    315 Years of British Naval History

    On July 31st 1970 a 300 year-old Royal Naval tradition ended at precisely 6 bells in the forenoon watch (11am) when the last rum ration was issued aboard ships of the Royal Navy - a day to be forever remembered as Black Tot Day.

    With the withdrawal of the rum ration, the Royal Navy had little use for the remaining rum stocks which were filled into wicker clad stone flagons and transferred to HM bonded warehouses where it remained undisturbed, being only broached for use on State Occasions and Royal Weddings until now.

    The precise makeup or age of the rum cannot be specified but records support that it was probably distilled in the 1950’s and was imported from the West Indies. Nevertheless, a slice of history is up for grabs, the likes of which we couldn't imagine ever being seen again!

    Tasting note: Pours a deep copper/mahogany colour with some minor sediment evident. Perfumed aromatics exude layers of molasses, brown sugar, liquorice all sorts and new leather. Entry is semi sweet and soft, building with exceptional concentration. Mid palate is off dry with a momentary burst of date and raisin, becoming dry, spicy and fruit cake like. Stunning length as the flavours repeat in waves. Finish is progressively drier as delicate, powdery tannins enter. Impeccable balance. Concludes super fine and dry with notes of charry oak, sarsaparilla and cigar box. The persistence of flavour is nothing short of remarkable as the aftertaste reverberates in the mouth for ten minutes plus. An exhilarating rum experience. 54.3% Alc./Vol.

    Two versions were released on November 23rd, 2013: a 125ml version set in a striking cherry wood frame, along with this exquisite 700ml crystal decanter, paired with two stunning crystal tumblers and a handcrafted walnut wooden casing. This listing will also include a second presentation case made available exclusively for retail outlets. The liquid inside is rumoured to contain rum up to 35 years old.

    The premium rum category continues to grow at around 6% year over year. Papa Seal Single Barrel Bermuda Rum is part of that movement. This rare release pays homage to the brand’s time-tested traditions. A family-owned business for eight generations, Goslings has remained committed to honoring blending and aging techniques that have been passed down for over 165 years.

    Launched as an annual release in the USA in 2018, each bottle of Papa Seal features its barrel number, bottle number, and bottling date hand-written. Each release will comprise around 1500-2500 bottles. The rum itself is a blend of column and pot still molasses rums aged in medium char bourbon barrels and reported to be anything from 8 -20 years old. Due to the nature of single barrel releases, slight variations in flavour are to be expected.

    Awarded 92 Points by the Tasting Panel and named as #1 Aged Rum in the world by the Caribbean Journal.

    While rum in general makes for a fantastic cocktail spirit, extra-old expressions like this really need to be appreciated straight. Master Blender, Joy Spence walks a tightrope with the 21 YO - the trick is adding extra layers of sensory excitement at the risk of becoming overly oaked, while at the same time, retaining some of the youthful, estery sweetness and vibrancy that's Appleton's house style. This gets the balance close to perfect. It's no wonder it was “Spirit of the Year” at the World Spirit Awards back in 2011. Just 12,000 bottles of this rare rum are produced annually, and Australia receives a special share in recognition of the growing group of consumers who have been passionately enjoying the aged blends of the Appleton Estate since the brand launched here in 2004.

    Rooted in traditions that go past the American Revolution, not much has changed at Appleton since the 18th century: water is still sourced from a spring on the estate, small batch pot distillation remains the norm, done on-site using a proprietary yeast strain propagated from the estate-grown cane. The estate's versatile blends have been quietly changing the perception of rum, with homes and bars across the country embracing the rum renaissance. This bottling ups the ante to yet another level of sophistication that demands your attention, and at a price that's impossible to resist.

    Tasting note: Perfectly polished copper colour dazzles in the glass. Whiffs of shellac, resin and orange zest in the opening pass, evolving aromas of hazelnut / pistachio, walnut slice, raw sugar, extra-aged muscat and cocoa. 3-4 minutes exposure accents clove, vanilla bean and draws out hints of wine-soaked pears. Outstanding. Two decades in barrel sees the sugars reigned in with spicy oak overlaying flavours of raisins, dates, light molasses; finishes drier than the mid palate stage with threads of muscat wine, rancio and all-spice woven through the aftertaste.     Joy Spence's 20th anniversary as master blender is celebrated in this extraordinary limited edition bottling of pot still and column still rums. Aged between 25 and 35 years, and simply called “Joy”, it comes beautifully presented in a decanter style bottle and presentation case.

    Says Spence: “It includes two rum marques which are of particular sentimental significance to me: The first of these marques was laid down to age in 1981, which is the year I joined the Appleton Estate team, and the second is my favourite marque of pot still rum. The final blend is a wonderful rum that I hope will be become a cornerstone of my legacy”.

    Joy Spence, joined Appleton Estate in 1981 as chief chemist, having graduated from the University of the West Indies with a Bachelor of Science in Chemistry and the University of Loughborough with a Master of Science in Analytical Chemistry. She became master blender in 1997, with 2017 marking 20 years with the estate.

    Expect rich aromas and flavours of orange peel, ginger and spice and a warming vanilla, butterscotch and coffee finish followed by layers of almond and toasted oak. Approx 13,000 bottles released globally. 45% Alc./Vol. Extremely limited stocks.

    In 1962, as Jamaica approached full independence, several hand-selected barrels of rum were set aside with the intention of creating a special blend that would one day be bottled to celebrate the 50th anniversary of the country’s independence. Matured for a minimum of 50 full years, these rums have been looked after, first by Master Blender Owen Tulloch, then by his protégé and Appleton Estate’s current Master Blender, Joy Spence.

    Deemed as "aged to perfection" by Spence, the resulting rum is reputedly the world’s oldest barrel aged expression. (All of the rum was aged for at least 50 years, thus the age statement is absolute. It does not refer to an 'average age' or to an 'oldest component'.) More importantly, word has it that this is truly rum of historic caliber, "...with a range of flavours and overall gravity that befits its 50 years in oak, but without being too tannic".     The rum itself is a combination of pot-stilled and column-stilled rums, though the exact percentage of each in the final blend is not disclosed. The barrels were all x-Bourbon, originally shipped as staves and reassembled by coopers at Appleton Estate. Thirteen barrels made it through the process, each chained to the warehouse floor for added security and evaluated twice a year by Spence.

    Given the high evaporation rates, the combined contents yielded a mere 800 bottles. The rum was filled into crystal decanters produced by Glencairn Crystal of the United Kingdom and designed after the curvaceous shape of other Appleton vessels. The brass and cork stopper is finished in gold, and gold screen printing on the bottle reflects a host of national symbols of Jamaica. To round things off, the rum is presented in a black lacquered gift box with gold-finished brass hinges. It contains a commemorative booklet that outlines Jamaica’s march to Independence and the journey of this astonishing rum.

    A limited edition from the world famous rum house. Matured in lightly charred American white-oak barrels, this was first released to the public in 2003 at the Bacardi Visitor Center in Puerto Rico and only made it to the States in 2010. Australia has just received a small allocation.

    The firm of William Cadenhead Ltd, Wine and Spirit Merchants, was founded in 1842 and is Scotland's oldest independent bottler. The company was in the ownership of the same family until taken over by J & A Mitchell & Co.Ltd in 1972, the proprietors of Springbank distillery. Today, Cadenhead is probably the only Company in the world that holds extensive stocks of old matured-in-oak Demerara Rum (though they're also legendary for bottling excellent single cask, cask-strength, non-chill-filtered whiskies). The company places particular emphasis on the individuality of each bottling and bottle only a single cask of Rum at one time.

    Guyana is justly famous for its rich, heavy Demerara Rums, named for a local river, which are produced from both pot and column stills. Demerara Rums can be aged for extended periods (25-year-old varieties are on the market) and are frequently used for blending with lighter Rums from other regions. Cadenhead's Green Label Demerara has been bottled from a specially selected individual cask distilled in 1975. In order to maximise flavour, the rum has not been treated, with the exception of the addition of water added to bring the spirit to a standard strength.

    Tasting note: Those who spend less than a few minutes nosing this spirit are missing the point (and probably wasting their money). It demands contemplation and will continue unfolding for at least ten minutes, during which the aftertaste will rebound several times with surprising intensity. Try to think of every rum you've ever tasted combined into one. Both aromatically and in the mouth it offers a typically massive Demerara experience with huge off-dry flavours of liquorice, roast nut, coffee, brown sugar, dried banana, leather and spice followed by an exceptionally long, drying aftertaste. Other than a pleasantly spicy, delicate warmth the spirit is almost indiscernible, while the length, texture, balance and mouth feel are impeccable. Unquestionably it is one of the world's great rums but begs the question: What else have Cadenhead's got to show that we don't know about? 40.3%

    Just arrived from the Dominican Republic, Cubaney rums are produced by one of the most well-known of rum families (the Oliver’s) who began making rum in the early 19th century in Cuba, earning a place amongst the world’s best by the late 1860s. The Cuban revolution halted production and the family fled the country. It was not until the 1980s that the original formulas were re discovered and the family began reproducing rum with the help of Cuban Maestros Roneros in the Dominican Republic. Highly regarded amongst the region's distilleries, Cubaney's rums have been internationally acclaimed.

    This is the peak of the Diplomatico range, as created by Golden Barrel Awards 2011 Master Rum Blender of the Year, Tito Cordero, and comes appropriately packaged in a stylish tapered bottle with a heavy set base and a cork inset into a weighty high quality metal stopper. Ambassador is matured in x-bourbon barrels before finishing for a couple of years in x-Pedro Ximenez (sweet Sherry) casks. Clearly, this is where things get serious for Cordero. It is a full throttle, 100% pot still rendition without filtration or compromise that stands as a benchmark in its category. Aged for a minimum of 12 years, the saturated, burnished mahogany colour leaves fat, glass-staining legs. Sensuous, mildly prickly aromas open with choc fudge, mocha, brandy cream and fruit cake. Cocoa and mocha accentuate with aeration, with the spicy fruit cake notes returning. From start to finish, the palate is a masterpiece of flavour choreography, beginning light, soft and gently spicy, slowly building in concentration, unfolding pulsing spices, intense dried fruits (raisin, date) and liquorice strap while fine-tuned acidity provides razor’s edge balance and a sense of elegance. It finishes clean, fresh and dry with a molasses aftertaste followed by a liquorice strap fade that reverberates over twenty minutes, however don’t be surprised if you’re still tasting this after an hour. It stands comfortably alongside the top two or three rums we’ve been fortunate enough to experience. Bravo! 47% Alc./Vol.

    A Last chance to secure one of the greatest rum releases in recent years. A celebration of agricultural serendipity and a singular statement in rum.

    Ever since it sold out, we've been badgering Diplomatico for more. It was easily one of the top five spirit releases for 2015, so when Master Distiller, Tito Cordero visited us in October we asked him the same question. Even he couldn't deliver, except for the promise of a follow up vintage - but at a much higher price. The good news is that finally, Diplomatico have been able to divert a small portion from a cancelled order and re-allocate it to rum lovers in Australia. The even better news is that we can sell it for less than the current vintage.

    If you missed out the first time, this is one of those spirits that cuts across categories. Whisky and brandy enthusiasts will find much to enjoy here. For lovers of Rum, it offers an experience reminiscent of super-luxury bottlings, less the prohibitive mark up of the luxury market.

    When conditions in the field concentrate the sugars in the cane, it favours the production of the very finest grades of rum.
    2000 was a freak growing season when a number of factors contributed to sugar cane of impeccable quality. Following an extremely wet year in 1999, high day time temperatures and much cooler nights than the norm combined with high humidity and lower than average rainfall. This contrasting weather played an integral part in creating one of the best sugar cane harvests in Venezuelan history - hence, the decision to record it in Rum. In choosing the reserves to blend for this release, Cordero was ultra selective. All components spent 12 years in x-bourbon and x-single malt whisky casks before being rested in Spanish Oloroso sherry wood. They represent some of the very finest spirit in the Diplomatico cellars. Like its more expensive sibling, it comes impressively packaged in a reverse tapered bottle, with a heavy set base and a cork inset into a weighty high quality metal stopper.

    Tasting note: Visually captivating - brilliant polished copper; some minor particulate matter evident too. Issues a superb floral/honeyed perfume featuring creme-caramel, roasted pistachio, buttered cinnamon toast, cocoa, dates and more. Satiny and layered with a linear, almost Sauternes-like delivery of controlled sugars, this combines depth and finesse to great effect; Outstanding length, unfolding melted butter, raisin toast, pistachio and high pitch vanilla with an ethereal texture. More tobacco and fruit cake-like as lively spices play out with the drying wood to finish. Wow! So debonair. A clinic on blending that lives up to the hype. Borderline 97 points. 43% Alc./Vol.

    Rums under the English Harbour label are produced from fermented molasses via copper pot distillation. Maturation takes place in small 220 litre x-whisky and bourbon barrels. This 'Reserve' bottling has been aged for a minimum of 10 years, with components up to 25 years of age included in the final blend.

Caramel, mocha, creamy banana custard and spice aromas follow through on a supple entry to a dryish medium-to-full body with very good depth and balance of flavor. Finishes with nutty praline cookie, dried fruit , and lavish baking spice on the long fade. Excellent and stylish.

    Described as the best rum Don Pancho has ever made.

    This sought after label is another creation from rum master, Francisco 'Don Pancho' Fernandez (one of the few people in the world to be awarded the titles “Maestro Ronero” and “industry legend”). Having left Havana Club in Cuba after almost four decades of development as Director of the Cuban Beverage industry, in the 1990s, Fernandez discovered a neglected facility in Panama's Herrera region. Beneath the over-growth, a copper column still was uncovered bearing a small plaque with the inscription "Cincinnati 1922". Reportedly, ”this is the sister still to the legendary Pennsylvania Michters copper column still that produced both Michters Whiskey (in its original form in Pennsylvania) and the equally if not more well-regarded Hirsch 16 and 20 Year Old Whiskey (which was produced at Michters and bottled years after the distillery shut down).”

    Despite being near retirement age, Don Pancho considers himself in his prime, ready to create a rum with no compromises. ‘Origenes’ is the latest result from his Panamanian operation which he reinvigorated as the 'Las Cabras distillery', already described as “one of the most important and revered rum distilleries in the world.”
    The sugarcane is grown to very specific standards, hand-harvested then fermented with a yeast strain developed specifically for this rum ( Don Pancho also has a degree in microbiology). All the Origenes rums are dated by the age of the youngest rum in the blend. Don Pancho personally selects each barrel.

    Described as "the best rum he has ever made", the 30 year old is the high point in the range, limited to around 2000 bottles annually. It is Don Pancho's vision of what a true Luxury rum should be. In his own words: "This is not an aperitif but a digestive, drink it slowly, drink it neat. Never alone." Expect multi layered aromas and flavours of vanilla, tobacco, praline, pecan, figs and orange peel.     The Caribbean island of Anguilla is commonly known as a popular vacation spot among tourists, but also houses one of the finest rums in the world.

    Pyrat (pronounced 'Pirate') is a new spirit from the Patron company, creators of super premium tequila. One may be interested to know that the 'Anguilla Rums Facility' that produces Pyrat is a blending house and not a distillery, a common misconception due to the absence of sugar cane grown on Anguilla. As a result, the rum is made by blending aged rums from distilleries around the Caribbean.

    The Pinnacle of Caribbean Delight

    Cask 1623 commemorates the date in which rums first began distilling in the Caribbean. It comprises of nine blended Caribbean pot-still rums aged up to 40 years old. Expect Cognac-like weight with signature richness, orange and vanilla flavours.
    Packaged in a cedar wood box and bottled in hand-blown glass, a serial number and signature from the bottler also appears.

Burnt sienna with deep gold ochre edges. Perfect clarity. Several minutes in the glass coaxes heavy scents of maple syrup, pancake, beeswax, sticky date pudding, caramel fudge and more. Clean, elegant, middle weighted with a superb sweet / dry balance and flavours of dates, walnut slice, new leather, hazelnut, caramel and sweet cigar box. Produced from first pressed sugar cane (aka virgin sugar honey) the rum is long-aged in Zacapa's unique solera system followed by a finishing period in French oak casks from 'Le Bois du Roy'. These casks are assembled from prized wood sourced from four French forests. Harvest has been restricted since the 13th century when they were owned by royalty. Consequently, Le Bois du Roy barrels have been reserved only for the finest vintages.

    Each decanter carries around its neck a 'Petate', a Royal Mayan symbol of the unity of time and space, earth and sky. Expect a super decadent rum with aromas and flavours of chocolate, toasted coconut, almonds, spice and caramel. A rum truly fit for royalty.     Part of the distillery’s collaboration with Italian distributor, Velier that began in 2016, this double-matured rum spent three years in ex-bourbon oak and a further 11 years in ex-Cognac casks. a Blend of Pot and Column distilled rums, the name refers to the well known aromatic flower, traditionally used to flavour root beer. According to Foursquare proprietor, Richard Seale, no Sassafras was used in the making of the rum - it's just “a symbolic link”. It's reported to be another superb blending effort with just 6000 bottles on offer gloabally. Fully matured in the tropics.
