is disgorged with zero dosage.

    The 2014 Extra Brut Blanc de Blancs Grand Cru Minéral is a powerful, intense Champagne that captures all of the natural power of these old vines in Avize and Cramant. Aptly named, the Minéral is infused with tremendous mineral and soil inflections that give a real feeling of gravitas. Crushed rocks, slate, chalk and citrus accents are some of the many nuances that emerge with a bit of time in the glass. This release is fabulous. It is also a reticent wine, though, so at least a year or two in bottle will help soften. Dosage is 3 grams per liter. Disgorged: April, 2020.

    The 2014 Extra Brut Blanc de Blancs Grand Cru L’Avizoise, from old vines in the Les Robards and Voie d'Epernay lieux-dits, is a wonderfully complex wine. Rich, ample and mineral but also intensely perfumed, the Avizoise has so much going on. Vinification in oak and aging on the cork seems to really bring out soft contours to match the wine's sculpted, translucent feel. This is an especially refined, aromatic expression of Avize, and also one of the most sublime, elegant wines I have tasted from Pascal Agrapart. Dosage is 3 grams per liter. Disgorged: April, 2020.

    Half of this is from Les Champs Boutons in Avize and fermented in tank, while the other half is from similar terroir in Bionnes and Buzons in Cramant, just 100 meters away, and vinified in barrel. It feels unusually concentrated and ripe for the vintage, showing a subtle richness and depth on the palate, yet it’s held within a sleekly chalky frame, its salty, briny minerality increasing in intensity on the finish. It’s a superb edition of this cuvée, warranting at least another five to six years of post-disgorgement age to allow it to show its best.

    Disgorged March 2019. Avizoise is sourced from vines of up to 60 years old in the clay-rich (argilo-calcaire) coteaux d’Avize vineyards of Les Robarts and Les Gros Yeux. The richer soils in these two neighbouring sites give a deeper, more powerful and textured expression of Avize than the Minéral. Again, the 2012 does not disappoint although it is still tightly wound for now. Expect a super-complex wine with floral and mixed citrus fruit leading to a long, pithy and chalky close. The wine is aged entirely in 600-litre demi-muid, and the fermentation in bottle is carried out under cork rather than crown seal. Dosage is 3 g/L and the 2012 spent around 70 months on lees.

    Agrapart's 2011 Extra Brut Blanc de Blancs Vénus Grand Cru is a dream wine. Deceptively medium in body, the Vénus is all about nuance, sensuality and layers. Vibrant and finely sculpted, the 2011 exudes class. Hints of lemon peel, minerals and flowers add complexity, but it is the total package here that is most impressive. Today, the Vénus is dazzling. Vénus emerges from the La Fosse lieu-dit, a site that was first planted in 1959, and that, miraculously, has never been worked with mechanical methods. Disgorged: May 2017 and bottled with no dosage.

Powerful and ample in the glass, the Minéral is both broad on the palate and also somehow incredibly refined in feel, an appealing combination to be sure. There is so much to admire in the 2012, including its exceptional sense of total harmony. Dried flowers, almond, mint and dried apricot are all nicely layered in the glass, but again, it is the wine's poise that is truly mesmerizing. The Minéral is a blend of old-vine fruit taken from sites in Avize (Les Champboutons) and Cramant (Les Bionnes). Dosage is 5 grams per liter. Disgorged: March 2019.

    Disgorged May 2019. This is a very special wine from a very special plot of dirt. It comes from one-third of a hectare of vines in the renowned Avize vineyard called La Fosse. The vines here were planted in 1959 so they are extremely old by Champagne standards. It’s therefore a single parcel cuvée made in tiny quantities each year. The wine is named after the Boulonnais mare, Vénus, that first ploughed the vineyard. Apart from being ploughed by horse, this 0.3-hectare section of La Fosse lies on the very chalkiest portion of the slope near the village, contrasting with the more clay-rich soils of the Avizoise cuvee. Vénus is today one of the truly great cuvées of Champagne; it always shows incredible depth and yet retains finesse and subtlety, with pillowy layers of texture and serious complexity. In a year like 2012, it is mind-blowing. As always it is non-dosé and the 2012 spent over six years on lees. It is a magic, intense wine that can really benefit from decanting when young. It will also benefit further from two or three years further ageing and demands food. Treat it like a great white wine, served at the table with proper wine glasses, and you will be greatly rewarded.

    The 2012 Extra Brut Blanc de Blancs Grand Cru Vénus is ethereal, elusive and eccentric. It is also mesmerizingly beautiful. The expression of fruit is a bit richer and riper than in the other 2012s, with orchard fruit and tropical overtones that give the wine a sense of inner perfume and raciness. Soft curves and striking aromatics make for a stunning Champagne, an impression that is reinforced by the super-refined mousse. Persistent, racy and over, the Vénus is simply fabulous in 2012. Old vines planted in 1959 in the La Fosse lieu-dit inform the Vénus. Non-dosé.

    Agrapart’s NV Brut 7 Crus is simply gorgeous. Rich, creamy and inviting, the 7 Crus hits all the right notes. The 7 Crus doesn’t quite have the focus or energy of the top wines here, but it is incredibly delicious, approachable and relatively easy to find. This may very well be the finest release of the 7 Crus I have ever tasted since this cuvée debuted a few years ago. The 7 Crus is 90% Chardonnay and 10% Pinot Noir. This release is equal parts 2015 and 2014. Don’t miss it! Dosage is 7 grams per liter.

    The 2011 Extra Brut Blanc de Blancs L'Avizoise Grand Cru has more than enough brawn and depth to fill out its frame. The richness of fruit of this clay-rich site, along with the flavor complexity that is gained through aging on the cork results in a rich, vinous Champagne built on layers of flavor and vertical structure. As good as the 2011 is today, I would prefer to drink it on the earlier side given the challenges that 2011 presented. This is a superb wine for the year and a real revelation. Bursting with aromas of pear, toasted brioche, dried fruit, spices, smoke and stone fruit, it's full-bodied, pillowy and concentrated, with an elegantly muscular profile, tangy acids and a long, saline finish. Deep, complex and layered, it's lent complexity both by its longer passage sur lattes and also by the presence of reserve wines and its élevage in old Bollinger barrels, some dating back to the 1920s. Readers who appreciate rich, sapid, patinated, dry Champagnes—the so-called "goût Anglais" historically favored by the English market—will find in the Brut DMY everything they have been looking for.     La Combe; a tiny hamlet above the village of Rotalier is home to the larger-than-life “Fan Fan” Jean-François Ganevat. Jean-François came back to run the family estate in 1998 after ten years working Burgundy and he combines his passion for the Jura terroir – here ideal for Chardonnay and Pinot Noir - with a staunch defence of Burgundian techniques; low yields and most recently biodynamic methods for which he has now gained Demeter certification.

    In addition to the ‘Estate’ wines there are, since 2013, a group of wines made from grapes purchased from around the region and in others, all are grown by their vigneron friends to their standards, so organic or bio-dynamically farmed and tended. They pay very high prices to get the quality they want. Each of these necogiant wine are made on the property by Jean-François and his small team; from grapes into wine, and have the same Ganevat precision, levity and exquisite texture despite the differing origins of the grapes.

    A sparkling crémant made of 100% Chardonnay, from vines farmed organically and harvested by hand. After direct pressing, the wine is matured 24 months on its lees, then bottled for the secondary fermentation: the "prise de mousse" in the bottle. Afterwards, the bottles are aged in racks for more than 24 months. A Brut Nature sparkling wine, with zero dosage.

    La Combe; a tiny hamlet above the village of Rotalier is home to the larger-than-life “Fan Fan” Jean-François Ganevat. Jean-François came back to run the family estate in 1998 after ten years working Burgundy and he combines his passion for the Jura terroir – here ideal for Chardonnay and Pinot Noir - with a staunch defence of Burgundian techniques; low yields and most recently biodynamic methods for which he has now gained Demeter certification.

    In addition to the ‘Estate’ wines there are, since 2013, a group of wines made from grapes purchased from around the region and in others, all are grown by their vigneron friends to their standards, so organic or bio-dynamically farmed and tended.     New technology, changing consumer values and a willingness to abandon tradition has not only multiplied the creative options available to wine label designers, but has frequently led to 'over-packaging'.

    The extravagant presentation of Armand de Brignac has given some critics pause for reflection, one commenting “...the luxuriousness of the package made me afraid I’d subconsciously find the Champagne amazing simply because of its bottle.”

    Produced by Champagne Cattier, the brand's first bottling was introduced in 2006 and is identifiable by its distinctive gold bottle with pewter Ace of Spades labels. Like Krug, the Brignac's Brut Gold is a multi-vintage style sourcing fruit from both Premier and Grand Cru vineyards. Two other cuvées, a Rosé and a Blanc de Blancs were released in 2008. An appearance in the Jay-Z music video of "Show Me What You Got" prior to the launch of the Armand de Brignac brand sparked wide discussion on sites covering hip-hop and popular culture, following Jay-Z's public fallout with the makers of Cristal Champagne. As a result, Mr. Cattier's brand received more publicity in two weeks than it had in two decades. "I would have never imagined a few months ago that we'd become part of this mysterious and exclusive rap world," he said. "Jay-Z is a remarkable man. I'd like to invite him here to visit the winery."

    Subsequent tastings by international wine critics have acknowledged Armand de Brignac as one of the world’s top Champagnes, though it comes with a price to match.

    Armand de Brignac Blanc de Blancs is pressed from an exclusive selection of white Chardonnay from famed Grand Cru villages including Cramant, Avize, and Oger. It also counts itself as one of the rarest wines in Champagne, comprising no more than 5% of their small annual production.

    A top Australian sparkling that possesses wonderful freshness and complexity.

    A blend of 67% Chardonnay and 33% Pinot Noir that has been aged for 7 years. Pours with a white frothy mousse that dissipates to reveal a pale straw, pale gold edged base wine that has a steady stream of very fine bubbles that show excellent persistence. The nose shows excellent intensity and is very Champagne like in its complexity. Aromas of toasty brioche and yeast lees climb their way out of the glass with some biscuity citrus, roasted almond characters also present. The palates very precise and focused opening is offset by a moderate creaminess with flavours of pear, citrus and subtle dried honey overlaid by a distinctive toasty roasted almond character. There’s also baked bread and yeast lees nuances evident. Clean crisp acidity with a very dry finish. Long aftertaste of toast, roasted almonds, citrus, yeast lees and very subtle dried honey. Very Limited Stocks.

    ‘Rich, creamy and toasty with a nutty finish’

    Made from Chardonnay & Pinot Noir this sparkling has spent 10 years on lees. Pours with a white frothy mousse that shows good hold. Once dissipated it reveals a pale straw coloured base wine with pale gold edges. The exceptionally fine bead showing excellent persistence. Yeasty baked bread aromas merge with some toastiness followed by some pear, cashew and light honeyed almond end notes. Rich and creamy the palate features flavours of honeyed roast almonds, yeast lees and toast with following citrus and light hazelnut. Finishes crisp and fresh with a long aftertaste of honeyed roast almonds, yeast lees, toast and hazelnut. Drink over the next 4-5 years. Alc. 13.5%

A fine satiny mousse sits over a straw, pale gold edged base wine that’s delicately threaded by a very persistent bead. French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.

The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
