    Launched in March 1018, the second instalment in the Caskmates series follows the success of the Stout Edition. Both start with standard x-Bourbon and Oloroso matured Jameson whiskey as their base before being finished for unspecified periods in x-Jameson beer seasoned barrels - in this case it's IPA (Irish Pale Ale). Despite bottling at an entry level ABV, the series has received unanimous praise. 40% Alc./Vol.

    Other reviews... Hoppy notes cloaking the crisp grains, green apple, and pomelo make for a happier marriage than its stout sibling. This is one of those whiskeys that continuously evolves in the mouth, progressing from a sweet, syrupy beginning of coconut macaroons, apple, and spices, to a creamier plateau of citrus, stewed fruits, and chocolate.     Notes from the producer... Nose: Notes of leather-bound books, bung cloths, and dunnage warehouses are followed by sweeter characteristics of treacle, caramel, and bramble. Palate: On the palate, there are notes of marshmallow and candy floss, with a syrupy mouthfeel and subtle mineral note. The earthy tone from the nose carries through. Finish: Notes of cocoa powder, cappuccino, and mint linger in the finish.

    Dewar’s Master Blender and Malt Master for Aberfeldy, Stephanie Macleod, is also passionate about wine. Marrying her two interests, she set out to see how different red wine casks effect whisky flavour. The first release in the series was a dram finished in Pomerol wine casks from Bordeaux. Subsequent bottlings have followed. This 2022 edition sees Aberfeldy finished in Bolgheri Tuscan red wine casks imparting robust, dark fruit flavours and an intense oak finish to the already fruity malt. Macleod takes a very active role in these maturations, repeatedly monitoring their progress ensuring that the malt doesn't get overwhelmed by red wine character. In this experiment, cherry frangipane and vanilla spice are said to be keynotes. 43% Alc./Vol.

    Other reviews... The casks used in this release came from Bolgheri, a small region of Tuscany. The Tuscan region is typically known for their Chianti wines, though Bolgheri has the distinction of introducing the world’s first “Super Tuscan Wine’. The terrain in Bolgheri is similar to the Bordeaux region in France (rocky limestone near the Tyrrhenian Sea), allowing non-native grapes from France, such as Merlot, Cabernet Sauvignon, and Syrah, to be grown and used in the regions wines. Knowing that the same grapes grow in both France and Italy, its easy to see why Stephanie landed on using casks from the Bolgheri region....The idea to finish malts in red wine casks is an interesting idea, though hard to tell exactly how much it contributed to the final product. While the nose is a dense mess that’s hard to sort through, the palate is warm and inviting, with much complexity. Some water does help to open up the nose and palate, letting the Tuscan cask become more prevalent, yet it still seems like it could pull some more weight. - whiskeyreviewer.com

    Rare Character Whiskey was founded in 2021 by restaurateur, bar owner and spirits expert, Pablo Moix together with brand builder, Peter Nevenglosky. Moix has developed personal relationships within the whiskey industry allowing him access to liquid that would otherwise rarely be bought to the public. Single casks that depart from the mainstream are of primary interest, like this six year and one month old Bourbon matured in a barrel with heavy toasted heads. Bottled under the “Old Mate” label exclusively for Australia, first sniffs leave the impression of creamy soda, vanilla wafers, hazelnut chocolate and oak shavings. At high proof it hits the tongue gracefully with creme brûlée, caramel fudge, oatmeal cookies, honey and sweet vanillas. Sleek, sweet, pure and finely tannic, the quality of the wood shines. Few Bourbons deliver this kind of finesse at natural strength. Distilled and aged in Indiana from a mash bill of 60% corn, 36% rye and 4% malt. Bottled in Kentucky. 58.3% Alc./Vol.

    Notes from the bottlers... Brown sugar, cherry, spice - similar to a classic cherry soda fountain drink. Clove, liquorice, nutmeg, with a touch of citrus and tobacco on the finish. The heavy toast heads add to the richer spice and earthen notes. While typically spice heavy and rye grain forward, the grain has aged out and more of the barrel influence comes forth.

    Rare Character are purveyors of premium American whiskeys tailored to their customers and partners. Bottlings under the Old Mate label represent the first barrel picks to make it out of the USA and are exclusive to Australia. Aged six years nine months - only slightly longer than its sibling Bourbon - this single barrel selection might be initially cagey on the nose but coats the mouth with oily rye, becoming dense, chewy, bittersweet and gently tannic before a slow surge of dark chocolate, peppermint rock candy and dark rye bread. The finish leaves a spicy warmth followed by toasty American oak and hints of caramelised fruits. Distilled and aged in Indiana from a mash bill of 51% corn, 45% rye and 4% malt, this intense but relatively sweet expression maintains controlled tension until the last. Bottled in Kentucky. 57.61% Alc./Vol.

    Notes from the bottlers... Winter mint, leather, brown butter, honey tea, fried dough; light apricot and peach jam on the finish, before rounding out with oak tannins, pepper, and vanilla. This spent a chunk of its life in metal and concrete warehousing; lending to the light tropical fruit and sweet notes, the rye spice is underlying the whole profile for a richer mouthfeel and complexity.

    The Dumangin whiskies follow in the footsteps of French pioneers like Michel Couvreur - only there's another layer of expertise bought to the table. While Gilles Dumangin clearly has a 'magic touch' when it comes to selecting and maturing world class singles and grains, he isn't just a buyer and bottler. He's an acclaimed winemaker applying his know-how. Whiskies arrive in Champagne to complete their maturation in 228 litre barriques in the cellars at Chigny-les-Roses. The Ratafia finishing gives them a distinctive signature: a subtle yet delicious, creamy, fruity twist unique to Champagne.

    Balcones was discovered by Gilles during one of his sales trips. Waco, the town hosting the distillery is subject to an extreme climate. During Gilles’ August visit, the outside temperature was 48°C. As a result, the ageing of whiskies is dramatically sped up compared to cooler climes (five years here is like twelve or fifteen in Scotland). Finished for 21 months in a Ratafia Champenois barrel, batch 023 is a limited run of 265 bottles. 46.7% Alc./Vol. Non chill filtered.

    Notes from the bottlers... Full mouthfeel with sweet tea, burnt marshmallow, cinnamon candies and marmalade with a very long finish with oak and pepper notes, followed by cardamom and roasted sweet corn.

    Other reviews... After years of toiling in the bourbon trade, pitmaster cum whiskey magnate Casey Bringle is off to the world of rye, dropping this 8 year old expression of Peg Leg Porker as his first entry into the category. Made with the classic 95% rye, 5% malted barley mashbill — but in Tennessee, not Indiana — and made with his hickory charcoal finishing process, this is Bringle’s first whiskey release since 2020. How does Peg Leg do in the world of rye? Let’s not dally as we work to find out. The trademark smokiness of Peg Leg Porker bourbon is well in effect here, offering an aromatic combination of barbecue pit smoke, mint, and dry grass — classic rye character filtered unmistakably through the heat of the pit. Some chocolate and nutty elements add more approachability up top, alongside a hint of cherry, heavy on the pit. On the palate, the whiskey’s got plenty of heat, quite drying thanks to its boldly grassy quality and laden with the essence of hay being harvested out in the open field. I wouldn’t say water’s an absolute must, but it sure doesn’t hurt, coaxing out some needed sweetness in the form of honeycomb, peanut butter, and mint syrup, almost julep-adjacent at times. Toasty and mildly sweet but still a bit green on the finish, the whiskey acquits itself in the end as a hearty expression of rye that fully features the grain and lets secondary notes drift in and out as needed. - drinkhacker.com

    Garden & Gun is the only magazine dedicated to living a life more engaged with the land, literature, music, arts, traditions and cuisine of the South. Chicken Cock Whiskey’s Master Distiller, Gregg Snyder is an avid hunter when he’s not hand-selecting white oak for aging spirits, or sampling batches - hence this collaborative edition of Chicken Cock. Snyder describes Garden & Gun’s Single Barrel Double Oak Whiskey as “just phenomenal… full-flavored, full-bodied and smooth,” with a fragrance of caramel coffee and a crème brûlée finish – an ideal bottle to open after an adventurous day of hunting. “It has the mash bill recipe for bourbon,” explains Chicken Cock Whiskey’s Brand Ambassador Will Woodington.     Sold out at the distillery in a matter of minutes, this deep, decadent single malt was finished in a rare 300L Pedro Ximenez Sherry cask from Dutschke Wines in the Barossa following an initial spell in McWilliams Apera Sherry casks. The latter brings apple creams and beautiful biscuity malt, with sticky raisin, date like qualities from the PX cask and a beautiful long, lasting finish. The PX cask was also Waubs' first barrel to be coopered on-site at the edge of the ocean in Bicheno, Tasmania. We've just received a very limited allocation. Be quick! 51% Alc./Vol.

    Notes from the producers... NOSE: Lovely rich resinous oak, sticky wood spices and stewed fruits. Spiced apples - cinnamon, nutmeg, plenty of brown sugar and dates, made into a thick resinous jam and poured onto a hot apple pie. PALATE: There is such depth to this whisky. The initial heat of a higher strength whisky gives way to a massively oily and rich decadent spirit. The age of the PX at 21yrs old comes through. The depth in that full flavour, mmmm. Add some homemade custard to that nose. Just yum. FINISH: Long lasting, such a lovely example of maturing in quality casks. The whisky spirit joins and holds those dates and raisins on the palate long after making you to want to go back for more.

    One of Mexico's crown jewels.

    First released in 1995 to celebrate the company's 200th birthday, José Cuervo Reserva de la Familia pioneered the category of extended age Tequila. Matured for a minimum of two years in a combination of American and French oak barrels, some of the reserve components are up to thirty years old. The tequila itself which has been described as "rich and brandy-like" doesn't change much from year to year. And just as consistency has become its hallmark, so too has been its high praise. What does change annually is the packaging, with a different Mexican artist making each release a collector’s item. 

    In 2023 the box has been designed by artists Rolando Flores and Gabriel Cázares of the Mexico-based Tercerunquinto Collective. The custom art titled “Structuring a Landscape”, features a geometric abstraction of the landscape of Jalisco.

    [2017 edition tasted from a 20ml sample] Pale copper gold. The bouquet combines blanco-like vibrancy with the kind of depth you'd expect from XO cognac - brine, charred capsicum, smoldering eucalyptus, beeswax, vanilla and menthol... with air contact, it also presents a drier, woody aspect including cigar box, cedar and white pepper. Likewise the silky delivery matches sappy agave and butter menthol lozenge-like flavours against drying astringency. It's delicate and somewhat fleeting through the finish, trailing off with black tea, potpourri, white pepper, hints of grilled pineapple, vanilla and trace beeswax. The overall effect strikes a fine balance between young and old.  40% Alc./Vol.

    This rather quaint, unpretentious brand is a spirits icon in its homeland. Launched in 1954, it's garnered a massive following despite little to no advertising. Indeed, word of mouth and a loyal customer base has seen it maintain its title as one of the leading dark rums in the world. The seven year old remains the most popular, with the "Supreme" & "Legend" fast gaining ground. The latter are aged for 12 years and blended with much older spirits. Beyond India, Old Monk is now widely exported - from Africa to the Middle East and now, good news for homesick Indians - a small volume of Old Monk Rum has finally made it to Australia!     Taking a slightly different route from the previous release, this year's El Dorado was filled into a Seppeltsfield Barossa Valley Apera cask for eighteen months before a final maturation in an ex-Bourbon barrel for just on three years. An immediate richness to the nose yields vanilla, caramel fudge and date cake, perfectly mirrored on the palate where there's also fabulous mouthfeel and balance, the whisky finishing with hints of salted crackers, bittersweet dark chocolate, American oak shavings and wood spices. Despite the dessert themed profile, big malt remains at its core.     Japanese flower artist Azuma Makoto has contributed some imagery from his 2021 installation Dancing Flowers of Glenmorangie for this limited edition packaging. Each flower shown was chosen from varieties found near the Glenmorangie Distillery or whose scent can be identified when sampling this whiskies aroma.

    A classic Glenmorangie with a character that appeals to almost any whisky drinker. Matured for 15 years in ex-bourbon casks and transferred into Spanish Oloroso casks for a final three years of maturation, the age statement is matched by super-premium presentation. Moderate aromatics offer seamlessly integrated floral scents of sweet, delicately peated(?) cereals, subtle citrus notes (mandarine, grape fruit) followed by a touch of applemint. Concentrated and mouthfilling, the palate is perfectly poised delivering flavours of mandarine peel, grape fruit, toasty oak, vanilla and honey. Long biscuity, orange cake-like aftertaste rounds off a wonderfully fresh 'Morangie expression. 43% Alc/Vol.

    ...This is part of the distiller’s Extremely Rare range, and has been matured in bourbon casks for 15 years, before a third is transferred to oloroso sherry casks for 3 years. Dried fruits, icing sugar, honey, lemon cheesecake, and floral aromas on the nutty nose. The palate offers figs, crème brûlée, cinnamon, more honey, and citrus fruit.     ...Of course not ‘extremely rare’, but pretty good according to my notes for earlier batches. The price is similar to that of the new NAS, and it’s partly a finishing as well (30% have been finished for three years in oloroso). Colour: pale gold. Nose: cleaner and fresher, more ‘natural’ than the Bacalta, more floral as well, with lovely whiffs of acacia flowers, orange blossom, and simply all-flower honey. Some orange cake, and brioche flavoured with orange blossom water. Mouth: really much brighter and more citrusy than Bacalta, with tangerines, honey, and more ‘oriental’ brioche. Some figs, dried pears and apricots, and then vanilla. Good body at just 43% vol. Finish: medium, honeyed, with dried fruits again and always this citrusy/floral side.     This is the previous incarnation of Quinta Ruban, also with an extra two years added to the age statement. Initially matured in x Bourbon barrels, it spent a finishing period in x Ruby Port casks. It's a controversial upgrade with some tasters preferring the earlier, younger edition. Pretty autumn leaf gold. Whiffs of pristine barley arrive with suggestions of berry muffins and strawberry sponge cake. A full bodied and spicy 'Morangie offering a delicious oily quality, - quite chocolatey too, plus a hint of Turkish delight. The port pick-up is slight. 46% Alc./Vol. Non chill filtered.

    Following a decade in bourbon barrels, Lasanta is finished for 2 years in oloroso and Pedro Ximénez sherry casks. Caramel, milk chocolate, and hazelnuts merge on the nose with the spicy dried fruit and orange notes associated with sherry wood maturation. Spicy sultanas, and damsons on the full, sweet palate, with more caramel, milk chocolate, nutmeg, and oak. The finish is long and smooth, with dark chocolate and wood spices.

    [2010 bottling] Gold ochre/polished brass appearance. The opening scents of muted rubber band and pickled onion are a little off key so we'll let this sit. Three minutes after the first pour, the aroma hasn't really budged dramatically except for the addition of spiced raisin cake. Final pass finds the sultana / dried berry characteristics accented. A light and silky entry develops into a semi-sweet ginger, vanilla and raisin cake profile. Some flashes of sulphur. Finishes a little hot with the spicy red fruits persisting and traces of pickled onion in the fade. 89 points 43% Alc./Vol.

    Replacing the Wood Finish Range, the Glenmorangie Extra Matured Range is a selection of three single malt whiskies that, following an initial maturation of at least ten years in ex-bourbon casks, have been matured for an extra period (bringing the total time in cask to at least twelve years) in specially selected, extremely high quality, casks that previously held Port, Sherry or Sauternes wine. All are bottled at 46% ABV and non chill-filtered to enhance taste, mouthfeel and/or texture.

    With a tremendous ‘gourmand’ appeal, The Nectar D’Òr is Glenmorangie’s delicious, complex base spirit that, after a minimum of 10 years in ex-bourbon casks, is then extra matured in specially hand selected Sauternes wine barriques. This makes it rich and sumptuous with a heady, luscious, beguiling spectrum of aromatic patisserie desserts that helps create a memorable occasion whenever it is enjoyed.

    Tasting note: Pure, bright gold appearance. From a freshly opened bottle, first passings are very shy. This is one of those whiskies that really benefits from a good twenty minutes in the glass after which the aromas open and deepen. Aeration reveals the sweet malt, combined with honey and stone fruit scents with hints of cinnamon and clove. Entry is soft and off dry building slowly with excellent length. Spice and cedary oak give way to a luscious finish with the honeyed, biscuity malt finally superseded by dried stone fruits and cedary oak. Concludes clean and dry. The Sauternes impact really comes through on the finish and texture of this malt while it avoids falling in to the ‘too sweet’ trap. Nicely done. 46% Alc./vol.

    An unusual age statement is inspired by Alfred Barnard's visit to the distillery in 1887 which became part of his book, “The Whisky Distilleries of the United Kingdom”.

    According to Diageo Director of Whisky Outreach, Dr. Nick Morgan, “At the end of the tour, he was given a taste of the whisky…he tasted an eight-year-old Lagavulin, which, of course, remember at the time was actually quite old…whiskies were considered to be venerable once they got around six years old in the 19th Century,” Morgan said in an interview with www.whiskycast.com. “He declared that whisky to be exceptionally fine, so our mission with this bottling was to find an exceptionally fine eight-year-old liquid which we thought Barnard would quite like if he were to be back here tasting it today.”

    Tasting note: Very pale straw gold showing considerable legs. Powerful and complex aromas include cocoa, sea spray, white pepper, dilute Elastoplast and lanolin followed by hints of citrus zest. Several minutes air contact accents the latent malt as well as dark chocolate. Concentrated but also surprisingly soft; almost creamy with grassy malt and a juicy vanilla, kelp and peppermint finish that goes long into the aftertaste. A departure from the 16, but terrific young malt. 48% Alc./Vol.

    Other reviews... Nose: Pronounced maritime and smoke notes, with underlying fresh-cut brown bread. Citrus in the background (lemon zest?). Notes of red fruits develop with the addition of water. Fresh and lively. Palate: The body is quite light but clearly is distinctively Lagavulin with the signature taste of sweet, warm, tarry wood smoke and developing depth and complexity. More sweet notes emerge with water to tussle with the Lapsang Souchong black tea flavours. Hints of herbal tobacco and fresh mint. Finish: The smoke lingers engagingly with a final flourish of sweet minty tea perhaps served from a cedarwood chalice that had been dipped in the sea. If this is the start of Lagavulin 200 then 2016 will be a year to remember. 48% Alc./Vol.

    This was the most limited in the 200th Anniversary series, and also the most expensive. Master Blender, Jim Beveridge and his small team of whisky makers have drawn inspiration from the flavours listed on an original inventory from John Walker’s store. Rare and exceptional whiskies, including ghost stocks from distilleries like Pittyvaich, Cambus and Port Ellen (all at least 28 years old), have been explored to craft a whisky that re-imagines the exotic flavours of the 1820s. The result is the pinnacle of the 2020 collection, packaged to impress in a heavy decanter style bottle and large presentation case. 46% Alc./Vol.

    Notes from Johnnie Walker... A complex, rich whisky with layers of flavour in which an array of fruit aromas come together in harmony, balanced with warming spices and a soft, rolling smoke redolent of the rich array of exotic goods on offer.     Given the contents in the bottle, this is undoubtedly one of the more collectible whisky releases EVER from Johnnie Walker. It marks the fourth edition in the Ghost and Rare series, "crafted using irreplaceable malts from ‘ghost’ distilleries that have long since closed, together with other rare malt and grain scotch.” Pittyvaich was operational for just 18 years before falling victim to industry consolidation in 1993.

This fourth installment of Ghost and Rare targets Speyside, delivering a contemplative nose of roasted nuts, toffee, cinnamon, crisp green apple, candied citrus, late summer honey, and seasoned oak. The palate is satin smooth, with a slightly oily mouthfeel and flavors of golden syrup, oak, orange peel, lime zest, butterscotch, vanilla, dry spice, and smoked orange wheel.     Johnnie Walker's selection of long closed "ghost" distilleries continue to feature in a series of limited edition Blue Label bottlings. The fifth in the line up includes dwindling reserves from Port Dundas, which shipped its distinct Scotch from Glasgow canals to the world for nearly 200 years. Cambus and Brora are also in the mix, as well as rare whiskies like Cameronbridge and Glenkinchie. The latter add spiced apple notes alongside the aromas of peaches and dark berries from Clynelish, Dailuaine and Auchroisk.

    Built in Glasgow in 1811 at the highest point in the city’s rich commercial history, the historic Port Dundas distillery closed in 2010 after Diageo moved the majority of its grain whisky production to Cameronbridge. It traditionally contributed to blends, including Bell's, Black & White, Haig, J&B, Johnnie Walker, Vat 69 and White Horse. Slowly but surely prices are increasing as awareness of its limited nature and generally good to excellent quality gains ground.

    Closing in 1981, Port Ellen has held its "Ghost" status for over 30 years, now. Yet Diageo don't seem to be running all that dry of it... Johnnie Walker believe they have done the extinct distilleries product justice with this Blue Label blend. The reviews seem to be backing up that idea too. 8 different single malts from every corner of Scotland have been used, including two more Ghost distilleries. First and foremost, Port Ellen, then grain whisky from Carsebridge and Caledonian and then malts from Dailuaine, Cragganmrore, Mortlach, Blair Athol and Oban. If you don't want to spend 4 figures to experience this near forgotten dram, then here is your chance.

Coastal notes of sea spray, lemon, dirty peat smoke, cookies and cream, After Eight mints, caramel, and dry-roasted spice aromas. Combining lemon bonbon, waxy orange, cookie dough, fondant icing, and chocolate, with tobacco smoke, hints of peppermint, and grapefruit notes, this flagrantly outclasses the Brora variant.

    Bruichladdichs six-part release entitled 'First Growth' showcases the effect that high-end French Oak casks from the best vineyards in Bordeaux have on their base 16 year old spirit. The Cuvee C Margaux is the third release in the series with production reaching 12,000 bottles. Initially matured in bourbon, it is then finished in Chateau Margaux Frist Growth oak casks.     Made using barley smoked over heather and local peat, this is a nice addition to Stauning's core range. The style echoes Ardmore or peated Arran's with more sweet wood smoke or Highland peat than maritime character; the whisky glides across the tongue with a creamy, malty middle that gets lightly fruity and finely tannic towards the finish. Spices build, the smokiness persisting like a silky glaze over the malt, adding texture and length, ending with a delicious warming tang. Matured for 5-6 years in a mix of first-fill Bourbon, Madeira, Jamaica Rum and Virgin American oak casks. 47% Alc./Vol. Non chill filtered. Batch 1-2022 tasted from a 50ml sample.

    Stauning's first official product remains one of their best. Direct-fire distilled from floor malted rye and matured for 3-4 years in new American oak, this big yet balanced Danish whisky offers generous rye character from start to finish. Dense, toasty grains on the nose follow through to a full bodied, rounded, spiced-up delivery that pulls through flavours of crusty rye fruit bread as well as hints of caraway, vanilla bean and dark chocolate, ending tactile, oily and intense.     Distilled predominantly from floor-malted locally grown rye, the first impression is one of spiciness, with peppercorn, clove, cardamom, dark rye bread, dried apple rings, cinnamon bark, and pear.     You can't call it Tequila because it's made outside the designated production zone, but this novel spirit is actually created using Mexican Blue Agaves, fermented and distilled by Imbue right here in Melbourne. It tastes nothing like Tequila, instead the flavour focus is on ripe blood orange and pink grapefruit. That's because it's blended with Imbue's citrus liqueur which employs a mix of seasonal off-cuts (oranges, lemons and limes are also included). The production process not only minimises wastage but also results in a very convincing alternative to Triple Sec - silky, sweet and juicy, though perhaps slightly lighter than most European equivalents.     Dead Reckoning call this their 'hot house' rum – otherwise known as Dead reckoning TCB. Justin Boseley wanted to create a blend using three rums from three distilleries from three different continents. He also wanted to use cane juice as well as molasses based rums. The final blend is a trifecta of rums: 8% Guyanese (Diamond distillery), 56% South African (Mhoba) and 36% Vietnamese (Sampan distillery) created from three different stills - a Port Mourant double wooden vat single retort, an Enmore Coffee twin column and a Diamond Versailles single wooden vat single retort.

    The final twist in this bottling was when Justin decided to age the barrel in his steel-sided garage in Adelaide. The vessel of choice was a level three char 200L x-Makers Mark bourbon barrel. He made a rack and wheeled the barrel into the afternoon sun for the 18 month period, also agitating the liquid and sloshing it around. Overnight it was brought inside where it naturally cooled, opening and contracting the internal grain, helping the spirit to cycle in and out of the wood. The rum's temperature reached a maximum of 52° and a minimum of 2° over the aging period and experienced a huge 7.8% increase in ABV and a 27% loss to the angel's share. The end result feels well beyond its true age; Intense and viscous with layers of funk, super ripe tropical fruit and a lipsmacking caney freshness; it tastes like a wild Jamaican with more pot still than column in the mix. Given the diverse components and the punishment the cask was subject to, you can't help but be impressed by just how well this experiment turned out. 185 bottles are on offer. 50.3% Alc./Vol.

    Other reviews... Palate: The mix of still types gives this a creamy mouthfeel, but still a sense of ‘crispness’ of the column still. A medium pepper hit – but that tames very quickly and is much subdued by the second sip. There’s more funky tropical fruit here, but also liquorice, sweet caramel and even some very tame leather notes. Finish: That big sweet funky ester train just keeps on a-rollin’. The pot still percentage keeps the oilyness going well into the finish – real chewy stuff. So many sweet fruits and lolly-memories tumble and spin and dash in and out. This is a big, juicy and utterly delightful rum that is also a bit of a chameleon on your palate. Just when you think you’ve got it pegged, you pour another glass and find a new note that reminds you of something almost-forgotten from your childhood. In the subsequent drams since first penning these notes I’ve also picked up milk-bottle lollies, honey-jumble biscuits, tinned pineapple, sherbet and even a bubble gum from my very early days as a kindy kid in Switzerland who’s name I’ve forgotten – but I certainly remember that taste.     The smokey flavours in whiskies are usually made by burning peat to dry the freshly malted (sprouted) grain. Sometimes different materials are burnt to produce different flavours. There are many compounds in smoke that get carried through the production process. When these compounds are distilled only some of them boil off and are captured in the final product. To produce this very smokey Tassie Rye, Peter Bignell injected the smoke from burning sheep dung into an empty wet barrel, capturing more of those genuine smoke compounds. It's a very different profile from the normal peated whiskies, summed up by Bignell as "bush fire in a bottle." 52% Alc./Vol.

    Produced from 100% rice and matured in American oak puncheons for three to six years, this Japanese specialty blurs the lines between whisky and shochu bearing a resemblance to middle-aged Lowland grain or blended Scotch. Vanilla wafers, rice crackers and sweet cereals on the nose follow in a light, silky delivery with malty, biscuity flavours, frail vanilla, budding citrus oils and a spicy, finely tannic, dried grass and vanilla finish. This spirit's delicate character is easily lost with too much dilution. A few ice cubes are sufficient, or use it as a base for Summer long drinks. 41% Alc.Vol.

    ...Colour me (pleasantly) surprised! I found the Mellowed Kozuru really fantastic! It was incredibly vibrant and flavor forward but at the same time mellow and rounded, with a great flavour palette of florals and honey. This would be comparable to a hybrid of a sweet Sauternes white wine meeting a slightly dry Sake, moving from one profile to the latter. It’s got a really delightful creamy texture, depth and richness too - bright flavours surrounded by spices over an almost syrupy texture. It really striked me as elegant. The cask aging really did a great job of mellowing it out - and to that end, I couldn’t tease out any sense of the cask. There was no tannins or oakiness to be had, which I found really interesting as well. It’s as if the aging took place sans the woodiness of the cask. This was really approachable and friendly, very enjoyable to drink and definitely a stunner, quite unlike any other Shochu I’ve had in terms of depth, elegance and complexity.
