Of course it helps that his father is Vincent Girardin, and following the sale of his namesake Domaine in 2011 bequeathed Pierre 4.5 hectares of prime vineyards, and helped set up a brand new winery where evidently no expense has been spared on the latest presses, fermentation tanks and larger-format barrels from Tonnellerie François Frères.

    Stylistically Pierre has taken a different approach than that of his father's wines, preferring a lighter touch than the rich and oaky style of years gone by. The white wines are finer-boned and more reductive, and his are reds delicate and fruit-driven, with a minimum of extraction and plenty of stem retention.

Average vine age in these plots is over 50 years old, and the wine is fermented with 100% whole cluster before aging in barrel (30% new) for 12 months plus four months in stainless steel.

    The 2019 Pinot Noir La Rinconada Vineyard is a heady, dazzling wine. The 100% whole clusters lend striking aromatic top notes that soar out of the glass. Sweet red cherry, sage, rose petal, blood orange and lavender give this beguiling, layered Pinot tons of complexity. Savory, wild and constantly changing in the glass, the Rinconada has so much to offer. This brilliant, captivating Pinot from Racines has so much to offer. Drink: 2024-2039.

    The 2019 Pinot Noir Sanford & Benedict is a powerful, brooding wine. The high percentage of stems (75%) undoubtedly adds savory intensity, but it also masks some site character. The 2019 is a gorgeous wine, but it is also austere and not an especially typical expression of this site. I hope to have a chance to taste it in a decade. Drink: 2024-2039.

That said, these are some of the most accomplished wines of Burgundy, and best of all continually produce wines that seemingly ignore any challenges a vintage might throw their way to achieve results seen only at very few of the finest addresses across the Cote.

    Now under the stewardship of Robert Chevillon's sons Bertrand and Denis, these passionate pair of vignerons are tireless in their pursuit of the finest expression of Pinot Noir possible. After meticulous care in the vineyards across the year, grapes are hand harvested, sorted and de-stemmed before receiving a cold maceration in vats for 5-6 days and natural fermentation lasting 2-3 weeks. Maturation lasts from 15 to 18 months in a mix of 30% new and 70% second use barrels.

    Les Vaucrains is located further up the slope from Les Saint-Georges and Les Cailles, and completes the trio of standout vineyards in Nuit-Saint-Georges. It's also the most powerful and concentrated wine in the range, and is shown after Les Saint-Georges when tasting at the Domaine. Chevillon's plot is on the lower portion of the vineyard, granting is some more depth of fruit than some other producers of Les Vaucrains.

    A slightly more deeply pitched nose combines notes of spice, red and dark currant, plum and plenty of humus-inflected forest floor character. The sleek and almost painfully intense larger-bodied flavors possess exquisite detail as well as focused power that really builds as the solidly complex and lingering finish sits on the palate. As one would expect in the 2021 vintage, this doesn't have its usual volume, but the balance is impeccable. Highly recommended. Drink through 2036+.

    The 2021 Nuits-Saint-Georges 1er Cru Les Vaucrains unwinds to reveal aromas of dark berries and cherries mingled with notions of baking chocolate, forest floor and spices. Medium to full-bodied, rich and concentrated, it's a powerful, structured wine that's broader-shouldered than the more suave, elegant Cailles and Les Saint-Georges, but which is also exceptionally characterful.

    Classic ruby color. As is often the case chez Chevillon, this is the most elegant wine in the range with its spicy, ultra-fresh and restrained nose that mixes both red and dark pinot fruit, violet and sandalwood. The equally restrained, cool and intense middleweight flavors are notably finer with superb detail and ample minerality on the moderately austere, balanced and strikingly lengthy finish that is shaped by fine-grained tannins. This is at once stylish and very classy. Drink through 2033+.

    The 2021 Nuits-Saint-Georges 1er Cru Les Cailles wafts from the glass with aromas of sweet red berries and plums mingled with rose petals, spices and orange zest. Medium to full-bodied, seamless and elegant, it's an ample, suave, sensual wine with lively acids and beautifully refined tannins.

    The slope in Les Pruliers is moderate though steep towards the top of the vineyard. Despite the slope there is still a good proportion of gravel here, and can lead to wines with generous fruit weight and presence. Chevillon produces a deep and firm example of Les Pruliers that can often rival Les Vaucrains for the most powerful wine in the portfolio.

    A darker fruit profile presents notes of plum, dark currant and plenty of earth and game wisps. There is both fine power and richness to the big-bodied if less refined flavors that display fine length on the robust and moderately rustic finale. This isn't as dense as it usually is but even so, there is no lack of size and weight. Patience again suggested as this is definitely built to repay extended keeping. Drink through 2033+.

    Scents of red berries, dark chocolate, orange zest, sweet spices and loamy soil preface the 2021 Nuits-Saint-Georges 1er Cru Les Pruliers, a medium to full-bodied, lively and concentrated wine that's built around sweet, powdery tannins, and which concludes with a mouthwatering finish. The Pruliers often needs a lot of time, but this 2021 looks set to be unusually approachable, even if it also has the substance and structure to age.

    As a synonym for quarry, it's no surprise to hear Les Perrieres sits above a working limestone marble quarry. A mid-slope site, Perrieres produces a fine and aromatic Burgundy, deep in colour yet light and silky on the palate.

The intensely mineral-driven and strikingly well-delineated medium weight flavors possess a wonderful underlying tension that adds a real sense of lift to the moderately austere and beautifully long finish that is akin to having a small pebble in the mouth.     Soils in Les Chaignots are more alluvial than in other areas of the village, with more chalk and gravel and very little clay. The site has a gentle slope with good drainage, and the vines here grow deep to access water and nutrients. Located at the northern end of Nuits, wines from Les Chaignots display intense floral aromatics with fruity nuances and great concentration.

    As is usually the case, the expressive nose is quite spicy, indeed blind this could aromatically pass for a Vosne with its pretty plum, dark berry and exotic tea scents. The rich and quite generous yet refined and pure medium-bodied flavors exude a subtle minerality on the bitter pit fruit-inflected finale. Lovely and understated. Drink through 2029+.

    Les Roncieres is a steep vineyard with poor, pale soils covered with white stones and gravelly shale. The early-ripening site produces wines which can show a slight wild edge to them, bramble fruit with a linear structure; quintessential Nuits-Saint-Georges.

    An exuberantly fresh nose freely offers up a combination of various dark berries, newly turned earth and plenty of sauvage character. The rich, generous and punchy flavors possess a bit more volume on the tightly wound and impressively long finish. This overtly mineral-driven effort is a combination of refinement and focused power.     Situated on the lower slopes at the northern end of Nuits village, Les Bousselots often produces softer and more approachable reds than is seen with the other premier cru Nuits-Saint-Georges vineyards. While the soil here is deep, Chevillon's plot contains old vines that retain good acidity and structure to support the richer flavours.

    Here a more restrained nose is aromatically similar to the Chaignots if not quite as spicy. There is more power and punch to the intensely saline-suffused middleweight flavors that also conclude in a moderately austere bitter pit fruit-inflected finish. Bousselots always requires at least mid-term cellaring to show its best and the 2021 version will be no exception. Recommended. Drink through 2031+.

    Now under the stewardship of Robert Chevillon's sons Bertrand and Denis, these passionate pair of vignerons are tireless in their pursuit of the finest expression of Pinot Noir possible. After meticulous care in the vineyards across the year, grapes are hand harvested, sorted and de-stemmed before receiving a cold maceration in vats for 5-6 days and natural fermentation lasting 2-3 weeks. Maturation lasts from 15 to 18 months in a mix of 30% new and 70% second use barrels.

The palate is medium-bodied with a little oak to be subsumed on the entry. Good weight, quite muscular for a Chambolle with liberally sprinkled black pepper enhancing the finish. A little stocky, bottle age will smooth any jagged corners.

Very sumptuous in the mouth not too dry at the finish, this is actually really good wine in a riper fruit style, and the whole bunch usage leaves a fresher finish.

The palate is medium-bodied with supple tannins, fine acidity, taut and fresh with a little more restaint on the finish compared to the aromatics. Lovely, quite endearing red fruit here. Excellent. A dense dark black purple. For the moment the whole bunches speak quite loudly. Dark fruit, rather exciting, shows the oak a bit, not all together but there is a lot of wine here. When this does come together it will be rather impressive.

    The 2020 Bonnes-Mares Grand Cru comes from 80-year old vines: 100% whole bunch with one-third new oak. This takes time to unfold on the nose when often this cuvée is quite medium. The aromatics say: Hold your horses. Then it unfurls to reveal slightly tertiary black fruit, tobacco and crushed limestone, almost flinty aromas. The palate is medium-bodied with filigree tannins. Silky texture, poised acidity, this might be the most elegant and refined Bonnes-Mares that Nicolas Groffier has produced. I confess, I could not resist swallowing my tasting measure. This is one of Nicolas Groffier's finest achievements to date. Drink 2025-2060.

    With a patchwork of vines covering over two hectares, this is arguably Pataille's signature red cuvée. The vineyards are spread across Chenôve, Couchey and Marsannay-la-Côte. All the vines were planted between 1950 and 1980, with the youngest being 40 years old. The wines are all aged in a mixture of used barriques and several old demi-muids (600lt). The final blend includes around 80% whole bunches.

    Alongside Longeroies and Champ Perdix, the Clos du Roy is one of Marsannay’s largest and most revered vineyards. Some consider it the appellation’s finest terroir, which makes sense when you consider the name: Roy is the ancient French spelling of roi, meaning king. It’s a steep, east-facing slope above the village of Chenôve, on the same line as the Gevrey Premiers Crus to the south. It has lightish red soil, including some sand, over a bed of Comblanchien limestone. When Marsannay finally gets its first Premier Cru (expected 2024), Clos du Roy will likely be at the front of the queue.

    Pataille farms a serious 2.25 hectares in the clos, from vines planted in 1952, 1965, 1978 and 2001. As for the winemaking, ‘the king’s vineyard’ gets the royal treatment in the cellar, with 18 months in barrel and six months in tank before being bottled unfiltered. It ferments almost entirely as whole bunches.

The denser if less refined medium weight plus flavors exhibit a taut muscularity along with focused powerful on the sappy, serious, youthfully austere and impressively long finish where the only reproach is a touch of warmth. There is again very good verve and freshness to the delicious and caressing yet quite punchy medium-bodied flavors that possess a seductive texture thanks to the sappy dry extract that also serves to buffer the moderately firm tannic spine shaping the slightly longer and more complex finale. This is one to consider, especially for aging over the mid to even longer-term. Drink 2029+.

Classic in style, nicely focused, this builds in the mouth and exerts good grip on the finish with impressive length on the aftertaste. Great potential but will benefit from cellaring. It will need 24 months once in bottle and fingers crossed the nose will step up a gear. Drink 2023 - 2032.

    German born Timo Mayer, along with partner Rhonda Ferguson established Mayer in 1999, on the slopes of Mt Toolebewong, between Healesville & Woori Yallock. They produce a small range of hand crafted, single vineyard wines, believing that wines are made in the vineyard and not the winery. All wines are unfined and unfiltered to show the true expression of the vineyard.
    Vines are often close-planted, winemaking frequently utilises a generous use of whole bunch but most impressive is Timo's cheerful, amusing nature. Timo showcases his German touch with this small-parcel Pinot Noir from Germany’s Remstal region, a picturesque pocket of Württemberg east of Stuttgart. Made in collaboration with his son River, this wine carries Timo’s signature flair—layered, textural, and unapologetically funky. Darker and richer than his Yarra Valley Pinots, it shows the influence of its cool-climate origins while still offering that whole-bunch spice and structure that defines his style. A striking expression of place, guided by a master of minimal intervention.

    Super high toned perfume, dark cherry, almost Black Forest cake scents, some white pepper, violet floral lift, some mulberry scents, a touch of salted liquorice. The palate is informed by the bouquet for its descriptors, with a tangy, blood orange squirt in there for good measure. Again, quite lifted and high toned in flavour, and lots of white pepper dashed over it. Fine, river pebble tannins in tow. Good. Potent, character-filled pinot noir. Drink 2024-2027.

Intense dark cherry and strawberry aromas intermingle with brambly dried herb, rhubarb, forest floor and spicy cedar notes.     Among the various vineyards owned by Dubreuil-Fontaine, it's the parcels in the famed Corton grand cru that are cherished most. In addition to their 0.7ha of Chardonnay planted in En Charlemagne, their Pinot Noir is planted in the prime lieu-dits of Clos du Roi at the top of the Corton hill, to its south-east in les Bressandes, and to the south in les Perrières. Clos du Roi is perhaps the most complete of the trio, with glorious weight of fruit married to significant structure. Bressandes meanwhile is for many their favourite, a giving and generous expression yet it retains sufficient character to differentiate itself in the range. Lastly les Perrières has a more free-draining, stony soil tending to a finer expression of Corton, though as with all of these wines it can be very long lived.

An obsession with a fickle varietal.

Once you experience it, you never forget it. For some wine lovers, Pinot Noir becomes an obsession. While promising one of world's greatest wine experiences, it can also deliver some of the most disappointing. What is it about Pinot that makes it so frustratingly variable? There are known quality factors which offer encouragement to winemakers. Micro-climates have been observed to play an important part in a successful matrix, particularly the diurnal temperature range. Pinot Noir is a little like Riesling, in the sense that it requires warm, but not overly hot days and cool nights to fully develop its maximum flavour potential. Sunshine hours, rainfall, time and rate of precipitation are all important. Countering this is the fact that the same clone will not respond to differences in micro-climate in the same way. Older vines make better wines. Creative and adaptive viticultural management and winemaking are essential.
