The new shipment direct from the warehouses of Signatory Vintage features our oldest Exceptional Cask Macallan to date. Mr. Symington continues to defy market norms delivering high-strength age statements at prices way out of line with official bottlings. Reading between the lines, we speculate that quality European oak butts are at play here, mostly first-fill (judging by the colour). The heavy sherry influence explains why these Macallans are reported to be best after ample air contact, developing in the glass as well as in the bottle. That means a week or two after opening it, the flavours should be more integrated and expansive. If like many of us, you've become disenchanted by Macallan as a brand, then ignore the provenance. This is simply a top recommendation for sherry lovers - complex, full-bodied, oloroso-soaked and absolutely worth it. Buy with confidence. A luscious and mellow sherry, intense and dark. Soaked wood, red fruit salad, currants, watermelon, blueberries, chocolate sauce, balsamic vinegar, walnuts and dates, coq au vin, orange peel, caramel, blackberry jelly, and plums. A very slight hint of sulfur. On the palate, thick honey, raspberries and red bell peppers, a square of dark chocolate and stretto coffee, toasted hazelnuts, roasted almonds, Agen prunes, cinnamon, nutmeg, cloves, and a good pinch of pepper. A fairly long, powerful finish with notes of charcoal, terracotta, goji berries, copper highlights, intense and varied spices, dark and damp earth, and small mushrooms. Forest undergrowth.
