    Full bodied, rich and sweet, Kahlua is the essence of Mexican Mocha coffee. Kahlúa is also the original coffee liqueur, and was first produced in Mexico in 1936. However, it was not until the early 1960s that Jules Berman, an entrepreneur and art collector, introduced it to the United States. Berman sold the brand to Hiram Walker and Sons in 1964, but he remained as a corporate officer in charge of brand development until 1970.
    Though its specific origins remain a mystery, the rich and distinct taste of Kahlúa is now popular all over the world. The product became famous in Boston, USA during the 1950's as a cocktail when it was mixed with milk to create the 'Sombrero'. It is now drunk with milk in every country to which it is exported.

    Only the finest 100% Arabica coffee beans are used in the Kahlúa blend. Veracruz has the required altitude and semi-tropical climate for growing a light-bodied bean with a subtle hint of chocolate – the essence of Kahlúa’s distinctive aroma and flavour. The coffee plants are grown under trees, so the beans can ripen slowly in the shade without the use of pesticides. The ripe beans are hand-picked, washed and sun-dried.
    Once harvested, the coffee beans are roasted lightly – just enough to develop a delicate flavour – then coarsely ground to preserve the natural sweetness of the beans.  The ground coffee is immediately extracted with water to produce freshly percolated coffee, which is then blended with cane spirits, vanilla and caramel.

    The duo of Tom Baker and Phillip Moore have developed a bespoke method of distilling coffee at their Distillery Botanica, located at Erina, near Gosford in Sydney. Sourcing from Glee Coffee Roasters nearby the distillery has been key to the quality of the final product. ”Working with the local roaster we can talk to them about what's working, different flavour profiles, how dark we want the roast. So having a local supplier really helps,” says Baker, whose also the creator and distiller.

    The liqueur employs the cold drip method of brewing coffee. “We find it gives a richer and sweeter flavour and keeps its integrity,” explains Baker. "The control of oxygen (“the enemy of good coffee”) is fundamental to the process. From the day the coffee is roasted, it comes straight to the distillery. It’s then ground and goes straight into a water and alcohol bath that has all the oxygen removed using nitrogen,” says Baker. “It’s quite involved, but the result of getting all the oxygen out of it means you never get a stale coffee flavour.”

    Tasting note: [BATCH 005 tasted] Opaque deep burnt umber colour with sienna brown edges shows some viscosity. Top note is just-opened-coffee-bag-fresh over heavier aromas of cocoa and cafe creme. After several minutes in the glass the vibrancy drops a notch and the aroma shifts towards bitter dark chocolate. Creamy textured, light to medium bodied palate presents with rich mocha, vanilla and dark chocolate flavours rounded off by a very gently bitter finish to balance. Semi sweet coffee and caramel aftertaste. A judiciously poised and authentic addition to the genre. 25% Alc./Vol.

    Other reviews… Dark and dense. Intense, rich, freshly ground coffee simply percolates into the nose. It is almost all coffee except for a fine vanilla edge. Just enough sugar to make it slightly sweet and balance the bitterness of the coffee. Coffee still dominant and like extra strong, when freshly brewed. Vanilla note still at the very end. A great way to have your coffee.

    The origins of coffee are uncertain, but probably stem from Abyssinia or the Sudan. It is said to have been discovered by Yemenite monks and their ‘mad’ goats. After lengthy deliberation, the cause of the goats unusual behaviour was traced to their consumption of an unfamiliar plant. Of course, this is purely conjecture. What is clear is that coffee became known in Europe through the Venetians after spreading through Arabia and Egypt, and gradually replaced beer-like beverages as a morning stimulant.

    A coffee liqueur is a somewhat complex product, even though the basic flavour component is derived from a single source, namely - the coffee bean. There are two basic varieties of coffee bean, Arabica and Robusta. These two varieties may vary infinitely depending upon country of origin, topography, climatic conditions and soil characteristics. The coffee derived from the various beans can be further influenced by variations in degree of roast, coarseness of grind and length and temperature of extraction. Skillful blending is therefore required to produce a consistent, quality result.The liqueur is made using a sweetened spirit extract of coffee which is then coloured brown. Baitz use a blend of the finest Brazillian coffee beans together with matured Australian rum and imported spices. The resulting liqueur has a rich volatile coffee aroma which carries through to the palate. There are now many variations of this popular liqueur available on the market. Baitz Coffee Brazil has an alcohol content of 23%.

    Other reviews... I don’t have any Mr Black original around for a side-by-side tasting, but judging from my tasting notes, I imagine drinkers will have a tough time telling a significant difference between the two. It’s still an amazing liqueur, full of fresh, dark roast espresso notes, tinged just so on the nose with notes of fruity red berries. On the palate, bold espresso and light sweetness lead to a clear mint note (the major shift I noted vs. the original Mr Black), with notes of toasted coconut and more of that red fruit evident. The finish sees a gentle sweetness lingering over the coffee climax — though I will note that I got a saccharine aftertaste some 10 to 15 minutes after finishing the glass, which left me itching for a chaser.

    The liqueur employs the cold drip method of brewing coffee. “We find it gives a richer and sweeter flavour and keeps its integrity,” explains Baker. "The control of oxygen (“the enemy of good coffee”) is fundamental to the process. From the day the coffee is roasted, it comes straight to the distillery. It’s then ground and goes straight into a water and alcohol bath that has all the oxygen removed using nitrogen,” says Baker. “It’s quite involved, but the result of getting all the oxygen out of it means you never get a stale coffee flavour.”

    Tasting note: [BATCH 005 tasted] Opaque deep burnt umber colour with sienna brown edges shows some viscosity. Top note is just-opened-coffee-bag-fresh over heavier aromas of cocoa and cafe creme. After several minutes in the glass the vibrancy drops a notch and the aroma shifts towards bitter dark chocolate. Creamy textured, light to medium bodied palate presents with rich mocha, vanilla and dark chocolate flavours rounded off by a very gently bitter finish to balance. Semi sweet coffee and caramel aftertaste. A judiciously poised and authentic addition to the genre. 25% Alc./Vol.

    Other reviews… Dark and dense. Intense, rich, freshly ground coffee simply percolates into the nose. It is almost all coffee except for a fine vanilla edge. Just enough sugar to make it slightly sweet and balance the bitterness of the coffee. Coffee still dominant and like extra strong, when freshly brewed. Vanilla note still at the very end. A great way to have your coffee.

    When we first met Tim Marwood, the original distiller and Proprietor of Timboon Railway Shed Distillery, we found him to be a very upfront, obliging individual, willing to answer just about any question we had for him. Naturally, we were pretty excited by the quality his first three products (and the fact there's a whisky coming) and had plenty of questions. All this changed when we asked Tim "how do you make the coffee liqueur?" His lips were sealed.

    Our further investigations have had limited success. Some inside sources suggest local honey is included, with some hazelnut and vanilla, another suggests strong input from the local dairy industry, even goes as far to suggest methods employed in the production of another of Timboon's famous delicacies, Timboon Ice Cream, are used in the production of this liqueur.

    Tasting notes: Totally opaque 'white and two' colour cream appearance is milk-like in the glass. Offers up decadent scents of caramel nib ice cream, iced coffee and milk chocolate. Rich, cream-textured palate delivers flavours of iced coffee, hazelnut, chocolate and honey. Well balanced. Clean finish; long aftertaste of honey, coffee and chocolate with a trace of the base spirit shining through. Great stuff. Little wonder the recipe is such a closely guarded secret! 16.0% Alc./Vol.
