There's no doubt that if Domaine Robert Chevillon were based in Vosne-Romanee or Chambolle-Musigny, their wines would be next to impossible to find and sell for exorbitant prices. That they are found in Nuits-Saint-Georges, a village with no grand cru sites, has allowed these wines to fly under the radar for many consumers. That said, these are some of the most accomplished wines of Burgundy, and best of all continually produce wines that seemingly ignore any challenges a vintage might throw their way to achieve results seen only at very few of the finest addresses across the Cote.

Now under the stewardship of Robert Chevillon's sons Bertrand and Denis, these passionate pair of vignerons are tireless in their pursuit of the finest expression of Pinot Noir possible. After meticulous care in the vineyards across the year, grapes are hand harvested, sorted and de-stemmed before receiving a cold maceration in vats for 5-6 days and natural fermentation lasting 2-3 weeks. Maturation lasts from 15 to 18 months in a mix of 30% new and 70% second use barrels.

Along with Les Vaucrains and the eponymous Les Saint-Georges vineyard, Les Cailles is one of the most highly regarded parcels in Nuits-Saint-Georges. Bordering Les Saint-Georges, Les Cailles produces wines which often rival those of its neighbour, and while they may not display the outright power they are perhaps more refined here.

Moderate wood sets off spicy and very ripe aromas of various dark berries that are not quite as fresh though they are nicely layered. The exceptionally rich medium-bodied flavors possess fine intensity as well as good concentration, indeed the sappy dry extract buffers the equally firm and robust finale. The Chevillon Les Cailles is normally a wine of refinement and grace but the 2020 version is much more robust and powerful than usual. Drink through 2038+.

Deep and seamless, the 2020 Nuits-Saint-Georges 1er Cru Les Cailles mingles aromas of cherry and berry fruit with hints of rose petals, orange rind, sweet spices and raw cocoa. Medium to full-bodied, suave and velvety, with terrific concentration, fine tannins and lively acids, it's the most elegant wine in the range.

Rich dark purple, black fruit, a little bit heated, then a rich bright dark fruit on the palate with a slightly fresher finish. This may well make it through, and the fruit shows the class of this excellent vineyard. Judgement a little bit reserved for now, but there may well be a greater upside here.
