    The most south-westerly of all the Chablis Premiers Crus, Les Beauregards is one of its coolest due to its altitude and location at the end of Chablis’ Left Bank. It’s also one of the steepest (meaning the clay soils are shallow, and the limestone marl is never far from the surface) and one of the highest, rising to 300 metres. While this parcel has been in the family’s hands for decades, it was replanted in 2001 with mass-selection cuttings from Stéphane Moreau’s most treasured vines. Now that the new vines have reached 20 years, Virginie Moreau believes they deliver the intensity to join the Moreau-Naudet lineup. High on the hill, Moreau farms almost one hectare of vines that catch only the sun's coolest rays, meaning Les Beauregards is one of the last vineyards to be harvested. All these factors play out in tension, cut and pithy citrus notes that course through the palate.

    On the left bank of the Serein and the middle of the slope, Vaillons is a particularly well-positioned Premier Cru that enjoys an excellent reputation thanks to the work of several key growers. The domaine works with vines planted in 1974 in the lieux-dits of Les Epinottes (a cooler part of the vineyard) and Roncières (which provides more flesh). Then, a parcel of 75-year-old vines in Sécher usually accounts for 30% of the blend and provides intense mineral cut and structure. The wine fermented and aged in both tank and older barrels. Each parcel was vinified separately before blending.

    Moreau’s Petit Chablis comes from a single 2.5-hectare site in Beine, just outside Chablis on the way to Auxerre. It has a southwest orientation and lies on Kimmeridgian soils (as opposed to the higher Portlandian soils on which most Petit is grown). Half of the plot is home to 25 to 30 year old vines, while the other half is somewhat older at 45 to 50 years old. Naturally fermented, this wine was vinified in large vats of 32 to 100 hectolitres.

All up, the domaine has the luxury of working with 30 parcels scattered across the appellation, representing a variety of soil structures and exposures. All the fruit from the younger vines is sold off in bulk, which perennially helps Moreau deliver a Chablis greater than the sum of its parts.

    The Chablis was picked over various dates, depending on the plot. The fruit was subject to a very gentle four-hour press, and the juice was fermented with natural yeasts (a rarity in Chablis). It was raised mostly in tank, yet the élevage was unhurried. This spent 20 months on lees, considerably longer than most Chablis of this level. These traditional methods, along with hand-harvesting, the quality of the terroir, low yields and the full ripeness levels at which the fruit is harvested help to explain the mouth coating texture, salty depths and the quality that is on offer.

    This too reflects a discreet exoticism on the dried yellow orchard fruit nose where a hint of quinine lurks in the background. Like the Petit Chablis, the flavors are so dense as to be almost thick and creamy though there is slightly firmer acidity supporting the finish. This isn't what I would describe as typical but it's interesting in its fashion. I would make the same observation here about aging as 2 years should see this at its best. Drink 2023+.

    The 2019 Chablis Village is very demonstrative, bursting from the glass with notes of citrus oil, honeycomb, white flowers and oyster shell. Medium to full-bodied, layered and satiny, it's fleshy and charming, concluding with a saline finish. Note that there will be a second, later bottling of this cuvée, which I'd expect to show more structure and sapid nuance. Drink 2021 - 2033.

    Moreau’s Villages wine is drawn from 20- to 30-year-old vineyards in Préhy and Courgis, in the south of Chablis. The fruit is subject to a very gentle four-hour press, and the juice is fermented with natural yeasts (a rarity in Chablis). Raised mostly in tank, (it’s not until the Vieilles Vignes level and above that Moreau utilises (older) barrels in significant percentages), the wine spent 20 months on lees which is considerably longer than the vast majority of Chablis at this level.  These traditional methods—along with hand-harvesting, the quality of the terroir, low yields (circa 35 hl/ha) and the full ripeness levels at which the fruit was harvested—help to explain the fabulous texture, depth and quality that is on offer here.
    Brilliant pale straw colour with a faint greenish tinge around the outskirts and a watery hue. Elevated pear and lime scents meld into dried honey, wet stone and subtle oyster shell notes. On the palate delicious pear, lime and green apple fruits are layered over a back drop of discreet dried honey characters, light oyster shell and stony mineral characters. Beautifully rounded in the mouth, almost supple like in its feel, it finishes dry with brisk acidity and a long sleek yet well cut aftertaste.
    A very tasty Chablis to drink over the next 4-5 years.

    Based in the village of La Roche Vineuse, Olivier Merlin and his wife Corinne founded their domain in 1987 after taking over the 4.5ha of vineyards of the 200-year-old Domaine du Vieux Saint-Sorlin. Since then they have grown to now include 26 hectares of vineyards stretching across Saint-Véran, Pouilly-Fuissé, Viré-Clessé, Moulin à Vent, along with their home in Macon's La Roche Vineuse. While not certified organic, from the beginning they have shunned the use of chemicals in their vineyards and maintain their soils with tilling between the rows. Winemaking is traditional with the handpicked grapes pressed as whole clusters before fermentation and maturation mainly in cask, where new oak use is decreasing year on year.

    The 2020 Pouilly-Fuissé Les Chevrieres 1er Cru, one of Merlin's most precocious Premier Crus (0.65 hectares) has a touch of menthol on the nose that conveys real vigour. The palate is very well balanced with a silky-smooth entry, fine acidity, lightly spiced with a distant tang of lemongrass and stem ginger, chamomile and touches of bergamot furnishing the finish. What more could you want in a Pouilly-Fuissé? Drink 2023-2042.

    Domaine Oudin was established in the late 1980’s by Christiane and Jean-Claude Oudin, professionals looking to escape Paris to a small holding in Chichée, Chablis, belonging to Christiane’s parents. Today Domaine Oudin is still very much in family hands, run by their daughters Nathalie and Isabelle. The Vaucoupin vineyards are around 70 years of age and no oak is used in the winemaking process.
    Bright pale straw colour with a watery hue. Pronounced fresh pear and dried honey aromas meld into citrus, wet stone and mineral notes. Rich fleshy peach, pear and dried honey fruits possess a beautiful textural roundness over a stony back drop. Excellent intensity of flavour with faint elements of oyster shell and a chalky minerality also present. Finishes dry and fresh with a long shapely aftertaste. A rich, mouthfilling Chablis.

Beautifully intense and fine with great length. Demi-sec Vouvray is, after sparkling Vouvray, the most popular wine of the appellation and perhaps the most typical showing chenin blanc at it most perfumed and expressive with just delicate sweetness balancing the lively acidity and giving great length and also ageing capacity to the wines. Demi-sec wines tasted at the domaine going back into the 1950’s are simply a revelation and among the great wines we will taste any year. The wine is so versatile with so many foods and also so delicious as a lip smacking aperitif there really is no excuse for this wine not being in every cellar and every fridge.

    The Pichot family is one of the oldest in Vouvray with origins as viticulturists and restaurateurs going back to 1739. Their vineyard holdings are located mostly in the prime sites of Le Mont and Haut Lieu at the top of the village, with several other holdings scattered throughout the appellation. All harvesting is done by hand and yields are kept low at an average 25 hl/ha. All vineyards are now farmed organically, some bio-dynamically.

    Discreet wood sets off the white peach and panoply of citrus elements that exhibit a touch of phenolic character. There is excellent delineation and vibrancy to the broader-shouldered flavors that possess fine depth on the tautly muscular and powerful finish that is clean, dry and youthfully austere. This is also quite tightly wound and is definitely a wine that is going to require extended patience if you wish to experience it at its peak. In a word, lovely. Drink 2030+.

This is a long and powerful Bâtard that will require bottle age to fulfill all its potential. Readers should note that this wine is identical with the Bâtard-Montrachet released under the Morey-Blanc label.

The palate is very well balanced, delivering a precise, intense entry and enormous depth and volume in the mouth, but with counterbalancing tension on a long, spicy finish that fans out wonderfully.     An all but mute nose requires very aggressive swirling to liberate the aromas of pure apple and pear compote. The sleek, intense and delicious flavors are not especially dense but I very much like the texture of the lightly stony, clean and dry finale. This is quite backward at present but lovely. Drink 2024+.

    The 2018 Meursault Village is the usual blend of three parcels from Pellands, Chaumes de Narvaux and Forge. It has a very intense bouquet for a Village, the honeysuckle and orange pith aromas storming from the glass. The palate is likewise intense and brimming with energy, and quite spicy in the mouth, with hints of stem ginger and pineapple. Long on the finish, this Village Cru punches above its weight. Drink 2022 - 2040.
