Waubs Harbour PX Cask Limited Edition Single Malt Australian Whisky (500ml)

Sold out at the distillery in a matter of minutes, this deep, decadent single malt was finished in a rare 300L Pedro Ximenez Sherry cask from Dutschke Wines in the Barossa following an initial spell in McWilliams Apera Sherry casks. The latter brings apple creams and beautiful biscuity malt, with sticky raisin, date like qualities from the PX cask and a beautiful long, lasting finish. The PX cask was also Waubs' first barrel to be coopered on-site at the edge of the ocean in Bicheno, Tasmania. We've just received a very limited allocation. Be quick! 51% Alc./Vol.

Notes from the producers... NOSE: Lovely rich resinous oak, sticky wood spices and stewed fruits. Spiced apples - cinnamon, nutmeg, plenty of brown sugar and dates, made into a thick resinous jam and poured onto a hot apple pie. PALATE: There is such depth to this whisky. The initial heat of a higher strength whisky gives way to a massively oily and rich decadent spirit. The age of the PX at 21yrs old comes through. The depth in that full flavour, mmmm. Add some homemade custard to that nose. Just yum. FINISH: Long lasting, such a lovely example of maturing in quality casks. The whisky spirit joins and holds those dates and raisins on the palate long after making you to want to go back for more.
