    Mouthfilling strawberry and raspberry fruits with a dry, chalky finish.

    A blend of 60% Pinot Noir and 40% Chardonnay aged for 3 years on lees. A fine plentiful mousse slowly fades into a salmon pink coloured base that has a very fine and persistent bead flowing through it. Nosing reveals yeast lees and chalky mineral scents intermingling with delicate winter strawberry and citrus notes. More open than the nose, the palate features mouth filling strawberry and raspberry fruits over a back drop of toast, yeast lees and chalky mineral elements. Vivid acidity counterpoints a creamy like mouth feel. Finishes dry, long and chalky.

    Chartogne-Taillet is the home of some of the most exciting wines in Champagne. Alexandre Chartogne is a perfectionist in his approach to viticulture and winemaking, something he picked up from his mentor Anselme Selosse. Key to his approach is the importance of expressing terroir above all else. With that in mind, Alexandre separately vinifies a myriad of plots spread across 11 hectares of vineyards in Merfy and the neighbouring villages of Chenay and Saint-Thierry. Over half the parcels are ploughed by horse, and no pesticides, herbicides or synthetic fertilizers are used. In the winery, all fermentations are wild, and malolactic fermentation is not blocked. Alexandre favours wooden barrels or demi-muids for fermentations, and low dosage levels are used which allow the grapes to speak of their place.

    Unlike the main stable of Merfy-sourced wines, this is grown on a cadre of plots in Avize and Oger in the Côte des Blancs. The patchwork of seven plots, located on both the plains and the slopes, contributes to the overall harmony. Chemin de Châlons, Pierre Vaudon, Fosse le Prêtre and Mont Chenevaux, located on the plain, have plenty of sun exposure and a chalky soil profile with very thin (20cm) topsoils. Mont de Cramant is located at the beginning of the slopes, with deeper soils that are likewise rich in chalk. Les Roches Hautes and Les Barmonts are higher again and experience cooler conditions, resulting in taut, linear wines. The wines rests in 228-, 350- and 600-litre barrels before maturing on lees for 4-5 years and receiving a dosage of 1-3 g/L.

    Chartogne’s 2019 Blanc de Blancs Hors Série hails from several parcels in Avize, predominantly situated on the lower slopes where the topsoil is thinnest—ranging from a mere 20 centimeters to one meter in some plots. These southeast-facing vineyards benefit from generous sun exposure, with soils composed of sand, clay and silt layered over a chalky bedrock. In the cellar, the wine is matured in a combination of 228- and 600-liter oak barrels. Already expressive—shaped by a sunny vintage in a rich terroir—it unfurls in the glass with a bouquet of honeysuckle, pear, white peach and lemon oil. On the palate, it is full-bodied and concentrated yet vividly vibrant, energized by mouthwatering acidity that lends both balance and tension. Combining muscularity with structural finesse, it was disgorged in June 2024 with a dosage of just one gram per liter. This wine promises to evolve gracefully over time. Drink 2025-2039.

    The Chardonnay vines were planted on the Heurtebise plot in 1972, 1985, 1986 and 2010. Exposure is a solar direct-south, but the strong winds that tear through this place mean there's always ample freshness to be found. The soil composition is Thanetian sands mixed with clay on sandstone, and the area is prone to fluctuations covering both water stress and retention. It's one of Alexandre's most variable sites overall, one that has very different requirements depending on the season. Likewise, once off the vine, the wines also tend to take on greater influence from any intervention in the cellar, particularly aging in oak. Crystalline minerality and mouth-watering tension are always evident from this site. Disgorgement is just four grams per litre.

    The 2019 Blanc de Blancs Heurtebise is a single-vineyard expression that spotlights the singular terroir of Merfy, rooted in sandy soils with components of silt and clay, resting atop sandstone. Produced from Chardonnay vines planted between 1980 and 1985, it is aged entirely in 228-liter barrels—predominantly from Cavin—with a modest proportion of new oak. Disgorged in April 2024 with a dosage of 2.4 grams per liter, it reveals a bouquet of white blossoms, lemon zest and freshly baked brioche. The palate is medium-bodied, incisive and poised, with laser-like acidity that carries a core of pristine fruit to a long, mineral finish. It is the most linear and tensile wine in the range, even more so than the Chemin de Reims from the same vintage. Drink 2025-2039.

    Chemin de Reims hails from a small plot of just over one hectare, facing south/southeast, and planted 1980, 1995 and 2011. It has Thanetian sands–very iron-rich soils with varied layers and depth before the base of sandstone underneath. The soil character is quite transmissible, particularly in the Chardonnay from this site, which takes on a unique fullness, structure and almost ferric texture. A Blanc de Blancs comprising 85% Chardonnay, and 15% Arbanne, élevage is in both casks (350 to 600 litres) and tanks. Alexandre tends towards a tighter-grained oak for this particular cuvée and this, along with further precision in the cellar, regular topping up and low dosage, allows Alexandre to preserve the purity of expression from this site. The results provide us with Chartogne-Taillet's most powerful and vinous cuvée.

    The 2018 Extra-Brut Chemin de Reims, 100% Chardonnay, deftly marries varietal expression with the tremendous resonance all the wines show in 2018. Citrus peel, crushed rocks, chamomile and dried herbs are all amplified in a Blanc de Blancs that presents the more savory, earthy side of Chardonnay. Even with all its obvious textural intensity and sheer power, the 2018 remains bright and nicely lifted throughout. There is a feeling of translucence here that is beguiling. This is Montagne de Reims Chardonnay at its finest. Dosage is 4 grams per liter. Disgorged: February 2023. Drink 2025-2033.

    A frothy white mousse holds well over a pale straw, pale gold tinged base that has an exceptionally  fine and very persistent bead flowing through it. Aromas of pear, brioche and yeast lees show plenty of intensity with hints of honeyed cashews and nougat also evident. Rich, full and expansive the palate is layered with brioche, yeast lees and honeyed cashew like flavours with some pear and nougat characteristics lying underneath. Creamy textured it finishes long and mouth watering.

This 2017 edition is a true long-game wine, spending time in barrel before an extraordinary 90 months on lees in bottle, a regimen aimed at building depth and refinement rather than overt power. Released only in tiny quantities, it sits at the top of the DAOSA sparkling range, offering a rare look at extended ageing in Australian sparkling and the kind of detail that has defined the label's recent reputation.

    From a single site – the Bizot family vineyard. All chardonnay. Barrel maturation employed. A foamy texture belies the detail of fruit, spice, savoury oak seasoning and freshness here. Summer fruits, biscuits and bread, toast and cinnamon and honey and marshmallow and ginger. Intense, saline acidity and bristling, tight and fine bubbles. A little glossiness of intensity even with the freshness. It's rich but lively, coursing with energy and yet shows off the mature fruit and secondary characters so well. A kaleidoscopic experience, per se. Just straight up fantastic, and a world beater. Drink 2025-2035.

    The Bizot pedigree is evident in this remarkably youthful and fresh aged sparkling from the Adelaide Hills. The creator, multi-generational Champagne/sparkling maker, Xavier Bizot, has grown and assembled a brilliant, seemingly ageless wine. Chardonnay grown in Piccadilly underwent its first fermentation and ageing on full lees in oak for eight months. Its second fermentation and maturation in bottle on lees was for 90 months. Honeysuckle and jasmine aromas swirl and mix with peach, baked apple, spice and almond biscotti with a drizzle of honey. It’s invitingly fresh and complex at the same time. So, too, a palate led by a fine bead, finely textured and dry with a deeply woven complex citrus, stone fruit intensity and background honeyed spices, peach custard, almond spread and biscuit. Acidity holds true, raising the freshness factor and adding extra spark. Drink 2025-2030.

    Made with the three traditional grape varieties of Champagne but with some added Pinot Blanc, 60% of the base wine coming from the 2018, 2019 and 2020 vintages. Lemon curd, green apple, white flowers, sea spray, pastry and cream. Yummo. The bubbles are fine and silky, and the mouthfeel and fruit are resonant. I enjoyed it immensely by itself but also drank it with a very large amount of cheese. For only $28 you’re getting some very tasty sparkling wine here.

A very pale orange pink with notes of florals, redcurrants and spices, with hints of cherries and strawberries. This is a gentle and delightfully elegant style of fizz, with a creamy texture that is finely balanced with a crisp finish. There is a chalky, minerally backing here with a lingering finish.     In 1986, Eric Dhondt and Edith Grellet decided to stop selling off grapes to negociants and started Dhondt-Grellet. Their focus on farming translated into honest Champagnes from great holdings across the Côte des Blancs. Now with their son, Adrien, assuming a larger role, they are refocusing their efforts and producing some of the best Champagnes they ever have. Nowadays the company is lead by Eric and Adrian.

    The vineyard is situated primarily in Grands and Premiers Crus of Cote des Blancs namely Cramant, Chouilly, Cuis but also Sézanne for their Chardonnays. They also cultivate some Pinot Noir in the Vallée the la Marne. Mainly located in mid hillsides on easy to work, very lightweight calcareous soils, their plots enjoy an outstanding location and a southeast exposure. The average age of the vines is 40 years. They also have their own cellars in Flavigny to age the wines before bringing them on the market. Les Terres Fines is their 100% chardonnay from premier cru vineyards from Cuis.

    P2 is the acronym for the Plénitude 2 series, Dom Pérignon’s second life. It indicates that bottles are kept by the house to let them age on the lees and to obtain different expressions of the same wine throughout its life, letting time work its magic and thus acquiring additional complexity. This year, Dom Pérignon’s cellar master, Vincent Chaperon, decided to release the 2004 vintage. ‘2004 was a contrast to 2003,’ he said. After rain in January, the spring was hot and sunny, like the beginning of summer. But the summer was wet, with 50% more rain than in an average year. Despite this, the health of the grapes was stable and the crop was abundant. ‘This is quite a perfect vintage,’ he added. The bouquet impresses with its finesse and elegance, its delicate aromas of pastry, orchard fruit, nuts, and lemon oil, and both iodine and chalky hints with air. The palate is medium- to full-bodied, very charming, with a sappy texture, racy acids, and a long and lingering finish. This is a very harmonious and rather chalky Dom Pérignon, which must be approached in its singularity. Time is a real asset here. Dosage: 5g/L. Drink 2022 - 2040.

Airy yet nimble across the palate with a satiny feel, pear and citrus fruits interplay with notions of yeast lees, light baked bread characters, subtle cashew and traces of oiliness.     The Ambonnay based Egly-Ouriet are a reference point for grower producers in Champagne, known for their impeccable vineyard management and fastidious winemaking skills. Much of their production is raised in oak barrels, with extended aging on lees a feature. As usual with Francis Egly's millesime, the blend is 70% Pinot Noir, 30% Chardonnay from the same 40-year-old vines in Ambonnay, aged in barrel until bottling.

This wine is the second bottling of Egly’s (already legendary) Millésime 2008, first bottled with a July 2019 disgorgement, this edition was almost a year later in April 2020, after 129 months on lees. As usual with Francis Egly's millesime, the blend is 70% Pinot Noir, 30% Chardonnay from the same 40-year-old vines in Ambonnay, aged in barrel until bottling and with no malo.

    Revisited from the July 2019 disgorgement, Egly's 2008 Brut Grand Cru Millésime was showing as brilliantly as ever. The wine seemed to shut down a little in early 2020, but it is already beginning to unwind, and this was the most expressive bottle that I've drunk to date. Offering up an incipiently complex bouquet of orchard fruit, citrus oil, pralines and freshly baked bread, now complemented by hints of iodine, clear honey and mirabelle plum, it's full-bodied, deep and layered, with immense depth and concentration, racy acids and elegantly muscular structuring dry extract. Long and penetrating, as I've written before, this wine is a monument to what Champagne's grower revolution has achieved over the last 30 or so years. Drink 2023 - 2048.

    Just being released now, the 2008 Brut Millésime Grand Cru is quite possibly the most elegant, most refined Champagne I have ever tasted at Egly-Ouriet. Francis Egly captures the freshness and verve of 2008 as expressed in his vineyards in Ambonnay. That interplay yields a Champagne that is deep, resonant and pulsing with tremendous energy. The Pinot really comes through on a finish that just expands with superb resonance. In a word: brilliant! Disgorged: July, 2019. Drink 2019-2029.

    This release of the NV Champagne Les Prémices is based on the 2020 vintage, was bottled in 2021, and disgorged in July 2024. Made from equal parts Chardonnay, Pinot Noir, and Meunier, it’s fresh and inviting, with a delicately fresh and fruity profile on the nose offering notes of raspberries, attractive red fruit, and a nice bit of extract and sapidity. It has a pleasing, fresh, savory element on the finish, with delicate spice in its fine mousse. A very lovely wine that’s drinking beautifully, it can be enjoyed over the next 5-6 years.     The NV Champagne V.P. stands for Vieille Prolongée, because it is aged longer, seeing 7 years on the lees before disgorgement. A blend 70% Pinot and the rest Chardonnay, based on 2016 and with reserve wine from 2015 and 2014, they made this blend in 2017. Offering wonderfully pure aromas of cherry liqueur, eau de vie, fresh flowers, and crushed rocks, it’s full-bodied on the palate and has broad shoulders but retains a very focused and well-defined feel, with outstanding concentration and purity, a fantastically long finish, and a remarkably youthful feel. It’s beautiful now but has the potential for a lot of longevity and is going to be wonderful to check in on.

    A fine satin like mousse shows good hold over a pale straw base with pale gold edgings. Very profuse and exceptionally fine bead. Superb aromatics of baked bread and yeast lees meld with subtle honeyed notes, pear, citrus and lightly roasted cashew. Very faint hazelnut end notes complete a complex sniff. Rich toasty baked bread and yeast lees characters pair with subtle pear and citrus flavours. Refined lacy feel with sculptured acidity lending tension on the mouth watering finish. Also evident are cashew and buttered brioche nuances. Long creamy oily baked bread and yeast lees tinged finish with a bite of refreshing citrus.

    Even though it was only Disgorged: a few months ago, the NV Brut Tradition Grand Cru is super-expressive. The Brut Tradition brings together parcels in Ambonnay, Bouzy and Verzenay that, together, yield a Pinot-driven Champagne with tremendous breadth as well as cut. Red fruit, dried flowers, mint, spice and lemon confit are some of the aromas and flavors that build in this wonderfully open-knit, inviting Champagne from Egly-Ouriet.

    With this release, based on the 2014 vintage and disgorged in June-July 2019, what was formerly Egly's Brut "Tradition" becomes simply his NV Brut Grand Cru, a simplification that paves the way for several new cuvées from this reference-point grower that I'll be reporting about in due course. Changes in nomenclature aside, the wine in the bottle has never been better, and the latest release soars from the glass with an expressive bouquet of golden orchard fruit, honeycomb, citrus zest and freshly baked bread. On the palate, it's full-bodied, deep and layered, with real concentration and intensity, built around racy acids and chalky dry extract. The finish is long and lingering.

French Champagne is not an everyday luxury for many. Thankfully, over the past few decades the production of Sparkling Wine in Australia has made a quantum leap, and to be fair, much of the increased quality is because of the presence of French know-how. The most prestigious and expensive technique for Sparkling wine production has become known as 'Methode Champenoise' (fermentation in the bottle). As we have all learnt to our joy, sparkling wines produced by Methode Champenoise, as opposed to other techniques, invariably result in a superior drink. But it is a very difficult wine to make - costly, time consuming, even risky.

The two key grape varieties employed are Chardonnay and Pinot Noir, though warmer regions may favour others. Chardonnay gives life, acid, freshness and aging potential to methode champenoise, though care must be taken to avoid excess maturity, particularly in warmer climates, which can produce a dominant, aggressively varietal character. Warm climate Chardonnay cuvees may suffer from a narrow flavour profile, high "melony" aroma notes and lack of freshness, liveliness and length. Additionally, rich fertile soils can cause this variety to produce foliage and grassy aromas. When combined with Pinot Meunier, Chardonnay has a greater capacity to age harmoniously and for a longer time. Pinot Noir adds depth, complexity, backbone, strength, and fullness (what the French call "carpentry") to methode champenoise wines but is seldom used by itself, even in Blanc de Noirs.
