Second pass accents apple pie and shortbread as the aroma builds. Excellent concentration and balance, with juicy stewed pear, sweet spice and gobstopper followed by hints of marshmallow in the aftertaste. Ends dry, vibrant, pure and just plain delicious!     ...Perfect for drinkers with a Goldilocks complex, this falls between the lemon-favoring 12 year old, and the richer, sherry finished 16 year old, with a nose of sweet mandarin, tropical fruits, fruit pastries, warm banana muffin, barley sugar, and forest honey.     Like Lambay's Small Batch Blend, this whiskey is independently sourced, triple distilled and first matured in ex- Bourbon casks before being finished in hand-selected cognac casks from the famous cognac house 'Camus'. Produced from 100% unpeated Irish single malt from one single distiller, these casks spend a longer time (up to 4 months) in the cognac cask absorbing a deeper concentration of cognac notes to add fruit and spice. On Lambay Island casks lay exposed to the sea air on the western shore and producers claim that here, the whiskey picks up notes of iodine, seaweed and salt via the maritime winds and sea spray, adding a subtle briny / salty note to the spirit.

    Tasting note: Brilliant gold. An attractive mix of ripe fruits (peach, pear, banana?) Further air contact draws out hints of cinnamon doughnut, beeswax and vanilla. Fuller, richer and more rounded than the blended Lambay, this is deliciously creamy through the mid palate with stewed apple and sweet spice flavours followed by hints of dried banana and milk chocolate in the aftertaste. Length, balance and texture all nicely captured here. Lovely Irish. 40% Alc./Vol.

    Other reviews… Brilliant delivery... arrives in a myriad of waves. Excellent juiciness and gristy sugars leading into a delicate fruit note. The oak and barley balance can hardly be bettered... Magnificent up until the point of the late finish when things become a little too bitter for their own good. That apart, stunning.

    Spicier and darker than their blend, this delivers heather honey, banana peel, cashew, pepper, ground coriander, and bay leaf. Quite light-bodied and delicate to begin with, but the Cognac cask adds fruitiness and greater complexity. Sugary sweet, with tingly spices, honey, cracked black pepper, clove-studded oranges, and tangy marmalade. A finish of bitter orange, pepper, and fondant cream makes this a worthy addition to the Cognac cask revival.

    Often considered the pinnacle of Irish Whiskey, another vintage of this collectable release has arrived in Australia. This is the 36th edition and stocks are well down on last years. The 2019 bottling is composed of hand-selected single pot still and single grain whiskeys, each of which have been matured in lightly-charred, ex-bourbon American oak barrels for between 12 and 28 years.

    Other reviews... A classic with its nose of toffee, vanilla, treacle tarts, and fragrant pot still spices. Initially, flavors of green apple, red fruits, toffee, nimble spices, caramel, and vanilla before a minty master class: rubbed mint leaves become peppermint, developing into After Eight mints, then cool mints. Taste for a minute or more for the full experience. The smooth finish has clove, pepper, and bitter dark chocolate. Collectibles.

    An exclusive for French retailer, La Maison du Whisky, drawn from Oloroso cask #21285 after 21 years and bottled at natural strength as part of their Antipodean Collection. 546 bottles were produced. The sherry input is said to be quite profound, similar to what you'd expect from heavily sherried Scottish equivalents. 58.7% Alc./Vol. Non chill filtered. Collectable.

    Other reviews... Colour: reddish amber. Nose: perhaps a tad hot, but you already get a splendid, tobacco-y sherry, with dried oranges and clove plus juicy ripe apricots and nectarines in the back. Yet I feel water is mandatory. With water: roasted pecans, walnuts and sesame; that's game, set and match. Mouth (neat): I'm not sure it would be very smart to mention old-style Macallan. Oops, too late. Pleasantly a little 'over the top', with very rich prunes in armagnac, pipe tobacco, cherry jam (you may check Itxassou in French Basque country), black raisins, ganaches, the obligatory old walnuts… Isn't this actually an old Ténarèze? Do Pernod-Ricard own some armagnac house(s)? With water: civilisation, at last. Seriously, this would gather many jams and pastries, let's mention only one, perhaps Arctic rolls? Or raspberry muffins? Marzipan-filled dates? Fig jam? Finish: long. This time again, I'm reminded of that cherry-flavoured pipe tobacco that we used to smoke… what, forty years ago. A new multi-vintage core expression of independent Irish single malt compiled from a vatting of whiskey finished variously in port, sherry, white burgundy, cabernet sauvignon, and Madeira. The nose suggests honey, baked lemons, ground almonds, desiccated coconut, white pepper, and soft toffee. A fabulously thick texture; thank goodness for their insistence on non-chill filtering.     Long sold out, we've secured a bottle of this venerable Teeling from a private collection. After a lengthy spell in Bourbon barrels it spent an additional 18 months in x-Madeira casks. Released in late 2019, it's the first limited edition in the Renaissance series, limited to 9,000 bottles globally. 46% Alc./Vol. Non chill filtered.
    Notes from the producers... Nose: Ripe red fruits, figs, cinnamon and toffee. Palate: Silky richness accompanied by toffee apple, dried fruits and rosewater notes with cinnamon and clove spice on the tongue. Finish: Dry finish, with a return of the spices and hints of maraschino cherry.

    Other reviews... Sourcing Pedro Ximénez casks used since 1918 at a bodega in Jerez, Teeling left this whiskey to finish for 3 years. A bouquet of sweet red apple, black grape, dried fruits, and blueberry, with sweet roasted cashews, dry spices, and a slight herbal edge. Blue fruits, plum, cinnamon, and bitter chocolate are harried ferociously by spicy peppercorn, leaving a finish of bruised orchard fruit. Add water and the fruit really shines. (10,000 bottles)

    ...We haven’t tried #02, but we thought #01 had been pretty pretty good. What’s more, it’s perfect that they would have added the age statement this time, while since the finishing period in PX lasted for 3 long years (in whisky making, years are always longer), this is more double-maturation than a simple finishing. All cleared then, let’s proceed… Colour: gold. Nose: it’s absolutely not one of those hastily PX-ed whiskies that are invading our shelves, with rather some perfect walnut cake, a rum-raisin combo, a rather lovely kind of earthiness that you would also find in some high-end pipe tobaccos or teas, and then a feeling of prunes soaked in old armagnac. That’s all pretty ‘meta’, with this impression of whiskey – rum – brandy blend that would just work in this case. It’s even a little troubling, shall we say, but will this happen on the palate as well? Mouth: clearly and purely Irish this time, the whisky’s won it, with the usual and much expected tropical fruits, mangos, then rather tarte tatin and mirabelle jam. A handful of sultanas too, then a touch of hops and flowery/fruity herbal tea. More leaves and grass appearing after a short while, together with touches of cloves, caraway and nutmeg. Notes of proper old PX. Finish: rather medium, with some muscovado sugar, more cloves, and our friends the ripe mirabelles. Leafier aftertaste (tea). Comments: just excellent. Great work with ‘proper’ PX, I think, with even a wee feeling of V.O.R.S. that I just forgot to mention before. 87 points - whiskyfun.com

    Teeling collaborated with famous South Australian winemakers, Jim Barry to create a limited edition Irish malt finished in the winery's casks that previously held their flagship "Armagh' Shiraz. Bottled in 2018, it was the first ever Irish Whiskey to be matured in Australian Shiraz barrels and was limited to just 2000 bottles.     A triple distilled whiskey that's aged in a combination of bourbon and oloroso sherry casks.

    Tasting note: [Batch 1916/2016] Some sediment evident in the brassy-gold appearance. There's an attractive spicy fruit-cake integration into the classic pot still profile. Air contact draws out a spirity, brittle edge to the malt. Third pass finds the intensity drop several notches, revealing light orchard fruits, vanilla cream biscuits and slight caramel. Light weighted, but the oils add body to what is a distinctive Irish profile: Sherried vanilla meets a chocolate box of fruity cocoa in the aftertaste. 40% Alc./Vol.

    Other reviews... [Batch 1703/2013] The Walsh Family releases 6,000 bottles in every small batch of their single malt. Each bottling is a combination of triple distilled whiskey matured in oloroso sherry and bourbon casks. The nose is bright with vanilla icing, butterscotch, and dried peach. The taste is quite active, with honey, cinnamon, gingerbread, ground almond, and dark chocolate. There is a brief flat spot where the bitterness burns through, before it fades to leave a pleasing tickle around the gums. 85 points

    A 70% single malt whiskey and 30% single pot still whiskey which is triple distilled, followed by ageing in bourbon casks.

    Tasting note: Polished copper. Quite shy in the opening stages, gradually releasing aromas of wood shavings, black peppercorns and after ample aeration, sweet yet understated scents of gobstopper, fresh sawn American oak and dried apple. Breezy, middle weighted palate offers suggestions of oatmeal, honey, caramel and cream tea biscuits followed by a medium long, gently warming, drying aftertaste. 40% Alc./Vol.

    Other reviews... This is a 70/30 blend of aged single malt whiskey and single pot still whiskey (though no grain whiskey), matured in bourbon barrels for around 7 to 9 years. Revel in the spicy aromas of clove, cinnamon, and star anise balanced with green apple, blossom honey, and dry, oily vanilla pods. The mouthfeel is weighty and dense from the pot still, yet rich in honey, spice, and vanilla, with a tongue-enveloping finish of custard cream biscuits.

    Hailing from Bushmill's territory in Northern Ireland, this smooth and delicate Irish single has been re-casked and finished in Niche Drinks' own fresh Bourbon barrels. Named after the father of founder, Ciaran Mulgrew, he writes: "Now that I am making my own whiskey, I am naming it after my father. As a bartender he saw a lot of things and heard a lot of stories, but like all good bartenders, he was true to his code and told no tales. My father, John Mulgrew, “The Quiet Man”, or as they say in Ireland “An Fear Ciuin.”

    ...Again, triple distilled pot still whiskey, but here it’s all malted barley. Also aged in first-fill bourbon barrels. This single malt still drinks with the exuberance of youth while avoiding coming across as specifically young. On the nose, heavier notes of honey, some orange peel, and a smattering of flowers give the whiskey immediate appeal. The body showcases considerable depth and power, offering an unctuous, mouth-filling grip that leads to a rich palate of toasty grains, caramel sauce, milk chocolate, and baking spice. The finish plays up the wood and toasted grain notes, which can get a little blunt at times (at 12 years, this whiskey would probably be a knockout), but even though it’s hanging on to its youth, it does manage to take its traditional Irish character and elevate it with a surprising density that many Irish whiskeys seem to lack. - drinkhacker.com

    Tasting note: Whistler's 'all natural' edition has a tell-tale cask strength nose feel - prickly, vapoury alcohol and bittersweet notes of orange zest settle into old leather, Christmas pudding, chocolate box and caramel fudge. The fruity malt seems more Bourbon-soaked than the nose. After the initial attack, Oloroso peeks through in a thick, oily, warming, gently bitter surge. The spicy finish turns fruity with plum then banana bread late in the the aftertaste. Big Irish. Experiment with a few drops of water. Non chill filtered. 59% Alc./Vol.

    Other reviews... This dials up the aromas so high it could freshen up a stadium. After a riot of bright fruits, paradise slice, nutmeg, cinnamon, dates, and raisin, the palate becomes awash with apple and rose hip, though the strength makes it a wild ride, the tongue is conquered into submission. Diluted, it shines with vanilla sponge cake, plum, malt, and spicy nutmeg. Beautiful whiskey, just needs to be pegged back a bit. 89 points

    Jennifer Nickerson, Stuart Nickerson and Liam Ahearn founded Tipperary Boutique Distillery Limited in 2014. They've spent the past few years releasing independently bottled malts, however, their Ballindoney Farm distillery is now operational, and debuted its own release in November 2020. There's full transparency on the label - in this case, the grain was harvested from a single field of Olympus barley sown in 2016. If you want more information, the strain, planting time and conditions, soil elements, etc are all detailed and available via a back label QR code.     Comes with a very William-Grant-ish cask-strength look-alike A.B.V. Come on, 41.3%, that’s just like 40%, is it not. This was matured in bourbon, sherry, port and madeira. Madeira can work very well, let’s see… Colour: gold. Nose: pear cake, melon cream, preserved peaches, custard, acacia honey, tinned litchis, and a drop of gewurztraminer. Not a bad combo, I have to say. Mouth: good. IPA and the same flavours that we found on the nose, that is to say (I’m copy-and-pasting) pear cake, melon cream, preserved peaches, custard, acacia honey, tinned litchis, and a drop of gewurztraminer (S., you lazy piece of a so-called whisky blogger!) Finish: good but a little too short, and probably a little too sweet, as if some syrup was added, which cannot be the case. Very sweet malmsey? Comments: certainly a good drop! Smooth, yet thick and mouth-drawing; black fruits, treacle, wrinkled vanilla pods, chocolate chip muffins, and sticky dates.     Tasting note: Very pale gold appearance. Moderate aromatics reveal initial hints of marzipan and caramel. Not the most distinctive port finished nose but surprises after brief aeration becoming fresher, richer and more stone fruit like (ripe pear) as the whisky shines through. The soft, seductive texture is immediate upon entry, continuing through to a classically styled, robust Pure Pot Still-like profile that melds fruit and sweet spices, finishing honeyed yet dry and exceptionally long. Mouthwatering stuff! 46% Alc./Vol.

    Tasting note: Bright gold with a pale straw hue. Immediately in the sherry mould yielding up pure and rich dried fruit notes accompanied by vanilla, bounty bar and hints of cinnamon. The palate offers more of the same with a medium dry flavour wave of vanilla, juicy dried fruits and a forgivable trace of sulphur. Turns to ginger biscuit and spice towards the finish which is vibrant and clean. A delightful sherry infusion that leaves the whisky shining through. 46% Alc./Vol.

    Tasting note:
    Gold colour with pale straw hue. The plush nose delivers aromas of creme caramel, ripe malt and spice. Exceptionally soft, round palate entry fans out into flavours of sweet dried fruits, cinnamon and clove. Perfect balance, finishing a little short, followed by a progressively drying aftertaste of vanilla wafer biscuit, caramel and honeycombe. Deliciously uncomplicated. 40% Alc./Vol.

Lean and relatively dry through out, yet with good depth, the palate offers a fabulous communion of two genres, especially towards the finish when the dry, salty, nutty qualities of the wine express themselves beyond the spirit. Hints of tropical fruit at the finish add a unique twist. Deliciously different Irish. 46% Alc./Vol.

    Located on the banks of the River Suir on Ireland’s sunny south-eastern coast, Waterford is a 'reclaimed' state-of-the-art facility originally built by Diageo in 2004. With x-Bruichladdich creative, Mark Reynier at the helm, the first spirit dropped from the stills in January 2016. 'Wilkinstown' is yet another addition to the Single Farm Origins Series, emphasising provenance and terroir. In this expression all the barley comes from Ger Kelly’s 'Wilkinstown farm' - a flat terrain, characterised by an estuary and influenced by a maritime microclimate. If you've been following this series, it's unusual to find this edition in Australia. It was originally released in 2021 as a Netherlands exclusive. 50% Alc./Vol. Non chill filtered.     Notes from the producers... Nose: brown sugar, coffee beans, liquorice, honey, malt, sage, old leather, dried flowers, green vegetables, red apple, coconut, lavender and a hint of dryness.     Whisky lovers will recall Mark Reynier as the resurrector of Islay’s now hugely successful Bruichladdich distillery. Reynier remains terroir obsessed and a true believer of transparency in whisky-making. His enthusiasm for the industry has not waned. Since 2014 he has devoted his energies to Waterford Distillery, housed in what was the world-famous Guinness Brewery, built by Diageo on the banks of the River Suir in Ireland's southeast. When Diageo sold the site, they left a state of art hydromill and mashfilter - equipment suited to getting magical flavours out of beer. Unlike traditional mills, the hydromill uses a wet grinding technique as mashing naturally starts which gets the best out of the wort.

    Reynier's Waterford collection pays close attention to the provenance of barley, working with 72 different Irish farms – some organic, some biodynamic. The inaugural releases have been much-anticipated. Given the creative forces behind the project, some pundits are already tipping Waterford to be the next ‘big thing’ in highly collectable whisky. Whether you take that seriously or not, you can believe Reynier when he says “We will make the best single malt whisky in the world.”

    These are 'Single Farm Origin' whiskies showcasing the very different flavours of barley from a given terroir and season. Each is matured in different ratios of first-fill American oak, French oak and ex-Vin Doux Naturel fortified wine casks (it should be noted Waterford catalogues all of its sherry casks as VDN, even Oloroso which is strictly not doux). All the whiskies come non chill filtered and bottled at 50% ABV.

    Sheestown Edition 1.2 was distilled from Irina barley grown by Phillip O’Brien just outside Kilkenny and bottled without colouring, chill-filtration or additives. Approximately 9,000 bottles were released, of which very few made are yet to make their way over the Irish Sea.

    Other reviews... [Edition 1.1 tasted] Plenty of barley husks on the nose, with a whiff of porridge, and some light notes of marzipan and vanilla. Somewhat yeasty with hints of moss too. The palate is quite oily with a nice mixture of floral notes, strawberries and a good amount of bran. Also notes of apricots, pears and pickled oranges, accompanied by strong breakfast tea and peppercorns. It's undeniably young whisky but the complexity is already there. 90 points - distiller.com

    A first edition, made using barely grown at the ‘Hookhead Farm’. A lighthouse here stands resolute against the full force of the Atlantic Ocean on Ireland’s southern coast, ten miles from the Waterford distillery – so close that Oliver Cromwell vowed to take Waterford 'by hook or by crook' in the 17th century. In its shadow, Martin Foley grows barley on clay/loam soils derived from limestone. Exposed to the full range of salt-laden storms, sea mists & ocean breezes, it’s an extreme maritime terroir.

    Notes from the producers... Appearance: Straw with legs of oils coating the glass. Nose: Earthy maltiness & fresh soil, citrus peel, breadcrust, clove, white pepper, caramel, milk chocolate, salted popcorn, barnyard, oak green foliage. Taste: It's a spice bomb up front; with cloves, white pepper, salted caramel, liquorice, ginger biscuits, lemon zest, & chilli chocolate. Finish: Dry, but it leaves a lasting oiliness that holds the spiciness for a long time. 50% Alc./Vol. Non chill filtered.

    Other reviews... These blue bottles are splendid, once they're empty, for use as decanters during your blind wine tastings. Provided, of course, that the glasses are blue or black as well. But try finding a quality blue or black decanter, good luck with that! Right, we're here with a single farm, with barley harvested in 2015, so this barley has rested for a long time before being brewed and distilled, which shows that a whisky's vintage doesn't really have much to do with the barley's year of harvest, we're not in Cognac. Colour: straw. Nose: as usual with Waterford – usual, a word that demonstrates how well Waterford has already become part of the landscape – we're on bread, cereals, beer, earth. Moist earth, rainwater, baker's yeast, even pizza dough. Irish pizza, naturally. This time, we remain fully focused on these bakery aromas. With a bit of water: a hint of lemon comes through. That always works. Mouth (neat): we'll keep this short and sweet, limoncello biscuits and panettone. Well, after the pizza, here are some other Italian elements. And I'd swear there's also just a hint of spicy salami, I can't remember what they call it on the other side of the Alps. With water: it's more concentrated, more tense, but it remains a very textured and rather rich spirit. I'd like to rub a bit of new make spirit between my fingers, just to see how it behaves... Finish: long, on fresh bread, amaretti (undeniably) and citrus fruits, this time more on clementines than lemons. Saltier coastal touches right at the end. Comments: it's very relatively restrained, not the most expansive Waterford I've ever tasted, but I like this discreet and confident elegance (what?) rather a lot.
