    Part of the premium 'Apex' series, this edition was matured in ex-red wine casks that had been Shaved, Toasted and Re-charred and filled with the distillery's peated new make spirit. The now familiar STR technique was developed by the late Dr. Jim Swan, consultant and friend to the distillery. The process enables the casks to impart rich flavours.

    Notes from the producers... AROMA: Sea breeze, gentle saltiness, stroke of varnish, gingerbread rich in cloves and allspice, hints of freshly cut hay. PALATE: French vanilla cream, crushed white peppercorns, sweet mint, toasted dry leaves. FINISH: Cinnamon, roasted chestnuts, buttery popcorn. Non chilled filtered. 58.9% alc/vol

Production ceased in 1997 as Seagrams rationalised their world wide business and the operation was sold to Fosters who mothballed the company in 2000, and sent the silent stills to Fiji to make rum. The New Zealand whisky company purchased the last 600 barrels of mainly Lammerlaw malt and the whisky has been maturing in the towering seaside bondstore in Oamaru's famous heritage precinct ever since.

    Scotland, Ireland, and Japan have matured single malt to 30 years and beyond in recent years, now New Zealand is only the 4th nation to release a Single Malt Whisky with the benefit of three decades in American Oak.
    This precious liquid began in the rich soils and barley fields of North Otago. After massaging at the hands of proud Maltexo maltsters, Dunedin’s distilling team married the snowmelt waters into the ‘uisga beatha’ (Water of Life). They let their copper stills work magic on the vapours, before laying down the recaptured liquids, to rest and quietly mature in American Oak barrels.
    Since 1987, The Otago Commemorative Cask has been softly sweetening into the syrupy and silky flavours of rich malt, divine fruit and a buttery mouth-feel that leaves lasting flavours of the South Island. In their 30 years, these barrels have journeyed from Willowbank in North Dunedin, to further maturation in the Taieri Valley, before an enlightened relocation to enjoy the seaside influence of Oamaru’s crashing coastline.

    This amber gold coloured whisky offers lovely rounded aromas of Ovaltine, stewed plums and orange zest followed by hints of dried coconut and vanilla. Chewy and full bodied, one senses a sherry matured element included here; Richer and more supple than Shinobu's malt and grain blend, it also shows overall better balance. The finish is malty then crisp and finely tannic, fading with the same delicate sweetness found in the other bottlings. 48% Alc./Vol.

    A long time brewer, Shinobu's Master blender, Mr. Usami is following a dream of creating his own local whisky. While the distillery is a work in progress, Usami hones his skills sourcing malts and blending whiskies, finishing them in Japan's precious Mizunara oak. Brilliant copper topaz in colour, his 10 year old is beautifully integrated. The aroma offers a fine balance between nashi pear-like fruitiness and exotic woods. Hints of pipe tobacco, vanilla and menthol emerge after extended time in the glass. In the mouth, it's a soft, deliciously rounded assemblage, with the malt carried in a swathe of sweet woods and fanning spices. This also shows the best staying power of the bunch, with the final stages becoming mildly oily, lingering with suggestions of dried fruits. 48% Alc./Vol.

    Usami's oldest blend takes on aromas reminiscent of a sherried Speysider: raisins, prunes, dried apricots and whiffs of dark chocolate lead into a soft entry, developing dried fruit sweetness and gingery warmth. Suggestions of fruit cake, tea biscuits and dates enter at the finish. It's fairly understated as far as sherried styles go, but it's expertly balanced. The aftertaste is gently spicy and medium long. Nicely done. 48% Alc./Vol.

    Shinobu's Master Blender, Mr. Usami, matures sourced whiskies in both ex-sherry and ex-bourbon casks This 50% malt and 50% grain blend probably started life in the latter before being finished in Japanese Mizunara oak. Pretty bright gold in colour, the nose opens with a prickle of alcohol and sappy, grassy, mildly acidic notes, developing attractive biscuit, grain and muesli bar-like aromas. Air contact emphasises ripe plum, ginger and wasabi. Surprisingly intense, but relatively well balanced, it's an easy-drinking style with low-key fruitiness, a somewhat spicy finish and hints of sweet oak through the aftertaste. 43% Alc./Vol.

Medium bodied, with good concentration and significant barrel input. Finishes mildly oily, hinting at gobstopper, toasted marshmallow and a touch of orange to close. Youthful and spicy.     Tasting note: Bright gold. A light fragrance of citrus blossom with hints of vanilla wafer; feels grain heavy. Air contact draws out an attractive fruity edge. Quite flavoursome, with a nice burst of vanilla and toasted cereals at the finish – some dried fruits too. Ends crisp, balanced. This is rounder and softer with less alcohol flare compared to the Bourbon barrel bottling. Drinks like a solid Scottish blend. 43% Alc./Vol.

    Another continent, another whisky! This one distilled by Andy Watts at the James Sedgwick distillery in Wellington and aged in American oak casks. Officially launched in 2003 as a limited release, it's South Africa's first single malt. Three more have followed, each to commemorate the pioneering voyages of Bartholomew Diaz, Vasco da Gama and Jan van Riebeeck respectively in a special collector's series. We have the latter release.

    ...South Africa’s most established distillery now makes Scotch-style single malt whisky that the country can be proud of. The downside is that it plays it safe, and the flavors on offer are subdued and subtle. That said though, there’s plenty to like here — delicate floral notes including rose, with a rich and honeyed heart, traces of exotic fruits including kumquat and kiwi, wispy smoke, and some cinnamon and paprika. Solid.

    Some very warm reports on this unusual blend, reportedly made from Scottish malt and Canadian grain and matured in Japan by Chugoku Jozo, who keep their whiskies in a tunnel rather than a warehouse. The temperature of the tunnel is always 15 degrees while the temperature of the cellar at the headquarters in Hatsukaichi city is a little higher than that. This bottling was distributed in Europe by Les Whiskies du Monde.

    Other reviews... On the nose, the initial impressions are: damp soil, wet leaves, grandma’s wardrobe, tinned peaches, pear drops and honeydew melon. After a while, you get grilled pumpkin, gratin dauphinois with a hint of boiled cauliflower and parsnip, rye, porridge and bales of hay in summer. There’s quite a lot going on here. On the palate, you get the sappiness from the wood, cereal notes, old bread, Danish pastries, salted caramel mousse, chili peppers and a distinct earthiness (jacket potatoes, burdock).     A blend from Chugoku Jozo, who mature their whiskies in a tunnel rather than a warehouse.     Other reviews... On the nose, it’s very grainy with notes of butterscotch, cotton candy and a bit of freshly cut grass. Apparently, this is a blend of 8yo malt and corn whisk(e)y, but you may be forgiven for thinking this was a grain whisky. In fact, it reminds me of Nikka’s Coffey Grain – that’s how dominant the grain is. On the palate, you get corn bread, marshmallows, soft caramel candy, white pepper, nutmeg, agave syrup and a slight bitterness (goya). The finish is sweet and spicy, but rather short.     Togouchi seem to be making a name for themselves as top-notch blenders and bottlers, with this release following on from the highly successful 18 year old, both marketed by Les Whiskies du Monde. The company has been distributing whiskies from smaller Japanese producers (Akashi/Eigashima and Isawa, among others) for several years now.

    This is a blend of malt and grain whisky, though the exact provenance of the whiskies is not disclosed. We only know that the malt is sourced from Scotland and the grain from Canada. As has been mentioned before, the whiskies are married in Japan and matured in Togouchi's famous disused railway tunnel which stays at a constant 15 degrees. This latest effort received a very warm review from the Japanese whisky website, www.nonjatta.com.

    Other reviews... This has got a nose to die for. That’s how seductive it is… green apples drizzled with lemon juice, oroblanco (green grapefruit), lime zest, buffalo mozzarella cannoli, a whisp of smoke and a tiny hint of peat. And in the background, you’ve got those lovely, tiny vegetable notes again (boiled vegetables) and some crema catalana. The palate delivers more of the same: orchard fruits (green apples, most prominently), citrus accents (lemon meringue pie, candied lemon peel) and baked goods but there are some little surprises, too: marzipan, all-spice and delicate herbal notes. The finish is medium-long with a light, lingering sweetness (coconut scones).

    A recent Togouchi limited edition reserved exclusively for the French and marketed by Les Whiskies du Monde. The company has been distributing whiskies from smaller Japanese producers (Akashi/Eigashima and Isawa, among others) for several years now.
    Kiwami means "height" in Japanese, and the intention of this bottling is to represent some of the distillery's best blending efforts using both Scotch whiskies and locally produced whiskies. The exact composition is not disclosed.

    Expect fresh notes of grass, nuts, chocolate, honey and subtle pepper and nutmeg. 40% Alc./Vol.

    Tasting note: Brassy gold. Sponge cake and cocoa over a delicate fruitiness. Dried orange peel? Marzipan? Gorgeous texture with a sumptuous, rich, rounded profile; juicy malt and dried fruit characteristics are delivered on a bed of feathery spices. Some late sweet oak input. Like the other Armorik whiskies, this is both complex and beautifully integrated. 46% Alc./Vol.

    Other reviews... Seaweed piled in a beach bonfire, Keemun tea, hide-covered tomes, and toffee apples. Soupy, salty smoke without the heat on this dram, which was matured for 6 years in first-fill oloroso. The flavors bring an array of apple peelings, cough sweets, aniseed, and roasted sesame seed before developing some savory elements of roast pork. A spicy tingle takes you through to the finish. Water coaxes out apple jelly and pear notes. (1,000 bottles)

    Le Baron Des Spirits is offering Australia the chance to taste a unique, limited edition cask of Brittany's Armorik Single Malt whisky. To introduce the special release its native French maker, Armorik General Manager and whisky craftsman of Distillerie Warenghem, David Roussier, visited Australian shores for the very first time.

    Le Baron cast a vote late last year after calling on the community of local whisky lovers to choose a favourite from three preselected special casks. Amongst the three were a Vinho and a Port cask - but it was the Sauternes cask, used to age sweet white wine from Bordeaux that came out on top as the winner. It was also the star of the seven exclusive tastings with Armorik hosted by master David Roussier around Australia.

    Distilled in August 2006, this along with recent bottlings from Glanna ar Morr mark Brittany as the new Tasmania on the world whisky map. The collector incentive is obvious, but we'd rather see this gets appreciated for what it is. Needless to say, stocks are extremely limited.

    Tasting note: Peated to 10-12 ppm and aged entirely in a Sauternes cask. Pure gold. Momentarily off-key aromas recover with penetrating vanilla fudge and ginger cake over rustic scents of straw bail, damp earth, evolving to lanolin and wet wool. Within 2-3 minutes the aromatic focus shifts towards orange peel-freshness mingling with fruit'n'nut chocolate, especially hazelnut, then a sweeter, deeper core of marmalade or fig paste. Full bodied with a gristy, gingery warmth to the delivery. Brimming with flavours of dark chocolate, burnt orange and thick malt. Peppery then firmer to finish with stewed apple / smokey citrus. Lanolin and lucerne bail later in the fade as the farmyard aspect repeats. References Longrow or the peatiest incarnations of Bunnahabhain. A malt of substantial presence and complexity. Just gets better and better... 56% Alc./Vol. 250 bottles.

Full bodied and zesty, there's a grassy edge to the delivery which bristles with barley and fresh oak through to the lipsmacking finish.     A new Akashi matured in American oak Japanese Shochu casks for around two years, then aged in bourbon casks before finishing in sherry casks for twelve months. The resulting whisky is said to have a fruity and slightly sweet nose, the palate is fresh with oak, and hints of peat with a spicy and sweet finish. It's reported to be the only whisky in the world that is made by a Toji (sake master) by implementing sake-making methodologies into the whisky making process. 40% Alc./Vol.

    An Akashi matured for five years in a first fill Bourbon barrel before being bottled at 50% ABV. Expect some attractive American oak notes like baked apple and vanilla. It comes non chill filtered with no added colour. 

    Other reviews... Will these be a vanilla bomb? Let’s see… Colour: straw. Nose: typical vanilla and limoncello plus acacia honey and butterscotch that are to be found in any unpeated malt whisky that are ex-first-fill bourbon. It’s simple, it’s nice, and it’s sparing us any dreadful coconut notes. Perhaps just one coconut ball, and a wee bit of candyfloss. With water: a few metallic touches coming out. Copper coins, touches of angelica, perhaps a little rhubarb wine… Mouth (neat): yeah, exactly, sweet malt, vanilla, marshmallows, butterscotch, sunflower oil and baked apples. Good and simple, simply good. With water: pretty much the same, only with more oak. A feeling of sweet sawdust, cinnamon, lemon drops… Finish: rather long, still rather simple, but with more white pepper from the barrel. A touch of strawberry jam, perhaps. Comments: simple pleasures. Good, easy whisky, perhaps lacking a few more ‘asperities’, as we sometimes say. 80 points - whiskyfun.com

    White Oak Distillery have released two new limited editions for 2020 to celebrate the 101st anniversary of their licence to distill. It's not the first time the distillery has highlighted the fact that they were licensed before Kotobukiya (Suntory) and Nikka. However they didn't actually build Japan's first whisky distillery. That was left to Yamazaki.

    White Oaks new blend and single malt are both sherry matured and named after the parent company. Suitably, the presentation is reminiscent of a century ago, featuring the old Eigashima logo and trademark. The malt is made from 100% UK barley and is a vatting of whiskies distilled between 2009 and 2014. The result is non chill filtered and bottled at 50% Alc./Vol.

    Located in the city of Akashi in Hyogo Prefecture, west of Kobe, the White Oak distillery was founded by Eigashima Shuzo - a Sake and Shochu producer since 1888. Despite an early license to manufacture whisky, it was only when the company moved to their current facilities in 1984 that White Oak Distillery was born. The stills here are in operation for just a few month’s of the year, so production is minuscule. Since 2017 Eigashima ceased making Shochu to re-focus their energy into making whisky. They're now working six days a week from April through to July in order to maximise output. Currently there are around 1200 casks ageing at White Oak, the oldest stocks being around eight years old. Most of the maturation is done in first fill Bourbon casks (ex Wild Turkey) and new Sherry casks. However, the warehouse holds everything from refill American to re-charred Shochu casks, Cognac casks, Tequila Casks and even some very special locally coopered casks made from Konara - often reserved for ageing Shochu.

    Like every other whisky-making country, Japan now produces a wide range of styles, from sherry to bourbon cask matured to peated and cask strength expressions. In short, expect diversity, and a few surprises along the way.

    One should also keep in mind that the Japanese whisky industry is not highly regulated. For example, their whiskies can and do combine malt whisky from Scotland with Japanese whisky. This is not an uncommon practice in Japan, and often the exact breakdown remains undisclosed.

    Akashi do not obfuscate about the contents. They are more open than most. For instance, they state on their labels (in Japanese) the breakdown. Some of their products are composed of local and imported (ie. non-Japanese) malt whisky combined with a high proportion of molasses spirit (some of which has been stored in barrels).

    While we're not certain of the breakdown of the Akashi Red, we do know it's a malt and grain blend, and likely a young to very young whisky - which is not surprising given the price point. Regardless, the proof is in the pudding. Taste-wise, we think this is one Japanese blend that sits comfortably alongside many a Scottish equivalent.

    Tasting note: Brilliant brassy gold. Nosing finds a pleasing balance of fruity malt, vanilla and sweet grain-cereal notes. Surprisngly flavoursome, with a medium bodied, rounded, supple mouthfeel and delicate dried fruit / orchard fruit flavours. Some sherry input? Drying vanilla oak balances the malty middle. Kind of like a young Ben Nevis. This may well exceed your expectations for entry level Japanese. 40% Alc./Vol.

    Other reviews... Nose: The colour is honey and the nose follows suit. Is this only 5 years old? No roughness at all! Also soft oak, tinned apricots, pear, treacle and fresh dough. Smooth and balanced. Palate: Honey and treacle on crumpets, soft oak, pear, dough, nutmeg and ginger. Finish: Nicely spicy, yet also creamy, with good length. Some mineral-like qualities and lingering.........lingering smoke. Where did that come from? General Comment: Really fantastic for the age. This is a working distillery so I wish these guys all the best. From what I've tasted they have a big future if they can get their product out and don't go the way of the Dodo. Extra note: I've had this bottle open now for a few days since writing this review and the smoke that revealed itself on the finish is now starting to on the nose as well.     The small scale White Oak Distillery in Akashi is part of the Eigashima Shuzo company (founded in 1888), best known for its sake and shochu production. Given its history, it's not surprising that they've decided to mature whisky in x-sake barrels. These casks are relatively unusual (sake typically isn't aged for long, and when it is aged, it's rarely in oak). So, quite possibly Akashi are offering the only whisky in the world to have been aged in American oak x sake casks. We've received a very small allocation. 50% Alc./Vol. Non chill filtered.

Don't be fooled by the 3 year aging -- it's already quite amazing where it is. 50% abv isn't absurdly high but I did find this one better with a couple drops of water.     Highly allocated in the USA, this will be remembered as one of the more sought-after high end Bourbon discoveries for the year. We say 'discoveries' because at the time of writing, the latest Batch Proof release was March 2021 (the inaugural release was 2018). A 2022 edition is imminent. But uncovering back vintages is a bit like digging for gold. If you had your pick over any in the Batch Proof series to date, it's got to be the 2019 - It was the batch named #6 in Whisky Advocate's Top 20 Whiskies for 2019. Given the number of submissions the magazine reviews annually, including comprehensive coverage of the North American scene, that's a significant achievement. The whiskey was snapped up in the US, fast. To our knowledge, Brown-Forman's Australian allocations were completely neglected, so this will be the 'missing link' in many collections. Now selling for up to US$400 on the secondary market, Bourbon speculators who are quick on the draw will hit instant pay dirt.

    For drinkers, if you enjoy the entry-level Woodfords but are new to the Batch Proof series, the mash bill (72% corn, 18% rye, and 10% malted barley) is the same as the standard 90.4 proof Reserve bottlings. As are the barrels, only they're batched and bottled at natural strength rather than being proofed down. Uncut and unfiltered at 61.6%, the 2019 release is a massive step up from Woodford's more generic lines, so it’s going to be a shift in flavour. Says Assistant Master Distiller, Elizabeth McCall, "Whenever I taste Woodford Reserve straight out of the barrel it’s always going to be bigger on your spice notes. The sweet aromatics are going to be your rich chocolates and some of those caramels coming through nicely and then your fruit notes are going to be very prominent and then the water is what brings out some of those floral and more delicate taste notes.”

    As one of the last major high proof holdouts, Master Distiller Chris Morris explains the rationale for finally entering the cask strength market: “Most people do not get to experience the intensity of the aromas and the smoothness of the whiskey at a higher proof point.     Other reviews... Known for pushing boundaries, the Woodford Reserve Master’s Collection series has been a mixed bag over the years. With Batch Proof, Woodford literally plays to its strength. This bourbon takes the same mashbill, flavor profile, and beautiful blending that makes up the standard 90.4-proof Woodford Reserve, and ups the intensity to 123.2 proof, uncut and unfiltered. “Batch Proof” is Woodford’s answer to other distilleries’ single-barrel products.     ...The first vintage Suntory Yamazaki offered in the U.S. A portion of this whisky is aged in Japanese oak. Heavy aroma, with lush sherried fruit and deep juicy oak, marrying with firmly dry and spicy oak resin (the Japanese oak influence is obvious). This same profile follows through on the palate: ripe berried fruit, raisin, blackberry jam, plum spiced with cinnamon, vanilla spearmint, roasted nuts and gripping leather. All this, lying on a bed of molasses and toffee. The Japanese oak really kicks in on the invigoratingly spicy, warm, resinous finish.     ‘Yamazakura’ is a relatively new brand in the Sasanokawa portfolio, a Japanese spirits company dating back to 1765 that makes sake and schochu. Based in the city of Koriyama (Fukushima prefecture) they expanded into whisky in the 1940s, long before the start of Japan's whisky boom. This represents a high-end complement to their entry level whisky range ('Yama' means 'mountain' and 'Sakura' means cherry tree, hence the label design).

    Previously exclusive to Japan, Sasanokawa recently teamed up with 'Les Whiskies du Monde' to expand their distribution. This blend is reportedly composed of four malt whiskies (of undisclosed provenance) as well as some grain whisky, so Sasanokawa is akin to an N.D.P. or "Non Distiller Producer", rather than distilling the whisky themselves. 40% Alc./Vol.

    'Yushan' will be a new name to many whisky lovers. Situated in Nantou Hsien in Eastern Taiwan, it's produced by Nantou Distillery which actually pre-dates the country's current darling, Kavalan, having been founded by the Taiwan Tobacco & Liquor Corporation way back in 1978. The State-owned manufacturer actually operates seven distilleries, but only Nantou makes whisky. The brand's obscurity is partly due to the fact that whisky production only commenced there in 2008. Initially the mash was sourced from a nearby brewery. In 2010, Nantou installed its own 15,000 litre capacity German mash tun and wash backs. Currently four stills operate, manufactured by Forsyths of Rothes in Speyside, and the owners are looking to expand further. An on-site racked warehouse capable of storing 4,500 casks is complemented by a fresh underground water supply. The distillery also produce a selection of lychee and plum wines, and some of the barrels are used to finish their malt, sold under the brand name 'Omar' since 2013.

    Named after Taiwan's highest mountain, the Yushan label is actually a sub-brand, primarily intended for the European market. At the time of writing, it includes one blended malt and three singles - Sherry, Bourbon and Smoky. These make up the current shipment. While there aren't many professional tasting notes to date, bloggers and customer reviews are positive about the entire collection. See below for one.

    Other reviews... Vanilla and oak have a floral quality on the nose. Just as pretty on the palate, there is a gentle spice that entangles with deeply rich toasted oak and sweet cereal grains.     ...Oh, boy! This nose is quite appealing. Much better than the Omar I tried last year. Sweet malt, vanilla, butter, white fruit and coconut wrapped in white chocolate. Fresh. What a pleasant surprise. Where last year’s Omar was almost watery, this is very creamy. Fresh and fruit, mildly spicy. Again white fruit, but now with more coconut and touches of lime. Or yuzu. Lots of honey. Spice-wise it is all on the soft side, but I do detect some white pepper and ginger. Hint of nutmeg. The finish is medium long, sweet at the death and simply pleasant.     Where Bols, Filliers and Bokma have become household names in Dutch spirits and liqueurs, you can now add another: 'Zuidam'. By European standards, this project is very, very young - only reconciled by a precociousness that seems to flaunt five centuries of distilling history.

    In 1975, Fred van Zuidam and wife, Helene, opened a deliberately contained operation with one small copper still. That modest initiative now turns out a staggering 600 products, including liqueurs, genevers and new world style gins. And with help from their sons, they've recently turned to making whisky in a serious way.

    Described as "a distilling geek" and characterised by his frank and pragmatic attitude, Patrick Zuidam supervises the operation. With his brother Gilbert, the pair have progressively upgraded to four new copper stills, over 1000 oak barrels (typically American oak as well as x-Bourbon and Oloroso Sherry) and four production lines and modern tank storage facilities.

    In line with other distilleries who have responded to one of the fastest growing segments of the whisky category, Zuidam began work on a peated version of their malt over a decade ago. Aged for a minimum of five years in new American oak barrels and with phenols around 20-25 ppm, the peated version of Millstone whisky hit the market in 2010, winning a silver medal in the International Spirits Challenge in London in 2011. The use of new barrels and the fact that they're stored in a warm and dry warehouse ensures that the whisky ages relatively quickly. 
Expect rich tones of fruit (orange and banana), cinnamon, cloves and honey combined with vanilla and toffee on a foundation of soft smoke.

    Tasting note: Brilliant gold. Enticing spiced apple, nashi pear opening sniffs are distinctive and unexpected. Smoke enters as soft puffs of pipe tobacco with further exposure adding bubble gum, fruit mince pie and finally light lanolin. Medium bodied; hints at wet wool and herb infused honey (lavender?) No peat bomb. Pulls up slightly short, but the nose unfolds in a fascinating way. 40% Alc./Vol.

    One of the Zuidam family's favourite whiskies, this Millstone matures in first-refill American oak before a twelve month spell in French oak. A spice pantry nose suggests ginger biscuits, fruit mince pie and hints of orange zest, reflected on the palate in a nicely-rounded, medium bodied delivery; Quaffability is the keyword here. Overall, this is one of Zuidam's most relaxed whiskies - teaming wood spices only slightly knocking the balance out at the finish. 40% Alc./Vol.

    Described by Zuidam as the most robust whisky in the Millstone line up. A young Bourbon-like bouquet evokes gobstoppers, vanilla malt and cinnamon buns, but gets more malty and 'mature' with time in the glass. Packs decent weight given the middling ABV, starting out dry and brittle, developing with budding spices and ending with delicious oak-barley integration.     Where Bols, Filliers and Bokma have become household names in Dutch spirits and liqueurs, you can now add another: 'Zuidam'. By European standards, this project is very, very young - only reconciled by a precociousness that seems to flaunt five centuries of distilling history. 

    In 1975, Fred van Zuidam and wife, Helene, opened a deliberately contained operation with one small copper still. That modest initiative now turns out a staggering 600 products, including liqueurs, genevers and new world style gins. And with help from their sons, they've recently turned to making whisky in a serious way.

    Described as "a distilling geek"and characterised by his frank and pragmatic attitude, Patrick Zuidam supervises the operation. With his brother Gilbert, the pair have progressively upgraded to four brand new copper stills, over 1000 oak barrels (typically American oak as well as x-Bourbon and Oloroso Sherry), four production lines and modern tank storage facilities topped off with a curious throwback from the past.

    "It might seem like a gimmick", says Patrick, "but the truth is that when I took over here I wanted to introduce a new genever but there was absolutely no money. I asked a local miller if he would do it cheap and he said he would do it free in return for a bottle of genever. We now use seven local windmills."
    While it preserves an iconic piece of Dutch heritage, Patrick admits " it's a big job because you can't drive a truck to the windmill because it's up a hill. Every bag of barley must be carried up and back again".

    The millers believe that the traditional slow grind causes almost no increase in the temperature of the barley and thus helps preserve the grain's wonderful aromas. Patrick is less convinced, "It's a good story, and a nice local angle. But if I'm honest with you, I don't believe a word of it."

    Zuidam presently produce peated and unpeated malt as well as rye.
    Spirits writer, Dominic Roskrow, who visited the distillery in 2012 recognised the latter as a significant testimony to the dogged expertise and determination exhibited here.

    "It takes a huge amount of skill to make rye whisky" explains Roskrow. "It tests distilling skills to the limit. Rye is notoriously difficult to malt, and it doesn't convert sugars to alcohols without a fight, either. Most rye whisky will be made with a proportion of malted barley to help the conversion process. You can make 100 per cent malted rye whisky, but be prepared for a struggle".

    Patrick acknowledges the challenge: "I really like the taste of the rye whisky, which has a velvety side to it unlike American rye whiskeys. But it's a hard grain to distill." he says. " The mash goes thick like wallpaper paste and has the same oily texture. If it ferments too quickly big bubbles of carbon dioxide explode up, sending this thick substance all over the place so you have to wade through it. It takes some cleaning up."

    Because they use only new and/or once used barrels, and they store the barrels in a warm warehouse, the whisky ages rather quickly but the results are self-evident. While there are other upstarts in the Netherlands, so far Zuidam is arguably the only one that counts. This expression is a sensational 100% Rye based whisky, bottled at 100 proof, and aged in 100% New American oak -  do you sense a theme here?

    Tasting note: [Jan 2004 Distillation, tasted from a near empty bottle.] Deep polished copper. A slightly botanical opening is followed by a fantastic rye bouquet that's increasingly pure and dense; it excites the senses with ryvita biscuit and honey notes, gaining hints of dried apple and a wonderful white pepper overlay. Almost crunchy in the mouth with a text book delivery of rye soaked oak and a superb ginger bread, dried apple and peppermint surge to finish. The oak peeks through at the fade but rye in its purest form is the main feature here. Coming as a complete surprise from the Netherlands, it ranks as one of the very best examples in its genre tasted to date. Outstanding. 50% Alc./Vol.

    Other reviews...The IMAX of rye. Zuidam Distillers seem to have intensified every aspect of this small batch 100% rye. The plum is fresher, juicier even, the spices more assertive. There’s more creaminess, fruit skin piquancy, slabs of chocolate, allspice, ground cinnamon, and a greater rye character by far. This thumps the tongue hard, delivering quite an experience.     ...the rye fair cracks against the teeth with added Demerara flintiness. Salivating, rye-fruity and simply pulses with that forceful grain; the small still oils accumulate to form a thickening backdrop.     The Zuidam Distillery was started back in 1975 by Fred van Zuidam as a deliberately contained operation with one small copper still. It took more than a decade to forge their present reputation as the finest distillery in the Netherlands. In 1989 Zuidam expanded their warehouse to 600 square meters and one production line. Presently, both sons, Patrick and Gilbert, run the distillery under the watchful eyes of their parents. With four brand new copper stills, over 1000 oak barrels, four production lines and modern tank storage, Zuidam is now a state of the art operation, however, they have held on to one throwback from the past - Windmills. These are used to mill the malted barley destined for their Malt Whisky.     Tasting note: Deep amber / gold. Butter menthol / barley sugar lozenge in the opening pass. Vaguely grassy? Wafer biscuit? Three or four minutes draws out a sweet spot as the Sherry blossoms and finally you get it: Pure, elegant, nutty malt delivered with a soft touch. The sophisticated restraint continues in the mouth, being fresh rather than sweet, middle weighted, with a nutty, dried fruit, almond biscotti kind of profile, and gorgeous feathery spices fanning out the finish. Vanilla and fruit cake dissolve in the fade. Deceptively long. Beautiful whisky. 46% Alc./Vol.

    Other reviews... Near perfect on the sweet-dry balance; fresh lively grape, slowly infiltrated by much heavier and drier tannins....Decidedly raisin shortcake biscuit on the finale; after last year's disappointing sherry bottling, thought I'd need some Dutch courage to tackle this one. But, instead, an excellent cask at work here which ensures an overflow of character. Just underlines the difference between putting a good quality spirit into a less than impressive cask or filling into top quality oak. So, so elegant.

    [1999 distillation] ...I liked Millstone’s rye very much. Now, how a 1999/2013 could become a 12 years old, I don’t quite know - but we've seen that done elsewhere (at Balvenie, for example). Colour: dark gold. Nose: ho-ho! This one does not nose like any unlikely ‘foreign’ malt, it’s as high in fruits as one of the best Benriachs or Littlemills, if that says something to you. Very impressive, everything is just perfect in this nose, the milk chocolate, the pink grapefruits, the passion fruits, the golden raisins, the touches of cappuccino, the very elegant maltiness... Mouth: oh yes! I’m speechless, I knew of Zuidam but only by name, I just didn’t know that they were making ‘Scotch-like’ wonders. Prejudices prejudices… A great fruit salad with apples and oranges first, then mangos, bananas and many other fruits. Finish: long, fresh, clean, just a tad yeastier. Pencil shavings in the aftertaste. Comments: had I tried this blind, I’d have said ‘it’s an unusual Littlemill’. Only the finish was a little less to my liking. 86 points - whiskyfun.com
