2021 Wynns Coonawarra Estate John Riddoch Cabernet SauvignonCoonawarra, South Australia, AUSTRALIA$150. 00Bottle$1800.00 DozenCellar: Drink now - 15 Years (2025-2040)ABV: 13.5%Closure: StelvinOne of Coonawarra’s benchmark Cabernets from an outstanding vintage.
Renown as one of Coonawarra’s benchmark Cabernets, Wynns John Riddoch is made from parcels of the estates best fruit and is only produced in exceptional vintages.
Outstanding colour featuring an impenetrable inky black heart along with a very deep dark red black hue. Soaring out of the glass are captivating aromas of blackcurrant, liquorice and mulberry which are complimented by vanillin cedar, tobacco, subtle earth, violet and traces of bay leaf. Rich and concentrated yet refined and structured, the medium to full bodied palate is redolent in fleshy red to black currant, liquorice and mulberry fruits. Lending further complexity are spicy vanillin cedar, earth, delicate tobacco and bay leaf accents. Fine grained, sturdily built tannin framework yet quite polished in it’s feel. Marrying finesse with power it finishes very long and eloquent with a deep core of fruit.
Drink over the next 10-15 years.

16 months French oak hogsheads and barriques (31% new, the balance one to six years old) and 22 months in bottle prior to release. A cacophony of blackberries, Bing cherries and elderberries. Blackcurrant leaf, acaí and prune skin. Black coffee, vanilla pod, ash and charcoal. Acidity wisps about the palate like magic, a mesh of thread-like tannins pull and draw the focus. A hint of dark chocolate bitters; the wine finishes perky with echoing tunes of granite. It's just so centered and chic. Pure cabernet poise. Drink by 2038.

Shanteh Wale – James Halliday’s Australian Wine CompanionThe 2021 John Riddoch Limited Release Cabernet Sauvignon is a brilliant wine. It is achingly intense yet is defined by its levity, which is not a common attribute in Coonawarra Cabernet Sauvignon. The wine expounds the virtues of the red gravel in which the fruit was grown, via its iodine and crushed shells, cassis and blood, sweet marrow and tobacco. It tastes so clearly of the place, which is a wonderful thing. The back palate swells with flavor, framed by the earth and the attuned oak. This is a tribute to the earth, an ode to it. Plentiful tannins bob along on the current of fruit. This will cellar interminably. It's up there in both quality and feel with the 2010, or so I think. 13.5% alcohol, sealed under screw cap. Drink 2024-2051.

Erin Larkin – Robert Parker’s The Wine AdvocateOne of the best vintages in Coonawarra for many years. Little wonder this release of the John Riddoch is one of the best since the initial release from the 1982 vintage. Aromas of violets and red berry with a slightly cherry glaze character adding further intrigue. The palate is medium weight and refined but with tremendous power and persistence. A combination of hogsheads and barriques has been used to deliver the perfect level of oak. One of the best of these I can recall. Drink 2024-2054.

Ray Jordan – WinePilot.comThis 2021 Cabernet Sauvignon Wynns John Riddoch is stylish and built for the long haul. It takes a couple of days to show its true colors. It radiates with blackcurrant, gravel and dried mint aromas, with a dusting of earth all wrapped up in a gentle blanket of French oak. Composed and super refined, the wine is underpinned by a line of seductive yet firm tannins with killer length and balance to finish. It is already very approachable but with serious staying power. Drink 2030-2045.

2021 Yalumba The Caley Cabernet ShirazSouth Australia, AUSTRALIA$399. 00Bottle$4788.00 DozenCellar: Drink now - 20 Years (2026-2046)ABV: 14.5%Closure: CorkThis is the seventh release of Yalumba’s flagship wine, the ‘Caley’ and it’s up there with their best yet. A classic marriage of two noble grape varieties sourced from two of Australia’s greatest wine regions, Coonawarra and Barossa it’s a blend of 74% Coonawarra Cabernet Sauvignon and 26% Barossa Shiraz. The wine is matured for 18 months in a mix of 21% new French oak barriques with the balance in 1 year and older French oak barriques.
A seamless blend of Cabernet and Shiraz highlighted by extraordinary length and wonderful finesse.
Pours with spectacular colour density featuring an inky black heart alongside a deep dark red black hue. Soaring through the olfactory senses is a complex matrix of blackcurrant, liquorice and mulberry scents interwoven with vanillin cedar, subtle earthy dark chocolate, tobacco, pepper and bay leaf notes. Rich yet gorgeously refined and structured, the mid weighted palate is flooded with red to black currant, liquorice, dark chocolate and ripe mulberry fruits which meld into a spicy vanillin cedar, earthy tobacco and bay leaf infused back drop. Displaying immaculate tannin integration and outstanding power, it concludes long, highly finessed and sophisticated.
Drink over the next 20 years.

At this viewing (and we are a long way off from this wine's intended release), we are in for a very special wine – Yalumba's flagship, from the excellent 2021 vintage. It is a picture of elegance and fruit power in one package. There is a glass-staining deep crimson colour for starters. The fruit, seemingly reduced to an essence, is all blackberry, cassis, black cherry and dark plum. Hints of deep spice, blackforest cake, licorice, cedar, tobacco pouch, bouquet garni, black olive tapenade, pencil shavings, roast beef, earth, veal glace and dark chocolate. The tannins are powdery, layered and in perfect resolution, the oak sitting simpatico with the deep fruit, the finish stretching out for a considerable length of time. The best Caley release thus far for mine. Drink by 2024.

Dave Brookes - James Halliday’s Australian Wine CompanionIt might be suspicion only but one feels that our venerable old Barossa producer, Yalumba, may have felt that, as impressive as its portfolio of wines is, the world did not see them having a release which challenged the Granges and the Hills of Grace and a surprising number of new releases at ridiculously high and arguably undeserved prices. Enter this wine, although it still sits well below how others when we start talking cost, but then that is only to its advantage. They opted for the great Aussie red blend to take it away from the usual single variety rock stars. It is also a blend of regions with the Cabernet Sauvignon from Coonawarra and the Shiraz from the Barossa. There have been some absolutely superb releases of this wine over the years but for me, none better than this 2021. It is a superstar. Under cork. Gleaming blood red/maroon, the nose reveals notes of bright cherries, tobacco leaves, spices, well integrated oak, plums, blackberries, aniseed, cassis and beef stock. It is subtle and seductive, generous and plush, offering a fine line of acidity in great length. There are silky tannins on the lingering finish. Superbly focused, this is surely the best Caley to come my way (and I have seen them all). Stonkingly good, if one wishes to get technical. Thirty years with ease. Drink 2026-2056.

Ken Gargett – WinePilot.comThe 2021 The Caley Cabernet Shiraz hails from an excellent year in South Australia. The season was warm but not hot (in fact, it has been described as cool, although I think "mild" and "benign" are more accurate terms) and offered both growers and makers the opportunity to get the best of their vineyards and produce some of the best wines possible. These should be exceptionally long-lived wines. So here, the 2021 The Caley Cabernet Shiraz leads with a nose of deep dark chocolate, dark fruits, mahogany and black olive tapenade. In the mouth, the tannins are both intense and profuse, encasing the fruit at this early stage yet promising many years in the future to come. This is persistent and long, powerful and concentrated. Sealed under Diam and wax. Drink 2026-2051.

Erin Larkin – Robert Parker’s The Wine AdvocateThis is not only the greatest wine to ever emerge from the hallowed halls of Yalumba, it is categorically the finest exemplar of the great Australian blend of the modern era, and the equal of the greatest in history. Kevin KG Glastonbury’s relentless fanaticism has fused Coonawarra Cabernet with Barossa shiraz (26%) to perfection, and I use this word very deliberately.
While I was not alive at the time to have the privilege of tasting it in its youth, it has perhaps not been since Max Schubert’s legendary 1962 Penfolds Bin 60A that this union has been mastered with such breathtaking harmony. Since its inaugural release a decade ago, The Caley has set the standard for refinement in cabernet shiraz, reincarnating the Coonawarra/Barossa blends of Yalumba of a half- century ago to become the first wine to win Matthew Jukes and my The Great Australian Red competition four times with three vintages, each of which I scored 98-99 points. 2021 embraces this profound legacy and takes it further to establish an all-new benchmark. It elevates this distinguished label by effortlessly contrasting greater depth of black fruits, higher lift of violet fragrance, more energetic, cool season acidity and more profound confidence of tannins that are at once finer and more velvety and yet somehow stronger, more rigid and more enduring - the pinnacle of KG’s life work. I have bestowed a perfect score on an Australian table wine only once in the past decade, and The Caley 2021 is every bit deserving. Be sure to be first in line when it is unleashed on 1 May 2026.

Tyson StelzerI am infinitely grateful to have creator, creative and creation knowledge of this wine, from its inception to this moment in time. All vintages, all progressions, all inflections and all moments of ‘worry’ have been shared, and so when a wine, and there are few on the planet with this epic consistency of production, is released, the world must pay attention. There is so much class here, it is extraordinary. How would you place this wine if you were an alien landing at our intergalactic hub in search of a refreshing libation? It could only be a wine from the 5263 quadrant of SA, which I am sure an alien could compute faster than most humans. But there is a looming sense of disquiet about this 74% Coonawarra wine, because it has an x-factor that transports into an otherworldly plane that is simply jaw-dropping. My wine mind does all it can to personify every sip I taste and yet, as much as I admire all the James Bonds, Hans Solo, and even, and this might sound somewhat incongruous, the Jackson Lambs of this world, this wine has no earthly human form synonym. It soars, mythical, half-human, half-deity, and it holds back more than it gives, and then releases unfathomable mysteries when you momentarily switch off. It is, in short, epic. I wondered if any wine could eclipse the inaugural 2012 The Caley, and then a handful of them have done just this. 2021 is the most recent to do so, and I am thrilled to bring it to your attention.

This is the younger vine bottling, coming mainly off vines planted in '08. Up to three weeks on skins; maturation in steel and old puncheons and foudre. This is a nice foil to the Old Vine bottling, showing what relatively youthful vines can do on this great site. There’s an open red-berried and cherry fruitfulness, with red florals supported by savoury spice and a foundation of purposeful natural tannin. This doesn’t have the mineral depth of the Old Vine, but the fruit vibrancy and exuberance yield their own rewards. Drink by 2030.

1792 Full Proof Kentucky Straight Bourbon Whiskey (750ml)Kentucky, UNITED STATESReduced from $199.99$139. 99Bottle$1679.88 DozenABV: 62.5%"Less of a whisky and more of a life experience... Complex and perfectly assembled..." 96.5 points - Jim Murray's Whisky Bible 2025/2026
The full proof, cask strength version of the 1792 bourbon produced at the Barton 1792 distillery in Kentucky has been one of the most sought-after Bourbons of the last few years. Not only awarded World's Best Whisky in Jim Murray's Whisky Bible 2020, the quality was previously affirmed at the World Whisky Awards in 2018 where it was voted World's Best Bourbon.
Scoring an impressive 97.5 points out of 100, Murray applauded the 62.5% ABV expression for being “melodious, mysterious and slightly exotic” with a nose of “near-perfect proportions” and an “unfaltering” finish. He added “For the 1792 Distillery to win World Whisky of the Year is extraordinary because when I first went there some 25 years ago, the then-owners had no interest in high-end whiskey... The oldest they produced was a six-year-old which I thought was one of the most complex on the market but still undercooked. I implored them then to bring out something much older. It is wonderful that my gut instinct of 25 years ago has been vindicated under the ownership of Sazerac, who have turned a potentially great distillery into something truly magnificent."
The whiskey comes non-chill filtered - instead filtered through the lesser plate and frame method to keep the roundness of the spirit.
The Barton distillery, now known as Barton 1792, was established in 1879 and is the oldest fully-operating distillery in Kentucky. The 1792 moniker for their pride and joy bourbon comes from when the Commonwealth of Kentucky joined the union and brought with them their distilling techniques and environment.Other reviews... 2016 bottling] No age statement on the label, but aged for 8 1/2 years. Bottled at the same ABV as its entry proof into the barrel. Lush and mouth-coating. A pleasingly sweet bourbon, with caramel, nougat, and chewy toffee, mixed with ripe orchard fruit, golden raisin, and creamy vanilla. Soothing finish. A wonderful way to end a meal. (With a cigar, perhaps?) This is a beautiful bourbon and a great value given its quality, ABV, and price. 92 points - whiskyadvocate.com
"We’ve had our reservation regarding 1792 Full Proof in the past. Past versions encapsulated and arguably doubled down on the bourbon’s classic and unexciting nature - even to its detriment. Yet, no bourbon is ever set in stone, and the latest batch of 1792 Full Proof is a perfect example of this. While still classic at heart, the palate's fullness of flavor, a thicker mouthfeel, and an overall renewed spirit have transformed the bourbon into an almost new bourbon altogether, and one - especially regarding 1792 bourbon - that’s exciting to drink. It’s a remarkable transformation and is exactly why you should never count a bourbon out and be willing to revisit bourbons over time." - breakingbourbon.com

2018 Signatory Vintage Edradour No.2 Inaugural Release 200th Anniversary 7 Year Old Single Malt Scotch Whisky (700ml)Highlands, SCOTLAND$119. 99Bottle$1439.88 DozenABV: 57.1%"A laudable “inaugural”. Unique and lovely. Well worth the price paid" - dramface.com
This is a bit of a double celebration for Edradour fans and collectors. As the label notes, it's commemorating the 200th Anniversary of the distillery (1825-2025). There are going to be a number of limited editions coming through marking the date, so keep posted. More significantly for collectors, Andrew Symington, the man behind Signatory Vintage and Edradour, has built a second distillery on the Edradour site in order to expand capacity alongside the original "little gem" - hence the name "Edradour #2" for this inaugural release. Distilled in 2018 in new, traditional-style stills and aged in first-fill Oloroso sherry butts, there's been a range of responses online towards the release, however most are positive, deeming it a confident young 'Christmasy' whisky that isn't too dominated by sherry while delivering the "old school" weight and oily texture that Edradour is famous for. Think red fruits, almonds, fruit cake, cinnamon and a light hint of sulphur that needs time to blow off. Many find it significantly benefits from a drop or two of water. At 57.1% Alc./Vol. that's no surprise. The total outturn is unknown. We'd expect it to be aligned with the distillery's other limited editions (usually around 6000 bottles). As a collectable, the direct-import price means just about anyone can take advantage of this opening offer. Non chill filtered.
Other reviews.... Shout it from the rafters: “Young. Age. Statements. Don’t. Matter!” ...It’s a polarizing dram within the [whisky] community. Complaints about astringency and sulfur and plenty of discussion over the heat, sharpness, and youth of this bottle. Personally, I didn’t find any off-notes or sulfur, even off the neck pour. To me it retained the best of Edradour’s uniqueness, and this batch was well-suited to the first-fill sherry butts used for maturation. Especially with water. I’m a firm believer in adding tiny amounts of water, even for lower ABV whiskies. With time and a few drops I believe not only does this dram open up, it sings wonderfully. I’ll stand by my high score. Perhaps other Dramface writers or those in the Whiskyverse will have differing assessments to share in the comments. There may be a “young whisky” bias going on with others, but I’ll never tell anyone else they’re incorrect. This is a realm of opinions and senses. There’s not a wrong one to be found. I trust my own here and I find this to be a cracking young Edradour. There’s also a spicy uniqueness here that keeps it from becoming too much of a “sherry bomb." And for [the price], Signatory Vintage continues to show its deftness on price and appreciation for the wallets of the punting masses. - dramface.com

- Glengyle Distillery Kilkerran 12 Year Old Single Malt Scotch Whisky (700ml) - 2024 BottlingCampbeltown, SCOTLAND$149. 99Bottle$1799.88 DozenABV: 46%
The Kilkerran brand has been described as "Springbank's big middle finger to the SWA" for trying to screw them out of a regional designation. In 1998 the Scotch Whisky Association decided to cease referring to Campbeltown as a whisky region. Two distilleries (Springbank & Glen Scotia) simply weren't enough. Prompted to restore the Peninsula's reputation, Hedley Wright, the owner of Springbank envisioned Glengyle as a project to cement Campbeltown as a region proper, rather than just an extension of the Lowlands. Its whiskies are now on just about every malt maniacs short list. Many who were lucky enough to be acquainted with Springbank's output a decade or so ago appreciate that Kilkerran is essentially a slightly less peated version of the same malt - for less dollars. The same distillery team run both operations. There is a slight difference in the production process but the upshot is a lightly peated West Highlander with fresh citrus notes and an oiliness on the palate, plus a little briney, coastal character. Because its profile clocks the range of flavours found in single malt Scotch, it is in many ways quintessential. The 12 year old is the perfect introduction. The 2024 edition was matured in 70% Bourbon and 30% Sherry casks and bottled at their standard strength of 46% without chill filtration. Experience has shown that the best time to buy it is at the start of each allocation cycle while the opening prices hold. Global demand for this distillery is already catching up with Springbank.
Notes from the producers... Initially zesty with citrus notes of lemon cheesecake and an oiliness typical of a Campbeltown whisky. Peat smoke, leather bound books and peppery, spicy notes develop over time, along with sweet sticky toffee pudding. The peat smoke carries through to the finish in campfire embers, with sweet hints of pecan pie and butterscotch.

2014 Kilchoman Single Cask #14/1007 Australian Exclusive Sauternes Cask Finish Cask Strength Single Malt Scotch Whisky (700ml)Islay, SCOTLAND$199. 99Bottle$2399.88 DozenABV: 56.3%The Australian importer's single cask selection was aged in fresh Bourbon wood for just over six and a half years, then spent a further eighteen months finishing in an x-Sauternes Hogshead (sweet white wine from Bordeaux). While Kilchoman have previously released bottlings that were fully matured in Sauternes casks, this nevertheless ranks as an extended secondary maturation, compared to 5-6 months that many might consider the 'norm'. Consequently, if you're used to the style of core releases like Machir Bay or Sanaig, this offers a different Kilchoman experience. On the nose, the usually effusive maritime character is offset by notes of bush honey, dried apricots and jaffas with just a little iodine/menthol lift contributing freshness. Flavour wise, it's quite an attack - mouthfilling, textural and oily with a malty mid-palate followed by a tang of tangerine peel and a spike of heat. The Sauternes cask almost gets the better of the peat, leaving you with residual notes of sweet tobacco, chimney soot, menthol rub and dark chocolate. An after dinner treat. 56.3% Alc./Vol. 50ppm. Non chill filtered.
Notes from the importers... Nose: Driven by notes of vanilla and rich apricot with an elegant underlying peat smoke. Palate: Opening rich honey-sweetness makes way for an intense influence of almond followed by a classic Kilchoman peat smoke combined with toasted oak. Finish: Dried fruit, lemon zest and rich spice balanced with a long-lasting malty sweetness.

The Pieropan winery is in the heart of the Classico zone and dates back to 1890. Leonildo ‘Nino’ Pieropan, who sadly passed away in 2018, was the first to show the world just how great Garganega, and Italian white wine, can be. He recognised the importance of terroir early on, acquiring various hillside vineyards and expanding the prestigious Calvarino and La Rocca vineyards, first made as single vineyard crus in 1971 and 1978 respectively.
Today, sons Dario (winemaker) and Andrea (viticulturist) continue the family tradition. The brothers have converted all of their vineyards to organic and are overseeing the new winery being built amongst the vineyards just outside the village. Made mostly from Garganega grapes with the inclusion of 15% Trebbiano di Soave.
Brilliant pale straw colour with greenish tinged edges and a watery hue. Aromas of pear and red apple skin show plenty of elevation out of the glass with hints of lime, fresh herbs and wet stone also evident. Delicious pear, lime and red apple skin flavours are delivered with ample concentration over a back drop of fresh herb infusions and slatey mineral elements. Crisp acidity with a river stone like feel to the long dry finish.

The new shipment direct from the warehouses of Signatory Vintage features our oldest Exceptional Cask Macallan to date. Mr. Symington continues to defy market norms delivering high-strength age statements at prices way out of line with official bottlings. Reading between the lines, we speculate that quality European oak butts are at play here, mostly first-fill (judging by the colour). The heavy sherry influence explains why these Macallans are reported to be best after ample air contact, developing in the glass as well as in the bottle. That means a week or two after opening it, the flavours should be more integrated and expansive. If like many of us, you've become disenchanted by Macallan as a brand, then ignore the provenance. This is simply a top recommendation for sherry lovers - complex, full-bodied, oloroso-soaked and absolutely worth it. Buy with confidence. Hats off again, Mr. Symington! 57.1% Alc./Vol. Non chill filtered.

A luscious and mellow sherry, intense and dark. Soaked wood, red fruit salad, currants, watermelon, blueberries, chocolate sauce, balsamic vinegar, walnuts and dates, coq au vin, orange peel, caramel, blackberry jelly, and plums. A very slight hint of sulfur. On the palate, thick honey, raspberries and red bell peppers, a square of dark chocolate and stretto coffee, toasted hazelnuts, roasted almonds, Agen prunes, cinnamon, nutmeg, cloves, and a good pinch of pepper. A fairly long, powerful finish with notes of charcoal, terracotta, goji berries, copper highlights, intense and varied spices, dark and damp earth, and small mushrooms. Forest undergrowth. Sherry is intense and profound, giving rise to extreme and varied flavors. At the same time, it's not overpowering; on the contrary, it liberates the aromas. - whiskybase.com

Other reviews... Well at first I couldn’t smell much on the Auchroisk, very locked in but with air and swirling started to open. Mouthfeel was superb typical hogshead oily / viscous , very smooth and can’t believe 57.1% , dark chocolate and cherry , afters wee bit tannin from the wine cask, very pleasant with out being complex and could drink a lot in one sitting !! Be interesting to see how this progresses with time but nice dram. - whiskybase.com

1995 Signatory Vintage Glenrothes 30 Year Old Symington's Choice Cask Strength Single Malt Scotch Whisky (700ml) - 54.4%Speyside, Highlands, SCOTLAND$499. 00Bottle$5988.00 DozenABV: 54.4%"...has everything that is good about Sherry: it is rich, indulgent, varied, deep and intense." - whiskybase.com
Whether for astute collecting or hedonistic drinking, Signatory's cask #6980 from Glenrothes should be on your short list. 499 bottles were decanted. Variously described as "monolithic" yet "more refined than a typical Symington profile", it comes full-term matured from a first-fill oloroso butt, uncut, straight from the cask. Regular readers may recall that this label highlights Andrew Symington's favourite picks from the enormous warehouses at Edradour in Pitlochry. First released in 2023 with a focus on heavily sherried malts aged between 20-35 years old, these whiskies have offered some freak values. But the great price doesn't matter if the whisky doesn't taste good. By all reports, this bottling fullfills all of the criteria for a stand-out buy in premium Speyside, especially in the context of what other distillers are commanding for sherried malts (often of younger age and lesser quality). We're told it's also increasingly unusual for Glenrothes to let go of heavily sherried stocks - of this or any calibre. 54.4% Alc./Vol. Non chill filtered.
Other reviews... The Sherry is very intense: fig jam, cinnamon-dusted apple tart, raspberry coulis, dried dates and apricots, hazelnuts, macadamia nuts, chocolate fondant, marzipan, creamy vanilla, damp wood, salted caramel, honey, parquet wax, incense, and freshly tanned leather. On the palate, it is very rich and sweet, but not excessively so: raisins, slivered almonds, crushed quince, several candied fruits, a generous helping of spice, crème brûlée, and a hint of lemon zest. The finish begins with dark chocolate, coffee beans, cashew nuts, melted butter, shortbread cookies, and a touch of wild strawberries. Toasted walnuts and nougat complete the experience. - whiskybase.com

The Clydeside Distillery Napier Sherry Cask Matured Single Malt Scotch Whisky (700ml)Lowlands, SCOTLANDReduced from $99.99$89. 99Bottle$1079.88 DozenABV: 46%Robert Napier, for whom this whisky is named, led quite the life as a Marine Engineer. He set up his own business in 1815 and the quality of his steam engines soon put him in high demand. He expanded his business in 1841 to include an iron shipbuilding yard in Govan (across the river from the Clydeside). Several of Scotland’s most esteemed shipbuilders apprenticed under him and he was made the primary engine builder for the Admiralty after he proved that his engines were cheaper and more reliable than those built on the Thames in London. Clydeside have adopted Napier's mantra of "quality, quality, quality." That focus on quality includes longer fermentation times - 72 hours, compared with the 48 hours that are standard at larger distilleries, plus slower distillations. “We’ve instilled that into everyone in the production team, and everyone’s bought into it — there’s no rushing the distillation so they can knock-off early on a Friday,” says Master Distiller, Alistair McDonald.
The whisky that bears Napier's name is an oloroso sherry cask matured 6 year old, promising notes of ripe berries, sweet rose, orange marmalade, cherry and vanilla with a warming clove and ginger finish. 46% Alc./Vol. Non chill filtered.
Other reviews... A satisfying sherry bomb of a dram with little in the way of youth and no sign of any immaturity. The prominence of the oak suggests some good quality casks – with plenty of life in them – were utilised in the making of the thing and that all adds to the intensity of the experience. Perhaps if I was nitpicking, the finish seemed a wee bit on the short side but that might be something that develops over subsequent batches. In the meantime, this is an impressive release from the Clydeside and could be one to keep an eye on in the years to come – especially if you love a sherry-matured dram. - ascotonscotch.com

A highly approachable sipper. 40% Alc./Vol.

"Aroma: Strong oaky presence (wonder if they used a heavy or full heavy char), sweet notes: vanilla, caramel, molasses, maple syrup. Dried fruits/raisins. Light agave. Flavor: Whiskey, barrel spice, butter (texture), dates (that was first time I detect that fruit flavor on a tequila, really liked that!). Chocolate and nutty notes in the profile. Not a lot of agave, medium finish/feel, bourbon experience that it might be a great starter for whiskey lovers. Great price! " - agavematchmaker.com

Waterford Gaia Edition 2.1 Single Malt Irish Whisky (700ml)IRELANDReduced from $149.99$74. 99Bottle$899.88 DozenABV: 50%"Stunning....Coating, delicious, and remarkably composed. A must-buy."
If you're a newcomer to Waterford Whisky, briefly, the driving force is former Bruichladdich creative, Mark Reynier. Years ago, when Bruichladdich was coming online, he was told that the best barley in the world came from Waterford, Ireland. Since 2014, the Waterford Distillery has been his passion project, founded on the French concept of 'terroir', paying close attention to the provenance of barley and working with 72 different farms – some organic, some biodynamic. In the whisky world, the concept is fraught with disagreement, but from Reynier's wine background, it's an expectation. Consider that over 90% of Irish whiskey is made at just three distilleries (Bushmills, Cooley Distillery and Midleton), and that the latter produce almost every famous Irish brand (Jameson, Tullamore Dew, Powers, Paddy, Redbreast, Midleton Very Rare and the Spot Whiskies), and you begin to appreciate his ambition to create a terroir-driven Irish single malt while being as transparent as possible from farm to bottle.
The first spirit dropped from Waterford's stills in January 2016. Whiskyfun.com was enamoured with the inaugural Gaia release, describing it as "extremely impressive" (90 points). Arriving with similar credentials (unpeated, organic barley from six local farms) Gaia 2.1 was aged 4 years, 2 months, 7 days in x-Heaven Hill bourbon (39%) and x-red wine casks sourced from Margaux including Chateau Lafite Rothschild (19%). There's also an interesting portion decanted from casks that previously contained Vin Doux Naturel wines (Rivesaltes, Marsala, and Porto). Gaia 2.1 promises another delicately complex Irish, bottled at 50% ABV with zero chill filtration. Just like Bruichladdich, the release numbering schemes and comprehensive production data are readily available, and the design of the bottles is sleek and modern. Does it all translate into something special? Reviews waver from "good" to "stunning". Consensus leans towards the affirmative.
Other reviews... Light and vibrant aromas of sliced apple, pomelo, barley, warm milk on hot porridge, and creamed coconut show on the nose of this whisky produced from the 2016 harvest of organic Irish barley. Crisp barley, stewed apple, and ruby grapefruit to taste, it adds vanilla, fudge, and a cluster of pepper at the tip of the tongue before diluting to reveal malty notes laced with bitter plain chocolate. 88 points - whiskyadvocate.com
"...An enormously impressive whiskey. At just 4 years old, it’s very full-bodied and characterful, with good complexity. It doesn’t taste old or anything, but it’s reached the level of maturity where those younger grassy notes, present in Gaia 1.1, are absent in this second release. The scotch comparison that I had in my head was Daftmill – this has that level of complexity and fruity brightness". - whiskybase.com
"Stunning. Drinks slightly above proof and continues to evolve, circle back to the center, and branch out again. The depth of flavor is outstanding. Coating, delicious, and remarkably composed. A must-buy." - whiskeyinmyweddingring.com
Notes from the producers... Appearance: Golden peach with super rich and thick oils on the glass. Nose: Orange peel, fresh soil, bread crust, brown sugar, milk chocolate, fresh fruit salad, fig roll biscuits, lavender, sweet marshmallows, butter milk. Taste: Spicy, white pepper, grapefruit, dry heat, liquorice, cherries, coco powder, wine gums, dry toast, salted peanuts, lemon zest. Finish: A dry spice dance that tangos and waltz's like a happy couple into the golden peach sunset.

2022 Yalumba The Signature Cabernet Sauvignon ShirazBarossa Valley, South Australia, AUSTRALIA$59. 99Bottle$719.88 DozenCellar: Drink now - 15 Years (2025-2040)ABV: 14.5%Closure: CorkA classic blend of Cabernet Sauvignon and Shiraz first produced in 1962, Yalumba’s Signature pays homage each vintage to an individual who has made a significant contribution to the culture and traditions of Yalumba. The 2022 vintage’s signatory is Yalumba’s Executive Director of Sales for Australia & New Zealand, Paul Midolo. This year’s release marks the 51st vintage of Yalumba The Signature.
From vines with an average age of 49 years the 2021 Signature is a blend of 51% Cabernet Sauvignon and 49% Shiraz with maturation taking place in a combination of French barriques and Hungarian hogsheads (21% of which was new oak) for a period of 18 months.Deep and powerful yet finessed, this is Yalumba Signature at it’s finest.
Inky black heart with a deep dark purple black tinged hue. Unfurling from the glass in what is a wonderful show of both refinement and intensity is a mix of red to black currant, liquorice and mulberry scents trailed by some vanillin cedar, tobacco, earth and faint bay leaf notes. Rich red plum, red to black currant, liquorice and mulberry fruits flow eloquently across the medium to full bodied palate. Piquing further interest and complexity are spicy vanillin cedar, subtle tobacco, earthy dark chocolate and bay leaf accents. Deep and powerful yet finessed it has a sturdy fine grained tannin structure that bodes well for longer term cellaring. Finishes very long, sophisticated and elegant.
Drink over the next 10-15 years.

Yalumba's famous Signature cabernet sauvignon and shiraz blend has a strong pedigree when it comes to cellaring and the 2022 release will certainly carry on long into the future. The fruit density and purity here are impressive. Blackberry, doris plum and black cherry tones, their flow elegant and graceful across the palate with hints of spice, cedar, tobacco, pencil shavings, roasting meats, dried herbs and olive tapenade. Fine-grained tannins are in abundance and there is an extended finish that rolls on and on. It's a super release. Drink by 2054.

Dave Brookes – James Halliday’s Australian Wine Companion
The 2022 The Signature Cabernet Sauvignon Shiraz is so pretty—floral, red fruited and fine. This is a beautiful iteration of this wine. Ironically, there's a coastal freshness about it—kelp, brine, crushed shells—given it is nowhere near the coast. It's capacious and mineral and so fresh. The tannins are fine and neat, and the wine has incredible focus and line through the long finish. It's very impressive, potentially one of my favorite releases of this wine to date. It has wholly Barossa fruit this vintage. 14.5% alcohol, sealed under natural cork. Drink 2025-2052.
